Go Get ’Em, Dragons Back-to-school season is a whirlwind of pencils, backpacks, lunchboxes, and for me, the wife of a Carroll coach, it’s a distinct reduction of quality time with my beloved. The season also means trading beach bags for backpacks and poolside lounging for after-school study sessions. Most students want to go back to school about as much as they want to visit the dentist. But Dragons aren’t like most students. And Carroll ISD isn’t like most districts. For Dragon Nation, heading back to the classroom is an opportunity to boost a GPA, join a club, make a team, shatter a record. It’s an opportunity to protect the tradition. Just take a look at the incoming seniors profiled in our annual “Five Ones to Watch” feature. They are some of Carroll’s best and brightest. These students are dancers, artists, Green Jackets, actors, singers and musicians, but first and foremost, they’re Dragons. There’s no harm in restating the obvious: When you’re a Dragon, it’s something special. We examine what it means to be a Dragon in our feature on page 51. No matter who you ask, one response remains constant: Being a Dragon means you’re part of a family. One giant, devoted family united by the bond of the green and white. I can vouch for this personally— often from the energy-packed stands, cheering on our team (and my favorite coach). As we kick off the new school year, we also celebrate a decade with Superintendent Dr. David Faltys. In most districts, the average superintendent tenure is just over three years. But Southlake is far from average. Under Dr. Faltys’ leadership, Carroll ISD has achieved countless awards and honors. We caught up with his assistant, Barbara Yelton, for the inside scoop on what it’s like working with Dr. Faltys and keeping all things Dragon running smoothly. See our Q&A on page 64. As summer winds down and stores fill up with school-supply swag, just imagine all the possibilities of the school year ahead. August 22 will be another great day to be a Dragon!

A Prince’s Legacy The musical career of Prince spanned more than 40 years, during which he sold more than 100 million records worldwide. Over the past four decades, Prince performed in numerous concerts and festivals (too many to count!). The Brazilian music festival, Rock in Rio 2, took place in January 1991 and marked Prince’s first appearance at the event. This month, a recording of his Rock in Rio 2 performance will be released as a two-disc set featuring 14 tracks. The world may have lost an incredible musician in April, but his legacy will live on through his work.

Can’t See the Forest for the…Dragon? Another Disney animated classic turned live-action film, “Pete’s Dragon” is the story of orphan boy Pete and his imaginary—or is he?—friend Elliott, a giant green dragon. An old woodcarver, Mr. Meacham (Robert Redford) has told many a tale about a fierce dragon living in the woods. But the skeptic grownups, including Redford’s on-screen daughter Grace (Bryce Dallas Howard, “Jurassic World”), don’t know what to make of Pete’s dragon, a creature that fits the description of the mystical being in Mr. Meacham’s tales. Local connection: Dallas-native Tony Halbrooks co-wrote the screenplay for the movie.

A World United Athletes from all over the world will be representing each of their countries in Rio de Janeiro, Brazil, during the 2016 Summer Olympics. These men and women will compete in a total of 306 events over the course of the games. The 2016 U.S. Olympic Team—comprised of more than 500 athletes—is ready to bring home the gold. There are 42 Olympic sports in which to participate, including fan favorites: swimming and diving, track and field, beach volleyball and gymnastics. Returning this year after a 112-year absence: men’s and women’s golf.

KIDSWING TOURNAMENT BROUGHT FUN, PHILANTHROPY TO TROPHY CLUB Kids helping kids is the unofficial motto of KidSwing, a series of golf tournaments started by a 10-year-old who wanted to give back to the hospital that cared for him. KidSwing is a chance for children to play golf while learning about giving back. Last month, kids ages five to 15 took to the greens at the Trophy Club Country Club for Texas Scottish Rite Hospital for Children. Since the first tournament in 2003, KidSwing has raised more than $1.8 million. COMMUNITY MOURNS ELISE CERAMI The Dragon family lost a young swimmer over the summer. Thirteen-year-old Elise Cerami died in June at Carroll ISD’s Aquatics Center. Elise would have attended Carroll High School this month as a varsity member of the swim team. The Cerami family has asked that donations in memory of Elise go toward a future scholarship. Checks may be made to Carroll ISD with “Elise Cerami Memorial” in the subject line. A recovery fund has been established for Coach Bill Christiansen, who suffered a cardiac event after giving Elise CPR. Funds raised will go directly to Christiansen and his family as he recovers. KIDS MATTER INTERNATIONAL CELEBRATES 10 YEARS WITH INAUGURAL 5K Care for a jaunt around Bicentennial Park? Join in the inaugural Lend a Hand 5K Run/Walk on August 27 at 7:30 a.m. The chip-timed event is a celebration of a decade of Kids Matter International and includes music, food trucks and a special “Kids Mile” for little ones to raise awareness for children in need. Funds raised through the event will benefit Kids Matter’s largest programs including Around the Block, which provides new clothes, shoes and more for disadvantaged children in the community, as well as Ramp-Up Reading, which supports literacy education.
SGSA 10U TEAM CLINCHED VICTORY IN KELLER TOURNAMENT The Southlake Girls Softball Association (SGSA) 10U AllStar team pulled off an impressive victory in June. In the last All-Star tournament of the season, the team surged out of the losers bracket to win six games in a row. The first game began at 9:30 a.m., and by 10 p.m., the girls were holding the championship trophy. Congrats to the team for this outstanding accomplishment! SOUTHLAKE SWIMMER RACED IN U.S. OLYMPIC TRIALS Former Dragon and current Longhorn swimmer Jonathan Roberts competed in the U.S. Olympic Trials in June. Roberts swam a 1:49.50 in the Men’s 200M Freestyle Finals, but wasn’t one of the final six swimmers to compete in Rio this month. Roberts was a member of the North Texas Nadadores as well as the 2013-14 USA Swimming Junior National Team. He also competed in the 2012 U.S. Olympic Trials. LACE UP YOUR SHOES FOR THE 8TH ANNUAL HOT HATCH CHILE RUN Looking to add some sizzle to your summer? Join the Neuro Assistance Foundation in its 8th Annual Hot Hatch Chile Run, Walk & Roll August 20 at the Central Market in Southlake. The event starts with a one-mile run/walk/roll, followed by a 5K handcycle and 5K. The event raises money for community members with spinal cord injuries and disabilities. Entry fees include a full, hot breakfast from Central Market Café. At the end of the race, enjoy live music while sipping beer samples from Martin House Brewery.

