Known worldwide as ‘the father of modern Italian cuisine’, Gualtiero Marchesi is a pioneer of taste, whose creations, a perfectly balanced blend of experimentation and tradition, originality and simplicity, are designed to amaze those tasting them.

f dining at Il Marchesino is by itself a not-to-be-missed experience, finding oneself sampling Gualtiero Marchesi’s famous gold leaf risotto, while the ‘Maestro’ watches you and asks what you think, is one of those life experiences that will remain imprinted on your mind. And yet, it is not difficult to meet him there, in his ‘kingdom’, in via Filodrammatici, right next to La Scala, and observe as he moves from table to table, patting shoulders and exchanging banter with the diners. At the venerable age of 86, the most famous Italian cook in the world not only continues to ‘man the stoves’ and experiment with flavours, but dedicates himself with enthusiasm to grandiose projects designed for future generations. “The most ambitious project currently in the pipeline is the establishment of the Gualtiero Marchesi Foundation. Due to open in 2018, the school will be housed within Varese’s stunning 18th-century Villa Mylius. Our idea is to educate pupils about beauty, starting from the youngest students, and to train chefs. As we see it,

the process will involve people who have already learnt the trade but want to enrich their cultural knowledge and fine-tune their ability to express themselves.” However, this academy of taste in Varese is not the first establishment to have seen Gualtiero Marchesi ‘take to the lectern’, a few years ago, the Maestro received an honorary doctorate in Food Science. In fact, the ‘professor’ also holds the title of Rector of ALMA – the prestigious training centre for chefs and pastry makers headquartered in Reggia di Colorno (in the province of Parma) – and he recently established the Marchesi Academy in via Bonvesin de la Riva in Milan. What do you teach the new generation and, most importantly, how do you see Italian cuisine of the future? “I teach them that it is necessary to reclaim the inherent value of ingredients. To understand that cooking isn’t about giving a performance. In fact, the only performance that I understand is that given by Japanese masters, who are capable of demonstrating the beauty of matter. Italian cuisine has enormous possibilities. Put more simply, it should not be perverted by improvisers or play-actors.” You are considered the founder of ‘new Italian cuisine’. If you had to define your cuisine, what characteristics would you highlight? “Simplicity, which presupposes a knowledge of ingredients and a control of techniques, two elements without which I would be totally lost.” Tell us about your beginnings, especially when you knew what you wanted to do when ‘you grew up?’ “While I was studying to become a pianist, I realized that I should capitalize on the skills and politesse that my parents had instilled in me from the time that they owned the 40-room Albergo Mercato (editor’s note: in via Bezzecca in Milan) where I was born. My renewed interest in cuisine took me to France and then back to Milan, endowed with the teachings of nouvelle cuisine.” You once said that “cooking per se is a science, it’s up to the cook to transform it into an art”. In your opinion, what is the purpose of art in cooking? “First and foremost, you have to know how to cook. Food is health for the body. This is the real imperative. It has nothing to do with showy exhibition cooking, which makes people believe that it is easy and fun. Cooking is something that should be taken seriously. However, if a cook has the soul of an artist…” Among your creations, is there one that you are particularly fond of? It goes without saying that the public loves

MINIMALISM AND TRADITION Gualtiero Marchesi was the first Italian to be awarded three Michelin stars (in 1985), and the first chef in the world to ‘return’ them because “cuisine should not be conditioned by votes.” His gastronomic fare ran counter to mainstream trends by offering a minimalist cuisine accented by tradition, which focused on ingredients, and allowed his imagination free rein. Thus creating dishes that became legendary, including his signature Riso, oro e Zafferano (saffron risotto with gold leaf), Raviolo Aperto (“open” raviolo) and Seppia al Nero (cuttlefish in ink).

