I grew up in rural Indiana where basketball was king, so football took a backseat to the boys on the court. Stranger yet, my high school was known for its wrestling program and won state when I was a senior. But fall Friday nights were all about football—even though we never let our expectations get too high. Because even if we didn’t win a game other than homecoming, everyone showed up and cheered anyway. Plus, the promise of hanging out at Pizza King afterward was worth sitting out in the cold for a couple hours. Here in Flower Mound, our two high schools regularly give their fans something to cheer about. And the marching bands and dance teams are worth the price of a season ticket in their own right. This month, we bring you in-depth profiles on the fearless leaders of the Marcus Marauders’ and FMHS Jags’ football programs, head coaches Kevin Atkinson and Brian Basil. If you make it to only one football game this season, you won’t want to miss The Mound Showdown, where our two teams meet on the turf for a fierce and friendly battle culminating in at least a year’s worth of bragging rights. The last three wins have gone to the Marauders, with last years’ game ending in a nail-biting score of 48-45, but anything can happen at this year’s game, played at Marcus High School on October 27 at 7:30 p.m. Get your tickets early! Even though football dominates Facebook and Instagram this time of year, it’s also the time of year for ensuring your students get off on a good start with their studies. We talked to a ninth grade counselor in Next Door and gleaned some great advice on helping kids cope with their new schedules. And if your favorite activity at a football game is seeing all the new fall fashions, you’ll want to take look at Shop in Style for some ideas. Have a great fall, friends, and be sure to keep up with us on social media. Tag your fall photos with #fmStyleMagazine or #FloMo, so we can share in your fun.

LITTLE FIRES EVERYWHERE CELESTE NG SEPTEMBER 12 Is Your Grass Greener? Award-winning author Celeste Ng grew up in the Ohio suburb of Shaker Heights, which turns out to be the perfect setting for the characters in her latest novel, “Little Fires Everywhere.” No one sets a better example of following the straight and narrow than fictional character Elena Richardson, a resident in Shaker Heights. In her novel, Ng paints a picture of an idyllic, master-planned community inhabited by residents just like Elena. However, when outsider Mia Warren rents a house from the Richardsons, it becomes apparent that Mia is not someone who subscribes to the local mentality. She and her daughter become something of a spectacle, not only to the Richardsons, but to the whole community.

IT IN THEATERS SEPTEMBER 8

Get Ready to Float You don’t have to be an avid Stephen King reader to appreciate the latest screen adaptation of one of his most notorious published works. “It” (2017) is based on King’s novel of the same name and promises to bring fear and unease to every movie theater brave enough to run “It”-s reels. This film is the first of a two-part series, with the second being released next year. “It” (2017) focuses on The Loser’s Club, a group of childhood friends who—think—they defeat a nightmarish foe responsible for bringing evil to their hometown of Derry, Maine. Actor Bill Skarsgard (The Divergent Series films) brings to life the latest version of the sadistic clown, Pennywise.

FRIENDS 364 DAYS OF THE YEAR, RIVALS FOR ONE If

there were ever a mutual admiration society among high school football head coaches, Flower Mound High School’s Brian Basil and Marcus High School’s Kevin Atkinson would definitely be a part of it. The two have an unexpectedly intertwined past. It’s pretty common for high school football coaches to know each other and even be friends, but nothing holds a candle to these two. Atkinson and Basil met while coaching at Colleyville Heritage High school in 1996. The school had just opened, and the two coaches worked to build a varsity program from the ground up under then head coach Chris Cunningham. By the program’s third year, Cunningham and company advanced to the third round of playoffs. Atkinson served as the offensive coordinator and Basil headed up the defense. “Coach Atkinson was the offensive coordinator on staff and was a great mentor for me,” Basil says. “I had a lot of respect for his organization skills, and his approach with the players that he coached.” To really get an idea of how much they have impacted each other, fast forward two years to 1998. At this point, Atkinson was teaching and coaching at Colleyville Heritage. He went to a district in-service training where he met a fellow Stephen F. Austin State University alumni named Michelle. “When I came back, I told Brian [Basil] I had just met his future wife and he needed to contact her,” Atkinson says. “He was very shy and didn’t. So I had Michelle call him and the rest is history.” fm STYLE Magazine

