Over the course of nearly two decades here in Southlake, I’ve come to recognize a normal flow of life during the summer. First comes the last week of school rush with all of its year-end activities. Congratulations to all the kids, coaches, parents and volunteers who played a part in another Lone Star Cup win. Next comes the month of June and an immediate barrage of trips to visit family and friends, celebrate graduations and try to get away from it all. On more than one occasion, I’ve witnessed families post images of the last day of school and vacation pictures on the very same day. Funny thing is, all that vacationing can leave you needing some time off. That’s what July is for — to put your feet up and relax. I hope Ami Anderson is doing that right now. After hiking Mount Everest, she has more than earned a break — read her story in “Peak Performance.” A slow summer morning drive with your favorite set of wheels can also be quite relaxing. For me, it’s on a motorcycle, but for those featured in “For The Love Of The Drive,” it’s their car collections. At a recent gathering of Cars and Coffee in Southlake, we caught up with a few enthusiasts and asked about their favorite rides. However you do it, here’s to slowing down and enjoying the fleeting days of summer. If there’s any time to pump the brakes, that time is now.

HOW DID YOU START BARBECUING? I was sitting around with some relatives and we all agreed that we would give it a try back in 2011. There was a cook-off here in Justin and we did it [with] two cousins and a friend. We got our very first first-place [finish] in that contest. WHERE DID YOUR BARBECUE CAREER GO FROM THERE? After I acquired another smoker, [my wife and] I started Torres Cooking Concepts and began catering and consulting with some of my friends who own restaurants, helping them narrow down their menus. HOW DID YOU COME TO MENTOR THE CARROLL ISD BARBECUE TEAM? I suffered a stroke last year in February, and I’m confined to a wheelchair. I figured what better way to be involved in barbecue than to work with these kids and pass the wisdom down. They’ve done excellently. They surprised me with their abilities. WHAT MISCONCEPTIONS DO YOU THINK PEOPLE HAVE? Most people think you just light up a pit, throw a piece of meat on there and let it go. That’s not true. You have to maintain temperatures and you have to understand wind

patterns and humidity. Take all that into account and the type of wood you’re using, what smoke you need to use, what seasonings. There’s a science to it. WHAT MISTAKES DO YOU SEE PEOPLE OFTEN MAKING? One of the big mistakes I notice is people try to rush it. If things don’t seem like they’re going at the pace they want [them] to go, then they try to force the heat or the fires to get hotter. They end up either scorching the meat or burning it. WHAT IS YOUR FAVORITE CUT OF MEAT? I would have to say brisket. It’s the toughest to barbecue, and it takes a lot of thought and preparation. WHAT DO YOU LOVE ABOUT BARBECUING? For me, it’s a stress reliever. I worked a very high-pressure job before, and when you barbecue, your mind is on the food and the presentation. You kind of forget everything else that’s going on around you.

etween Southlake’s newly opened EVO Entertainment and the historic Palace Theatre in Grapevine, there are plenty of exciting options to experience a movie outside of home. Whether you cruise into your closest drive-in theater or dive into a different kind of outdoor theatrical experience, here are a few ways to soak up some summertime movie fun. A local staple since 1940, the historic Palace Theatre in Grapevine has been hosting live performances and screening classic movies for the past 20 years. This month, “Jaws” and its Oscar-winning John Williams score makes its local summer debut. Before you get that ominous song out of your head, it will be time for the kids to take over with animated hits like “The Little Mermaid,” “Frozen 2” and “Ferngully: The Last Rainforest.” Summer isn’t complete without baseball, and “The Sandlot” provides plenty of laughs and fond outdoor memories. he world’s highest peak rests above 29,000 feet in elevation. At this height, temperatures drop as low as -76 degrees Fahrenheit, and the winds blow as fast as 100 miles per hour. Despite the daunting climate, Edmund Hillary and Sherpa Tenzing Norgay were the very first to ascend Mount Everest in 1953. Through the 1990s, fewer than 200 people would make the attempt each year. However, since the turn of the millennia, the trek has continually gained in popularity, with more than 800 people attempting the climb every year. More and more of those hikes are ending with triumph, with success rates doubling in the past few years. One of those mountaineers is Southlake resident Ami Anderson, and she didn’t waste any time preparing for the feat ahead of her. In just nine months, this adventurous woman went from dreamer to doer and learned some valuable lessons about life and its limits along the way.