your saffron risotto with gold leaf and your open ravioli, two thought provoking innovations. Tell us how they came about. “My saffron risotto with gold leaf was invented to honour the father of a friend who made gold leaves, while my open ravioli stems from the story of a friend whose ravioli had opened while she was preparing them. Two pretexts to give free rein to my imagination and create what would subsequently become two of my world-renowned signature dishes. However, my favourite dish that comes to mind, epitomizing the concept of simplicity, is my spaghetti, caviar and spring onion salad. The way that the caviar enhances the incredible goodness of the spaghetti is absolutely matchless.” In short, sophisticated dishes, made with gold and caviar. What does “luxury” mean to you? And which luxury do you indulge in? “I prefer elegance to luxury. To me luxury sounds like an exaggeration of elegance. I remember a phrase that I meditated about from the time that I was a child. ‘A gentleman crosses the city of London without being noticed.” A propos of luxury, you recently created a ‘restaurant within a restaurant’: Il Marchesi, characterized by its exclusive nature and located within your more informal Il Marchesino. Why this turnaround? “Two different realities for two different types of diners. Il Marchesi, whose tables are set for lunch and dinner, serves my signature classics, while Il Marchesino offers a quicker menu.”

Gualtiero Marchesi was born in Milan on 19 March 1930. After working at his family’s restaurant, he moved to France, where he learnt the secrets of nouvelle cuisine. In 1977, he opened his first restaurant, in via Bonvesin de la Riva where, within a year, he had earned his first Michelin star. In 1985 he was the first Italian to hold three stars. Twenty years later, he opened a restaurant at the Albereta Resort in Franciacorta (Brescia), returning to Milan in 2008, to open Il Marchesino. He inaugurated the Gualtiero Marchesi Academy in 2014, and the Gualtiero Marchesi Foundation in 2016.


A CHEF AND PROFESSOR The tireless pioneer Gualtiero Marchesi has an honorary doctorate in Food Science, is Dean of ALMA, the prestigious training centre for chefs and pastry makers, an academy named after him, and now a foundation in Varese’s beautiful 18th century Villa Mylius (see above).

A different atmosphere from that experienced when you started out at Bonvesin de la Riva? “At my restaurant in via Bonvesin de la Riva I revolutionized Italian cuisine, by putting what I’d learnt from the Troisgros brothers into practice. On discovering that this approach was too cold, I decided to revitalize the service in the dining room, by flambéing my duck and chateaubriand.”

Your restaurants are always located in the most refined, elegant areas of Milan. From a point of view of your career, what opportunities did the city offer you? What kind of relationship do you have with Milan? “I am fond of Milan because of everything that it has given me, but also because of everything that I have given it. My story, starting from the marvelous clientele who frequented my parents’ restaurant, began here. I have some nostalgia for olden-day Milan. It was less hectic, more cheerful and at the same time more reserved than it is today; a city of water and courtyards. The former has almost disappeared, the latter still exist, but are often hidden from view.”

Can you reveal the names of some of your favourite Milanese restaurants? Let’s take a guess: Il Marchesino? “I can only tell you that I don’t have a fixed selection. I’m curious, I enjoy eating at pizzerias, oriental restaurants or, at times, places where I see people queuing outside. If I’m in search of something more intimate, I usually head out of town, where I know that I’ll meet friends.”

Is there a corner of the city, a theatre or a museum located ‘off the beaten track’ that you are particularly fond of? “There are lots of corners that I love but, above all, my

What do you do when you have a free half-day in Milan? “I walk and look around, without any specific destination in mind. I often head towards the Navigli or the vicolo delle Lavandaie, another corner of pure poetry.”

You were the first Italian to receive three Michelin stars and the first to refuse them years later, when a Michelin star was an award worthy of being proclaimed from the rooftops. What are the elements on which a chef should build his or her fame and that of his or her restaurant? “The right question is: who criticizes the critics? I prefer reporters, the people who investigate, discuss, become enthused and explain the reasons that encouraged you to do one thing rather than another.”

“I couldn’t live anywhere else” The bona fide Milanese chef, Gualtiero Marchesi enjoys the surprises offered by his city. He spends his time searching for new places or rediscovering the appeal of historical landmark sites. His starting point? His (latest) restaurant, adjacent to the La Scala opera house THE NAVIGLI AND THE VICOLO DEI LAVANDAI During the changing of seasons, the Naviglio Pavese and the Naviglio Grande, the two canals that run from the Darsena to the southern outskirts of Milan, take on a whole new guise. In summer, this is a prime night-life spot, boasting dozens of bars, taverns and open-air venues, while in winter, when shrouded in a haze, period buildings silhouetted against the sky and evocative views are revealed. Amongst these, a must-see is the vicolo dei Lavandai, located in an alley of the Naviglio Grande. It has a low, red-tiled roof and stone supports around the edge that look like they were used as a sort of washboard, and you can still see the stone trough where women used to wash their clothes. It is, without doubt, one of the most poetic corners of the city.

