It should come as no surprise to those who know me that I subscribe to the Word of the Day through Dictionary.com. After a simple one-time sign-up, glorious new words are delivered daily to my inbox absolutely free. Yes, I’m a word nerd and not afraid to admit it. Just last week PORT-MAN-TEAU was served alongside my morning tea, and I knew it was a sign. This month we have dedicated an entire feature to sharing the area’s best brunches, as voted upon by our readers. And the word brunch is my favorite example of a portmanteau. Long before celebs were blending their names into Kimye, Brangelina or Bennifer, or kids were saying they were “hangry” or “chillaxing,” someone had the ingenious idea to put breakfast and lunch together— and give it a fitting portmanteau. (I’m not one to brag, but we love putting maple syrup on food so much at our house, we often make brinner, too!) Check out our “Best of the Brunch” feature starting on page 13. If our photography doesn’t make your mouth water, then I’m not sure we can be friends. Another one of my favorite things is horseback riding. And since May means it’s time for the Kentucky Derby and Preakness Stakes, we sat down with Bill Casner, a Flower Mound resident who has had some pretty notable success with the ponies. You won’t want to miss our inspiring story about him in “Million-Dollar Dreams” on page 28. For all the mothers in our area, let me wish you a lovely time spent with your family this Mother’s Day and, if your family could use a little shopping inspiration, feel free to leave this issue open to pages 40 and 41. We feature some gorgeous gifts for moms this month in our Shop in Style department. Remember “Cheers”? How the entire bar erupted with “Norm!” when their favorite customer waltzed through the door? Well, that’s how Jim Verfuth expects you to feel whenever you return to Verf’s Grill & Tavern. The wait staff may not bellow out your name, but you can be sure they’ll get to know you and treat you like family. So it came as no surprise to Verfuth when we told him the restaurant that bears his nickname won for Best Atmosphere. “We train and speak to that on an ongoing basis,” he says. “We provide a warm welcome, memorable moments and a fond farewell.” As a result, Verf’s thrives on repeat business—from brunch to supper. “A lot of people first started dining with us when we were The Village Grill,” Verfuth says. And much of his staff at his first restaurant is still part of the team at Verf’s Grill & Tavern. “We put a lot of effort into the quality of the food and the creativity of the menu. As a result, we’ve become very good at what we do.” So when you come to Verf’s Grill & Tavern for brunch, expect nothing less than the best—great service and a stellar menu. Expect real Vermont maple syrup to be served with the chicken and waffles. Enjoy smoked bacon that’s been crusted with brown sugar and pepper then baked to caramelized perfection. Await an ample kick from your first bite of the fresh spiced russet potatoes. And when you order the Steak Benedict, don’t be surprised to be served grilled tenderloin on top of fresh-baked French bread with poached eggs topped with hatch chili hollandaise sauce. If you’re up for something spicy, try the Tenderloin and Egg Nachos. Crispy corn tortilla chips are topped with scrambled eggs, chopped tenderloin, ranchero sauce, pico de gallo and melted Chihuahua cheese drizzled with Mexican crema. ¡Hala! It is also no surprise that Verf’s Grill & Tavern takes top honors for Best Brunch Beverages, with over a dozen adult offerings and specialty coffees on the menu. “We make an awesome Blueberry Mojito with muddled fresh blueberries and an array of unique takes on traditional favorites,” says Verfuth. The Tipsy Tea is made from southern sweet tea and orange vodka, and mimosas are mixed with orange juice, pomegranate juice or mango and orange juices plus mint. If tomato juice is your go-to base, Verf’s offers a House Bloody Mary or one featuring Bulleit Frontier Whiskey and bacon. Brunch at Verf’s is served on weekends from 11 a.m. to 2 p.m. For a special ambiance, dine on the patio year round thanks to the heaters and air conditioners. Surrounded by plants, you’ll feel like you’re seated in a garden right in the middle of town. “I can’t tell you the level of effort our staff goes through every day,” Verfuth says. “This award is for them. It’s awesome to see their efforts get noticed.”