Yes, you read that correctly. A Marcus Marauder was the matchmaker behind the Jaguar’s Basil family. Brian and Michelle Basil recently celebrated 18 years of marriage and have two children. Basil says they are still good friends with Atkinson and his wife. Atkinson and Basil were obviously close, but they just got a lot closer this year, at least geographically, as Atkinson moves into the district as head coach of the Marcus Marauders. This will be Basil’s second season with the Flower Mound Jaguars. His inaugural season turned heads as the Jaguars were in the playoff picture until the final week of the season. Prior to Basil’s arrival, the Jaguars had won just a total of four games in the last three seasons. Last year, the Jaguars closed out the season at 4-6 overall in the very competitive 5-6A district. On the field about four miles away, Atkinson’s first season with the Marcus Marauders has just begun. Prior to moving to Flower Mound Coach Atkinson earned a 33-22 record as head coach of Denton High School Broncos. Now, Atkinson looks to bring his winning ways to a Marauders team that went 5-5 last season. As it turns out, it’s no coincidence that these buddies are suddenly rivals. “When the Marcus job came open, Kevin [Atkinson] called me and we talked on different occasions about Lewisville ISD and the community in general,” Basil says. “I told him about my positive experience here and how much I loved the school and how wonderful the community has been for my entire family. I told him that he would love it here.” The two are visibly competitive, but they are careful to not take it too far. Basil and Atkinson agree: at the end of the day, it’s just a game. For the rival schools, however, it is the game. The Mound Showdown. Rivalry games are the heartbeat of Texas high school football. Students graduate through elementary and middle school with an inherent, blind distaste of certain colors, mascots and team names. As they rise through the ranks to high school, it only increases as they proudly don their own team’s colors and playfully talk smack. The Mound Showdown is no exception. Basil got his first taste of the rivalry in 2016 and quickly found out the excitement and intensity it brings. “It was an incredible atmosphere and it is what you play or coach the game for,” he says. “It was a packed stadium and nobody was there to just hang out. Everyone was locked in and making noise and it was a fun experience. There was a lot of passion, but it was also classy. There was a mutual respect and that’s great to see in high school athletics.”

“WE WILL WIN!” ... JAGUARS MOTTO On the opposite side of the field, Atkinson looks to keep the Marauders on top. Since 2004, the Marauders have won seven Mound Showdown games to the Jaguar’s six. This year’s game could even the score. “The rivalries are always fun and you can’t really describe them until you get there and get to experience them,” Atkinson says. “It’s the game the players are most likely going to look back and remember. The key for us is that you can’t let it define your season. You have to treat it like any other game and leave the rest of the stuff to the fans and high schools and communities.” Basil believes the players have a similar outlook on the rivalry. With Flower Mound still at a size that allows for a tight-knit community, he speculates that many of the players from both schools know each other off the field. “The players on both sides know each other very well and in some instances, may have even grown up together,” he says. “Any time you have a situation like that, it’s almost like competing against your brother – the competition is much more intense, but when it’s over, you are still family.” The coaches may be relatively new–or in Atkinson’s case, brand new– but they aren’t the only roster changes of note this season. Flower Mound has two teams with two distinctly different rosters as they enter the 2017 season.

JAGUAR JOURNEY Last season the Jaguar’s offense was powered by quarterback Jackson Averitt who threw for 2,073 yards and 14 touchdowns while rushing for 428 yards and 12 additional scores. The AllDistrict selection returns under center as a dual-threat senior ready to lead the Jaguars’ attack. Basil notes Averitt continued to progress throughout the offseason and he will have the benefit fm STYLE Magazine