PIAZZA MERCANTI For Gualtiero Marchesi this is “the heart of the heart of Milan” and, in fact, Milan’s medieval Piazza Mercanti (situated just in front of the Duomo), with its porticoes, loggia, ancient ‘palazzi’ and central well, was the olden-day hub of the city. A real compendium of architectural styles, it is currently home to the 13th century Palazzo della Ragione (now used to host important photographic exhibitions), the 14th century Loggia degli Osii, where edicts were announced, the Gothic-style Casa dei Panigarola and the Baroque Palazzo delle Scuole Palatine. During the week, it buzzes with vibrant frenetic city life, while on the weekends the ambience is more relaxed as people gather under its porticoes to savour the atmosphere of times gone by.

THE COURTYARDS OF MILAN Gualtiero Marchesi describes Milan as ‘a city of water and courtyards.’ Although, over the centuries, most of the canals were covered over, these courtyards still exist. The beauty of Milan is self-effacing, and its courtyards are hidden behind intercoms and double locks. However, if you’re patient and peep into their entrances, you will certainly find them. Beautifully tended gardens, entire facades covered with ivy, wisteria and roses, statues, patios, wells and porticoes, Milan’s hidden courtyards hold innumerable surprises in store. Behind the scenes

In the year 2000, the renovations masterminded by Mario Botta transformed Milan’s 18th century Teatro alla Scala into a technologically avant-garde masterpiece. The new ‘scenic tower’, standing at a height of 56m, 18 of which are below ground, houses stage machinery capable of handling the most complex and spectacular stage sets, even when the curtain is up. The most advanced prototype in the world.

Marble spectaculars

Among the statues and decorations of the Duomo of Milan, under the watchful gaze of the Madonnina, one would expect to only see portrayals of biblical figures, saints, demons and garlands‌ but here, this rule does not apply: amidst the 3,400 statues etched in marble there are also a number of famous Italian personages including the poet Dante, renowned composer and conductor Arturo Toscanini and King Vittorio Emanuele, but also two boxers (in honour of Italian champion Primo Carnera) and a semi-nude woman lying between one spire and another. Keep your eyes peeled!

An iconic vineyard in the city

Recently opened and housed in the gardens of the Casa degli Atellani (see photo), Leonardo da Vinci’s Vineyard is located just a short distance from the Church of Santa Maria delle Grazie where he painted ‘The Last Supper’. Visitors can now take an insightful tour of both the House and the Vineyard.

A Leonardo that you might not have expected…

The Last Supper, the Codex Atlanticus and his machines. But then, there’s also this mysterious portrait, a small, unforgettable painting, attributed to Maestro da Vinci, entitled ‘Portrait of a Musician’. It’s preserved, together with several other breathtaking masterpieces, at the Pinacoteca Ambrosiana.

… and the one that you were looking for

Each year, in order to view Leonardo’s Last Supper, 450,000 visitors stand in line. As an image, ‘The Last Supper’ is the most reproduced religious painting of all time and has been put on everything from mirrors, to mouse pads, to musical pillows. In fact, on entering the refectory, visitors are often surprised that this is actually what it looks like.

Marvels

It’s the other face of the famed Pinacoteca di Brera, the Orto botanico and the Osservatorio astronomico. At the last census-taking, the Biblioteca Braidense, built at the behest of Empress Maria Teresa of Austria in 1770, boasted 898,377 printed books, 2,119 manuscripts and 2,368 incunabola. A truly wondrous sight!

Above and beneath

Castello Sforzesco’s appeal as a historic dwelling is revealed in its crenellated walls and its secret underground passages, lit by the light shining through slits in the walls. The passageways were used to connect the Castle’s watchtowers and can only be visited with a guide. Below: those who want to take in the sights of the city from a different perspective can now walk along the exclusive, recently opened panoramic walkway that circles the roofs of Galleria Vittorio Emanuele II (entrance from via Silvio Pellico, 2).

Behind the old-world bronze tellers’ counters at the historic headquarters of the Banca Commerciale, the Gallerie d’Italia-Piazza Scala exhibit spectacular masterpieces of 19th and 20th century art and sculpture alongside other works presented to the public for the first time. A modern-day patron of the arts: the works of the Intesa Sanpaolo collections are housed in three historic buildings overlooking via Manzoni, Piazza della Scala and via Morone.