When you serve only breakfast, brunch and lunch, you become a bit of a specialist at knowing how people like to start their day. At Starwood Café, every day from 7 a.m. to 3 p.m., customers can order anything on the menu and know it will be served fresh. In fact, people can also order items not on the menu. “Our staff is very accommodating,” says Dayne Banhart, manager. “We are more than willing to substitute items on the menu or specially prepare food for people who may not like their eggs cooked with butter or have an allergy. We never want them to feel inconvenienced.” It’s no surprise to see Starwood Café take top honors for best variety. From savory brunch fare—the Denver Omelet (served with hash browns or grits and toast, pancakes or biscuits) and the Whole Hog Skillet (featuring sausage, Applewood smoked bacon, ham, cheese, eggs and hash browns) that are delicious and filling—to sweet selections such as pancakes and waffles, and crepes smothered with fresh berries. “Our Banana Nutella French Toast is another menu favorite,” Barnhart says. The café has five locations across the Metroplex but maintains a smalltown feel. From the friendly staff to the hearty fare and kitschy décor, Starwood is a place that feels homey but doesn’t make you clear the table when you’re finished. And if you have picky eaters in your party, bring them along. If brunch isn’t their thing, they can always order a sandwich or salad. “We make an awesome Reuben sandwich,” says Barnhart. Loyal Starwooders know the best times to brunch are early Saturday or before 9:30 on Sunday mornings to beat the after-church crowds. But even if you have to wait for a table, the average wait is about 15 minutes. When asked how it feels be included in our best brunch locations, Barnhart says, “Our staff is proud of what we do, so it feels good knowing our customers appreciate us. Compliments are always nice to hear.”

If your favorite part about going out for brunch is trying something unique, then Dido’s Urban Grill gets you. In fact, if you’ve come to expect even chicken and waffles to be a menu staple, don’t get too comfortable. At Dido’s, the waffles are made with a batter infused with mac ‘n’ cheese. Yep, the Fried Chicken & MacWaffles puts a whole new spin on this popular item. The DiDominick family, proprietors, deems their menu as modern American with a twist. To say Chef Gary likes to mix up the menu is an understatement. “Brunch Chef Specials are updated each Saturday and Sunday along with a fresh omelet creation and flatbread,” says Ernie DiDominick, Gary’s dad. “Even our soups, sauces and dressings are created in-house. Each selection a guest chooses is prepared to order—no microwaves or heat lamps in our kitchen.” As the winner of Best Savory Menu, we checked out the latest offerings at Dido’s Urban Grill. Guests can enjoy the Ancho Dusted Flat Iron Steak & Eggs or the Crab & Shrimp Deviled Eggs. Perhaps the grandest display is the take on a traditional Eggs Benedict. “We are very proud of our many unique versions of Eggs Benedict, including a Bene that incorporates pulled pork and chipotle hollandaise, and recently a Crab Cake Benedict,” says DiDominick. Other recent savory dishes offered up include Baked Eggs, Croque Madam and Pork Trotter Benedict with Tarragon Hollandaise. And for those with a true Texas appetite, order the Texas Big Breakfast served with three eggs made your way, a choice of meat, toast and country potatoes. For something especially unique, the Steak & Eggs with tomatillo-pasilla sauce, cilantro crema, toasted pumpkin seeds, queso fresca and tortillas is sure to please. But you don’t win Best Overall Brunch destination without a well-rounded menu, so you’ll also find plenty of sweet servings of French toast and a tapas-style selection called Small Bites. MARCUS MARAUDERS FOOTBALL TEAM HAS NEW HEAD COACH Lewisville ISD announced April 10 that Kevin Atkinson will be returning to Marcus High School (MHS) as the new football head coach and athletic coordinator. He began his coaching career with the Marauder family as a wide receiver coach in 1992. Atkinson comes to MHS after serving as the head football coach and athletic director at Denton High School for five years, where he led the team to multiple Class 5A playoff appearances. STRYKER COMMUNICATIONS RELOCATES WITHIN FLOWER MOUND Last year, the Flower Mound Town Council approved a measure that would allow Stryker Communications to relocate but stay in Flower Mound. A top private employer in Flower Mound, Stryker Communications opened its doors in the Lakeside Business District in 2005, with more than 200 employees. The town council’s approval paved the way for Stryker to nearly double its square footage and number of employees; the expansion was celebrated with a ribbon-cutting ceremony in April. Without council’s approval, Stryker Communications would have sought to relocate to another community. As part of the expansion and relocation to a larger facility, Stryker Communications consolidated its Charleston, South Carolina, and Coppell locations to the new site. Stryker Communications, a division of Fortune 500 company Stryker Corporation, is a leading medical supply company and utilizes its Flower Mound regional headquarters for sales and marketing, research and development. In addition, Stryker Communication employees assemble lights used as part of integrated surgical suites, often found in surgery centers. Stryker Communications was also named one of the “Best 100 Places to Work” by Fortune magazine.

