Along any journey, some people come and some people go. In our collective Southlake journey, more people come and most people stay. Southlake is a great place that draws you in and makes you want to leave a mark of your own — not just on your children, but on a community full of so many doing great things. For me, that feeling first came and still comes from the short but substantial time spent with Brian Stebbins. His mark on this community through the development of Southlake Town Square is as big as they come, and it affects our lives in a positive way each and every day. So too does the mark made by Bill Webb, most notably through his tireless work as the former president turned jack-of-all-trades of the Carroll Athletic Booster Club. Through his leadership, the CABC has reinvented itself for the digital age all while continuing to fulfill its mission to meet the equipment, training and travel needs for all Dragon UIL sports. Even after his kids graduated from Carroll, Bill continues to be selflessly dedicated to our Dragons, literally turning the livestreaming cameras and microphones of “Dragon Athletics Live!” onto the deserving athletes and coaches who embody Dragon Pride on and off the field. For his commitment to Southlake, we are honored to recognize Bill Webb as the recipient of Southlake Style’s 2021 Brian R. Stebbins Award for enduring community impact. HOW LONG HAVE YOU WORKED ON THE NORTH POLE EXPRESS? I’ve been working on the Grapevine Vintage Railroad for over a year. I handle all the guest experiences onboard the train. I’m up and down the aisle all day long while we’re operating, talking to customers and answering any questions they may have. WHAT WAS YOUR FIRST TRAIN EXPERIENCE? My first train experience was actually during the holidays last year. Everything happened onboard. There was Santa and two elves that covered two coaches, and they performed a whole show on the train. The kids got to sing some Christmas songs, they got their chocolate chip cookie onboard and frosty chocolates in a memory mug when they got off. They also got a silver “we believe” bell at the end of it all. WHAT’S ONE OF THE MOST EXCITING ASPECTS OF THE GRAPEVINE VINTAGE RAILROAD? You’re in a piece of machinery that is over 100 years old. The main engine was built in 1896, and four of our cars were built in 1925. Just being in that environment has a special feeling to it, and we try to make it a historical, educational and fun experience for everyone. To be a part of keeping history alive is just an amazing opportunity. WHAT IS ONE PERK OF THE JOB? I get to blow the whistle upon takeoff every once in a while. They’re brass naval whistles that get everybody’s attention. When we yell “all aboard,” they yell it right back to us. It’s so fun. WHAT ARE SOME CHANGES TO THE TRAIN YOU’RE LOOKING FORWARD TO THIS SEASON? We ordered all-new garlands and decorations so the whole train will have a more cohesive look and feel this year. Mrs. Claus will also be returning to the train this year — and will be bringing Santa Claus back to Grapevine with her on the ride back. WHAT IS YOUR FAVORITE PART ABOUT WORKING ON THE NORTH POLE EXPRESS? My favorite part of the whole experience is the people. When you see the kids around the corner, looking at the train for the first time as their eyes light up is such a special sensation. We do everything for our passengers’ entertainment and joy. When you see them having a fun time, it’s the greatest feeling in the whole world.

Beginners’ Tips On Making Your Own Gifts This Holiday Season Seasonal decorations, toys, red and green gift wrapping, ornaments and Christmas trees. In the weeks leading up to the new year, department stores are filled with all of these items and more as families rush to finish their holiday shopping. But shelves are looking noticeably more bare this December, with supply chain issues continuing to affect local stores’ inventory. If you’re behind on your shopping this winter, here are a few pointers to make your own homemade gifts this holiday season.

Plan And Prepare

Whenever you commit to any new crafting project, it’s important to plan ahead and know what to expect when it comes to your gift. Start by deciding which gift you want to make for your beloved family member. Whether you plan to make a fleece blanket, a custom sign or a handmade ornament, pick a gift that is simple to make and reasonably within your skill range. THE DRAGON COMMITMENT FROM LIVESTREAMING TO FUNDRAISING, BILL WEBB DOES IT ALL FOR CARROLL ATHLETICS

F

rom touchdown passes and slam dunks to spikes and home runs, Bill Webb has seen it all from the sidelines. A Southlake Carroll parent, supporter, fan, former Carroll Athletic Booster Club (CABC) president and its current secretary and treasurer, Bill has been a part of the Southlake community for 15 years. Bill’s love for Southlake Carroll athletics runs deep, volunteering his time for the Dragon athletes whenever and however he can. That includes livestreaming every game that he can make, even after his three boys left Dragon Nation for college. Because as Bill will tell you, none of what he does is for himself — it’s for the Southlake Carroll Dragons.

