the ever changing face of foodies Before the population boom of the late 1990s, fast food was the only food in Southlake. Soon thereafter, hometown eateries started dotting the landscape with their checkerboard tablecloths and casual atmospheres. With familyfriendly service at family-operated restaurants such as Joe’s, Armend’s, Johnnie B’s and “Pappa Bill’s” Feedstore BBQ — it was impossible to not put a name with a face from the kitchen. As Southlake grows, so too does our craving for more eccentric, upscale eateries. Creative culinary masters are now in full force up and down FM 1709. However, tucked behind statement art pieces and floor-to-ceiling wine cabinets, opportunities to share your compliments with the chef face-to-face are less common. That is exactly where this month’s issue of Southlake Style fits in. As always, we are thrilled to keep our city small enough to put faces to those names who make living, working and eating here so special. a World of Culinary OPTIONS Close to HOME

outhlake’s dining community is comprised of a variety of distinctive flavors that transport guests around the world. Whether diners want to tear into a fresh piece of naan or stick their fork into a ball of burrata, there are plenty of nearby restaurants that allow locals to explore new culinary genres without leaving town. So put on your stretchy pants and leave your passport at home, because we are taking you on a tour of some of the world’s most exotic culinary cultures with some help from local restaurants. M A L A I K I T C H E N | T H A I L A N D/ V I E T N A M As soon as guests walk past the rope screens separating the kitchen and the dining room and the coconut grater that makes the restaurant’s in-house coconut milk, they start to get a feel for that Malai vibe. The Thai and Vietnamese restaurant has an attention to detail in everything from the design elements to the dishes, helping transport guests to a specific state of mind while enjoying their night out. “We created our menu to represent what we think is the best version of classic Thai and Vietnamese dishes, as well as some more unique dishes that have been inspired by a more modern approach to the cuisine,” chef and co-owner Braden Wages says. “Our menu has evolved over time, and it will continue to evolve as we discover new dishes and flavors on our yearly travels to Southeast Asia.” Malai prepares everything, including the bases of their more elevated dishes, from scratch with the freshest of ingredients. So guests don’t just get any Sriracha Sauce: they get Malai’s unique blend of red jalapenos, vinegar, garlic and Thai chilies. And they don’t get just any drinks: Malai offers beverages like their fresh-squeezed sugar cane juice that’s made to order and mixed with ginger and lime. Another standout is their house-brewed beer, which is crafted to complement bold Southeast Asian flavors. “Because of our unique ‘travel-inspired’ approach to the cuisine and from our scratch approach to everything we do, from coconut milk, curries, desserts and even house-brewed beer, our restaurant is unlike any other almost anywhere in the world,” Wages says.

Whether you want to try out their Vietnamese Meatballs, Spicy Crispy Samosas or Yellow Curry Bowl, the combination of spices and rich flavors is inviting to first-time diners and connoisseurs alike. And it doesn’t hurt that the fresh ingredients provide plenty of healthy options. “We love being in Southlake because we feel like this community is globally aware and appreciates the quality and healthiness of what we are doing,” Wages says. O M I N D I A N G R I L L | INDIA After years of successful local catering, Chef Laxmi Tukkem took the plunge and opened up her own restaurant to provide high-quality Indian food for Southlake. Tukkem knew she wanted to create fresh dishes from both North and South Indian cultures using premium ingredients. “Everyday we are making things fresh,” Tukkem says. “We have a brightness in our dishes because I’m here making it all.” While a few of her dishes – like her Mr. Tikka Masala – can be prepared to suit mild palates, those looking for a kick of heat will find plenty of spicy dishes at Om. Hungry locals can find a contemporary dish rooted in the Indian cuisine that will keep them coming back for more. Starting out with the Hot and Sour soup and a side of naan bread will help set the pace for the rest of your meal. Entrees like the Butter Masala and Curry Land, which are both creamy and light at the same time, come in large serving sizes that are ideal for sharing with family and friends. Tukkem strays away from the typical buffet style found at other Indian restaurants around town to guarantee each dish comes out looking and tasting its best. She also opts to grill her proteins instead of frying them, which provides a healthier but equally delicious spin on some of the culture’s classics. “I’m just giving my customers my best,” Tukkem says. “You don’t need unlimited food. You need quality, delicious food.” As a child, Tukkem spent time in the kitchen with her family and learned how to prepare, cook and season these dishes. And even when she travels back to India, Tukkem still spends time with loved ones talking about food. “Growing up, my mom was the best cook. Now, I am still in the kitchen cooking with her and trying out all of her creations.”