of junior wide receiver Jake Welch as his top option. Welch hauled in 13 catches for 258 yards and two touchdowns in an injury-shortened sophomore campaign and has the talent and opportunity to truly break out this year as a junior. Simon Balleux also had a productive spring and should be a big contributor in the passing game along with tight end Max Wadding. The question marks for the Jaguar offense come more frequently in the running game due to the graduation of all five starting offensive linemen along with 1,000 yard running back Ife Uzowihe. Graduation happens so Basil expects sophomores Markel Session, Pierce Hudgens and Aaron Dixon to share carries, at least early on, to fill the Uzowhie’s shoes. In the trenches, Basil believes while the Jaguars are inexperienced in terms of varsity starts, the unit possesses an abundance of depth and talent and began to gel during the offseason. Defensively, the Jaguars will again be led by all-state linebacker and reigning District 5-6A Defensive Player of the Year Connor Lee. The unquestioned leader on and off the field, Lee racked up 146 tackles and six sacks and has garnered numerous Division I offers. Fellow linebacker Alec Brooks will join him in the middle, giving the unit a dynamic pairing that Basil believes may be the best in the district. The secondary features a pair of returners in safeties Matthew Greenwood and David Evans. Last season, the pair produced 76 and 59 tackles, respectively. Linebacker Grant Outram also returns in the front and Basil raves about his spring, but the Jaguars will need to find a way to replace the production lost by the graduation of disruptive defensive lineman Brandon Bascue. Flower Mound also graduated a weapon in special teams in kicker Josh Grant. In short, you’ll be seeing a fair amount of changes to the roster. There are some big shoes to fill, but there is also ample returning talent. With a seasoned quarterback in Averitt and a coach with a full season under his belt, Fridays are full of promise.

MODIFYING MARAUDERS While the Jaguars enter the year with stability under center in Averitt, Marcus entered camp with a competition for the starting quarterback position. Atkinson noted that Xavier Maxwell, Rasheed Noel and Gus Sralla have all received repetitions in anticipation of the opener. Blake Covin is back at receiver after a strong season in 2016 and Atkinson believes he will be a “force to reckoned with” this year. Grant Hutcherson and Brayden Crinklaw will contribute as well, while Fort Worth Nolan transfer Marcel Brooks — a bluechip recruit at linebacker — will see a role in the passing game as well. Highly talented and athletic defensive back Clayton Rutz is also expected to see action on both sides of the ball. 16 • SEP 17

fmStyleMagazine.com

“RUN IT AGAIN” ... PRACTICE MONTRA While Marcus has questions at quarterback and is looking to develop at receiver, there is no question where the Marauders will hang their hat offensively. Justin Dinka broke out as an all-state running back after transferring from Coppell a year ago. As a sophomore he finished second in the area in 6A in rushing (1,711 yards and 20 touchdowns) behind Oklahoma signee Kennedy Brooks of Mansfield. Dinka, now a junior, will not only have the benefit of experience, but also of rushing behind a strong offensive line that features a handful outstanding prospects. Atkinson expects big performances from the offensive line trio of Justin Osborn, Connor Martin and Jacob Nyboer along with the addition of sophomore Michael Bonner who had a standout spring. As noted, the Marauders will be led by a first-year player with an abundance of talent defensively. Brooks is a four-star recruit rated in the top 100 nationally for his class according to 247sports.com. Sophomore Ethan Barr is also primed for a breakout in the middle and will be flanked by Jabril Darr. Rutz and senior Kevin Netters form a solid starting foundation in the secondary, though Marcus does have to adjust to life without multi-year starter and Iowa signee Matt Hankins at cornerback. Junior John Brand will fm STYLE Magazine

anchor a defensive front that is looking to establish depth and experience. Marcus also boasts one of the area’s best kickers in John Mayers. With talent across the board, Marcus is hopeful to return to the playoffs despite having a first-year coach in Atkinson and questions at quarterback. “Honestly, our goal really truly is to focus on the process and get better each week,” Atkinson says. “We have to make the commitment to be better football players and coaches each day. If we can do that, that will take care of the results.” However, a berth in the postseason won’t come easily in a district that figures to be among the deepest and most talented in the state. Southlake Carroll and Euless Trinity are traditionally among the top programs in Texas and should again be formidable in 2017 with the former coming off an unbeaten district title last season. Hebron, meanwhile, made the area round of the playoffs a year ago and is showing no signs of falling off, instead many believes the Hawks will take another step forward this year. “We’re excited about what we have, but we understand the competition is very strong,” Atkinson says. “At the same time, we’re glad to be in that situation and for the chances to be in those battles.” This year’s Showdown is set for October 27 with each team having two games remaining following its completion.