DISABLED VETERAN STOPPED IN GRAPEVINE ON ACROSS-COUNTRY JOURNEY Larry Hinkle, a Southlake native and disabled veteran, stopped in Grapevine in June on his journey across the country to bring awareness to the nation’s veterans and first responders. Hinkle started his journey called “The Hump,” on April 3 from Camp Lejeune, North Carolina, and will complete his mission when he steps onto Camp Pendleton, California, where he was stationed as a United States Marine from 2000-2004. GET YOUR SHOPPING LISTS READY: TEXAS’ SALES TAX HOLIDAY IS HERE If you haven’t started your back-to-school shopping, you’re in luck. Texas’ sales tax holiday is August 5 -7. As in previous years, the law exempts most clothing, footwear, school supplies and backpacks priced under $100 from sales and use taxes, which could save shoppers about $8 on every $100 they spend. All sales of qualifying items made during the holiday period qualify for the exemption, including items sold online, or by telephone or mail. Layaway plans can be used again this year to take advantage of the sales tax holiday.

REGISTRATION OPEN FOR MIRACLE LEAGUE OF SOUTHLAKE It’s shaping up to be another exciting season for the Miracle League of Southlake. Nearly 200 players and 16 teams are anticipated for the fall season. Know someone who’d like to play ball? Registration is open now and closes September 10. Opening Day festivities are scheduled for 9:30 a.m. September 24. The last game of the season is scheduled for October 29 with November 5 as a rain day. Additionally, Miracle League of Southlake is kicking off a new venture: The organization is working with Cooperstown Dreams Park to bring the magic of baseball to Southlake. CARROLL GRAD NAMED BACK-TO-BACK NATIONAL CHAMPION Former Dragon and Lady Bear, Kelci Ortiz, has a big reason to jump for joy: She’s a back-to-back national champion in acrobatics and tumbling (A&T), and she’s a recent Baylor University grad to boot. Over the course of a season, Baylor competes in 10 meets over the country. The top teams go to nationals, and over the course of four days, compete in quarterfinals and semifinals. The last two teams compete for the title of National Champions. Event finals also take place where individual events are held at nationals. Ortiz competed in two of the event finals this year and won both for a total of four national titles. MEDIANS, EXPANSION UNDERWAY ON STATE HIGHWAY 26 Over the summer, TxDOT continued the reconstruction of State Highway 26 in Colleyville into a six-lane road with curbed medians from John McCain Road to Brown Trail. Slated for completion in 2018, it’s the city’s largest construction project to date. James Hubbard serves as the SH26 project coordinator for the City of Colleyville, providing support for citizens, business owners and property owners throughout the project. Colleyville hosts monthly informational meetings to provide updates and gather feedback.

HUNDREDS OF HOTEL ROOMS COMING TO SOUTHLAKE Economic development continues throughout Southlake, as two new hotel projects are underway. Southlake’s City Council approved the almost seven-acre Westin project, a six-story, 253-room hotel with a conference center, fitness center and retail. It is set to sit at 1200 E. State Highway 114. In addition, a 121-room boutique hotel is planned at the Carillon development at State Highway 114 and White Chapel Boulevard. The five-story Indigo hotel will be built in a French provincial style.

SOUTHLAKE’S SUNTREE SQUARE ACQUIRED Phillips Edison & Company’s real estate investment trust has acquired Suntree Square in Southlake. It also acquired five other grocery-anchored shopping centers, including Market Street in McKinney, according to reports. Built in 2000, Suntree Square is anchored by Tom Thumb and has additional national and regional tenants including Massage Heights, Brain Balance and Earthwise Pet Supply. The deal brings the company’s portfolio to 69 shopping centers in the U.S. with 8.5 million square feet of retail space.

Hannah Hamel AMANDA HOPKINS AWARD OF EXCELLENCE WINNER ABOUT HANNAH | Some people are born to perform. Hannah Hamel is one such person. Whether it was singing Disney in front of her dad’s old camera, participating in choir throughout elementary school or even appearing in a Google Chrome commercial alongside none other than Lady Gaga herself, Hamel possessed stage presence before she ever graced one. Today she’s a theatrical star, voted among the top three actresses in her department and recipient of the Amanda Hopkins Award of Excellence, awarded by directors to the theater student they believe is a jack-of-all-trades. Performing in four shows as an actor, designing a show and writing a show undoubtedly put Hamel at the top of the list. During her senior year, look for Hamel in all the Carroll Senior High productions, where she’ll be present both on stage and off. Never one to shy away from setting goals, she plans to not only act but also learn to operate the light and sound boards, develop her technician skills and run for Thespian Board president. FAVORITE CLASS | “My favorite class in school is theater for obvious reasons,” Hamel says. “However, I prefer history to all others. I seem to have an obsession with the Middle Ages.”