The Sistine Chapel of Milan

San Maurizio al Monastero Maggiore is an early Christian church that was totally rebuilt during Renaissance times. Due to its sumptuous interiors emblazoned with gold and frescoes from the school of Leonardo, it has been dubbed the ‘Sistine Chapel of Milan’.

Sant’Ambrogio

You’re not in Ravenna nor in Piazza Armerina. You’re in Milan, and this is Sant’Ambrogio. In addition to being noted for its medieval architecture, a perfect example of Romanesque splendour, there’s something else to admire: a rare mosaic, that after various vicissitudes, finally found its way here.

A melting pot of cultures

The MUDEC-Museo delle Culture started life as an operation of archaeological recovery in one of the most lively districts of Milan, the Tortona area. The architecture of MUDEC mirrors the many spirits that dwell in the museum, featuring a central hall of free inspiration which generates an inner courtyard with a characteristic ‘flower’ shape.

Fashion on show

To celebrate 40 years dedicated to fashion, last May Giorgio Armani opened the doors of a new exhibition hub in a former Nestlé granary in Milan’s Tortona district, at the general headquarters of maison Armani. The museum/exhibition space designed by Japanese archistar Tadao Ando is divided by themes that have inspired and continue to inspire the creative work of ‘King Giorgio’.

Vertical forest

Recently named the “most beautiful building on the planet”, the green tower designed by architect Stefano Boeri and included in the Porta Nuova project is a revolutionary experiment. A panel of experts awarded it first prize, preferring it to other humungous feats of architecture like the One World Trade Center in New York, the CapitaGreen in Singapore and the Burj Mohammed Bin Rashid Tower in Abu Dhabi.

New hub

One of Milan’s oldest areas has been restored thanks to a urban project making it the most modern district in the city. The epicentre of the area, packed with high-tech stores, bookstores, cafés, pizzerias and discotheques, is the large raised square dedicated to architect and designer Gae Aulenti. The piazza is surrounded by skyscrapers, including the UniCredit tower, the highest building in Italy, and the multi-purpose UniCredit Pavilion, designed by Michele De Lucchi.

Art Among the fabulous exhibitions on show in Milan this year, an absolute ‘must-see’ is the exhibition dedicated to Escher, the author of enormously popular but also unknown works. The latest additions to the Milanese scene include the contemporary art of Carsten Höller and Edward Kienholz. THE ART OF PARADOX Mathematically-inspired woodcuts, suspended between the real world and the reflected world, between dreams and reality, between geometric elements and plays of perspective. Maurits Cornelis Escher brings us his world of paradoxical art. A large anthology of more than 200 works explores Escher’s talent and artistic history, starting from his figurative art rooted in the ‘Liberty’ movement to his relationship with historical Avant-garde movements, from his love for Italy to his trip to Spain which, following a visit to the Alhambra Palace, with its Islamic patterns, marked a turning point in his life.

KIENHOLZ: FIVE CAR STUD Five Car Stud (1969-72), which reproduces a horrific scene of racial violence in real size, is considered one of the most significant works by the American artist Edward Kienholz. It forms the central nucleus of an exhibition that brings together 26 works, including drawings, sculptures, assemblages and tableaux created by Edward and Nancy Kienholz between 1959 and 1994.

A HIDDEN LEGACY

Currently showing at MUDEC, the exhibition showcases a wide selection of works between 1931 and 1981 by revered Catalan artist Joan Miró, one of the most celebrated figures in the history of modern art. The use of different materials and innovative techniques plays a key role in the paintings and sculptures exhibited, an expression of a new interpretation of material culture.

Six rooms, divided into six sections, shed light on the themes and trends of 19th century figurative art: the Portrait, the View and the Landscape, Genre Painting, Still Life and, finally, Realism and Symbolism. The exhibition takes visitors in discovery of the art collections on display at Milan’s Gallery of Modern Art featuring 62 masterpieces formerly stored in the museum’s warehouse. DOUBTING REALITY Renowned for his penetrating inquiry into human nature, in his personal exhibition, German artist Höller engages the viewer in his search for new ways of inhabiting our world. Photography Photography as an instrument: for Patrick Tosani and Claudio Sinatti, photographic images are the result of artistic research that gives a new sense to everyday experiences. Other shows and solo spotlights that you won’t want to miss include ‘The Human Factor’ by William Klein, ‘Trees’ by Irene Kung and ‘Punk in Britain’.