FLOWER MOUND NAMED IN TOP 10 SAFEST CITIES IN NATION One week it’s best credit scores and the next week it’s best crime rates. Either way, there is no arguing that Flower Mound is a great place to live. The National Council for Home Safety recently released a list the top 100 safest cities in the United States. To calculate and rank cities, the council reviewed the most recent FBI Uniform Crime Report statistics. Cities that did not submit a complete crime report to the FBI or did not have a population exceeding 50,000 were excluded from the list. Cities were ranked according to the number of reported violent crimes (aggravated assault, murder, rape and robbery), property crimes (burglary, arson, larceny-theft and motor vehicle theft) and officer count in one year. Violent crimes were weighted more heavily than property crimes. These variables were then measured against populations. The result ranked Flower Mound as the seventh safest town in the U.S. with a population of 70,894 and only 34 violent crimes and 506 property crimes in one year.

FLOWER MOUND AMONG TEXAS’ BEST CREDIT SCORE CITIES According to a study by LendEDU, Flower Mound’s residents’ average credit score is 746, earning the town a spot in Texas’ top 10 credit scorers. LendEDU specializes in student loan refinancing and consolidation, basically the student loan equivalent of Lendingtree.com. The company recently released a study in which it analyzed towns and cities across Texas with a population exceeding 1,000 residents. MARCUS NINTH GRADE CAMPUS COUNSELOR SHARES ADVICE FOR FAMILIES AS THE SCHOOL YEAR BEGINS

T

he school year can present challenges to students as they adjust to new classes, peers, teachers and extracurricular activities. We asked Natalie Melton, a counselor at Marcus High School’s Ninth Grade Campus, for her insight on how families can successfully navigate those trials to better ensure a successful start to school.

THE MOST REWARDING PART OF MY JOB IS: being able to serve students unlike anyone else on campus and seeing them flourish. School counselors work with kids as they navigate just about any challenge—all with a positive approach and outlook. I love this aspect of my job above all else. PARENTS CAN HELP KIDS PREPARE FOR A SUCCESSFUL SCHOOL YEAR BY: becoming familiar with resources available at school and encouraging students to utilize such resources. Many schools offer study groups with peer tutoring, for example. These can be a great option to traditional teacher-led tutoring. Parents can also encourage involvement in school clubs and activities through early discussions. When kids understand that parents expect them to be involved, they will be more likely to do so as opportunities arise. Students who are plugged in through school activities have increased motivation to succeed and work hard in school.

AS THE YEAR PROGRESSES, I NOTICE THAT STUDENTS: in ninth grade realize they cannot just wing it when it comes to the rigors of high school. By mid-year, the vast majority of freshmen realize they must complete their homework and study for tests in order to pass their classes. Freshmen also realize the importance of attending school each day (typically after they’ve been absent). High school courses move fast, and students realize how difficult it can be to catch up due to absences. MORE THAN ANYTHING, I LIKE TO EMPHASIZE: balance in our students’ lives and schedules. Children need a healthy balance of rest, fun, activities and school. When any of these is overdone, the others may suffer. When overly stressed, students unravel, and I often ask them about the last time they got a good night’s rest or enjoyed something fun. Oftentimes they cannot remember doing either in quite a long time.

AS ADVOCATES FOR THEIR CHILDREN, I ENCOURAGE PARENTS TO: allow kids to make mistakes early on and avoid rescuing them from challenges. These experiences allow children to learn problem-solving skills as well as coping strategies. It is important for children to develop grit and resiliency early on. As they get older, they will be able to reflect on prior challenges as a means to help overcome future challenges.

PARENTS CAN GAIN INSIGHT INTO THEIR KIDS’ SCHOOL DAY BY: using online resources like Twitter and Facebook to see what’s happening at school, then using this information for starter conversation starters at home. For example, if the school had a pep rally but the parent really wants to know about the child’s math test that day, the parent can start by asking about the pep rally. Then they can parlay that into, “Oh, and then you took a math test, right? How’d that go?”

