Ka welina o ke aloha iā ‘oukou pākahi a pau! Welcome to our Royal Hawaiian Center here on the esteemed lands of Helumoa, Waikīkī. We are so proud to invite you in to this beautiful place, and we thank you for taking the time to join us. In most of the world, this is the winter season and, while I do love white Christmases very much, I am so happy that those of you who would otherwise be enjoying the snow decided to visit our islands instead. Gift-giving is an important value in Hawaiian culture. I remember as a child growing up here on the island of O‘ahu that whenever we visited relatives—grandparents, aunts and uncles, no matter how far removed, cousins with newborns to add to the family genealogy—we always took something with us. Sometimes, it was Mama’s haupia (a kind of coconut gelatin, my mom’s own secret recipe); sometimes Daddy would stop at the dim sum shop in

Chinatown to pick up some manapua (a local version of the Chinese char siu bao, a sweet pork bun). We always took something with us, and we made sure to give it with aloha because that is the Hawaiian way. Gift-giving is, arguably, one of the reasons Hawai‘i has done so well in the visitor industry over the years. While Mexico may have beaches that are as beautiful as ours, and Tuscany might offer excellence in the way of grand resorts and villas, Hawai‘i will always be home to our highest value: aloha. It is our greatest gift to the world, and it is one gift I truly hope this season that the world will come to learn and to appreciate. Our aloha teaches us not just to tolerate each other’s differences but to celebrate them in the best ways possible. We invite you into that celebration and hope that you, too, might find and acknowledge the best in each other. Fronting Kalākaua Avenue, Royal Hawaiian Center is lined with high-end merchandise, and you’ll find friends in our Harry Winston salon, Salvatore Ferragamo and Kate Spade, too. Don’t forget, though, to come inside and visit our locally owned and operated stores. Fighting Eel is always a favorite, as are Pink Sand and Island Vintage Coffee, for sure! Red and white are their colors of the season, paying homage to the brand’s signature color—Valentino Red—and honoring Cuba’s love for the color white. WHEN IT COMES to fashion influences that reach across continents, no brand is as international as Italian clothing company Loro Piana. From the high altitudes of South America and Northern China to the coastlines of Italy and ultimately the window displays of Royal Hawaiian Center, Loro Piana’s dedication to producing the finest fibers has become the epitome of luxury and style. The story of the Loro Piana family and brand dates back to the early
19th century, when the Loro Pianas were successful wool fabric merchants. The business took off after World War I, when the preference for luxury fabrics grew in Europe and America. When brothers Sergio and Pier Luigi Loro Piana took over their grand-uncle’s (founder Pietro Loro Piana) fabric business in 1975, Loro Piana expanded into a luxury retail line. Through considerate and proactive production plans, Sergio and Pier Luigi were able to develop their own manufacturing facilities in Italy, where the fibers are carefully produced. Cashmere is their bread and butter. The carefully constructed and meticulous process of choosing each gram of harvested wool is why Loro Piana’s reputation for heavenly soft cashmere is so strong. Between the months of April and May, goatherders in Northern China and Mongolia harvest the underfleece of Hircus goats by delicately combing out the fibers—extracting 250 grams, which then become 100 grams after the coarser fibers are removed. The bales of selected fibers are then transported to Ulaanbaatar, where it’s washed and dehaired. Then, it’s on to Bejing where only the finest are selected and sent to Loro Piana’s laboratory in Italy, and transformed into yarns and fabrics. Loro Piana has also created an extremely rare and precious fiber known as Baby Cashmere®. Similar to the harvest of regular cashmere from Hircus goats, Baby Cashmere® is derived from Hircus goat kids between the ages of three to 12 months old. Unlike the average diameter of 14.5 microns for each fiber of a Hircus goat, a Hircus goat kid will extract fibers that are 13 to 13.5 microns. Because one kid can produce no more than 80 grams of fibers, which reduces to 30 to 40 grams after it’s sorted through, Baby