Bucket Lists, Boots And Backpacks Before moving to Southlake in 2015, Ami lived in Minnesota for 20 years. Growing up, she always kept a bucket list of adventures to experience someday. “I’ve done a lot of crazy things in my life,” Ami says. “I’ve been to nearly every continent and all 50 states. I hiked the Inca Trail to Machu Picchu. I dived in the Great Blue Hole and the Great Barrier Reef. And I did a monthlong safari in Africa. My whole life has been one big adventure.” Even after checking so many adventures off of her lifelong list, one dream remained: climbing Mount Everest. “I remember being in high school, seeing a picture of base camp, and I said, ‘I’m going to go there someday,’” Ami recalls. “I knew I was going to make it there. It was just a question of when.” Today, Ami is happily married with two children and has a successful marketing career. Despite her busy and fulfilling life, her passion for adventure remained. Fate approached Ami many years later when she was asked by a friend to join her climb up Mount Everest. Ami leapt at the opportunity. With another close friend of Ami’s joining them, the trio signed up for the trek through a professional expedition company along with four other climbers from California, Utah and Tennessee. The booking service reserved the essential travel permits, licenses, accommodations and guides ahead of time, so there was no backing out. “I was determined to do whatever I could so I would not be the last one dragging the group from behind,” Ami says. Ami, who stays fit through regular workouts with Camp Gladiator, began training aggressively for the journey ahead. First, she increased her daily walking regimen to 20,000 steps, or roughly 8 miles, a day. In order to get those extra steps in, Ami often hiked the local trails after her training sessions. She upped the challenge even more by hiking in full gear — boots and backpack included. “I would go to the grocery store, put my groceries in my backpack and walk home all the time,” Ami chuckles. “I was always worried some neighbor was going to call [the police] on me thinking I was some drifter because I was always walking around town with this backpack on.” During her final weeks of preparation, Ami intensified her efforts by mimicking the Everest ascent through regular 90-flight stair climbs in full gear up Southlake Town Square’s West parking garage. To ensure she could handle herself at higher altitudes, Ami spent two weekends hiking the hills of Minnesota and the mountains of Colorado. “Some days I was so tired, I came home and I didn’t want to do anything else. Yet, I still had 90 flights of stairs ahead SOUTHLAKESTYLE.COM

of me,” Ami says. “Determination was what got me through it. I set this goal for myself. I made this commitment. Now I [had to] stick with it.” Just as her motivation began to wane, Ami’s Camp Gladiator friends boosted her spirits by showing up in their own boots and backpacks to hike along in solidarity. Trainer Brooke Nicholson says seeing Ami’s determination inspired her peers and strengthened their bond as a group. “It was so fun to be around her, knowing she was about to take on this big challenge,” Brooke says. “It was like watching one of your family members go out and experience this amazing adventure.” From Home To Hike Just getting to the Himalayas was an experience in and of itself for Ami and her group. Flying out of Dallas with a layover in Saudi Arabia, it took 21 hours before they finally landed in Nepal’s capital city of Kathmandu. It was initially a jarring acclimation, with mopeds, bikes and other motor vehicles speeding and beeping through the streets. “It was very chaotic,” Ami says. “There’s no real traffic patterns. To cross the street was like a minor miracle. I congratulated myself for making it across every time.” But once they got to their hotel and settled in, things slowed down enough so Ami could experience a whole other side of the city. She visited the Kopan Monastery and learned about Buddhist practices, indulged in some of the tastiest Nepalese cuisine and spent time with native Rhesus monkeys at the thousandyear-old Swayambhu temple. “We took so many pictures,” she recalls. “I worried that I wouldn’t have enough space to take pictures when we reached Mount Everest.” After a few days of sightseeing, it was finally time to make their way to Everest Base Camp, which was roughly 150 miles away. “For hours, we were seeing signs that said ‘base camp,’ and it always seemed like we were almost there but not quite,” Ami says of the seemingly endless hike. “When we finally got there, it was so exhilarating. We took pictures, people from our campsite came to us and brought us tea to warm up and celebrate.” Ami spent three days at base camp, alternating between acclimation hikes and climbing back down to sleep. Though she was always cold and tired from the long days and freezing nights, Ami was also equally fulfilled. “It was breathtaking,” she says. “The pictures don’t do it justice. We had a different view of the mountains every time we looked up because of the clouds constantly movJUL 22 • 19

