his issue of Milan Luxury is inspired by cocoa, the basic ingredient of chocolate. Although it originates from far-off lands, this product has become an intrinsic part of our food chain. One of the nine collective pavilions of Expo Milano 2015 World’s Fair is dedicated to cocoa and chocolate. Here, in addition to presenting the offerings of the main producers, who are mainly from Africa, several of the best Italian brands are also represented by three of Italy’s top chocolate-producing districts: Modica in Sicily, Perugia in Umbria, and Turin in Piedmont. As explained by Chef Ambassador Ernst Knam who has chosen cocoa as his ingredient for Expo, unlike any other ingredient in the world, it is a substance that can be worked either hot or cold in solid, liquid, semi-liquid or powder form. The versatility of chocolate, infused with nuances of passion and transgression, is also referenced in our column dedicated to fashion; in fact, our portfolio of new trends for the season plays with all the colours, shapes and variations of chocolate flavour.

Spanish by birth and ‘Milanese’ by choice, we feel justified in saying that she represents a further excellence of our country. The cultural, artistic and creative heritage of this city, a treasure trove of monuments, museums, churches, universities, villas and stunning buildings is truly unique. “The ingredient that I’ve chosen for Expo is chocolate, not only because I’m crazy about it but above all, because it’s healthy. Chocolate can be South American, South African or Mexican and all the pods have different nuances. For me, chocolate is all about passion and love and, what’s more, it’s a highly erotic ingredient.” Ernst Knam, the ‘King of chocolate’, tells us about the staple ingredient of his creations.

PASSION, LOVE AND EROTICISM Whether it’s a question of monumental cakes, voluptuous mousses or miniscule pralines, the indulgent goodies produced by Ernst Knam are designed to win over the palate, surprising it with unexpected tastes, and stimulating the imagination with astonishing pairings of colours and ingredients. From seasonal fruit to the most exotic spices, from eggs to vegetables, Knam’s creative flair results in true works of art. His signature pear and chocolate cake and his apple and rosemary tart are now classics, together with such innovations as ‘il Mondo’, a dark chocolate and raspberry dessert, featuring 24 karat gold decorations.

erman by birth and Milanese by adoption, Ernst Knam is one of those rare, eclectic individuals blessed with enormous creative energy. Not content to ‘simply’ manage his iconic pastry shop ‘Pasticceria l’Antica di Ernst Knam’ in via Anfossi in Milan, the chef has now become a TV star. For the past three seasons he has hosted, ‘The King of Chocolate’, a program, about chocolate, aired on Real Time. Knam has also published dozens of recipe books – 18 to be exact – including his latest gem entitled, ‘Che paradiso è senza cioccolato?’ (‘What would Paradise be like without chocolate?’), which could easily serve as an introduction to his biography, dedicated to his great love: “As far as I’m concerned, chocolate is truly extraordinary, because it is the only ingredient that can be worked either in solid, liquid, semi-liquid or powder form; hot or cold, in hundreds of ways: seriously, no other similar product exists”. And, true to his artistic nature, he has interpreted his passion for chocolate in a number of surprising, revolutionary ways, often with daring combinations that seem risky and crazy, but have turned out to be highly successful – chocolate with meat, fish, eggs, vegetable and spices (for example – his famous wasabi chocolate mousse, served with a salad of mangoes, hot chili pepper and green coriander). Those who want to know how he came to fall in love with chocolate to the extent that he made it the focal point of his life, are given the following answer: “It wasn’t a choice, it was a love that was instilled in me from the time that I was a child. My mother was an excellent cook and for us Northerners, making Christmas cookies is a time-honoured tradition. We start kneading and baking biscuits as early as mid-November and the air is filled with the fragrant aroma of cinnamon, vanilla, cloves and star anise. At that time, my mother prepared from 30 to 50 different types of biscuits, one batch a day, meaning that these heady aromas were a constant in my life; I didn’t help her, I simply licked the mixing bowls, especially the ones that contained chocolate; this was one of the main reasons that inspired me to become a pastry chef. But then again, you never really become a pastry chef, there are no exams to pass and I still don’t consider myself a fully fledged patissier: there’s always something new to be learnt.” Ernst Knam began his career by working with starred chefs in Germany, Scotland, the UK and Switzerland before making his debut, in 1989, at the ‘court’ of Gualtiero Marchesi – the first Italian chef to receive three Michelin stars, at the time when Marchesi headed his famous restaurant on the via Bonvesin della Riva in Milan. “After three years,” Knam recalls, “when Marchesi moved to the ‘Albereta di Erbusco’, I struck out on my own; one Sunday, I grabbed my bicycle,