I FIND IT HELPFUL TO: actively listen to students. Often they will continue sharing so long as we listen to them without judgment. Regardless of what might be going through my head, I remind myself I am glad they are talking, and I want them to continue doing so now and even in the future. How we listen determines how much, or even if, kids share with us.

STUDENTS TODAY FACE CHALLENGES SUCH AS: social media expectations, high academic demands, stress about fitting in and determining what they should do after high school. Therefore, it is critical we keep open lines of communication with our kids, ask questions when needed and make use of school and community resources early on.

Personal Craft THE PICO BY PICOBREW DEMYSTIFIES THE POPULAR HOBBY OF HOMEBREWING

E DETAILS Price: $799 Dimensions: 16"W x 12"H x 14"D 24 pounds PicoBrew.com

fm STYLE Magazine

veryone’s family has tall tales. Making moonshine on the back porch during Prohibition might be one of those stories your great-grandfather wants you to forget. Although personal distilleries are still frowned upon (not to mention illegal), brewing beer in the comfort of your kitchen is a popular hobby. However, as any seasoned homebrewer will tell you, it’s not that easy. That is, it didn’t used to be. Then the Pico countertop appliance by PicoBrew arrived on the scene, making the homebrewing process simple. Spend more time enjoying the grains of your labor and less time scouring the web for how-to videos. When your Pico arrives at your doorstep, and after you have unboxed the five smaller boxes, be prepared to read a lengthy manual. At first glance, the steps might seem overwhelming, but PicoBrew holds your hand throughout the entire process. From product assembly and prepping the kegs to fermenting and racking your brew, the

Pico makes brewing your first batch of beer as easy as using a single cup coffee-making appliance. In fact, the process is very similar. However, instead of using a pod filled with your favorite medium roast, a PicoPak contains the hops, grain and yeast needed to brew your own craft beer. The Pico by PicoBrew is programmable using a touchscreen, making separate timers and food prep thermometers obsolete. The Pico uses an automated process that can be monitored using the Wi-Fi feature and your smartphone, tablet or computer. It comes with one brewing keg, one serving keg and one PicoPak, along with the remaining accessories needed to assemble and use the appliance. A CO2 regulator, which is the quick method of carbonation, is not included, but may be purchased on the PicoBrew website. Additional PicoPaks can be bought on the site as well, and there is an option to customize a PicoPak to create your own unique beer recipe. As a side note, the appliance may also be used for cooking sous vide. You can make your steak and eat it— paired with your favorite homebrew—too!

HOME STYLE TWEAKS | TIPS | TRENDS

where Descendants Dream

O

f all the rooms in your home, your child’s bedroom is perhaps the most multifunctional. The space typically sports a bed, dresser and a closet filled to bursting with clothes, books, toys and treasures. And, once your offspring start school, they’re expected to complete their homework in the same space. So now the room serves as an office/bedroom/playroom/storage unit. When you consider that children’s bedrooms are often some of the smallest rooms in a home, making the most of every square foot is crucial.

CHOOSE COLOR WISELY To avoid the trap of repainting your child’s room every time he or she announces a new favorite color, start with a clean neutral base paint for the walls, preferably in eggshell or satin for easy cleaning. Benjamin Moore Downpour Blue (2063-20) might be too dark for all four walls, but serves as a great tone for one accent wall when teamed up with soft gray or white. It also looks beautiful with bold accessories. If your girl loves pink but you’re afraid of the walls appearing too much like cotton candy, opt for Benjamin Moore Sun Washed (2169-70). When paired with pink bedding, the walls give off the slightest blush of color. For a beachy vibe that works for boys and girls of all ages, try Sherwin-

