PUBLISHER'SLETTER

lthough it felt like Spring was here in February this year, it’s officially here now! One thing I love to do in April is give my home and office a spring detox. I do this to get reorganized, get rid of clutter that is bogging down my life and recommit to keeping things simple. Here are three easy tips that I recommend and do every spring and fall. First, clear out the clutter. Pick one room in your house (or even one section of a room if the whole room is too overwhelming) and take a day or a weekend to organize, file or throw out what you no longer need that is taking up space in that area. Second, put your wardrobe on an elimination diet! Experts say that if you haven’t worn something in over a year then get rid of it. Donate it to Goodwill or a local consignment or thrift shop. Third, trim down your to-do list. Take a good hard look at your list of projects, tasks, and errands to run on a weekly basis. If you have things on there that you know you won’t get to for months, cross them off and feel the weight lifted from your shoulders. Cool things happening this month! I’m excited to announce that I will be a judge at the 86’D Culinary Collision event on April 17th – location and details won’t be announced until a few days before the event – but watch our Facebook page for all the information. It’s open to the public, but tickets sell out fast – get yours here at https://www.86dculinarycollision.com. Imagine being able to go to one location to see your Naturopath or Integrative Physician, Chiropractor, Massage Therapist, Acupuncturist, Nutritionist, Hypnotist, Yoga Instructor, Intuitive Healer and more? That place is finally here! Bridge Healing Arts Center (BHAC) opened in March and is Connecticut’s first all-inclusive, synergistic holistic health center housed in an impressive 8,000 square foot complex on an expansive 7-acre campus nestled in the beautiful Farmington Valley. With over 60 rooms for treatment and office space, patients and clients will have one-stop shopping for just about any type of holistic practitioner. Check it out at www.bridgehac. com. Other events not to miss: The Southern CT women’s show on April 30th at the Trumbull Marriott will be a great day to pamper yourself and get some nice gifts for Mom. If you celebrate Easter, I hope you get all of your Easter goodies at Divine Treasures Chocolates in Manchester – they’re Vegan, Gluten-Free, Socially Responsible and Delicious! Happy Spring!

Why Use Organic Products?

ou may ask, "Why use Organic?" The answer is simple... nearly 60% of what you apply to your skin is absorbed into your bloodstream. Exposure to chemicals is cumulative and adds up over time, exponentially. Why not apply skincare that nourishes, hydrates, rejuvenates and protects your skin? Green Beauty means clean, non-toxic beauty. This is what you will find at ORGANACHS Farm to Skin in downtown Westport, CT. We are the only Green Beauty store in Connecticut dedicated to offering a carefully curated selection of over 25 brands for skincare, makeup, bath and body, hair care and baby. We carefully select brands from companies that offer high performance with high efficacy in terms of ingredients and formulations. These are award winning products and have been featured in top beauty publications receiving beauty editors' top picks in skincare and makeup. We at ORGANACHS have vetted these products for you so that you know you are buying clean, chemical-free products. Our selection of skincare brands contain anti-inflammatory phytonutrients and concentrated forms of Omegas 3 & 6 to accelerate skin cell regeneration; resulting in a smoother, firmer complexion. We seek out brands containing antioxidants which stimulate cellular turnover, enhance elasticity, and strengthen capillaries. You will not find products that contain Parabens which can act like estrogen in the body, and higher estrogen exposures are linked to breast cancer. We believe you can take care of your skin without harming your health! We encourage our customers to be informed and to check out http://www.safecosmetics.org, which works to protect the health of consumers. Book Review of The Empath’s Survival Guide by Judith Orloff, MD

