omething beautiful that requires a lot of training is Paul’s description of his art. He’s talking flamenco guitar, a passion of his that he shares with a wide international audience. Currently based with family in New Zealand, he’s sharing his favourite music genre via a series of small intimate concerts and lessons. Not too long ago he was the one taking lessons. His family arrived from Lebanon, escaping a civil war, when he was a baby, and he grew up inspired by their creative musical vibe. Guitar was his choice of instrument and it was while in Lebanon, working at a bar in Beirut, he first heard a gypsy from Spain playing flamenco music. “I remember sitting back stage, listening to him warm up and I fell in love with it (flamenco) then and there.” Paul headed for Spain, bought a guitar and an instruction book, and started learning. “After nine months, I secured my first gig. I had no idea then that it would become my life,” he recalls. Paul remained in Spain for 14 years, studying concert flamenco guitar at the Higher School of Music of Catalonia and graduating with the highest mark possible. He now performs regularly with flamenco dance companies, recitals of flamenco cante (accompanying flamenco singing) and as a soloist.

While challenging, which is part of what attracted him to it, flamenco guitar is also very rewarding, he explains. “For me it‘s the feeling of flamenco; the combination of playing music in a community group, the harmony of the sound of flamenco guitar and blend of genres such as classic and Arabic harmonies. “The rhythm is electric, fast and with its own heartbeat; you have to be so precise and clear. “Once mastered, it gives a complete sense of freedom.” Normally Paul performs as part of a group, but circumstances have dictated he’s on his own this time, enabling him to perform and at the same time explain some of the nuances, the essence of flamenco in a more intimate setting. “If I can help others understand [flamenco] that would be success for me. Something I can give back to New Zealand. “I’d love to see flamenco grow here so if there are any interested musicians out there, just reach out to me through social media.”

From floating through time and space, observing nature’s mysterious golden spirals in Colombus’ The Fibonacci to grounding down with feeling in Elliott’s Uku - Behind the Canvas where confronting storytelling is at its most raw, these two divine performances delivered one after the other offer an evening of earthy contrast not to be missed. NZDC Co-artistic Director and choreographer of The Fibonacci, Tor Colombus describes Night Light as “a reflective offering in response to this moment in time that we are collectively living through.’’ Co-artistic Director James O’Hara adds the dance “invites us to listen, consider, regather and also to celebrate how fortunate we are in New Zealand right now.” “We are thrilled to share these two dynamically contrasting yet complimentary

The world premiere of emerging Māori choreographer Eddie Elliott’s Uku – Behind the Canvas explores the power of vulnerability and the strength within struggle. With inspiration from visual artist Andy Denzler, Eddie draws from the pūrākau (storytelling) held within Te Ao Māori and weaves it with New Zealand Sign Language to reveal the complexity of his own human experience. Anticipation and intensity are at the heart of movement paired with cleansing uku (clay) which symbolises the relationship between Hineahuone and Tāne – where we have come from and to where we will return.

Runway looks for Fashion Week Christchurch make-up artist Kristen Stewart heads to Auckland this month to create some amazing looks for New Zealand Fashion Week (NZFW). Metropol ﬁnds out exactly what she’s up to and her predictions for upcoming trends.

ften Kristen Stewart is found teaching others how to pop the wow into their makeup, however it’s her artistic skills to the fore when it comes to NZFW. Director of the Christchurchbased Kristen Stewart School of Make Up, she’s no stranger to NZFW, having been involved with the event since her mother, Dame Pieter Stewart founded it in 2001. This year she returns to it with her team of make-up artists to create stunning runway looks all week long, from August 23 to 29 in Auckland. One of her favourite beauty trends currently she describes as “fresh skin”. “I am so pleased the trend is going back that way instead of layers and layers of foundation and contouring. “Keeping make-up simple and clean with a touch of something, either graphic liner, coloured mascara, cute cheeks or a stained lip.” Looking back over NZFW memorable moments, her highlights have included spending three eye-opening days there with Pamela Anderson. “She taught me so much, like stacking three sets of lashes.” Working on Annah Stretton’s show where she asked a model to go out with a boar’s head on was memorable also, although the funniest show for her was when organisers used some kind laundry detergent flakes as snow on the runway. “The models were slipping over and off the stage,” she recalls.