The melodic Hawaiian gift honors the deeds of ali‘i
MELE INOA, Hawaiian name chants, were composed for ali‘i, ruling chiefs, in ancient Hawai‘i. They are known for their ingenious application of metaphor, wordplay and insinuation, or kaona in Hawaiian. Mele inoa were used to proclaim the great deeds of ali‘i, or to tell of their beauty and charm. In this manner, the status and esteem of an ali‘i was elevated among other chiefs and the maka‘ainānā, common folk. With the introduction of new peoples and cultures, this genre of poetry naturally evolved to suit the growing fondness of western-style music by kānaka—the term Hawaiians use to identify themselves—for lilting melodies. The subject matter of mele inoa also expanded to include persons of all social strata. Whereas this genre was once reserved for Hawai‘i’s ruling class, it now was one for the masses. The cultural significance of mele inoa, however, did not take on any alterations. From ancient times to today, mele inoa are considered one of the highest forms of honor. In the contemporary era of the genre, mele inoa honor individuals whose life’s work has had a major impact on the community at large, dear friends or new acquaintances for their generous hospitality. The task of composing a mele inoa remains daunting and requires a deep understanding of Hawaiian language and lore. Quite often the composer shares a special relationship with the honoree, making the task a deeply personal investment filled with strong emotional ties. The occasion when a mele inoa is first shared

with the honoree is momentous. The deepest affections surface in all those present. Not one dry eye, even among the most stalwart of people. Mele inoa are exquisite, literary musical gifts. They convey complex thoughts and feelings using the right words, strung together in the right order, expressed poignantly in the right manner. In 1868, Princess Pauahi Pākī’s hānai sister, the future Queen Lili‘uokalani, known then as Lili‘u Pākī, composed “Pauahi ‘o Kalani,” a mele inoa, for her elder sister. When Lili‘u began attending the Chiefs’ Children’s School, Pauahi became her music and piano teacher. Lili‘u’s genius of music, a strong family trait, was apparent from a young age. Lili‘u, who could quickly memorize the tune of a song, was often taught a melody before her elder classmates, and then asked to teach them in turn. Pauahi ‘o Kalani was written on the occasion of a trip the sisters took to Hawai‘i Island. During this neighbor island jaunt, the sisters visited (in order as mentioned in the mele inoa) the chilled heights of Mānā on the northern side of the island in the moku, district, of Hamākua. From this location, one has a majestic view of Mauna Kea and its snow-capped peaks. The excursion then leads to the moku of Puna on the eastern side. Puna is where the fire goddess Pele migrated to from Kahiki and is known for its sweet scented bowers of hala, lehua and maile. The journey ends in the lush, maile-teeming forests of Pana‘ewa.

The hui commences in the third stanza and introduces the male tenor and bass voices. At this point, the entire ensemble is full of rich harmonies. The deep bass line marches up proudly and the sopranos take to the top of the ledger in soaring reply. The ending line, “kau i ka wēkiu,” means the highest place, which is analogous to Pauahi. Although her birthright afforded her royalty, she chose instead to lead a modest life, preferring the title Mrs. Bishop over the grand honorific Queen of Hawai‘i.

Pana‘ewa’s green canopies shroud the mythical Paliuli. Pana‘ewa is also home to the beautiful, winged honeycreepers. The hui, or chorus, praises Pauahi as an ali‘i of “the highest reaches.” Pauahi was the great granddaughter of King Kamehameha I, and was offered the throne by Kamehameha V. She humbly declined the honor, responding, “No, no, not me; don’t think of me, … There are others …” Her response has been arguably the single moment that has come to largely define how kānaka characterize Pauahi’s ‘ano, her moral quality. However, Kamehameha V refused to consider anyone else and died shortly thereafter. The final verse echoes Pauahi’s choice to serve rather than to rule. She decided instead to return to her people, nā kini, the multitudes, and to her home. As it happens, Pauahi ‘o Kalani went through some revision by Lili‘u. Noted Hawaiian historian, Kīhei deSilva, at the outset of a comprehensive article of the song states that “mele we think we know best are often those that surprise us the most.” DeSilva makes the case that as Hawai‘i was evolving and Pauahi’s role in Hawaiian society was changing, so too did Lili‘u feel compelled to alter her composition to accurately reflect that huliau, turning point. A sentence later, and as a metaphor for the enormity of mele inoa, deSilva says, “I call them iceberg mele. What we think we know is only the proverbial tip.” The evolution of Pauahi ‘o Kalani, as a mele inoa, is a featured article all on its own. But that is for another time, possibly.