COMING TO CARROLL

In 2006, Bill and his wife Jill took their 6- and 4-year-old boys and moved to Southlake after he finished working in Austin for 10 years. They moved to Southlake for many of the same reasons others have — the successful schools, the rural area and the close proximity to DFW Airport. But one of the most significant reasons was the tradition of greatness in Carroll’s athletic programs. Shortly after arriving in Southlake, Bill saw the Carroll Dragons’ state championship win against Austin Westlake at the Alamodome in San Antonio. Even in a big football state such as Texas, Bill had never seen so many people come out in support of one high school football team. SOUTHLAKESTYLE.COM

“I grew up in Texarkana, where it was huge if there were 8,000 people at a football game,” Bill says. “There were 50,000 people there at the state championship game. I had never seen that many people pack a stadium for a high school game before.” Knowing his three kids would eventually go through the Carroll athletic programs as well, Bill was motivated to get involved in the Southlake sports scene as much as he could. He cultivated his children’s athletic skills at an early age and volunteered as a coach for their youth football team when they were in elementary school. “He was really into it, coaching all of the kids the same, not being soft or hard on anybody else,” head baseball coach Larry Vucan says. “What stood out to me was that he was passionate not just for his own son, but for all of the kids. This was a guy that really cared, and Bill’s that way about everything he does.” As his sons made the transition from elementary to middle school, Bill increased his involvement and joined the Carroll Athletic Booster Club, attending meetings and helping out wherever he was needed. After his sons joined Carroll High School football, baseball and marching band, he assumed the role of president for the organization in 2016. “A lot of what happens in the CABC is about fundraising, and a lot of what I do in my professional life is about fundraising,” Bill remarks. “It was really kind of a natural fit for me.” THE CENTER OF THE COMMUNITY

When Bill first got involved with the CABC, its funding primarily came from a sports publication it produced every fall. But after Bill became president, the organization sought to diversify its revenue through new initiatives in the community. “We really started reaching out to have more membership, involvement and visibility within the district,” Bill says. “We didn’t just want to be a bank — we wanted to be at the center of everything Carroll athletics and make it fun, enjoyable and a community-wide celebration for everyone.” Besides increasing memberships, creating sponsorship packages and building up the Dragon Den spirit shop, one of the newest revenue sources was the CABC Raffle, which debuted in 2017. Southlake Kiwanis board member Terri Zelasko says Bill created and donated a Dragon golf cart just for the occasion, with the raffle eventually raising over $100,000. “The funds raised far exceeded what the teams were doing on their own and put less pressure on students and parents,” Terri says. “He jumps in wherever he is needed and uses the full extent of his creativity, connections and resources to ensure that our kids are taken care of.” Those efforts paid off in the numbers, with CABC’s membership averaging from 200 to 600 members a year SOUTHLAKESTYLE.COM

and its financial contributions growing from $125,000 to $300,000. Those dollars help the CABC fund items on Carroll coaches’ wish lists every year. Whether it was for travel buses, sports equipment or facility renovations, keeping up with an athletics program as vibrant and successful as CISD’s takes a village. “If I’ve ever asked for something, whether it was equipment or sweatshirts or shoes, Bill’s going to get it done,” head football coach Riley Dodge says. “Last year, we had to transport over 150 players, support staff and student trainers to West Texas for a football game, and within 3-4 days, Bill found a way to get charter buses for us. He doesn’t take no for an answer.” Aside from his regular duties as president, Bill has also set up the Party In The Pasture New Year’s Eve event with Southlake Kiwanis to benefit local charities, organized season kickoff events like baseball palooza and the community pep rallies and made sure students’ needs were being addressed as a volunteer member of prior Carroll bond advisory committees. And somehow, Bill always finds time to do even more on top of that. “When we won state in 2019, Bill kept texting me, asking when we were going to be back,” head crosscountry coach Justin Leonard says. “I say 11 o’clock at night, and when we pulled up, Bill had speakers set up, flashing lights, a fire truck and like 60 parents show up, and we had this huge welcoming party at 11 o’clock on Saturday night. He goes out of his way to do stuff like that. That’s what separates him.” While coach Leonard remains grateful that Bill makes his studentathletes feel seen, Bill remains humble, asserting that it’s the community’s love for Carroll athletics that makes it easier to do what he and CABC does. “The great thing about Carroll is that every parent believes their child’s sport is the best, and it’s one of the few districts where that’s actually close to accurate,” Bill says. “There’s a lot of pride, and every athlete wakes up every day thinking that they have a chance to win a state championship. That doesn’t happen in most places.” THE DRAGON SIDE