B

eing an empath is the new normal. The “Empath’s Survival Guide” is a perfect guide book. Now people will know how to cope with being highly sensitive and empathic in their everyday lives without developing exhaustion, compassion fatigue or burn out. As Judith says, conventional medicine often pathologizes sensitivity but now you will see it as the gift that it truly is. This book is fabulous and so timely. Empaths are sponges who absorb other people’s emotions and symptoms. Dr. Orloff offers a wealth of practical strategies to stop absorbing other people’s stress while keeping your sensitivities open and alive. She addresses the special needs of empaths—such as getting adequate alone time, setting clear limits with people, and grounding—in areas such as health, work, parenting and raising empathic children, combating narcissists and other energy vampires, as well as in love and all relationships. Also, empaths can develop heightened intuition which they must learn to cope with in a grounded way. Dr. Orloff discusses plant empaths, earth empaths, relationships empaths, telepathic and precognitive empaths, food empaths and more. The secret to a happy life for everyone who wants to nurture their empathic abilities in an often overwhelming world is to practice the self-protection strategies in this book. Judith's book validates the truth that empaths experience the world around them primarily through their energetic or intuitive senses. Such knowledge is vital to understanding and caring for your own awakening sensitivities. Reviewed by Caroline Myss. Business Spotlight Edible Nutmeg

T

his business spotlight is our 3rd in a series recognizing local holistic practitioners and businesses that are celebrating 10 years in 2017. I had the pleasure of sitting down with Dana Jackson, owner and publisher of Edible Nutmeg to discuss his inspiration and success. DH: Why did you want to start your own business vs working for someone else?

Organic and Natural Skincare • Makeup Haircare • Bath & Body • Facials

DJ: I’d never planned to be a magazine publisher. In fact, I was well on my way to becoming a career farmer when the opportunity to take over Edible Nutmeg was presented. I met with the magazine’s founder, shared coffee, and walked out, thinking “well, I’m sure nothing will come of that.” Three months later, I was signing a contract and taking ownership of a magazine! That was in early 2015, and I’m now working on the sixth issue since I began publishing.

15 Post Rd West Westport, CT 06880 203.221.0435

DH: What are you most proud of that you've accomplished in the last 10 years?

www.organachsfarmtoskin.com

DJ: Of course, Edible Nutmeg’s history goes back quite a distance; issue #1 was released during the winter of 2006 by the founders, Robert Lockhart and Mary Adams, making the magazine just over a decade old. I’ve been lucky to have inherited such a well-loved magazine and the loyal readership that comes with it, and I’ve been happy to continue that legacy of great stories about and exposure for the small, sustainably-minded, food-related businesses of Connecticut.

Natural Nutmeg - April 2017

DJ: I hope that Edible Nutmeg can continue to be a voice for small business owners throughout our region – that “local food community” that brings such strength to our state – as well as a vehicle for promoting and highlighting business people in Connecticut who are champions of the sustainability movement, including organic growing practices, clean energy, and everything else that contributes to keeping Connecticut’s landscape pristine, wild, and healthy. Having worked for years as one of Connecticut’s organic farmers, I know just how challenging the industry can be. Few things make me happier than hearing about readers discovering local food producers – oftentimes right in their own town! – through the pages of Edible Nutmeg. It makes me feel that all the work that goes into making it is worthwhile. Interview by Dr. Diane Hayden. Dana’s appreciation and advocacy for local and sustainable food systems is built from many years of working in and with the outdoors. He has spent time as an ocean kayaking guide, a ski instructor, a ranger for the Bureau of Land Management, an English teacher, and an organic vegetable farmer, all of which contribute to his appreciation for Connecticut’s vibrant landscape and rich agricultural and culinary traditions. A resident of Litchfield County, Dana endeavors to highlight the best of Connecticut’s local food systems. Visit www.ediblenutmeg.com.