ing. I was surrounded by the most beautiful scenery I had ever experienced.” Some days were harder than others. The summit of Mount Everest reaches as high as 29,000 feet, yet on one of Ami’s more difficult days, she was struggling to catch her breath at even 16,000 feet. “Your body is different every day,” Ami explains. “You just go as far as you can, and sometimes, it isn’t very far at all.” Interestingly enough, Ami’s weakest moment was also the most special. “[Reaching 16,000 feet] was actually one of my favorite moments because up until that point, I didn’t have much time to sit and reflect that high in the mountains,” she says. “It’s funny because you’re so focused on making each step that you sometimes forget to look up and see everything that’s happening. It’s hard to imagine that I was that high up and I almost missed everything around me.” Motivated by both reaching her goal and enjoying the views, Ami then ascended to 18,000 feet the day after. During the helicopter ride back, Ami realized the full scope of her accomplishments. “I never would have seen what we conquered had we not taken the helicopter,” she says. “We got to see the towns we stopped in, the glacier lines we passed, the trees that we hadn’t seen in days. It was so unbelievable.” When they returned to Kathmandu, Ami was greeted with the same sounds of people and motor vehicles whizzing by as when she first landed. 20 • JUL 22

“I was just so proud of myself,” Ami beams. “I set a goal, I trained for it and I made it. That’s why I didn’t feel the need to hike back down. It was a big goal, and I already accomplished it.” A Once-In-A-Lifetime Experience Looking back on her journey, Ami realized she was indeed capable of much more than she initially believed. “[Brooke] often told me ‘you can do anything for one minute.’ For this hike, I told myself ‘you can do anything for seven hours,’” she says. “Sometimes thinking about the whole journey can be overwhelming, but if you just focus on the one step in front of you, that makes the task much more doable.” And her biggest takeaway from the hike will stay with her forever — the word “Namaste,” which means “Greetings to you.” “Every person, every child, every hiker we passed in the street, all of them said ‘Namaste’ with a smile,” she recalls. “It left me with the feeling that everyone was amazingly friendly. Imagine if we acknowledged every stranger on the street with ‘greetings to you.’ A little gesture like that can go a long way in making someone’s day.” As she looks through the many pictures of her trip, Ami is confident and content she’s reached the pinnacle in more ways than one. “I’ll never be able to top that,” she says. “This was a once-in-a-lifetime experience.”

Winning Fashion: Southlake Carroll has yet another state championship trophy to add to its collection.

he Dragon Baseball team has added a fifth state trophy to its impressive collection. After handily defeating Ridge Point 6-1 in the state semifinal game, the Dragons came out on top against the San Antonio Reagan Rattlers 8-5 to secure their third state championship since 2018. Following the end of the game, senior Owen Proksch, who is committed to Duke University, was named the MVP after pitching 5.2 innings with nine strikeouts while making two hits and two RBIs. Meanwhile, Owen, Clark Springs, Ben Tryon, Ethan Mendoza and Max Reyes were all named to the UIL 6A All-Tournament Team.

PROTECTING THE TRADITION All season long, the Dragons showed what they were made of. A stellar pitching staff made up of Owen, Louisiana State University commit Griffin Herring, Tyler White, Nathan Rusher, Dominic Gill and Zach Coletti had a team ERA of 1.56 heading into the final stretch of the regular season. Veteran leadership also helped bolster the team's chances of success. Senior Ethan Mendoza ended the season with a high batting average of .376, while fellow seniors Max Reyes and Clark Springs followed behind with batting averages of .345 and .295 respectively. During the playoffs, the Dragons showed off their skills both offensively and defensively, scoring a collective 37 runs while allowing just one run before heading to the state tournament. But the accolades didn't just stop at state. The Dragon Baseball team is now the No. 5 high school baseball team in the nation and No. 1 team in the state, according to MaxPreps.com. Individually, Griffin was named the District 4-6A Pitcher of the Year, finishing the season with a 12-1 record while Owen was also named the District 4-6A MVP, ending the season with an 8-1 record. Ethan, Max, Clark and Tyson Drake were named to the District 4-6A First Team while Nathan, Spencer Simpson, Nick Jones and Cole Bedwell were named to the District 4-6A Second Team. With their fifth overall state trophy in hand, the Dragon Baseball team ended their 2022 season with a 34-8 record and the title of state champions.

