An Oasis in the Heart of WaikĪkĪ By Simplicio Paragas

O

nce lined with shops, the lush Royal Grove is now an oasis that has helped transform the Royal Hawaiian Center into more of a welcoming gathering venue where visitors and locals can shop while also learn about the area’s rich cultural and historical significance. “When the Royal Grove opened seven years ago, it allowed kama‘āina and malahini to come together,” says Rosalind Schurgin, CEO of The Festival Companies, which manages Royal Hawaiian Center for RHC Property Holdings, LLC. “We’re committed to the holistic experience; (the center) balances retail with Hawaiian culture and hospitality.” Surrounded by bubbling waterways and lush landscapes, the area has been dedicated to providing an experience for customers—both visiting and local—that is

unlike any other shopping center in Hawai‘i. Strolling in either direction on the makai (seaward) side of Kalākaua Avenue at the intersection of Seaside Avenue, flagstone walkways will whisk you into nearly half an acre of beauty that transcends time. Fountains of “waikĪkĪ” or spouting water welcome you into Helumoa with cooling waters reminiscent of the ancient ‘Āpuakēhau stream that prior to the 1928 Ala Wai Canal flowed freely from the verdant Ko‘olau mountain range into Māmala Bay. The centerpiece of the Grove is an elegant bronze statue of Ke Ali‘i Bernice Pauahi Pākī Bishop, a remarkable Hawaiian woman of great vision and integrity. Today, Royal Hawaiian Center honors her legacy by generating revenues that support Kamehameha Schools, the land owner, which continues its noble mission of educating the children of Hawai‘i. Located in the Grove, Helumoa Hale Guest Services and Heritage Room is a state-of-the-art facility where hosts greet you with warm hospitality. Enjoy short films on an array of Hawaiian topics created especially for Royal Hawaiian Center guests, and two critically acclaimed music videos produced by Kamehameha Schools Publishing. Project Kuleana showcases two mele or songs that speak to the core of Hawai‘i’s indigenous population: “Kaulana Nā Pua” composed in 1893 after the overthrow of the Hawaiian Kingdom and, a more contemporary anthem, “Hawai‘i Loa Kū Like Kākou.” Helumoa Hale is also your “go to” facility for information on our world-class restaurants and retailers, as well as schedules for performance and complimentary cultural classes. While most major shopping centers will close during the holidays, the Royal Hawaiian Center remains open, from 10 a.m. to 10 p.m., all year around, including on Christmas Eve and Day, and New Years Eve and Day. And on Jan. 1, 2015, the Center will kick off the new year with a Fukubukuro promotion. aomi Braine remembers when her late grandmother, “Aunty Bella,” would sew lei for Waikīkī tourists. Today, the younger Braine teaches them how to string their own traditional garland of flowers at the Royal Hawaiian Center. A third-generation lei-maker, the Honolulu native explains that there are many styles of lei and each one is special in its own right. “I want to teach everyone in the next generation how to make lei,” says Braine, who started offering lei-making classes a year after the Royal Hawaiian Center opened in 1979. “It’s part of Hawaiian culture and an important part of my heritage.” With 25 participants seated, Braine and fellow Japanese-speaking instructor, Miyoko Kimitsuka, begin by placing a basket of orchid, lantern ilima and tuberose petals in front of each student. Seated across from me, Aya and Momi immediately picked at the petals, bringing each one closer to their noses. “Beautiful,” beams Aya as she inhales the fragrance of the tuberose. “I took this class because I want to learn more about Hawaiian culture.” Indeed this seemed to be the motive for fellow students, who consisted of a mixed group of Japanese, Canadian, German and Indian nationals. We laughed and

giggled as we pierced our petals with a 12-inch needle. Demonstrating the correct method of stringing flowers, Braine and Miyoko explain that leimaking is an art form, and requires patience and a steady hand. This is no good, Miyoko tells me after I threaded my first six petals. “I showed you where to poke the needle,” she gently chides, as Aya and Momi cover their mouths and laugh at my mistake. “The orchid can’t spin; it has to sit firmly on the needle.” After a few more attempts, Miyoko congratulates me and quips, “Now you’re a lei-maker.” Recognized as a “Master of Traditional Arts” by the National Endowment for the Arts and a native Hawaiian “Living Treasure” by the Smithsonian Institute, Marie McDonald is Hawai‘i’s best known practitioner of the art 56 i Royal

