10 STAR SUPERHOME
n o i t c u A
11 Church Square, Addington Bob Burnett Architecture has constantly pushed the envelope to improve the design and construction process of residential homes. This means remarkable houses that are beautifully designed, thermally superior, super insulated, mechanically ventilated, and installed with high performance window and door joinery. In August 2015, 11 Church Square Addington was completed and certified as New Zealand’s first 10 Home Star rated home. The building was proudly opened by the Mayor of Christchurch, and this was the beginning of the SUPERHOME Movement. Helping to transform the New Zealand Building Industry to provide healthy and energy efficient homes. Every step of the design and construction process in this home has been carefully considered to maximise energy efficiency and healthy living environment. Featuring a fully insulated concrete raft floor slab with hydronic underfloor central heating system. Engineered bracing with superior seismic resistance including seismic dampers.
Rainwater and grey water recycling. Energy recovery ventilation system linked to solar wall design. PV solar panel system with saltwater batteries. These are just some of the outstanding features helping to achieve a healthy, environmentally sound, and extremely comfortable home. Strategically positioned in the heart of Addington, benefiting from ongoing regeneration, diversity, and a suburb recognised as fast becoming one of Christchurch’s lively post-earthquake success stories. This home also overlooks the beautiful Anglican Church of St Mary gracefully occupying the central site of Church Square. With listed heritage items and many established and protected trees located within an attractive Heritage Setting, providing a truly magnificent urban outlook. As Bob says, “why can’t all houses be built like this”. Now there is an opportunity for this home to be your home. Please do not delay with your enquiries.

omething beautiful that requires a lot of training is Paul’s description of his art. He’s talking flamenco guitar, a passion of his that he shares with a wide international audience. Currently based with family in New Zealand, he’s sharing his favourite music genre via a series of small intimate concerts and lessons. Not too long ago he was the one taking lessons. His family arrived from Lebanon, escaping a civil war, when he was a baby, and he grew up inspired by their creative musical vibe. Guitar was his choice of instrument and it was while in Lebanon, working at a bar in Beirut, he first heard a gypsy from Spain playing flamenco music. “I remember sitting back stage, listening to him warm up and I fell in love with it (flamenco) then and there.” Paul headed for Spain, bought a guitar and an instruction book, and started learning. “After nine months, I secured my first gig. I had no idea then that it would become my life,” he recalls. Paul remained in Spain for 14 years, studying concert flamenco guitar at the Higher School of Music of Catalonia and graduating with the highest mark possible. He now performs regularly with flamenco dance companies, recitals of flamenco cante (accompanying flamenco singing) and as a soloist.

While challenging, which is part of what attracted him to it, flamenco guitar is also very rewarding, he explains. “For me it‘s the feeling of flamenco; the combination of playing music in a community group, the harmony of the sound of flamenco guitar and blend of genres such as classic and Arabic harmonies. “The rhythm is electric, fast and with its own heartbeat; you have to be so precise and clear. “Once mastered, it gives a complete sense of freedom.” Normally Paul performs as part of a group, but circumstances have dictated he’s on his own this time, enabling him to perform and at the same time explain some of the nuances, the essence of flamenco in a more intimate setting. “If I can help others understand [flamenco] that would be success for me. Something I can give back to New Zealand. “I’d love to see flamenco grow here so if there are any interested musicians out there, just reach out to me through social media.”

Double dance debut An ancient sequence of nature and the space between fiction and reality are brought to life in Night Light – an evening of earthy contrast, to be presented by The New Zealand Dance Company (NZDC) in Christchurch on September 16.

ight Light shares double billing with another vibrant work, The Fibonacci and Uku – Behind the Canvas by two dynamic New Zealand choreographers. From floating through time and space, observing nature’s mysterious golden spirals in Colombus’ The Fibonacci to grounding down with feeling in Elliott’s Uku - Behind the Canvas where confronting storytelling is at its most raw, these two divine performances delivered one after the other offer an evening of earthy contrast not to be missed. NZDC Co-artistic Director and choreographer of The Fibonacci, Tor Colombus describes Night Light as “a reflective offering in response to this moment in time that we are collectively living through.’’ Co-artistic Director James O’Hara adds the dance “invites us to listen, consider, regather and also to celebrate how fortunate we are in New Zealand right now.” “We are thrilled to share these two dynamically contrasting yet complimentary

works in this double bill originally commissioned by NZDC Founding Artistic Director, Shona McCullagh,” says O’Hara. The Fibonacci by Colombus explores energy pathways through dance, sound and place in relation to the mathematical Fibonacci sequence. With meditative movement, the work reveals a tapestry of pattern and form, which provokes a feeling of connection to something deeper than the detail of each individual action. The world premiere of emerging Māori choreographer Eddie Elliott’s Uku – Behind the Canvas explores the power of vulnerability and the strength within struggle. With inspiration from visual artist Andy Denzler, Eddie draws from the pūrākau (storytelling) held within Te Ao Māori and weaves it with New Zealand Sign Language to reveal the complexity of his own human experience. Anticipation and intensity are at the heart of movement paired with cleansing uku (clay) which symbolises the relationship between Hineahuone and Tāne – where we have come from and to where we will return.

Runway looks for Fashion Week Christchurch make-up artist Kristen Stewart heads to Auckland this month to create some amazing looks for New Zealand Fashion Week (NZFW). Metropol finds out exactly what she’s up to and her predictions for upcoming trends.

ften Kristen Stewart is found teaching others how to pop the wow into their makeup, however it’s her artistic skills to the fore when it comes to NZFW. Director of the Christchurchbased Kristen Stewart School of Make Up, she’s no stranger to NZFW, having been involved with the event since her mother, Dame Pieter Stewart founded it in 2001. This year she returns to it with her team of make-up artists to create stunning runway looks all week long, from August 23 to 29 in Auckland. One of her favourite beauty trends currently she describes as “fresh skin”. “I am so pleased the trend is going back that way instead of layers and layers of foundation and contouring. “Keeping make-up simple and clean with a touch of something, either graphic liner, coloured mascara, cute cheeks or a stained lip.” Looking back over NZFW memorable moments, her highlights have included spending three eye-opening days there with Pamela Anderson. “She taught me so much, like stacking three sets of lashes.” Working on Annah Stretton’s show where she asked a model to go out with a boar’s head on was memorable also, although the funniest show for her was when organisers used some kind laundry detergent flakes as snow on the runway. “The models were slipping over and off the stage,” she recalls.

