I’ve been affectionately known to many around town as “Coach Mike” — a moniker I’ve loved since my oldest daughter turned five back in 2010. After eight years of coaching either rec soccer and basketball or as a cheerful spectator for countless other teams, I can honestly say coaching and cheering on my kids and their friends has been one of the more rewarding experiences of my time in Southlake. If you’re like me then you’re going to enjoy Maleesa Smith’s “Hold Nothing Back” — a very inspiring feature about two Dragon Youth Footballers playing the game they love despite adversity. As inspiring as the stories of Beckett and Spencer are, I couldn’t help but be moved by the words of their “Coach Rudy” who shared that the experience was his “opportunity to become better as a coach, as a parent [and] as a mentor.” The impactful statement encouraged me to look back and ahead to what will probably be my last year as coach, and ask myself if I’ve taken advantage of the same opportunities as Rudy. To which all I can muster is, “You could always do better.” I hope the coaches and parents who read the article will be moved in the same way. In the coming weeks, we’ll all be on the move amongst the season’s activities, of which many have been carefully curated. In this issue, you’ll savor a few excellent dining options in “Tasteful Giving” for those big-givers and “Are We There Yet?” for the season’s road-trippers.

Ingredients

4-5 fresh peaches + sugar 1/4 cup butter 1 cup flour 1/4 tsp salt 1/2 cup sugar 2 tsp baking powder 1/2 cup milk 1/2 lemon juice 1/2 tsp vanilla extract

Directions

1. Peel and slice peaches. Mix in 1/4 to 1/2 cup sugar and sprinkle with Fresh Fruit. 2. Cover and sit until juicy. 3. When peaches are ready, heat oven to 375°. 4. Cream butter and 1/2 cup sugar until fluffy. 5. Add flour, baking powder, and salt alternately with milk, lemon juice, and vanilla. 6. Beat until smooth. 7. Pour into greased 10” x 10” pan. Spoon fruit over batter, pouring all juice over it. 8. Bake 45-50 minutes.

1. Preheat oven to 350°. 2. Grease and flour a 10” x 15” jellyroll pan 3. Beat eggs, sugar with an electric mixer on high for 5 minutes. Gradually mix in pumpkin. 4. Combine flour, baking powder, salt, cinnamon & ginger. Stir into pumpkin mixture. 5. Spread batter into the pan. 6. Bake for 12 to 15 mins, or until center springs back when touched. Loosen edges with a knife. 7. Turn out on two dishtowels dusted with confectioners’ sugar. Roll up using towels, cool for 15 mins. 8. Combine cream cheese, butter, powdered sugar & vanilla. Beat until smooth. 9. Unroll pumpkin cake when cool, spread with filling, sprinkle with nuts, roll up. Place pumpkin roll on a long sheet of waxed paper, dust with confectioners’ sugar. Best if refrigerated overnight and served chilled.

For five seasons, “House of Cards” has weaved its way through a fictional Washington D.C. exposing political games played at a high-level. urveying the field of fifth grade Dragon Youth Football players on a rainy day in Dragon Stadium, you wouldn’t immediately notice anything out of the ordinary. In fact, you may never notice. On the sidelines, incredibly accommodating coaches and referees keep an eye out. In the stands sit brave parents who won’t let their kids be stopped by life’s realities. And underneath two seperate sets of pads and helmets stand two remarkable overcomers. One is legally blind, the other deaf. Together with their teammates, they play the game, simply because they love it and because they can.

BECKETT’S STORY Not long after Beckett Ruiz was born, his parents, Bryce and Michaela, started to notice his eyes appearing to shake when he tried to focus on things. He was their third born, and they hadn’t seen anything like this with Beckett’s two older brothers, Parker and Quinn. “His eyes were shaking and they would roll up when you would change his diaper or hold him on your shoulder,” Michaela recalls. After a series of tests, it was determined that he had congenital stationary night blindness. Despite the name, his condition is not limited to vision in the dark. By five months old, Beckett was in glasses. Less than three years later, his sister, Addington, was born and displaying the same symptoms. “We didn’t have an idea of how significant the vision loss would be,” Michaela says. “When they were babies, they were responding to light and you could tell that they had vision.” Now, Beckett and Addington are ages 11 and eight, respectively, and the siblings have each been through eye surgeries and have 20/200 vision. Although that is considered legally blind in the United States, it doesn’t stop the two from doing every sport imaginable and excelling in school. Beckett is homeschooled along with his sister. The ability to set the pace and use different technology when needed has been a gamechanger in their education. They started in the fall of 2017 and haven’t looked back. Both kids are avid readers and take in all they can through their iPads, which allow them to view the text as large as needed. SOUTHLAKESTYLE.COM