W

hen Bill Casner was a kid, all he wanted to do was ride horses. He recalls the summer he was four, riding at his cousin’s ranch. That’s when his love affair began. More than six decades later, the passion hasn’t faded. It’s like that with some people and horses. The beauty of the beast can’t be equaled in any other form. The strength, the elegance, the sheer power in the animal that can nuzzle your hand in search of an apple or toss you from the saddle should the thought cross his mind. Casner, 69, has been good with horses and, in return, horses have been good to him. At his 160-acre ranch in Flower Mound, he keeps about 35 horses—fine quarter horses, retired thoroughbreds, a dozen yearlings, a few two-year-olds and a champion named Well Armed.

DEFINING A DREAM As a teenager, Casner turned his fondness for the ponies into a job. He worked at Sunland Park Race Track in New Mexico, just outside El Paso, Texas, galloping horses in the morning before the jockeys would run

them in the afternoon. He even entertained the idea of being a jockey, but at age 18 and almost six-feet tall, he nearly starved himself to meet the weight requirement. “I rode four races before giving that up,” he says. So, Casner went to college with the notion of becoming a veterinarian. He enrolled at Tarleton State University in Stephenville and worked in the grandstand at the track during the summer. “My goal was to save $1,500 a summer,” Casner recalls. “Then I could pay for two semesters and get by with a parttime job during school.” At the track, Casner fell in love with horse racing. His post-graduate plan was to enroll at Texas A&M University to become a vet, but the lure of track was too strong. “I decided to be a race horse trainer,” Casner says. He would work across the United States with trainers and then, at 25, start training horses himself. But by then, Casner had fallen in love with more than horses. He had a wife, Susan, and two children. It was time to settle down.

and only 20 horses will run the race based on points accrued during their qualifiers as two- and three-year-olds. “I truly believe the Derby is a mythical race,” Casner says. “I didn’t know if we’d ever win. The horse’s career has to be virtually perfect. They have to be the best of their generation and they come from everywhere. Anyone can win it, but you have to be very lucky.” A year before the fateful Kentucky Derby victory, WinStar experienced an even bigger win.

ACHIEVING GOALS One becomes truly successful in the horse business not by winning races but by buying and selling exceptional ponies. A particular horse didn’t get offered up for sale by WinStar because he toed in [was pigeon-toed], and Casner felt he’d be devalued due to his confirmation faults. “I’d love to think I was smart for keeping him,” Casner says, but it was a business decision that led to Well Armed’s staying at the farm. Before Well Armed could even compete, he fractured his hip in an accident. Leg injuries on a racehorse are often career ending, but Casner personally rehabilitated Well Armed at his Flower Mound farm. “Mostly, I just wanted him to recover and have a good life,” he says, but Well Armed had loftier goals.

“What makes a racehorse is what we often can’t see,” Casner says. “It’s probably the same with any champion—heart, biomechanics, physiology and timing.” All those elements came together on March 28, 2009, when Well Armed won the $6 million Dubai World Cup in the United Arab Emirates by a record 14 lengths—nearly double the margin of the previous record. “That’s the highest high my wife and I have ever been on,” Casner adds. As for this year’s Kentucky Derby, Casner can be found in the grandstand, as he is every year, along with the rest of the horse-racing enthusiasts. “When they play ‘My Old Kentucky Home,’ it becomes very emotional for everyone in the grandstand,” he says. Well Armed enjoys the good life today—a welldeserved respite on the Casner farm in Flower Mound. “He gets turned out every morning with his pony buddy,” Casner says. And his owner is enjoying a quieter time these days, too. Casner sold his interest in WinStar to Troutt but still owns shares in some stallions there as well as his horses here at home. And he still rides about four times a week. “That’s my therapy,” he says. “When you get on a horse, the world goes away.”