After a debilitating injury prevented him from competing any further, Dr. Rich applied his discipline towards studying interventional spine and pain procedures in order to help others towards recovery. SPOTLIGHT community SOUTHLAKE ROWERS SHINE AT NATIONALS Six members of the Founder’s Rowing Club from Southlake dominated in the U.S. Rowing Youth National Championships last month. The Women’s Youth 4X Final B saw seniors Ashley Hall and Camille Egger and juniors Maile Nelson and Sophia Rhodes earn first, leaving them ranked No. 7 in the nation. Meanwhile, sophomores Samantha Rietbroek and Olivia Knight finished third in the Women’s U17 Final B, placing them at No. 9 in the U.S. This caps off a season where six Southlake Carroll rowers earned gold at the 2022 State Championship Regatta and finished in the Top 3 of the U.S. Rowing Central Youth Regionals.

SOUTHLAKE CHAMBER CELEBRATES 2022 AWARD WINNERS The Southlake Chamber of Commerce recognized 11 individuals and businesses during its annual awards banquet on June 17. Southlake Foundation President Kush Rao was honored as Citizen of the Year for his unparalleled efforts in making the city a better place for everyone, while Lynda and Robert Warner were recognized as this year’s Volunteers of the Year. Michael Young and Kathy Talley received the President’s Award, Karl Chester was named Director of the Year and pastor Sterling Smith received the Chairman’s Award. GRACE won Civic Group of the Year, Cambria Hotel won Corporate Business of the Year and Selph Marketing won Small Business of the Year. Finally, Zach Lacy won Youth of the Year for his efforts on child advocacy. FOUR CARROLL STUDENTS SELECTED FOR PLAYWRITING PROJECT Every year, Circle Theatre hosts a high school playwriting project to critique young playwrights’ work. This year, four Carroll students made it into the Top 10, including juniors Rylee Hunt, Connor Musier, Sohani Ramnani and senior Adam Szkudlarek. Connor and Sohani’s script, “Ronald Ronald and the World-Wide Spoon Shortage,” was named a semifinalist and earned them a stipend, a trophy and theater tickets around the Metroplex, while Rylee and Adam’s play “Magic And Monsters” was named one of four finalists and had their play performed by professional actors during a live reading on June 26.

CLOUD 10 STUDIOS WINS 5 TELLY AWARDS Tracey Dispensa is “SOAR”-ing to new heights. A Southlake resident and film producer who has worked on several feature-length animated projects like “Madagascar,” “How To Train Your Dragon” and “Scoob!,” Tracey is the founder and managing director of the Dallas-based creative studio Cloud 10. Last month, her studio won in five video categories at the Telly Awards for its 2021 short film “SOAR,” which depicts a child helping a bird to fly for the first time. Its recognitions included gold awards for corporate image, branded content, 3D animation and fully animated piece, while it won one silver award for workplace culture. “Our creative team is comprised of writers, directors, animators and technical artists from the film industry that all contribute to the execution of our content,” Tracey says. “We are devoted to powerful storytelling.” LOCAL RESIDENT TO CHAIR DSOL PRESENTATION BALL Southlake resident Karen Cox has been selected to chair the Dallas Symphony Orchestra League’s 37th annual Presentation Ball in 2023. Held at the Morton H. Meyerson Symphony Center, the presentation ball raises funds to benefit education and community outreach programs in the DSOL. Karen Cox will chair this year’s event after her daughter Isabella previously made her own debut as a debutante in 2020. This year’s event, which will be held on February 11, will see the introduction of 24 debutantes, one of which includes Morgan Potter, a former Carroll graduate and a sophomore studying art history at the University of Texas. CARROLL ISD HIRES NEW VOLLEYBALL COACH Former SMU assistant volleyball coach Jason Tanaka was hired last month as the new head coach for Dragon Volleyball. During his time at SMU, coach Tanaka helped lead the Mustangs to their first-ever NCAA tournament. Tanaka also brings a wealth of coaching experience from Texas Christian University, the University of Pittsburgh and Baylor University as well. He takes over a team that went 26-17 last season, finishing third in District 4-6A. coach Tanaka says.