“We’re so fortunate to live in this era right now with iPads because everything can be scanned in and blown up as large as you need it,” Michaela says. Between two homeschoolers, two high school students and sports for each kid, the Ruiz family stays busy. The oldest, Parker, is 17 and primarily plays lacrosse. Quinn, 15, plays football and lacrosse. Both are active in Young Life. Addington is actively involved in gymnastics, jiu jitsu and Driven fitness classes. Beckett also participates in the latter two, but his main sport right now is tackle football. “I’ve always seen my brothers play,” Beckett says. “It was super interesting, so I was just like, ‘I’ll just try it this year.’” The fifth grader is no stranger to the sport. For the past few years he has played flag football at Liberty Christian in Argyle, though even that was not without its bumps and scrapes. Beckett wears glasses and kept them on when playing flag football. However, his glasses do not correct his vision, they just magnify things a little. This resulted in a few footballs to the face, and eventually, broken glasses. When Beckett transitioned to tackle football in his first year with Dragon Youth Football, the family decided to do away with glasses during the sport altogether. “All the glasses do is make things bigger,” Bryce says. “It doesn’t necessarily clarify anything. So we decided to try without because the depth perception in tackle football can be really deceiving. If you’re trying to tackle someone and you think they’re closer than they are, it’s not going to work.” So, Beckett, with the help of teammates and coaches, is making things work without glasses. It must be working, because when asked what his favorite part of football is, he replies: “Just tackling people.” 26 • NOV 18

SPENCER’S STORY

That’s exactly what he does as nose guard in Dragon Youth Football. Despite being on the smaller side for his team, Beckett tends to excel as defensive end and, occasionally, center. “He’s quick and scrappy,” Bryce says of his son. “Everything on the line is closer in, so he can see it better.” After sitting down with Beckett’s coaches, Bryce realized that the whole team would be best-served by understanding his son’s condition and what that meant when he was on the field. “We explained to the players that when your dad is 20 yards away and throws the ball, you can see it coming,” Bryce says. “But Beckett doesn’t see it until about five feet in front of him.” The coaches were in on this as well and, according to the Ruiz family, have been incredibly supportive and welcoming the entire time. That is a huge relief for Bryce and Michaela, who were a bit wary at the idea of putting their son in tackle football. “The reassurance was how enthusiastic Coach Rudy [Renda] was,” Bryce says. “He was like, ‘This is not a problem, we’ll figure it out!’” “We’re never going to try to hold him back,” Bryce adds. “We’re just going to let him push himself. He’s played soccer, he’s played baseball, he’s played basketball...the list goes on.” When it comes to his vision, Beckett is very self-aware. He knows the risks he takes in tackle football, but when he gets knocked down, he gets right back up. Beckett can even tell you confidently what conditions will best serve his vision. “It depends on what time of day it is. At night, I’m not gonna see the football. Or if it’s really sunny outside,” Beckett pauses and points outside to the overcast day. “Right now, this would be pretty good.” Rain or shine, you’ll still find him on the field as long as there are practices or games. “I thought I’d never be able to look from their point of view and wear a helmet,” Beckett says. “It’s so cool to see the game through a helmet.” SOUTHLAKESTYLE.COM

Spencer Stables has only been in Southlake for two years, but he can still proudly recite the number of state titles obtained by the Dragon varsity football team. That’s because the Stables family lives and breathes football. On Mondays and Thursdays, Spencer has Dragon Youth Football practice. Also on Thursdays, Harrison, the oldest Stables boy, has JV games. On Fridays, they go to varsity games and on Saturdays, they go to Spencer’s games. And on Sundays? “We have a Sunday of watching it on TV,” laughs Kelli, the two boys’ mom. Spencer is in fifth grade and is on the same Dragon Youth Football team as Beckett. Much like Beckett, he is simply following in his older brother’s footsteps when he hits the gridiron each week. Harrison, a sophomore at Carroll High, has landed a spot on the JV team. It seemed like a no-brainer for Spencer to play as well. So, he slapped on a cap to keep his Cochlear hearing implants in place under a helmet and got to work. “We never want to tell him no,” Kelli says of her son. “We can’t say ‘No, you can’t do that because...’ So we just held our breath and tried to give him every opportunity to do what he wants to do.” Spencer spent his first 31 days in the NICU. After a tough first month, he received his newborn hearing screening, which revealed that he had a hearing disorder. “By the time he was three years old, he was producing words, but they were his words and you couldn’t understand him,” Kelli says. “And, bless him, there was no frustration on his part. He would tell you what he wanted and off he’d go.” Spencer was only three years old when he first underwent surgery to get hearing in one ear. By age five, he received his second implant. “It’s a blessing that there is now an option that is FDA approved that allows him to hear,” Spencer’s dad, Don, says. The implants have helped Spencer greatly in school. He is now proudly on the A/B honor roll at Durham Intermediate School. Beyond the classroom, those implants, paired with a wireless microphone that feeds into them, aid Spencer in the sport that he loves. He has played Dragon Youth Football since he was in fourth grade and loves it. His first year, he was put on Coach Rudy’s team, and this year, through the draft selection process, he was picked by the same coaches again. “Coach Rudy’s team is an amazing team and it’s a really great honor to be on the team again,” Spencer says. The fifth grader is not far behind his older brother. Harrison started playing in third grade and even played for USA Football in the International Bowl at AT&T Stadium – a program that brings 70 different countries together for a series of games and scrimmages. Spencer looks up to his brother, though that may not last long from a litNOV 18 • 27

