This Gen X-er hasn’t seen the inside of a mall in quite some time, but I can assure you mall walking is alive and well. This was confirmed during a recent early morning visit to Grapevine Mills. Our team was there to meet a master at his craft before a multitude of projects and demanding customers got the best of his day. We had a great idea, and as we waited at the Starbucks outside, I was a little anxious to see if he would lend us his time and talent. If not, it was back to the drawing board. After a few minutes and some mall walkers passed, the door opened and out stepped Thaddeus Bennett. A tall yet unassuming young man, Thaddeus greeted us with a smile and a dash of awkwardness not unbecoming of true genius types. He whisked us quickly into the discovery center and past his office, where we could see mounds of his work still in development through the large glass panel. We landed at a small conference table and did the dance of first business meetings. Some small talk was followed with explanatory sketches and photos of our idea for this month’s cover. All along he quietly nodded in agreement, not in working with us, but in pure confidence that he could in fact do what he knew we had yet to ask. You see, Thaddeus is one of just a few master model builders employed at Lego. Yes, it’s a real job and he loves it!

WHAT WAS YOUR INTRODUCTION TO WEDDING PLANNING? After graduating from college, I moved to Southlake and took a marketing job with a bank. I was setting up a lot of networking events, galas and conferences until I planned my first wedding in 2018 — which was actually my own. I really enjoyed it and decided I wanted to work for myself, so I opened up Look West Events in 2019 and have planned 50 weddings ever since. WHAT GOES INTO PLANNING A WEDDING? The most common things you have to plan for include entertainment, food, beverages, florals, photography, hair and makeup, but sometimes you’ll have to plan for other things too like photo booths, balloons and lounge setups. HOW DO YOU GO ABOUT ORGANIZING THE ENTIRE AFFAIR? I let the couple drive how they want the experience to go. I tailor everything to them, present them with decisions and keep the process moving along. My role is to take all of these moving parts and pieces they’ve given me and make sure everything just flows naturally on their wedding day. HOW ARE WEDDINGS DIFFERENT FROM PLANNING OTHER EVENTS? When you organize a company event, you have to justify every decision with a return of investment. But when it comes to a wedding, every decision is made to celebrate a love story. You can’t really measure that, and that’s what makes it so fun. WHAT KIND OF WEDDING MISCONCEPTIONS ARE THERE? There aren’t as many bridezilla horror stories out there as some people might believe. People might get a little worked up sometimes, but it’s an emotional experience, and some couples are experiencing a lot of different emotions all at once. I’m very understanding and try to keep that in mind.

WHAT DO YOU LOVE MOST ABOUT BEING A WEDDING PLANNER? My favorite part is when someone is really able to be in the moment and I’m able to see they’re really enjoying themselves.hen someone is really able to be in the moment and I’m able to see they’re really enjoying themselves. It can be during a cake cutting. It can be during the post-ceremony. It can be during the first look. That moment happens at different times for different weddings, but I love watching people enjoying themselves and being in the moment knowing that I helped make that happen.

n today’s world where so many have the freedom to work from just about anywhere, we still haven’t escaped the feel of the 9-to-5 grind. It got us thinking — who loves their job so much they just can’t imagine not being at the office? Whether it’s a zookeeper caring for elephants or an artist whose murals brighten up our days, we’ve found some area professionals whose career paths follow their passions. Because you know what they say — if you love your job, you never work a day in your life.

ERICA NORWOOD MURAL ARTIST

An artist ever since she could hold a crayon, Erica Norwood’s painted murals can be seen all over town. Her art has graced many walls since painting her first mural at a Mexican restaurant, including at RE:defined Coffee House in Grapevine, Psych Connect in Southlake and Popcorn Central in Trophy Club. “Once I started posting murals [on social media], businesses started reaching out. Now I probably paint an even mix of homes and businesses and just murals of every kind,” Erica says. “It is a lot of fun because every artist dreams of painting on the biggest canvas possible and a wall gives you a lot of space to paint on.” With a background in portrait painting, Erica feared her work would dry up two years ago when people weren’t going out as much. But to her surprise, the opposite happened. “I think people were home so much that they got tired of staring at blank walls,” Erica says. “I just started getting calls for murals, and they just didn’t stop coming.” From larger-than-life flowers to scenic beach scenes, Erica has painted it all. “My favorite thing is the variety,” Erica says. “I can paint in a Mexican restaurant and paint a sugar skull one week, and then the next week, I could paint a faux marble wall and do something totally different. I never get bored and I’m always getting to challenge myself.” Before she begins a new mural painting, Erica says a few considerations come into play such as the size, color and material of the wall. But more than anything else, getting to know the customer is most important. Learning what they want, like and are inspired by helps guide Erica to design a mural that they’ll love. “It never feels like work,” Erica says. “I really wouldn’t even change anything about it. It just feels like exactly where I want to be right now, and I love it.” MAR 22 • 17

