Named after Ferragamo’s late daughter, Fiamma, the new satchel-style handbag features innovative design, interesting combinations of exotic materials, use of iconic silk print linings from the 1970s and novelty hardware stemming from the brand’s origins. H

elumoa, the Waikīkī land section that is home to Royal Hawaiian Center, is considered an important wahi paha – a storied place rich with history and lore. For centuries prior to King Kamehameha’s early unification of our Islands, Helumoa was home to such ancient O‘ahu rulers as Mā‘ilikūkahi and Kākuhihewa. Here in the legendary coconut grove of Helumoa, the arts thrived as an important element within royal circles. Prominent retainers in ali‘i compounds included the best poets, chanters, genealogists, dancers, artisans and others whose high-level skills were both enjoyed and supported by nobility. The haunting pulse of pahu drums carved from coconut logs and coverd with shark skin would accompany mele hula — poetic chant composed for the cared hula. Ho‘opa‘a chanted epic stories while drumming specific rhythms as ‘ōlapa provided physical and spiritual energy through graceful and powerful dance. Hula

kahiko is a broad term we use to describe older hula that has tenaciously survived through the generations, even when faced with strictly enforced abolitions by zealous missionaries. A renaissance in the early 1970s sparked the revival of Hawaiian language, music and hula that rekindled Hawaiian pride and identity. Today, Hawaiian music and hula are enjoyed by kama‘āina (locals) and malihini (visitors). A phenomenon worth of note is the remarkable interest and participation in hula among folks from whose numbers have climbed to one million. And that number continues to grow. The older styles of hula have also made a strong comeback in Waikīkī. Royal Hawaiian Center's Hula Kahiko at Helumoa Saturday series brings top hālau hula or traditional dance schools to share their talents in evening performances. trigger emotions and pride among the growing number of kama‘āina who appreciate Helumoa’s local vibe and Hawaiian ambiance. Mele are songs and chants performed in ‘ōlelo Hawai‘i, our native language. It is the mele that relate stories in the dance, a counterpoint to the common notion that the hands tell the story in the hula. In older styles, movements were often repetitive and vague. While the eyes took in the beauty and grace of movement, the ear focused on mele hula about island legends, superhuman heroes, ancient gods, the complexities of love, and virtually any subject of human experience and interest. Over time, Hawaiian culture was slowly disappearing and its language understood less and less by our people and, of course, completely foreign to the ears of malihini whose numbers steadily increased during the early 20th 54 i Royal

century. This era pinpoints the storytelling shift from a song-and-chant focus to interpretive hand gestures, much busier than the subtlety of earlier times. With the growing number of settlers and visitors, and the advent of World War II and subsequent arrival of soldiers enjoying R&R in the Islands, a new form of island music took root. Hapa-haole, meaning half foreign, is a still popular music genre where island themes and stories are sung in English. Such songs as “Little Grass Shack,” “Pearly Shells,” “The Cockeyed Mayor of Kaunakakai” and “Yacka Hula Hicky Doola” are examples of compositions from an outside lens with lyrics that were meant to be fun and carefree but were considered by some Hawaiian kupuna (elders) as degrading. However, there are great examples of hapa-haole tunes that succeeded in capturing emotions of love, romance and island beauty.