Williams Sea Salt (SW 6204) for a gray-based blue/green that is oh-so-calming. Once you’ve chosen a soft paint color, layer in accessories and bedding that allow your child’s personality to shine through. Keep in mind the primary function of the room is to provide a place to sleep, so limit bright colors. In other words, just say no to neon and let warm hues envelop your babes as they drift off to dreamland. CONTAIN THE CLUTTER As the room is expected to perform multiple duties, shop for furniture made to function. Look for beds with built-in drawers, seating with storage and bookcases that can accommodate bins. A desk might be needed for your tween or teen, but only if they will use it. Oftentimes a corner of the room decked out with a beanbag or soft furniture is a preferred place for tackling homework, and an unused desk takes up valuable real estate. Fight the urge to use the room’s closet for long-term storage. Outgrown clothing and toys, keepsakes, trophies and such should be relegated to a consignment shop or attic or perhaps donated to someone in need. Items kept in a bedroom closet should be used on a regular basis. Look on Pinterest for storage inspiration and learn clever ways to contain the mess, such as using canvas shoe organizers for Barbie dolls or a pegboard for Nerf guns or Hot Wheels. Most importantly, when you allow your child to help plan his or her room, your kid is more likely to take ownership in keeping it clean and organized, right? Who’s dreaming now?

exans are all about that beef life. There’s certainly no shortage of topnotch steakhouses in Dallas, but Corrientes 348 stands apart. The upscale, 10,000-squarefoot establishment is the first Argentinian steakhouse in Big D. It’s also the first location in the United States for the family-owned steakhouse, which operates six restaurants in South America. After a meal here, we think you’ll agree: Argentinians know how to get their meat on. Corrientes 348 captures the essence of Latin American dining—meat, more meat and plenty of fresh vegetables to share among friends. The meaty eatery is basically the opposite of a tapas restaurant. Instead of small plates, the steakhouse rolls out massive specialties to share with the table. Whether you opt for the half or full portion of any particular dish, you can count on classic Argentin-

ian fare prepared family-style with only the best ingredients. “We hope people fall in love with our unique Argentinian concept,” says Sidiclei Demartini, co-owner of Corrientes 348. “We intend to make this culture known in Dallas and bring a different atmosphere to the steakhouse concept.” The restaurant hits the high notes in every respect, from the regionally sourced prime beef to the outstanding sides to a first-rate wine list, which spotlights malbecs from Argentina and cabernets from Chile. The central theme, though, is definitely meat, with menu options ranging from sirloin, rib eye, leg of lamb, pork chop and boneless chicken legs. The $75 bonein tomahawk steak is a meaty masterpiece that gets rolled on a cart to your table and carved in front of you.

LOCALFLAVOR review Corrientes 348 is undoubtedly a carnivore’s dream, but the side dishes are also worth celebrating. Nearly every dish is made from scratch, including the dough used in the restaurant’s signature potato dish, Papatasso. One of the restaurant’s standout starters, Empanadas 348, will send your taste buds into overdrive. A freshly made empanada is filled with beef, egg, green olive and fresh herbs for a tantalizing taste of South American cuisine. It’s flaky and light, and a good sign of the meal to come. Other indulgent sides include Pure de Papas (puréed mashed potatoes with roasted garlic, ground black pepper, Parmesan cheese and fresh herbs) and Papatasso Provenzal (crispy smashed potatoes topped with garlic and parsley). As for the vegetables, don’t miss the Cebolla Parrillera (grilled onions with fresh chimichurri) or Zapallito Parillero (grilled squash with garlic and herb sauce). Whatever happens to be on the table in front of them, Demartini wants guests to enjoy the entire experience. “We want you to feel like you’re part of the Argentinian culture,” he says. “Mostly, we want you to feel at home and to have lots of fun.” It’s impossible not to enjoy yourself here; the restaurant pours on exquisite service, steaks and wine. The space, designed with natural woods, interesting textures and pops of bright color, pays homage to the restaurant’s namesake: a famed street in Buenos Aires, Argentina. The food is similar to what’s served in the restaurant’s South American locations, but the Dallas restaurant is much more focused on the bar and kitchen, Demartini notes. Both are open so guests can enjoy the view and have the full experience of seeing chefs in action. The chefs appreciate the open concept, too. “Preparing and sharing traditional recipes and seeing the delight on our guests’ faces brings an incredible amount of joy not only to me, but to our entire team,” says Demartini. “We are very proud of our high-quality steaks.” Should you save room for something sweet, Corrientes 348 pulls out all the stops with traditional desserts such as tres leches cake and flan. We recommend the dulce-de-lechestuffed Argentinian crepes. This dessert is guilty pleasure at its finest. Corrientes 348 has a welcoming, comfortable vibe, but the menu prices definitely move it into special-occasion territory. Whether you stop in for lunch or dinner, the experience is worth every penny—everything at this Argentinian steakhouse is a wow.