Peyton Faltys CARROLL SENIOR HIGH GREEN JACKETS ABOUT PEYTON | Emerald Belles Senior Lieutenant Peyton Faltys was only four years old when she discovered a love for dance, and she hasn’t looked back since. It wasn’t until she attended her first Dragon football game that she knew she had not only a soul for rhythm but a desire to be part of something more. Earning a spot on the varsity drill team her freshman year of high school, Faltys immediately fell in line with the sisterhood bond the team is known for, and embraced the responsibility its status demands. After all, as a little girl she always looked up to the Emerald Belles. But it’s not just dancing that’s keeping Faltys on her toes. She is also a member of the prestigious Carroll Senior High Green Jackets. This group of student ambassadors is known for serving the community in many capacities and representing CSHS while wearing the signature bright green blazer. FAVORITE CLASS | “Aside from Belles, my favorite class last year was definitely AP U.S. history,” Faltys shares. “I believe the teacher can really make the class, and Mr. Irish was incredible in that he taught in a way that was both informative and fun.”

Austin Woolsey CARROLL BAND PRESIDENT ABOUT AUSTIN | Austin Woolsey, Carroll Band president, wasn’t necessarily destined to be a musician, but that didn’t stop him from dreaming. Though no one in his family had musical inclinations, Woolsey was in fifth grade when he decided to give band a shot. His inspiration? A Star Wars-themed performance put on by two trombone players a year above him. Since sixth grade, he’s been an integral part of the Carroll Dragon Band, currently leading as low brass captain for its marching band with a mission to make the program even better for future generations. After high school, Woolsey plans to study jazz in college, and he hopes to share his love for music with the world. As he travels the globe, he plans to play and learn while immersing himself in the culture and styles of music he discovers along the way, eventually teaching others the craft. FAVORITE CLASS | “Outside of music and music theory, it’s probably English,” Woosley says. “I love comparing my interpretation of a literary work to those of my classmates and hearing new ideas.”

Elizabeth Hick SOLO PERFORMANCE FOR FORT WORTH OPERA ABOUT ELIZABETH | While other children were singing along to cartoon theme songs, Elizabeth Hick was humming along to musicals such as “The Phantom of the Opera” and “Les Miserables” as a young girl. (She admits it drove her family a bit crazy.) But it was worth it, as she began her first voice lessons at age 10 and joined choir in seventh grade. Since then, she hasn’t stopped honing her voice, preferring the drama and challenge of opera, as well as classical church hymns because they express her faith. Her achievements have been many, but one most notable was her invitation to sing a solo alongside members of the Fort Worth Opera during an evening recital. When she’s not singing, Hick has her nose in the books and it shows. She has completed seven AP classes to date with plans to graduate with a total of 12. She also enjoys writing music and poetry—the better to sing to! FAVORITE CLASS | “My favorite class is either AP art history or AP biology,” Hicks says. Following high school, she would “love to major in vocal performance, but still take all the required premed classes, so that I could either go to medical school or continue classical singing. Whatever I do, I want it to mean something and make a difference in the world.”

Jack DeBusk TEXAS VISUAL ARTS SCHOLASTIC EVENT COMPETITOR ABOUT JACK | Jack DeBusk has always enjoyed exploring his artistic side. But although he has taken art classes most of his life, only recently did he realize art was more than a hobby for him. He attributes this change of attitude to his art teacher, Eric Horn, who opened DeBusk’s eyes to a whole new world of artistry—including his current love for abstract and conceptual art. Soon after, DeBusk was accepted into the state Visual Arts Scholastic Event (VASE) art competition, an achievement only reached by Texas’ most promising young artists. Senior year will find him in the studio perfecting his craft—and doing so always with a flourish of creativity. This year, DeBusk hopes to expand his knowledge while working on two portfolios to bring him closer to his goal of earning a Bachelor of Fine Arts in art school. His ultimate goal? To make art his life’s work. FAVORITE CLASS | “AP art is my favorite class,” DeBusk says. “But I also enjoy playing euphonium, which is a low brass instrument.”

SOUTHLAKE’S HIGH-TECH ANSWER TO RECENT WATER BILL WOES

Legendary business visionary, educator and author Peter Drucker once said: “What gets measured, gets managed.” It’s sage wisdom—and not just in the boardroom. On the heels of last summer’s water woes (Remember when Southlake and other Tarrant County cities got slammed with sky-high water bills?), the City of Southlake is helping citizens track their water usage. The goal? Encourage conservation of this precious resource—for the benefit of the environment and our wallets.

Since May, crews have been enhancing more than 10,000 water meters around the city with cellular technology. These smart meters give residents and business owners instant access to their water accounts, keeping everyone educated on their water use. A cellular communication device, called an end point, transmits water readings every hour through cell towers in the area, allowing customers to track water usage both weekly and monthly in real-time. Unsure if crews have been through your neighborhood? See the map on the next for a projected timeframe. Giving the city’s water meters a high-tech edge has indeed been a massive project, according to Southlake Mayor Laura Hill. “Installation of the upgraded equipment for over 10,000 customers is a huge undertaking,” she says. “But we have a good plan, and we are communicating heavily with our residents and businesses.” There’s even a smartphone element to the project. Badger Meter, the Southlake Water Utilities’ chosen meter distributor, developed EyeOnWater, an app that allows citizens remote viewing of their water usage. Residents can also get an alert when their usage exceeds a certain amount.