of lei-making. In her 1978 seminal book, “Ka Lei —The Leis of Hawaii,” she writes that countless generations have honored life passages large and small with blossoms strung in endless ways — “not to mark just the joyous and happy moments, but also those filled with sadness and grief, nostalgia, accomplishment and pride.” “The lei is an expression of love, affection, honor and respect,” says McDonald during an interview with National Endowment for the Arts. “It’s the most beautiful thing I can make, from the most beautiful material at hand. As long as the lei is at its peak when I give it to you, it shows that I care.” Free lei-making classes are held Monday-Saturday at 1 p.m. on Level 1 of Building A. Flowers, lei needles and cotton thread are provided. Arrive early as space is limited to 25 students.

Hawaiian 101 an easy glossary

‘Ōlelo Hawai‘i is the indigenous language of Hawai‘i. Along with English, Hawaiian is an official language of the state of Hawai‘i. Here are some Hawaiian words and phrases you will see and encounter at Royal Hawaiian Center, along with a helpful pronunciation guide. Some Hawaiian words have no perfect parallel in English pronunciation, because it’s often difficult to differentiate between the gliding vowels ae/ai and ao/au. • Hale kŪ‘ai (huh-lay koo-eye*) Store Royal Hawaiian Center has a variety of hale kū‘ai that range from luxurious to casual. • KAI (like “kite,” minus the “t”) Sea Royal Hawaiian Center is just steps from the kai and Waikīkī beach, famous for its sands, surf and sunsets. • KALĀKAUA (Ka-lah*-kau-uh) The Hawaiian Kingdom’s seventh ruler The namesake of Waikīkī’s main thoroughfare, King Kalākaua’s name was inherited from an ancestor and means “the day (lā) of battle (kaua).” • KALO (kah-loh) Taro The kalo, or taro plant, brought to these islands by the first settlers, was a staple of the Native Hawaiian diet. See kalo plants in The Royal Grove between Buildings B and C. • limu (lee-moo) Seaweed Limu is a staple food for the honu, Hawaiian green sea turtle. 66 i Royal

• NIU (neē-ooh) Coconut The Royal Grove, known as Helumoa, contains dozens of coconut trees that have been the spiritual center of this property for generations, since the days when 10,000 niu trees grew here and Helumoa was home to ali‘i (royalty). • ‘ŌHI’A LEHUA (oh*-heē-ah-layhoō-ah) The flower of the ‘ohi‘a tree and the official flower of the island of Hawai‘i This is the favorite flower of the volcano goddess Pele. In the moist uplands where it more commonly grows, rare honeycreepers feed on the nectar from its feathery blooms. A few ‘ohi‘a trees grow in the Royal Grove and are a treasured part of this site. • PĀ‘INA (pah-eē-nah) Dinner, meal, or small party; to dine There are nearly two dozen opportunities to pā‘ina at Royal Hawaiian Center: a food court and restaurants offering multicultural fare. • Uapo (oo-wah-po) Bridge The uapo over The Royal Grove is named Kahalaopuna for the princess of Mānoa Valley whose beauty was likened to a rainbow. • ‘ULU (oo-loo) Breadfruit A food staple for the Hawaiians and a Hawaiian symbol of growth, ‘ulu provides shade and beauty at Royal Hawaiian Center. It’s also a classic pattern used in quilting classes, offered at Royal Hawaiian Center. * Signifies emphasis * In Kalākaua, the vowels “au” are pronounced as in “house.”

eaning “brave” or “bold,” in Hawaiian, koa derives from the acacia tree, grown naturally only in the Islands. In ancient Hawai‘i, koa wood was sculpted into images of gods or carved into canoes for ali‘i (royalty). Because of its resiliency, this endemic wood was also used to create weapons, paddles and surfboards. Ancient Hawaiians believed each individual tree possessed a sacred mana, energy; so selecting a tree for use, especially when preparing to build a canoe, was a great spiritual undertaking. Founder Philip Chiang draws from family recipes By Simplicio Paragas

