Fall, with the Works Some people think magazine editors traipse from restaurant to restaurant, eating amazing food and hobnobbing with chefs all day. It’s only partially true; we still have a desk job. But when proper research for a Local Flavor story requires sampling, sipping and/or devouring the latest dishes, I step up to the plate. And if that means swooning over a transcendent trio of tacos, no one has to twist my arm. Who doesn’t love food? More specifically—good food. Food that makes you scoff at the notion of a doggie bag. John and Ralph DeVivo know what I mean. For these local brothers, business partners and chefs, great food is their passion. It’s why they fashioned Hook & Ladder Pizza Co. out of a fire truck, and then opened DeVivo Bros. Eatery in Keller and more recently, DeVivo Bros. Latin Fusion in Southlake. John told us of his and Ralph’s dream: “Like some girls might talk about their weddings, we talked about opening our own restaurant.” That’s passion. The DeVivos are proof that it’s not just ingredients that make good food; it’s people. See their story on page 27, and then feed your appetite by exploring our hearty selection of restaurants in the pages ahead. When you count Meatloaf in this month’s Media Room, we serve up a grand total of 46 foodie finds. A passion for pleasing the taste buds doesn’t stop at the plate. The brewmasters in our feature on page 58 put their heart and soul into every batch of craft beer. As we launch into the season of Oktoberfest and limited-edition brews, take a closer look at the craft beer craze (and maybe hop over to a local brewery or taproom for some suds and scenery). The fall season also means it’s officially time for some football. We sat down with Hal Wasson, head football coach for Southlake Carroll, as he kicks off his 10th season leading the green and white. If there’s one thing you can count on, it’s this: The season is going to be crammed with as much excitement as any Dragon fan can tackle. Flip to page 64 for our Q&A with Coach Wasson. Enjoy This Hearty Serving As a musician in touch with his fans—and sometimes critics—Meat Loaf is a self-professed born and bred Texan who uses his Facebook page to connect with his audience. Not only a source for instant information, the page is a platform for open discussion between the artist and his followers. We learned most of what we know about his latest album, “Braver Than We Are,” from Meat Loaf’s social media presence, and it’s everything fans have come to expect from the rocker with the ravaged voice. The album is Meat Loaf’s fourth to feature tracks solely written by John Steinman, who said of the new album, “It’s one of the greatest works of art I’ve ever been involved in.”

SOUTHLAKE NATIVE TOOK FIFTH PLACE AT WALLEYE TOURNAMENT Southlake resident Benjamin Kehoe and Troy Nelson of Lombard, Illinois, placed fifth in the Cabela’s Masters Walleye Circuit’s Green Bay tournament in July. The duo won $2,100 plus $2,550 from the option pot for their 44-pound, six-ounce total. The tournament awarded $49,890 in cash and prizes. A total of 66 teams with fishermen from 10 states and one Canadian province, participated. The 2016 tournament schedule includes seven qualifiers in six states on a diverse selection of the Walleye Belt’s finest rivers, inland lakes and big-water fisheries.

NORTH TEXAS GIVING DAY RETURNS FOR EIGHTH YEAR Start making a list of your favorite nonprofits: The eighth annual North Texas Giving Day is scheduled for September 22. The event is an opportunity to celebrate your favorite nonprofits by giving back. In the past seven years, the single-day event has pumped more than $119 million into local nonprofits. The event has also broken four national giving-day records since 2009. This year, community events featuring nonprofit performances, food and hands-on kid-friendly activities are being planned throughout the region, all while donations of $25 to $50,000 can be made 6 a.m. to midnight to more than 2,000 certified nonprofits listed on NorthTexasGivingDay.org. This year, the ALA has chosen “Two If By Sea” by Jacquelyn Mitchard, the award-winning and bestselling author of 23 diverse reads. The event kicks off at 2 p.m. at the Keller Public Library where Mitchard will present her work, answer some questions and then autograph books. DRAGONS COMPETED AT USA WATER POLO NATIONAL JUNIOR OLYMPICS In July, members of Dragon Water Polo competed at the USA Water Polo National Junior Olympics. The competition is the largest age group water polo tournament in United States. Dragon athletes included Matt Hahn, Sean Murphy, Zachary Lowery and Nate Winkler. These athletes competed in the highly competitive 18U division and placed 24th in the Platinum division. This is the highest an 18U men’s team from Texas has placed. On the girls’ side, Thunder Water Polo sent Lady Dragons Katie Nedrow, Erin Weisert, Ana Warner, Sophia Torres, Gabi Gervasi and Sydney Jones. Future Lady Dragons included Olivia Jones and Ashley Chand; both girls attend seventh grade at Dawson Middle School. The 18U team placed 17th; the 14U girls placed 15th in the Gold division. The 16Us placed 19th in Platinum division.