eral standpoint. This season, the fifth grade lineman is using some Harrisons old shoulder pads, but they aren’t the pads Harrison wore in fifth grade. In fact, they aren’t even the pads he wore in sixth grade. Spencer, the biggest kid on his team, is using shoulder pads that Harrison wore in eighth grade. When asked if he is going to be taller than his brother, Spencer says, “That’s what Mom and Dad say, and Harrison is not ok with it,” as his brother simply gives a good-natured smile. Harrison has served as one of the key figures to help Spencer off the field understand what he needs to be doing. While his size gives him an advantage on the line of scrimmage, his hearing, even with the implants, still present some challenges. “In games, I really can’t hear that well,” he says. Last year, the family and coaches realized that when Spencer goes on the field, he is too far away for the implants to pick up 28 • NOV 18

the mic that his coach wears to talk to him. So, they worked out a system for the player next to him to tell him when to start the play. Now, with Spencer experimenting at center, the coaches are working on a system that will allow the quarterback to nonverbally communicate plays. “The coach who was in charge of Spencer wore the mic at all times so that he could hear what the coach was saying,” Kelli explains. “It was unbelievable, they did everything they could and made him feel like he was apart of the team instantly.” That was the family’s experience from the start: accommodating coaches who would do anything to get Spencer on the field. “I can’t speak more highly of the coaches, as a mom, knowing that this won’t define him,” Kelli says emphatically. “To have our first experience be so amazing and get personal notes from the coaches about how they love having Spencer on the team, it’s just amazing.”

C O M R A D E R Y AT T H E C O R E With their youngest boys on the same fifth grade Dragon Youth Football team, the Stables family and Ruiz family have remarkably similar messages. They won’t let medical conditions stop or define their sons. Both sets of parents acknowledge that this is easier said than done, but they also point to one program that helped them all rest assured. The Dragon Youth Football coaches didn’t just accept the boys, they enthusiastically welcomed them to a team. “It was a great opportunity to become better as a coach, as a parent, as a mentor,” Coach Rudy says. “I thought it was a great opportunity for our team to come together and figure out how to not only enhance the experience for our players, but to improve our communication skills, our listening skills and improve in a lot of aspects that you take for granted everyday.” Much like Kelli, Beckett’s dad continually voices his appreciation for DYF welcoming his son. “For a program that’s so competitive and that has so much history, it is so forward thinking that it is about the broader experience for all of these kids,” Bryce says. As for Spencer and Beckett, they have a special bond. At one point, Coach Phillip Odette asked Spencer what his job was for gameday. “‘To be strong, to be fast,” Spencer replies. “No Spencer, your job is to truck everybody in front of you and protect Beckett,” Coach Phillip says. This job isn’t limited to gamedays. “When they had DYF run onto the field at Dragon Stadium, I told Spencer, ‘Hey, don’t let anyone run over Beckett,’” Bryce recalls. “And Spencer was like, ‘No, he’s mine. If anyone tries to knock him over, I’ll kick their butt.’” They make quite a pair, the smallest and largest player on the team. One thing is for sure, Beckett and Spencer both love the game, and they won’t let anything get in the way. “They’re humble; they’re great teammates; they’re courteous; they’re great listeners; they’re competitive,” Coach Rudy says. “Spencer never misses a beat. And Beckett? He’d never say anything about his challenges because he doesn’t put limits on himself. That’s the kind of people these kids are. CARROLL SENIOR HIGH SCHOOL PTO HOSTS 26TH ANNUAL CRAFT FAIR Get in your holiday shopping while browsing an array of local artisans by stopping by the Southlake Carroll Senior High School PTO Craft Fair on November 3 and 4. Booths boasting jewelry, crafts, home décor, clothing and specialty foods will set up around the high school. There is an admission fee, $5 for adults and $3 for children, and those proceeds will benefit the PTO’s Project Graduation, which provides a drug- and alcohol-free celebration for graduating seniors each year.

CARROLL DRAGONS CELEBRATE 10 YEARS OF PINK OUT GAMES October 5 marked a decade of the Dragon Pink Out Game. Each year, Dragons and their fans have donned pink in honor of National Breast Cancer Awareness Month. This year was no different, as the festive color reflected from the stand during the district opener against the Denton Guyer Wildcats at Dragon Stadium. The Pink Out game aims to raise awareness of breast cancer and funds to fight it. Former CISD student Amy Moan started the tradition in 2008. Carroll ISD raised money during Pink Out month by offering employees the chance to wear jeans with pink shirts every Thursday during the month of October. The funds raised were donated to the Susan G. Komen Foundation. A donation was also taken at the game for the same nonprofit. CHAMPIONS CLUB TO OPEN IN FEBRUARY Local gym enthusiasts will have to wait until next year to take advantage of Southlake’s Champions Club. The facility will not open as planned in December due to the past month’s weather. The city has now announced an anticipated opening of February 2019.“September’s heavy rain is the reason Champions Club at The Marq will not open until February,” Public Works Director Rob Cohen says via email. “The contractor was not able to complete work on the exterior finishes, parking, sidewalks, landscaping, splash pad and the outside field because of the weather.” Community Services Director Chris Tribble says that this delay will not affect any of the city’s Parks and Recreation offerings.