The unruly art and design of New Zealand’s maverick record label Flying Nun is on display exclusively at Christchurch Art Gallery Te Puna o Waiwhetū from August 21 to November 28. Metropol looks back on the label’s last four decades.

elebrating the 40th anniversary of the founding of Flying Nun Records in Ōtautahi Christchurch, Hellzapoppin’! The Art of Flying Nun brings together original artwork and design, film, record covers, posters and photography from some of New Zealand’s favourite bands. Christchurch Art Gallery Director Blair Jackson describes the exhibition as “colourful and a lot of fun – and closer to the pop art end of the scale”. “One could argue that Flying Nun defined this era of Kiwi music, and there’s a particularly underground flavour to the world that surrounded it. Seeing it today gives you that same buzz – there’s lots of creativity and weirdness to lose yourself in, and we’re expecting music fans from all over New Zealand to make the pilgrimage to see this vivid slice of Kiwi music history all under one roof,” he says. From rare collectable records and vintage posters to original artworks and paste-up designs, this exhibition explores the art and artists behind the music. Bands represented include Straitjacket Fits, Scorched Earth Policy, the Chills, Tall Dwarfs, the Bats, Pin Group, the 3Ds, the Verlaines, the

Dead C, Look Blue Go Purple, the Gordons, Sneaky Feelings and others. The artists who brought their music to visual life include Chris Knox, Lesley McLean, Ronnie van Hout, Robert Scott, Alec Bathgate, John Halvorsen, John Collie, Jane Dodd, Martin Phillipps and more. “On a purely logistical level, Hellzapoppin’! is also one of the bigger exhibitions we’ve had in a while – there’s so many pieces that the majority of the ground floor of the gallery will be taken up with it, with music videos playing on the walls, and that’s before you factor in the stage we have set up for live gigs,” Jackson says. Hellzapoppin’! launches with a free opening party from 7pm on Friday August 20, with performances from some of Aotearoa’s favourite musical acts. Throughout the duration of the exhibition, local acts (from seasoned professionals to enthusiastic amateurs of all ages) will be invited to perform special one-of-a-kind free gigs onstage. Visitors can also enjoy talks, demonstrations, performances, screen-printing and more.

Art-East Christchurch was recently awarded the Arts Access Holdsworth Creative Space Award 2021, for its rich mix of art projects that empower artists with alcohol or drug addiction issues, mental ill-health, isolation, and institutionalisation. The award is a part of the annual Te Putanga Toi Arts Access Awards.

’m still processing it! It’s an honour to receive this level of acknowledgment for our work, which has been very much a labour of love and functioned on very limited time and resources. The highly commended recipients were amazing so we were very blessed to receive it,” says Lis Rate-Smith of Art-East Christchurch. The therapeutic art group was established in 2014 to create a safe place of support for people who are struggling. “I know how many creatives battle with substance dependency and mental illness. When I started studying addiction and going on placements to AOD (Alcohol and Other Drug Services) agencies, I was drawn to the conversations with people who were practising art and how they were benefitting from it in the early stages of their recovery,” explains Lis. to accommodate growing numbers of participants and has started to run oneon-one programs for those who may not cope as well in group settings. “I started a small group for a couple of hours once a week in a local Salvation Army building and this has since grown into what is now Art-East.” The Art-East setting is a multidisciplinary studio, incorporating a range of mediums. It also provides the programs offsite in collaborative settings including Christchurch Men’s Prison, and He Waka Tapu Mauri Ora residential programme. “Our purpose is to help people connect with the community through the arts and we have regular visiting artists, outings to galleries, and community events.” Lis loves working with her students and watching the ways in which having a creative outlet can change the course of their lives. www.artsaccess.org.nz/art-east-programme-lifesaving