Alongside his fundraising and organizing efforts, Bill has put the spotlight on the Carroll Dragons through his media expertise. In 2017, the CABC launched the Southlake Carroll Dragons app through Mascot Media, which features the most up-to-date news, schedules and rosters relating to Carroll athletics. It was with this same app that Bill launched the CABC’s talk show “Dragon Athletics Live!” in 2019. “‘Dragon Athletics Live!’ provided an opportunity for our student-athletes to gain important public speaking skills, put a spotlight on every team sport and increased the exposure of Dragon student-athletes,” Terri DEC 21 • 21


says. “How many high schools can claim their own livestreamed talk show?” And during the pandemic in 2020, Bill volunteered to livestream Dragon games on the same app, including football, basketball, baseball, volleyball, softball and wrestling. Bill devised the setup himself and handles all aspects of livestreaming, from the equipment to the cameras to the overlays to the audio broadcast by Chuck Kelly. And he faithfully follows the Dragons all season long, no matter where they go. “Last season, he drove all the way out to Rockwall on his own to stream our JV game so the parents could see it at home,” coach Dodge says. “He did not have to do that. If he didn’t do that, no one would have said a word. Yet he drove all the way out there to video the game anyway, just so people could watch it at home due to COVID.” Coach Vucan says it wouldn’t be unusual to see Bill jumping from one game to the next, just to make sure everybody could catch the Dragons playing. “We had a football game at Keller High last year, and in the same night, we had a playoff volleyball game at Coppell,” coach Vucan says. “He was livestreaming the football game, packs up, gets in his car and speeds over to Coppell, and then livestreams the volleyball game all by himself. He doesn’t even have a kid in either program anymore.” When asked where he gets the motivation to stream all of the Dragon games, Bill’s answer is simple. “You just have to make the commitment to do it, just like you make the commitment to get up for practice on the field,” Bill says. “It’s not a matter of whether you want to this week or not. CABC said we’d do it, and we’re going to do it.” The effort is always worth it to Bill, with the football streams reaching 6,000 to 12,000 unique viewers each night. But even when the numbers aren’t that high, Bill still knows he’s sharing the Dragon experience with someone who cares about it — and that’s more important to him. “That’s really for the grandpa or grandmother that lives in Iowa and never gets to see their grandkids play,” Bill says. “Even if we only have 250 people watching it, we know it’s 250 people who wouldn’t have been able to see their grandkids play otherwise. There’s a lot of value in that.” Through his livestreaming, talk show and media app, CISD athletic director Steve Keasler says Bill has brought an awareness to Dragon athletics like never before. “Bill is a servant leader and has a servant’s heart,” Steve says. “We can never thank him enough for the countless hours he pours into our programs.” Southlake has gone through many changes over the past several years, but the one saving grace to Bill through everything has always been Dragon athletics. Even though he’s no longer president of the CABC, he always makes a forward-facing effort that everybody in the community can see. “It’s hard to take sides when it comes to Dragon athletics other than the Dragon side,” Bill says. “Everybody loves their Dragons.” Whether he’s livestreaming one of the Dragons’ games, hosting an episode of “Dragon Athletics Live!” or just simply showing up to cheer for a Dragon championship win, Bill always puts his best foot forward and doesn’t ask for anything in return. “For me, it’s not about going out, doing great things and taking credit for them — it’s about truly being there and supporting the kids,” Bill says. “I don’t get up every day with the goal of making people in this community happy. I get up to help our kids and coaches be successful. If I’ve done that, I’ve done my job. And honestly, there’s nowhere I’d rather be on a Friday night than a Dragon game anyway.” 22 • DEC 21

BOYS CROSS-COUNTRY WINS THIRD CONSECUTIVE STATE CHAMPIONSHIP It’s a three-peat for the Southlake Carroll boys cross-country team. During the state meet in Round Rock on Nov. 6, the boys cross-country team won its third consecutive state championship trophy. The girls team came in fourth place, following behind Flower Mound, Prosper and The Woodlands in first, second and third respectively. Junior David Fisher led the boys, finishing ninth overall with a time of 15:39, with sophomore Jude Alvarez following closely behind in 10th place with a time of 15:40. Senior Kaylie Cox led the girls, finishing 14th overall with a time of 18:20, with sophomore Sylvia Schwedler following up in 20th place with a time of 18:33. “Words cannot describe how proud I am of our young men and women,” Southlake Carroll head cross-country coach Justin Leonard says via press release.