Head to the Grapevine church October 1 for the annual Community Fest, benefitting the Grapevine Animal Shelter and St. Francis Outreach, which provides assistance to more than 1,200 families. The fun gets underway at 8:30 a.m. with a breakfast, pet adoption and garage sale. Stick around for the afternoon activities including games, bounce houses, face painting, bingo and a hot dog lunch. Stay and play all day, and then reserve tickets for the Italian dinner at 6:15 p.m. Tickets can be purchased at the event. REED BROWN NAMED BOYS TRACK AND FIELD ATHLETE OF THE YEAR Carroll track and field distance runner Reed Brown has been no stranger to success over the past two years, and just recently, he capped those successes off with being named Boys All-Area Track and Field Athlete of the Year. The award comes as no surprise to a Dragon community that witnessed the upperclassman make Texas high school history in the 3200-meter in May. Brown became the fastest to ever complete the race at the state championship meet, running the two miles in 8:52.34. The record remained unscathed since 1987, when Conroe McCullough’s (now The Woodlands) Eric Henry broke it last.

TODD CARLTON JOINED CARROLL ISD SCHOOL BOARD In July, the Carroll ISD school board appointed Todd Carlton as the newest Place 6 trustee. Carlton fills a vacancy left by Matt Kormann who served one three-year term and had been elected to another three-year term before he resigned due to a family relocation. Carlton will serve until the 2017 election, at which time he can seek reelection to complete the remainder of the three-year term. DRAGON PITCHER MATTHEW CANTERINO HONORED AS CO-PITCHER OF THE YEAR Dragon Baseball accrued several all-district honors during the summer. Topping the group was senior pitcher Matthew Canterino, who was named co-pitcher of the year for District 7-6A alongside Coppell’s John Kodros. Canterino, who will continue his career at Rice, went 7-1 with a 0.64 ERA. Additional first-team Carroll selections included junior pitcher Kole Ramage, senior shortstop Hudson Sanchez and senior left fielder Zach Farrar. Catcher Ross Cadena and junior right fielder Jake Murphy made the second team. The Dragons went 24-9-1 (11-2 in the district) in 2016 and were ranked 25th in the state by MaxPreps. CARROLL GRAD LAUNCHED VITAMIN SUBSCRIPTION COMPANY Nik Hall, a 2012 graduate of Carroll Senior High School, wants to make daily vitamins easier to swallow. His company, vitafive, delivers gummy vitamins to customers’ doorsteps in a four-week supply of daily-dose packs. vitafive’s customers can choose between eight different gummy vitamins, plus kid’s health packs catered towards children ages five to 12. A four-week subscription costs 50 cents to $1 per day.

SOUTHLAKE NAMED ONE OF THE SAFEST PLACES IN TEXAS There are more than 1,200 incorporated cities in the state of Texas, and Southlake rose to the top as one of the safest. Southlake is No. 22 on ValuePenguin’s ranking of the 217 safest places in Texas for 2016. To determine rankings, ValuePenguin analyzed the most recent FBI crime statistics by city. Safest cities were categorized into towns with populations between 10,000 and 20,000; midsize cities with populations up to 50,000; and large cities with populations greater than 50,000. Southlake shares the safety accolade with other nearby towns: Colleyville (No. 1 in the mid-sized category), Trophy Club (No. 2 in the small category) and Keller (No. 4 in the mid-sized category). KATIE PARR MUSIC ACADEMY ENTERTAINED, RAISED FUNDS AT SING FOR THE CURE Southlake’s Katie Parr Music Academy, the academy that discovered Demi Lovato, Radio Disney personalities and others, hosted the sixth annual Sing for the Cure performance series last month. Performances were held at il Calabrese and Del Frisco’s Grille. Funds raised benefitted the Susan G. Komen Foundation. Sing for the Cure 2016 featured performers included Madeline Baek, McKenzie Bergen, Aria Besse, Aidan Mondress, Sierra Repsky and Aashni Thakkar along with recording artists Chloe, JaShaun, Sienna and Madi Wheeler.

THE GODDARD SCHOOL’S AVIATION WEEK SOARED TO EXCITING HEIGHTS For preschoolers at The Goddard School in Southlake, aviation is spelled f-u-n. Last month, the school wrapped up a weeklong aviation campaign designed to take S.T.E.A.M. (science, technology, engineering, art and math) learning to new levels. Southlake resident and commercial pilot Cathy Almand visited the school wearing her military pilot uniform and gave preschoolers the chance to try on actual pilot gear. Students also got hands-on with aviation crafts and paper-airplane flying. The week culminated in an Open House that included an opportunity for families to climb on board a helicopter and watch it take off. The activities were designed to support critical-thinking skills and collaboration as well as foster a love of S.T.E.A.M. and teach learning through play.

