BALLY’S ATLANTIC CITY, NJ

All the meeting and convention space at Bally’s Atlantic City is conveniently located on a designated floor that is situated away from the traffic of the casino, yet still is easily accessible by escalator or elevator. The tower to the its guestrooms is directly outside the Grand Ballroom, which allows attendees to go to and from their rooms quickly and easily.

“We’ve recently introduced Phil’s Carousel Bar, located in the hotel lobby, which, incidentally, is the only revolving bar in the state of New Jersey,” states Peter Ciccone, corporate vice president of sales, Bally's Corporation. “And then there’s The Yard, our indoor-outdoor entertainment and restaurant venue located on the lower level, directly off the iconic Atlantic City boardwalk. Additionally, our spa, pool, and fitness centers are great for relaxing and decompression.”

Due to its size and being situated in the center of the boardwalk, Bally’s offers the flexibility to keep both small and large groups feeling comfortable and appreciated. The Yard can accommodate up to 1,000 attendees and features a retractable glass roof to let in fresh, ocean air, along with a stage that a band or DJ can utilize for entertainment.

“Our two gourmet restaurants, Guy Fieri’s Chop House and Jerry Longo’s Meatballs & Martinis, have become very popular for private functions,” notes Ciccone. “Either restaurant can be closed to the public, allowing any large group to have the rooms to themselves with fantastic menu choices. Additionally, we have two large ballrooms of over 20,000-square feet each, with natural lighting and views of the boardwalk and the Atlantic Ocean. These two rooms have hosted concerts for up to 2,000 people, as well as boxing matches, tradeshows, and meetings.”

“We have all of the amenities an event planner is looking for, such as first-class hotel rooms and suites, functional meeting space, knowledgeable catering, convention services, and audio-visual staff, as well as dining options at various price points and delicious banquet options,” explains Jim Ziereis, vice president of hotel sales, Golden Nugget Atlantic City. “However, it is the extra touch we put on the meeting experience that is appreciated the most. We sincerely approach each group experience as a partnership and want to work with the planner to understand their goals and objectives and do whatever we can to have a successful outcome.”

Ziereis says that the ultimate sign of success is when an individual attends a meeting, then rebooks a future stay for themselves with family and friends. As a meeting attendee, they may not necessarily have enough free time to enjoy all that the property has to offer, such as its gourmet restaurants, spa, H2O Pool area, The Wave nightclub, and marina activities. So, by returning as a leisure guest, they can experience more of the property’s offerings.

“There are some areas on property that we do not use all the time, but when we do it is a ‘wow’,” proclaims Ziereis. “For instance, we have a 45,000-square foot event lawn outside on our Fifth Floor that is ideal for a group of up to 2,000 and overlooks the Atlantic City Marina with spectac-

Golden Nugget Atlantic City is set to undergo a multimillion-dollar hotel and room renovation, as well. “The newest renovation plan comes on the tail end of other recent upgrades at the property,” notes Ziereis, “including the addition of the Mexican restaurant Dos Caminos, a redesign of the Chart House restaurant, and meeting space and casino floor upgrades.”

CAESARS ATLANTIC CITY, NJ

Caesars Atlantic City offers 1,141 luxurious, newly renovated hotel rooms and suites, ocean views, world-class entertainment, a spa, casino excitement, vibrant nightlife, 28,000-square feet of versatile event space, and an experienced service team.

For dining, the property features everything from celebrity-chef offerings to fine dining to casual fare. One of its newest offerings is Nobu, a world-renowned Japanese restaurant recognized for pioneering a new style of Japanese cuisine. Joining the restaurant, Nobu Hotel has 85 rooms and suites within Caesars Atlantic City on the Centurion Tower's top three floors that feature subtle Japanese nuances and sleek, modern touches.

Another recently added offering, set inside the restored Warner Theater, The Hook is a live entertainment showcase that is funny, irresistibly sexy, and full of jaw-dropping acrobatics.

MOHEGAN PENNSYLVANIA, WILKES-BARRE, PA

Guests planning a meeting at Mohegan Pennsylvania will find that they will receive a true “one-stop shop” experience. From the start of the planning journey, one of Mohegan Pennsylvania’s experienced sales managers will begin collaborating with the rest of the service team on designing a dream event. The team will help the planner to select the best floorplans, catering menus, in-house AV services, and exceptional entertainment.

