CULINARY
• Experience multiple culinary facilities— two À la Carte and Banquet Kitchens, a Pool Café, and Pastry Shop • Participate in culinary operations working the line, banquets, pastry, quick service outlets, and as a garde manger • Enhance your skills in broiling, sautéing, cold prep, and baking • Learn how to work with a variety of ingredients from basic meats, poultry, and vegetables, to the most elaborate and exotic components • Prepare, cook, and expedite dishes for casual and formal À la Carte dining and banquets • Assist in creating new recipes and developing menus • Learn inventory management, ordering, storage, and rotation • Learn coordination of services between front and back of house • Strengthen your knowledge in food safety and sanitation
PASTRY
• Work in an advanced Pastry Shop and learn to plate desserts for À la Carte and banquet services • Experience our in-house bread making program • Learn the skills necessary to properly use pastry equipment, tools, ingredients, and formula conversions • Participate in inventory management, ordering, storage, and rotation • Learn coordination of services between front and back of house • Strengthen your knowledge in food safety and sanitation
FOOD & BEVERAGE BEVERAGE SERVICES
• Set up, perform, and breakdown beverage services for À la Carte dining and banquets • Experience casual beverage service at the Five Farms clubhouse and Pool Café • Experience formal beverage service at both clubhouses • Gain in-depth knowledge of beers, wines, spirits, and mixology • Perform inventory management, ordering, stocking, and rotation
DINING SERVICES
• Experience casual dining service at the clubhouse and Pool Café • Experience fine dining service at both clubhouses • Participate in sporting and social events ranging from 15 to 1,500 attendees • Perform beverage service and learn about beers, wines, and spirits • Learn coordination of service between the front and back of house
EVENT MANAGEMENT • Support and lead staff in executing events ranging from 15 to 1,500 attendees • Execute casual, formal, youth, family, and adult events • Oversee staff in event setup and breakdown • Coordinate and facilitate service between front and back of house • Manage event beverage inventory and service • Experience events at both clubhouses • Participate in departmental and interdepartmental meetings
GOLF SERVICES OUTSIDE GOLF SERVICES INTERNSHIP
• Manage and maintain the golf cart fleet, bag storage, and practice areas • Experience and support a premier caddie program • Coordinate Outside Golf Services with Golf House Services and Grounds Maintenance • Support and lead staff in opening, operating, and closing • Participate in tournament and daily play activities and responsibilities • Learn the daily operations of Golf House Services in a club environment
GOLF HOUSE SERVICES INTERNSHIP
• Participate in the planning and running of tournaments • Manage and assist operations including tee sheets, play coordination, and course rangering • Assist with Golf Shop activities—intake, display, and sale of golf attire and merchandise • Experience men’s, women’s, and junior’s golf instructional programs • Learn about the high definition technology golf experience • Oversee operations and lead staff in the opening and closing of Outside Golf Services
GROUNDS HORTICULTURE INTERNSHIP
• Plant, prune, and care for trees, shrubs, perennials, annuals, container gardens, and kitchen gardens
TURF MANAGEMENT INTERNSHIP
• Experience working on two distinctly different golf courses (Classic vs. Modern)
• Scout and diagnose pests and diseases
• Experience managing turf in a transition zone climate
• Practice daily maintenance including raking, mulching, weeding, edging, watering, mowing, and blowing
• Perform chemical and fertilizer applications
• Enhance your skills working as a team and leading projects
• Experience disease scouting and Integrated Pest Management (IPM) procedures
• Assist in member horticulture classes
• Operate equipment related to turf management
• Visit local growers and gardens
• Assist with irrigation/drainage installation and repair • Perform hand watering with the use of moisture meters • Learn the best practices in golf course and turf management • Enhance your skills working as a team and leading projects • Interact with various university and USGA consultants • Cross-train with different departments