SHANNON BREWING CO. HOSTED SECONDANNIVERSARY BASH Last month, Shannon Brewing Co. in Keller commemorated two years with a day of live music, fun, revelry, and of course, great brews. Partygoers packed the newly covered beer garden to sip limited-release brews and beloved seasonal beers reserved especially for the party. Guests dined on barbecue, street tacos and burritos while ice-cold popsicles from Steel City Pops kept everyone cool. LOCAL MOMS OPENED LICE TREATMENT CENTER IN SOUTHLAKE Local entrepreneur and mom Kim DeJarnette always wanted to own her own business and was excited about the success of Lice Lifters DFW. Located in Frisco and owned by fellow local mom and entrepreneur Beth Kirschner, Lice Lifters DFW opened in May 2015. Lice Lifters DFW was so successful that Kirschner decided to partner with DeJarnette to open her second location in Southlake. DeJarnette is looking forward to growing the Lice Lifters franchise throughout the state of Texas and to help the community rid themselves of these pesky bugs. The new Lice Lifters Southlake Head Lice Treatment Center opened in June and is located at 101 River Oaks Drive, Suite 110.

TEXAS HEALTH SOUTHLAKE GOT A MUCH-NEEDED EXPANSION In July, Southlake’s first hospital, Texas Health Southlake, expanded its walls and welcomed six new observations beds. Now at a total of 23 hospital beds, the hospital will be able to care for even more patients. Citing the need to meet demand for healthcare services from Southlake and surrounding communities, hospital president, Traci Bernard, said the expansion not only added much-needed space but also created better efficiencies and a high-quality patient, physician and employee experience. SOLIS MAMMOGRAPHY ACQUIRED BREAST DIAGNOSTICS IN SOUTHLAKE AND DENTON Solis Mammography, the nation’s largest independent provider of screening and diagnostics for breast health, acquired Breast Diagnostics of North Texas. The two centers are now owned and operated as Solis Mammography Denton-South and Solis Mammography Southlake. Both locations are comprehensive breast imaging centers that provide a full range of breast screening and diagnostic services. The Solis Mammography Southlake center is located in the office building inside Texas Health, Harris Methodist Hospital. CITY OF SOUTHLAKE GENERATES $22.6 MILLION FROM TOURISTS Tourism in Tarrant County, and Southlake specifically, has contributed to making the state of Texas the third-ranked in the country for tourism. The state claims an estimated 255 million domestic visitors in 2015, who spent $69 billion in travel expenses, supported nearly 653,000 jobs and generated $6.2 billion in state and local tax revenues. Further, Tarrant County saw tourists spend $7.45 billion; $22.6 million of that was in Southlake sales tax revenue, accounting for 75 percent of total sales tax collected. This data was generated in 2014, as the 2015 numbers were not yet available.

A TWIST ON TRADITION

How Carroll grad Destiny Rose humbled the larger-than-life Texas homecoming-mum tradition

would it be weird if didn’t have a mum at homecoming?’

S

ince the 1960s, or we’d even venture to say since the dawn of Texas high school football, the creation and adornment of homecoming mums and garters has been a tradition that has grown to gargantuan proportions. It’s become a case of whose spirit is greater based merely on the size of the corsage. But growth comes at a cost. In the 1960s, one could purchase a mum for about three bucks. Today, mums are mammoth in size and price. These floral embellishments can run suitors (or their parents) hundreds of dollars each fall. But as difficult as the investment may be, it just seems wrong to mess with high school traditions—especially in Texas. Unless you are someone like Destiny Rose. A recent graduate of Carroll Senior High School, Destiny, 18, decided to make a small change to the long-standing homecoming mum tradition. Much to her surprise, Southlake embraced the change and many other Metroplex communities have since followed.

In September 2013, Destiny had an epiphany. “I was sitting at the breakfast table with my mom talking about potential garter ideas for my homecoming date,” she recalls. “We were conversing about the start of the mum tradition and how elaborate it is now—especially in the DFW area. I randomly blurted out, ‘Mom, would it be weird if I didn’t have a mum at homecoming?’” Destiny could tell her mother, Angie, was in agreement, but intrigued by her question. “Maybe instead of taking part in the [homecoming] tradition, we could take the money that would be used to make or buy the mums and garters and donate it to Youth World,” Destiny says. For the past seven years, Destiny, her mom, and Destiny’s younger sister, Chaney, 15, have been involved in Youth World, a nonprofit that, among other projects, sponsors programs to fight childhood hunger in South Dallas. With her mom’s blessing and support, Destiny asked her date and two other friends to participate. She had four T-shirts made for them to wear to the 2013 Southlake Carroll homecoming game that read: Instead of a mum, we donated the money to feed families at Youth World. Mumz4Kidz (as the project became known circa 2014) raised $800 that inaugural year in 2013. The money was then used to feed 16 families Thanksgiving dinner. Students can make the $50 minimum contribution to feed one family, and if they are moved to give more, students may donate the amount they would have spent on a mum or garter, which ranges between $300 and $1,500, according to Destiny. Students who make a monetary donation receive a T-shirt in their school colors to wear to their homecoming game. Ribbons are provided for drill team and band members who must wear their uniforms to the game.