Fashion week rituals
“No rituals but we have to have music. This can be a little tricky catering to everyone’s needs and wants but it is a must.”
Favourite NZFW look
“There have been so many, but I am a lover of beautiful fresh skin with an impactful singular focus point, like Adrian Hailwood’s collection where I used fluffy feathers as eye lashes.”
Current favourites
“My favourite Instagram pages are @jamesmolloymakeupartist, @lochiestonehouse and @nettart to name a few. Always super inspiring.”

One could argue that Flying Nun defined this era of Kiwi music, and there’s a particularly underground flavour to the world that surrounded it.

The unruly art and design of New Zealand’s maverick record label Flying Nun is on display exclusively at Christchurch Art Gallery Te Puna o Waiwhetū from August 21 to November 28. Metropol looks back on the label’s last four decades.
C
elebrating the 40th anniversary of the founding of Flying Nun Records in Ōtautahi Christchurch, Hellzapoppin’! The Art of Flying Nun brings together original artwork and design, film, record covers, posters and photography from some of New Zealand’s favourite bands. Christchurch Art Gallery Director Blair Jackson describes the exhibition as “colourful and a lot of fun – and closer to the pop art end of the scale”. “One could argue that Flying Nun defined this era of Kiwi music, and there’s a particularly underground flavour to the world that surrounded it. Seeing it today gives you that same buzz – there’s lots of creativity and weirdness to lose yourself in, and we’re expecting music fans from all over New Zealand to make the pilgrimage to see this vivid slice of Kiwi music history all under one roof,” he says. From rare collectable records and vintage posters to original artworks and paste-up designs, this exhibition explores the art and artists behind the music. Bands represented include Straitjacket Fits, Scorched Earth Policy, the Chills, Tall Dwarfs, the Bats, Pin Group, the 3Ds, the Verlaines, the
Dead C, Look Blue Go Purple, the Gordons, Sneaky Feelings and others. The artists who brought their music to visual life include Chris Knox, Lesley McLean, Ronnie van Hout, Robert Scott, Alec Bathgate, John Halvorsen, John Collie, Jane Dodd, Martin Phillipps and more. “On a purely logistical level, Hellzapoppin’! is also one of the bigger exhibitions we’ve had in a while – there’s so many pieces that the majority of the ground floor of the gallery will be taken up with it, with music videos playing on the walls, and that’s before you factor in the stage we have set up for live gigs,” Jackson says. Hellzapoppin’! launches with a free opening party from 7pm on Friday August 20, with performances from some of Aotearoa’s favourite musical acts. Throughout the duration of the exhibition, local acts (from seasoned professionals to enthusiastic amateurs of all ages) will be invited to perform special one-of-a-kind free gigs onstage. Visitors can also enjoy talks, demonstrations, performances, screen-printing and more.

’m still processing it! It’s an honour to receive this level of acknowledgment for our work, which has been very much a labour of love and functioned on very limited time and resources. The highly commended recipients were amazing so we were very blessed to receive it,” says Lis Rate-Smith of Art-East Christchurch. The therapeutic art group was established in 2014 to create a safe place of support for people who are struggling. “I know how many creatives battle with substance dependency and mental illness. When I started studying addiction and going on placements to AOD (Alcohol and Other Drug Services) agencies, I was drawn to the conversations with people who were practising art and how they were benefitting from it in the early stages of their recovery,” explains Lis. Just over two hours north of Canterbury, a drive through rolling hills and wineries will lead you to a stunning, winding coastal road to the beautiful town Kaikōura. The perfect place for a weekend getaway, Kaikoura is full of adventure, incredible scenery, local delights and good old, small-town charm. Here is an insight into what you will find in the magical coastal town.
Eat If Kaikōura is famous for one thing, it is the seafood and specifically the crayfish. An international delicacy and something the locals are expert in. Down at the waterfront, you’ll spot boat after boat heading out to drop craypots into the sea, coming back a few days later to pull them out of the water full of crays. The local restaurants and bars are big buyers of fresh catches so be sure to scout the menu for the daily catch. If the weather is on your side, classic fish and chips enjoyed on the stony beach makes a delicious and fun lunch, especially if you manage to spy a pod of dolphins or seals splashing in the shallows.

Kaikōura is the place to go if you are wanting to get up close to marine wildlife. Pods of dolphins are often spotted hanging around close to shores, getting playful with boats. If you are up for a dip, there are companies that will take you out to swim with the dolphins, so you can get up close to the majestic animals. Whales are another deep-sea mammal that call the Kaikōura waters home, and there are whale watch boats and helicopters that take tours to spot the giant beauties. Last, but not least, a short drive through town will take you to the seal colony, where you can spot hundreds of seals sunbathing in the rockpools.

With stunning views in every direction, it is hard to be disappointed when picking where to wander. The peninsula walkway is a favourite walk for locals and visitors. It will take you up along the coastal cliffs and offer stunning views of the big blue, mountains, and township. Meandering through the quaint township, you’ll find boutique homeware and gift shops to find something special to take home. There is a selection of tucked away bars to stop in for an afternoon drink, or a cosy café to settle into. Alternatively, picking up a few local goodies and a bottle of wine makes the perfect spread for an afternoon curled up with a book back at your accommodation.