Mohegan Pennsylvania has ample meeting space to accommodate groups of all sizes, and features everything from conventional meeting rooms to amphitheater-style outdoor venues. There are many opportunities for both group and individual activities while on-site, as well. The 21+ property features gaming, a full-service spa, shopping, live harness racing, a comedy club, Top Golf Swing Suites, multiple on-site dining options, and a hotel.

Attendees can enjoy nightly live entertainment in Breakers and the Hive Taphouse, and the famous “Party on the Patio” can be incorporated into a group’s agenda. This outdoor concert series takes place during the warmer months on Thursday nights, and features various cover bands, local food trucks and drink specials.

The Mohegan Pennsylvania sales team works with planners one-on-one and utilizes various available spaces to create a unique event experience for attendees, including plenty of options for alternative meeting areas and even outdoor spaces. Groups can schedule a private cooking show experience at Rustic Kitchen, a private poker experience, or even a private happy hour at Embers Terrace, where attendees can test their competitive spirits by playing giant Jenga near warm and inviting firepits.

Mohegan Pennsylvania recently embarked on a $10-million refresh to its hotel that included updates to all its 238-rooms and suites, culminating last fall with the completion of the final stage of this major renovation known as Project Starlight, which saw both enhancements as well as new openings across the resort.

RIVERS CASINO PHILADELPHIA, PA

Food serves as a main attraction for many of the group events hosted at the Lancaster Marriott at Penn Square and at the Lancaster County Convention Center – both on the restaurant side at Plough and The Exchange, as well as on the banquet and meeting side, proclaims Ryan McQuillan, executive chef for the Lancaster Marriott at Penn Square and the Lancaster County Convention Center.

“For our private events hosted at Plough and The Exchange, we love to offer personalized menus for guests and create the food to be a center piece of conversation,” McQuillan continues. “Large ‘grazing tables’ offer a variety of different items, including locally sourced cheeses, fruits, spreads, dips, house baked breads, house made pickles, and more.”

“In our banquet operation, we love to offer different themed stations, such as seafood towers, antipasti stations, grazing tables, and sushi stations. Our guests love these stations, and the food becomes the focal point of the event and really starts the conversation before the main entree event,” McQuillan adds.

Events are never “one size fits all,” and the staff at the Lancaster Marriott and Lancaster Convention Center play host to everything from private group dinners and parties to large conventions and weddings, and everything in between.

“One of my favorite events we put on is our chef’s tasting seasonal ‘Harvest Dinners,’ where we partner with a local farm to create a menu that uses ingredients sourced solely from that purveyor and invite that farm to attend to guide our guests through the dining and drinking experience,” McQuillan explains. “This is a very intimate experience for the staff, guests, and farmer, and always creates a great dialogue around the menu items. The food becomes the main focal point of the event and is also coupled with a carefully curated wine list from our restaurant director, Mikaela.”

Plough and The Exchange, McQuillan notes, are truly integrated into the local community. Unlike many hotel restaurants that solely cater to hotel guests, these two restaurants are favorites of the locals from Lancaster and the surrounding area. “The quality of our food and service from our staff speak volumes, and makes our customers want to continue coming back, whether they are residents or just visiting.”

These two restaurants buy from local farms and purveyors and use the best, freshest, and most local ingredients possible across the menu, says McQuillan. They frequently change their menus to align with the seasons and take pride in their service and cuisine.

“We make an allergen guide for every single menu item so that our service team is educated on what we can offer and we have the ability to train our cooks to recreate menu items to meet most allergens we come across,” McQuillan notes. “This is extremely important to our staff and is always a nice touch for any guest that comes in with a dietary need. We also like to offer both traditional and unique takes on some great dining classics.”

“For example,” McQuillan continues, “in the past, we had a great Pretzel Crusted Pork Schnitzel, and currently offer a new play on Chicken and Dumplings. One of our chef's favorites was a unique take we did on mac and cheese, where we showcased Celery Root that we thinly sliced into noodles to provide a gluten free pasta course for our dinners that not only was more nutritious, but tasted luxurious.”

Food is a significant motivator when it comes to attracting attendees to an event at Peddler’s Village, too. “Restaurants and event spaces are offering a unique culinary experience that gets attendees excited and talking to each other about tasting new cuisines. Memorable dining experiences provide guests with a sense of astonishment and leave them with a

feeling of being entertained,” explains Brian Shields, director of sales for Peddler’s Village in Bucks County, PA.

Peddler’s Village culinary offerings are unique and particularly appealing to planners because of the variety they have to offer. “We have two restaurants with event space: Earl’s New American, and the Cock ‘n Bull,” says Shields. “Both restaurants offer groups plated meals, buffets, carving stations, and customized menus. Our culinary team is constantly changing menus to keep up with the seasons, but also keeping up with ever-changing culinary landscape.”