With water data at their fingertips, it’s easy for citizens to discern when water is wasted due to a running toilet or leaky faucet. More knowledge gives homeowners a heads up to make those maintenance repairs to stop wasting water—and reduce their water bills as a result. So, why is this change coming now? Hill explains that heavy water use can result in the city’s paying high peaking charges, which is a premium that Southlake’s water provider charges. “Our goal is to partner with our water customers— business and residential,” says Hill. “Together, we can manage use during peak demand, and hopefully everyone can benefit from dodging those peaking charges.” Water rates are tiered in order to encourage water conservation, according to Southlake Water Utilities. When your water consumption increases, the cost per 1,000 gallons goes up. So if you have a residential 1” meter, the second tier reflects consumption of 2,001 to 10,000 gallons at a rate of $5.08 per 1,000 gallons. Any water use 10,001 gallons or more is charged at a higher rate. By monitoring your consumption throughout the month, you can see when you are using the most water and make small changes to cut consumption and avoid going up a price tier. Keeping track of your consumption yourself leads to assurance that the meter is recording your water usage accurately, so you avoid overcharges. “Our users get to control their own usage,” says Hill. “They are in control, hour by hour. The city also reduces the possibility of meter-reading errors and increases efficiency. Imagine how quickly you will realize if there is a problem on your property like a pool leak or broken sprinkler system—or a family member who loves long, summer showers.”

Being smarter with water doesn’t just involve water meters—it means staying educated on water usage. The Water Smart, Southlake blog provides useful tips and advice for all things related to responsible water use. Tips, pointers and facts are also posted on the city’s Facebook page as well as in citywide communications. “We are working hard to educate people about their water usage,” explains Hill. “We are so excited about what this project will mean to all our citizens, not to mention the environment. It’s going to to be a real eye-opener for how much water gets used in my own home and business.” No matter how essential it is, water is something often taken for granted. And in the summer months, extra water usage can take a toll on the environment and residents’ wallets. Southlake’s water meter enhancement project makes it easier than ever for citizens to stay informed about their water usage. All it takes is downloading an app—and maybe a family ban on extra-long showers.
CONSERVING WATER IN SOUTHLAKE—AND THE STATE This new water-conservation technology is part of a larger statewide initiative. According to the Texas Water Development Board’s website, the board adapted a 2017 state water plan so Texans will have enough water in the future to sustain cities and rural communities, farms and ranches, and homes and businesses while also preserving Texas’ agricultural and natural resources. And considering that Texas’ population will only continue to grow, water management strategies aren’t just smart; they’re necessary. The plan projects our state’s population will increase more than 70 percent by 2070. As a result, it outlines more than 5,500 water management strategies to ensure Texans have suitable and costeffective water supplies now and in the future. The City of Southlake is implementing the change at no additional cost to citizens. Once your smart water meter is installed, you can download the EyeOnWater app and start tracking your water usage. “Residents are so tech-savvy and, when given the chance to manage their own water use, even down to the hour, I think they are really going to embrace it,” says Hill. “As a city, this is just one more way for us to partner with our residents and business owners to improve everyone’s quality of life.” Southlake STYLE Magazine

t seems within the last few years, as we have seen at CES and other electronic/computer tradeshows, our technology is finally catching up with futuristic movies from the last century. And while there may be a few hiccups in the development and usage of such technology (Has anybody mastered the Hoverboard?), there is no shortage of companies willing to try and try again. Although Microsoft did not invent the technology behind voice- and facialrecognition software, it has married the two—along with many other features—in its latest tablet, the Surface Pro 4. Though not quite as advanced as H.A.L. (“2001: A Space Odyssey”), the Surface Pro 4 can, with the touch of a button, recognize your face. Next, your digital assistant, Cortana, will come to life as you press the top button on your Surface Pen. Included in the box, the Pen glides over the 10-point touchscreen as if you were writing or drawing on actual paper. With a 12.3” display featuring extremely high contrast, the tablet allows you to see projects that include graphics in high detail. The low glare feature makes documents on the screen appear crisp no matter how bright the sun is when you take the day to work outside. And with a nine-hour battery life, you just might lose track of time without losing power. Weighing approximately two pounds, the 8” x 11.5” tablet is just the right size
to carry to and from work or school or to remote locales. Released early this year, the Surface Pro 4 has a sixth-Generation Intel Processor that’s offered in three speeds, depending on which of the three models you select. In addition, the memory load—4, 8 or 16GB—also depends on the model. Standard solid state drive (SSD) storage options include 128, 256 and 512GB, but you can customize even further to include 1TB of SSD storage. The base model starts at $899, the next one up is $999 and, at the top of the Surface Pro 4 line, the tablet with all the bells and whistles starts at $1,599. Rounding out the remaining specs, the Surface Pro 4 features a 5MP front-facing camera and an 8MP rear-facing camera. Both cameras allow for 1080HD video recording. With wireless and Bluetooth capability, and a USB port and microSD card reader, it’s no wonder Microsoft boasts the Pro 4 as “the tablet that can replace your laptop.” (The Surface Pen is included with purchase; the keyboard case is an additional cost.)