Q: What happens to existing staff when a business sells? A: To ensure any business continues smoothly after sale, we generally
recommend that the Purchaser takes on existing staff when taking over the business. One category of employees, known as Vulnerable Employees (which includes cleaning and catering staff) are legally protected at sale time – the Purchaser generally takes them over, irrespective of what is decided for other staff. We prefer Vendors to be “upfront” with their staff when taking a business to the market, and to tell staff that the business is for sale. Vendors may be apprehensive at the possibility of losing staff, but, in reality, the Purchaser usually needs staff to stay on, so the risk of job loss is quite low. After reaching agreement to buy, the Purchaser may wish to speak to staff, and offer contracts for ongoing employment. These contracts normally offer pay rates at or above the level the Vendor has been paying. So, for both Vendors and staff, well-established procedures ensure that the transaction from Vendor to Purchaser is as smooth as possible. Metropol 5 August, 2021 21

Hamish and Sarah became owners of Harcourts Halswell in 2017, in partnership with the Grenadier Franchise. There are 26 salespeople connected to it and it’s envisaged the new branch will have a similar number, including high profile agent Lin Ma, who will bring her team. “We want to expand what we have achieved at our Halswell branch. The most important thing to us is achieving the best results for our clients. It’s never about money, it is always about doing it once and doing it right.” Auction has become a popular method of sale in Christchurch, as sellers can be sure to get the true market value of their home, and buyers can be sure they’re negotiating on the same terms as all other interested buyers. Their achievements at the current branch speak for themselves, so it will be exciting to see this office grow. know from my own experience how frustrating it can be to ring an organisation and hear nothing but an automated voice. I do not take my relationships with my clients for granted and value greatly the trust they have given me to provide advice on their personal risk insurance cover.” Instead, Michael takes all the time necessary to talk with clients
face-to-face and to hear about their individual circumstances. Only with that depth of personal understanding can Michael apply his years of professional experience in the insurance industry to recommend the best selection of products to secure and protect what the clients love – their family, their home and their lifestyle – against any misfortune. “Being an independent broker, I have

Innovating Business
Celebrating small Canterbury businesses innovating in hard times
Mylk and cookies An idea that originated in Indonesia is now a fullyfledged business in Rangiora, supplying versatile nut milk bases (or mylk) throughout Canterbury and beyond.
J
emma Turner and her partner Max spent 11 months in Lombok, embracing the Indonesian culture, committing to a slower pace of life, and eating a more wholefood, organic diet. “Each week I’d purchase freshly made coconut and cashew mylk from one of the yummiest vegan cafes in Lombok. It
was an eye opener to learn what they used to make these mylks... cashews/ coconut, a squeeze of lemon juice, and water,” she explains. “That’s it! They also used the whole nut (including the skin) so there was no waste. And the taste? Absolutely delicious and super creamy.” Back in Rangiora, Jemma has created her own Mylk Made range of nut mylk bases, combining the simplicity of her favourite Lombok mylks into a sustainable product that is good for people and the planet. The resulting products can be used as milk, for baking and in cooking. “Mum (Corrine Turner) and I work as a team in the business,” says Jemma. “We view mylk bases as a sustainable alternative instead of buying plant mylk in a carton. We believe mylk bases are the way forward. You don’t need any unnatural additives or preservatives for it to taste good. In fact, we stand by it tasting better with less.”

Maximising the end result Buying or selling property? Now is a great time to do either or even both.
W
ith strong demand for properties all around New Zealand, and no signs of it slowing, buyers and sellers need to be at the forefront of real estate activity, or they will miss out. That’s the advice from experienced realtor Kathryn Picton-Warlow, whose specialist skills include both marketing and sales. Kathryn has built-up an intimate understanding of Christchurch City and Canterbury lifestyle property and says now is absolutely a great time to buy and sell. “If I was a buyer, I wouldn’t want to be caught out of the market as we don’t know if, or when, it’s going to slow down. I’m currently working with buyers who have missed out on five to six properties. “Every month that they’re
out of the market could potentially be costing them $20,000,” she explains. With seven to 10 potential parties currently interested in each property for sale, she adds that it is also an ideal time to sell. “Rateable values (RVs) are becoming irrelevant in this market and quite often we’re seeing clients who have been bank-imposed with the banks being three months behind current values. “This is proving quite problematic for buyers. I would certainly be looking at selling this side of Christmas as interest rates are likely to rise, however with the amount of people moving back from abroad and into Canterbury, I can’t see these prices slowing down in the foreseeable future. There’s such a shortage of stock.”
Kathryn’s real estate tips: Investment property
I
f you’re looking to buy an investment property, make sure you buy something that meets the Healthy Homes standards. “Try to buy as modern a property as you can in the best location as this will give you better returns. “I’d also recommend looking at some of the outside regions – there’s value to be had in some regional towns currently due to the lack of housing. “Also, research what your potential capital gain could be in the right location.”
Kathryn Picton-Warlow
Selling property
P
hotography is extremely important so use an experienced property photographer. “Choose an agent who will market the property correctly and who has the ability to create competition and trust. “Presentation catches people’s initial attention and leaves a lasting impression. At open homes, a house should instantly appear uncluttered, smelling fresh and clean as there is a short time for buyers to form an opinion. “If this process is followed, this will ultimately maximise the end result.”

n recent years, the team at the Skin Rejuvenation Clinic has seen the sort of aging in the neck area on women in their 20s that, in the past, would have been expected to be seen on women in their 50s or 60s. This so-called ‘tech neck’ is a problematic phenomenon, as the constant motion of looking down at our phones is creating deep folds in the skin, which, over time and with repetition, causes the skin to ‘detach’ from the underside of the epidermis.

or many industries, working from home is more common in the Covid-19 era and it’s likely to have a big impact on the amount we are moving during the day, which is affecting our health,” says Heart Foundation National Advisor, Lily Henderson. “We’ve looked at the evidence and the impact of too much sitting and not enough physical activity is clear,” Lily says. “People who sat the most had a risk of heart disease that was 29 percent greater than those who sat the least.” The Heart Foundation’s advice is to reduce and limit long periods of sitting and to incorporate any type of movement during the day to reduce the risk of heart disease.
Try these: Stand up and stretch throughout the day, i.e. 2 minutes of stretching every hour. Find an online workout or yoga class to do during your lunch break. Schedule short bursts of physical activity into your day (either before, during or after work). Take phone or video calls while standing with headphones on. Set a daily or weekly goal for physical activity and celebrate small wins as you go.

