First, we take a deeper look at what makes 2019 James Beard Foundation Award winner for Best Chef: Southwest, Charleen Badman, the “veggie whisperer” at her co-owned Scottsdale FnB Restaurant. Dine at restaurants helmed by James Beard Award-winning chefs. Michelle Glicksman
C
at a popular restaurant in Tucson. The year after she graduated high school, she knew she wanted to be a chef. After working alongside culinary greats at Café Terra Cotta and Rancho Pinot in Arizona, and Lobster Club and Inside in New York, Badman headed back to the Valley. In 2009, she opened FnB (www.fnbrestaurant.com) with Pavle Milic, the front-of-the-house manager and beverage director. “If you’re going to work that hard, you should own it,” she says. The accolades for FnB began pouring in immediately, from being named “Best New Restaurant” in a variety of publications to being highlighted in publications such as Food & Wine, Travel + Leisure Magazine and Forbes. Badman changes the menu at FnB seasonally, but also makes small changes week to week to

accommodate the ingredients that are available from local farmers. “That dictates the direction of the menu,” she says. Recent entrées have included Dave’s Roasted ½ Chicken with lentils, fennel-castelvetrano olive relish; Pasta with carrots, marjoram, goat cheese and crispy prosciutto; and Bluenose Bass, with heirloom cauliflower, snap peas, mustard, sunflower seeds and dill. As for her big win, Badman feels “Elated! Excited! Thrilled to bring it back to Arizona.”

hef Charleen Badman, co-owner of Scottsdale’s popular FnB restaurant, is also known by her nickname, the “veggie whisperer.” Badman creates inventive, globally accented seasonal menus that showcase the best of local ingredients. “It’s vegetable-focused, but there are plenty of meaty proteins available,” she says of the creations on her menu. “The biggest thing is that it showcases the farmers, ranchers and winemakers of Arizona.” In May 2019, Badman took home the James Beard Foundation’s Award for Best Chef: Southwest. The awards are considered the “Oscars of the Food World,” as well as the most prestigious honor bestowed upon American chefs. Badman completed a culinary program in high school and then worked

also a Best Chef: Southwest winner, serves up his famous inventive omakase at Nobuo, as well as offerings such as the Warm Duck Salad, Saikyo Yaki and Chicken Nanban. While pizza might not make a person think James Beard, the pizza at Pizzeria Bianco (www.pizzeriabian co.com) has been lauded as “arguably the best pizza in America” and
“perhaps the best pizza in America” by Food & Wine and The New York Times, respectively. And Zagat named Chris Bianco, the chef and owner, as one of the six chefs who changed pizza. The James Beard Foundation awarded him Best Chef: Southwest. Today, Bianco has five restaurants throughout the Valley—Bar Bianco, Pane Bianco, Tratto and two locations

In addition to Badman, there are many other James Beard Award-winning chefs in the Valley, as well as numerous semifinalists and nominees from years past. Chef Nobuo Fukuda owns Nobuo At Teeter House (www.nobuofukuda. com), an Asian-style teahouse by day and funky izakaya by night. Fukuda,

of Pizzeria Bianco. “Growing up in New York, pizza was omnipresent in my life. It wasn’t so much that I was inspired to do pizza, but wanted to search for a way to put something of worth into the world. Pizza seemed to check all of the boxes,” Bianco says. “I’m always humbled for any recognition that I’m fortunate enough to receive. The Beard award was something I had never dreamed of receiving. But being presented the award and recognized by your peers, by people that understand what it takes to make something special, meant and still means so much to me.” Chef Christopher Gross, another Best Chef: Southwest winner, a 2016 Lifetime Achievement Award winner from the Scottsdale Culinary Hall of Fame, and one of America’s 10 Best New Chefs by Food & Wine, among other awards, closed his popular Christopher’s & Crush Lounge in 2018 and joined the historic Wrigley Mansion to lead Geordie’s at Wrigley Mansion (www.wrigley mansion. com). He brought with him many of his iconic creations, from his HouseSmoked Salmon and Red Bell Pepper Soup to his Chocolate Tower. He’s also opened Christopher’s at Sky Harbor Terminal 3. Classically trained French chef Vincent Guerithault opened Vincent on Camelback (www.vincentsoncam elback.com) 33 years ago. Also a Best Chef: Southwest winner, he weaves his classic French recipes with Southwestern ingredients to create dishes such as Rack of Lamb with thyme, rosemary, garlic and spicy bell pepper jelly and Macadamia Crusted Sea Scallops with basil beurre blanc. In addition to being a James Beard winner, he’s received many other honors, including being the first chef to ever receive a Citation of Excellence from the International Food & Wine Society and was elevated to the prestigious rank of Officier in the National Order of Agricultural Merit—L’Ordre du Mérite Agricole on behalf of the Republic of France.