DRAGON TENNIS PLAYERS NAMED ATHLETES OF THE YEAR The Tennis Girls Coaches Association named Brennan Becicka and Bella Andrade as the 5A-6A Athletes Of The Year. The duo recorded a perfect 20-0 record during a season that saw them become Region 1 Girls Doubles champions and 6A Girls Doubles state champions. Head coach Corey Aldridge was also named Coach of the Year and will be presented with the honor during an awards banquet on July 11.

WEATHER SHINES BRIGHT FOR MIRACLE LEAGUE The Miracle League of Southlake’s spring season was a home run thanks to a string of great weather. The league for disabled young athletes completed 49 of 50 scheduled games with no rainouts. According to the league’s spring newsletter, 19 new players joined the league for a total of 185 players this season. That’s 76% of the pre-pandemic number of 242 players prior to 2020. “Thank you all for continuing to support the Miracle League,” member John Slocum says. “Without your support, we would not be able to provide this experience to so many children with special needs.” The Miracle League’s fall season will kick off on Aug. 27 with a carnival celebration, with games running from Sept. 17 to Oct. 22.

SOUTHLAKE CARROLL WINS LONE STAR CUP Southlake Carroll has won the 6A Lone Star Cup, earning 131 points throughout the 2021-2022 athletic season. Given annually by the University Interscholastic League, the Lone Star Cup is awarded to the top school in each of the six classifications along with a $1,000 scholarship. Points are awarded based on team performances in district and state competitions. Leading the race with every update this year, the Dragons’ five state championships in baseball, girls soccer, boys cross-country and boys and girls swim and dive helped carry them through to securing their sixth Lone Star Cup win since the 2011-2012 season. Conroe The Woodlands and Allen followed behind in second and third place with 113 and 91 points, respectively.

From The Canvas To The Cowboy Boot

or as long as she could remember, Olivia Bennett has been bringing nature to life through her artistry. Whether she was painting at her own art gallery in Southlake Town Square or painting a butterfly for a charity gala, Olivia loves magnifying the world around her and showing the beauty in life’s small details. Now the Southlake child phenom has a kid of her own and is collaborating with Twisted X to launch her first footwear collection and lifestyle brand. I’VE BEEN PAINTING… since I was 5 years old. I started like any other kid — with love and a passion for creating. But when I went in for my checkup around kindergarten, they discovered I had leukemia. Instead of starting school a few weeks later, I ended up starting chemo. I TURNED TO ART… during those two years at home. My mind just kind of got lost, reset and relaxed every time I painted. It was sort of like therapy to me. I TRIED EVERYTHING… from airbrush to sculpture to pen and ink. I did a lot of princesses, embellishing dresses, animals and portraits. I dabbled in a lot of different styles, but I eventually settled on watercolor and painting. I LOVE… the scale and size that comes with painting. I love working on really large 4-foot canvases and magnifying natural subjects. There are so many things that are important to our planet but are often small and overlooked, like daisies or dandelions. I love blowing it up, drawing attention to it and telling a story. I SOLD MY FIRST PAINTING… when I was 8 years old. My mom had an open house for her business, and one woman came over and noticed one of my paintings. She asked if I would consider selling her one. I was so overwhelmed at the idea that someone wanted to pay me for my art that I didn’t even know what price to ask for. Eventually, she bought my painting for $50 and said, ‘You need to be ready next time, because people are going to start asking you more often.’ WHEN I WAS IN FOURTH GRADE… I made it into my first-ever Art In The Square festival. Then I published my first art book at age 12. Shortly after that, my story got picked up by local media until I met both Oprah Winfrey and President George Bush back to back. It was very much a pinch-me moment, even now. FOR MANY YEARS… I was in school, I came home and I painted every single day. By the end of Christmas break in 2004, I started homeschooling so I could do art full time. I had such an amazing amount of support and