A Dynamic Duo Hanaya Hibachi & Sushi Allows You to Have Your Steak and Eat it Una-Tu

HANAYA HIBACHI & SUSHI 701-769 Long Prairie Road Flower Mound 972.866.7800 HANAYAFM.com

50 • SEP 17

In the ever-developing Lakeside DFW, two chefs saw an opportunity. Hanaya Hibachi & Sushi opened in June, giving customers the best of both worlds through a highly inclusive, Asian fusion menu. Keeping in theme with the new resturaunt’s homebase, Hanaya is Japanese for “flower shop.” While neither chef is a florist by definition, sushi chef and co-owner Anh Ha may as well be with his gorgeous arrangements of salmon, yellowtail tuna, seared scallops and other seafood options. Ha’s business partner and fellow chef, Hong Yang, overees the hibachi side of things. It’s a match made in Japanese cuisine heaven. Ha and Yang have been friends for over five years and have a combined 40-plus years of cooking and restaurant experience. It shines through their menu. So what is so special about it? The options. Let’s say your kids want to be entertained by the hibachi showmen, but you just want sushi. Totally doable. Opting to sit in the hibachi portion of the restaurant doesn’t lock you into that part of the menu. The same goes for general seating. If loud noises and bursts of flame are not your thing, you can still enjoy the freshly prepared vegtables and meats from the grill. You may be thinking that is pretty standard for a Japanese steakhouse. Well, flip to the next page of the menu. That’s right: ramen selections. Keep flipping to find tempura dishes, traditional Chinese food options and bento boxes. For those not keen on sushsi, Hanaya is still a goldmine, which is good because Ha has encountered several customers who have preemptively sworn off the rare-meat rolls. “There was one man who said, ‘No, raw meat is disgusting,’” Ha says. “I told him to just close his eyes and try it. He loves it now.” The ambiance alone makes this place an ideal location to swoon over sashimi. Custom glass panels separate the hibachi side from the rest of the restaurant, making for a quieter dining area. This area features beautiful tatami-style booths, designed by Yang. The lighting is soft and dim, with mostly natural light during the day. While Yang takes creative credit for the booths, Ha is the brains behind, of course, the sushi display. All meats are displayed to the right of the bar under a glass case. Greenery is tucked between clean, white plates, making for a bright showcase of fresh ingredients. Lunch or dinner, Hanaya is more than worth a try. Ha and Yang are veterans in their field and will treat you to a delectable dining experience.

Add some antioxidants to a classic cocktail For the most part, Rockin’ S Bar & Grill – Lake Grapevine sticks to beer. However, restaurant manager Jose Garcia was excited to whip up this blueberry mojito and add it to the drink menu. The drink was originally conceived when he and another bartender hosted a meal themed for a team with purple as their color. The muddled blueberries give the mojito a vibrant color that can be played up or dressed down depending on the amount of blueberries used. This cocktail leaves plenty of room for personal interpretation, but the staff at Rockin’ S knows it best. While making it at home may save you a winding trip through Murrell Park, who doesn’t want to sit on a deck over the lake, drinking in the view and mojito?

INSTRUCTIONS: Place the first four ingredients in a glass with one ounce of ice and muddle for about five seconds. Mix the remaining ingredients in a shaker with two ounces of ice. Shake well and pour the mixture into a hurricane glass. Add more blueberries if desired.