There’s also an option for students to volunteer. Mumz4Kidz has a student ambassador program that allows students to be the face of the program at his or her school. Close to home, Brooks Ragsdale, a recent graduate of Carroll Senior High School, became involved with the program in fall 2015 during his senior year, serving as a Mumz4Kidz ambassador to Carroll’s marching band program. “Seeing what Mumz4Kidz accomplished in the first two years, I was amazed at the progress and purpose of this project,” Brooks says. “The founders had an incredible heart, and they impacted so many families in need.” But the organization’s volunteering and donation program goes beyond Southlake’s borders. Tristynn Cox was a junior at Flower Mound High School in fall 2014 when she first heard of Mumz4Kidz. “My strong desire to lend a helping hand to my community led me to become involved with Mumz4Kidz,” Tristynn says. “The people involved in this project are such sincere, kind people who are willing to go above and beyond to help people in need. Being a part of this organization is one of the best decisions I’ve ever made.” In 2015, 31 student ambassadors from 18 schools (including Southlake Carroll) participated in the project. Destiny hopes more Metroplex schools will embrace the program this year. Ambassadors are vital to the organization. “I know there are teenagers who want to do something bigger than themselves—something that helps others,” Destiny says. “We can do more than we think, but it requires action!”

ONE CAUSE, ONE COMMUNITY During distribution time at Youth World, all of the students are invited to participate. Families in need receive a hot meal and are given enough groceries to last a family of six for one week. “It is so fun to see kids come together in their school colors for the single purpose of helping families in need,” Angie says. “We have schools that compete on the field but come together to serve.” The Thanksgiving event always focuses on much more than the traditional turkey, vegetables and pie. Students and volunteers spend time with families and often pray with them before they go home. “Seeing how thankful they were for things that I take for granted every single day was extremely humbling, and it makes me appreciate everything I have in life,” Tristynn says.

The organization raises funds not only through student donations, but also company sponsorships. In 2015, 19 corporate sponsors including Target, Pappas, E. Leigh’s and Top Golf contributed to the mission. To date, 18 schools and 21 corporate sponsors have supportedMumz4Kidz, and Destiny prays this number continues to rise. “The more students and sponsors supporting the program means less kids going hungry over holiday breaks,” Destiny says. “When these kids aren’t in school, they aren’t being fed by the lunch program. These kids need [these funds].” Since Destiny graduated from Carroll Senior Southlake STYLE Magazine

High School in June and is attending Point Loma Nazarene University in San Diego, she will not take part in the fundraising portion of the project this year. But there’s no way she’d miss Dragon homecoming. “I’m excited to come back and see all of the individuals who have donated and helped those kiddos,” Destiny says. “But this will be my first year in the past seven that I will not be volunteering at Youth World’s Thanksgiving distribution.” However, Destiny is confident in passing on the torch to her younger sister, Chaney. “I have no doubt that Mumz4Kidz is being left in good hands,” she says. “Chaney has a compassionate heart for people—young, elderly, poor, wealthy, and everyone in between.” Obviously a spirit of giving must run in the family, and those are pretty good genes to inherit. “How exciting to think about this generation could be known as the generation of change, of selflessness and of courage,” Destiny says. “An immense number of young people are questioning their duty on earth. Maybe, just maybe, this is the first step.” SEP 16 • 25

JOHN AND RALPH DEVIVO ARE BRINGING FRESH, FROM-SCRATCH FOOD TO THEIR EPONYMOUS EATERIES By Lori Stacy

O

ne of John DeVivo’s childhood memories involves helping his mother clean squid for a large dinner party. It was there, in the family kitchen, where both John and his brother Ralph developed a passion for food, a passion that led them both through many years in the restaurant industry to now owning and operating three unique eateries in Southlake and Keller. “Like some girls might talk about their weddings, we talked about opening our own restaurant,” says John of his and Ralph’s dreams. Ralph says he just knew, from a very young age, that he wanted to be in the food industry. When his two older brothers took jobs at the fast-food restaurant Wendy’s, Ralph was adamant: He wanted to go to work with his brothers. But he was only 14, and the minimum age requirement was 15. Still, he managed to get a job as a cook, and thus began the DeVivo brothers’ first foray together in the food world. From Wendy’s came many more jobs in the restaurant business. John was most recently executive chef at The Cheesecake Factory and Ralph worked for Outback Steakhouse for 15 years, followed by a short stint at The Cheesecake Factory before spending six years at P.F. Chang’s.