Nutmeg “Nuggets” Divine Treasures Chocolates: Vegan, Gluten-Free, Socially Responsible and Delicious

D

ivine Treasures is a boutique-style chocolate company that turns out an incredible variety of unique treats year-round. From chocolates, to soft-serve ice cream, to faux cheeses, this artisanal-style establishment offers a flavor for every palette. Even those with dietary restrictions can enjoy many of the creations of master chocolatier, Diane Blanchette-Wagemann. Divine Treasures not only embraces the challenge of creating delicious vegan, glutenfree, and minimally processed treats, they do it with mouth-watering results. It all started when Diane was a young girl and made weekly Sunday visits to her grandmother, affectionately known by the French-Canadian, “Mémère,” in Quebec. These visits were filled with joy, love, and, of course, chocolates. Together, Diane and her Mémère would make chocolates using old family recipes. The years passed and eventually the recipes were handed down to Diane. Now what is a good Vegan supposed to do with a bunch of old chocolate recipes? Why, modify them and open a chocolate shop of course! After painstaking research and training with master chocolatiers in Europe, Diane opened Divine Treasures in the fall of 2005, and production hasn’t stopped since. Each of the recipes has been painstakingly updated to be glutenfree and vegan-friendly, exchanging cow’s milk for cream made from cashews and almonds in-house. And while some chocolates use flavorings that can contain gluten, like vanilla extract, Divine Treasures uses high-quality essential oils, eliminating that risk. Beyond the lack of animal products and gluten, the finest ingredients all-around are sourced, opting for the highest-quality European chocolate, with the occasional addition of a South American variety, to ensure the richest flavors imaginable. Unlike your typical store-bought chocolate that features corn syrup and refined white sugar, Divine Treasures utilizes turbinado sugar, maple syrup, and brown rice syrup as sweeteners. While the best chocolate beans may be grown and processed in Europe and South America, Divine Treasures prides itself in using locally sourced ingredients whenever possible. Whether it’s chai or rose liqueur from Wild Moon in Hartford flavoring a decadent truffle, or a spring farmer’s market find lending a fresh new flavor, Divine Treasures strives to support the local community. This, combined with an emphasis on organic ingredients, makes each Divine Treasures creation more socially responsible than traditional choices.

All of the products produced by Divine Treasures are made from scratch, and the Perfect Duo is no exception. It is a laborintensive treat that requires a total of five processes to create. The first step making the caramel, which requires soaking the nuts overnight, then grinding them and cooking them for approximately five hours. Each chocolate shell is molded, then the peanut butter truffle is made and hand deposited into each chocolate cup. Once the caramel cools, it is poured on top of the peanut butter truffle, and then an extra swirl of chocolate is added to the top. With each bite, you’ll experience the melting of the peanut butter, the sweetness of the caramel, and the perfect balance of dark chocolate. For a more adventurous flavor experience, one bite of the Buddha’s Blessing will take your tastebuds on a trip to the Far East. This completely distinctive creation features sweet mango, coconut, and lemongrass with an exciting burst of spicy red pepper all blanketed in rich dark chocolate in the shape of Buddha. If you crave a more relaxing chocolate experience, the Lavender Blue is for you. It features Divine Treasures’ luscious caramel flavored with calming lavender essential oils and wrapped in decadent dark chocolate. True to its name, the Lavender Blue is topped with a yummy dried blueberry. Located in an unassuming shopping plaza in Manchester, Connecticut, Divine Treasures is a hidden gem worth the drive for anyone with discerning tastes. Customers are encouraged to stop in and sample some of the many flavors available. Whether you’re in the mood for solid dark chocolate, decadent truffles, or any number of unique flavor combinations, Divine Treasures has a chocolate for you. While you’re there, try the soft serve flavor of the day, or a delicious vegan faux cheese. Cut Sugar, Fat and Salt with Transition Foods By Julie Wern