Peddler’s Village can customize all menus. Some planners might want something tailored for a specific group, while others seek traditional favorites such as their Beef Burgundy or Chicken Pot Pie. “Our culinary team has prepared entrees based on seasonal festival themes, too. For example, they will infuse strawberry, blueberry, peach, or apple into a specific dish. Groups appreciate the attention to detail when it comes to menu options,” Shields notes.

Group dining has returned in a dramatic fashion, declares Domenick Savino, CPCE, managing partner, The Drexelbrook in Drexel Hill, PA. “Large and small companies have returned to in-person meetings. The years spent as a ‘square on a screen’ are over, and companies are using every opportunity to keep their employees engaged - and that means team building, education, relationship building, and dining together.”

“At Drexelbrook, we’ve seen a resurgence of meats as appetizers, center of the plate, as well as action stations,” Savino observes. “Baby Lamb Chops were the favorite in 2023, and that trend continues in 2024. The same applies to ribs: baby back, spare, and boneless. The most popular are basted with Korean BBQ sauce, which brings a different flavor profile than traditional American sauces.”

Popular cocktails at Drexelbrook include the Limoncello Martini (made with Drexelbrook’s own Limoncello) and a Classic Old Fashioned on tap using a nitro tap. “Moving into 2024, we are seeing more requests for international flavors, like using Darjeeling tea, chai, honey, and coconut milk to create a Chai Latte Martini with Licor 43 (a Spanish vanilla liqueur) dusted with nutmeg,” says Savino. “Teas from around the world are becoming more stylish for the trend toward non-alcoholic options, as well for the younger generation looking for a more worldly, creative drink experience. White tea with

rose simple syrup and sparkling water garnished with lemon makes for a refreshing cocktail.”

Service styles have become more creative. Presentation cooking or assembling plates to order are still very popular, where guests can watch their food being prepared in front of them, and then have the option to “finish” the dish, observes Savino. “At Drexelbrook, we see these trends holding firm until at least the fall or winter of 2024, when new trends will begin to emerge.”

Over the years, catered events have become very complex, Savino explains. “With the addition of sesame to the Big 8 list, preparing the same food for a large crowd is just not realistic anymore. At Drexelbrook, we need to satisfy the many food allergies, Celiac needs, and the vegan, just like the many unrestricted food eaters. This has dramatically changed the way we sell, prepare, and execute catered events.”

One of the main trends that Ryan McQuillan, executive chef for the Lancaster Marriott at Penn Square and Lancaster County Convention Center, has been seeing and expects to continue is elevated and unique takes on classic and staple dishes and offerings.

“I am noticing more chefs are keeping plating ultra simple and letting the ingredients shine,” McQuillan says. “When I first started cooking fine dining 20 years

ago, some dishes would require multiple ingredients and steps. I am seeing - as fine dining and white tablecloths go away - chefs are refining plating in a more simplistic way, which, personally, I love, as it allows for the story of the dish to be told through the chef and server alike.”

“Certain cooking techniques, whether complicated or simple, are plated more simply now and let the ingredients themselves shine on the plate,” McQuillan continues. “I also have noticed over the past 10 years that plate colors are changing from off-white china to modern pottery white and off-matte colors, which makes the food pop on the plate even more.”

“Currently in 2024,” notes McQuillan, “we are running a Mortazza sandwich on our Exchange brunch menu, and I have begun to see a lot of other restaurants doing their own versions of them. It is a simple rustic sandwich made by taking wood-fired pizza dough and folding it over itself and baking it. Once it comes out of the oven, the chefs can fill it with their own creative twists. Our Mortazza is filled with all the ingredients you would find in a South Philly hoagie, and we are excited to do some other variations of it in the near future.”

Simplicity and minimalism have been trends on the rise for years, perhaps accelerated by the state of the econ-

omy, along with elevated food costs, so chefs have simplified menus to keep dishes more cost-effective, too, McQuillan reasons.

“The food currently coming out of kitchens is very exciting, and this minimal approach not only helps keep costs down, but also gives the guests beautiful and creative dishes that are not as heavy on their wallets,” observes McQuillan. “In the past, food in great restaurants was graded based on the techniques of the chefs, which it certainly still is, but as it has become more and more simplified, it really allows the food to speak for itself.”