WITH A FIRE TRUCK, A BUSINESS IS LAUNCHED But then a fire truck and, according to John’s wife, Lindsey, some divine intervention changed their course. John had just left The Cheesecake Factory and Ralph had just left P.F. Chang’s. For the first time since they were children, neither brother was working. It was a good time to pursue their childhood dream. “My wife insisted, ‘God made this happen,’” says John, who figured it was time to act. John wanted to open a food truck, so he began looking at the realities of it (including long days and setting up in a new location each day) and at finding a set of wheels, so to speak. That’s when the DeVivos learned about a fire truck that was operating as a mobile pizzeria. The brothers decided to make a move. They started operating Hook & Ladder Pizza Co. out of the fire truck, first parking at a commissary in Grand Prairie. Just a few months later, a restaurant space in Keller became available and the DeVivos, no strangers to hard work and long hours, decided to open DeVivo Bros. Eatery in addition to running the pizza truck, which was gaining its own following. That was

just three years ago, but quickly the restaurant developed a buzz in the community. “We became successful pretty fast,” John says. “We created a quality product and did a lot to support the community and the schools.” “We attribute our success to the fact that we use fresh food. We are dedicated to cooking from scratch every day,” says Ralph. “We don’t even have a walk-in freezer,” admits John. “We’re strong believers in quality.” Their commitment to fresh food resonated well with their customers. “People come in and tell us how delicious our food is,” says Ralph. “They don’t exactly know why it’s so good, but it’s because it’s all fresh; it’s all from scratch.” Buoyed by the success of the eatery and Hook & Ladder and wanting to expand their concept of fresh, from-scratch food, six months ago the duo opened DeVivo Bros. Latin Fusion in a former taqueria in Southlake. DeVivo Bros. Latin Fusion is a unique concept. Playing off the space’s history as a taqueria, the brothers decided to merge two cuisine types: Latin and Italian. The result is an innovative menu that offers some Italian dishes, some Latin American, plus a fusion of the two, evident in such dishes as their Frijoles and Chorizo pizza (featuring beans, mozzarella, chorizo and pico de gallo) and Spaghetti Pork Bolognese (pasta with pork asada and a hearty red sauce). “We wanted to be unique and different,” says Ralph. While their Southlake restaurant is fairly new, they are hopeful the community will embrace it. “What we hear is that Southlake needs more mom-and-pop places,” he says. On any given day, John and Ralph alternate from restaurant to restaurant, traveling to whichever location needs them. While they both have a say in all things related to the

restaurants, John’s focus is on food while Ralph manages the business side of things. It’s a division of labor that works well for the brothers. Says John: “We get along great. We’re both driven and passionate. Sometimes we clash, but we have a great relationship.” Ralph concurs: “John and I are the best of friends. No matter what happens, at the end of the day we’re still brothers.” The DeVivos are also thankful to have a staff that makes it possible for them to run a successful business and, most importantly, have a life. “We’re not in this to get rich,” Ralph says. “We wanted to get out of the hustle and bustle of corporate restaurants, to open a small, quaint place where we could sit down with our guests.” But with three different eateries, each with their own concept, John admits that one of the challenges is being spread too thin, trying to be in too many places at one time. Still, the brothers hope to keep up the momentum and perhaps grow even more—so long as it’s not too big. They don’t want to lose control or sacrifice quality, nor do they want the employees or the customers to feel unappreciated. “We treat our guests and our staff like family,” says Ralph. “We have very low turnover as a result.” ALL IN THE FAMILY Not only do they pride themselves on treating their staff like family, some of their staff actually are family: Ralph’s wife Melissa helps manage shifts, while older son Jacob manages Hook & Ladder and younger son Chandler works at the Keller eatery. John’s wife Lindsey is the former bakery manager, who created the popular carrot cake and cheesecake that are still on the menu. Their daughter, Stella, who has a sandwich named after her, is a frequent presence at the restaurant. Even their parents’ influence is evident at the restaurants. For breakfast they offer sausage, peppers and eggs “just like Dad used to make,” and one of the guest favorites at DeVivo Bros. Eatery is the meatloaf—ground Angus beef with savory herbs that is a replica of the meatloaf their mother used to make for them. “It’s my mother’s recipe,” says Ralph, “but she didn’t have it written down.”Adds John: “She didn’t use recipes; she cooked by taste.” “She was Italian—all her recipes were in her head,” explains Ralph. “John recreated the meatloaf from memory, and it tastes exactly like the meatloaf my mother made 30 years ago.” It’s dishes like these that have led the brothers to call their cuisine “rustic comfort food,” the kind of food that warms the soul and reminds guests of home-cooked meals and family. Think chicken and waffles, chicken-fried chicken with