Hapa-haole, meaning half foreign, is still a popular music genre. There are great examples of hapa-haole tunes that succeeded in capturing emotions of love and romance. Andy Kealoha Cummings, a longtime Waikīkī entertainer and composer, was in Lansing, Michigan on a Hawaiian tour when he got homesick. Snowbound and missing his ipo (sweetheart), he penned this song that became an instant hit in Hawai‘i and around the world. “There’s a feeling deep in my heart, stabbing at me just like a dart, it’s a feeling heavenly. I see memories out of the past, memories that always will last, of that place beside the sea. Waikīkī, at night when the shadows are falling, I hear your rolling surf calling; calling and calling to me. Waikīkī, ’tis for you that my heart is yearning, my thoughts are always returning, out there to you across the sea.” Ku‘uipo Kumukahi, a regular performer at Royal Hawaiian Center, sings Cummings’ hapa-haole classic beautifully. A composer herself, she also shares songs in Hawaiian with stories that are from an islander perspective with deep roots and lots of aloha. trum up and down. And a five, and a six and a seven. Standing in front of a class of 17 students, Puakeala Mann eloquently provides beginners’ lessons on the ‘ukulele, demonstrating the proper way of holding what’s affectionately known as the “flying flea.” Since 1990, the auntie figure has taught thousands of visitors the basics of the four-sting diminutive instrument. The last time Miok Lee took a class with Mann was two years ago while she was on O‘ahu vacationing with her family from Korea. “She probably doesn’t remember me,” says Lee, who attended another one of Mann’s classes while here on business, “but I remember her and she taught me to appreciate the ‘ukulele.” Fellow student Sachiko, or Sachi as she likes to be called, beams as she picks at her ‘ukulele, keeping pace with Mann’s movements. A newlywed couple thought it would be fun to take a lesson, learning about it in the pages of this magazine. The new bride quickly picked up the rhythm and finger placements on the fret while her husband smiled in an impressed manner. “She’s the star student today,” Mann shouts out to the class. “She’s got it down already.” 56 i Royal

Others, too, strummed freely as Mann went through “Honolulu I Am Coming Back Again.” Swaying her hips and singing, Mann’s energy is infectious and welcoming. She tells the crowd not to be shy and to just play mele (music). “Now put your ‘ukulele down and shake out your hands,” Mann instructs the class. “Can you tell me how many Hawaiian words are in this song?” Mann says part of her program is to encourage visitors to embrace the Hawaiian culture. “I try to teach them a little about history, language, place and about the people who make Hawai‘i such a special place,” she smiles. “It’s about the aloha spirit.” As bystanders stopped to watch and listen, the class became more in tune, harmoniously playing together and confidently singing “I seem to hear the Pali calling me … I seem to hear the surf at Waikīkī.” Nearing the end of the class, Mann walks around with the microphone to allow the students to sing aloud. Some do. Others shy away. “This is your chance of stardom,” quips Mann, receiving chuckles from the students, including Sachi who belts out the refrain “Honolulu I am coming back again.” Indeed she will. Free ‘ukulele lessons are held Tuesdays through Fridays, from 10 to 11 a.m. at the Pā‘ina Lānai Food Court.

Choice Okonomiyaki means ‘you choose’ By Simplicio Paragas

O

ne looked like a folded square crêpe. Another resembled a giant pancake. But aside from appearing like traditional breakfast entrees, the two dishes that Okonomiyaki Chibo assistant executive chef Joel Mayo readied on the teppan grill had nothing to do with a morning meal. “We’re one of a few restaurants who specialize in this,” asserts Mayo, while pointing to the savory Japanese-style pancake and crêpe-like dish. “Most people know what teppanyaki is, but fewer know about okonomiyaki.” Popular in Osaka and Hiroshima, okonomiyaki is a style of cuisine that dates back to the Edo period. After World War II, a food shortage across Japan helped boost the dish’s popularity since its ingredients were relatively available and inexpensive. “Back then, though, it was only a snack made of flour and soybean paste,” explains Akira Kashimura, vice president for Okonomiyaki Chibo Restaurant. “But now, we’ve modernized it and it can be prepared with many different ingredients.” The Chibo house special is an Osaka-style okonomiyaki, the basis of which is a dense batter made of eggs, flour, cabbage, ginger and onions. “The secret is all in the batter,” Mayo smiles. “It’s got to have a bread-dough-like consistency.” Like he would as if preparing pancakes, Mayo spooned a dollop of batter on the grill and spread it around to form a large cirlce. He then began to sautee bits of prawns, scallops,