momentum that I was like, ‘Well, why not?’ It was an unknown, exciting adventure that I was ready to go on. TODAY, I SELL MY WORK… internationally and all over the country. I work with many organizations and nonprofits, creating work to help fundraise for causes I love. I take great responsibility in keeping my art fun, fresh and authentic to me, because at the end of the day, every person who has your painting has a piece of you. I MET TWISTED X A YEAR AGO… at the Kids Matter Charity Ball. I was hand-painting a yellow rose of Texas print live on the stage on a huge 4-foot canvas. Twisted X’s CEO, Prasad Reddy, won the painting at the auction, and I told him I would be happy to deliver the piece to him. He called me a couple of weeks later out of the blue wondering what I thought about putting that flower on cowboy boots. It’s been a dream opportunity. I’VE ALWAYS WANTED… to be part of a retail collaboration. What ended up coming out of my conversation with Twisted X was not just one cowboy boot, but a whole Olivia Bennett footwear collection. We now have 14 designs of shoes and boots in the pipeline, which will be released over the next six months, and years ahead of us co-creating designs together. I THINK THE MOST EXCITING ASPECT… of creating more livable, wearable art is that it’s going to be out for the world to see. So often when I sell a painting, it’ll go into someone’s dining room or bedroom, and I won’t see it again. But to be out in the world and run into someone wearing one of my T-shirts or kicks is really exciting. MY ULTIMATE VISION RIGHT NOW… is to create more of a lifestyle brand, using the best quality products and all of these different canvases to bring art to life. Not everyone needs art, but everyone needs T-shirts, shoes and other apparel. I’m really excited for this collaboration with Twisted X and the first of many opportunities to share my work with the world.

This is a very high-option supersport car with a rally sports decor, power windows, a deluxe interior, power disc brakes and a performance factory rear-end traction bar. Has It Won Any Awards? I have won over 50 first-place trophies, along with a few second and third places. It’s been a fun ride. What Makes This Car Special To You? I have owned this car for 37 years. f Stanley Tucci ever makes his way to the Metroplex, he’ll soon discover it’s full of delicious Mediterranean flavors. The latest inspired concept is Fiatto, a casual American-Italian restaurant located in the West Village in Dallas. “It’s a pretty active neighborhood, so people saw us moving in… we talked to some of our neighbors and they were excited for us to be there,” executive chef Kylil Henson says. “We kept getting people coming in every day asking when we were opening. So there was a lot of hype and buzz around the neighborhood as far as us finally opening.” Having opened in March, Fiatto is quickly becoming a neighborhood hotspot due to its atmosphere, drinks and food — the latter of which is partly inspired by

Kylil’s Philadelphia upbringing. “We wanted to bring a little of the East Coast to Texas,” Kylil says. Inspired by the coastal seascape, Fiatto takes your breath away the minute you step inside the dining room. A brightly lit interior is accentuated by teal and rust colors to create a down-to-earth vibe, and plants and wood accents throughout lend even more toward the restaurant's all-natural aesthetic. After taking a seat at one of the cozy tables or rustic booths, guests can kick off their evening experience with some cocktails. Among its eight options, the punny Resting Spritz Face features strawberry aperol, rose prosecco and aranciata, while the sweet