in the country and the third in the Metroplex. And the chain has not slowed down – they are about to open their 42nd restaurant. But despite their success, their purpose remains the same. “I wanted to provide wholesome food that I’d want my own children to eat, so our menu is centered on food that is natural, healthy and delicious with no trans fats,” Pourteymour says. Their gourmet salads and signature plates have that zesty tang that’s often found in traditional Greek food but also provide a sense of familiarity with its fresh and locally sourced available ingredients. Pourteymour says she leans into those recipes because of both her background and the family-style options that she knows locals will enjoy splitting with their loved ones. “I learned how to cook from my grandmother and mother,” Pourteymour says. “[They] are from a small village called Kapsia outside the city of Tripoli.” Whether you dine in or carry out of this family-style restaurant, rest assured that each of their dishes is cooked fresh and made with healthy ingredients. “We cook with love and care, like we feed our family,” Pourteymour says.

This continued time spent learning about Nawab and Moghul cooking techniques helps Tukkem keep her menu authentic, while combining new, fresh spices found in the country to keep her menu unique. “My priority is providing a taste of real Indian food,” Tukkem says. L U N A G R I L L | GREECE Mediterranean food has a reputation for its health benefits and unexpected combinations of sweet and savory flavors – both of which you’ll experience at Luna Grill. With a clean interior and bright dishes coming out of the kitchen, a quick bite at Luna can make for a tasty lunch break or a fun family dinner. Chief cuisine officer and co-founder Maria Pourteymour started the Mediterranean quick service restaurant with her husband because they wanted there to be wholesome, well-rounded food in her San Diego neighborhood. She used her personal history of cooking dishes from her Greek heritage and spending time in the kitchen with loved ones to open up her first shop in 2004. Luna Grill came to Southlake in November 2015 as the 20th location

I L C A L A B R E S E R I S T O R A N T E | I TA LY Chef Luciano Salvadore started cooking at age 13 in his hometown of Vicenza, Italy, attended The Recoaro Terme Culinary School in the country and moved over to the states soon after, all to follow his passion of creating great Italian food. So it’s safe to say the il Calabrese Ristorante partner knows a thing or two about creating an authentic experience for his diners. And thanks to the time he puts into finding the right vendors and sampling products, il Calabrese serves dishes with regional ingredients that aren’t available at other local Italian restaurants. This sourcing helps elevate their menu’s modern and traditional Italian dishes to create a new culinary experience. “We make our pasta. We use produce you can’t find here in the area,” Salvadore explains. “We want to transport that over here.” His dishes are full of flavors native to Southern Italy, which prides itself on lighter alternatives and fish entrees thanks to its proximity to the sea. But you’ll still find those Italian classics, just with a modern twist – like their lasagna, which is a family recipe, or ravioli made with Atlantic salmon. While he loves being out on the floor and seeing people enjoy his food, Salvadore says he spends a majority of his time in the back to ensure the quality of his dishes are maintained. “I’m always running back in the kitchen to make sure that everything is coming out right and stays authentic,” Salvadore says. “I mean it’s an Italian restaurant, and I’m an Italian chef, so it’s an authentic experience.”