OWNER AND BREWER AT HOP & STING BREWERY The process of brewing beer is an involved one. Water and milled grains are mashed together to make wort, which gets boiled with hops before cooling. From there, the beer ferments with yeast, dry hops and spices and then gets filtered and carbonated. Once that’s over, the newly brewed beer gets bottled and packaged. “The job gives you an insight into a product that has been a part of human civilization almost from day one,” Jon Powell, the owner and brewer at Hop & Sting Brewery, says. “I’m always amazed to think that people were making beer centuries ago without the aid of the technology we have today.” A 2003 Carroll grad, Jon’s eyes were opened to brewing while attending Humboldt State University in Northern California. “There were four or five breweries, and all of them were thriving,” Jon says. “The Pacific Northwest had an amazing brewing and beer culture that showed me the intricacies and variety available.” That, coupled with his experience at a friend’s house for a “Learn To Homebrew Day,” led Jon to dive into all things brewing. “The more I learned, the more I was hooked,” Jon says. After graduating from college, Jon spent three years homebrewing. After that, he decided to go all-in on professional brewing, leaving his job as the oil and gas inspector for the city of Flower Mound. Joining the American Brewers Guild, Jon soon added brewery experience to his resume, working at Rahr and Sons in Fort Worth among other breweries. But he and his business partner Brian Burton felt the call to go off on their own. So after two years of developing recipes out of Jon’s parents’ barn, the pair started Hop & Sting Brewery, with its first commercial beers hitting the market in 2017. “We make a wide variety of beers because we want everyone to be able to find a beer they enjoy,” Jon says. “Our flagship brands are Aluminum Cowboy, Miracle Blood Orange Wheat and Northeast Texas IPA.” Though the taproom is located in Grapevine, Hop & Sting’s brews can be found in local stores all over the Metroplex and statewide in Oklahoma. “It’s not always a glamorous job,” Jon says. “But we couldn’t see ourselves doing anything else.”

THADDEUS BENNETT

MASTER MODEL BUILDER AT LEGOLAND DISCOVERY CENTER Thaddeus Bennett has built his career one Lego brick at a time. It all started in 1999 when he bought his first Lego “Star Wars” set, which he still has to this day. “I’ve collected ever since I was a little kid,” Thaddeus says. “I had my own little Lego page… and would upload pictures to a nonexistent audience. But I was always kind of preparing myself for this job, even though I never dreamed in a million years that this could be something obtainable.” Working at the Legoland Discovery Center in Grapevine, Thaddeus is a master model builder, a job one gets only after winning the Lego building competition, Brick Factor. “It’s three rounds of Lego building, timed with single elimination,” Thaddeus says. “Each round has a certain theme, and the contestants only have a certain amount of Lego bricks to build with.” In his first competition, Thaddeus finished in third place out of over 100 participants. After that, Lego offered him an entry-level office job, where he took the opportunity to learn more about the company. After nine months, Thaddeus reentered the competition and won in the fall of 2019, officially becoming one of only 25 master model builders for all of Legoland and the Legoland Discovery Centers. Thaddeus’ responsibilities include building new Lego models and maintaining current ones, including a small-scale Lego version of the DFW Metroplex that features AT&T Stadium, the Stockyards and Globe Life Field. Thaddeus starts projects by building them out digitally using Lego software. This helps him pitch ideas as he can get a rough estimate of how many bricks he’ll need, how long it will take and what the overall cost will be. “I can just see a piece and I can think of all the different possibilities and connections and what it can be used for,” Thaddeus says. Some of his more recent builds include a tiger for the Chinese New Year and a mosaic of Martin Luther King Jr. Thaddeus also has some big projects in the works, including a mosaic Mona Lisa that looks like the original painting from one side and features her as a Lego woman from another side. He also plans to use Lego bricks to recreate Johannes Vermeer’s famous painting, “Girl With A Pearl Earring,” and Vincent Van Gogh’s “The Starry Night.” “I get to play with Legos as my job,” Thaddeus says. “Getting to say that is pretty cool.”

ZOOKEEPER AT THE FORT WORTH ZOO Growing up, Addy Cuellar always had animals on the brain. “I was the kid that watched Animal Planet,” Addy says. “My mom would be like, ‘How can you watch the crocodiles eat the zebras?’ I was like, ‘It’s wildlife. It’s amazing.’” With a degree in wildlife management, Addy is currently living her dream as a zookeeper at the Fort Worth Zoo, working with the Asian elephants and the greater onehorned rhinoceros. “I was always kind of drawn to [elephants],” Addy says. “I did an internship nine years ago at an elephant sanctuary in Arkansas… I was just going to feel it out. I was like, ‘Let me do an internship and see if it’s something I’m interested in doing.’ And I haven’t stopped since.” As a zookeeper, Addy cares and provides for the elephants while also teaching zoo guests about the animals. This past fall, she even got to help welcome baby elephant Brazos into the world. “Since it was [his mom’s] second birth, it went really smoothly,” Addy says. “We’re just there to make sure that his vitals are good. [The] vet staff was there and he did great. He was nursing right away, and it was just perfect.” Including Brazos, Addy and her fellow zookeepers care for eight elephants, the largest of whom is Romeo — Brazos’ dad — who weighs over 10,000 pounds. “They eat an average of 100-300 pounds of food each,” Addy says. The elephants eat everything from hay and grains to fruits and vegetables, and because they’re so food motivated, zookeepers don’t have much trouble maneuvering the multi-ton animals. “They love the reward,” Addy says. “They are eager to earn that. It’s really fun [to see] how much they’ll do for us just for that training biscuit. Since we work with them every day, the relationship that you build with them is amazing.” When she’s not on the clock, Addy is often still at the zoo, taking photographs of the animals she loves to care for. “[I love] watching the elephants really enjoy just being elephants, just enjoying their life here,” Addy says.