sausage gravy, meatball subs with homemade sauce and meatballs. But it’s not just the food they want to evoke this warm, homey feel, it’s also the laid-back atmosphere, the fact that you can most likely run into one of the DeVivos and chat when you’re in one of their places. You may even be tapped to try a new dish. Unlike corporate-run restaurants where decisions are made at headquarters and executed chainwide, at the DeVivo Bros. restaurants, everyone gets a say in new dishes. John says he’s had his regular guests try out new dishes to get their opinions. “When you work for someone else, they tell you what to think,” says John. But running your own restaurant is very different, he admits. “We’ll make a dish and try it out and I’ll say ‘I think it’s good. What do you think?’” It’s definitely not something that would happen in a big chain restaurant, and that’s what sets the DeVivo brothers apart. “We’re not interested in building an empire,” says John. “We’re just trying to live our dreams and be happy.”

et’s raise a glass to beer: It’s America’s preferred alcoholic beverage. When Americans reach for alcohol, 43 percent prefer to sip a glass of suds over wine or liquor, according to a recent Gallup poll. It’s not hard to understand why. Beer is the start to so many good moments: a three-meat barbecue plate, an epic tailgate, the football game that follows and plenty others. But as every beer aficionado knows, there’s big beer (think factory-produced suds for the masses) and then there’s craft beer, a beverage that is lovingly and expertly handcrafted by brewmasters who put their heart and soul into each batch. These craft brews are shifting American beer culture, with tastes increasingly turning toward craft beer. We are undoubtedly in the middle of a craft beer renaissance. Craft breweries in the United States produced more than 24 million barrels in 2015, nearly triple the nine million barrels produced in 2009, according to Brewers Association, a nonprofit dedicated to protecting American craft brewers and their beers. The beer market in the U.S. is worth about $105.9 billion—and craft beer has a 12-percent share. Lucky for the beer hipster in every Texan, the Lone Star State happens to be a great spot for craft beer. Texas—specifically North Texas—is a haven for craft breweries. Five years ago, just a handful of establishments inhabited the Metroplex; today more than 40 bottle their brew here. We caught up with a couple local brewmasters to get their take on the buzz surrounding craft beer. SIGHTS SET ON SUDS Peticolas Brewing Company in Dallas was one of the earliest to arrive on the craft beer scene, turning out its first batch of beer on December 30, 2011. “What a day that was,” says Michael Peticolas, the attorney-turned-brewer who started the award-winning brewery. He has two main loves in life: beer and soccer. Peticolas wanted to make one of his passions his job, and needless to say, he didn’t lace up his cleats to hone his bicycle kick. “Some people open craft breweries to make money. I did it because I love beer,” he says. “For me, it’s about the beer first and foremost.” Peticolas’ passion for brewing has earned him some impressive hardware. He took home a gold medal for his Royal Scandal English Pale Ale at the Great American Beer Festival in 2012. The three-day event, hosted by the Brewers Association, is arguably one of the year’s biggest events for beer aficionados. But Peticolas doesn’t align himself with the beer industry; he considers his craft to be part of the entertainment industry. “I work to make my consumers my marketing stars,” he says. “I want them to go into bars and say, ‘Hey man, get some Peticolas beer in here!’” So what makes locals so devoted to his brews that they’ll ask for them by name? One word: Consistency. “When I was learning how to brew, a brewmaster told me, ‘The best thing is to make a great beer consistently. The next best thing is to make a bad beer consistently. The worst thing is to make a beer that’s sometimes good and sometimes bad,’” Peticolas recalls. “Consistency is massive to me. I care about the beer more than anything.”