ragon Nation is a place all its own. From the outside looking in, it may seem like a town bustling with devout super-fans who have custom license plates and Dragon flags adorning their SUVs. And actually, it is. When you’re a Dragon fan, you’re proud to tout your devotion to the green and white. Whether your family is new to the community or you’ve lived here for decades, there’s no denying it: Being a Dragon is unlike anything else. It’s not just a school mascot; it’s part of who you are. It’s in your blood. Those who aren’t Dragons often don’t understand SLC. Just consider D Magazine’s venomous 2007 cover story, “Why You Should Hate Southlake.” The feature didn’t just infuriate an entire population (and trigger mass subscription cancellations); it shattered records for the magazine. It’s D’s No. 2 top-selling issue, second only to the 2014 issue featuring famed local radio DJ Kidd Kraddick. When D Magazine published that article nearly a decade ago, the staff knew it was going to, at the very least, rile up our city. They also knew what the people of Southlake have known all along: Dragon culture is something truly special. If it wasn’t, most D readers wouldn’t care about our traditions, Friday night lights or anything we’re doing in the ’burbs of Northeast Tarrant County. And D’s publisher wouldn’t have heard the cha-ching from all those magazine sales. Southlake Carroll certainly evokes intense feelings on both sides of the Dragon den, but what does it mean to be a Dragon, really? For the answer, one must first take a look back. 52 • AUG 16
FIRING UP THAT DRAGON PRIDE | How does a school district settle on a mascot? By listening to the students. In the 1950s, a student named Tony Eubanks thought “The Dragons” would make a good name for Carroll’s co-ed softball team, which happened to be in need of a moniker. The name stuck. Fast-forward nearly 70 years, and though there are new administrators, teachers, students and campuses, Dragon pride is as strong as ever. One reason is because camaraderie is naturally built in. Unlike other districts, everyone in Carroll is a Dragon. Beginning in preschool and kindergarten classrooms, students are raised as Dragons. Stop by an elementary campus, and when teachers roar “Carroll!” students respond with a resounding “Dragons!” With each year in the district, Dragon pride only grows fiercer. When students are taught to protect the tradition, they take it seriously. Have you ever seen someone step on the Dragon mosaic in the entryway of Carroll Middle School? Don’t bet on it. It’s tradition for eighth graders to teach seventh graders to protect the dragon. Leslie Elkins can vouch for it. She teaches language arts at CMS and is the recipient of Carroll’s 2015-16 Secondary Teacher of the Year Award. Elkins appreciates the tight-knit bond that exists between Dragons—even more now that she’s part of it. She’s been a teacher in the district for five years and, after growing up in the area (she attended Grapevine High School), Elkins is proud to be a member of Dragon Nation.

“I always knew Carroll was a great district. It’s a huge honor to work here,” she says. “I love that every school is a Dragon. I feel like I’m connected with teachers I might not ever teach with. And students feel connected to each other even if they don’t go to the same school.” Amy Evans, a first-grade teacher at Old Union Elementary School and Carroll’s 2015-16 K-6 Teacher of the Year, agrees that when everyone’s a Dragon, it breeds loyalty and unity. Schools within Carroll ISD aren’t just places of learning; they’re places of bonding under the shared experience of being a Dragon. “There’s an overwhelming sense of family here, and a lot of it has to do with the fact that every campus is Dragons,” she says. “In other districts, there is competition and rivalry between schools. Here, we grow up as one big family. We support each other and root for each other.” This sense of community and Dragon pride is recognized well beyond the bubble. Evans remembers wearing a Carroll T-shirt 1,500 miles away in New York. Someone recognized the Dragon logo and struck up a conversation with her. When you’re a fan of the green and white, it’s hard to remain anonymous. It seems everyone knows about Dragon Nation and SLC. LIVING UP TO HIGH EXPECTATIONS | This recognition is due to Carroll’s success—on and off the field. Carroll ISD is the largest exemplary school district in Texas. This spring, Carroll Senior High was named one of America’s smartest public high schools, coming in at 49 out of more than 23,000 public high schools across the United States, according to research firm Niche. The Dragon football program has won eight state titles—more than any other school in Texas. Carroll ISD has racked up nearly two dozen state championships and accrued six UIL Lone Star Cups, an award that began in the 1997-98 school year that recognizes Texas high schools for their achievements in a variety of academic, athletic and music championships. These accolades are just a few of many. Students in Carroll ISD not only have acrossthe-board talent, but they also have a spirit to achieve at the highest level. Dragons are taking AP exams in record numbers—and more than half receive college credit as a result. In 2015, 2,369 students took an AP exam, a number that’s nearly double the 1,277 students who took the exam in 2010. When it comes to the ACT test, Dragons soar well above their state and national peers. Carroll averages a composite ACT score of 26.4, while the average Texas score is 20.9 and the average national score is 21.0. Carroll’s expectation of excellence begins early and is fostered every day. A district doesn’t achieve the kind of ratings and distinction as Carroll by

resting on its laurels. Though the classes, homework and extracurricular activities can stack up fast, Elkins encourages students not to get overwhelmed by the day-to-day duties of upholding the Dragon tradition of excellence. “Focus on the bigger picture and know that this rigor is building each student to be better,” she says. If being a Dragon means they have to study a little longer and work a little harder, students in Carroll ISD are up for the task. They like being Dragons and everything it encompasses. Evans says this passion is unique to Carroll. She’s been a teacher for 13 years— five years in Southlake. But before she taught here, she and her husband, Adam, moved here. They wanted to give their two children the best possible education. The fact that Evans got hired into the same elementary school that her daughters attended was just an added bonus. “Because I’ve taught in different districts,” she says, “I appreciate that the kids want to be here. There’s such energy and excitement. They want to come to school, and it’s fun for me to see that.” THE SPIRIT OF A DRAGON | When you’re a Dragon, there’s always one constant you can count on: Excellence. “Setting high expectations encourages students to do more, to push themselves and to achieve more than they thought they could,” says Elkins. “We hold everybody to the expectation. That’s what makes us great.” But there’s more to being a Dragon than simply doing your personal best—being a Dragon means watching out for others. Dragons are taught to not only protect the tradition, but to also protect each other. “I know I’m always going to have somebody to be there for me,” says Evans. “I feel confident my daughters will get what they need. I feel confident I’ll provide my students what they need. The whole community is a family.” In her first year in Carroll ISD, Evans worked as a long-term sub. When a teacher was diagnosed with stage 4 cancer, Evans covered for her during the spring semester. She recalls walking into the classroom of third-graders whose beloved teacher had just taken a leave of absence. “Those precious kids were looking at me,” Evans remembers, “and I knew I had to love on them while they were going through this situation.” At the end of the school year, a student wrote a letter to Evans explaining that she didn’t want to go to school if her teacher wasn’t going to be there. But after having Evans as a teacher, the child changed her mind. She wanted to go to school again. “That was very powerful for me,” says Evans. “To meet her academic and emotional needs was huge.” It’s a testament that being a Dragon isn’t just showing up in the classroom; it’s a responsibility that comes with a sense of duty, pride, achievement and excellence—and most definitely some swagger, too. “Being a Dragon is a duty that one needs to uphold,” says Elkins. “We’ve made a name for ourselves, and it’s up to us to live up to that name and keep it going.” Southlake STYLE Magazine