BALLET TEACHER AT THE BALLET ACADEMY OF TEXAS Lisa Slagle first discovered dance through her grandfather, who owned a strip center that included a dance studio. While she dipped her toes in jazz and tap dancing, it wasn’t until she tried ballet that she fell in love with dance. At 8 years old, she got her first pointe shoes. Three years later, she danced alongside Elvis Presley in his 1967 film, “Clambake.” “While I was doing the movie for three or four weeks, I was really concerned because I was missing ballet class,” Lisa recalls. “I don’t think I really understood at the time the significance of getting a chance to do this.” After finishing high school, Lisa moved to New York to join the Joffrey Ballet. “I felt like if I just worked hard on my ballet studies that I could have a career in that without having those other unknowns that are part of the film industry,” Lisa says. And have a career she did. After dancing with the Joffrey Ballet, Lisa danced with the Ballet du Grand Théâtre de Genève in Switzerland and with the Tulsa Ballet in Oklahoma before retiring in 1989. After working for several years as a travel agent, her daughter showed an interest in dance. So to help pay for the classes, Lisa began to teach and found she really enjoyed it. Several years of teaching later, the opportunity to open her own dance studio arose. So in 1999, the Ballet Academy of Texas opened its doors. Since then, Lisa and her staff have taught hundreds of students, many of whom have gone on to dance professionally. Though she recently sold her studio to her business partner, Lisa continues to teach there, helping more students to fall in love with dance every day. “It’s all worth it when you feel like you’ve made a difference with some kids that might not otherwise have had some of the opportunities that you were able to give them,” Lisa says.

SOUTHLAKE MUSICIAN SIGNS RECORD DEAL WITH NEON GOLD RECORDS A Southlake Carroll musician is seeing her first EP debut later this spring. Growing up in Southlake since 2002, Juliana Madrid started playing music with School of Rock Southlake when she was 8 years old, learning how to play the guitar, sing and perform in front of a live audience. In 2018, she auditioned for “American Idol” and won a Golden Ticket to Hollywood before she was eliminated in the group round. Last month, she signed a record deal with Neon Gold Records, which represents artists such as Haim, Tove Lo and Charli XCX, to release her first EP in April. Her debut single, “Madonna,” was previously released on Feb. 24. “She’s worked so hard,” her father Mario says. “We cannot express how proud we are of her and her accomplishments.” THREE DRAGONS NAMED FINALISTS IN ‘THE NEW YORK TIMES’ STUDENT REVIEW CONTEST “The New York Times” named its winners, runners-up and finalists of its seventh annual Student Review Contest, and three Dragons made it into the Top 50. Every year, “The New York Times” hosts its review contest where it asks students to review any particular movie, book, video game or album in 500 words or less. Nine winners, 15 runners-up and 25 honorable mentions were selected out of 4,000 submissions, and three Dragons were among them. Carson Crays was named a semifinalist for his review of the Netflix survival drama “Squid Game,” while Malini Sampath was named a runner-up for her essay “A Window Into Another World,” according to the results. Meanwhile, Enja Pinjani was named an honorable mention for their review on Olivia Rodrigo’s album “Sour.”

TRAVIS KEENER RECEIVES HEART OF A DRAGON AWARD Southlake Kiwanis has officially awarded the 2022 Charlie Stalcup Heart Of A Dragon Award to senior Travis Keener. Keener, who played defense on the football team and was a two-time captain, earned the honor along with a $1,500 scholarship. The annual award honors former Dragon Football coach Charlie Stalcup, who passed away from cancer in 2004, and is given to a football player who represents the values coach Stalcup stood for, like leadership and initiative. During the 2021 football season, Keener — who is headed to the University of Utah to study business entrepreneurship — helped the Dragons go 14-1 on the season and individually recorded 45 tackles, three sacks, knocked down two passes and caused a fumble. The senior was also named to the 4-6A First Team All-District on defense.