Hey man, get some Peticolas beer in here! While other craft breweries may experiment with questionable trends (“I’ve seen beers made from yeast on belly button lint,” Peticolas says), his brewery steers clear from such kitschy gimmicks. “I’m all for innovation in craft beer, but there’s a line,” he says. Closer to home, Shannon Carter, brewmaster at Shannon Brewing Company in Keller, is excited about all the innovation of the craft beer craze. “I love the breweries that are pushing the envelope. As a beer consumer, it’s fantastic,” he says. “But as a brewery, it’s difficult to garner attention and keep yourself relevant. Celebrating its second anniversary this fall, Shannon Brewing Company is introducing a wave of new tastes. A few Carter is particularly enthused about? A grapefruit IPA and honey porter along with uniquely flavored brews such as hazelnut chocolate stout and a boysenberry blond, which Carter says is a cool shade of bluish purple. “We try to stay in our vein when we do something new,” Carter says, “and we always try to make it as natural as possible.” For Shannon Brewing Company, this means using whole grains, natural fermentation and fire. That’s right: All the beers are fire-brewed. “To our knowledge, we’re the only brewery that does the entire process with fire,” says Carter. “This caramelizes our sugars in a way that you can’t get with superheated steam or electricity, which are the alternatives.” And because the brewery is situated on Samantha Springs in the heart of Keller, the brews are made from good, ol’ Texan spring water. The beers are so pure and natural, one could almost call them wholesome. POUR ME A COLD ONE When it comes time to get that first taste of an ice-cold craft beer, Peticolas and Carter are adamant: Always enjoy it from a glass. “When someone gives me a bottle of beer, I’m doing everything I can to find a glass to pour it in,” says Peticolas. “When you pour the beer into a glass, you’re getting a fuller experience—something closer to what the brewer intended.” A curved glass is best, according to Peticolas, because the aromas of the beer will be more concentrated. At his brewery, beers are poured into a tilted and curved glass at a rate that allows carbonation to release from the beer and provide a half-inch head. “There’s an art to pouring a beer,” Carter says. “Getting that thick, half-inch head is the goal with most beers as the head releases aroma and gives a nice mouth feel.” Thirsty yet? The sky’s the limit when it comes to craft brews. But consider a bit of brewmaster advice as we launch into the season of pumpkin-flavored everything: Just say no to pumpkin beers. For Carter, it’s a trend that needs to stop. In the Lone Star State, it’s always a good time to sip a Lone Star or Shiner, but should you want to reach for a limitededition brew from your favorite North Texas craft brewery, go forth and drink. GRIDIRON GRATITUDE HEAD COACH HAL WASSON SAVORS EVERY MOMENT

When Hal Wasson became head football coach for Southlake Carroll in 2007, he took over a powerhouse program. The Dragons have won eight state championships—more than any other football team in Texas. Now in his 10th year as head coach, Wasson has high hopes for his Dragons and the season ahead. Q: This is your 10th season as head football coach. What has the journey been like? A: Incredible. I’ve taken an attitude of gratitude. To me, Carroll is a unique place—in a good way. In other places, there are always areas to move the bar. When I came here in 2007, [I wondered] how do we raise the bar here? At that time, there were seven state championships and an incredible winning streak. I wanted to be in a place where the expectations are so high and to continue that elite status. I appreciate this community, our administrative team and our educators, and I appreciate and value our players because I know how hard they work.

my attitude. I’m really hard on myself. I evaluate myself to make myself better, our coaches better, our team better. Q: How has high school football changed in the last 10 years? A: The players are bigger, stronger, faster. Everybody wants to be entertained now. There’s more pageantry. To me, football is the purest form of entertainment. I want kids to get value from football—the value of a work ethic, teamwork, treating people fairly. Q: What sets Dragon players apart?

Q: What do you find most rewarding in your role as head coach? A: The relationships, without a doubt. I tell my coaches to enjoy the day. Relish the game. When you win, enjoy it for a bit. We have a 24-hour rule. We savor the win and then we move on.

A: They do common things with uncommon discipline and energy. That’s the difference maker. Our kids work extremely hard. They think: We’re Dragons; we’re supposed to work hard. I already know who’s going to win the game—the team that plays the best. The great separator is: Are you at your best when it matters the most?

Q: What has been one of your proudest moments? A: All the wins here are monumental to me. The state championship in 2011 was an incredible moment for me personally. It was incredible but the tough news is you always want to get it again. It’s a great motivator. Q: Favorite team tradition? A: Game day is my favorite day, but during the week, it’s Thursday. As a team, we, in unison, repeat our expectations. Our kids quote what we have to do to win or be at our best. I also like the black game pants and blond hair. It’s a unique tradition because all the kids buy into it. I savor anything that’s a big deal to the kids and community. Q: How do you deal with the stress of Texas high school football? A: It’s all about the present and controlling what you can control. I can’t control how good the other team is or how big that other guy is. I have control over

Q: If you could mold the perfect Dragon football player, what would he look like? A: I’d start by looking at what’s in his heart. It would be a guy with confidence. Confidence comes from production; production comes from a strong work ethic. I’d mold a guy who was unselfish because we live in such a selfish world. I’d want a guy who’s honest with himself and who is trusted—not just when things are good, but when things aren’t going his way. I’d want someone who wants to get the most out of what he was blessed with. Q: Anything you’d like to say to Dragon fans? A: I hope they understand how much we appreciate their support. We don’t take it for granted. I’d love for our fans to be at games early to really experience everything. I’d encourage them to wear our colors. It’s so fun to look up and see everyone in green. And just really get into the game. That energy feeds us. Feed the beast!