Practise and prepare
The best way to overcome anxiety is to go over your notes several times, then practise. Record yourself or have a friend listen to and critique your performance.
Identify your audience
Before you start to write your speech, consider who the message is aimed at. Learn about your listeners so that you can determine your choice of words.
Create a framework
Create the framework for your speech. Write down the topic, general purpose, specific purpose, central idea, and main points.
Open and close
Savvy speaking
Start with an interesting statistic, anecdote, or quotation. Conclude with a summary and a strong, memorable statement.
Use audio visual sparingly
Tongue-tied? Don’t know what to say or how to say it? You’re not alone when it comes to public speaking.
Audio visual presentations should enhance and clarify your speech content. Too many can break the direct connection to the audience.
M
Adapt to feedback
any otherwise savvy business men and women shy away from stepping up to the podium and making themselves heard. There’s a big difference between talking to yourself in the mirror and facing a live
audience, eager to hang on every word. Practice doesn’t make perfect, but putting in a bit of time to prepare will help you deliver a better speech. Here are some tips from Metropol to help you:
Other top tips: DON’T JUST LOOK: BOOK!
Keep the focus on the audience. Gauge its reactions, adjust your message, and stay flexible.
Be yourself and let your personality shine through. Use humour, stories and effective language. Don’t read your speech; use cue cards to jog your memory. Enrol in a Toastmasters Club, www.toastmasters.org.nz

Exciting city venues The opening of Te Pae, Christchurch’s convention centre, has been confirmed for late October and already bookings are rolling in.
T
his is exciting news for the team at Christchurch Attractions, with the company delighting to feature the most iconic attractions our city has to offer for conference and business delegates. “A unique offering for an event is to use Christchurch’s heritage trams,” says sales manager Caryn Stevens. “Delegates can be supplied with a tram pass as part of their conference registration. The trams can easily move delegates from central city hotels to Te Pae and the Town Hall, Riverside Market or the Arts Centre and Museum precinct.” Guests can also be treated to a private one-hour tram ride while enjoying drinks and canapés and seeing central Christchurch - pre-dinner socialising in a very distinctive and memorable way. “Conference organisers have become very keen on their delegates getting out and about,” says Caryn.
“Fresh air and different sensory experiences are good for delegates’ welfare.” Christchurch Attractions’ punting excursion on the Avon from the Worcester Bridge, just a few steps from Te Pae, through Victoria Square and past the Town Hall offers a relaxing time out from a conference. The Christchurch Gondola is another wonderful option for events, conferences and meetings. Situated atop the Port Hills with a cableway ride to the summit, the multipurpose venue space can host a range of activities and functions including buffet breakfasts and lunches, drinks and canapé functions and seated dinners for up to 120 guests. Panoramic views of Christchurch and Lyttelton, and walking tracks at the door make this a unique venue for various events. To find out how Christchurch Attractions can give your conference or meeting that point of difference, get in touch today.

Let’s talk teams Team building has become a bit of a buzz word in the business world and for good reason.
S
ome simple yet effective training can help improve the overall function of your company. Incorporating it into your business structure and routine should ultimately make the business more productive. Here are some suggestions from the team at Metropol: Show your team they are valued: Remind them regularly how much you value the things they do. Pass on praise. Reward them: This doesn’t have to be money, but a small
recognition of a job well done. Establish trust, build dependability and strengthen communication. Every now and then, forget about work and let your team de-stress. Organise a cocktail hour, a football game or a barbecue for instance. Think about hiring a professional, someone who does team building for a living to help design an activity that is perfect for your company and the people on your team.

S
even years on from starting her new venture, TwentyFour Catering, Ashburton chef Chantelle Quinn is quietly confident there is no event too big or small for her to tackle. “It’s always nerve-wracking to start a business, and even more so when what you’re offering is something a bit different,” Chantelle says. “I love getting to know what people really want to eat and then sourcing the very best options for them.” Private in-home dining is
a service that Chantelle has seen really grow since starting TwentyFour Catering. What once might have been considered an option just for the rich and famous is much more common these days as an ‘affordable special occasion’. Chantelle says the work is equally rewarding at a wedding for 250 people or a charity event for 400! “Being part of creating something special for a couple’s big day, well that’s always going to be a privilege and an honour.”

Coffee, cake & conferences
The Waimakariri district is growing fast, especially Pegasus Town and Ravenswood. The residents expect high quality facilities to complement the great lifestyle they have developed. One Pegasus cafe definitely meets that challenge, as both a restaurant and a function venue.
F
lat White Cafe and Bar is located close to Lake Pegasus in an attractive timber and stone building. Inside is equally enticing with different seating areas, plants and even books to read over coffee. A cafe is judged on its food and Flat White offers a great selection from cabinet to light meals with a breakfast/lunch menu available daily. There might be creamy mushrooms, seafood chowder or salmon risotto. Everything is made fresh on-site with the cabinet selection ever changing. The chefs at Flat White relish variety. They create new menus every week from local seasonal produce for Friday
evening dining. These menus are innovative. Recently there have been dishes such as feta saganaki with drunken figs and honey drizzle, Bulgogi Korean pork, and lamb Birria Mexican stew. The chefs also create fully customised catering for any special functions or events whatever those might be. The cafe has a range of different spaces that are ideal for private bookings. The enclosed courtyard with its seating and gas fire is totally separate from the rest of the cafe and suitable for a meeting followed by a lunch or drinks and canapés. hile the centre will bring a host of national and international conventions to the city, this stunning facility is also set up to host local events and meetings. It contains a succession of beautiful and flexible spaces, including 24 meeting rooms with capacity from 20-2000 people. from meetings to dinners and live entertainment,” says communications manager Emma Hartley. “It’s highly flexible and it’s for everyone.” A public open day is planned this spring. The cultural and architectural narrative of the unique building is fluid and integrated, inspired by the Māori creation story and including design elements inspired by Canterbury’s braided rivers, snow-capped mountains and open plains. The name Te Pae also holds
significant meaning, drawing inspiration from several phrases in te reo Māori, including Te Pae Tangata – a place to meet and converse. The first of a new generation of convention centres for New Zealand, this unique building includes a specialist in-house AV team operating the latest technology, allowing for hybrid and fully virtual meetings. The backing of ASM Global, a leading world venue management company with more than 300 venues, means