T

he initials P.F. stand for Paul Fleming. The Chang is actually Philip Chiang … with an “i.” And when the two friends opened the first P.F. Chang’s in July 1993 in Scottsdale, Ariz., little did they know that the concept would explode with now more than 200 locations worldwide. The idea was simple: Introduce Chinese cuisine with an American-style sensibility. It was a paradigm shift aimed to reconceptualize the mainstream image of this type of ethnic restaurant. And while critics initially questioned the “authenticity” of the food, Chiang dismissed the naysayers, defending that the menu he developed was based on his mom’s popular Mandarin restaurant in Beverly Hills, Calif., and his own Chinese-style bistro in Los Angeles, Mandarette, where he met Fleming, a frequent visitor. “You couldn’t get more Chinese than both those restaurants so I get a little defensive,” asserts Chiang, during a phone interview from his home in California. “Everything we do is typically Chinese; we cook with woks, we use

Chinese ingredients and you’ll only find cleavers in our kitchens. Everything is absolutely Chinese … except for the peoples’ mouths eating our food.” To be sure, diners can now experience P.F. Chang’s in such countries as Mexico, Brazil, Argentina, Canada, United Arab Emirates and in the Philippines. Locally, the restaurant has a single Waikīkī location, which marks its sixth year at the Royal Hawaiian Center. As an operating partner and one of the key figures to help open the Waīkikī restaurant, Ed “Eki” Locke experienced his first taste of P.F. Chang’s in Dallas, Texas. While working at another restaurant, Locke would frequent P.F. Chang’s at least twice a week, always ordering the same dish — Mongolian beef with white rice. “One day one of the employees said to me if you like P.F. Chang’s so much why don’t you just come work with us,” Locke recalls. “The light bulb went on so I called a friend who worked at P.F. Chang’s and he got me an interview. R Dining Others are drawn to the vegetarian lettuce wraps. Offering a little Northern and Southern flair, these wraps are addictive and will even appeal to the meat-and-potatoestype eater. Chunks of wok-seared tofu are melded with red onions, water chestnuts, mint and lime then folded into a crisp, cool leaf of lettuce. They’re accompanied by a dipping station, comprised of bottles of shoyu, vinegar and chili oil, as well as little ramekins of chili sauce, a soy-based dipping sauce and, of course, the ubiquitous Chinese staple of hot mustard. A cursory review of the menu reveals a laundry list of popular Chinese dishes, ranging from wonton and hot-and-sour soups, to Sichuan beef and spicy kung pao chicken, to fried rice and dan dan noodles. And if you’re gluten sensitive, P. F. Chang’s is one of only a few restaurant chains that offer a dedicated menu to diners who must adhere to a strict gluten-free diet. “We’re an Asian Bistro that offers a taste of the cuisines of the various regions in China,” Locke asserts. “Chiang selected the best recipes he thought represented the various regions and combined them in one menu. So we’ve got Sichuan, Singapore, Hunan and Cantonese dishes. And we’ve also added some local flavors and soon we’ll introduce some specialty sushi rolls.” The evolution of P.F. Chang’s continues worldwide but its story began with two businessmen who started a restaurant concept on a simple handshake. “Paul is no longer with the company and my role has certainly changed since we first opened,” Chiang says. “Nowadays, I’m more like the Colonel Sanders or Fu Manchu promotional figure head. Romaine Lettuce Wraps (Serves 4) Ingredients 1 pound of chicken, diced into tiny pieces 3 tablespoons fresh ginger, minced 1 tablespoon garlic, minced 1/2 teaspoon dried chili flakes 3 tablespoons soy bean or vegetable oil 2 heads of romaine lettuce, cleaned 1/2 cup fresh orange juice 1 tablespoon fresh lime juice 1 tablespoon fresh lemon juice 1/4 cup soy sauce 1 tablespoon hoisin sauce 1 ounce scallions, thinly sliced 2 tablespoons soy sauce

Directions 1. Place the chicken in a mixing bowl and add 2 tablespoons soy bean oil, ginger, garlic, chili flakes and 2 tablespoons of soy sauce. Mix well and marinate in refrigerator for 2-4 hours. 2. Whisk together citrus juices, soy and hoisin sauce. Reserve until needed. Clean the romaine lettuce, chopping off the stem, peeling each leaf. Refrigerate until ready to use. Chop scallions into rings and chill. 3. Lightly coat a hot sauté pan with soy bean oil. Evenly spred the chicken and sear until crispy and golden brown, about 2 ½ minutes. Once chicken is brown, toss gently in pan and sear another 2 ½ minutes to caramelize. 4. Add ½ of the citrus soy mixture to the sauté pan and coat well. Let the sauce coat the chicken until it is glazed, and thickens on the meat. Add more or less depending on how “wet” you want your mixture. Spoon chicken onto a plate. Wrap the chicken mixture in romaine lettuce and top with scallion rings. Serve and enjoy.

