As a big fan of OLA Restaurant in South Beach many years ago before I started writing about food, I was excited to interview Chef Douglas Rodriguez this summer about Cuban cuisine. He pointed out that daiquiris are classic Cuban—quite a surprise after my younger days of sipping them by hotel pools.
Kelly is a food photographer, food stylist and classically trained chef based in Fort Lauderdale and Santa Cruz, California. She worked for 12 years as a professional chef and and pastry chef in some of the nation’s best kitchens before diving into a new creative direction. Sterling’s approach to food is summed up in these few words: Keep it simple, natural and beautiful. That mantra has served her well, as she was the 2016 winner of the IACP (International Association of Culinary Professionals) photography award for best editorial photograph.

Miami has seen its share of fluctuations as the population—and money—came and went. One area that is making a comeback: Downtown Miami. Not too long ago, I wouldn’t dare to walk its dark and vacant streets at night. But today, it’s a must-stop neighborhood to see and be seen. Miami is forever changing. And for that, I am proud to call it home.

While working on the story about the new Faena Forum, I enjoyed taking a deep dive into the architecture of Rem Koolhaas’ Office of Metropolitan Architecture. I ditched the car for a CitiBike to commute to and explore the Faena Art District. Biking and walking around the block , I found the collection of buildings both intimate and grand. I was amused by the distinct designs down to the whimsical doodle-like drawings on the construction fencing. Perhaps it was a glimpse into what is in store at the new Faena Forum.

As a fine art and night photographer, Matt describes his technique akin to “… sculpting with darkness as a medium. I chip away the shadows to reveal light and dimension the way a sculptor chips away at a block of marble to reveal the sculpture within.” On location he literally paints his subjects with light in the middle of swamps, oceans and anywhere he finds inspiration.

Everglades National Park
The Everglades is the nation’s largest natural subtropical park with endangered and threatened species. With over 1.5 million acres, the park has many adventures to offer. Take a short walk to spot wildlife, climb atop Shark Valley’s observation tower for a bird’s eye view of the glades. Little Havana
A neighborhood of Miami, Little Havana is a vibrant area considered the epicenter of Cuban culture and heritage. This famed street is well-known for its old-world cigar shops where cigars are hand-rolled onsite, dozens of restaurants where the aroma of Cuban coffee permeates, as well as quaint shops and folk medicine stores called “botánicas.” At Maximo Gomez Park on 15th Avenue, you can join in a game of dominoes or chess. Domino Park as locals call it is an important social gathering place for generations of Cubans to discuss politics. NOW A PART OF Biscayne National Park, Stiltsville’s history dates back to the Prohibition-era of the 1930s when rumrunners, gamblers and outlaws sought sanctuary from persecution. Back then the stilt homes were known as “The Shacks.” Today, we know it as Stiltsville. Over the years, the shacks took on a nefarious allure as the site of speakeasies, private clubs and illicit activity. During its heyday in the 1960s, over two dozen buildings floated above Biscayne Bay’s seagrass beds. After fires and Hurricane Betsy and Andrew ravaged the area, only seven homes remain of the remnant community.

Opening its doors in 1897, The Royal Palm Hotel, on the north side of the Miami River, built by Henry Flagler, was one of the first area hotels in Miami. A stark contrast to today’s city skyline.
It may be the youngest major city in the country, incorporated in 1896, but Miami sure knows how to reinvent itself at lightning speed. Once a mangrove-infested jungle, Miami was transformed into a 20th-century city by the meteoric rise of technology and development. Although it has seen its own booms and busts, Miami continues to thrive as an international city as a new wave of investors transform a oncesleepy section of town: Downtown Miami/Brickell. After the arrival of Julia Tuttle and William and Mary Brickell, co-founders of the city of Miami, in the 1800s, the city’s first developmental boom began. Their efforts drew the attention of railroad magnate Henry Flagler, who extended his Florida East Coast Railroad from Palm Beach to Miami. During the 1920s, the area experienced a great real estate boom, with the population soaring from 30,000 to nearly 150,000 in just five years. Miami, and especially Miami