M

any of us are addicted to sugar, salt, and toxic fat tastes and the transition to healthier eating can often feel like utter deprivation. Taste buds need to acclimate to lower sugar and salt levels. For some this is best achieved by going “cold turkey” but for many, the leap is too great and a gradual reduction is often more successful. This is especially true in families with children, whose taste buds naturally crave sugar and who, in this processed food climate, have acclimated to frighteningly high levels of sugar, salt and unhealthy fats. This is where transition foods can be helpful. Transition foods are those that are lighter in sugar, salt, and unhealthful fats, but still taste good and remind us of those unhealthy foods we have become used to. When I make transition foods I always add whole vegetables, fruit and whole grains in order to bring in the moderating effect of fiber and micronutrients. Here are just a few of my favorite transition foods and meals. • Macaroni and cheese with butternut squash cheese sauce with brocccoli • Lower sugar avocado chocolate mousse • Instant blender ice cream made only with whole fruit and coconut milk • Lower sugar muffins with flaxmeal and nuts • Plain unsweetened yogurt with pureed fresh fruit • Homemade baked sweet potato chips • Pancakes made only with banana and egg • Spaghetti sauce sweetened only with pureed zucchini and carrots

Even if your taste buds have already adapted to healthier levels of sugar and salt, transition foods can also be used when you simply want a treat but wish to avoid the worst food choices. This month I thought I would share a fun transition food recipe for homemade “Pop Tarts” that are significantly lower in sugar than processed versions and contain whole fruit and whole grain flour. They are still high in fat, although if made with pastured butter, offer a much better choice than trans fats or industrial seed oils. If calories are a concern I would consider sharing one or making smaller tartlets. See recipe on next page. Julie Wern is a psychotherapist turned stay-at-home-mom turned health coach and cooking instructor. She is a certified Integrative Nutrition Health Coach and the author of Holcomb Farm CSA’s Simply Fresh blog as well as her new food and lifestyle blog, The Wholesome Gourmande. It is Julie’s passion to help individuals find their unique path to health without sacrificing joy and pleasure in food. You can find her at http://www.thewholesomegourmande.com.

Low Sugar Blueberry "Pop Tarts" Ingredients: Blueberry Jam • 3 cups frozen blueberries • 1/3 cup water • 2 tablespoons unrefined coconut sugar • 1/4 teaspoon vanilla extract • 1 teaspoon fresh lemon juice Tarts • 3/4 cup white whole wheat flour • 1 cup unbleached all purpose flour • 1/2 teaspoon sea salt • 1 tablespoon unrefined coconut sugar • 3/4 cup unsalted butter, preferably grass fed • 1 large egg, preferably organic or pastured, lightly beaten • 2-4 tablespoon 2% organic milk • Turbinado sugar for sprinkling on tops of tarts, or other coarse sugar sprinkles 1. Line a baking sheet with parchment paper. Preheat oven to 375°. 2. For jam: Place blueberries, water, 2 tablespoons coconut sugar, and vanilla in a small saucepan and place on medium heat. Once the mixture comes to a boil reduce heat to a simmer. Simmer, stirring occasionally, using a wooden spoon to mash up blueberries, for 20-30 minutes or until mixture is thick like jam. Stir in lemon juice. Allow to cool.

3. For tart dough: In a large bowl, stir together both flours, coconut sugar, and salt. Cut butter into 1/2” pieces and using a pastry cutter, cut butter into flour mixture until it resembles fine crumbs. Using a fork, stir in egg and mix it in evenly. Drizzle 1 tablespoon milk over mixture and mix in well with fork. Try to press mixture together. If it holds together well it is done. If it is still too dry to come together, add another tablespoon of milk. Knead dough until it comes completely together and roll into a ball. Cut the ball in half. Take each half and roll into a 3-inch log. Place each log on a piece of plastic wrap and gently press down to flatten it a bit. Wrap each dough piece completely in the plastic wrap and chill for at least 20 minutes. 4. To make “Pop Tarts”: Place one piece of dough on a lightly floured work surface. Roll into a 12 X 8” rectangle. Cut rectangle lengthwise into two equal pieces. Cut each piece crosswise into 4 pieces. You will have 8 - 4 X 3” rectangles of dough. Place 1 heaping tablespoon jam into center of 4 dough pieces and spread, leaving a 1/4” border. Brush edges of other dough pieces with milk and carefully place, milk side down, on top of jam covered pieces, gently pressing on the edges to seal. Using a fork, dock edges to seal and decorate. Brush tops with milk, then prick a couple of places with the tines of a fork. Sprinkle lightly with Turbinado sugar. Using a thin spatula, transfer to the prepared baking sheet. Repeat process with second piece of dough in plastic wrap. 5. Place baking sheet in oven and bake for 17-20 minutes or until golden. Remove from oven and place on a cooling rack. Allow to cool for at least 5 minutes before serving.