Strumming Along THEY STRUM freely, looking down at the frets of their ‘ukulele, only to briefly look up to watch instructor Wainani Yim’s technique and finger placement. “Lock the ‘ukulele in the crook of your arm and across your chest,” Yim instructs the 17 students in attendance. Even language isn’t a barrier for Yim when she teaches her class. She smiles and nods in approval as she paces the room in Helumoa Hale at The Royal Grove. Part educational, part music lesson, Yim encourages students to interact and not to be shy about playing the wrong cord or strum in the wrong direction. Her students come from all parts of the world from Inchon and Italy to Tokyo and Toronto.

No musical instrument more quickly conjures Hawai‘i and its famous tropical imagery than the ‘ukulele. Pronounced ooh-koo-leh-leh (not “you-koo-lay-lay”), this four-stringed relative of the guitar is an offshoot of the Portuguese braguinha. Brought to Hawai‘i in 1879 by immigrants from Madeira Island—part of an autonomous archipelago off the coast of Portugal—the little instrument quickly caught on here. Hawai‘i’s king at that time, the well-traveled and sophisticated David Kalākaua, took a liking to the sound of the diminutive string instrument and had it incorporated into performances for the royal court. So rapid was its rise to popularity that within 10 years of its arrival in the Islands, the ‘ukulele became Hawai‘i’s most

popular musical instrument. Over the years, the original Portuguese design evolved in Hawai‘i with a look and sound of its own, and the modern ‘ukulele was born. “I love the ‘ukulele,” beams Margrith Arpepar of Lichtenstein, Germany. “This is my first lesson and I want to take more.” Fellow student Yuka Tanaka decided to take the class because she’s a big fan of Jake Shimabukuro,

a locally based ‘ukulele virtuoso with an international fan base. “It’s fun,” says the Japanese native. “And I love Jake.” The instruments can vary greatly in quality, appearing as an inexpensive, mass-produced toy for children or costing thousands of dollars when made from prized koa wood. Kamaka ‘Ukulele has been handcrafting ‘ukulele since 1916, and their popular collection is available at Bob’s ‘Ukulele here at Royal Hawaiian Center. ‘Ukulele classes are geared toward first-time learners and are held Tuesdays, Thursdays and Fridays at noon at Helumoa Hale at The Royal Grove.

Learn the Hula. Hula is the art of Hawaiian dance. It expresses all that we hear, see, smell, taste, touch and feel. Hula is life. The late kumu hula (dance master) Maiki Aiu Lake’s philosophy expresses the depths of this Hawaiian art form. Puake‘ala Mann, a kumu hula graduate of Halau Hula o Maiki, shares basic hand gestures, footwork and body movements that accentuate meaningful mele (chant or song) lyrics.