CITY OF SOUTHLAKE UNVEILS BOB AND ALMEADY JONES STATUE The city of Southlake unveiled its newest tribute to Bob and Almeady Jones in the fall. On Sunday, Oct. 24, the city hosted a public art dedication and celebration for a golden statue modeled after Bob and Almeady Jones, who were born into slavery and eventually came to own 2,000 acres alongside the modern-day Tarrant and Denton County line. The sculpture portrays Bob and Almeady sitting on a picnic bench and was sculpted by artist Seth Vandable. Members of the city council, arts council and Southlake Historical Society came to see the reveal, as well as Bob Jones’ grandson Dr. William Jones. “It’s a wonderful tribute that part of that original property is preserved in the Bob Jones Park and Nature Center,” Dr. Jones says in MySouthlakeNews.com. “The statue is a marvelous addition to Bob Jones Park, and will serve as a positive pictorial reminder of their legacy to all who visit for years to come.”

DRAGON MARCHING BAND FINISHES 12TH AT STATE CONTEST The Dragon Band finished 12th at the state contest for the first time in over 20 years. After qualifying for the UIL State Marching Band Contest on Oct. 30, the Dragon Band traveled to the Alamodome in San Antonio in early November to compete against 37 other bands in the state. After scoring a 97 in the preliminary round, the Dragon Band advanced to the final 12, where it competed against other bands such as Hebron, Vandegrift and Marcus High School. The Dragon Band ended up finishing 12th with a final score of 75. “We're extremely proud of our students for advancing to the UIL State Marching Band Contest for the first time since 2001,” director of bands Ken Johnson says. “Our expectations are always the same for every performance — we want our students to give their absolute best when they take the field, and to have fun performing to their audience. No two performances are ever the same, so we challenge our marchers to try and make each one better than the previous one.” CARROLL ISD REORGANIZES SCHOOL BOARD FOR 2021-2022 SCHOOL YEAR The Carroll ISD school board of trustees reorganized the board during a special meeting on Nov. 15. After Andrew Yeager won the special election for the Place 7 seat in early November with 65% of the vote, he was sworn into the board as its newest trustee. After Andrew was sworn in, the board was required to reorganize its leadership and pick new officers. Place 2 trustee Eric Lannen was unanimously chosen to serve as the school board’s new president, while Place 5 trustee Hannah Smith was selected to continue serving the school board as its secretary. These officer positions will remain in place for the remainder of the 2021-22 school year. During the same meeting, Dana Dodge was selected as the director of child nutrition, while Shatina Lewis was named the new principal of Carroll Middle School.

CARROLL ISD OPENS NEW PERFORMING ARTS CENTER After being under development for two years, Carroll ISD’s new performing arts center fully opened last month. Part of the $208-million bond package that was approved in 2017, the new performing arts center is a $28-million investment that will house both Dragon Band and Choir’s programs. The 95,000-square-foot development includes a 700-seat performance hall, a 10,000-squarefoot auditorium, a 5,000-square-foot band hall, a 1,000-square-foot digital classroom, 23 practice and rehearsal rooms, 15 offices and seven storage rooms, according to the bond package. The district held a ribbon-cutting ceremony for the new facility inside Carroll Senior High School on Nov. 18. “I am extremely proud to be part of a district that values and sees the need in the arts to educate the entire child and provide a quality space for that kind of instruction,” director of choral activities Paul Doucet says. “It kind of revitalized our entire program. The kids understand that the community supports what they do by giving them this space to create — a place to feel like they are a part of something bigger than themselves.”