McQuillan says that group guests tend to be looking toward more casual dining options overall. When writing group menus, the Lancaster Marriott and the Convention Center will offer family-style appetizers, as well as a more intimate, personalized entree. “I believe this is the best of both worlds for an event,” McQuillan notes. “It is more casual, yet personal, for the groups - but our offerings always are elevated and quality dishes.”

According to Joe Massaro, Pennsylvania Restaurant and Lodging Association (PRLA) president and CEO, a few trends that have been gaining momentum heading into 2024 have included: the zero proof movement (mocktails and non-alcoholic drinks); more vegan and

vegetarian offerings; chef collaborations; and sustainability with a focus on environmentally friendly menu items and sourcing.

The National Restaurant Association recently released its 2024 State of the Industry report, which addresses other emerging trends, and predicted that the restaurant and foodservice industry will continue to grow in 2024, noted that operators are relying more on technology to meet today’s challenges, and added that consumers continue to crave human hospitality in their culinary experiences.

“The restaurant industry at large is evaluating and implementing technology solutions to help streamline operations and offset rising labor costs,” explains Massaro. In terms of serving styles and plating, shared and family-style dining appears to be waning with traditional threecourse meals reemerging. “Anecdotally, we are hearing that formal and sophisticated garnishes are making a comeback. Finally, late night dining and bar visits have been in the decline for a few years, so operators are trying to optimize their 5:00 –8:00 pm business.”

While patrons are seeking a higher level of service and hospitality as

they return in increasing numbers to restaurants, many establishments are working with a less experienced staff these days. “PRLA is advancing several initiatives to help operators train the hospitality workforce in Pennsylvania,” assures Massaro. “This spring, we are hosting seven regional workforce development events for operators to learn about all the resources available to them through local, state, and national providers.”

The events of the past few years have reinvigorated a desire among many to dine outdoors, and Massaro notes that PRLA has worked with cities and municipalities across the Commonwealth, as well as the legislature, to make it easier for operators to offer al fresco dining options to patrons.

“Our most popular, best-selling wines in 2023 were our Blueberry Champagne, Fleur de Blanc, and Meritage,” notes Meredith Dickinson, manager, business development for VIVÂMEE Hospitality, which represents both Renault Winery Resort and LBI National. “Seasonally, there is a big change from people preferring white wine in the spring through the summer like our Fleur de Blanc, and then preferring red wine in the late fall to

winter like our Meritage. Blueberry Champagne is our overall best seller and seems to remain constant regardless of the season.”

Sparkling wines have grown tremendously in popularity, says Dickinson, who believes this trend will likely continue. “More people are educated on the different types of sparkling wine and fermentation as well as experimenting with rose and red wine that is sparkling, too. This is likely because the trend in beverages now is to have more and more bubbles in everything that we are drinking.”

At Renault Winery Resort, many immersive experiences are offered to guests. “In our Harvest month (October), we offer a tour where guests enjoy wine and charcuterie pairings and get to learn about our 160-year-old historical winery, as well as press wine just like our original owner, Louie Renault did,” notes Dickinson.

Dickinson adds that people often want a more casual experience these days. “People want to relax after a long, busy day. I think people are recognizing the value in recharging and self-care. At Renault, we have 19 dif-

ferent venue spaces all varying in size and feel. So, guests can enjoy a casual experience in our Parc with live music and fire pits, or they can enjoy an elegant dinner in our Glass Museum surrounded by glassware dating back to the 14th century.”

Outdoor dining has gained popularity, as have spaces with natural lighting, Dickinson observes. “We have many spaces that give you these options. You can even enjoy a private picnic in a section of vineyards that has cafe lighting. It is a perfect summer or fall unique dining experience.”

“Our wineries are producing outstanding traditional varieties, which continue to be celebrated in the national and international wine community,” asserts Devon Perry, executive director, Garden State Wine Growers Association. “Also rising in popularity are lesser-known varieties, because younger generations are curious about what is new, and they are daring enough to try them. They savor the unexplored and love sharing their epiphany wine experiences.”

“It seems there is an uptick in demand for eclectic styles and low-intervention wines (orange wine, for example) in major metropolitan

areas like Philadelphia, but this trend has yet to take hold in our area of rural South Jersey,” observes Dustin Tarpine, owner of Cedar Rose Vineyards and vice chair of the Garden State Wine Growers Association. “We find consumers are generally interested in a wide range of wines, from dry whites and reds to sweet, dessert, and fruit wines. We have over 20 wines on our list to help meet this demand for such a wide array of wines.”