Beach, became a playground for the rich and famous, with mansions popping up and culture booming. It was during this era that Miami earned its “Magic City” nickname, given by frequent visitors who deemed its growth nothing short of miraculous. Thanks to a combination of the Great Hurricane of 1926 and the stock market crash of 1929, Miami’s growth came to a screeching, albeit temporary halt. As the nation recovered from the Great Depression, so did Miami. The post-War era brought development and celebrities to places like the Fontainebleau hotel, and then the end of American travel to Cuba brought both additional visitors and a flood of new residents to Miami. Downtown Miami lay dormant until the 1980s when “Miami Vice” glamourized the city and caught national attention. Cruise traffic out of PortMiami, travelers to the tourist mecca of Bayside Marketplace and the growth of banks and law firms defined the area for the next two decades. Then came the AmericanAirlines Arena where the Miami Heat NBA team, now play, followed by the Adrienne Arsht Center for the Performing Arts. The addition of those two facilities pumped up the cultural center vibe of downtown and paved the way for the explosion of arts and culture there today. Downtown Miami’s waterfront was gearing up for its cul-

tural revolution before the arrival of the Pérez Art Museum Miami in 2013. The three-story, 200,000 square-foot modern and contemporary art museum was designed by internationally known architecture firm Herzog & de Meuron. With the first floor 18-feet above sea level, this “sky rise on the water” offers waterfront views of Biscayne Bay. Inside are nearly 1,800 works of the 20th and 21st centuries. “The level of civic pride and level of ownership, and the way people use this museum has a lot to do with architecture and the fact that Miami was ready,” said Leann Standish, Deputy Director at PAMM. The AA Arena and Bayside Marketplace border the 30-acre Museum Park on the south; which is home to PAMM and the Patricia and upcoming Phillip Frost Museum of Science on the northside. The park now has easy access to the museums and includes a stop on Miami’s above ground rail system—Metromover. The cultural renaissance of the area extends north of the Biscayne corridor, with hyper-local gatherings organized by the burgeoning Arts and Entertainment District that include a variety of free public events featuring the works of local musicians, artists and filmmakers. Across the Miami River, and connected to Downtown Miami by the Metromover, is the Brickell area, home to the $1 billion Brickell City Centre. This 5.4 million-square-foot development by Hong Kong-based Swire Properties and world-renowned Miami architectural firm Arquitectonica includes luxury retail anchored by Saks Fifth Avenue, an Italian Food Hall and more than 100 shops, mixed-use spaces and the EAST, Miami hotel.

“We are trying to create a city within a city here,” said Clare Laverty, Assistant Vice President of Marketing and Public Relations for Swire Properties. “When we invested in that land in Miami, Miami wasn’t in a great place. And we are incredibly proud we put faith in Miami and saw the opportunity to do this.” A Metromover station at Eighth Street will connect to third-level retail center; five city blocks of underground parking at Brickell City Centre should help alleviate mobility issues in this in-demand neighborhood. Downtown Miami/Brickell already encourages visitors and locals to ditch their cars for bicycle-sharing programs like Citi Bike and of Uber and Lyft—making it one of Miami’s most pedestrian-friendly/walkable areas, replete with lush park spaces. With the national spotlight on Cuba these days, many people have greater cravings for a Cuban sandwich, “pastelito” (pastry) or “cafecito” (coffee). “When people come here, they want to eat at a Cuban restaurant,” says chef Michael Beltran, co-owner of the New World American-style Ariete in Coconut Grove. “It’s like going to New York and getting matzo ball soup. It’s a deep-rooted culture here. You see it on every corner
of Miami. Versailles, La Carreta and La Palma are Miami institutions. Versailles does home-style Cuban to the max.” Versailles, which opened the gateway in 1971, still makes national headlines. It introduced the traditional cuisine of Spanish, African and Caribbean influences to Americans. Beltran, a Cuban-American who prefers to eat Cuban at his grandparents’ house, grew up in Little Havana and