CARROLL DRAGONS END REGULAR SEASON UNDEFEATED The Southlake Carroll Dragons ended its regular season undefeated last month after winning over Keller Fossil Ridge 62-14. With its district record at 6-0 and its overall record at 11-0, Southlake Carroll headed into the playoffs determined to win. Its first playoff game saw Southlake Carroll play against the North Crowley Panthers at Dragon Stadium on Nov. 12, defeating them 42-20. The Dragons then played against Midland Legacy on Nov. 20 and are looking ahead to competing against other opponents such as Permian, Trinity and Allen High School on the road to state. Junior running back Owen Allen also reached 4,924 career rushing yards, breaking the district’s previous record. SOUTHLAKE ROTARY CLUB DONATES $2,350 TO SHELTER BOX The Southlake Rotary Club donated a check for $2,350 to the Shelter Box last month. Shelter Box is an international disaster relief charity that provides shelter and aid to families affected by natural disasters through its shelter boxes, according to a media release. Each box weighs 120 pounds and contains a tent, two solar-powered lights, a mosquito net, a water filter, tools, blankets, supplies and outerwear. And thanks to the Southlake Rotary Club, two families will now be able to receive assistance for six months after losing their homes. “Each year, Shelter Box responds to numerous events in the world,” public relations chair Lynda Warner says. “The Rotary is committed to helping those in need both in our local community and all parts of the world.” SOUTHLAKE VETERAN RECEIVES CONGRESSIONAL COMMENDATION One of Southlake’s proudest veterans was recognized with a congressional commendation last month. In 1995, Milan Georgia moved to Southlake with his family after serving the U.S. Army for over five years during the Vietnam War. Throughout his time living in Southlake, Milan volunteered for several boards and committees with the city, including SPIN, the Metroport Rotary Club, the Southlake Citizens Leadership Academy and the Citizens On Patrol. Not only has he won an Army Aviator Badge, a Bronze Star medal and a Purple Heart medal from his military service, but he also won a Presidential Service Award with the city in 2016. More recently, Milan received a Congressional Veteran Commendation from U.S. Rep. Beth Van Duyne during the city council’s meeting on Nov. 2. Milan says he was proud to receive the recognition and hopes to create more awareness on veterans in Southlake. “It is what every citizen should do wherever they live to make it better for the generations behind them,” Milan says in MySouthlakeNews.com. “It’s part of your civic duty.”

Under development since 2013, the Westin Dallas Southlake is a new 261-room hotel that brings the Westin brand to Southlake. Equipped with more than 34,000 square feet of indoor and outdoor space, the Westin Dallas has several amenities that guests can fall in love with, including its Heavenly Bed mattresses, three full-service bars, a workout fitness studio and a resort-style pool. fter a two-year musical hiatus, the Carroll Theatre department made an exciting return to the stage last month when it performed “Elf: The Musical” leading in to the holiday season. As the department’s talented actors, performers and tech students look ahead in anticipation of new shows in the spring, Carroll Theatre director Jamie Pringle reflects on how far the program has come and what the future has in store for her and her students.

I HAVE… been a theater kid my whole life. Some of my first memories are listening to Disney records in my room and acting out all the roles. After receiving my bachelor’s in theater performance, I began working professionally and toured the U.S. with Dallas Summer Musicals and Dallas Children’s Theater. I have also performed on the most professional stages in DFW, including Bass Hall, Lyric Stage, Casa Mañana. THIS IS MY… 25th year as a high school theater teacher. I came to Carroll Senior High School seven years ago and have enjoyed working with the talented students and staff in Southlake. My husband Greg Dulcie currently works at Carroll High School as a paraprofessional, and we are parents to a sixth-grade Dragon named Finley. THERE WERE A LOT… of questions early on in the pandemic about whether theater will survive and come back after it’s all said and done. I think we can take a deep breath and confidently say that theater has come back and will continue to be one of the most essential art forms of all time. I’ve dedicated my whole life to theater, and I’m grateful to be able to continue sharing that with all of our students. DURING LAST YEAR… we did two shows over Zoom, as well as an outdoor performance and a one-act play for UIL while we wore masks. For a lot of the kids, it was the only real human interaction they had throughout the day. I THINK THE THING WE’VE MISSED MOST… is the experience of being in front of a live audience. You can always see and hear the audience and know they’re being moved by the production, whether they’re laughing or crying. Being away from that for two years is really hard on performers — especially for our kids.

WE WERE BEYOND EXCITED AND RELIEVED… to be back in our regular theater once again this fall. To not do anything on Zoom this year has felt so wonderful to us all. MUSICALS HAVE ALWAYS… been exciting for us. It’s the one time of the year where we’re working not just with theater but also with our choir directors and jazz orchestra. It’s kind of a big extravaganza of fine arts. A LOT OF OUR THEATER KIDS… are also choir kids, so that collaboration between those departments work really well for us. Theater is a team sport, and it takes many people working together to put it on. WE CHOSE TO DO ‘ELF’... because we were looking for something to kick off the holidays and show off the new facilities in a really happy and fun show. It was the full-length, two-hour musical, the same one you’d see in New York if you went to Broadway or the West End. OUR ENTIRE BACKSTAGE AREA… was completely renovated. We have a new set shop that is four times as big as what we had before. We have new dressing rooms, a new costume lab and a new 125-seat black box theater that we used for our last show, ‘Book of Liz,’ in September. My technical director, Ryan Barbe, also did projected scenery of snowflakes and Christmas lights for the show as well. That was a first for us both. WE HAD… 60 people work on this production, including seven adult staff members. It’s a big undertaking to put a show together and manage all of the moving pieces, from the set design to the orchestra to the costumes to the actors to the technicians to the people working in front of the house. To have all of that synthesize and come together into this production is kind of a Christmas miracle.