LANDSCAPES THROUGH SPACE AND TIME A unique photographic œuvre produced between 2012 and 2013 by Claudio Sinatti – a writer, a video maker and a pioneer of video mapping – ‘Slitscape’ features 27 images/landscapes taken by the artist around different locations in Milan, and the rest of the world, from Dubai to New York City. He uses the slit-scan photographic technique, which consists in a photographic shooting based upon the camera’s movement combined with a long exposure time, which is then processed with a software. The result is not the static representation of a place, but the two-dimensional restitution of a trajectory through space and time.

KLEIN: LIFE OF AN ECLECTIC The exhibition, part of which was already presented at the Tate Modern in London and at FOAM in Amsterdam, is a fascinating retrospective that embodies the work of William Klein, an influential photographer but also a filmmaker, a designer and a writer. Klein’s images, heightened by a new, groundbreaking multimedia system, created especially for the occasion, will fill the spaces of Palazzo della Ragione.

IRENE’S TREES After concentrating on architecture and several of the world’s most famous cities, Swiss photographer Irene Kung has now turned her attention to the vegetable world. Fascinated by their shapes and symbolic meaning, her exhibition includes 40 species of trees from different countries portrayed in her unmistakably classic yet dreamlike style. The species featured in her timeless wood include olive trees, cacti, pomegranate and apple trees.

ALBUM OF A PUNK ROCK FAMILY It was 1976 when the Sex Pistols screamed “I wanna be Anarchy, in the City”. Forty years later, Punk describes an era, a cultural phenomenon and a way of life. GREEN DELIGHTS “Giardini di Porpora” is a new initiative involving 14 important Italian gardens that have chosen to enhance their evocative spaces with azaleas and rhododendrons, camellias and hydrangeas. Villa Borromeo Visconti Litta with its Italianate gardens, 18th century fountains, large park and Liberty-style conservatories, boasting a magnificent collection of tropical plants, is one of the most surprising. A must-see attraction at the Villa is its 16th century Nymphaeum, a series of rooms decorated with mosaics where visitors can admire spectacular plays of water.

A BAMBOO LABYRINTH Fontanellato, a town rich in art and history, boasts a monumental green labyrinth. 10 questions for... One of the few women in the world to conduct a famous orchestra, Chinese-born Zhang Xian has been the conductor of the Verdi symphonic orchestra since 2009. Born in Dandong in 1973, she is deeply connected to the city of Milan where her two children were born. Although known to be a highly demanding conductor, she maintains that the most important quality is having ‘heart’. Three adjectives that describe Milan. Chic, vibrant, classy. The clanking of trams, the water flowing through the Navigli, the clinking of glasses during the aperitivo hour: your ears are attuned to music; what is the real ‘sound’ of this city? The city of Milano is a wonderful chorus with very young voices and very old voices blending harmoniously together. If Milan were a composer, which composer would it be? And why? Milan would be a late period Verdi: complex, passionate, vigorous and serious. (1) Milan is a temple of music, but also the capital of fashion: are you interested in fashion and how would you define your style? I prefer a style that is simple and refined and also functional in terms of my profession. Yours is a cosmopolitan environment: what continues to make you feel deeply Chinese? And by the same token what makes you feel just a little ‘Milanese’? I am deeply attached to ancient Chinese poetry. It’s irreplaceable in terms of my understanding of any other language. Being a bit ‘Milanese’, I’m picky about risotto Milanese being ‘al dente ‘ and the foam-’crema’ on top of coffee. (2)

And your favourite bookstore or music store? What is your definition of ‘luxury’? Having enough free time to do things you really love is real luxury. Luxury is to have the freedom to choose the fashion or style you like. Luxury means having the finest quality, products made with great detail and care and unique artistry that makes them superior to anything ordinary.

Which is your favourite corner of the city? Or what part of the city inspires you most? The Piazza Sant’Eustorgio neighbourhood and the Parco delle Basiliche. The first is known for its ‘al metro’ pizza, and the second for its risottos and other Milanese specialties). Where is your favourite place to shop?