CARROLL SENIOR HIGH SCHOOL STUDENTS RECEIVE RECOGNITION FOR ‘GYPSY’ Several Carroll Senior students are heading to the seventh annual Dallas Summer Musicals High School Musical Theatre Awards, the second largest artistic and educational program in the country for high school students. Competition was thick with 75 participating high schools and 79 performances, but Carroll Senior’s production of ‘Gypsy’ was nominated in four categories: Stage Crew/ Technical, Best Student Orchestra, Best Musical Direction and Best Featured Actress. Devan DeLugo, junior, was recognized for her role as Dainty June. The crew also was nominated for honorable mention in Lighting Design. The winners will be announced at the DSM HSMTA ceremony on May 17 at Music Hall at Fair Park.

‘SPARKS OF JOY’ FOR LOCAL WISH KIDS AT ANNUAL WISH NIGHT GALA “Sparks of Joy” will be flying through the air on this year’s Wish Night, benefitting Make-A-Wish North Texas. The gala honors children battling critical illnesses and celebrates the hope, strength and joy that a wish brings them, their families and entire communities. This 22nd annual heartwarming event will be hosted at the Hilton Anatole Hotel and will feature a sit-down dinner, handcrafted cocktails, live music and dancing. FORMER DRAGON QUARTERBACK SNATCHES UP THE FOOTBALL HEAD COACH POSITION The Dragons have a new football coach. Riley Dodge, the 29-year-old son of Todd Dodge, will follow in his father’s footsteps by becoming the head coach of Southlake Carroll football. Prior to his hiring, Dodge was the offensive coordinator at Justin Northwest in 2017. Between the years of 2012 to 2016, he has worked as a graduate assistant at Texas A&M University and a quality control and quarterback coach at the University of Texas at Austin. Closer to home, Dodge served as quarterback coach and offensive coordinator at Flower Mound Marcus High School during the 2015-16 season. A three-year letterman for the Dragons, Riley was no stranger to success on the field. From 2005-2007 he threw for 8,143 yards and 101 TDs. In addition to the 2006 5A State Championship, he was given multiple honors including being named as a 2008 Parade All-American and twotime Texas 5A Offensive Player of the Year.

LOCALS TAKE IN THE ARTS AT THIS YEAR’S ART IN THE SQUARE The 19th annual Art in the Square presented by the Southlake Women’s Club ran from April 27 to 29 in Southlake Town Square. More than 160 artists participated in the three-day juried fine arts festival. Locals were able to admire, and purchase, a few of the pieces from this diverse set of artists. They were also able to listen to live music from the event’s two stages, stop by the children’s activities zone and enjoy lots of family fun. The organization holds this race year after year with the belief that every student should be able to attend this camp regardless of its price. Starting and ending at Dragon Stadium, the race has a fairly easy course that people of all ages can navigate. Age group awards will be given out to the overall female and male winners in each group. BUSINESSES RISE UP TO SUPPORT GRACE DURING ITS TIME OF NEED After a horrific fire tore through GRACE’s medical clinic and food pantry last month, local businesses rose up to support the nonprofit in its time of need. lorence “Flo” Chauvet doesn’t get bored. It is simply not in her nature. There are plenty of times where she would probably appreciate the opportunity to be bored, but even if a lull hit, she would likely find something else to fill it. Her passion for trying new things led her to start a food truck, Chez Flo. That food truck soon branched into two, with her second taking on a different name and concept, Sandwiches Around the World. Most recently, she started serving rolled ice cream in the Kay Bailey Hutchison Convention Center. To say Flo works full time would be a gross understatement. “I've worked harder since 2014 when I opened Chez Flo than I have ever worked in my life,” she says. And that’s saying something. Flo has been cooking since she was 14 years old. Born in raised in France, she attended culinary school at age 16. She then moved to Paris and worked in a Marseille restaurant for three years. “I was 14 when I started cooking, and I'm 46 now,” Flo says. “It's the only job I ever had.”