Feedstore BBQ is located in one of the most original, continuously operated commercial properties in Southlake. here’s a buzz in Dallas around Nikkei, a hot new restaurant that specializes in Japanese-Peruvian fusion cuisine. The word Nikkei, pronounced “nik-ay,” is an expression for Japanese immigrants who left Japan and settled in new countries, one of which was Peru beginning in the late 19th and 20th centuries. The cuisine at Nikkei is a creative merging of flavors and cooking techniques from traditional Japanese and Peruvian cultures. It is nothing short of mesmerizing. Praise for the food, atmosphere and the distinctive dining experience seems to be never-ending. So who are the masterminds behind these phenomenal new dishes served just a stone’s throw away? Should we be surprised that Texas natives are at the helm? Chef Nick Harrison, Nikkei’s

corporate chef, has traveled the globe studying the culinary arts at some of the world’s most notable institutions, including Le Cordon Bleu in Paris. He is classically trained in cuisine and pastry creations and even served as a chef consultant in Chile and Lima, Peru. The multifaceted chef has now returned to his Texas roots right here in Dallas. Executive Chef Ross Demers is the other half of the dynamic duo in the kitchen at Nikkei. Chef Demers grew up spending time in his grandparents’ garden in New Hampshire, where he says his fascination for food began. He, like Chef Harrison, also grew up in Texas, but traveled west to California to study at the California School of Culinary Arts in Los Angeles. He became well-known

in the culinary circles of Los Angeles and then Vail, Colorado, before returning to Texas. At Nikkei, Chef Demers relishes the development and execution of the “sometimes experimental” dishes that he and Chef Harrison create on a daily basis. Together, these two incredibly diverse chefs are able to flawlessly create Japanese-Peruvian cuisine at Nikkei, preparing dishes with honor and respect in the footsteps of the cultural elders of these two regions. Chef Demers passionately describes his style as “in the moment, heartful and soulful.” When asked about their favorite dish to serve at Nikkei, neither chef hesitated. Their favorite menu item is the Rare Seared Scallop in Spiced Cashew Butter. “The dish really represents the balance and contrast of both worlds,” Chef Harrison says. “You have the raw sweetness of the scallop against the crisp saltiness of the seared side. You also have the earthy fermented flavor of shoyu against the creamy sweetness of the cashew butter. The Jaguar Paw cocktail pairs well with its sweet and savory fruitiness.” If Japanese-Peruvian cuisine is new to you, the chefs recommend starting with the salmon at Nikkei. “Black Garlic Salmon is a nice and easy introduction,” says Chef Demers. “Salmon is approachable and this dish has some amazing Japanese-Peruvian layers on it.” Nikkei’s dedicated sushi bar is equally as exciting as the menu, featuring an abundant array of specialty and prominent classic rolls and sashimi offerings. “One of the most popular items among Nikkei’s discerning clientele is the Doble Cangrejo Roll with crisp lump crab, shiso panca, garlic, chili, creamy snow crab and a soy wrapper,” notes Chef Demers. Chef Harrison created the entire menu at Nikkei, but he humbly passes the kudos on to his culinary colleague. “A menu is just words on a page,” says Chef Harrison. “The true culinary skill comes from Chef Demers. He has really brought those words on the menu to life with amazing execution.” Saving the best for last, we inquired about the most popular dessert after a Japanese-Peruvian feast. “We probably sell Matcha Hot Plate most,” says Chef Demers. “It’s a molten chocolate cake with a gooey center served on a hot cast iron plate and drizzled tableside with Matcha extract. It’s bubbly, gooey and delicious.” As for the atmosphere at Nikkei, consider it the ultimate spot for a sophisticated date night. Between the rooftop patio with stunning city views and a soundtrack of mod tunes inside, the entire space feels urban and upscale. Visit for dinner and drinks on the weekend, and the entire venue transforms from restaurant to late-night destination. If you’re in the mood to be daring on your next night out, let Nikkei wow your senses.

Kick it Up Make a Moscow Mule that bucks convention The Yellow Rose Steak and Chop House in Parker Square became known in the area for mules back when they were returning to fashion in 2011. Mixologists often like to play with the classics, because there is always room for improvement. This one was inspired by bartender Daniel Bristol’s love for all things spicy and his resourceful use of lemon peels from all the lemons he juices. The vodka infusion is made simply with freshly sliced jalapeños and lemon peels in equal parts. A popular vodka brand is slated to release a similar flavor soon, so if you don’t want to wait a few days to make your own, you can head to your favorite spirits store.