While I’m a purist at heart, offering a Champagne cocktail option can add another special element while offering something a little different. With cocktails, you needn’t go with Champagne, as a quality, less pricey sparkling wine can be used in its place. Serve before dinner along with canapés or other finger foods. It’s the ideal way to allow merriment to ensue. Classic French 75 Cocktail Makes: 1 serving Ice cubes 2 ozs. gin 2 tbsps. lemon juice 1 tbsp. simple syrup * 4 ozs. chilled Champagne or sparkling wine Fresh raspberries

Fill cocktail shaker with ice. Add gin, lemon juice and simple syrup; shake well to blend. Strain into champagne glass; top with champagne. Garnish with raspberries. * To make simple syrup, in small saucepan, bring equal parts sugar and water to a boil, stirring until sugar is dissolved. Let cool; refrigerate for up to one week. Rock-A-Hula! in the Showroom Tribute show dazzles with song and dance

lvis is in the house. And so, too, are Michael Jackson and Lady Gaga. And together, the trio put on an entertaining “Rock-A-Hula!” show, which combines toe-tapping songs complemented with writhing hips and exhilarating choreography. Presented in a state-of-the-art, 750-seat theater, the fast-paced, 75-minute musical production has become one of O‘ahu’s top attractions. “You get the best of a Las Vegas production combined with Hawaiian elements threaded throughout the show,” says Brian Brigner, chief operating officer for Legends in Concert, which collaborates with Star of Honolulu Cruises & Events to present “Rock-A-Hula.” “It’s just a dynamite show that appeals to everyone.” Played by Johnny Furtuno, Elvis opens the show with such classic hits as “Drums of the Islands” and “Jailhouse Rock.” Of course no tribute to the King would be com76

Talented and energetic, Wiatrowski amps up the production, strutting along the stage and striking poses while singing such hit singles as “Poker Face” and “Just Dance.” Moonwalking across the stage, Damian Brantley nails the role of Michael Jackson, hitting all the right notes in “Billie Jean” and “Thriller.” “It’s a big production and it definitely has that wow factor,” Brigner says. “We knew when we decided to enter the Hawai‘i market, it had to be a different show from any Legends in Concert. This is completely written differently and it’s the best production

we’ve ever staged.” Polynesian-themed performances are interspersed throughout the show, including acts by world champion fire-knife dancer Hale Motu‘apuaka and 15 dancers who provide constant rhythm and movement. The show ends on a high note when the entire cast gathers on stage to sing “We Are the World.” Tickets start at $65 for the “Legendary Cocktail” package, which includes a cocktail and meet-and-greet with the show’s stars. uch like wine culture, coffee connoisseurs can taste the remarkable differences between beans cultivated in different regions: Colombian blends are delicate and mild with a tinge of sweetness while a cup of Ethiopian coffee is expected to be earthy and bold. nce a maintenance worker with a Japanese railway company, Makoto Kinoshita decided to switch career tracks and move to Hawai‘i to open Champion’s Steak & Seafood at the Royal Hawaiian Center’s Pā’ina Lānai Food Court. That was two years and four months ago exactly, recalls the 49-year-old restaurateur. “I love Hawai‘i and I love to eat steaks,” Kinoshita smiles. “I had no restaurant experience but I hired a Japanese chef to show me how to develop the flavors.” In the past decade, Hawai‘i’s dining scene has seen a proliferation of fast-food restaurants offering steak plates. But unlike those other places, where the beef is sliced into pieces, the New York striploin at Champion’s is served whole. Tender and lean the 8-ounce cut is well seasoned and prepared to an ideal medium-rare temperature. A side salad and two scoops of rice turn this into a hearty lunch or dinner. Other menu items include shrimp, fish and chicken. “I created the menu because I know Japanese visitors love to eat steaks,” Kinoshita says. “Even myself when I used to come here on vacation I would always look for places that serve steak.” Champion’s Steak & Seafood, Building B, Level 2, 808.921.0011