squid, sirloin and assorted vegetables. Once thoroughly cooked, all the ingredients were stacked on top of the “pancake” then finished with a top layer of batter. “I’ll flip it over two or three times and it’ll cook on the grill over a medium temperature for 10 minutes,” Mayo explains. “Everything here is made to order and in front of you.” When the batter turns to a golden hue, it’s slathered with a layer of Japanese mayonnaise then swirled with a plum sauce, and finally sprinkled with bonito flakes that appear to “dance” over the hot grill. R Dining “I need to work a lot on my okonomiyaki,” says a visiting Australian, adding that he attempts to make this dish at his home in Melbourne. “When I saw the okonomiyaki sign I had to come in since I haven’t had this dish since I lived in Japan.” A little lighter than the Osaka-style okonomiyaki is the Hiroshima iteration, which uses less batter but more cabbage and onions. “I prefer this one,” says Kashimura, who opened this Royal Hawaiian Center location back in 1990. “And I like it with bean sprouts and other vegetables.” Okonomiyaki lunch prices start at $14 ($18 during dinner), which includes two garnishes from the following list: beef, pork, bacon, chicken, squid, shrimp, scallops, octopus, corn, kim chee, vegetables, cream cheese, avocado and a mochi-and-cheese duet. Extra toppings can be added for another $3.50 per ingredient during lunch and $4 during dinner. “Okonomi means something like ‘you choose,’” Kashimura explains. “People can combine any number of ingredients, but a lot of customers love the bacon with mochi and cheese.” Another type of okonomiyaki is the pu-monju, ($38), which is a Chibo original. This one has more of a crêpe consistency, which is folded into a square shape and stuffed with a trio of beef, shrimp and squid or shrimp, squid and scallops. Those who like their noodles may want to opt for the yakisoba, which can be fried with similar ingredients found with the okonomiyaki. And it, too, comes with two garnishes and is priced at $14 for lunch and $18 in the evening. Other options include complete teppanyaki meals, from Prime New York steak to a combination of shrimp, scallops and squid. Prices start at $13 for fried mixed vegetables with sirloin and squid for lunch and $12 for radish sprouts rolled in beef for dinner. Daily lunch specials are available, such as hamburger steak ($13) and a loco moco ($14); six-ounce rib-eye steak ($14, Mondays and Fridays); pork tofu ($13 on Tuesdays); grilled salmon ($14, Wednesdays); and garlic shrimp ($13, Thursdays). All come with salad, rice, miso soup and tsukemono. “There were only two other restaurants serving okonomiyaki when we first opened,” Kashimura recalls. “Not many people outside of Japan knew what okonomiyaki was; but now more people are saying, ‘I had this when I was in Tokyo.’” Now they can say they’ve had it at Chibo’s in Waikīkī. Homestyle Okonomiyaki (Serves 2) This Osaka specialty can be portioned in quarters and served as appetizers.

Ingredients 4 ounces grated naga-imo (yam) 4-5 tablespoons dashi 2 ounces all-purpose flour, sifted or whisked 2 large eggs 2-3 tablespoons beni shoga (pickled shaved ginger) 4 tablespoons tenkasu (tempura crumbs) 2 cups packed, roughly chopped cabbage 3 tablespoons finely chopped green onion 1 tablespoon tiny ama ebi (dried shrimp) 6-8 thinly sliced pork belly or bacon

Garnish Katsuoboshi (shaved bonito), aonori (green seaweed condiment), okonomiyaki or tonkatsu sauce thinned with Japanese-style mayonnaise

Directions 1. In a large bowl, mix yam with dashi and flour; beat in eggs. Add the cabbage, beni shoga, tenkasu, green onion and ama ebi. Mix lightly. 2. Oil a griddle or very large frying pan and set on medium-low heat. 3. Scoop one-third to one-half of the batter into an even circle on the griddle. 4. Place 2 to 3 strips of pork on top of batter. Place a lid on top and let it steam-cook 5-6 minutes. When the pork turns color, it’s time to flip. 5. Drizzle or brush with okonomiyaki or tonkatsu sauce and sprinkle on katsuoboshi and aonori.

t the 2009 New York Fancy Food Show, the president of Valrhona complimented Nathan Sato on his Malie Kai Chocolates. And so did executives with Godiva Chocolatier. It was a sweet moment for Sato whose determination to produce stellar chocolate in Hawai‘i had finally been validated. “The chocolate industry in Hawai‘i has a very bright future,” Sato asserts. “I think there’s a potential for Hawaiian chocolate to surpass the coffee industry.” One of the more prominent players in the industry is Dole Food Company, which first experimented with cacao in the mid-1990s on a tract of land in Waialua previously reserved for sugarcane.