Q: What happens to existing staff when a business sells? A: To ensure any business continues smoothly after sale, we generally

recommend that the Purchaser takes on existing staff when taking over the business. ith strong demand for properties all around New Zealand, and no signs of it slowing, buyers and sellers need to be at the forefront of real estate activity, or they will miss out. That’s the advice from experienced realtor Kathryn Picton-Warlow, whose specialist skills include both marketing and sales. Kathryn has built-up an intimate understanding of Christchurch City and Canterbury lifestyle property and says now is absolutely a great time to buy and sell. “If I was a buyer, I wouldn’t want to be caught out of the market as we don’t know if, or when, it’s going to slow down. I’m currently working with buyers who have missed out on five to six properties. “Every month that they’re

out of the market could potentially be costing them $20,000,” she explains. With seven to 10 potential parties currently interested in each property for sale, she adds that it is also an ideal time to sell. “Rateable values (RVs) are becoming irrelevant in this market and quite often we’re seeing clients who have been bank-imposed with the banks being three months behind current values. “This is proving quite problematic for buyers. I would certainly be looking at selling this side of Christmas as interest rates are likely to rise, however with the amount of people moving back from abroad and into Canterbury, I can’t see these prices slowing down in the foreseeable future. There’s such a shortage of stock.”

A new cultural icon

Cantabrians won’t have to hold their breath for much longer with the imminent opening of the iconic Te Pae Christchurch Convention Centre in October.

hile the centre will bring a host of national and international conventions to the city, this stunning facility is also set up to host local events and meetings. It contains a succession of beautiful and flexible spaces, including 24 meeting rooms with capacity from 20-2000 people. Roll up, roll up Pastry is a versatile component of many dishes, comprising a major component of creations such as pies (sweet and savoury), Cornish pasties, sausage rolls, and croissants.

combination of flour and fat (butter, lard, or suet), pastry falls into five basic types: shortcrust, filo, choux, flaky and puff. Shortcrust is arguably the most versatile as it can be used for savoury and sweet pies, tarts and flans. Basic pastry is usually two parts flour and one part fat, but technique is also important. Here are some tips from Metropol about how to achieve perfect pastry:

Your choice of flour is vital for the type of pastry you want to make. Softer flour with lesser protein makes a shortcrust pastry that is crumbly rather than tough. Ordinary plain flour is fine. If making puff pastry, adding a little strong bread flour with lots of protein to your plain flour can be a good idea.

Purists recommend cold ingredients, cold equipment and marble boards. Keeping the butter cold also helps when making short crust pastry because it doesn’t melt into the flour when you are working it in. With puff, cold butter provides a barrier and air pockets between the pastry layers creating its flakiness.

Fat provides flavour and also stops unwanted gluten development in pastries. Always rub butter into the flour before adding liquids. In flaky or puff pastry, the butter is left in chunks so that when it melts in a hot oven, it leaves air pockets between the thin pastry layers.

Add water gradually, a little at a time until the dough looks lumpy but no longer crumbly. If you add too much and the pastry is sticky, add a little more flour, cutting up the pastry and tossing the pieces in flour and then pushing back together. Excess kneading to break up flour usually means tough pastry.

Ingredients BISCUIT BASE 400g ginger crunch biscuits, finely blitzed 110g butter ½ jar crystallised ginger FRANGIPANE 150g butter 150g caster sugar 4 organic/free range large eggs 2 teaspoons almond extract ¼ teaspoon vanilla paste 150g ground almonds TOPPING 20 pink lady apples, sliced with a mandoline into rounds 250ml orange juice 200g caster sugar 250g melted butter Icing sugar, to dust