If there’s one thing folks can count on in our area, it’s choices for Tex-Mex food. But while options abound, quality, service and selection can vary widely. For over 18 years, the choice for flavorful, fresh Tex-Mex in Flower Mound has been Anamia’s. Owner Jay Ortiz opened his first Anamia’s in Coppell 25 years ago and has since opened locations in Southlake and Plano. And while Ortiz has grown the Anamia’s Tex-Mex brand (named for wife Anna and daughter Mia), he has stayed true to his original intentions. “Everything here is fresh and made from scratch,” Ortiz says. “In fact, you won’t find a microwave in any of our restaurants.” From house-made chips, salsa, sauces and guacamole, to daily deliveries of produce and herbs, freshness isn’t just a concept here—it’s an integral part of the business model. The menu takes optimal advantage of Ortiz’s commitment to quality ingredients by showcasing authentic Tex-Mex recipes served with a smile. “We expect you to feel like you’re at home with family when you eat here,” Ortiz says. “Hospitality is everything to us.” When we caught up with him, Ortiz was traveling between restaurants, hitting two locations during a Friday lunch hour. “I’m in my restaurants every day,” he says. “I have my hands on everything.” Ortiz has been a trailblazer for Tex-Mex dining, introducing North Texans to the brisket taco over 15 years ago and crafting tableside guacamole for the past 18. “Now other restaurants do similar things,” he says, “but we pride ourselves on making your guacamole to your liking—mild, medium or spicy. It’s not just for show.” Ever the innovator, Ortiz is now crafting a gluten-free menu and developing lighter fare to make Anamia’s a dining destination for people of all tastes and dietary needs. “People are paying closer attention to what they eat,” he says. Which bodes well for Anamia’s, since the restaurant has always been devoted to quality ingredients and delicious recipes—from the dining room to the bar. While the best Tex-Mex dishes are enjoyed with a cold margarita, Anamia’s is unveiling three new frosty cocktails to welcome warmer weather. The Maui Sunset features Midori (melon liqueur) and raspberry liqueur layered with fresh strawberries and the house lime margarita. “It looks like a sunset in a glass,” Ortiz says. n “Sunday, Bloody Sunday,” you might be recovering from U2’s concert that’s set to rock AT&T Stadium this month. MOTHERS’ HELPERS | TEEN MOMS GET THE SUPPORT THEY NEED THROUGH THE TEAM AT YoungLives

T

eenagers face many challenges—from deciding which classes to take in high school to choosing the right college; from answering no when saying yes seems a whole lot easier and often more fun. One of the biggest challenges a teenage girl will ever face is becoming a mom before she’s finished growing up herself. That’s where the leaders with YoungLives step in. YoungLives reaches out to young women to come alongside them in their journeys— to raise babies while discovering the path God has chosen for them as well. We spoke with Melissa Gomez, YoungLives Lewisville-Flower Mound coordinator, and Andrea Brakner, YoungLives Denton County coordinator, about their roles. ANDREA THE INSPIRATION BEHIND MY LIFE’S WORK IS: believing that God uses all of our pasts, the good and bad, for a great purpose. The shame I felt being a young pregnant girl, to a divorced single mom with two kids, not knowing how I was going to provide for my children, brought me to YoungLives. We have the opportunity to bring hope to the hopeless, love to the rejected and encourage change where despair once lived. YoungLives gives a voice to a population that many might discount or ignore.

ANDREA AND MELISSA PEOPLE MIGHT BE SURPRISED TO KNOW THAT: teen mothers are less likely to complete high school and more likely to end up on welfare. Teen moms who are involved in YoungLives for two years or more have a 72 percent chance of earning their diploma or GED; the national average is 38 percent. The Lewisville-Flower Mound YoungLives group is one of the largest YoungLives in the nation. We not only serve teen moms, but also the boyfriends and father of the babies. We also piloted the first Moms In Prayer program as a bridge over program for our older teen moms.

MELISSA EVERYONE NEEDS: a cheerleader! Life is hard on most teens without having a child to raise and support. I don’t have to imagine the immense weight these young parents have on their shoulders because I lived it. At 15, I became pregnant, but with my family’s encouragement and support, I finished high school and went on to receive a marketing degree all while working a fulltime job. This was all because someone was there to say, “Yes you can!” and push me when times were hard.

OUR MISSION IS: to love those who are sometimes hard to love. YoungLives has the privilege of reaching two generations through teen moms and their children, not allowing teen moms or their children to slip through the cracks. We do this by forming relationships with our girls; they are welcomed into the YoungLives family where they are fully loved and accepted.

ANDREA I AM MOST PASSIONATE ABOUT: the families we have served because they have helped me so much more than I could ever help them. They have taught me how to love better, dream bigger and have given me a front-row seat to all the amazing things God is doing in our community.

WHAT WE LOVE MOST ABOUT OUR COMMUNITY IS: being able to work with many talented people. We need their gifts to make a difference in our community through YoungLives.
