ing for a break from the heat or the rain. Four floors feature interactive exhibits, a movie theater and live programming. New this year is KidsTown, an 11,000-square-foot area designed for toddlers and elementary-school-aged kids. Design your own rollercoaster, build your own go-cart, learn what it’s like to be a citrus farmer or just run loose in the giant indoor playground. Older kids will enjoy Kinetic Zone, also on the second floor, which features an 18-foot zipline, flight simulators and rocket launches.
Activities are designed to build Science, Technology, Engineering and Math skills in an exciting and interactive way. The fourth floor is dedicated to space and dinosaurs. Little ones dress up as archaeologists and uncover artifacts in the excavation site, while surrounded by giant replicas of dinosaur fossils. Next door are interactive exhibits and programming on our solar system and weather. Before heading out, stop by the ground floor to say "see ya later" to the live alligators and reptiles.

WHERE NOW Orlando ON THE SCENE
Chef Talk Americans are embracing Japanese culture like never before, with Pokémon Go, retro Nintendo games and cravings for ramen and sake. We sat down with Morimoto Asia’s chef Yuhi Fujinaga, who works for the Iron Chef himself, to find out why. BY LAURA ANDERS LEE
Have you noticed Orlando has an increased affinity to Japanese culture? Definitely. It’s a trend now, with anime, Japanese grocery products, and more modernized things that have trickled down from New York and California, and it’s just started to hit here, very much so, and the food scene has definitely grown so much more. What’s the most authentic Japanese cuisine on your menu? Our sushi is as traditional as it can get to Japan. We encourage the guests to come in early (6 or 7 pm), and sit at the sushi bar and see what fish is there. They’ll actually prepare one piece of sushi for you at a time. I also recommend the cold sake off Chef Morimoto’s signature line. It’s amazing sake. The rice has been polished further, and the flavor develops a lot more strongly. Sake is such a versatile beverage. It pairs well with a lot of Asian ingredients, as spicy as Korean, as savory as Chinese cuisine or as delicate as sushi, and it will still marry together. Other than your own restaurant, where else to you recommend getting Japanese cuisine? One of my favorite go-to restaurants is Hanamizuki on I-Drive. It’s more traditional Japanese they do over there. Tell me about the rise in ramen. Ramen is comfort food in the Japanese culture. It’s a nice good closer. After you’ve gone out to a good meal, have a couple of drinks with friends, in Japan you stop by a ramen shop on the
way home, it’s like fast food, a late-night snack. For us chefs who eat late, nine out of 10 times, it’s ramen for us, too. In New York, the trend has been blowing up, and we’re seeing that buzz and that trend here now. What makes good ramen? Good ramen takes a lot of passion incorporated in all the ingredients. You might just think it’s soup and noodles but behind the scenes, there’s so much that goes into making sure you get the full flavor out of it. We leave the pork bone broth simmering for 36 hours and stir it every hour. It’s so meticulous. We’re open until midnight Sunday through Thursday and until 1 [am] Friday and Saturday, so you can definitely go out or see a show, and it’s very affordable to come in for ramen and a beer. Is it okay to slurp? A lot of times, people are embarrassed to slurp, but in traditional Japan, you slurp it so the noodles don’t overcook in your broth and the texture changes. You want to blow on it as you slurp it to cool it down before it reaches your palate. What do you recommend to visitors who might be shy about Japanese—and Asian—cuisine? Don’t be afraid of trying it out. Everything we serve here is an easy approach on all the items and not beyond your comfort level. Our menu is accessible, even if it’s your first time. We do have many new kinds of fish, but the flavor profiles are similar to say salmon, snapper, or tuna, that you’ve had before. And, try the Japanese beef.