CHRISTMAS IS FOR CHILDREN CELEBRATES 30 YEARS OF GIVING BY LIZZY SPANGLER

hirty years ago, social work graduate students Patricia “Trisha” Rae and Laura Alston visited a dead letter office in New York and decided to respond to a child’s letter to Santa Claus. Stepping into the role of Santa’s helpers, the two women connected with the boy’s mom and gifted him a new coat and gloves, despite his insistence that he needed an Atari, a popular gaming system at the time.

After answering that first letter, the duo felt called to start Christmas Is For Children, a nonprofit that hosts food drives and angel tree programs for families and children in need in multiple states. While Laura stayed in the Northeast to run Christmas Is For Children in New Jersey, Trisha moved to Southlake in 1997 and brought the nonprofit with her, serving nearly 70,000 kids over the course of its 20-plus years in Texas. A HEART FOR SERVICE

Trisha’s experiences with food insecurity influenced another aspect of Christmas Is For Children — its food drives. “I thought, “What is it that I would want to receive if I was ever in that position again?’” Trisha says. “That’s why we came up with laundry baskets.” Both sturdy enough to hold food and supplies and a nice gift for a family in need, Christmas Is For Children started giving away its donations in laundry baskets during its drives. “From my own experiences, I always wanted to take the shame and the embarrassment out of receiving food,” Trisha says. In its second year of operation, Christmas Is For Children grew from serving two families to 750 — partly thanks to a fundraiser in partnership with the NFL’s New York Giants. From that point on, Trisha says the organization has never provided for less than 1,000 children a year.

Growing up, Trisha’s family was middle class and didn’t have to worry about where their next meal was coming from. But after her parents divorced when she was a teenager, she and her four siblings decided to stay with their mom. That was when their financial situation took a hit. Unable to afford a traditional Thanksgiving dinner, Trisha’s family found out from a fellow parishioner that they were put on their church’s list to receive a holiday food basket. “Community is a big part of what we do,” Rev. Elena Carraway says. “It was a natural fit.” Through its partnership with St. John, Christmas Is For Children hosts gift distributions, donates food bags to people without housing and gives senior living centers toiletries and comfort items for its residents. “Over the last few years, [it] has extended beyond Christmas,” Rev. Elena says. During the height of the pandemic, for example, St. John and Christmas Is For Children came together for food distribution and back-to-school events. “Because CIFC had a community of agencies it was involved in, it was a natural extension for not only the church to roll up our sleeves and do a little bit more, but to bring some of those agencies into the partnerships that we were already involved in,” Rev. Elena says. For the volunteers who help out with these events, the feeling of giving back is contagious. “Many of them have never done anything like that before. And so the first time they get involved, you see it in their faces. You see it in their eyes — their energy, their passion,” Rev. Elena says. “It becomes contagious because they share it with others, and then they get involved.” A MERRY AND BRIGHT FUTURE

After 30 years of helping nearly 100,00 people in multiple states, Christmas Is For Children’s mission of giving back continues to live on. 70 • DEC 21

“It’s a tremendous testimony not only to Trisha but also to all of those who have come alongside her for these 30 years to make all of this possible,” Rev. Elena says. Though the pandemic limits the scale of Christmas Is For Children’s programs, it still plans to help as many families as it can this year. Sponsors can pick angels and drop off gifts at sites throughout the month, and its annual Christmas food drive is set for Dec. 18. “It [is] such a beautiful way to start the holiday season,” Ann says. “It really put everything in perspective to see the generosity and that people were shopping for these angels before they were doing their own shopping.” Though she recognizes how meaningful 30 years is, Trisha is very humble about the milestone. “We want people to feel part of something bigger than themselves because even though I started Christmas Is For Children, it’s not about me and it never has been,” Trisha says. “The story is mine. But reaching out to others is universal.” While the holiday season is at the heart of Christmas Is For Children’s work, Trisha reiterates how much of the nonprofit is about simply caring. “It’s so much bigger than just buying toys,” Trisha says. “It’s about allowing people to know that they matter. Spearheaded by Brain Storm Shelter owner Jason Boso, who is responsible for concepts like Twisted Root Burger Co. and Truck Yard, Second Rodeo Brewing combines food, music and brews for a good old time out in the stockyards. “Our vibe is your backyard that you never had,” Jason says. Opening in September with around 18,000 square feet of space, Second Rodeo Brewing has everything a diner could ask for. The beer hall shines as its star attraction, with 10 housemade beers dedicated to Second Rodeo Brewing’s name. The Queen Blonde is brewed with pale malt, cas-