Perry notes that wine trails are the cornerstone of wine tourism experiences internationally, as well as in the Garden State. “Our annual trails include the upcoming Mother’s Day Wine Trail weekend, New Jersey Wine and Chocolate Trail weekends, and the Holiday Wine Trail (Black Friday weekend annually). This year, New Jersey Wine Month - expanded from NJ Wine Week - is answering the growing demand for ‘Local Vines & Local Wines’.”

Executive pastry chef of Normandy Farm Hotel and Conference Center, Lisa Buchanan, observes that, as summer rolled in last year, the property’s spotlight was on their light and refreshing desserts. “The star of the show was the lemon tart,

featuring a zesty lemon marmalade and locally sourced fresh berries. Transitioning to the fall, the Black Tie dessert took center stage with its decadent death by chocolate cake, accompanied by a rich dark chocolate ganache and served alongside house-made cocoa nib ice cream. This winter, the Sticky Toffee Pudding stands out as one of the most beloved pastries at Normandy Farm. Crafted with fresh dates, a luscious vanilla toffee sauce, and our homemade candied citrus, it has become a seasonal favorite.”

Individuals seek desserts with fresh, locally sourced ingredients that are both simple and approachable, Buchanan explains. While these treats may appear uncomplicated, it is the skill and meticulous attention to technique that elevate them from the ordinary and mundane.

“The accessibility of recipes has expanded with platforms like the Food Network and HGTV, providing people with the means to recreate desserts independently,” notes Buchanan. “This desire for hands-on involvement in dessert creation is expected to persist as a notable trend in 2024.”

And while events are adopting a more casual atmosphere, Buchanan says that the standard for food quality and expectations is on the rise. “Attendees desire fresh, high-quality offerings, meticulously crafted and tailored to their preferences. Our commitment is to deliver desserts of the utmost quality, ensuring each bite is a delightful experience that leaves a lasting impression and beckons you back for more.”

Iron Chef, father, husband, James Beard Award-winner, entrepreneur, and food innovator, Chef Jose Garces is known as a leading culinary authority of Spanish and Latin-American food.

Good Morning Chef. We have worked together for years and, for me, this is a real treat to have you here talking about your passions, especially on sustainability, as we all have to do our part.

Jim, three things you should know about me: I’m a Chef, entrepreneur, and father. Most people know me as a Chef. I have opened a number of restaurants, primarily in the Philadelphia region, and have cooked on TV for a number of years. I run my own consulting business, advising other restaurateurs on best practices for menu and recipe development, and I am launching a line of sauces and rubs for the home cook. Most important to me, however, is my status as “Dad.” I have two kids that are growing into pretty amazing adults (if I do say so myself), and it is becoming increasingly clear to me that I want to do whatever possible to ensure that the world I leave to them is one in which they cannot just survive, but thrive. As a Chef, the ingredients that I choose are a subset of the tools that I utilize as part of my craft. Partly art, partly science - all based on the idea of extending hospitality across a plate to share the most human of all experience: a meal.

You have always been so visible and hospitable at the events wherever you could be. This says a lot about you.

Hospitality is, to me, an act of welcome and an act of service; asking people to entrust their experience to you. For me, that concept of hospitality extends beyond the plate of today and into the plates of tomorrow. With that in mind, I want to talk for a minute about sustainability. It has become a bit of a buzzword in certain circles, but it’s an increasingly important aspect of providing hospitality at scale. In my restaurants, we use a lot of products, and we work to ensure that the ingredients we purchase are sourced in as sustainable a manner as possible. The same goes for the meals my cooks prepare at the CookUnity facilities in New York, Chicago, and Los Angeles.

While I am very aware of the responsibilities inherent in providing hundreds of meals per day at my restaurants - or thousands of meals per day at CookUnity - these issues also are on my mind when I’m cooking at home. As a home cook, without the same access to information, it can be difficult to figure out what is most sus-

tainable - not just for the planet - but for you, personally. It is easy to make proclamations about what needs to be done to increase sustainability, but it becomes more difficult when you are standing in the grocery store trying to figure out how to feed your family healthy and tasty meals while staying within often limited budgets.

Since you are Mid-Atlantic Events Magazine, I am assuming that most of your readers are located within the Mid-Atlantic area, so some of what I say is going to be fairly regional, especially as it relates to eating locally, but the core ideas can be used anywhere. I am going to touch on some of the more impactful ways that sustainability can be integrated into daily life. While there are countless ways to incorporate sustainability into our home lives, I'm going to focus on three main objectives: minimizing food waste; shopping locally; and minimizing single use plastic waste.