SOUTHLAKE CARROLL LACROSSE ASSOCIATION WELCOMES NEW HIRES The Southlake Carroll Lacrosse Association (SCLA) recently welcomed the new Boys Program Director and High School Head Coach, Bruce Frady. Bruce has been a member of the lacrosse coaching staff at the University of North Carolina-Chapel Hill, as an Assistant Coach to Head Coach, Joe Breschi, from 2016 through 2018. Bruce also served as the Director for 3D Northern California from 2014-2016, and the Associate Head Coach at Quinnipiac University in Hamden, Connecticut from 2005-2014. In addition, Bruce also spent two seasons on the staff at Fairfield University. As a player, Bruce was a goalie at Division III Eastern Connecticut State University. Also joining the staff are Joe Gillis, a former D1 player for Syracuse University, and Zach Price, a former D1 player for High Point University, both now in the MLL with The Dallas Rattlers. RAIN DOESN’T DAMPEN SOUTHLAKE CARROLL HOMECOMING CELEBRATION While the weather did move Carroll’s homecoming carnival and pep rally indoors, it didn’t dampen the Dragon spirit. Students, alumni, families and fans came out to Carroll Senior High School on October 17 to pump up the crowds before the homecoming game against the Fossil Ridge Panthers. That mojo must have worked because the Dragons walked away undefeated 47-26 despite the game night’s weather. It wasn’t Riley Dodge’s first Carroll homecoming victory, but it was his first one as the team’s head coach.

THE FAMILY PLACE HOSTS ANNUAL PARTNERS CARD FUNDRAISER AT STARPOWER The Family Place, the largest family violence nonprofit in the state, hosted a preview party for their annual Partners Card on Wednesday, October 3. Locals came out from 6 to 8 p.m. to enjoy light bites and delicious drinks while exploring the amenities at Southlake’s Starpower. They learned more about the stores and businesses participating in the event and had a chance to speak with the fundraiser’s chairs. The fundraiser itself kicked off October 26 with a 10-day shopping event that gave participants a 20 percent discount from more than 750 participating retailers across the Metroplex. The 2018 fundraiser will conclude on November 4. Over the past 25 years, this event has raised more than $18 million to support the nonprofit’s efforts. THE MICHAEL J. FOX FOUNDATION FOR PARKINSON’S RESEARCH HOSTS INAUGURAL TEXAS CYCLING EVENT IN SOUTHLAKE Break out your biker gear and get ready to pedal closer to a cure for Parkinson’s at the Michael J. Fox Foundation for Parkinson’s Research first Texas

cycling event on November 3. The Tour de Fox will hit five stops across the United States and Canada to bring people from across the continent together to help find a cure for Parkinson’s disease. The ride, which is expected to see around 500 cyclists, is expected to raise more than $300,000, and 100 percent of the proceeds will go directly to MJFF’s research programs. Locals can come out to Bicentennial Park and participate in the long ride – a 60-mile ride, the medium ride – a 45-mile ride, the short ride – a 20-mile ride – or the petite ride – a 10-mile ride. Locals of all ages and speeds are invited to be a part of this first-ever event. LOCAL HISTORICAL SOCIETY HOSTS ‘GHOSTS OF SOUTHLAKE PAST’ Take a walk with a bit of Southlake’s history by heading over to the fifth annual “Ghosts of Southlake Past” on November 3. Hosted at the Hood Cemetery, this event will feature actors who will bring these deceased characters to life: Early settlers, outlaws and Civil War soldiers are set to haunt the tour. Tickets are available at two different times – 4:30 and 6 p.m. – on their website: SouthlakeHistory.org. But the sushi eatery did not limit the party to one day. Specials were offered for the entire month of October. It was a fitting time for RA to unveil its new, limited-time-offer Spiked Sake Roll. The unique sushi roll features tuna that has been infused with sake. How infused is it? Well, you have to be at least 21 years of age to order the roll. hanksgiving reminds us all to slow down, spend time with loved ones, take stock of what’s important and reflect on the past year. While for some that can easily be done sitting down around the dining room table passing plates full of sides and an ample turkey, other Tarrant County families don’t have that luxury. According to the USDA’s 2017 Household Food Security report, 11.8 percent of Americans are food insecure, meaning they are living without consistent access to adequate food. That includes 4.5 percent of households in the country who have very low food security, or that the family’s eating patterns are disrupted based on a lack of resources and access to proper meals. The same report finds 14 percent of Texan households experienced food insecurity last year and 5.8 percent of households had very low food security. NOV 18 • 55

One restaurant in Fort Worth is actively fighting against those numbers. Taste Community Restaurant, Texas’ only nonprofit paywhat-you-can restaurant affiliated with One World Everybody Eats, opened its doors for its first dinner service last Thanksgiving. Their mission: provide Tarrant County families with a meal they could depend on. Since then, the restaurant has served thousands of diners without knowing or asking about their financial status. Each customer is treated the same – like a valued patron – irrespective of their circumstances.