cade and Saaze hops, while the Woodruff Berliner Weiss is made with the German herb Woodruff, bringing authentic German flavors with every sip. For those that love the taste of Truly, Second Rodeo Brewing’s hibiscus seltzer is made with pure water, 100% fermentable sugar and 100% organic Hibiscus leaves, giving it a delicious red color and fruity and floral tones. Second Rodeo Brewing also serves up a host of craft cocktails, each made to perfection. The Royal Punch is mixed with Western Son Watermelon vodka, rum and fruit juices, while the Hurricane features white and dark rum, passion fruit, pineapple, orange juice and lime. Inspired by outlaw country, Western swing and Texas blues, Second Rodeo Brewing offers live music featuring local artists playing around the clock — free to enjoy for everyone who is having a good time. “I think one of the most unique things is that we are in the stockyards, so there is a lot of that personality and we have that style of music every day, all day,” Jason says. When you’re done listening to live music, it’s time to indulge in some delicious food. In true backyard fashion, diners are invited to get up and order from one of two food windows, each providing a different type of grub. The wings window serves top-notch chicken wings with unique flavor combinations that come with a side of fries. Classic wings lovers can go for the Buffalo wings with a side of ranch or bleu cheese dressing or the black garlic BBQ wings, which feature sweet garlic Texas barbecue sauce. But Second Rodeo Brewing delivers even more flavors for diners who feel more adventurous. The PB&J wings combine peanut butter with bacon and jalapeno, while the Chicken N’ Waffles wings are covered in maple bacon jam glaze and waffle crumbs. The crazy wing adventure continues with the Texas cherry cola wings, which come with a Texas cherry cola glaze and pop rocks. The Lime In The Coconut wings are served with lime and coconut glaze and graham cracker salt, and the Mexican Holy Mole wings are topped with mole sauce, chili spice and chocolate powder. The second of Second Rodeo Brewing’s food windows serves delicious cheesesteaks and nachos. Named after Jason’s other concept, the Truck Yard’s Famous Philly Cheesesteak gives diners the option to choose from three different meats and cheeses and four different veggie options, providing a cheesesteak specially tailored to one’s tastes. Jellico’s Offers Fresh New Takes On Classic American Dishes The Westin Southlake Hotel opened in Southlake last month, and with it came a brand new modern American restaurant called Jellico’s. Spearheaded by executive chef Jenna Kinard, Jellico’s serves up new takes on classic American dishes inside a relaxed and inviting atmosphere. The restaurant serves up three meals a day, plus brunch on the weekends. “We hope our guests feel a sense of comfort and familiarity when they dine with us, from the recipes we have thoughtfully created over the past year to the warm and welcoming design of the restaurant to our Southern hospitality,” chef Kinard says via press release. Stopping in for breakfast or brunch yields a tasty result, whether you enjoy the sourdough breakfast sandwich made with farm eggs, shaved ham, white cheddar and breakfast potatoes or the avocado toast, featuring watermelon radish, ricotta and sea salt. If you drop by for lunch, be sure to bring your friends, because Jellico’s lunch menu features eight shareable items. The tuna crudo is a must-try with its cherry shoyu, ginger-lemongrass vinaigrette and toasted sesame seeds, as well as the cheese and charcuterie board, made with cured meats, local cheese and seasonal fruits, vegetable pickles and jams. The Curve Lounge bar also serves scratch cocktails made from fresh, local ingredients. The Billionaire Sour provides a malty flavor with Texas Silver Star Whiskey, lemon juice, golden syrup and absinthe bitters, while the Westy will make your taste buds sing with its Woodford Reserve bourbon, nonino amaro quintessentia and fresh grapefruit. But dinner is where Jellico’s really shines. T

he centerpiece of Yuletide decor, the Christmas tree is an essential part of the holidays. Serving as the centerpiece for presents, get-togethers and memory-making, the Christmas tree is the backdrop to a bevy of celebrations during the season. Before you set it up this year, take stock of your tree and see if it’s time for a decoration upgrade.