LOCALFLAVOR review and floral notes of the Queen Bee are made with gin, herbal tea, honey and lemon. Meanwhile, the McKinney Ave, aptly named for the street where the restaurant is located, combines fig-infused bourbon with hickory-smoked walnut bitters for a smooth and serene finish. Don’t forget to try its fine wine selections, which include everything from Sicilian Regaleali Rossato to Nicolas Feuillatte Rose Champagne. Following its elegant drinks, the concept’s food menu features dozens of delicious dishes ready to be enjoyed. Guests should start off with one of Fiatto’s heavenly appetizers. The tuna tartare comes with orange, castelvetrano olive, calabrian chili and saffron aioli, while the calamari fritti is accompanied by crispy lemon and cherry pepper aioli. The prosciutto crostino features whipped ricotta, summer melon, grilled sourdough and truffle honey. And you’ll fall in love with the focaccia bread with pepperoni sauce or fontina fonduta, which melts in your mouth with exquisite flavor. One of the signature plates include the Salumi and Formaggi, which is a chef-curated charcuterie board featuring three meats, two cheeses, sourdough giardiniera, seasonal fruits, nuts and truffle honey. Meanwhile, the classic chicken parmesan comes with San Marzano tomato, mozzarella, spaghetti and basil for a crispy and sensational bite. Continuing its love affair with the coast, Fiatto’s seafood is not to be forgotten. Kylil’s favorite dish is the trout saltimboca, which is a prosciutto-wrapped trout with cippolini onion, mushrooms and marsala sauce, while the Atlantic king salmon comes with romano beans, snap peas, fennel puree, cerignola olives and pepper sugo. The restaurant’s menu also features shrimp scampi made with shell pasta, white wine, garlic, chili and broccolini. Traditional Italian-fare fans also have a bevy of pasta dishes to dig into. The spaghetti features pomodoro, parmesan, basil and meatballs, and the spicy rigatoni vodka — one of the restaurant’s most popular dishes — wows guests with pancetta breadcrumbs, tomato and cream. “It’s a place where you can come 2-3 times a week, have a bowl of pasta, have some cocktails, relax and enjoy yourself,” Kylil says. Fiatto doesn’t limit itself to just lunch and dinner either — it also serves brunch with a menu full of breakfast favorites. Those looking to start their day with something sweet can take a bite out of the lemon ricotta pancakes with cannoli cream, luxardo cherries and Silician pistachios, while the Ferrero Rocher waffle harkens back to the candy of the same name with Nutella, hazelnuts, maple syrup, whipped cream and gold flakes. There’s no skimping on the eggs at the restaurant either. Guests can choose from several delicious egg options for brunch, including the classic omelet with spinach, smoked mozzarella, pine nuts and tomato pesto, as well as the soft scrambled egg with black truffle cream, mushrooms, gremolata, arugula and shallots. So pop in for a happy hour, make a weekend brunch reservation or schedule a date night — Fiatto is open, inviting and ready to serve you. “[We have] a lot of repeat guests,” Kylil says. “I think that’s the most telling sign, when people come back two and three times.”

A Star Is Born Stella Ristorante Has Southlake Abuzz Over Its Authentic Italian Fare Southlake residents now have a place to go if they want to escape to Italy. Since its opening in late April, Stella Ristorante has quickly earned the love of locals who are ready to “ciao” down on its authentic Italian selections. “My focus is to be true Italian,” owner Paola Pedrignani says. “I really believe that when you walk into Stella, you enter [Italy]. I want to welcome you like you are in an Italian piazza.” Paola says the restaurant’s name comes from the Italian word for “star.” “‘Star’ is [for] the Lone Star of Texas,” Paola says. “I always say there was a perfect alignment of stars to open Stella.” Diners who arrive at Stella Ristorante will have the opportunity to choose from six cocktails such as The Godfather, made with Aberfeldy scotch whisky and amaretto disaronno, or the Negroni Sbagliato, which features red vermouth, Campari and prosecco. Moving into the main menu, Stella’s selections are built out with a bevy of Italian dishes. Guests can start off with an appetizer like the Fritto Misto Di Capri, which includes fried calamari, shrimp, zucchini and fennel, or the Antipasto Italiano, which features a daily selection of cold cuts and cheese from Italy. Stella’s pasta is just as authentic. The Spaghetti al Limone di Sorrento con Gamberi, one of the restaurant’s most popular dishes, tops spaghetti with shrimp and creamy lemon sauce. The Spaghetti Carbonara is another favorite complemented by an egg yolk, Italian bacon and cream sauce. Meanwhile, other main courses include dishes such as the Tagliata di Filetto all’ Amarone, which showcases thinly sliced filet mignon, vegetables and Amarone wine sauce, and the Scaloppina di Vitello, which is classic veal piccata made with Sicilian white wine, wild mushroom and carnaroli rice. The Mediterranean feel continues into the desserts with sweet selections like pavlova, gelato and tiramisu. Whether you stop by for a date night, a family dinner or just for a drink or two, Stella will make you feel like you’re truly in Italy.

Turkish Delight Ferah Fuses Texan And Mediterranean Flavors In Southlake A Turkish immigrant to Dallas in 2005, Burak Özcan always dreamed of honoring his culinary heritage and his homeland by opening his own restaurant. After spending years working his way up from kitchen to kitchen, Burak opened the doors to his very own gourmet restaurant in Garland in 2019. Not exactly the best timing, but even a pandemic couldn’t dampen the demand for his signature blend of Mediterranean and Texan flavors. While many restaurateurs are still recovering, Burak has opened the second location of Ferah Tex-Med Kitchen right here in Southlake. “I knew this would be a creative way to introduce more people to my homeland’s cuisine,” Burak says. “We often receive diners that have never tried Mediterranean food