BAYLEY TRANG WINS SECOND STATE WRESTLING TITLE Bayley Trang became a back-to-back state champion during the UIL wrestling state tournament in late February. Winning in her weight class of 110 pounds, the junior became the first two-time state champion in the Southlake Carroll wrestling program’s history. Additionally, senior Cole Bennett earned second place while senior Pete Etheredge claimed third place. Senior Rebecca Natvig came in fourth place and sophomore Brenna Trang earned fifth place. Overall, the girls team took fourth place while the boys team finished in 12th place. ART IN THE SQUARE UNVEILS FEATURED ARTWORK FOR 2022 On Feb. 20, Art In The Square kicked off its 2022 season with the annual Strokes of Art In The Square event at Southlake Town Hall. Community supporters gathered, enjoyed refreshments and celebrated as the award-winning festival organizers unveiled pieces from its featured artists, including Radim Schreiber, Rachel Dory, Kim Eubank, Julie Keaten-Reed, Christopher Brown, Kevin Zuckerman, Keith Andry and Prince Ducan-Williams. Residents are encouraged to vote for their favorite artist at town hall through April 1. The artist with the most votes will be recognized with Art In The Square’s 2022 People’s Choice Award on April 22-24.

DRAGON SWIM AND DIVE SWEEPS STATE MEET The Southlake Carroll swim and dive teams have been crowned state champions yet again. After sweeping the district and regional meets earlier this year, both the boys and girls swim and dive teams earned first place at the UIL State Meet last month. The boys and girls teams also came in first for the 200 free relay and the 400 free relay, while head coach Kevin Murphy was also named the coach of the meet. This is the 12th state title for the boys and the fifth state title for the girls. CARROLL ISD WELCOMES NEW SPECIAL PROGRAMS EXECUTIVE DIRECTOR Carroll ISD welcomed a new executive director of special programs to the district during a board meeting in early February. Bringing 18 years of special education experience to the district, Stacie Bonner will be responsible for facilitating growth, care and innovation in the special programs department and overseeing the needs of its special education students. “I am grateful for the opportunity to serve the students, families and staff of Carroll ISD,” Stacie says according to the district. “I am looking forward to building relationships and working alongside them while helping support and grow the special programs department. I am humbled to be a part of the Dragon family.”

DRAGON CHEER FINISHES SECOND AT STATE The Dragon Cheerleaders commanded the stage at the UIL Spirit State Championships earlier this spring. Competing against 67 teams from around the state, the Carroll Dragon Cheerleaders were judged on their fight song, band chant and crowd leading in front of judges. After finishing with a score of 199.2 in the qualifying round, the Dragons finished in first place and advanced to the state championship round. By the end of the night, the Dragon Cheerleaders finished second with a final score of 89.25, with Katy Seven Lakes finishing first with a score of 93.45. “We are incredibly proud of our cheerleaders and their many accomplishments!” cheer sponsor Julie Cox says. “They have persevered through every obstacle, and their diligent efforts have paid off.” SOUTHLAKE ARTS COUNCIL ANNOUNCES FIRSTEVER ART SHOW AND COMPETITION The Southlake Arts Council has announced the first-ever Southlake Presents art show and competition, according to MySouthlakeNews.com. Artists interested in participating must be over 18 years old and live within the city of Southlake or Carroll ISD limits. Up to three works can be submitted by March 15, with selected works set to be featured in town hall from April 29 to July 1 and a reception on May 1.

SOUTHLAKE SENIOR ACTIVITY CENTER EARNS TRAPS AWARD Southlake’s senior activity center is unmatched, and it now has the award to prove it. The facility earned the 2022 Lone Star Recreation Programming, Class IV Award from the Texas Recreation and Park Society (TRAPS), according to MySouthlakeNews.com. City staff submitted the senior activity center for consideration last November. In bestowing this award, the TRAPS committee noted that “in keeping with the TRAPS Mission: Texas Recreation and Park Society advances the quality-of-life industry through Connections, Advocacy, Resources and Education (C.A.R.E.). Your agency and representative exemplified this acronym with tenacity,” according to MySouthlakeNews.com. The city accepted the award at the 2022 TRAPS Institute and Expo Awards Ceremony on Feb. 17 in College Station.

WATER POLO ATHLETES COMPETE IN OLYMPIC DEVELOPMENT PROGRAM In early January, seven Dragons headed to Salt Lake City, Utah to compete in the USA Water Polo Olympic Development Program, representing the Southwest Zone. Chloe Criswell, Jojo Walters, Louie Christensen, Brandt McBride, Rory McCarthy, Carter Smith and Eric Winkler attended multiple tryout sessions to be selected to compete. “As a result of being on the teams, athletes get the chance to compete and have additional team practices with Olympic Development coaches from around the country,” Carroll water polo head coach Keeley Lowery says. In its last season as a club sport, water polo’s first tournament took place on Feb. 26. COMMUNITY SHOWS OUT FOR DRAGON PALOOZA Last month, hundreds of locals came out to the Dragon Baseball Complex on Feb. 19 for this year’s Dragon Palooza. Unofficially marking the start of the baseball season, the annual event featured baseball clinics, group pictures, a parade of teams, a silent auction and autograph opportunities before fans sat in the stands to watch the Dragon alumni game. Shortly after Dragon Palooza, Carroll’s baseball season officially kicked off on Feb. 24 in an away game against JSerra Catholic High School.