CALLED TO THE CAUSE Taste Community Restaurant’s founder, president and chef Jeff Williams knows the pressures families can face when struggling to put enough food on the table for the whole family. He was raised food insecure. Both of his parents worked tirelessly to put food on the table for him and his sister. But there were days when his parents would have scarce options or would skip meals altogether so their own children could eat. That memory of food insecurity stayed with Jeff, so much so that he joined in the culinary industry and started a nonprofit focused on feeding people one plate at a time. Jeff stayed close to food by taking jobs in restaurants from a young age. He did everything from host to bus to expedite the back of house growing up. He learned restaurants’ ins and outs and saw what made a successful experience for diners. As an adult, Jeff rejoined the food world after he left the IT business and became a

cumstance,” Jeff says. “Just because we are helping people out doesn’t mean we have to sacrifice on anything.”

CALLING OUT FOR SUPPORT Taste Community Restaurant is designed to provide 20 percent of its meals to those in need thanks to the other 80 percent of diners. But as more people in need started hearing about the nonprofit, that ratio crept closer to a 50/50 split over the summer. That may seem like a problem at first, but Cerreta reminds people that it takes a few years for any restaurant to get up and running. “My thing has always been asking were we making a difference, not making a profit,” Cerreta says. “It takes time for people to put you in their rotation and get that word of mouth going.” Jeff and Julie are filling a need in the community, and they are taking the initiative of hosting creative event series in hopes to bring in more customers who can afford to pay more than they typically would. In September, they brought in local celebrity teams, like city council members and TCU athletes, to serve their guests. Julie says, however, finding willing volunteers has never been an issue for them. The restaurant’s team relies on daily “Taste Buds,” the volunteers who make up 80 percent of Taste Community Restaurant’s everyday staff. This includes greeters, line cooks and everyone in between. “I always thought it would be hard to get people to come in and serve,” Julie says. “I was surprised how many people sign up, get excited, have fun and come back.” These shifts are hard work. Anyone who has held a server job knows running food and clearing tables can get tiring. Julie guesses each of her volunteers walks 2.5 miles per day just from bustling around the restaurant. But Julie says her volunteers keep coming back because they can see how they add value to the nonprofit and can interact with people who benefit from their efforts. 60 • NOV 18

“There are plenty of volunteer opportunities that are easier,” Julie says. “They are able to see firsthand who they are helping and speak to them on a one-on-one basis. That goes a long way.” Other than volunteers, the nonprofit runs just like every other Near Southside eatery. Taste doesn’t take food donations. They present picturesque plates. And they are successful when they have repeat customers who want to come back and try new things on the menu. “Having other restaurants nearby helps us,” Julie explains. “I think it’s similar to how restaurants around Southlake help each other. You decide on the destination area and then see exactly you want to eat.” Julie knows the area’s strong communal energy makes Taste Community Restaurant possible – whether it be through their regular volunteers or diners. “We love the people of Near Southside,” Julie says. “Almost all of our volunteers are the folks living in the area, but we welcome volunteers from all over the Metroplex.” While the restaurant still hopes to rise closer to that 80/20 ratio as they build up their brand, the concept is gaining traction that’s giving room for more nonprofit restaurants to open up across the country. And the Williams family is at the forefront of that grassroots movement. Julie recently joined the One World Everybody Eats board and Jeff works closely with the nonprofit to mentor other proposed cafes across the U.S. Reflecting on what the past year of business – and the five years it took to create Taste Community Restaurant, Jeff knows he is making an impact. He just thinks about how a restaurant like this would have benefited his own family. “I always look back at how I wish a place like this would have been there for my parents,” Jeff says. “I get that warm and fuzzy feeling that we are able to be there for people like that. I would say it feels pretty amazing.” Taste Community Restaurant is the local resource for those in need and those who want to give back while eating out. So instead of running rampant around town and getting overwhelmed by it all, spend some quality time with your special someone by planning a fun date night. For chic cocktails and delectable dishes all served in a modern, sophisticated environment, Dallas’ Smithy is a must. The posh yet approachable eatery, created by the team behind downtown’s The Woolworth, offers something fresh to the KnoxHenderson area.

As soon as guests step out on the strip, they will be greeted by the restaurant’s lively patio. The industrial chic décor and floating planters add a touch of renewed energy to the space. After walking past the exposed brick and wood accents, guests will find themselves in a strong interior featuring exposed ceiling beams and intricate graphic murals. Smithy’s sleek bar runs down the restaurant just as reminder of all the cocktails that await. “Above all, we want the diner to feel comfortable from beginning to end,” co-owner Brandon Luke says. “It’s our job to make sure the entire experience is a good one from the moment they step out of the valet to the moment they leave.” Their drink list boasts a variety of reds, whites and bubbles as well as local drafts and