Lomilomi. Spirituality defines many of our cultural practices, especially in the area of healing arts, the most well-known of which is lomilomi. It has been practiced regularly for generations by all members of the ‘ohana while more intense, specific treatments are left to trained experts. The Royal Hawaiian Center has certainly evolved into a sensory experience. No longer is it primarily about shopping. Nowadays, this Kalākaua Avenue landmark is a prime destination for Hawaiian culture and dining. And anchor tenants now include swanky, established restaurants that provide their own seamless allure with intoxicating aromas and visual eyecandy. So whether it’s a well marbled rib eye or some Big Island abalone, diners can be assured a celebratory time at any of the six full-service restaurants at the Center.
Ancient Chinese Secret X stands for excellent and O signifies outstanding; at least that’s what I thought when I first tasted Beijing Chinese Seafood Restaurant’s XO sauce over slices of sautéed chicken. Slightly spicy, the Chinese condiment contains hints of chili, dried shrimp, scallop, garlic and ginger, all roasted, grounded and formed into a savory paste. The result is an explosion of flavors that takes the taste buds on a rollercoaster ride. “It’s homemade and not poured from a bottle,” says Beijing president Jimmy Wong of the XO sauce. “Everything we do here is prepared from scratch. This is not a chop suey type restaurant.” To be sure, dim sum service isn’t the usual hurried, cart-pushing scene but one that’s rather methodic with dumplings and other delights steamed-to-order. While other restaurants offer a laundry list of items, Wong says they prefer to offer “the best of the best.” This includes the pot stickers, which are plump and the skin chewy; the fresh chive dumplings that are pan-fried for a crispy underside; and the crackling Peking Duck, folded in a pancake with a dollop of hoisin and a pinch of shredded green onion, each bite simultaneously savory and sweet. On a Roll The road to happiness starts and ends at Doraku Sushi. The South-Beach-meets-Tokyo theme restaurant offers a hybrid between a zen retreat and a bohemian hangout. Buddha heads, Southeast Asian drums and Stone sculptures lend an exotic element to the room while also offering a dramatic juxtaposition to the black-and-red-themed bar and faux reclaimed wood. Modeled after an izakaya, the Japanese version of a gastropub, Doraku’s menu is extensive, ranging from sushi and cold/hot dishes to desserts and sake/cocktails. While the South Beach location emphasizes its fusion with Latin cuisine—rightfully so given the area’s large Central and South American population—this Hawai‘i outpost likes to describe itself as Pan-Asian, with a touch of cilantro, tomatillo and, yes, garlic chips. Two of the menu highlights include the pan-seared salmon served with asparagus and artistically garnished with colorful wisps of carrots, daikon and green onions; and the seafood salad composed of chunks of diced tuna, salmon, yellowtail, mango, tomatoes and a mix of spring greens. For large groups, order the 12-piece deluxe platter of snapper, octopus, tuna, salmon, yellowtail and swordfish; an eight-piece plate of nigiri that includes maguro (bigeye tuna), sake (Scottish salmon), hamachi, hiramasa (yellowtail amberjack), ebi (black tiger shrimp), shimesaba (pickled mackerel) and hotate (scallop); and a combination of sushi and sashimi. the aesthetic are unique among Thai restaurants in Hawai‘i. Even the interior has been elaborately designed and decorated, evoking images of opulent palaces in Thailand with golden leaves dangling from the ceiling in one private room and a mini “reflecting pool” in the main dining area. “You come here for the show and the experience,” says owner Noi Lapangkura, the restaurant’s namesake. “The food is authentic Thai but with a modern 74

twist to the presentation.” She’s right. Presented tableside, each type of curry is prepared with a protein that the chef has carefully chosen to best suit the flavor profile of that specific curry. The green curry, for example, is infused with kaffir lime leaves, Thai eggplant and basil then served with premium Wagyu beef that’s presented on a hot stone bowl. Chunks of Alaskan crabmeat are steeped in an aromatic yellow curry, which possesses just enough
kick to enliven the taste buds. The red curry roast duck arrives with the all pomp and circumstance afforded to royalty. A cylindrical glass houses the duck leg, which, once lifted, releases an aromatic plume of applewood-smoked bacon. It’s then transferred to an awaiting pool of curry that’s garnished with a surprising list of ingredients, including grapes, fresh local pineapple and lychee. Again the yin-and-yang of flavors offers a balance of spiciness, sweetness and acidity. Building C, Level 3, 808.664.4039 Asian Mix With a stylish bistro atmosphere, open-air lanai and upbeat servers to match, P.F. Chang’s is a favorite among large groups who want to partake in a host of dishes without emptying the wallet. Most menu items are made to share, such as Chang’s signature chicken lettuce wraps, spicy and savory chopped chicken with nuts and herbs are served with cold and crispy iceberg lettuce leaves. Thrill of the Grill Long before “organic” became fashionable, Restaurant Suntory was already using organic tofu, organic eggs, organic soy sauce and free-range chicken. The unwillingness to compromise the quality of the ingredients is paramount, according to director of operations James “Aki” Peters. “The ingredients that we use are better than most others,” he says. “We’re more of an upscale teppanyaki place.” Indeed, the room itself exudes a simple elegance framed by large windows that allow natural light in, with passers-by pressing their noses up against the glass to see chefs in action. The restaurant comprises three dining areas: the teppanyaki room, the sushi bar and two washoku (refers to any type of Japanese cooking) sections, where guests can also order a teppanyaki meal, without having to sit in front of the grill. If you’re in the mood to splurge, order Suntory’s set gourmet