10 DRAGON ATHLETES SIGN LETTERS OF INTENT During National Signing Day ceremonies held early last month, 10 Carroll athletes signed letters of intent, committing to playing their sport in college. Golf signees included MaKayla Tyrell for Oklahoma City University, Morgan Becker for Oklahoma Baptist University, Brooke Norman for Bethany University, David Salazar for the University of Texas at Dallas and Neel Sandhu for Trinity University. Football signees included RJ Maryland for Southern Methodist University and Brody McNew for Stephen F. Austin State University. Meanwhile, Colin Scruggs committed to play tennis at Washington University In St. Louis, Ben Estis committed to play basketball at Ohio University and Daisy Cabriales committed to wrestle at William Penn University. Congratulations to these Dragon athletes! SOUTHLAKE NAMED SAFEST CITY IN TEXAS Southlake was named the safest city in Texas, according to an analysis conducted by MoneyGeek. To get its findings, MoneyGeek analyzed crime statistics by “quantifying the cost of crime and ranking small cities and towns nationwide and in every state,” according to its website. With a population of 31,265, Southlake's cost of crime was estimated to be $89, according to MoneyGeek. Nationally, Southlake was rated the 30th safest city out of 953. Other Texas cities that made the list include Friendswood, Midlothian, Wylie and Coppell.

31 DRAGON DEBATERS QUALIFY FOR THE STATE TOURNAMENT The Carroll Speech and Debate team will be heading to Corpus Christi this month for the Texas Forensics Association state tournament. After competing in 15 DFW-area tournaments this season, 31 Dragons will head to the state tournament on March 9-12 to compete for the championship trophy. Pranav Kaginele currently has the most tournament of champion bids in the nation and will be competing at the state tournament for the third time, while Katy Lin is currently the top-ranked Congressional debater in the nation and has accumulated 25 bids in her last four years in the program. “All of these students have dedicated countless hours and worked tremendously hard to reach this point,” head coach Anthony Brown says. “We wish them luck as they get ready to make the school proud.”

CREAM AND CREPES CAFE OPENS IN SOUTHLAKE Southlake welcomed a new crepe shop to the area last month. Opening in Park Village, Cream and Crepes Cafe is a new dessert shop that sells a variety of crepes, cakes, waffles, pastries and homemade ice cream. Its crepe toppings include Biscoff cookie butter, homemade cream cheese, Nutella, peanut butter, fruit sauce and whipped cream, while the ice cream flavors include strawberry cheesecake, cake batter and buttery pecan. Any of its ice cream flavors can be rolled or scooped between two warm cookies into an ice cream sandwich. SOUTHLAKE RELEASES 2021 CITIZEN SURVEY RESULTS During its regular meeting on Feb. 15, the Southlake City Council reviewed the results of the 2021 Citizen Satisfaction Survey. In late 2021, over 1,240 respondents provided their feedback on the city’s quality of life, citizen engagement, safety and security, infrastructure, mobility, development and partnerships and volunteerism. Of those respondents, three quarters of them have lived in Southlake for more than seven years and more than half have taken the Citizen Satisfaction Survey before. According to the survey results, 96% of respondents rated the quality of life as excellent or very good, while 84% said the safety and security was very good. Meanwhile, 67% indicated satisfaction with the city’s provision of pathways and sidewalks, which is a slight improvement over 2019’s 59% satisfaction rating. The results indicated that the top candidates for improvement were providing pedestrian pathways, providing code-enforcement services and providing animal control services. The next Citizen Satisfaction Survey will take place in 2023.

FRESCOBENE ARTISAN SAUCES DEBUT AT CENTRAL MARKET A new line of sauces is now lining Central Market’s shelves. Customers can now indulge in Frescobene Artisan Sauces, which have no added sugar, citric acid, preservatives and are gluten-free, according to a press release. The sauce line is the brainchild of Lisa Maute and Ann Riffice, who make the sauces from family recipes. “As two busy moms trying to balance the needs of our families while running a successful business, we knew there needed to be a better way to still get a delicious meal on the table without sacrificing flavor or quality, and without spending so much time in the kitchen,” Ann says via press release. Organized by Leadership Southlake’s class of 2021-2022, the Taste of Southlake event saw chamber members gather together at the Cambria Southlake hotel to enjoy some of the best dining Southlake can offer. Some of the featured delights included Feedstore BBQ’s sliced brisket, Wildwood’s Dragon burger, Scratch Kitchen’s assorted sweets and Cambria’s very own eclectic cocktails. Proceeds went back to the participating restaurants to thank them for creating a memorable evening out. ColleyFlower Farm’s Owner Is Passionate About Plants