bottles, but it’s the fine spirits that shine. Sail away in style with the Lost at Sea, a mix of bourbon, spiced rum, lemon, copra nectar, coconut and Topo Chico topped with toasted coconut. Or for a sweeter fix, try the That’s My Jam, a fusion of Lillet Rose, vodka, lemon and strawberry jam garnished with shaved cucumber. On a health kick? The Healer, a combination of gin, lime juice, healer syrup and apple-ginger kombucha, leaves that acidic finish kombucha-lovers crave while also providing balanced citrus flavors. After taking in a few sips, or a few drinks, Smithy’s small plates let couples order a sharable spread to try a few of their signature dishes. While the menu lists off an array of old time favorites, they elevate each plate with intricate flavor combinations and bold ingredients from around the world – like the Crab Nachos, taro chips topped with blue crab, jalapeno, heirloom pico, avocado butter and Sriracha aioli. “Executive Chef Ronald Von Hatten continues to create unique twist on classics,” Brandon says. “Though our mission is to offer a casual yet refined environment with elevated ingredients.” The queso stands apart from other cheesy dips. Sure, it features Mexican cheese, sweet tomato, onion, roasted jalapeno and habanero, but it also can come with tenderloin and pecan bacon elevating an already great starter with a hearty topping. To get that fresh finish, try the Nicoise, an arugulabased salad topped with Ahi tuna, haricot verts, fingerling potatoes, eight-minute eggs, olives, sun-dried tomatoes, capers, anchovies and poppy seed vinaigrette. While these may seem like lighter ingredients, this packed plate is more than enough to keep you satisfied. Their zoodles, topped with extra virgin olive oil, roasted garlic, basil, heirloom tomatoes, sherry, pecorino, white balsamic, wood-fired chicken and French bread, also prove healthy can be tasty. The Pig and Pear 2.0, a toasted panini with Niman Ranch pork belly, arugula, Texas tomato, pear chutney, pepper slaw and Sriracha mayo, may seem like just another sandwich, but its balance of spice, sweet and crisp flavors keeps diners coming back for another bite until it’s gone. It’s a rather large handheld, so it’s surely enough to conquer the biggest of appetites. “Our belief was that people are looking for more casual but elevated offerings these days,” Brandon says. “We wanted to serve great food in a nice cozy atmosphere.” For a bit more finesse at the end of the meal, their Bacon Crunch Bar, chocolate ganache, homemade nutella, peanut butter-praline paste, feuilletine, bacon served with salt and pepper ice cream, comes out just as scrumptious as it tastes. Pair it with a Night Rider Nitro Brew, and sit back knowing you’ve treated yourself to a refreshing and memorable night out.

Innovative Ice Cream Creamistry Joins Southlake’s Dessert Scene The coolest way to enjoy ice cream is landing in Southlake this month. Creamistry, a made-to-order liquid nitrogen ice cream shop, is disrupting the sweets scene with its engaging production value and creamy flavors. Each scoop is handcrafted using the freshest ingredients to create a standout dessert. And with more than 60 flavors and toppings, guests can design new desserts with each visit. For those who haven’t visited one of Creamistry’s three other DFW locations, come prepared for a chilling experience. The customized treats transform before patrons’ eyes when their trained team adds the -321-degree liquid nitrogen into the mix. While it produces quite the spectacle, filling the store with an enchanting fog that excites kids and adults alike, the desperately cold product is actually used to create a creamier dessert by instantly freezing all of its ingredients in a mixing bowl. It gives the ice cream its rich flavor and velvety texture. While some may be skeptical of this process, Creamistry’s team assures fans that their sweets are totally safe to eat. The finished ice cream has no liquid nitrogen in it, so you can sit back and relax knowing there is no threat of a possible health hazard. “With our ice cream and process, we ensure that all the nitrogen is evaporated from the ice cream before serving the customer,” DFW franchise owner Aamir Rajani explains. “The customers can also see this while we are making it. We have an extra mixing process before scooping the ice cream that will get rid of all the nitrogen in the ice cream, making our product completely safe to consume.” Ice cream lovers have an array of decisions to make to create their one-of-a-kind treat. First, they choose their dessert of choice – regular ice cream, a Nitroshake or an ice cream sandwich – and the base they want to enjoy. Creamistry offers a signature mixture as well as organic, non-dairy and vegan options for those who may have dietary restrictions. Then, customers choose their favorite flavor. The selections range from classics like vanilla and chocolate to more unexpected offerings like matcha green tea, birthday cake and cereals. “My personal favorite has always been the Fruity Pebbles ice cream,” Rajani says. “Our cereal ice creams really set us apart from other ice cream stores. It literally tastes like you’re eating a frozen bowl of cereal.” Finish your creation with a few toppings, including an assortment of candies, nuts or sauces, or upgrade your scoop with a waffle, brownie or chocolate bowl. No matter what path you choose, the end result is the same: A dessert that will make you smile.

sweet and Spicy This Martini Brings The Season’s Colors To Life Take in the season by embracing fall’s colors, whether it be autumn’s changing foliage, the season’s baked foods or the variety of lively libations that warm up drink menus everywhere. Find your season’s go-to drink by heading over to Keller’s FnG Eats. Their farmto-table approach carries through to their cocktails – like the Blood Orange Chili Martini made in-house with bold fresh fruits and vegetables. After one sip, you’ll fall in love with this spirited mix.

INSTRUCTIONS: Take one liter of choice of vodka – FnG Eats uses Tito’s Handmade Vodka because, “We’re Texan” – and pour it into a glass pitcher that can be covered. Add half of a jalapeno, half a poblano pepper and half of a red bell pepper – no need to remove the seeds or chop the produce. Cover the container and let it sit for a full day. Then, remove the peppers and strain the vodka to remove any seeds left in the container. Create your citrus blend by combining one cup of blood orange juice, 2/3 of a cup of agave nectar, 2/3 of a cup of grapefruit juice, 1/3 of a cup of fresh lime juice, 1/3 of a cup of fresh lemon juice and 1/3 of a cup of simple syrup. This is enough to make eight martinis with three ounces going into each drink. After finishing your prep, pour 1.5 ounces of the infused vodka and three ounces of the citrus blend into a tin shaker over ice. Shake vigorously before straining the mix in a chilled martini glass.