Preheat the oven to 160ºC/ Fan forced 140ºC. Begin by blitzing the biscuits into a fine crumb and then melt the butter and finely chop the ginger. Next, combine the biscuits, ginger and melted butter together in a bowl and firmly press the mixture into the base and sides of your cast iron shallow casserole dish. Aim for the base and sides to be equal thickness, just under half a centimetre or so. Place the dish into the pre-heated oven and allow the base to cook for 5-10 minutes, until the biscuit base looks like it is set. Remove from the oven and allow to cool. For the frangipane mixture, combine the butter and sugar, whipping until it becomes lighter in colour and fluffy in consistency. Then add in the eggs followed by the almond extract, vanilla paste and finally the ground almonds. Mix together well. Spoon the frangipane mixture over the biscuit base and place into the oven at 170ºC/ Fan forced 150 ºC. Cook until it begins to turn golden. This should take around 20 minutes While the frangipane is cooking, take a mandoline and slice the pink lady apples. t’s a staple of growing up in New Zealand and the good old-fashioned pie has now hit new levels of stardom in our gastronomic repertoire. Celebrity Chef, Peter Gordon, who has prepared pies for the Queen, was a judge in the just announced 2021 Bakels New Zealand Supreme Pie Awards. “A great pie is a very good thing, and we do many really great pies in New Zealand,” says Peter. Award-winning pies start out by not just looking great, they need to be the correct weight before any further judging. Most of the categories need to be 280g or less and no soggy bottoms. Bakels have 12 award categories but, in my search, I cut it down to some simple rules. Pie vibe, pastry, meat/filling, taste and price. Prices range from the $2, “dear God no” pie all the way to the $10.50 Cassels milk stout pie. Finding a great pie for mid-range $5.50 was a challenge but they are out there. The Hills Road Bakery has a stunning steak and kidney. Pie vibe is important. Sometimes the feel of where and how you buy your pie can affect your experience. Who doesn’t like a Hororata pie straight after a day at Mount Hutt? Craig Minehan from Hope River pies in Lyttleton told me: “Good cooking makes a good pie, pastry is important, but the filling is what it’s all about.” Their beef cheek, red wine and grain mustard is brilliant. Piesofcanterbury, which I teamed up with in my search for the perfect pie, has received a lot of feedback on the best finds. As always, the Fairlie Bakehouse, which has a cult following, stood out. Behind the legendary bakery/cafe is a buzzing factory, where Franz Lieber (internationally trained chef/founder) and his tight-knit team create an amazing array of gourmet pies that are all ‘made with love’. Fairlie Bakehouse believes fresh is best and make all baked goods fresh onsite daily. It takes pride in using quality, locally sourced produce. Other top mentions from our search go to The Sheffield Pie Shop, Michaels Hillmorton Bakery, Gorgeous Foods, Sissys Kitchenette, Crisp Cafe, Una Bakery, Bakehouse Cashmere, Country Kitchen and Le Bakermen. Couplands and Kai Pai bakeries won awards in this year’s Bakels contest, but in 24 years the supreme award has never gone to the South Island. Maybe next time? Gin giants of Geraldine Aotearoa has a growing number of gin distillers yet few have made such a mighty impact in such a short time as Geraldine couple Saskia and Andrew Lewis, creators of Humdinger Gin.

achieved national and international recognition in three prestigious gin and spirits competitions.

Not long ago many predicted the end of books. But during the 18 months that The Clocks Bookshop has been open, book sales have boomed and at least three other independent booksellers have opened their doors in the South Island.

he Clocks has more than doubled the number of books it was carrying when it opened. It still specialises in children’s books, (classics such as Harry the Dirty Dog and The Nickel Nackle Tree, still sell well), along with cookbooks – (Romanian, Baltic or Burmese recipes anyone?), and crime books (Donna Leon, Peter Lovesey and 70+ Agatha Christie titles). But now the non-fiction and general fiction shelves are also overflowing with titles that you may not see in the mass market stores. “What an independent bookshop can offer is discovery,” says The Clocks Bookshop’s owner, Ann Reeves. “That chance to find, via our personally curated selection, words or pictures you may very well fall in love with.” Ann adds of the Elmwood Village site. “We are fortunate to be here and we have such a fantastic customer base. Architectural designer and Superhome co-founder Bob Burnett and his wife, Japanese architect Shizuka Yasui, naturally chose the best of both New Zealand and Japanese influences when designing their own family home in Broad Oaks on Christchurch’s Port Hills.