Roll up, roll up Pastry is a versatile component of many dishes, comprising a major component of creations such as pies (sweet and savoury), Cornish pasties, sausage rolls, and croissants.
A
combination of flour and fat (butter, lard, or suet), pastry falls into five basic types: shortcrust, filo, choux, flaky and puff. Shortcrust is arguably the most versatile as it can be used for savoury and sweet pies, tarts and flans. Basic pastry is usually two parts flour and one part fat, but technique is also important. Here are some tips from Metropol about how to achieve perfect pastry:
FLOUR
TEMPERATURE
FAT
WATER
Your choice of flour is vital for the type of pastry you want to make. Softer flour with lesser protein makes a shortcrust pastry that is crumbly rather than tough. Ordinary plain flour is fine. If making puff pastry, adding a little strong bread flour with lots of protein to your plain flour can be a good idea.
Purists recommend cold ingredients, cold equipment and marble boards. Keeping the butter cold also helps when making short crust pastry because it doesn’t melt into the flour when you are working it in. With puff, cold butter provides a barrier and air pockets between the pastry layers creating its flakiness.
Fat provides flavour and also stops unwanted gluten development in pastries. Always rub butter into the flour before adding liquids. In flaky or puff pastry, the butter is left in chunks so that when it melts in a hot oven, it leaves air pockets between the thin pastry layers.
Add water gradually, a little at a time until the dough looks lumpy but no longer crumbly. If you add too much and the pastry is sticky, add a little more flour, cutting up the pastry and tossing the pieces in flour and then pushing back together. Excess kneading to break up flour usually means tough pastry.

Tasty, versatile and keto-friendly “Love and sausage are alike. [You] can never have enough of either.” – author Dean Koontz
ete Nolan at Bangers’n’Bacon agrees. He loves the company’s clean-eating keto-friendly English Breakfast sausages accompanied by a rasher of bacon, a fried egg and slice of tomato for breakfast at the weekend. Chief cook (and bottle washer), Pete says his Italian sausages make a great winterwarmer pasta dish using gluten-free keto pasta, while the original pork and peppered pork sausages make the perfect keto bangers and mashed cauliflower, and the chipotle sausages wow a one-pot winter warmer casserole using low-carb seasonal vegetables or a keto sausage and cauliflower-rice chilli bowl. All products are gluten-free, preservativefree, filler-free, additive-free and taste so good, you really don’t need sauce! They were originally designed for the owner’s children who have a wide range of allergies and intolerances, and you can taste the difference. “Keep an eye out for them in your local supermarket and if you don’t see them on the shelves, ask the in-store butchery manager for Bangers’n’Bacon. You too will fall in love with these keto-friendly, low-allergy products,” adds Pete. Just pop into the factory reception at 4/1004 Ferry Road in Ferrymead during the week or Mt Pleasant Farmer’s Market on a Saturday morning. Phone 03 384 BACON or email orders@bangersnbacon.com. Ginger Biscuit & Apple Frangipane Tart Courtesy of Le Creuset SERVES 8-10
Ingredients BISCUIT BASE 400g ginger crunch biscuits, finely blitzed 110g butter ½ jar crystallised ginger FRANGIPANE 150g butter 150g caster sugar 4 organic/free range large eggs 2 teaspoons almond extract ¼ teaspoon vanilla paste 150g ground almonds TOPPING 20 pink lady apples, sliced with a mandoline into rounds 250ml orange juice 200g caster sugar 250g melted butter Icing sugar, to dust
8 9 10
Preheat the oven to 160ºC/ Fan forced 140ºC. Begin by blitzing the biscuits into a fine crumb and then melt the butter and finely chop the ginger. Next, combine the biscuits, ginger and melted butter together in a bowl and firmly press the mixture into the base and sides of your cast iron shallow casserole dish. Aim for the base and sides to be equal thickness, just under half a centimetre or so. Place the dish into the pre-heated oven and allow the base to cook for 5-10 minutes, until the biscuit base looks like it is set. Remove from the oven and allow to cool. For the frangipane mixture, combine the butter and sugar, whipping until it becomes lighter in colour and fluffy in consistency. Then add in the eggs followed by the almond extract, vanilla paste and finally the ground almonds. Mix together well. Spoon the frangipane mixture over the biscuit base and place into the oven at 170ºC/ Fan forced 150 ºC. Cook until it begins to turn golden. This should take around 20 minutes While the frangipane is cooking, take a mandoline and slice the pink lady apples. Once sliced place in a large bowl filled with the orange juice and sugar, this will help to soften the apples so you can mould and roll them into the rose shapes without them snapping Allow the apples to soak for at least 10 minutes or until the frangipane is cooked To make the apple roses, begin by rolling one apple slice, place another slice around this and repeat until you have a rose-like flower. Cut a small hole in the top of the frangipane and place the rose into the hole to ensure it stays in place Once you have covered the entire base with apple roses, sprinkle with icing sugar and serve with warm custard.

A toast to excellence Raise a toast to The Elmwood, a national finalist in the Hospitality NZ Awards for Excellence in both ‘Best Local’ and ‘Excellence in Gaming’ categories. As there were a record number of entries, this is in itself a cause for celebration for owners Marty and Naomi Fuller (pictured).
hat does it take to achieve a finalist placing in the awards? In the three years Marty and Naomi have owned The Elmwood, they’ve made a lot of changes to create the perfect vibe. Pie vibe is important. Sometimes the feel of where and how you buy your pie can affect your experience.
68 5 August, 2021 Metropol
t’s a staple of growing up in New Zealand and the good old-fashioned pie has now hit new levels of stardom in our gastronomic repertoire. Celebrity Chef, Peter Gordon, who has prepared pies for the Queen, was a judge in the just announced 2021 Bakels New Zealand Supreme Pie Awards. “A great pie is a very good thing, and we do many really great pies in New Zealand,” says Peter. Award-winning pies start out by not just looking great, they need to be the correct weight before any further judging. Most of the categories need to be 280g or less and no soggy bottoms. Bakels have 12 award categories but, in my search, I cut it down to some simple rules. Pie vibe, pastry, meat/filling, taste and price. Prices range from the $2, “dear God no” pie all the way to the $10.50 Cassels milk stout pie. Finding a great pie for mid-range $5.50 was a challenge but they are out there. The Hills Road Bakery has a stunning steak and kidney. Pie vibe is important. Sometimes the feel of where and how you buy your pie can affect your experience. Who doesn’t like a Hororata pie straight after a day at Mount Hutt? Craig Minehan from Hope River pies in Lyttleton told me: “Good cooking makes a good pie, pastry is important, but the filling is what it’s all about.” Their beef cheek, red wine and grain mustard is brilliant. Piesofcanterbury, which I teamed up with in my search for the perfect pie, has received a lot of feedback on the best finds. As always, the Fairlie Bakehouse, which has a cult following, stood out. Behind the legendary bakery/cafe is a buzzing factory, where Franz Lieber (internationally trained chef/founder) and his tight-knit team create an amazing array of gourmet pies that are all ‘made with love’. Fairlie Bakehouse believes fresh is best and make all baked goods fresh onsite daily. It takes pride in using quality, locally sourced produce. Other top mentions from our search go to The Sheffield Pie Shop, Michaels Hillmorton Bakery, Gorgeous Foods, Sissys Kitchenette, Crisp Cafe, Una Bakery, Bakehouse Cashmere, Country Kitchen and Le Bakermen. Couplands and Kai Pai bakeries won awards in this year’s Bakels contest, but in 24 years the supreme award has never gone to the South Island. Maybe next time? In the meantime, send your pie feedback to piesofcanterbury.