Are We There Yet? Highway Havens That Make Your Thanksgiving Travels a Treat

T

hanksgiving break is an awkward length that doesn’t always justify the time, price and struggle of air travel. If your family is among the many that will hit the highways this November, then you’re probably already bracing yourself for the road ahead. We have provided a small guide to stops en route to the other three major metropolises of Texas. Each stop is less than a mile or two off of the highway and is guaranteed to prove better than the average rest stop. So buckle up and prepare for some pre-Turkey Day calories. Spoiler alert: Most of these are coffee or pastry stops to keep you adequately fueled. It should also be noted that these breaks were curated with the assumption that you’ll travel down IH-45 to get to Houston and IH-35 to end up everywhere else.

Destination Austin About a three and a half hour drive from the Dallas area, barring traffic and stops, the trip to Austin still earns you a stretch break or two. And you’re in luck, because we’re providing you with just that. First on the list is a Texas staple: Kolaches in West. As you should well know by now, kolaches are a traditional Czech pastry that is made of a delicious fruit filling surrounded by puffy dough. This is not to be confused with a Klobásník, which contains meat. Either way, both baked goods are in ample supply in West, a small town about 20 minutes north of Waco. If you’re looking for a quick stop and a chance to fill the gas tank, the obvious choice is Czech Stop. The pastries are easy to find but so are the crowds. If you don’t mind going a little further into town, try out the Village Bakery, which is rumored to have the best kolaches in Texas.

If you’re holding out for the true halfway point between Dallas and Austin, then a stop in Waco is in order. Nestled right off of IH-35 and one block from Baylor’s campus, a coffee shop called Common Grounds serves up some quality coffee drinks. If you’re tired from the drive, try out the “Sleep is Overrated” menu. Drinks on this list reach up to four shots of espresso. Destination San Antonio We’ll keep this list narrowed down to stops between Austin and San Antonio. For anything before that, see the above section. If you choose to take TX-130 to avoid hitting downtown Austin traffic, we applaud your forethought, but if you take it all the way down, these stops will not apply to you. We’re sticking to IH-35 finds. Only 45 minutes south of Austin, San Marcos offers a host of tempting pit stops. You won’t run out of fast food eateries. Thankfully, downtown San Marcus is a few blocks off of the highway and has all of the quaint offerings of a traditional Texan town square. Tantra Coffeehouse is right off of the square and has the kind of eclectic vibe you could expect from a river town, college town combo. While the coffee is the main event, don’t look past the sandwiches and tacos. In the midst of these tasty treats, you’ll find plenty of vegan options that even meat-eaters would enjoy. Twenty minutes down the road, you’ll encounter New Braunfels, a town that is deeply connected to its German heritage. With that in mind, the name of this next stop should come as no surprise: Gruene Coffee Haus. Gruene (pronounced green) is the historic part New Braunfels that serves as its downtown and tourism district. It is there that you will find this wunderbar coffeehaus. Destination Houston Between Dallas and Houston, you will find… a Buc-ee’s. Alright, fine, our list doesn’t end there, but in comparison to the trips listed above, you will discover that IH-45 was paved in moderate wilderness. That said, there are some real gems en route to the land of traffic worse than our own. Corsicana, one of the larger cities on the way, is home to a surprisingly hipster coffee shop: Mita’s Coffee Lab. This stop will entice you to stay a while, as the atmosphere exudes calmness. But even if you can’t enjoy a matcha latte in the exposed-brick haven, the coffee menu should be enough to steer you a little further off the highway. Next up is Fairfield. If you’ve been paying attention to the billboards so far, you saw this one coming. Cooper Farms Country Store allows you to fuel yourself and your car. Shelves of delicious preserves, pies, breads, cobblers and more will have you feeling like you traveled back in time. Fill up on nostalgia and fresh produce and brace yourself for the traffic ahead. Snow, Santa And Sparkling Lights! Feel Like A Kid Again At Southlake’s Home For The Holidays Annual Tree Lighting

W

ho says you have to eat turkey before celebrating the magic of Christmastime? Southlake’s Home for the Holidays Annual Tree Lighting kicks off the holiday season a week before Thanksgiving this year, so you can enjoy holiday festivities even longer. At this free event, it doesn’t matter what the Texas weather decides to bring — snow is guaranteed! Build a snowman with the family using a mound of really cold faux snow (make sure to bundle up!), or glide down a four-lane snow hill on blown up tubes. Later, listen to the Christmas carolers sing while sipping on hot cocoa and eating cinnamon-roasted nuts, decorate an ornament with the kids or ride in a romantic horsedrawn carriage around Southlake Town Square. At 6 p.m., twinkling lights will make the square glow at the popular Tree Lighting Ceremony. Admire the stunning tree, then help the little ones write letters to Santa — or take pictures with him!