“Like many other chefs, sometimes I think of myself as an artist with a kitchen for a canvas,” Guerithault says. “Although my background is as a classically trained chef, I’m also the son of an engineer who was raised and inspired to invent and create. My move to Phoenix allowed me, for the first time, to take local ingredients that I had never used or even heard of before—cilantro, jicama, jalapeño or masa, for example—and apply them to my classic background style of cooking. It allowed me to be artistic and create a sort of fusion cuisine that was new and different. These Southwestern ingredients, which are bold and sometimes spicy, blend beautifully with the buttery, rich and traditional French recipes I’m used to making, like hollandaise and duck confit. I’m proud to say that it worked.”

For 40 years, Serrano’s Mexican Restaurants (www.serranosaz.com) has been serving up Mexican fare. The first location opened in Chandler in 1979, and it is the oldest continually owned and operated family business in that city. There are now five locations in the East Valley, and while it was originally begun by Ernie and Eva Serrano, today the restaurants are owned by their eight children, and run by six of them—as well as several grandchildren. Their love for family is reflected through the extensive family-style options in their Family Style + Fiesta Menu.
THE MAGGIORE GROUP (Hash Kitchen, Tomaso’s, The Sicilian Butcher, The Sicilian Baker)
It’s a father-son venture for The Maggiore Group (www.maggiore group.com). Tomaso and Joey Maggiore own four restaurants in the Valley—Hash Kitchen, known for its brunch menu and extensive buildyour-own Bloody Mary bar, which

has four locations; Tomaso’s, offering fine Italian food, steaks, seafood and wine, which has two locations; The Sicilian Butcher, a modern-casual restaurant with a choose-your-own meatball and pasta experience, with its three locations; and The Sicilian Baker, which brings a tavola calda bakery style to the Valley and has a build-your-own cannoli bar, with its three locations. Dad Tomaso has been in the restaurant business for more than 40 years, and Joey more than 20. Joey’s wife, Cristina, and his sister Melissa Maggiore-Mayer, also work at the restaurants.
BARRO’S PIZZA
In 1961, Angelino and Doran Barro opened their first family restaurant, Barro’s Pizza, in Chicago. In 1980 they moved to Arizona, opening a location in Mesa. Today, their sons, Mike, Ken and Bruce, own Barro’s Pizza (www. barrospizza.com), which currently has 42 locations in Arizona. It is still family-run, with wives, children, siblings and in-laws all working together.
U.S. EGG
U.S. Egg has been a breakfast and lunch destination in the Valley for more than 30 years. Best known for its protein pancakes, the restaurant, which is owned by the Gebran family, boasts healthy-minded options at its six locations. U.S. Egg (www. useggrestaurant.com) is co-owned by Oscar, the father, and his sons, George, Mario, Mike and Gebran.

At Gadzooks’ three Valley locations (www.gadzooksaz.com), diners enjoy a unique, infinitely customizable menu of build-your-own enchiladas, tacos, salads, soups and more. A frozen margarita paired with Mexican cuisine go together like peanut butter and jelly. It’s a refreshing drink—especially out in the desert—and can make any vacation that much sweeter or can help cap-off any long day after work. The Southwest is known for its tasty margaritas, concocted with a variety of fruity flavors, tequila and a rim of salt. Here are three of our favorite places to grab one in the Valley. TAYLOR CLAYTON
The name says it all and so does their menu, with a special section labeled “Modern Margaritas” featuring a wide variety of flavors served up in a normal glass or fish bowl. With happy hour specials happening all month long that include All Day Happy Hour, Margarita Mondays with margaritas for $3 each and Taco Tuesdays featuring $1 off tacos and $2 off all tequila, this establishment is not to be ignored when on the hunt for margaritas and is centrally located on High Street.