I

n August 2020, Jamie Delannoy and her husband Ryan moved into a little yellow farmhouse in Colleyville. With enough land to grow all the flowers her heart desired, she started growing right out of her backyard and launched the ColleyFlower Farm last March. With a cart in tow to sell her blooms, Jamie is hard at work, creating a lasting and sweet-smelling business close to home. MY FAMILY AND I MOVED… to south Grapevine in 1990, back when the area was more reminiscent of beautiful farm country rather than the bustling heart of Dallas-Fort Worth that it is now. THE SPRING OF 2020… gave me more time to appreciate gardening and enjoy nature in north Grapevine. I realized that I had been missing out on some of the greatest blessings God has given us. My love for nature and beauty, coupled with my previous desire to own a farm where people could come visit, led me to the flower farm dream. I STARTED GROWING… some easy flowers in our backyard while Ryan and I began our hunt for a home and property that could accommodate our flower-farming needs. We never thought we would find a property we could even afford in Colleyville until the perfect little yellow farmhouse showed up on the market. We snagged the property, which is just under an acre on one of the busiest roads in Colleyville, and we were elated! DAYS AFTER MOVING IN, WE… immediately started plotting, planning and constructing two flower beds down the side of our property. I began placing orders for seeds, bulbs and tubers, and I started my first seed trays of hardy annual flowers in the fall. Our first seedlings were transplanted out into the rows in October, and I also began direct sowing flower seeds. BY THE TIME… December came, we had finally chosen our business name — thanks to my creative husband for coming up with ColleyFlower Farm — and applied to be an LLC. We then started handling the obligatory business start-up tasks, like applying for a sales tax ID, designing a logo, making business cards, stocking up on supplies for the harvest season and igniting our social media presence. OUR FIRST FLOWER CART… went out on March 27, 2021, with only two small bouquets of ranunculus, tulips and daffodils. My mom drove by and bought them both! She was my first sale. Since then, we have been truly blessed to grow a solid base of loyal customers who love to spread the word about our little business! WE HAVE QUITE THE LENGTHY… growing season, so there is almost always something growing, even

throughout the winter. There are hardy annuals, often referred to as ‘cool flowers,’ which can be sowed in the fall and overwintered to bloom in the spring. Additionally, there are the spring bulbs, such as tulips and daffodils, to be planted in the late fall and early winter to bloom in early spring. In preparation for summer, our beautiful, heat-tolerant tender annuals can begin being planted in mid-to-late March after the last frost. THE SMARTEST FLOWERS TO GROW… are those that are minimally labor-intensive, heat and drought tolerant, resistant to insects, disease and animals and quick to harvest. [These include varieties like] zinnias, sunflowers, marigolds, ranunculus and daffodils. We also prefer to grow flowers with a long vase life so that our customers can enjoy our farm fresh flowers as long as possible! BOUQUETS WITH… ranunculus or dahlia blooms in them are very popular, simply due to their exceptional beauty. Zinnias always make a bold and beautiful bouquet as well. I AM SO GRATEFUL… for our quaint little cart! We love to sell our farm fresh, pesticide-free blooms on our cart, and we owe our rapid first-year growth to the popularity of the flower cart and the joy it brings our community. Passers-by can turn into our driveway, step out of their car and have a fresh, farm-style experience right here in Colleyville. WE WERE LUCKY TO… experience the supportive and passionate response from the Colleyville community and surrounding areas. It’s amazing how a simple post from one of our loyal customers on a local Facebook group can transform our business! Especially in this era of uncertainty, people are craving the simple pleasures that harmonize nature, beauty and happiness! WE REALLY TAKE PRIDE IN… what we do. rom the bronzed trio to the family farm behind Feedstore BBQ, Southlake is a ‘burb that loves its burros. But few love back the same way the donkeys do at Loving Long Ears. Founded by Jules Peterson in 2019, Loving Long Ears Donkey Therapy and Sanctuary is a nonprofit that rescues neglected or abused donkeys, rehabilitates them and trains them for therapeutic activities. Nestled on 3.5 acres of

the Hadley’s pasture across the street from Walnut Grove Elementary School, Jules pours her heart and soul into caring for these donkeys up to 15 hours a day, every day. Then she watches as all of her hard work pays off as those donkeys turn around and provide their own special brand of love for children and adults in need. “It’s a big part of my heart,” Jules says. “This is something I’ve wanted to do my whole life.” Working to grow and build upon Loving Long Ears, Jules hopes the sanctuary continues to make a difference in both people’s and donkeys’ lives.

After settling into Southlake, Jules looked at potentially starting her own equine therapy endeavor. every day while working her shift at Walnut Grove Elementary, and they never fail to brighten her day. “For the past three years, Buffy and Gino have been out and sometimes even bray to me as I direct traffic,” Kim remarks. “I even get a kiss from Buffy every now and then.” Owning eight rescue donkeys herself up in Justin, former Southlake Mayor Laura Hill knows the hard work it takes to care for donkeys and admires all of the effort that Jules puts in. “She’s kind of like Dr. Dolittle,” Laura remarks. “The donkeys respond to her special touch, and everything she does for them is a labor of love.” But few have seen Jules’ commitment up close as much as resident Danielle Garde has. Moving to Southlake in 2018, her family always passes by Jules hard at work at the sanctuary. “She makes you want to learn as much as possible about the donkeys and be of help however you can be,” Danielle says. “We’ll pass her by and I’ll always text her, asking if she needs help walking the donkeys around or picking up after them.” With around 30 volunteers helping around the sanctuary, Jules says she’s always grateful for how she can count on her supporters to give more than just their time. “During the first snowstorm we experienced last year, the cold came so fast that the donkeys didn’t even have time to grow a winter coat,” Jules says. “I put it out to the community that we needed blankets, and by the end of the day, Southlake had dropped off a whole stack of blankets for the donkeys.” Despite everything the sanctuary has gone through — from snowstorms to diseases — Jules knows the sacrifice is worth it because of all of the lives the donkeys have touched. “I leave here a different person than when I get here every single day,” Jules says. “These donkeys help keep me centered and grounded. I can be really stressed out when I get here from everything going on, and once I’m here for a while, I can get a better perspective on the things that really matter.”

