Best shrimp stir fry The shrimp stir fry dish is one of favorites on every home dinner table. There are several ways of preparing shrimp but they can actually become delectable and amazing if they are prepared with careful selection of spices and sauces that could bring out the best flavors of the shrimp. There may be hundreds of shrimp recipes but in this article we will share an easy to prepare and could be close to restaurant recipes for the entire family to enjoy. It is also extremely healthy, and very versatile, so you can alter it easily according to how many people are dining at home. The ingredients can be dependent on what is on hand in your refrigerators. This is best served with white steam cooked rice. Sumptuous and succulent shrimp easily stir fried in a tangy garlic sauce, and it only takes 15 minutes to prepare. Salty, sweet, garlicky, and a little spicy, it is a perfect dish to serve on any hectic day of the week. INGREDIENTS: • 12 to 15 medium to large shrimps or prawns, butterflied (shells can be removed or left on, as desired). • 1 ½ to 2 tablespoons of oyster sauce (we use Thai oyster sauce) • 1 tablespoon soy sauce • 1 tablespoon fish sauce (available in tall bottle at Asian stores) • 1 tablespoon brown sugar • 5 to 7 cloves of garlic, already minced (to taste) • 2 tablespoons oil for stir frying, preferably vegetable oil • 1 fresh red chili, minced or 1.2 teaspoon dried crushed chili flakes (to taste) • THE GARNISH: • Lime or lemon wedges • 1 handful of fresh coriander • Optional: more fresh chili, or dried crushed chili flakes PROCEDURE: • Let us prepare the marinate or sauce by combining in a small mixing bowl, the oyster sauce, the fish sauce, the brown sugar, the garlic, and lime juice and the chili flakes. Stir well to mix until they are smooth. • Place the shrimps in the marinade and stir well to coat the shrimps. Set aside for at least 15 minutes. • To start stir frying, heat some oil in the wok or a large skillet. When hot, add the shrimps along with its marinade down to the last drop. • Stir fry constantly for 2 to 3 minutes or until the shrimps are plump and pink in color. They will be lightly browned because of the sauce. (Please avoid over cooking, or the shrimp will turn rubbery). • This dish can be served in two different ways. For a dinner or lunch entree: simply slide onto a serving platter and sprinkle with coriander, plus additional fresh chili (if you are using). Then you can add the lemon or lime wedges to the side, and serve them with rice, or crusty French loaf. A nice rice dish that pairs well with this recipe is the Thai sticky rice. • Another way is serving this dish at a party or as an appetizer. Use tongs to pick the shrimps out of the wok or the skillet, allowing most of the sauce to drip back into the pan. Carefully arrange the shrimps on a serving platter, and then add a sprinkling of fresh coriander, perhaps additional chili (if using). Place the lime or lemon wedges on the sides. Then pour the sauce into a small bowl and place it beside the shrimp on its serving platter for dipping purposes. This is an Asian Thai recipe.