before, but because our dishes have a Texan twist, it’s more approachable than some traditional dishes are.” Burak says the name Ferah means “open,” “bright” and “spacious” in Turkish, and guests certainly experience that when they step into the restaurant’s aqua-blue atmosphere. When curious diners settle in, they have a versatile menu to sift through, with over 20 different sharable dishes, entrees and desserts — the latter of which Burak calls ”the finale.” Diners will have a hard time deciding between the restaurant’s eight different Tex-Med meze dips, which include chickpea hummus, charred salsa, fire-roasted baba ganoush and atom dip made with Turkish suzme yogurt. Those with larger appetites can enjoy a larger spread through the chef sampler platter, which includes bestselling appetizers like fried goat cheese, baconwrapped dates and jumbo lump crab cakes. The entrees serve up even more refreshing Tex-Med flavor with the likes of beef tenderloin shish kabab and the seafood risotto. The latter is made with red snapper, salmon and blackened shrimp with wild mushrooms and asparagus. And thanks to the chef’s bar, which is specific to the Southlake location, guests can sit and watch as their meal is prepared right in front of them. By the time you get to the desserts, you’ll barely have any room to fit the Turkish coffee creme brulee served with wild berries. “It’s been my lifelong dream to own a restaurant,” Burak says. “We believe every meal has the opportunity to be special and memorable, and we’re excited to serve and support the community where we live.”

Lone Star Sights These Off-Beat Attractions Are As One Of A Kind As Texas

he second-largest state in the nation, Texas is chock-full of interesting people and places, the likes of which can’t be found anywhere else. Some of the state’s most off-beat sights are the most well known and visited, like Big Tex in Fair Park or the Prada store in Marfa. But in a state this big, it’s no shock that some fun and interesting places inevitably slip under the radar. Whether it’s a Texas-style Eiffel Tower or a re-creation of Stonehenge, this state is full of surprises — no matter how long you’ve lived here.

Cadillac Ranch | Amarillo One of the more notable Texas attractions, Cadillac Ranch is an interactive art installation that draws visitors from all over the country. Featuring 10 Cadillacs buried in the ground at the same angle as the Great Pyramid of Giza, Cadillac Ranch was created in 1974 by the art collective Ant Farm and its partner Stanley Marsh 3. Located right off Interstate 40, it’s an easy stop as you make your way toward Amarillo. When you’re done admiring the underground vehicles, break out your own can of spray paint so you can leave your own mark on

Eiffel Tower Of Texas | Paris Paris, France, might be the home of the original Eiffel Tower, but does it wear a cowboy hat? The re-creation in Paris, Texas, does. Putting a country stamp on the iconic structure, the 65-foot-tall Eiffel Tower of Texas was constructed in 1993 by a local ironworker’s union to be one-tenth the size of the original. The tower’s LED lights brighten the night sky with the Texas flair of its bright red cowboy hat. After snapping a few pics of the Lone Star State’s take on the famous Parisian tower, spend an afternoon exploring downtown Paris. The historic town square is full of cute boutiques, small businesses and mom-and-pop shops, many of which feature souvenirs paying homage to its local landmark. LOC.gov

Cathedral Of Junk | Austin Austin is known for being weird, and one thing that helps cement that reputation is its Cathedral Of Junk. Sitting in the backyard of creator Vince Hannemann, the Cathedral Of Junk is made with over 60 tons of garbage. Vince started building it in 1988 and has been busy adding to the structure ever since. Visitors can walk through its various passageways and stairways while marveling at its vaulted ceilings and multiple levels, all made with different types of debris. The Cathedral Of Junk is strong enough to weather the state’s craziest storms and has played host to a number of parties, events and even weddings. Stonehenge II | Ingram While the original is across the pond in Wiltshire, England, Texans can soak up the vibes of Stonehenge at the state’s replica in Ingram. Originally created as an art project by Al Shepperd and his neighbor Doug Hill in 1989, Stonehenge II is a plaster and wire mesh replica of the English monument. Following Shepperd’s passing in 1994, the structures found their new and permanent home in the Hill Country in 2011 after its original property was sold. Once you take a gander at the towering sculptures, drive just 15 minutes southeast to Kerrville, where you can keep the fun times rolling by visiting Crider’s Rodeo and Dancehall or the Trailhead Beer Garden.