PICK A TREE, ANY TREE

First and foremost, decide whether you want to get a live or artificial tree. Live trees can fill your home with a cozy holiday scent, while artificial trees can last for several years. The decisions multiply if you decide to spring for an artificial tree. After deciding on your height, it’s time to pick a design that works for you. Artificial trees can come frosted with fake snow, embedded with colorful, white or alternating lights that can even be worked with a remote control. Picking a tree is no laughing matter, so be sure to pick one that suits you this December.

DRESSING IT UP

Once the tree is in place, it’s time to dress it up. After adding lights to the tree, garlands are the next thing you should adorn it with. Cascading garlands start at the top before flowing down to the bottom, while circular garlands wind around the tree. After that, it’s time to decorate with some ornaments. Family memories can be honored through passed-down treasures while Christmas picks can bring some depth and color to your tree. ACCENTING ACCESSORIES

Once your tree is decorated to the nines, it’s time to think about the space around your tree. How The Southern Hemisphere Celebrates The Holidays

S

nowflakes, snow angels, snowmen — when December rolls around, those who live in the Northern Hemisphere can usually expect to see snow flurrying around. But it’s a different story in the Southern Hemisphere where residents trade the coats and wind chills for some tank tops and sunshine. If you’re looking to escape from the ice-cold temperatures, get away to some of these hot spot destinations.

Australia

Known as the Land Down Under, Australia has some of the hottest temperatures in the Southern Hemisphere, which means the holidays take place in the middle of its summer vacation. Because of that, the

pools and beaches are going to be your best friend during Australia’s holiday season, with some of the most popular pastimes including surfing, sailing, snorkeling and swimming. Many families will also pick up their cricket bats and play on grounds in the mainland, and when they’re done playing, they’ll meet at the barbie for some of Australia’s most cherished holiday barbecue delicacies. Many families decorate their houses and porches with a red shrub called Christmas Bush ahead of Dec. 25, then on Christmas Eve, millions of Aussies will step outside, light candles and sing carols together at night as part of Vision Australia’s Carols By Candlelight concert. New Zealand

Instead of pine, spruce and fir trees, New Zealand has a different type of Christmas tree that blooms every summer. The Pōhutukawa is a lush evergreen tree that blooms a cluster of bright red flowers, kind of like floral ornaments. New Zealanders can find this tree anywhere on the 103,000-squarefoot island, and the seasonal summer festivities don’t stop there. Locals love to celebrate the holidays through outdoor activities like hiking on its steep trails, exploring coves along the coastline or even camping in one of its national parks. Christmas lunches are usually filled with lamb, prawns and oysters, and dessert includes plum pudding, fruit mince pies or pavlova cake, which is commonly topped with strawberries, blueberries or kiwis. And in the days leading up to Christmas morning, many towns host a parade with Santa at the helm (usually wearing sandals and a rugby shirt). South Africa

While fir trees aren’t native to South Africa, many children will nevertheless decorate their own trees imported from Europe in December. And like other countries, South Africa will put Christmas presents under the tree and hang their stockings for Sinterklaas to fill on Christmas Eve. The biggest differences in its holiday traditions lie in its decorations, which emphasize extravagant light displays, tinsel and fake snow. When locals aren’t putting up ornaments or going Christmas shopping, they’re hiking through national parks, interacting with exotic wildlife and even diving into plentiful waterfalls. And when it’s time for Christmas dinner, South Africans lay it all out there with duck, suckling pig, yellow rice, raisins, mince pies and Malva pudding made from apricot jam. After mealtime is over, families will usually pull out their Christmas cracker poppers and snap them open at the table. Brazil

The holidays are always a fiesta in South America, and few places are as festive as Brazil is in December. When Brazilians aren’t hanging up ornaments, putting up decorations or chilling on the beach, Brazil goes all-out for a Christmas spread that’s unmatched in its appeal. Its turkey is marinated in cachaca sugar cane liquor or champagne and stuffed with cassava flour and fruit before being oven-roasted, while its niños envueltos take layers of boiled cabbage and stuff it with beef. The cola de mono is similar to a chilled eggnog mixed with coffee, rum and spices, and the natilla is its signature creamy Christmas treat made with panela sugar cane and fried bunuelo fritters.