Chang’s menu reveals a laundry list of common Chinese dishes, ranging from wonton and hot-and-sour soups, to Sichuan beef and spicy kung pao chicken, to fried rice and dan dan noodles. And if you’re gluten sensitive, P.F. Chang’s is one of only a few restaurant chains that offers a dedicated menu to diners who must adhere to a strict gluten-free diet. improved texture and flavor. “I don’t think any of the other restaurants can say that,” says general manager Bill Nickerson of the “Prime” steakhouse designation. “And there’s only one other steakhouse that dry ages their beef on premise like we do.” Steaks here are broiled at 1,600 degrees Fahrenheit for a blackened crust, and are served sizzling hot to preferred temperature. Steak cuts include filet mignon, New York sirloin and rib eye. Like other traditional steakhouses, sides are ordered à la carte, offering guests such options as jumbo baked potato, cottage or steak fries, sautéed onions, lobster mac and cheese and sautéed mushrooms. THEY’RE NO LONGER just bars but liquid kitchens. And they’re not bartenders; they’re mixologists. For the past decade, the art of crafting a cocktail has been an intoxicating trend to watch—and sip. Bitters, sours and just about every ingredient has been muddled, coated, dusted, frosted and flamed to achieve some form of magical potion. And while the cocktail landscape may have changed, the Blue Hawai‘i and the mai tai still remain the preferred libations among many of our visitors. Considered the godfather of Hawaiian cocktails, Harry Yee is credited with having helped spread tiki bars and tiki culture during the mid-20th century, both in Hawai‘i and in the continental United States. With orchids, parasols and even a Chinese back scratcher as garnishes, the exotic drinks of our islands are some of the most unusual in the world. Yee created 15 of them, including the Banana Daiquiri and Tropical Itch. He invented the Blue Hawai‘i in 1957 in Waikīkī because nobody knew what to do with blue Curaçao. This mellow, fruity electric blue libation is just a little older than Hawaiian statehood, preceding Elvis Presley’s movie and subsequent hit song by the same name. Slide aside the island garnishes (paper parasol, pineapple, orange wheel or perhaps a big Hawaiian blossom) and experience the liquid

version of that melancholy serenade to the tropics, full of exotic pineapple and tart orange notes. There are a many variations on the recipe for this drink—a subject of slight controversy—ranging from light rum to dark rum, and sometimes including Crème de Coconut or coconut rum. Then, of course, there’s the age-old dilemma: to blend, or not to blend? Its hue will vary, just like our Hawaiian waters, but the color is always unmistakably blue. “Those days when tourists came in, they said, ‘Give me a Hawaiian drink,’” Yee was quoted by author Rick Carroll. “We didn’t have any Hawaiian drinks. ter start making something for the tourists—something catchy, not too strong and nice to sip.” Try a Blue Hawai‘i at P.F. Chang’s (Building A, Level 1, 808.628.6760). In oft-cited cocktail lore, the late Vic Bergeron of Trader Vic’s fame is credited with creating the mai tai. In a 1947 book, “The Trader Vic’s Bartender’s Guide (Revised),” Bergeron explained how, in 1944, after success with several exotic rum drinks, he felt a new drink was needed. “I thought about all the really successful drinks— martinis, Manhattans, daiquiris, all basically simple drinks,” Bergeron wrote. “I took down a bottle of 17-year old rum. It was J. Wray & Nephew from Jamaica—surprisingly golden in color, medium bodied but with the rich pungent flavor particular to the Jamaican blends.” He infused the rum with fresh lime, orange Curaçao from Holland, a dash of rock candy syrup and a dollop of French orgeat for a subtle almond flavor. He then added a generous amount of shaved ice and shook it vigorously by hand to produce “the marriage” he was after. The San Francisco native gave the first two to friends Eastham and Carrie Guild from Tahiti. They took one sip and said: “Mai tai roa ae.” In Tahitian this means “out of this world, the best.” And a legend was born. In 1953, Bergeron introduced the mai tai to Hawai‘i at the Royal Hawaiian and Moana hotels in Waikīkī. “There’s been a lot of conversation over the beginning of the Mai Tai,” Bergeron told Carroll. “And

I originated the Mai Tai.” Another story involves Trader Vic’s amicable rival, Don the Beachcomber, who claimed he created the mai tai first in 1933 at his newly opened bar in Hollywood. The Beachcomber’s recipe is more complex than that of Trader Vic’s, calling for both dark and golden rum, Angostura bitters, anise-flavored liquor and Falernum—a Caribbean syrup that is now difficult to obtain. Today, the mai tai is served throughout the Islands, and O‘ahu’s mixologists have also come up with their own unique variations.