Gin giants of Geraldine Aotearoa has a growing number of gin distillers yet few have made such a mighty impact in such a short time as Geraldine couple Saskia and Andrew Lewis, creators of Humdinger Gin.
S
eptember 1 last year saw the first bottles of their gin produced, and a few short months later it has already
achieved national and international recognition in three prestigious gin and spirits competitions.
Humdinger won two silver medals in the London Spirits Competition, 2021; two bronzes in the International Wine and Spirits Competition (IWSC), 2021; and in the New Zealand Spirits Awards, 2021, for Dry Gin in the Gin Category, a gold medal. Andrew says paramount to the brand is that people know exactly what goes into each bottle. “We have big glass doors at the distillery, so visitors can see everything. The truly natural botanicals are on display. We’re fully transparent in everything we do.” Andrew and Saskia never
forget those championing them either. “The support from locals, friends and family means we can run the still frequently, which enables us to really refine our recipe, the process and equipment, to the point where our gins are consistently winning awards. Without that tremendous support, we wouldn’t be where we are today.” Visitors can sample Humdinger Gin at 3a Talbot Street, Geraldine. Phone on 027 463 4790. The right kind of storage will look different in every home and can work into the design of a room depending on materials and colourways. Wooden cabinetry and cupboards are classic and simple, and extremely practical for storing things
out of the way. They are also good in hallways and tight spaces, as they can nicely sit up against a wall and not take up too much space. Baskets are a nice way to store loose bits and pieces and stops these creating clutter, such as shoes, dog leads or umbrellas. his hallway has been given a creative touch with Resene FX Paint Effects medium coloured with Resene Half Alabaster. Resene FX Paint Effects is a semi-transparent product, that you add colour to. By way of different application techniques, such as sponging or ragrolling, it creates a unique effect on your walls. This is particularly handy if you have a few marks that you want to cover! Bring in the darker, plain colour of Resene Explorer on your side wall, echoing it in accents such as your desk and vases or bowls. Paint a pattern in a subtle light colour on the floor, such as
the one here that mimics pebbles. Not only will this create a sense of drama, but also encourage the eye to look around the room. If you’re worried that the space is too small or doesn’t receive enough light from a small window, a mirror will bounce what light there is, creating a greater sense of space. There may not be much floor area, but there is room above, so reach up and use this vertical space with a free-standing coat stand. Stylish and practical, it can be coated in Resene Explorer to provide colour continuity as well as providing a handy storage solution for coats and bags.

The Clocks Bookshop
Not long ago many predicted the end of books. But during the 18 months that The Clocks Bookshop has been open, book sales have boomed and at least three other independent booksellers have opened their doors in the South Island.
he Clocks has more than doubled the number of books it was carrying when it opened. It still specialises in children’s books, (classics such as Harry the Dirty Dog and The Nickel Nackle Tree, still sell well), along with cookbooks – (Romanian, Baltic or Burmese recipes anyone?), and crime books (Donna Leon, Peter Lovesey and 70+ Agatha Christie titles). But now the non-fiction and general fiction shelves are also overflowing with titles that you may not see in the mass market stores. “What an independent bookshop can offer is discovery,” says The Clocks Bookshop’s owner, Ann Reeves. “That chance to find, via our personally curated selection, words or pictures you may very well fall in love with.” Ann adds of the Elmwood Village site. “We are fortunate to be here and we have such a fantastic customer base. So many people come in and say, ‘How are you going? It’s so good to have you here. Please stay.’” And they definitely are not going anywhere. www.theclocksbookshop.co.nz

uperhome co-founder and designer Bob Burnett says the tours are a chance to visit some of the country’s most beautiful, sustainable, healthy Superhomes. “Join us for an inspiring day of fun and discovery with expert commentary from owners, designers, builders, and project participants. Hear about what makes a home healthy for people and the planet. Ask the owners questions about what it’s like to live in a Superhome and the process of creating one. “The Superhome movement provides the vehicle for educating residents on what really makes a healthy home. As a notfor-profit organisation, we are not selling specific systems and products. We advocate for what works, based on proven science. There is no greenwash or smoke and mirrors.

Blending architectural influences
T
Architectural designer and Superhome co-founder Bob Burnett and his wife, Japanese architect Shizuka Yasui, naturally chose the best of both New Zealand and Japanese influences when designing their own family home in Broad Oaks on Christchurch’s Port Hills.
he multi-award-winning house served as a Superhome show home until the second Christchurch earthquake in February 2011. Repairs were delayed over the last nine years but have now been completed and the home is better than ever. The Superhome Movement focused initially on new homes, however it also recognises the crucial importance of renovations and upgrading.
Superhome features:
“Even new, a home built to New Zealand Building Code produces seven times the carbon emissions required to meet the Paris agreement which aims to limit global warming to 1.5 degrees Celsius,” says Bob. “We can’t solve climate change and the biodiversity emergency by only building better new buildings. It is essential that we fix the existing building stock, too.”