became a protégé of chef Norman Van Aken, known as the founding father of New World Cuisine. “It’s the soul food of the Caribbean. It’s peasant food, a lot of stews and rice and beans,” Beltran says. “At its root and its base, it hasn’t evolved, but you see it in fine restaurants now. Chefs such as Norman have done it in their own styles. Chef Douglas is a legend in his own right. They put those Cuban flavors on a national scale.” He’s referring to Douglas Rodriguez, another CubanAmerican raised in Miami and decorated by the elite James Beard Foundation. Called the “Godfather of Nuevo Latino Cuisine,” he is leading culinary tours to Cuba and opening the Mojito Bar and Plates at Sawgrass Mills mall. “There is no real technique to cooking Cuban food. They just throw everything in a pot,” says Rodriguez, known for OLA Restaurant (Of Latin America) in Miami Beach and the now-shuttered Cuban-centric Yuca in Coral Gables. “So it’s about adding technique and making it better. I’m just taking a modern approach with freshness and great ingredients—mixing them up differently.” “Actually, Cuban food here is more authentic and better than the food served in Cuba,” he says. “The most consistent thing in Cuba is inconsistency. Sometimes it’s hard to find even bread or sugar, and there are power outages.” “The mojito didn’t exist here 15 years ago,” Rodriguez says. “Now everywhere you go on the planet, you can get a drink with muddled fruit or herbs—a mojito. Now it’s the standard behind every bar.” When Beltran is not savoring one of his favorites, “tamal en cazuela,” a traditional Cuban stew, at La Palma in West Miami, he’s crafting sophisticated dishes at Ariete using a blend of American, classic French and Latin techniques. “There [are] small touches of my heritage in our food. Our foie gras is the best example; it’s served with smoked plantains, tossed in sour-orange caramel with local herbs—shiso and lemon balm—that give it a nice acidic freshness. It’s the most French-Cuban thing I’ve ever seen in my life,” he says, laughing. Still craving that Cuban sandwich? Well, Rodriguez points out it’s not Cuban; it migrated from Tampa. “The Cuban coffee window is not a Cuban thing either. It’s a Miami thing,” he says. W H E R E G U ESTBO O K

ART SPARK Celebrated Argentine hotelier Alan Faena seeks to transform Mid-Beach into a cultural epicenter with the Faena Forum BY DINA WEINSTEIN

In its first year, the Faena Forum, the first arts complex in its area, will bring ballet, music, poetry and art exhibitions to Miami’s MidBeach neighborhood. Located on Collins Avenue, between 32nd and 35th streets, the cultural center was the brainchild of Argentine developer Alan Faena. “I wanted to create a district of arts and culture which is most important, using the most famous architect of the world — Rem Koolhaas/OMA — making one of the most important and iconic buildings in Miami,” said Faena. Designed as a public venue, Faena Forum joins a growing list of cultural destinations, galleries and artists who have discovered the vibrant Miami Beach community, among them Bass Museum of Art, The Wolfsonian-FIU and ArtCenter/South Florida. En su primer año, el Faena Forum, el primer complejo de artes en su área, traerá ballet, música, poesía y exposiciones de arte al vecindario de Mid-Beach. Rem Koolhas/OMA is also set to open in November. Throughout the year, Faena Forum will present a vibrant cultural program including dance performances by celebrated New York choreographer Pam Tanowitz as well as a ballet, “The Tree of Codes,” choreographed by Wayne McGregor set to music by Grammy-winning English composer, performer and remix artist Jamie xx, from the London-based band The xx. Other works throughout the year will include solo projects or “Soledades” across disciplines (music, philosophy and science), a free monthly roller-dancing disco with beats from a roster of international and local DJs, debates and striking new commissions and installations sprinkled throughout the District including the beach. Tourism officials describe the Faena Forum as what is needed to “kick-start the cultural renaissance” of Mid-Beach. Oceanfront properties in the Faena District include Faena Hotel Miami Beach, formerly the historic Saxony Hotel, which was designed by film director Baz Luhrmann and costume designer Catherine Martin. Next door, Faena Versailles Classic and Faena Versailles Contemporary are luxury residential buildings set to open in 2017. And the already open, boutique hotel, Casa Claridge, built in 1928.

The center’s programming under the leadership of Ximena Caminos as Artistic Director, will ambitiously incite dialogue and discussions on contemporary issues, as well as produce a robust schedule of events centered on the arts, sciences, technology, politics and urbanism. “Our programming seeks to nourish and awaken Miami’s cultural life and provide artists with the space and resources to push the boundaries of their disciplines and work outside of their existing parameters,” explained Caminos. Designed by Pritzker Prize-winning architect Office for Metropolitan Architecture, Faena Forum is also a sight to behold. The 50,000 square-foot, drum-shaped visual and performing art center, inspired by Frank Lloyd Wright’s Guggenheim Museum in New York, has been constructed thoughtfully, paying attention to the smallest details. For instance, the filigreed cutouts throughout the building were Miami-inspired and made to resemble the leaves of native palm trees.