BOARDINGPASS fall foliage

Fall’s Natural Beauty POPULAR PLACES TO SEE FALL FOLIAGE IN THE UNITED STATES

P

ack your bags and start your engines—it’s time for a road trip north of the border. The onset of fall is the perfect time to sightsee your way along the coast. Leaf peeping, as it can be called, is a spectator sport that you can participate in from the front seat of your sedan or the well-traveled trails of a forest. Contrary to popular belief among nature enthusiasts and amateur gawkers alike, there is more than meets the northern eye. Here’s a rundown of coast-tocoast locations to behold one of the season’s natural beauties: the changing colors of fall foliage

East Coast What the Catskill Mountains lack in majesty, they make up for in the beauty of their flora. Located in the southeastern portion of New York, The Catskills

54 • SEP 17

are the ideal place to see fall foliage on the East Coast region. Occupying four different counties, including Delaware, Greene, Sullivan and Ulster, the Catskill Mountains are just short of a two-hour drive north of New York City. The Great Northern Catskill Mountains are home to rolling landscapes of indigenous vegetation that includes oaks, firs and spruces. These are the trees responsible for producing the vibrantly hued foliage during the fall. Toss the picnic basket and blanket to experience a different way to feast your eyes on the fall foliage of The Catskills. Located in the Great Northern Catskill region of Greenville, New York, in the, Sunny Hill Viking Obstacle Course will blow your mind. With 5.5 miles of 35 obstacles including rope climbs and log balancing, this is an Obstacle Course Racing (OCR) World Championship qualified course. Open from spring to fall, the facility is for training champions and challenging amateurs. Part of the Sunny Hill Resort & Golf Course, the course does not charge an admission fee if you are a guest of the allinclusive resort. VisitTheCatskills.com, SunnyHill.com

fmStyleMagazine.com

BOARDINGPASS fall foliage There is no shortage of autumn beauty in the northeast United States, and there are plenty of small-town America leaf-peeping locations. In Stowe, Vermont, it’s the golden leaves of the sugar maples, and in Salem, Massachusetts, it’s the scarlet leaves that perfectly frame century-old homes.

West Coast A journey to the West Coast calls for a trip to the Willamette Valley in Oregon. Considered to be the agricultural heart of the coastal state, the valley begins just south of Portland and stretches 150 miles south. The valley has scenic highways and byways lined with breathtaking fall foliage and meadows of seasonal flowers. However, there are other ways to catch a glimpse of the colorful leaves. Silver Falls State Park is located in Silverton, Oregon, about 15 miles east of the state’s capital city of Salem. A trip to the 9,200-acre park should include a hike along the Trail of Ten Falls that will have you standing in awe behind the South Falls, a 177-foot curtain of water. If you’d rather leave the hiking and foraging to your outdoorsy friends, experience the finer side of Willamette Valley. Agriculture includes vineyards, and it’s only natural that you’d find more than 700 of them in the valley. More than two-thirds of Oregon’s wineries and vineyards call this region home. Grapes that grow in the cool climate of Willamette Valley have gone on to produce award-winning Pinots, Chardonnays and Rieslings. TravelOregon.com, OregonStateParks. org, OregonWineCountry.org Again, a drive or flight to the West Coast of the United States should not include just one destination. However, your best chances of seeing fall foliage in the Northwest are excursions to the valleys, canyons and lakes of the region. For example, drive through the southern Lake Tahoe area among the Sierra Nevada range in California, or find a walking trail within the Hoh Rainforest of Olympic National Park in Washington State.

The South…Sort Of Although fall foliage sightseeing is usually thought of as an activity best done in northern states, there are a few gems south of the Mason-Dixon line, such as Bardstown, Kentucky. A visit to the small town of 11,200 during the fall yields a glimpse of nature’s autumn palette. Of course you’d expect to see trees enveloped in yellow- and orange-colored leaves lining the streets of Bardstown. However, serious fall foliage gazers can get the best views aboard My Old Kentucky Dinner Train, which runs through the countrysides and hills of Kentucky’s Bourbon Country. The dinner train has a lengthy history, but it was established as a tourist attraction in 1988. The 37-mile round trip takes passengers through the Bernheim Forest and Jim Beam Distillery property, to Limestone Springs and back. VisitBardstown.com, KYDinnerTrain.com