My philosophy is very simple be reliable, honest, and produce consistently good results.
New Brighton stunner Designer Warren Clarke wanted to build an ultra-energy efficient home that would also be a practical family home. The home achieves the maximum Homestar 10 rating from the New Zealand Green Building Council — one of only three in New Zealand to do so.
T
he layout maximises space by eliminating passageways and making areas multi-purpose. An open plan layout and good indoor/outdoor flow were also important. There is no garage, both to save costs and because Warren believes that transport will change in the future.
Superhome features:
124 Bowhill Road, New Brighton
Warren based his design on Passive Haus principals, with north-facing windows to allow passive heating of the slab foundation. He then concentrated on airtightness and insulation. The floor, walls, and roof are all super-insulated. Fibreglass framed windows are low-e and argon gas filled. Mechanical heat recovery ventilation (MHRV) removes the stale moist air and brings in fresh air. In-slab hot water pipes, rooftop photovoltaic panels, and a heat pump heat the interior and keep power bills low. Grey water recycling, acoustics, and energy reduction all helped the home achieve the top Homestar rating. We don’t have winter and summer duvets or winter and summer PJs. It’s the same temperature in every room.”

he result is a modern reinterpretation of the California bungalow style, with significant Japanese influence. The home incorporates timeless and enduring architecture, with the addition of latest building technologies and techniques to create a comfortable, energy-efficient, sustainable home. The sloping stone and timber walls and a sweeping roofline ground the building. The floor plan is completely different to a bungalow. In the art
Having a feature wall using wallpaper is a fun way to switch up a room without committing to painting all four walls. You can make this as dramatic or understated as you like by sticking with natural colours, or going for a bold block colour to really make a statement in the room.
Art is an individual and personalised part of a home. On a neutral backdrop, a colourful piece of art can become a beautiful feature in the room and really set the mood of a space.
Underfoot A rug instantly softens up a space and brings real cosiness to the room. Adding a rug can bring in colour as well as texture; both elements that will change up the feel of the room.

A colourful touch Neutrals are safe and timeless, but pops of colour in the home brings life and brightness into spaces. Here are six easy and non-intimidating ways to add a little touch of colour to your home.
Throw it on Blankets and throws are a simple addition to the lounge or bedroom to inject instant colour. Draped over the arm of the couch or at the end of the bed, these cosy accessories can tie in feature colours throughout the room.

Go natural
If too much colour in your home is a terrifying thought, picking a few small utensils or accessories is a nice way to add some colour. A beautiful bright fruit bowl for the bench or a set of coloured teacups or mugs are nice ideas to start.
An easy injection of colour into a space is with natures greenery. Indoor plants come in many shapes and sizes; they can be potted in the corner of a room, placed on tables and shelves, or even hang from the ceiling.

Create a mini orchard Nothing beats the flavour of delicious home-grown fruit; knowing exactly what’s gone into, and onto, that fruit is an extra bonus. Even with minimal space, it’s easy to create a mini home orchard. Plan your varieties carefully, and you can step out of your back door and pick your own fresh fruit for most of the year. Terra Viva’s Peter Worsp gives his expert advice on mini orchards.
D
on’t be deterred by small spaces as most fruits can be grown in pots or in EasyGrow bags set in the ground at planting time. These mesh bags limit the growth of larger roots, which limits the tree’s size, but still allows fine feeding roots through the mesh. Use top quality planting mix, the appropriate fertiliser, and regular watering and hey presto! You’re an orchardist! The secret to bumper crops of fruit is well-prepared soil with compost, sheep pellets, real blood and bone, and 24-month slow food mixed in. Alternatively, for containergrowing, use top quality potting mix as once the tree is in the pot you won’t be taking it out for some time. Regular watering in the warmer/growing months as well as an occasional top-up feeding will reward you with the freshest of fruit.
Spoilt for choice:
Want to grow your own Vitamin C?
• • •
Despite our winter-cold climate, citrus is very popular in Christchurch and several varieties are available in a dwarf option, making them suitable for container-growing. The EverGrow bags can also be used to restrict size for in-ground growing.
There are plenty of fruit varieties ideal for pots or ground planting. • 12 varieties of apples (6 dwarf varieties) • 7 varieties of apricot • 9 varieties of plum • 7 varieties of nectarine (3 patio dwarf) • 17 varieties of peach (5 patio dwarf) • Also including columnar apples, double-grafted apples and pears, cherries, figs, pears and quinces.
Top soft fruit tips:
• •
feijoas: same growing conditions as citrus strawberries: sun, quality well-drained soil, regular watering blueberries: same acid soil and fertiliser as rhododendrons, plus sun and water grapes: average soil with good drainage, general fruit fertiliser, hard pruning in winter raspberries, blackberries, boysenberries: water well, feed regularly, prune hard in winter once all the leaves are off
Top citrus tips: • • • •
plant in full sun feed with citrus food water regularly grow in well-drained, well-prepared soil
Top fruit tree pruning tips: • • • • •
increased airflow and sunlight penetration for maximum fruit cut branches just above an outward-facing bud to guide growth removing diseased wood and crossing branches shaping the tree to an ‘open vase’ shape keeping the tree small with vigour-reducing pruning in summer

Having a clean and tidy space is an instant moodbooster but given the myriad of time-consuming tasks which take up our days, it can be hard to do it all. Here are some of Metropol’s quick and dirty tips for targeting forgotten spots at home.
Prints and original artwork with matt boarding and framing options available at Art by J Steel.
Knobs, handles and switches: Think how much these are touched! Wipe them at least once a week, especially in the kitchen and bathroom. The same goes for your TV remotes. Curtains and blinds: Not only do these block out light, but they collect their fair share of dust and mildew. Ick! Check the fabric to see if it can be machine washed, or simply wipe blinds with a damp cloth. Colourful selection of reasonably priced, handmade woollen Kilims at Persian Rug Gallery, Northlands Mall.
Great selection of indoor plants and pots at The Ivy.
Dishwasher and washing machine. Yes, the irony. If these don’t seem to be doing their jobs, or smell a bit funky, scrub with baking soda and vinegar and run a cycle with nothing in it. Hot wash on the washing machine, of course.