ou’ve certainly had a grilled cheese sandwich in your lifetime—probably made with Mrs. Baird’s white bread (or Wonder, if you’re a Yankee) slathered in margarine with a slice or two of American cheese peeled from a piece of plastic wrap placed in between. But no matter how talented your mom was with a skillet, we’re betting she never used artisan breads or added fresh sliced apples and brie to your sandwich. Diana Ezzell knew the grilled cheese sandwich had never reached its full potential, so the Oak Cliff resident shared with a few friends her idea for using the 1960s lunchtime staple as a platform for a restaurant. “Grilled cheese is meant to be fun,” says Mack Simpson, who handles marketing for Dallas Grilled Cheese Co. “It’s meant to evoke good memories.” The restaurant’s partners, who are all scratch cooks, continually experiment with new combi-
nations to add to the menu. Concoctions that meet their strict standards become weekly specials to gauge customers’ enthusiasm. Recently the BBQ Short Rib Mac ‘n’ Cheese sandwich was unveiled to rave reviews. “If we think it can go between two slices of bread, we’re going to try it,” Simpson adds. “We’d like to cover the world in cheese.” Along with The Classic (rustic white bread, American cheese), regular menu fare includes a Grilled PB&J, Fried Bologna and The Favorite—Parmesan-crusted grilled sourdough with American, aged Cheddar and Gruyére cheeses, crumbled bacon and Dijon mustard. Yeah, we’re thinking Mom didn’t come up with one quite that fancy at your house. “We make the nostalgic true classics all the way up to things you’d expect to be served at a museum with a glass of wine,” Simpson says.

If you dine with a group, we recommend ordering a variety of sandwiches and asking your waiter to cut them in quarters for sharing. But if grilled cheese is not your passion, you’ll still find plenty to choose from including starters such as the Pretzel-Fried Mozz with marinara sauce for dipping and DCG Wings. Or dive into a soup or salad, but leave room for dessert. Try the Bread Pudding or order The Elvis—featuring grilled brioche, peanut butter/cream cheese/honey mix, banana slices, marshmallows and hazelnut spread. While the menu is kid-friendly, it’s adultapproved, especially the bar, which features 23 beers on tap as well as wine and cocktails. “We take the same approach of playing around with ingredients with our drinks,” says Simpson. “We make our own sangrias in-house and create unique cocktails.” Dallas Grilled Cheese Co. also makes their own pickles, ranch dressing, cucumbers and more. “Anything we can make fresh, we figure out a way to do it. It’s better that way,” adds Simpson. The restaurant has adapted to its surroundings particularly well, with a patio dining area that basically overlooks the parking lot. When we visited on a Saturday for lunch, the public lot was full and there was already a 45-minute wait. But it’s easy to pass the time while waiting for your text message that your table is ready; stroll around the block and browse through the eclectic mix of local merchants, antique stores, pop-up shops and art galleries. Or simply people-watch. Simpson says during the week, tables are a little easier to come by, but on the weekend, “All bets are off,” he says. “This has become a real destination spot and we often see huge crowds who spend the day at the Bishop Arts District.” But no crowd has equaled the one the restaurant saw on their anniversary January 19. Dallas Grilled Cheese offered $1 classic grilled cheese sandwiches and $1 draught beer all day long. “The line stretched through the parking lot and into the street,” recalls Simpson, who said at times they had a two-hour wait. “We served about 3,000 sandwiches and ran through six kegs of beer. We ran out of white bread by 3 p.m. and sourdough at 6 p.m., so we had to get creative. It was literally crazy. A madhouse.” Will they do it again next January? “Oh, probably. People were singing in line and taking photos. It was a lot of fun, too.” Which is pretty telling about the restaurant’s overreaching attitude toward their concept. “We’re very serious about running the restaurant,” says Simpson, “but we like to have fun. If you’re pretentious about grilled cheese, you’re doing it wrong.”