Of course, it wouldn’t be the holiday season without the spirit of giving back in the air. During the annual event, the City of Southlake encourages everyone to donate to the Christmas is for Children Food Drive by bringing canned food items, non-perishable food and cereal. CIFC is a nonprofit organization that is focused on providing children with the love, care and joy that make up the spirit of Christmas, and it has helped more than 42,000 children over the past 27 years. If you can’t make it to the annual tree lighting, there are many other drop-off locations around Southlake, which will take donations until December 15. Being home for the holidays is always wonderful — especially when your home is Southlake, a city where it’s easy to make lifelong memories with friends and neighbors. The Pumpkins Are Back Return To Autumn At The Arboretum This Year For An Adventure In Neverland

everland isn’t so far away — just follow the trail of pixie dust and smell of fresh vegetables to the 13th annual Autumn at the Arboretum, where you will find a spectacular display of fall flowers, pumpkins and more arranged in a magical “Adventures in Neverland” theme! The Dallas Arboretum’s annual fall festival features a burst of red, orange, yellow, white and tan colors that are best described by breaking down the numbers: 4,500 Chrysanthemums, 150,000 fall-blooming plants and more than 90,000 pumpkins, squash, gourds, cornstalks and a hay bale maze inside the internationally acclaimed Pumpkin Village. This year’s fairytale theme will showcase scenes from the book “Peter and Wendy” by J.M. Barrie. You’ll start the adventure in London, where Wendy Darling and her brothers are dreaming about adventure, and follow the Darling kids and Peter Pan through their journey in Neverland to see the Lost Boys hideout, Captain Hook’s pirate ship, Tick-Tock the crocodile, Tinker Bell’s home and more. Snapping beautiful fall photos isn’t the only thing you can do in the gardens. Autumn at the Arboretum also hosts many events and activities throughout the season for people of all ages. Little ones can catch a showing of Walt Disney’s “Peter Pan,” meet animals from the Dallas Zoo, stop by the face painting stations and listen to story time. Adults will love the Garden to Table Dinner by Wolfgang Puck Catering and chef demonstrations spread throughout the event. FORMER PRESIDENT OF TARRANT COUNTY COLLEGE NORTHEAST SHARES HIS JOURNEY OF OVERCOMING CANCER

W

hen it comes to volunteering and involvement in various organizations and charities, Dr. Larry Darlage has most people beat. He was on the original American Cancer Society Tarrant County Board for more than seven years and will be serving as honorary chair in the first American Cancer Society Cowboy Christmas event later this month. As a cancer survivor, he is deeply passionate about finding a cure. Dr. Darlage has a fascinating past as an educator and continues to teach as a substitute at Crown of Life Lutheran School in Colleyville. He and his wife of 51 years, Mary, have been happily living in Southlake for 22 years.

I ORIGINALLY THOUGHT THAT… I wanted to pursue employment in a chemical industry, but I changed my mind after my postdoctoral experience. I chose education and never regretted it. I SPENT ALL OF MY TIME DOING RESEARCH… when I was at the University of Florida in a postdoctoral position. It was not as exciting as I had thought. I remembered that when I was a graduate student at Iowa State, I got a lot of satisfaction from teaching and a great deal of positive feedback. So, after I finished my postdoctoral research, I pursued a teaching position and landed one at Pikeville College where I taught organic chemistry to students interested in going to medical school and dental school. MY WIFE AND I MET… in college – French Class. We started dating while we were still in college and got married two weeks after graduation. I started graduate school two weeks later after a brief honeymoon in Michigan. We have been married 51 years! I WAS PRESIDENT OF TARRANT COUNTY COLLEGE NORTHEAST… for 18 years, beginning in 1996. One of my goals at TCC NE was to make the college a real part of the community. I became an active member of local chambers of commerce and other organizations. When these organizations sought out places to have meetings, I offered up the college. I helped start an annual meeting called the Heart of North Texas, which still meets today.

THE BEST PART OF THE JOB… was working with the faculty and students. I still taught a chemistry course every other year. I AM A… cancer survivor – prostate cancer. It was discovered as a result of my regular annual physical exam. My PSA number started to climb, and my physician recommended that I get a biopsy. The biopsy showed that I had a malignancy. I chose robotic surgery, but my surgeon told me that the cancer had broken through the membrane. I had radiation treatments and am now on medication to keep my PSA low. I AGREED TO BE THE HONORARY CHAIR … of the upcoming Cowboy Christmas event when event co-chair Teresa Rutherford called me and asked me. We are good friends, and we served on the original American Cancer Society Tarrant County Board together. As a result, she knew that I am a survivor and that both of my parents died of cancer. I have a real passion about finding a cure for this disease and hope that more progress can be made in my lifetime I WAS PART OF THE ORIGINAL… American Cancer Society Tarrant County Board for about seven or eight years. I am still active in the Colleyville Chamber of Commerce as past-chair and a co-chair of the Colleyville Leadership Group this year. I am a Rotarian and am past-chair of the Metroport Rotary Club. I helped start up the Colleyville Executive Organization several years ago and still am a member. I am a member of the Northeast Leadership Forum that I have belonged to for over 20 years and, also, am a part of the Tarrant County College Retirees Association.