Check the fabric to see if it can be machine washed, or simply wipe blinds with a damp cloth. The Canterbury Heritage Awards recognise excellence in heritage tourism and conservation, and celebrate the repair and reconstruction efforts that have gone into revitalising the city following its devastation by the 2011 earthquakes.

On the east side of the market building, the stunning mural pays homage to the buildings lost in the 2011 earthquake. The complex mural designed by Josh Thompson tells a story of Christchurch’s past, present and future. Since opening last year, Riverside Market has quickly become a buzzing destination in the heart of the city for locals and visitors looking to explore some of the city.

In the heart of Christchurch, an inner-city apartment created a unique opportunity for design.

collaboration between Wilkie Bruce architects, Ingrid Geldof Design and Jane Swinard Interiors brought the vision to life, and the team worked closely with the clients to create a comfortable, warm, and functional space. Ingrid Geldof worked on the space planning and layout right from the get-go. A kitchen is the heart of the home, and for this project it was needing a masculine and elegant look, with a welcoming feel. Ingrid says, “The small kitchen space was designed with all the necessary fittings and fixtures for a couple to live comfortably in this inner-city apartment. The bar area was a requirement so was incorporated into the kitchen length, yet by adding the timber slats in

the room we were able to create a separate space from the dining.” A key aspect of the kitchen was the slot window they installed. “It not only lets in south light but looks back at the hills and catches a glimpse of the Ballerina artwork on the wall behind the ‘Piano’ building. This was neatly designed around the joinery and bench top with the skill and creatively of Lyall Park Joinery and Artisan Stone.” At the recent 2021 National Kitchen & Bathroom Association (NKBA) Excellence in Design awards, Ingrid was honoured as a Fellow of NKBA. After receiving more than 55 awards herself, she was a judge for the 2021 Excellence in Design awards and is recognised as a leader in kitchen and bathroom design in New Zealand. www.igd.co.nz

Thanks to Bentley Auckland, I was given the chance to experience the first new Flying Spur to see the South Island. In the past, the Flying Spur was essentially a stretched Continental GT with four doors and a bigger boot. Today, this is no longer the case, as the 2021 Flying Spur is more bespoke, encapsulating the absolute pinnacle of Bentley luxury and sporting prowess. Under the bonnet sits the gargantuan 6.0L twin-turbo W12 engine mated to an eight speed DSG gearbox. Power? Try 476kW and a hefty 900Nm of torque. Inside, the opulence of the Flying Spur cannot be understated, championing quality and technology, with features including a rotating infotainment screen with gauges such as a compass, stopwatch and outside temperature gauge. While the Flying Spur has all manner of fruit you would expect in a car with a start price of $395,000, features such as the knurled metal, lashings of high-grade leather, and the retractable “Winged B” atop that handmade grill are just some of the highlights. Oh, and don’t forget the fridge in between the rear seats. Perfect for those bottles of Bollinger. Moving off and you get the sensation the Flying Spur shrinks itself around you.

It doesn’t feel as big once you get up to speed. All eyes are on stalks however as you waft past shop windows and office blocks. While low-speed rubbernecking is possible, the Flying Spur is also ready to engage you in a way which few large luxury cars can. Once the aforementioned office blocks are replaced with the open road, you can unleash that barrage of power and torque. Planting boot is met not with an instant sensation of speed, but a gradual surge. It’s like you have given your command to the butler and he then applies the power. At a 100km/h, you feel incredibly planted and with that W12 settling down to a brisk cruise, you can devour the miles with ease. You might imagine the twisty stuff would be as bouncy in the saddle as a Polo match, but no. This is where the Flying Spur really impresses. Despite tipping the scales at 2437kg, the combination of adaptive suspension, all-wheel drive with torque vectoring and four-wheel steering means the Flying Spur’s ability to devour bendy bitumen is on par with some of the best cornering sports cars around. It is really hard not to be captivated by this one. Bentley’s new Flying Spur not only sets a new standard for the Crewe based brand, but for the luxury segment in general. So, is it good then? You bet.