restaurant’s signature zeppelin, which, if you’re dining at Bread Zeppelin, is a must. There’s something about the toasty crunch of the bread and the cool crispness of the lettuce that makes this meal a standout. With 40 ingredients and 20 homemade dressings for the choosing, it’s hard to make a final decision as you make your way down the line. But whatever combination you settle on, it’s sure to please your taste buds. Each salad is chopped to your liking and, not only that, but every bite is guaranteed to have a consistent amount of all your favorite toppings. That’s because a salad samurai behind the counter chops it fast with a mezzaluna knife, a curved blade with a handle on each end. We’ve never seen lettuce fly quite like that. “We need more Mexican restaurants in Southlake,” said no one ever. Our city is in the midst of a Mexican-food invasion. In the past few years, we’ve had an onslaught of establishments turning out tacos, burritos and the like. Southlake is home to so many outstanding Mexican restaurants, in fact, that it feels like any newcomer is throwing down the gauntlet to competitors. Chiloso Mexican Bistro is just fine with that. The restaurant in Kimball Oaks doesn’t pay any mind to what other establishments are doing; it doesn’t need to. With locations in Rockwall, Wylie, Richardson and Forney, Chiloso has perfected delicious Mexican dishes. Uncle-and-nephew team Joe and David Balli founded the restaurant in 2005 out of a passion to share their ideas of fresh, bold-flavored Mexican food. The menu has and will continue to evolve, according to Chiloso’s website. The constant is that it centers around a small number of fresh ingredients prepared simply. Chiloso follows the usual fast-casual model: Patrons go down the line and make their selections, choosing between tacos (they’re offered in street-style, Tex-Mex and classic varieties), nachos, burritos, bowls or salads. Then comes the good part—piling on the flavor with fire-grilled meat, classic taco meat or slow-roasted pork. And don’t forget to garnish with your favorite add-ons. (We’re partial to the fire-roasted corn, grilled vegetables and tortilla strips.) You don’t even need to wait for lunch to get your taco fix. Chiloso’s staff is up and at ’em at 6 a.m. on weekdays (the restaurant opens at 7 a.m. Saturday and 8 a.m. Sunday), serving Austin-style breakfast tacos with all your favorite fillings: eggs, bacon, chorizo and more. The tacos are loaded to the max with warm and savory fillings. Chow down on one of these babies, and you can accomplish anything in the day ahead. Other breakfast options range from classic (a breakfast plate with eggs, refried beans, potatoes and chorizo and barbacoa) to inventive. Take Avocados by Morning, for example. This dish includes seasoned, grilled Haas avocado halves tossed in fresh lime juice and topped with scrambled eggs, chorizo, green chiles and jack cheese. We typically prefer our avocados cold, but this entrée made us change our minds. Breakfast at Chiloso will turn your morning into a fiesta, but we’re up for zippy flavors any time of day. Just try not to fill up on the house-made chips and salsa. It’s nearly impossible not to plow through a whole basket. But if you do, refills are free. Some might scoff at another Mexican restaurant opening in Southlake, but we say bring on the tacos! Chiloso Mexican Bistro is one more way to spice up your life with fresh, south-of-the-border flavors.

Fall Road Trip NEIGHBORING NEW MEXICO OFFERS BATS AND BEAUTY AT EVERY TURN
D
iscover a landscape quite different than the plains of Texas as you head west to New Mexico. Set your sights on two spectacular national parks: White Sands and Carlsbad Caverns.
First to White Sands About a 10-hour drive due west from the Metroplex takes you to White Sands National Monument, a desert landscape of rolling white gypsum dunes that stretches as far as the eye can see. The over 275-square-mile expanse of brilliant white sand in the Tularosa Basin is home to a diverse population of wildlife that’s adapted to their unique environment. See if you can spot a bleached earless lizard or a sand-treader camel cricket. Other creatures, such as the adorable apache pocket mouse or desert cottontail rabbit, wait until nighttime to come out of hiding. Maybe you can spot the tracks they leave behind? Kids and adults alike can spend hours sledding on colorful discs (available in the gift shop) over the powdery sands, which look like banks of snow. But temps soar to triple digits, so hydration, sunscreen, sunglasses and protective clothing are essential. Pack a picnic and take advantage of the many shelters provided for relaxing and refueling. Climbing the dunes is a leg workout like

none other! And be sure to stick with your group. One dune is indistinguishable from the next, and tourists have been known to get separated easily. The White Sands Trading Company gift shop stocks plenty of snacks and drinks, as well as T-shirts and souvenirs, but the nearest restaurants and hotels are in Alamogordo, about 13 miles northeast on Highway 70. The park closes nightly, so no camping is allowed onsite.

There are caves and then there are caverns. And while all caverns are caves, not all caves are caverns. Confused? Just know that Carlsbad Caverns are massive! In fact, if caves tend to make you feel claustrophobic, you likely won’t be bothered here at all. Wear sneakers, sports sandals or hiking boots and comfortable clothing. While the cavern is well-lit, buying the kiddos flashlights (or cool headlamps) beforehand lets them illuminate the dark recesses they pass along the way—and saves you the expense of buying one in the gift shop. You can opt for a self-guided tour or pay an additional fee for a park ranger to lead you, depending on your level of interest, time available, ages in your party and such. The visitor center staff can help you decide. Your tour of the cavern includes a hike down a 750-foot trail of the natural entrance. Then you can explore over 30 miles of cavern chambers developed for public touring, including the Big Room—an area spanning over eight acres and the most readily cave accessible in North America. At the deepest part of the cave, you’ll find restrooms and a small snack area with seats and benches for resting. For your trek out, be prepared for a workout. In fact, play rock-paper-scissors for who’s going to carry the youngest kid out when he gets pooped. It’s a haul! But the magnificent cavern makes the journey worthwhile. Carlsbad Caverns is truly a treasure worth exploring. As this is the National Park Services 100th birthday, check the calendar of events on NPS.gov before planning your trip. Special events like night hikes, climbing demos, bird-watching tours and more are offered. But certainly plan to visit before the end of October to watch the spectacular Bat Flight program, as thousands of Brazilian free-tailed bats exit the cave at dusk on their nightly forage for food. Bat Flight program times change throughout the season, so check with rangers at the visitor center or call ahead for nightly program times. Prior to the evening bat flight, a short program is presented in the outdoor amphitheater by a park ranger. The starting time of the talk varies with sunset and may be canceled in the event of inclement weather.
Three-Day Trip Plan Leave early from the Metroplex and spend the night in Alamogordo, New Mexico. After breakfast, hit White Sands National Monument and have lunch in the park. Leave in time to check out the New Mexico Museum of Space History, open daily from 9 a.m. to 5 p.m., in Alamogordo, or hit the road for Carlsbad Caverns, about a three-hour scenic drive with options for stopping for photo ops. If you arrive in Carlsbad before 7 p.m., go straight to the caverns to see the bats. Then the next morning, return to tour the interior of the caverns. The drive back to North Texas is 450 miles, but if you’re not in a rush to get home, spend an additional night in Carlsbad. There’s plenty of natural beauty to appreciate in our neighboring state—take time to enjoy it.