Her second truck, Sandwiches Around the World, is named after its unique concept. Every six months the menu changes, featuring sandwiches inspired by five different countries. The truck’s exterior is a giant map, and on it, the truck’s owner can pinpoint a spectacular amount of places that she has lived or visited. 46 • MAY 18

Her first venture out of home country for work took her to London. Flo worked at The Berkeley Hotel, a five-star hotel. She completed an additional two years of culinary school and learned English at the same time. Remember how we said she is never bored? From there, she went to work at The Grand Hotel in Amsterdam, where she met the chef that would send her to the United States. Chef Albert Roux offered her a job at a hotel in Key Largo. At age 25, Flo got her visa and moved to the states. She has been here ever since. “When I got to Florida the chef was like, ‘These Americans don't know what good cooking is. I'm going back to England,’” Flo laughs. “And I was like, ‘You know what chef, I'm going to stay a little bit longer.’” After four years of cooking in Florida, Flo was offered a job in Texas. She cooked her way up the ladder and landed a catering job that sponsored her in obtaining a green card. Then, in 2011, Flo took her final corporate job as executive sous chef at the Dallas Convention Center for Centerplate. “The cool part of doing it was I was able to go to Miami, Washington D.C., New York, all those places to cook because the company had conventions all over the country,” Flo explains. And while she thoroughly enjoyed her time there, three years later, she took the leap. SOUTHLAKESTYLE MAGAZINE


“Starting a food truck had been in the back of my mind for a while, and I thought ‘why not, why not try it?’” she says. When she was first starting her truck, Chez Flo, Flo continued to work full time at the convention center. It’s hard to say if the chef has ever held only one job at a time. “I'm always like, why do those French people get five weeks of vacation every year?” she laughs, her own French accent shining through. “That's crazy.”

FLO ON THE GO The idea of being your own boss may sound like paradise, but Flo knows that a disciplined routine is what it takes to keep her two food trucks fueled and fueling others. Here is her average day in a nutshell.

8 A.M. Resisting the temptation to sleep in, Flo wakes up around 8 o’clock every morning. She gets ready for the day and then promptly heads to her home office to answer emails.

9:15 A.M. Flo will either get supplies or pick up one of the food trucks to serve lunch. Both are parked at a food truck commissary in Grand Prairie overnight.

10 A.M. She likes to arrive to every event, be it lunch hour or a festival, at least an hour early to set up.

11 A.M. The lunch rush starts. Even though Flo is trying to be more “hands-off,” you’ll often find her on one of her trucks during lunch. “I'm trying not to be on one of my trucks every day,” she says. “Right now, it is our busy season. There are a lot of emails that come for last minute booking and, if you're not quick about it, then people will go somewhere else.” SOUTHLAKESTYLE.COM

IT TAKES SPECIAL PEOPLE TO WORK ON FOOD TRUCKS At special events, Flo will cut the menu down to ensure that everyone is fed in a timely manner. She endeavors to keep the line moving, and she and her team try to get food out within two minutes of it being ordered. That’s a tricky time table at her usual spot, Klyde Warren Park, but it’s escalated at festivals.

3:15 P.M.

Even though Flo is home by now, her work is far from done. She spends the rest of her day on the business and administration side of things. This includes booking big events, keeping tabs on inventory and making sure everyone gets paid. However, if one of her trucks is serving at another event, she may go there to support her team. This schedule changes drastically for special events, which can equal eight to 12-hour work days on the truck. “It takes special people to work on food trucks,” she says. MAY 18 • 47