The core tenets of sustainability in cooking can be summed up as finding a way to minimize food waste, protect the environment and workers, and promote long term well-being. Minimizing food waste is one of the most important, and most impactful actions a home cook can take, not just for the environment, but also for their wallets. According to a 2020 study, the average American household wastes almost $2,000 per year in food products. This has implications not just for household budgets, but also for society at large. A simple way to reduce food waste is to plan ahead with an eye toward creating meals that fully utilize the ingredients that you purchase.

For example, a roast chicken on Sunday can be used for leftovers on Monday via chicken salad or a chicken quesadilla, and the carcass can be used to make a flavorful and delicious stock that can be used for soups, cooking rice, or making sauces. Fresh vegetables and fruits are a core part of healthy eating, but it can be difficult to ensure that these items are used before they go bad. Storing fruits and vegetables correctly can go a long way in maintaining freshness, and freezing is a great way to avoid excess waste. Living in the MidAtlantic Region, especially Southeastern Pennsylvania, gives home cooks a huge advantage over people living in other parts of the country when it comes to my sec-

ond point in improving sustainability as a home cook: buying locally and seasonally.

I know I have started going to a lot more farmer’s markets and enjoy going to a variety of restaurants that feature farm to table or local purveyors over the last hand-full of years.

We live in an area surrounded by farms and orchards, making it easier to purchase foods that are both healthful and sustainable. Reading Terminal Market and the countless farmers markets in the area give direct access to local farms; CSAs and farm shares are another great option for supporting local farms and farmers while getting great produce and protein. Just as it is better for the environment to walk or ride a bike than to drive, it is better for your food to come from a more local supplier than being trucked across the country.

A side benefit is that local, sustainable food is the more financially prudent course in many cases. Produce grown locally will be less expensive for the quality you receive since it has to come a shorter distance, for example. In these days of high fuel prices, the difference can be stark. Finally, I’m going to say something about limiting plastic waste. Plastic bag bans aside, a great way to reduce plastic waste, and waste in general, is to make as much as possible from scratch, and limit the pre-packaged foods that are found in the center of the grocery store. While convenient, single serving packaging is more wasteful, and often more expensive on a per unit basis than making it at home or buying larger, more efficiently packaged items and divvying it up on your own. And while sustainability is about more than just the environment, an increased focus on sustainability is what will ensure that the delicacies of today don’t become the environmental crises of tomorrow.

We, as key holders to the future, have to start doing more of these sustainable actions. Thank you so, so much for this Chef.

Accelerate Your Career with a Graduate Degree in Hospitality Management

Seven of the 20 fastest-growing industries in the United States are in leisure and hospitality . From hotel and institutional management to foodservice and restaurant management, career opportunities in hospitality are on the rise.

The U.S. Bureau of Labor Statistics projects that leisure and hospitality will add 1.9-million jobs from 20212031. This projected growth, at an annual rate of 1.3 percent, is the fastest of any sector, according to a 2022 report.

A graduate degree in hospitality management positions professionals for opportunities in this sector, which is seeing increased need for individuals with advanced training. Whether they want to accelerate into upperlevel management or switch to different roles, industry professionals can leverage a degree to take the next step in their careers. Hospitality professionals with a graduate degree often become general managers, operation directors, or human resources managers, or other managerial positions.

Along with opening doors for career advancement, obtaining a graduate degree yields financial benefits. People with a graduate degree earn 15 percent more than those who have a bachelor’s degree, according to the Bureau of Labor Statistics’ “Education Pays, 2022” report.

“In my mid-30s, I decided that I wanted and needed to change my career path,” said Lauren Rodgers, a Penn State graduate student. “I found that I really liked event planning and was good at it. I felt that adding a gradu-

ate degree would help me to advance quicker and get me where I want to be sooner.”

A graduate degree in hospitality management can further hone one’s skills in areas such as accounting, marketing, operations, sales, entrepreneurship, and guest experience, among other business areas. These skills are critical to career success, whether overseeing a casino, managing a resort, or advancing into another hospitality-related position. Professionals can leverage their graduate degree to obtain increased responsibilities and leadership opportunities while receiving desired promotions.

Professionals also can use their degree program to network with others in the industry. Graduate programs connect hospitality professionals not only in the U.S., but throughout the entire world, providing an opportunity to collaborate with peers from unique backgrounds.

Today, pursuing hospitality management graduate programs is more accessible than ever, as they can combine the benefits of in-person and online learning via a hybrid structure. The Penn State Master of Professional Studies in Hospitality Management helps professionals gain in-demand skills and leadership experiences that translate directly into hospitality management and upper-level management positions.