A SANCTUARY FOR SOUTHLAKE

While Loving Long Ears is proud of all it has accomplished so far, its goals for the future are lofty. Jules says she hopes to move out of the sanctuary’s current barn and upgrade to a full-fledged facility that can not only provide better care for its donkeys but also host future community events. Regardless of how soon it's able to realize that goal, Laura says Jules has created a beautiful thing with Loving Long Ears. “It’s an oasis for the Southlake citizens,” Laura says. “Whether you’re old or young, Jules has provided an opportunity to put your troubles away and care for an animal that appreciates affection. Jules has done so much more than create a sanctuary for the donkeys — she’s created a sanctuary for Southlake.” But more than anything else, Jules is grateful that so many people see the miracle in Loving Long Ears and the change it creates in people, in the donkeys and in herself. “I see the miracles of what these little guys can do with people every day,” Jules expresses tearfully. “Every time I see that, it reaffirms why I’m doing this and why I’m so grateful for the people that believe in this vision right alongside me.” 48 • MAR 22

rom the backyard grill to farmers’ markets, Jay Anderson and Andrew Frank brought their meat seasoning and a love for cooking everywhere they went. Now they’re setting up shop with their new brick-and-mortar restaurant, Anderson Distillery & Grill. Opening in Roanoke in mid-March, Anderson Distillery & Grill is a microdistillery that offers a blend of homegrown spirits and sizzling bar grub. Born from Andrew’s original rub recipe, all of Anderson Distillery & Grill’s main entrees are seasoned with Joe Rub, which is made

of coffee grounds, pepper, brown sugar and hatch spices. “Back in 2013, [Andrew] brought over the meat rub out of a cowboy cookbook and put it on pork tenders,” Jay recalls. “I thought it was the most amazing thing I’ve ever tasted in the world. I told him ‘Let’s go down to the farmers’ market and sell this.’ We sold over 1,000 bags in our first weekend and have been selling ever since.” Diners can taste the seasoning in every sandwich and slider, whether they choose pork, chicken or portobello mushroom as

their protein. But the flavor really shines through its premium Akaushi beef burgers and sausages, which are sourced from the Flatonia-based meat company HeartBrand Beef. Anderson Distillery even lays its seasoning thick on its all-day entree “The World’s Ugliest Breakfast,” which mixes three eggs with spinach, red onion, bacon and cheese before dusting on some Joe Rub. “When you throw all that into an egg mixture, it looks pretty disgusting,” Jay says. “It looks like mud, but it tastes like heaven. It’s so moist and flavorful. We had to give it its own section on the menu.” But the Joe Rub isn’t only found in Anderson Distillery’s proteins — it’s also found in its sides, whether it's the Joe Rub Bruschetta with seasoned bacon and cheese or the Joe Rub Veggies with fresh-grilled zucchini and squash. And in the case of the Jay’s Mac & Cheese, the rub is mixed into a smorgasbord of diced pancetta, spinach, sauteed onion, gouda and white American cheese. Though the cowboy-inspired grub is only half of the Anderson Distillery’s appeal. The other half comes in its small-batch spirits, which are distilled in-house using 26- and 125-gallon column stills. Sourced from corn home-grown in Denton, the eatery produces 15-gallon batches of its own vodka, gin, rum and whiskey, and its infusion jars can be seen from the back of the bar. With plans to produce bourbon and additional liqueur flavorings, Anderson Distillery has its eyes on growing its alcoholic offerings. “Anything that we want to mix that has alcohol, we make ourselves,” Jay says. “We make our own creme de cacao. We make our own coffee liqueur. We make our own limoncello, orange liqueur, silver rum. You ask for it, we’ll make it.” Its alcoholic mixes include cocktails, coffee and even milkshakes. The Tex-Mex Restaurant Is Coming To Southlake The Shops of Southlake is expanding its offerings with the opening of a brand-new Tex-Mex restaurant. With six other locations throughout the Metroplex, Mesero will be opening its seventh restaurant in the heart of Southlake. “Southlake has always been on our wish list of locations,” says Trey Dyer, the president and CEO of Mesero Restaurant Group, LLC. “We were waiting for a location which would be an iconic addition to our brand and a place that Southlake and the surrounding neighborhoods would enjoy.” With both traditional Tex-Mex recipes and familiar American dishes, Mesero’s diverse menu has something that can cater to everyone’s palates. “[Guests can] expect first-class service in an amazing atmosphere with a menu that includes Tex-Mex favorites, authentic Mexican dishes, American dishes and everything in between including salads [and] other lighter fare,” Trey says. At Home With Scott And Kelly Bradley Meet The Westlake Couple Behind The Iconic Elegance Of The Paigebrooke House