NO REGRETS When asked how she ended up in Texas, Flo likes to tell people that she boarded a plane for Paris and ended up in Paris, Texas. All jokes aside, when she first took a job in Texas, she didn’t plan on staying this long. Her plan was to work here for about three years and make her way to California. “Well, I've been here for 17 years, but it's been a good 17 years,” she says. “No regrets.” Introducing new cuisine to a population of BBQ-lovers is not without its challenges, Flo admits. And this challenge hits her every six months when she changes up the menu of Sandwiches Around the World. “We had a Brazilian sandwich and people would read the description and not get it,” Flo says. “But when they try it, they say it's the best sandwich they've ever had.” But even more difficult than getting a Southerner to try a Bauru - the aforementioned Brazilian sandwich - is simply the headache of small business ownership. While Flo is no stranger to the kitchen, the office work presented a learning curve. And with a the rigorous hours it takes to keep a food truck running on the weekends, finding workers is still an ever-present obstacle. “Everything is a learning process,” she explains. 48 • MAY 18

“Everything that I have done in my life, like doing the food truck, I've had nobody helping and I've had to learn on my own.” Flo has three people who work full time with her to keep the trucks operational, one of whom, Cathy, has been there from the beginning. “She is not a cook, but she has great customer service,” Flo says. “She works her tail off at the truck like it is her baby.” All challenges aside, Flo would be the first to tell you that she wouldn’t have it any other way. Between her two trucks and her latest venture at the Kay Bailey Hutchison Convention Center, the chef is still happily in her element – cooking amazing culinary creations. Her goal is to introduce unique, tasty dishes, and her trucks are evidence of that. “As long as I learn something everyday, I am happy,” she says. “That is what builds character. If you don't challenge yourself, you'll just be another Joe in the corner of an office building.”

Chef Evandro Caregnato has worked in the food business his entire life. The Wharf Erin Miller, Chef After three years as a sous chef and a rich background in the culinary space, Chef Erin Miller knew she wanted to open up her own restaurant. So in March 2018, The Wharf was born. The Roanoke restaurant offers up premium seafood and steak options without any of the typical seafood restaurant décor. arbara Walker can’t help but smile as she recalls the bizarre circumstances that landed her on a private tour of a Chinese zoo. While serving on the board of directors for Southlake Sister Cities, she took a trip with other Southlake residents to Wuzhong, China – Southlake’s newest friendship city. While there, her host asked if there were any sights the group wanted see. She jokingly said “pandas,” but within 24 hours, the host delivered by taking them on an incredible zoo tour. "It is truly a remarkable experience,” she says. “You cannot replicate this through a vacation or travel agency."

Stateside, she volunteers with Katy Hintze for Southlake Sister Cities. They serve as first vice president and president, respectively. The organization is a nonprofit dedicated to educating students on different cultures through hands-on experience. While Barbara was on an adult trip, the vast majority of trips are for students only. The program is an exchange program, so students from Wuzhong, China and Southlake’s original sister city, Tome, Japan, routinely come here as well. “Through the years we've probably sent about 250 Southlake youth,” Barbara says. “At least that many come here.” A RICH HISTORY Sister Cities International, the organization that Southlake Sister Cities is under, was created at President Eisenhower’s 1956 White House conference on citizen diplomacy. In his speech at that conference he stated: “The purpose of this meeting is the most worthwhile purpose in the world today – to help build a road to peace.” Through that, sister cities were born as a means of cultural exchange. The mission reached Southlake 26 years ago, thanks to founders Kiko and D. Ekstrom. They worked with city council to establish Southlake’s first sister city: Tome, Japan. “Our mission is to come to peace through mutual understanding,” Katy says. “The kids get it. They understand maybe more than we do.” Sister cities are not just fun titles, they are relationships between municipal governments that involve formal agreements recognized by Sister Cities International. The City of Southlake is deeply involved with the program, as it provides 80 percent of the nonprofit’s budget. MORE THAN EXCHANGE STUDENTS Katy says she became interested in volunteering for Sister Cities “the normal way” – through her son. Prior to going on the trip to Tome, he wasn’t sure what direction he wanted to go after high school. The instant he got back, he wanted to study international business. “It changed his life. It changed his whole perspective on things,” Katy says. Barbara’s kids have also gone on sister city trips, and the family has also hosted students. It is a common misconception that the program is an exchange in the sense that you must host if your child is hosted in Japan or China. While that is not the case, Katy finds that many family actively volunteer to host once their kids return from their trip. Despite language barriers, many friendships have been born out of the program as well as the cultural exchange. Barbara has fond memories of this from when her family hosted a Japanese student. Barbara’s oldest daughter, Chloe, had already been to Tome, and was inspired to learn origami. When the exchange student stayed with the Walker family, Chloe helped teach the student origami. The student was stunned that Chloe was so proficient in an art so culturally centered in Japan. “While the exchange may only be a week, the relationships last more than a week,” Barbara says. Above all, the trips give students the opportunity to see things outside of their usual bubble while also serving as a representative of Southlake. When a student signs up for a Sister Cities trip, they are called student ambassadors. “It's nice for the kids to see that the United States isn't the end of the world, but It's a big responsibility,” Katy says. “You're representing Southlake and you're representing the United States.” SOUTHLAKESTYLE.COM