found the ideal shop window for my pastry shop and thought, yes, this is where I can open”. The rest is history, a history consisting of numerous international awards, of imaginative creations and endless experiments. He began focusing on the supremacy of chocolate, which became the undisputed star of mousses, pralines, tarts and even ice creams, sweet treats embracing the senses with unusual mixtures and fusions of taste, seducing the palate with savoury, spicy or ultra-sweet notes. It comes as no surprise that in his current role as a Chef Ambassodor for Expo 2015, Knam has chosen to add cocoa to the great menu of Expo. What might pleasantly surprise us is the reason for his choice, a reason that transcends his personal passion. “Over the past 25-30 years,” Knam explains, “research conducted in Australia has revealed that just 8 grams a day of dark chocolate containing a minimum of 70% of cocoa may reduce the risk of strokes and heart attacks by about 30%. This is extremely important data, especially for our health. But, I love chocolate generally; just like grapes, it all depends where the cocoa comes from: all the pods have different nuances meaning that we give completely different tastes and flavours to each sweet treat.” The King of Chocolate then adds: “I just fell in love with the word Expo, because Expo means so much in relation to this theme. Italy has the lot: mountains, land and sea. We have the best meat, the best fish, the best vegetables and the best fruit. We are blessed with absolutely everything and Expo has it all!”

Ernst Knam was born in Germany in 1963. He moved to Italy in 1989 to become chef patissier of Gualtiero Marchesi. In 1992, he opened his own pastry shop in the centre of Milan and began experimenting with unusual pairings, almost all featuring chocolate as their main ingredient. In 2009/2010, he was honoured with the title of Italian Chocolate Champion, in 2011 he was named Finger Food Champion, and in 2012 he won the Gelato World Cup. During the same year, he began hosting, ‘The King of Chocolate’ TV series. In 2014, he published his latest book entitled ‘Che paradiso è senza cioccolato?’

If you’re looking for a splurge, the Armani/ Ristorante, located in the city’s famed Quadrilatero is the place to go: a gourmand haven renowned not only for its delectable creations but also for its aperitivi. Mollica, has just touched down at this restaurant, a great destination for ‘celeb watching’ and business lunches. The emotion of time
Passionate, captivating, famous and the winner of multiple awards, Patricia Urquiola is one of the most active and esteemed architects on the global scene. Spanish by birth and Milanese by adoption - she has lived here for more than thirty years - it comes as no surprise that the designer has been chosen as one of the Ambassadors of Expo 2015.
P
atricia Urquiola’s contagious, almost hurricane-like energy gives her an irresistible charm, further heightened by her sunny nature, an instant reminder of her Spanish origins, only slightly attenuated by thirty odd years spent living in Milan. “I am a Spaniard from the Atlantic area. Though born in Asturias, my father is of Basque descent, thus explaining my surname. I was 16 when Franco’s dictatorship ended. During that era, you were literally forced to be non-conformist: that was my first lesson, i.e. that, at times, non-conformism is only a façade. Although here in Italy it was the 1980s, in Spain, we hadn’t even experienced the 1970s meaning that I found myself suspended between two different eras, non-conformism over there and a vibrant sense of collective euphoria over here.“ Patricia arrived in Milan in 1984 where, mentored by Achille Castiglioni, she graduated with a degree in architecture. She subsequently went on to work with design gurus of the caliber of Vico Magistretti and Piero Lissoni before ‘taking flight’ and setting up her own studio in 2001. In a short time, the Spanish designer’s overwhelming drive gave life to her style characterized by her deep love of artisanship and her in-depth research on textures and details, apparent in creations featuring an almost Apollonian balance between matter, colour and shape, designed to thrill and excite the public-at-large. “If I have to design an object, among its many functions, I always make sure that at least one of them elicits an emotional response: in spite of the crisis, I find it unthinkable to return to simplified or merely functional objects.” As far as Patricia Urquiola is concerned, emotion is indissolubly linked to time which itself becomes an inherent emotion of the creative act. “Time is fluid. The ancient Greeks made a distinction between chronos, chronological time, and kairos, emotional time. I have always been interested in time as an emotion. Even in the workplace. For example, when we move, we take certain things with us while leaving

others behind. Memory is not only about the past: it is linked to the future, to our expectations. To my mind, a project devoid of memory does not exist.” Her consecration in the world Olympus of design and architecture happened in a flash. Urquiola has received numerous accolades and awards (in addition to being elected Designer of the Year several times by AD Spain, Elle Decor International, Wallpaper and Architektur und Wohnen she was also honoured with the Designer of the Decade 2000-2010 award by architecture and design magazines Home and Häuser; King Juan Carlos awarded her the Grand Cross of the Order of Isabella the Catholic while the Governor of Spain awarded her the Gold Medal for Visual Arts). Her works are displayed at several of the world’s most prestigious museums – from MoMA in New York to the Triennale di Milano – and Urquiola has made such an impression that literally every major Italian manufacturer is ready to sell its soul to have a creation signed by Patricia Urquiola in its portfolio. Spanish by birth, and Milanese by choice, it was hardly surprising that this designer and living ‘dynamo’ was chosen to become an Ambassador of Expo 2015. “Expo is an important opportunity for my city; it’s a kind of exam but also a moment to reflect on what we are able offer to others, for better or for worse. However, apart from anything else, it serves as an opportunity for growth. The theme of Expo is also interesting: food and how we nourish ourselves is an issue that needs to be dealt with from multiple perspectives because we are faced with numerous choices; it’s a theme that branches out in many directions.”