THE GREAT ORCHESTRATOR BARBARA YELTON KEEPS DRAGONS WORKING IN HARMONY Behind a desk at Carroll ISD’s administration building sits Barbara Yelton. She’s assistant to Superintendent Dr. David Faltys, but she’s no gatekeeper. Instead, she’s more like the heartbeat of the district. Yelton, who celebrates 25 years in Carroll ISD this month, keeps schedules and activities operating smoothly, among many other responsibilities. As we prepare to kick off a new school year, one thing is for sure: Yelton couldn’t be happier to welcome Dragons back. Q: W hat’s it like working as assistant to Dr. Faltys?

A: Working with Dr. Faltys is like having dinner with the pope. It’s a wonderful honor. He is simply the best. I can honestly say there has never been a single day when I didn’t want to come to work.
Q: H ow does it feel to be recognized as a Paraprofessional Service winner for 2016?
Q: What does a typical day look like for you? A: I arrive at my office early about 6:30 or 7 a.m. It allows me the pleasure of quietly easing into the day with my morning coffee and “Hits 1” on Sirius XM so that I start every day with a song in my heart. We have staff meetings every Monday, and I have various other monthly meetings for which I prepare the agenda and take meeting notes. I also manage Dr. Faltys’ calendar, which keeps me busier than you might imagine. On any given day, I talk with students, parents, district employees and administrators, CISD school board members, and other members of the local community and our great state. Every day brings something or someone new. Q: W hat’s something about your job that might surprise people? A: I attend all of the Carroll ISD school board meetings, where I take the official board minutes. Meetings begin at 5:30 p.m. and usually finish sometime between 7:30 and 9:30 p.m. You would be surprised at how few cars are left on the road when I’m headed home from a board meeting! Q: I n your opinion, what does it mean to be a Dragon? A: To me, being a Dragon means embracing and enjoying traditions, aiming for excellence (and more often than not, achieving it), respecting

A: It is such a lovely honor to receive this award because a fellow employee nominated me. Receiving it makes me want to work even harder to ensure that I remain worthy of it. Q: H ow would you describe the atmosphere in the office as everyone gears up for a new school year? A: It’s a healthy mix of excitement, anticipation and exhilaration with just a hint of panic thrown in when we realize there are only a few short weeks until staff members return to work and students return to the classroom after their summer breaks. Q: W hat are you most excited about as Dragons prepare to head back to school? A: I can’t wait to see what the new school year brings for our students as they set their sights on new goals and accomplish great things. One of my favorite things is to see our students on Twitter enjoying themselves—whether it’s learning something new, being mesmerized by a visiting author’s tall tale, participating in a theatrical production, seeing the surprising results of their science experiment, or finishing a race in record time. Nothing matches a child’s smile. It’s precious and priceless. Q: Anything else you’d like to say? A: I’d like people to know that I work with the smartest, kindest, funniest and most compassionate and dedicated administrators, teachers and school employees, who work tirelessly on behalf of our students to ensure that all of our children are appreciated and loved, and are as successful as they can possibly be. Every day I work with my dearest friends, and that is a true blessing.

A Concert for a Lifetime Coldplay brings chart-toppers to Dallas.

t's been four long years since the Grammy Award-winning alternative rock band Coldplay played here, and their A Headful of Dreams tour won’t disappoint. This is the seventh tour for the band with front man Chris Martin and marks their return to a large-scale pyrotechnics and laser light show that will be sure to ignite AT&T Stadium. With hits like “Viva la Vida,” “Hymn for the Weekend” and “Up & Up,” Coldplay’s latest album has so far reached number two on the U.S. Billboard charts. Formed in 1998, Coldplay features the British quartet of singer Chris Martin, guitarist Jonny Buckland, bassist Guy Berryman and drummer Will Champion. While they’re known for their unique sound and energetic concerts, the band has also won 62 awards from 209 nominations over the past 18 years for songs like “Yellow,” from their debut album, Parachutes (2000), and “Viva la Vida,” from their fourth studio album, “Viva la Vida or Death and All His Friends” (2008). And who could forget their live performance headlining the halftime show at Super Bowl 50, along with Beyoncé and Bruno Mars? The performance was considered the third-most-watched show of all time in the United States, with viewership of 115.5 million. t’s that time again: Nine days and nights of freewheeling fun, country music, rides, livestock shows, food, shopping and, most of all, rodeo! With multiple stages, the music alone is reason to head to Denton for the North Texas Fair and Rodeo. Headliners this year on the Budweiser Stage include Josh Abbott Band, Steve Wariner, Jake Hooker & The Outsiders, The Damn Quails, Shane Smith & The Saints, Casey Donahew Band, and the original one-and-only Charlie Daniels Band. The PRCA Rodeo begins Friday night and runs the entire week with events like bareback riding, steer wrestling, saddle bronc riding, calf roping and a calf scramble. And you won’t want to miss the team roping, barrel racing and bull riding.

On Tuesday and Wednesday, enjoy Mutton Bustin’ (where kids try to stay on the back of a sheep) and the 21 and Under Rodeo. For the 21 and Under Rodeo, categories for men and women include breakaway roping, bareback riding, saddle bronc riding, tie down roping, team roping, goat tying, barrel racing and bull riding.