As far as who can go, the trips are open to students 13 years old and up. Katy says a wide variety of students go, from Belles to student athletes to band and so on. “We get the gamut,” she says. “It’s a diverse group.’ The China and Japan programs both cap at 10 students per trip. Barbara says they routinely fill up, but she is amazed they don’t max out every time. Trips take place during March and June and cost a total of $2,000 for everything except personal expenses such as buying souvenirs. “You don't need to be a business tycoon, you don't need to be a politician,” Barbara says. “You create citizen ambassadors and you do this enough times and you replicate this over and over and you've made an impact.” In its 26 years of operation, Southlake Sister Cities has never failed to send students annually. Both board members speak highly of the program, and you can tell it's because they believe in what they are doing. And with both ladies’ kids having such positive experiences, parents can rest assured that the program is safe and more than worth it. “I've always been excited about our mission, but when I look at the world today, I think what we are trying to accomplish is more important than ever,” Katy says. LOCAL SPIN INSTRUCTOR JUMPS BACK UP ON THE BIKE AFTER TAKING DOWN CANCER

A

s she jumped up on the bike and started teaching her first class back at Southlake’s ZYN22, Jennifer slid in saying she stepped away from spin for a minute to “go kick cancer’s ass.” But, the spin instructor is back in action and stronger than ever, and she isn’t letting anyone – or anything – slow her down. The end of last year brought many obstacles to her, her husband and her daughters’ lives, but Jennifer faced cancer head on with the help of her loving family and community. I WAS TALKING WITH MY HUSBAND… and I realized I had never had a mammogram. I went to my annual appointment, but I knew that I had to go get one. As I was talking about scheduling one, I felt a lump. I THOUGHT IT WAS … a fibrotic cyst. But I felt something. I thought it was nothing because why would I have cancer. I set up a diagnostic and two days later visited my doctor. He said he felt something too, but he wasn’t convinced it was a tumor. He told me to watch if it went away, but I still felt it. So, I set up a 3D diagnostic mammogram and sonogram. I WENT IN… by myself because I thought everything would just be normal and fine. He came in and showed me the lump I felt and then three other small areas that would have gone undetected if I didn’t feel the lump. He looked at me and said, ‘I’m 99 percent sure this is breast cancer.’ WE HAD ALREADY SET UP A MOVING TRUCK… and sold our house. We were moving to California. I went in for my sonogram after Thanksgiving, and we were going to move to California in December. IT WAS ALMOST COMICAL… The same day we got the news about my health was the day when all those terrible California fires were happening. My husband and I were watching the progression of the fires. We were looking at this map of Ventura, and we saw the street of the house we were supposed to move into. It had a lot of smoke damage. The magnitude of everything that was happening was just shocking. WE GOT THE CALL… that it was for sure breast cancer, but that they thought that they caught it early. But, nonetheless, we had to make a choice. Basically, it was a no brainer decision for me to do a double mastectomy.