T

here’s a lot of history behind the Paigebrooke house in Westlake. Built in 1938 by iconic Dallas architect Charles Dilbeck, the 11,500-square-foot house was originally constructed for Ted Dealey, the son of “Dallas Morning News” publisher and founder George Dealey for whom the Dealey Plaza was named after. But after Ted passed away in 1969, the house was left vacant for eight years. Enter Scott and Kelly Bradley. In 1977, the couple moved from Dallas to Westlake to embrace the countryside living for which the area was known. Upon seeing the historic qualities of the Dealey house, they instantly fell in love and knew they had to have it. “Charles Dilbeck built this to represent his Texas ranch house,” Scott says. “His designs are very eclectic and romantic, but they’re all distinctive. If you’ve ever lived in one Dilbeck, you’ll recognize another one even if it’s in a different style.” Retrofitted back to its original grandeur with large windows, brick chimneys and even a bell tower, the Dealey home is as spacious as it is welcoming, with six bedrooms, seven bathrooms, a study, a wine cellar, a library, a lodge and a guest house all connected by one sprawling hallway. The home is also filled with several of Dilbeck’s trademark secret rooms.

“This is what we call our ‘Harry Potter’ room,” Kelly remarks as she opens a hidden door underneath the basement staircase. “This house is filled with hidden doors and rooms. Dilbeck was quirky like that.” Scott and Kelly made the Dealey house their home for 20 years. During that time, Kelly founded the nonprofit Metroport Meals On Wheels, cooking meals out of their home and delivering them to senior citizens around the area. Although she’s no longer executive director (that position is now held by Mary King), Kelly still finds enterprising ways to give back to the organization she loves. “It is my honor to still serve on the advisory board,” Kelly remarks. “My husband and I continue to deliver meals to those in need in one of the three Grapevine routes.” At the same time, Scott began serving as the chair of the planning and zoning commission for Westlake and as the president of the Texas Student Housing Authority, awarding over 2,700 scholarships in the past 25 years. Then after 15 years of service to his community, Scott was elected Westlake’s mayor and remained in that position for the next 14 years. In 1998, the Bradleys sold some of their land to Fidelity Investments for a regional complex. While the business was good for the city, this put their house in the path for demolition. The Bradleys were left with two choices – say goodbye to the Dealey house forever or move it to another property. They chose to preserve their house by carefully removing the house in six different pieces, wrapping it, transporting it 2 miles up the road and meticulously putting it back together on a 12.5-acre farm – all while living out of a trailer. Naming their new property “Paigebrooke” after their two daughters, Scott and Kelly stuck so closely to Dilbeck’s original blueprint they even reused the salvaged bricks that made up the original foundation of the house. “[Dealey’s] wife Pat told us that this was his favorite home,” Scott says. “We feel like we’re stewards of this property – we’re responsible for it.” Today, the home still stands strong, regularly hosting guests and events inside and out on its beautiful courtyard and pasture. Locals will get the chance to experience the property in person this month when the Bradleys host the Party On The Peninsula event on March 26. Featuring live performances from King George, Justin Mason and Tennessee Whiskey, the event will directly benefit Metroport Meals On Wheels’ mission to feed senior citizens around the area. Whether they’re awarding scholarships to Westlake Academy students or hosting a fundraiser at their estate, Scott and Kelly love serving Westlake in all manner of ways. And after a busy day, they love to unwind and settle into their lovely Paigebrooke house. “Dilbeck often said that he wanted his houses to feel like a stranger was welcome,” Scott says. “Just come on in, put your feet up and make yourself at home. This house makes you feel that way every time you walk in.”

here are endless things to love about the Paigebrooke home in Westlake. Custom-made by Dallas architectural icon Charles Dilbeck, everything about this house inspires wonder and amazement, from its artisan elements to its traditional aesthetic. OLD-WORLD ELEMENTS

One of the distinguishing characteristics of Paigebrooke’s design is its charming old-world architecture. Much of the material used to build the Paigebrooke house were rustic tiles and hand-hewn oak beams salvaged and repurposed into the home’s romantic French country aesthetic, which the Bradleys still love to this day. You can emulate this unique design as well by incorporating pink stucco bricks, pecky cypress wood and stained glass windows to make your home feel equally historic.

Found throughout the house are captivating and creative chandeliers that speak to the individual personalities of each room. The living room greets guests with an antler chandelier that evokes a feel of the wild, while the dining room light fixture has a Greek cross pattern fit for a European castle. Not to be outdone, the Bradley’s well-appointed lodge even features a chandelier made from a wagon wheel. Whether you go for rustic or royal, you can bring these unique lighting styles into your own home as well.

Nestled at the back of the residence is a 900-squarefoot courtyard perfect for outdoor events and gatherings. Circular brick foundations are sprawled throughout the space with wooden tables, chairs and fire pits resting on each one, while a layer of coral sand transitions smoothly into the vast countryside.