This program supports professionals with a hybrid environment, where students enjoy the benefits of flexible, online learning while building face-to-face relationships with professors, peers, and professionals. Hospitality professionals in the program benefit from small class sizes where professors can provide 1:1 instruction and mentorship.

"The small class sizes allow for generous 1:1 time with the faculty, something which is unexpected at a larger institution,” Penn State graduate student Brandon Weller said. “The faculty also have proven to be very caring and flexible, something that is essential for working professionals going back to school.”

The Penn State alumni network, which has more than 775,000 graduates worldwide, provides participants

with plentiful connections and opportunities to grow their network.

Penn State’s Master of Professional Studies in Hospitality Management provides real-world experience via professional internships and work experiences. Students delve into profit maximization, data analytics, leading people and teams, and future trends in the hospitality industry. Participants also can take webbased courses from the Penn State Smeal College of Business MBA program to apply business tactics to their career in hospitality. They have access to the global hospitality community, too, as professionals in the program learn alongside others from around the world.

Students can get involved with professional associations, including Meeting Professionals International, Professional Convention Managers Association, American Hotel & Lodging Association, National Restaurant Association, and Friends Services Alliance. & Grill. Construction crews later completed Phase 2 with the opening of the property’s new barbecue restaurant - CBQ, added two floors of gaming areas, opened The Overlook event space, a roof top swimming pool and pool house for hotel guests to enjoy, and more.

Currently, Phase 3 is underway and expected to be complete in 2025. The new Rod ‘N’ Reel dining room will be going back to its original location from 1946, which will include outdoor dining on Fishing Creek. The property will have a flexible banquet space that can accommodate up to 500 people or allow for two simultaneous events. A roof top deck overlooking the bay will provide a great space for private events. This phase also will include additional hotel rooms, with most of them overlooking The Chesapeake Bay. A three-story atrium with direct views of the bay will connect the existing hotel to the new Rod ‘N’ Reel addition. The atrium will host year-round events, weddings, and live music, and will include a mezzanine bar featuring artisan coffee.

Currently, the resort provides a professional setting for corporate meetings, team building, and other business functions as well as formal and social events on Maryland’s Western Shore. Accommodating groups of 15 to 165, the property boasts a variety of premier waterfront venues.

From May to September, Rod ‘N’ Reel’s iconic Bandshell is the place to be for live music and views of the bay. The Rock the Dock concert series features performances by more than a dozen bands, including some of the region's best tribute bands.

The “Rural Montgomery” area in the county is located west of the urban centers (Pike and Rose, Bethesda, Silver Spring, Rockville) and extends to the borders of eastern Frederick County, and north of the Maryland side of the Chesapeake & Ohio Canal. Elias said the large space would be completely transformed into Bistro Cotiere, a fine dining restaurant that will feature a seafood station as well as a wine room and an aging room for steaks.

This project is being hailed as a premier example of sustainable master planning, and recently won an award from the American Society of Landscape Architects for Master Planning and Landscaping.

In the spring of 2023, the City of Bowie hired JLG Architects of Minnesota to design a new single sheet ice arena with the flexibility to expand. The proposed 49,000-square foot facility is to be built adjacent to the Bowie Golf Course. The proposed facility will replace the aging arena currently located in Allen Pond Park.

A new 120-room hotel and restaurant will be developed to achieve a minimum Silver LEED Certification as the first LEED certified extended stay hotel in the county in the town of Cheverly.

Bread + Butter opened this past December at MGM National Harbor. An updated take on the typical American diner, the fast-casual concept is open for breakfast, lunch, dinner and late-night options. Bread + Butter features savory favorites and is located in the National Market, the resort’s fast-casual dining hall.

Experience MGM National Harbor’s covered outdoor casino terrace, the perfect place for gaming, enjoying cocktails, and taking in the warmer weather. This space features more than 100 games, green walls, and sea stone pavers.

The Washington Commanders announced more upgrades to Commanders Field in Landover, bringing targeted investments in improving the stadium and fan and player experience to a total of more than $75-million once completed since new ownership purchased the team in July. The upgrades include faster entry into the stadium, new premium seating options, an all-new suite experience in the 1932 Club, improved food and beverage options, and sound system upgrades. The stadium also will undergo a structural refresh and infrastructure improvements.

Plans to revive the area around the historic College Park Airport are about to take off. The Terrapin Development Company, the university’s economic development arm, has partnered with the city, Prince George’s County, and private companies with plans for Aviation Landing, envisioned as a 1.3 million-square-foot complex of retail, research, and office spaces and 900-plus units of housing.