UNIQLO AT DISNEY SPRINGS This popular Japanese department store has opened its first location in the Southeast at Disney Springs. Fans of Japanese culture can also find kimonos, lanterns and graphic tees. disneysprings.com NINTENDO AND UNIVERSAL Universal Parks and Resorts is partnering with Nintendo to build theme-park areas in Japan, California and Orlando over the next few
years. Guests, no matter what their gaming level, will enter for a largerthan-life adventure with their favorite Nintendo characters and scenes, perhaps with man-eating plants, super mushrooms and flower pots that lead to secret tunnels. “When they’re transported into that world, and they stand there for a moment and see it in front of them like as if they just walked into their game platform, it’s going to be a really exciting time,” said Mark Woodbury, president Universal Creative, in a press announcement. universalorlando.com POKEMON SYMPHONIC At downtown Orlando’s stunning Dr. Phillips Center for the Performing Arts, the Orlando Philharmonic will play music from new and classic Pokémon video games. Carefully timed visuals will bring the music to life, giving fans a treat for their senses. Aurora (Roman goddess of dawn), c. 1894. Leaded glass, Tiffany Glass and Decorating Company.
Don’t Miss Tiffany at the Morse Museum WINTER PARK, Fla. — Of the many unexpected pleasures awaiting visitors to Central Florida, none may be as dazzling as a stroll through the galleries of The Charles Hosmer Morse Museum of American Art, home to the world’s most comprehensive collection of works by American artist and designer Louis Comfort Tiffany. The Tiffany collection at the Morse includes the designer’s jewelry, pottery, paintings, and art glass, as well as his famed leadedglass lamps and windows. Highlights include the restored ByzantineRomanesque chapel interior that Tiffany designed for the 1893 World’s Columbian Exposition in Chicago and art and architectural objects from his celebrated Long Island estate, Laurelton Hall. The Morse, which celebrates its 75th anniversary this season, was founded by Jeannette Genius McKean (1909–89) in 1942 and named for her industrialist grandfather. She and her husband, Hugh F. McKean (1908–95), the Museum’s director until his death, built the collection over a 50-year period. In 1957, when a fire ravaged Tiffany’s Laurelton Hall, the McKeans salvaged all they could from the ruins for the Morse. In the Museum’s galleries, visitors will also find exhibits of American art pottery, Art Nouveau objects, and late 19th-and early 20th-century American paintings. Orlando Your Way
Thespians
Orlando’s theme parks attract first-class entertainers from around the globe. At Disney’s Animal Kingdom, you can catch a miniBroadway version of 1) “The Lion King” with spectacular costumes, amazing choreography and powerful voices. 2) Cirque du Soleil performs its awe-inspiring acrobatics nightly at Disney Springs. “La Nouba’s” long-running acts include a breathtaking aerial ballet, urban-style break-dancing, aerial bamboo, trampoline stunts and a clown side-show. At Universal CityWalk, 3) Blue Man Group performs nearly every night of the year at their resident theater, wowing audiences with their amazing talents, thought-provoking technology and silly stunts that are fun for the entire family. Green Thumbs
The 1) USTA has just opened its new headquarters at Lake Nona, near the Orlando airport. The full-service facility offers training for pros as well as 100 courts, including clay and kid-sized courts, that are open to the public. The entire Orlando community is still mourning the loss of the King of Golf Arnold Palmer. His beloved Bay Hill Golf Club is hosting its annual Arnold Palmer Invitational March 13-19. Visitors to Orlando can also watch the Atlanta Braves in action during their Spring Training Season. The 2) Atlanta Braves practice through March at Disney’s ESPN Wide World of Sports. Both stadium seats and private cabanas are available. Our MLS team, 3) Orlando City Soccer, kicks off March 5 at their impressive, brand-new Orlando City Stadium. Go Lions!
While the rest of the country is still icy and cold, Orlando is in full bloom. 1) Epcot’s 24th International Flower & Garden Festival is underway March through May. Enjoy play gardens, admire 100 topiaries and 220 floating gardens, and dine at popular outdoor kitchens. 2) Bok Tower Gardens is a peaceful escape. Set on 250 acres with a brand-new children’s garden and play area, the garden is famous for its 200-foot-tall bell tower, played daily by the world’s best carillonneur. Near downtown Orlando, 3) Leu Gardens features 50 acres of landscaped grounds along Lake Rowena. Admire 200-year-old oak trees, stroll through the rose gardens and even participate in a dinosaur scavenger hunt where you can spot 18 life-like dinos hiding in the flora.