IT WAS SO SURREAL… It happened so quickly. I was able to get the reconstruction done the same day as the surgery. Thankfully, we found out that I didn’t have to do any chemo or radiation. In the surgery, they got all the cancer out, and it hadn’t metastasized. I now just take a pill once a day for the next five years, and that’s supposed to prevent any recurrence of cancer coming back. WE KEPT EVERYTHING… a secret from our daughters until we knew what the plan was. I wanted to know everything and what the next step was. We waited until all that was certain. When we made the surgery date, January 10, we sat them down and said, ‘Girls, we have something we need to tell you.’ I was afraid that their immediate thought would be that I was going to die. But I explained that they caught it early, that mommy would have a surgery and I am going to be ok. I WANTED TO BE AS HONEST… as I could but also be realistic. I wanted them to be able to trust me. As a mom, you want your children to be a part of everything. But, as a parent, you want to be able to protect your kids. If kids don’t hear the truth from you, they’re going to figure something out and built it up in their heads the wrong way. It really has bonded us deeper. IT’S CRAZY HOW… fast my healing happened. I was back to teaching six weeks after my mastectomy. And now this is the testimony I use in my classes. You never know what’s going to happen. You never know what your body is going to face. You don’t have to be a super amazing athlete or do anything as intense as we do in ZYN22. It’s just important to take care of your body so that when healing, your body can heal faster. CANCER DOESN’T… discriminate. It affects everyone. But healing does discriminate. If you aren’t taking care of yourself, it takes a lot longer to get over it.

The former Pho Chateau has been rebranded and restructured to transform into Lime Bar & Kitchen – the hottest new pho stop in the area. Lime’s dishes use high-quality ingredients and striking presentation to make each visit an adventure. Their menu items are getting people from all over the Metroplex to come out and try beautiful bowls of pho. Partners Tony Dao, Armani Reza Shahravan, Monica Gonzalez and Thi Phung knew there was a local hunger for aesthetically beautiful dishes that would make dining out its own exciting experience.

Pho, a hearty Asian noodle soup made up of broth, noodles, herbs and meat, has been around for centuries and continues to evolve over time. The dish is traditionally seen as a Vietnamese street food, but there’s nothing common about how it’s done at Lime. The process of building these lavish bowls starts the day before they are served up to customers. Their two signature broths, chicken and beef, simmer for hours to build an impactful flavor profile with the chicken broth cooking for 12 hours and the beef broth 14. After the broth is ready, Lime builds these bowls up with the finest ingredients to create a truly one-of-a-kind experience. “We wanted to serve up something that’s aesthetically pleasing, and in that, it’s really those little details that make a huge difference,” Phung said.

It is the menu’s priciest dish, but it comes in a massive bowl that can easily be split among friends. These hearty servings are perfect for sharing. So pick a specialty pho, a few tapas – like their delightfully light Spring Roll Sampler or perfectly-sized Viet Tacos – and one of their entrees – like their Orange Chicken or Traditional Fried Rice – to really immerse yourself in the variety available on their menu. It can be challenging to find healthy food options while constantly on the go. At least it was before Original ChopShop moved into town. The neighborhood eatery got its start in Scottsdale, Arizona, before opening up five other locations serving up its wholesome dishes. And now, the local favorite has made its way to Texas with its first location opening its doors in Irving. Jason Morgan, the CEO of Original ChopShop, acted as the CFO of Zoe’s Kitchen for seven years before venturing into a restaurant group of his own. He sought out to create a healthy menu everyone could enjoy. “Our philosophy is to serve feel good food for everybody,” Morgan said. “We welcome customization to all of our menu items, as well as offer a variety of diet-friendly options including food free of gluten, dairy, lactose and soy, along with vegetarian and vegan items.” Their menu does lend itself to creating a unique experience every time you dine in. Their grilled protein bowls come packed with healthy ingredients like roasted broccoli, cauliflower and mushroom that you can then top with flavorful proteins like teriyaki chicken, sweet soy sesame steak or green curry tofu. For a lighter alternative, their superfruit bowls and parfaits are a sweet yet filling option for a quick lunch or a midday pick-me-up. But their breakfast items cannot be missed. Their Avocado Toast – one egg served over easy, smashed avocado, tomato and red pepper flakes served on 12-grain ciabatta – sounds like it should cost an arm and a leg, like others found at a few brunch spots around town. Dance with the Swans! Get swept away in the drama and grace of the classical ballet, “Swan Lake”