Conference Center Boosts In-Pers Interest with New Interactive Offe

When “police officers” busted a fringed flapper at a Historic Hotel Bethlehem meeting, event participants got an entertaining surprise and organizers benefited from a more energized crowd. At Historic Hotel Bethlehem’s Executive Conference Center in Pennsylvania, meeting organizers are finding creative new ways to bring people back in person.

While business travel is slowly recovering from pandemic lows and people feel safer, many have gotten comfortable with virtual meetings and do not want to return to business travel. To combat this, the team at Hotel Bethlehem realized they need to make being at the meetings better than being at home.

According to Dan Withrow, director of food and beverage sales, “We thought about the types of activities people want to leave the house for. They like going to parties, getting out and exploring cities, and being active.”

One of the hotel’s more popular activities came about simply by going with what they do best and leaning into their roots. The historic hotel was built in the 1920s during the height of prohibition and included a hidden speakeasy. With the art deco design already built in, a speakeasy themed event with a bootlegger bust was a no-brainer. It also is a great way to celebrate coming out of lockdown (another prohibition of sorts) a century later in the 2020s.

Another priority for the event staff at Historic Hotel Bethlehem is to give meeting participants an experience they never have had before. New experiences mean making memories. Attendees are more likely to take what they have learned at these meetings home with them and incorporate the information into their daily work lives if they have attached it to a new memory.

One of the best ways to cement memories is by creating an immersive experience. “People don’t want to be passive observers. That is boring. We aim to get the participants involved, whether it’s through costumed attire, themed challenges or live demonstrations and workshops,” says Withrow.

The hotel also might have themed decor and music to add audio and visual elements that envelop the group and keep attendees actively engaged. As people have more and more fun with work, that enjoyment translates to vitality and a refreshed drive for success.

The speakeasy theme is just one example of how to do this. Often, the hotel will pull from the guest business’ background for an idea. They might arrange visits to the local lab for medical companies or cuisine from each region of the United States for international travelers. They even have had a local brewhouse host a cocktail hour tasting in a nearby museum.

“The possibilities are endless and we always welcome ideas from anyone on the team. Ideas like this foster a sense of connection, but also add a human touch to the event,” adds Withrow.

Withrow goes on to say that the goal is to truly tailor the experience to guests, yet take the burden of planning off the company’s plate. Ease of planning is one of the most important factors coordinators consider when they choose a venue for a meeting or convention. Since the venues know their towns better than most guests, it makes sense that venues like Historic Hotel Bethlehem take a larger role in planning experiences for meeting attendees.

January 26-27, 2024 – Lancaster, PA –Discover Lancaster hosted a FAM Trip for planners and their partner to explore all that is new in Lancaster. The FAM Trip started at the host hotel, the Lancaster Marriott at Penn Square and followed by a welcome reception held adjacent to the hotel at The William Montgomery House housed in the Lancaster County Convention Center. Dinner followed at Decades Restaurant, a bar, retro arcade, and boutique bowling alley.

The following morning, the group headed to the Lancaster Central Market. For almost 300 years people have been meeting at the Market to enjoy the freshest local food, ready-made unique dishes and flavors from all over. Breakfast was held at the Holiday Inn followed by a site tour of the Doubletree Resort. The group then traveled to the Eden Resort & Suites for lunch and a site tour. PHILADELPHIA CVB 2024 TOURISM OUTLOOK EVENT

The Philadelphia Convention and Visitors Bureau (PHLCVB), alongside partners at Visit Philadelphia, hosted the 2024 Tourism Outlook event at the Pennsylvania Convention Center. The event featured a look at tourism results for 2023, sales and marketing initiatives for each organization in the year ahead, and industry advocacy priorities for 2024.

PHLCVB President and CEO Gregg Caren shared insight on the events the city is welcoming this year that were booked by the bureau. Philadelphia’s tourism and hospitality industry is gearing up to host more than 180 total meetings, conventions and sporting events generated by the PHLCVB this year including 20 citywide events. The PHLCVB-booked events are projected to bring in more than 500,000 attendees to the city.

Caren also shared projections from Tourism Economics in the international traveler segment. In 2024, the PHLCVB anticipates Philadelphia will welcome 1.3 million overnight visits from international travelers generating nearly $800 million in spending in the Philadelphia region. The MEETS Conference at Caesars Atlantic City is the premier gathering covering the meetings education, events, travel and sales areas of the meetings industry.