hen you visit Boulangerie by Village Baking Co. in Dallas, expect a first-class trip to Paris surrounded by delicious wafts of fresh-from-the-oven bread and mouthwatering pastries that will leave you craving seconds, thirds and more. Owned by Clint and Kim Cooper, the quaint bakery on Greenville Avenue in Dallas has hints of the French countryside intertwined with a homey, Texas-farm feel that is unrivaled by surrounding bread and pastry shops. Since opening in 2004, the charming eatery has seen a dramatic increase in Frenchfare-seeking patrons, but this has not distracted the Coopers from staying true to their mission: serving fresh and authentic French pastries and bread to the people of the Metroplex. A Texas boy, born and bred, Clint’s undeniable love for French culture has continu-

ously influenced the store’s unique bread, pastry and sandwich menu. “The name Boulangerie above our door means we are very focused on yeasted products,” he says. Searching for authentic brioches, fresh fruit pies, tarts, doughy baguettes and other addicting treats? Look no further than Boulangerie. In addition to its wide selection of breads and pastries, the bakery also serves rustic-style sandwiches that will make any lunch date memorable. If you need a base for your Goat Cheese and Egg Breakfast Crostini, we suggest Boulangerie’s signature Meyer Lemon Rosemary Boule. “It’s almost like an elevated garlic bread in the sense that it is enough on it’s own, but it also makes a wonderful dinner bread,” says Claire Carson, retail supervisor at Boulangerie. “It contains fresh rosemary, and a tablespoon of Meyer lemon-infused olive oil is folded throughout.”

They pair so nicely with our vanilla pastry cream and our flaky croissant dough,” says Carson. Pair the too-good-to-be-true patisserie with the rosemary boule, and you’ll be sure to leave full, satisfied and daydreaming of Paris delights. What’s a typical day like for the Boulangerie crew? Busy is an understatement. The chefs start their day around 5 a.m. while retail employees open up shop. Pastries make their way out of the oven first, followed by the countless types of bread and sandwiches. From there, the chefs are grinding their gears until around 1 p.m. in preparation for the next business day. Customers are served until 7 p.m., and then the process starts all over again. The always-flavorful bread, pastries and sandwiches are a true reflection of the chefs’ hard work and dedication to creating crave-worthy menu items that many in the Metroplex have come to adore. But what truly sets Boulangerie apart from other local bakeries is the integrity of its ingredients, process and product, according to Carson. “We make our own yogurt and ricotta cheese. We get the freshest ingredients and carry French-style products that can’t be found anywhere else in the state,” she says. And that’s not even the best part—the menu also changes according to the season. Some creations, such as the Jambon Buerre (a simple ham baguette sandwich), Pain au Chocolat (chocolate bread) and Kouign Amann (a round, crusty cake), remain consistent year-round, but many offerings change seasonally. During the summer, you can expect seasonal jams, fruit tarts and eclairs. In the winter, Boulangerie sells pumpkin, maple bourbon and spiced-apple products as well as a variety of heavenly seasonal pies. No matter the season, the eatery offers a palate-pleasing variety of breads, pastries and sandwiches that stay true to the business’ French inspiration. If you’re eager to check out this highly regarded bread and pastry shop, make sure to avoid going Saturdays from 10 a.m. to noon—it’s the bakery’s busiest time. However, regardless of the crowd, the wait will undoubtedly be worth it. Not in the mood to drive to Dallas? Catch the Boulangerie team selling their French fare at local farmers’ markets in McKinney, Coppell, White Rock, St. Michael’s and Rockwall. Clearly, the European-inspired bakery has the right idea, and from the looks of it, the Coopers have no plan of slowing down. “For me, Boulangerie is an escape,” says Carson. “From the smells of fresh-baked bread and coffee, the simple and elegant decor, to the friendships made between our amazing customer base and staff, it’s just a lovely calm little refuge from the business of everyday life.” Grab a seat, and a sandwich or pastry. Soul Food Dishes at Lo-Lo’s Chicken & Waffles unite sweet and savory Good, old-fashioned soul food—it’s something not typically offered in Southlake. That is, until Lo-Lo’s Chicken & Waffles set up shop in Carroll Pointe. Even before it opened, the Phoenixbased restaurant chain had plenty of quirky allure—mostly because of its signature offerings: ultra-crisp fried chicken and house-made waffles. But these Southern-style mainstays aren’t the only comfort-food offerings the restaurant dishes out. Patrons can stop in for home-cooked fare ranging from red velvet pancakes to chicken-fried steak and shrimp and grits. Founded by Larry “Lo-Lo” White in 2002, Lo-Lo’s Chicken & Waffles brings the flavor and the spunk. You can’t help but smile ordering a dish like Yo Mamma’s Biscuits and Gravy (two gravy-smothered buttermilk biscuits served with two eggs and potatoes) or Nay-Nay’s (two eggs, two waffles and a bowl of grits).