PATRICIA URQUIOLA Born in Oviedo in 1961, Patricia Urquiola has lived in Milan since 1984 where she graduated with a degree in architecture under the supervision of Achille Castiglioni. Since setting up on her own she has become ubiquitous, designing furniture for all the major Italian manufacturers. As well as furniture, she has also turned her hand to her first love, architecture, with luxury hotels, showrooms, concept stores and installations. Not only was she nominated Designer of the Decade 20002010 but several of her works are also on display at MoMA in New York.
A NEW DINING CREED “Today, our table rituals have changed, the way in which we westerners entertain guests, our tempos. Dining habits have changed both at restaurants and in the home. In the old days it was customary to use your best dinner services for all courses. The same rules no longer apply. In order to amuse my friends, I often serve dessert in plastic plates.�

Even a city rich in history like Milan knows how to express passion and artistic creativity. Additionally, masterpieces of street art, a phenomenon that has become a part of the city’s urban culture, are now also being used to accessorize the streets of Milan.

Behind the scenes
In the year 2000, the renovations masterminded by Mario Botta transformed Milan’s 18th century Teatro alla Scala into a technologically avant-garde masterpiece. The new ‘scenic tower’, standing at a height of 56m, 18 of which are below ground, houses stage machinery capable of handling the most complex and spectacular stage sets, even when the curtain is up. The most advanced prototype in the world.

The Duomo of Milan is a masterpiece, rich in mystery and tradition. On the floor near the main entrance is a sundial, still visible with natural light, installed in 1768 by astronomers from the Accademia di Brera. Below, the “Nivola”, a strange gadget of ancient origin, thought to have been designed by Leonardo da Vinci. Once a year, in mid-September, it is used to celebrate the rite of the ‘Santo Chiodo’ (the Holy Nail). Thanks to a complex system of winches, it allows the archbishop and five priests to ascend 45 metres above ground to the apse’s vaulted roof to retrieve a nail, allegedly from Jesus’ Cross.

A Leonardo that you might not have expected…
The Last Supper, the Codex Atlanticus and his machines. But then, there’s also this mysterious portrait, a small, unforgettable painting, attributed to Maestro da Vinci, entitled ‘Portrait of a Musician’. It’s preserved, together with several other breathtaking masterpieces, at the Pinacoteca Ambrosiana.
… and the one that you were looking for
Each year, in order to view Leonardo’s Last Supper, 410,000 visitors stand in line. During Expo, at least another 300,000 are expected. As an image, ‘The Last Supper’ is the most reproduced religious painting of all time and has been put on everything from mirrors, to mouse pads, to musical pillows. In fact, on entering the refectory, visitors are often surprised that this is actually what it looks like.
Hidden treasures
It’s easy to admire its exterior complex, possibly viewed from the splendours of parco Sempione. However, Castello Sforzesco hides a secret belly, consisting of underground passages and unexpected niches. Leonardo also features here, and the myths abound.

Marvels
It’s the other face of the famed Pinacoteca di Brera, the Orto botanico and the Osservatorio astronomico. At the last census-taking, the Biblioteca Braidense, built at the behest of Empress Maria Teresa of Austria in 1770, boasted 898,377 printed books, 2,119 manuscripts and 2,368 incunabola. A truly wondrous sight!.

City of water
For centuries, until the beginning of the 20th century, Milan’s waterways were a pleasant and convenient way of reaching the city. A recent restyling of the basin of the Darsena, the old mercantile port of city, included the renovation of its two banks with new pedestrian paths and green spaces.
Mosaics
You’re not in Ravenna nor in Piazza Armerina. You’re in Milan, and this is Sant’Ambrogio. In addition to being noted for its medieval architecture, a perfect example of Romanesque splendour, there’s something else to admire: a rare mosaic, that after various vicissitudes, finally found its way here.
New hub
One of Milan’s oldest areas has been restored thanks to a urban project making it the most modern district in the city. The epiecentre of the area, packed with high-tech stores, bookstores, cafés, pizzerias and discothques, is the large raised square dedicated to architect and designer Gae Aulenti. The piazza is surrounded by skyscrapers, including the UniCredit tower, the highest building in Italy, and the multi-purpose UniCredit Pavilion, designed by Michele De Lucchi.