Mural magic at Riverside
The Canterbury Heritage Awards recognise excellence in heritage tourism and conservation, and celebrate the repair and reconstruction efforts that have gone into revitalising the city following its devastation by the 2011 earthquakes.
S
everal categories make up the awards including the heritage tourism award, in which the Riverside Market mural received a certificate of special recognition. On the east side of the market building, the stunning mural pays homage to the buildings lost in the 2011 earthquake. The complex mural designed by Josh Thompson tells a story of Christchurch’s past, present and future. Since opening last year, Riverside Market has quickly become a buzzing destination in the heart of the city for locals and visitors looking to explore some of the city.
General Manager Rachel Gould says, “Riverside was created as a focal point for the city to regenerate the Central Business District for locals and tourists. It wouldn’t be the success it is without the traders who create a warm, welcome and inclusive environment.” Riverside Market is proud of its work with ethnic communities and has created a strong relationship with the Office of Ethnic Communities. Riverside hosts approximately one event per month for Ethnic Groups and the Market has become a central meeting place for people of different cultures and backgrounds. www.riverside.nz

Once in a lifetime Riverside Market is impressive for several reasons, the stunning craftmanship and construction at the forefront.
T
he team that brought the concept to reality, Consortium Construction, have delighted in watching locals and visitors enjoy the hub since its opening last year. General Manager, Brooke Whiting says, “Having the opportunity to work on such a significant, landmark project will always go down in our books as a career highlight. This was a once in a lifetime project for our city, and working with the developers right from the project’s inception was pretty special. Every time I visit Riverside or drive past, I can’t help but feel happy.” The site that borders Cashel Mall, Oxford Terrace and Lichfield Street has proven
the perfect location and has become a magnet for getting people into the heart of the city. The build was unique and challenging in more ways than one, and reflecting on the project, Brooke is proud of what his team achieved. “This was a project with a multitude of moving parts and challenges, and was a risky project that not many contractors would be capable of handling. We’re very proud of how our Commercial Construction Manager & Director of the business Watene Pikia and his team took care of the project. Start to finish, Watene and his crew took care of everything in an efficient and professional manner. Full credit to them!”

In the heart of Christchurch, an inner-city apartment created a unique opportunity for design.
A
collaboration between Wilkie Bruce architects, Ingrid Geldof Design and Jane Swinard Interiors brought the vision to life, and the team worked closely with the clients to create a comfortable, warm, and functional space. Ingrid Geldof worked on the space planning and layout right from the get-go. A kitchen is the heart of the home, and for this project it was needing a masculine and elegant look, with a welcoming feel. Ingrid says, “The small kitchen space was designed with all the necessary fittings and fixtures for a couple to live comfortably in this inner-city apartment. The bar area was a requirement so was incorporated into the kitchen length, yet by adding the timber slats in
the room we were able to create a separate space from the dining.” A key aspect of the kitchen was the slot window they installed. “It not only lets in south light but looks back at the hills and catches a glimpse of the Ballerina artwork on the wall behind the ‘Piano’ building. This was neatly designed around the joinery and bench top with the skill and creatively of Lyall Park Joinery and Artisan Stone.” At the recent 2021 National Kitchen & Bathroom Association (NKBA) Excellence in Design awards, Ingrid was honoured as a Fellow of NKBA. After receiving more than 55 awards herself, she was a judge for the 2021 Excellence in Design awards and is recognised as a leader in kitchen and bathroom design in New Zealand. www.igd.co.nz
Simple innovation Combining sophisticated technology with highly skilled craftsmen ensures Lyall Park Joinery can take your dream from concept to completion and make it your reality. Joinery that’s manufactured to the highest standards to be as enduring as the forest they are made from. Through their skills and experience the result will be something that is not only functional in every respect, but stunningly good looking - matching the style and sophistication of your lifestyle and your home. www.lyallpark.co.nz | Ph: 03 313 9985 | lyallpark@xtra.co.nz Metropol 5 August, 2021 91

our average imitation of Sandringham House or Balmoral doesn’t however fly on the roads like this does. Thanks to Bentley Auckland, I was given the chance to experience the first new Flying Spur to see the South Island. In the past, the Flying Spur was essentially a stretched Continental GT with four doors and a bigger boot. Today, this is no longer the case, as the 2021 Flying Spur is more bespoke, encapsulating the absolute pinnacle of Bentley luxury and sporting prowess. Under the bonnet sits the gargantuan 6.0L twin-turbo W12 engine mated to an eight speed DSG gearbox. Power? Try 476kW and a hefty 900Nm of torque. Inside, the opulence of the Flying Spur cannot be understated, championing quality and technology, with features including a rotating infotainment screen with gauges such as a compass, stopwatch and outside temperature gauge. While the Flying Spur has all manner of fruit you would expect in a car with a start price of $395,000, features such as the knurled metal, lashings of high-grade leather, and the retractable “Winged B” atop that handmade grill are just some of the highlights. Oh, and don’t forget the fridge in between the rear seats. Perfect for those bottles of Bollinger. Moving off and you get the sensation the Flying Spur shrinks itself around you.
It doesn’t feel as big once you get up to speed. All eyes are on stalks however as you waft past shop windows and office blocks. While low-speed rubbernecking is possible, the Flying Spur is also ready to engage you in a way which few large luxury cars can. Once the aforementioned office blocks are replaced with the open road, you can unleash that barrage of power and torque. Planting boot is met not with an instant sensation of speed, but a gradual surge. It’s like you have given your command to the butler and he then applies the power. At a 100km/h, you feel incredibly planted and with that W12 settling down to a brisk cruise, you can devour the miles with ease. You might imagine the twisty stuff would be as bouncy in the saddle as a Polo match, but no. This is where the Flying Spur really impresses. Despite tipping the scales at 2437kg, the combination of adaptive suspension, all-wheel drive with torque vectoring and four-wheel steering means the Flying Spur’s ability to devour bendy bitumen is on par with some of the best cornering sports cars around. It is really hard not to be captivated by this one. Bentley’s new Flying Spur not only sets a new standard for the Crewe based brand, but for the luxury segment in general. So, is it good then? You bet.