E

legance. Sorcery. Beauty. Heartbreak. Texas Ballet Theater (TBT)’s production of “Swan Lake” is exactly what you want from this classic tale of romance and evil, complete with glittering costumes and expert dancing. Choreographed by TBT Artistic Director Ben Stevenson, O.B.E., with music by the original Russian composer Pyotr Ilyich Tchaikovsky, “Swan Lake” is a love story filled with tragedy. Whether you see this show every year or this is your first time, you will love watching as Prince Siegfried meets the beautiful Princess Odette and learns how the evil magician Von Rothbart cursed her to be a swan. The next day, the prince is made to choose a wife at a royal ball by his queen mother and is instantly attracted to Rothbart’s daughter, Odile, who looks exactly like Odette. Tissues will be needed for the next part, when the prince — and Odette — realizes what has happened. All the drama and dancing of Stevenson’s “Swan Lake” will take place in two acts instead of the original four, accompanied by The Fort Worth Symphony Orchestra for the Bass Hall performance and by The Dallas Opera Orchestra for the Winspear Opera House performance. Odette and Odile are performed by the same ballerina, who must change her costumes and demeanor for each character. The way the lead dancer completely transforms herself over and over again throughout the ballet is almost as intriguing as the plot itself. One thing is for sure: the ballerinas won’t be the only ones kept on their toes during the performance. Attendees will be mesmerized during the entire show — and secretly hoping for a different ending than the tragic one they know is coming. For a ballet as intricate (and commonly reproduced) as “Swan Lake”, this is no small achievement. “Swan Lake” will only be in town a few days, so get your tickets to this enchanting ballet now.

t’s gonna be May — and Justin Timberlake is coming to town! Jumping, laughing, crying, exclaiming “I love you!” and more — from pre-teen girls and middle-aged women alike — can be expected May 27-28, when Timberlake returns to Dallas. It’s been five long years since “Suit & Tie” and other favorites from “The 20/20 Experience” and “20/20 – 2 of 2” were released, but JT is finally back — this time taking fans to the woods. The audience will be transported to the country in honor of Timberlake’s Tennessee roots, complete with plenty of trees, plaid shirts, music from his fifth studio album, “Man of the Woods” and surprises that you’ll be sharing around campfires (or just bragging to friends who didn’t get to go) for years to come. Hits like “Filthy,” “Say Something” and the title track — as well as classics, like “SexyBack” and “My Love” — will be performed by the singer and his ensemble band, The Tennessee Kids, during the show. Even though Timberlake has won many awards in his solo career, including Grammy, Emmy and American Music awards, millions of people first became fans when he was one-fifth of *NSYNC more than 20 years ago. He said “Bye Bye Bye” to his band in 2002 and released his first solo album, Justified, which earned a Grammy for Best Pop Vocal Album and Best Male Pop Vocal Performance for the single “Cry Me a River.” Since then, he has released several more albums, starred in movies, opened a record label, fashion label and restaurants. He’s also worked as a lead voice actor and executive music producer for the DreamWorks animation “Trolls”, where he scored another number one hit and a Grammy Award for the title track “Can’t Stop the Feeling!” When he isn’t performing some of the country’s most loved songs, participating in humanitarian efforts, starring in half time shows or making funny videos with his best friend, Jimmy Fallon, Justin Timberlake is just your average man, who enjoys spending time with his wife, Jessica Biel, and son, Silas.