Seasonal Allergy Suffering is on the Rise By Ashley Burkman, ND

T

he number of seasonal allergy sufferers has been on the rise in recent years. There are only so many nasal sprays and decongestants that can be taken to mitigate symptoms and considering the root cause of these increasing allergies is important. The following are some speculated causes for increased allergies. Toxic Burden We accumulate toxins from a variety of sources including pollution, pesticides, plastics and beauty products. The more we ask our body to detoxify these contaminants the more burdened that it becomes. Think of our body as a bucket with a tiny hole in the bottom. The tiny hole is our liver and other detoxifying organs and the bucket is our body. It doesn’t matter how much we add to the bucket, the hole in the bottom is only so big, and cannot filter any faster than it is meant to. This is one reason as to why we can develop allergies and sensitivities after a lifetime of being free and clear. When our body is overburdened we begin to have annoying symptoms that we seek to suppress. The good news is, there is a lot you can do to help your body detoxify. From diet changes and detoxification programs to supplements and advanced testing, there are many ways to improve your bodies’ ability to detox and reduce your allergy symptoms. 1. Purchase quality food and water. Aim to purchase organic produce when able and meat that is free of antibiotics and hormones. Avoid water that has been chemically treated and if possible consider filtering water to remove impurities. Also, be careful what you drink from, as plastic bottles have been proven to leach chemicals into the water.

2. Learn about medication side effects. Some medications lead to nutrient deficiencies which can bog down liver detoxification causing a burden on the body. If appropriate, supplementation of specific nutrients can help to improve detox. 3. Consider a detoxification protocol. At its foundation, a detox is about manipulating your diet. Adhering to a balanced organic diet with plenty of water which may or may not include supplements, is the best way to give your body a break from the stress of extra sugar, alcohol and pesticides. Reduced Microbial Diversity One thought is the overuse of antibiotic interventions early on in life, mainly under the age of 2, will hinder the development of healthy microbes, probiotics, in the digestive tract. During this early time in life, the digestive tract microbiome, probiotic flora, is developing and when antibiotics are introduced there can be alterations in the naturally developing digestive flora. A healthy balanced digestive flora improves your immune system which reduces the chance it will over react to the environment causing allergy symptoms. This does not mean you should avoid antibiotic intervention for your child when necessary, however, use prudence. While we cannot go back in time and undo antibiotic use early in life, there is advanced digestive testing available to determine the ecosystem of your digestion which can guide interventions. 1. Avoid overusing antibiotics. When it comes to long term antibiotic use in treating acne, consider finding a more permanent solution than temporary antibiotic use. When antibiotic use is needed, speak to your naturopathic doctor about probiotic supplementation to protect your digestion.

2. Consider supplementing with probiotics that you lack. There are tests available to help guide the navigation process into finding the appropriate probiotic for you. 3. Avoid sugar. Sugar feeds pathogens and hinders the growth of the good health probiotics. Getting off the sugar wheel is always a good idea especially when it comes to the digestive tract. Over-sterilization Being too clean is not always a good thing. Our entire body is covered in healthy bacteria that fights infection and illness constantly. Frequent showering, using antibacterial soaps and bleaching surfaces can cause our immune system to become lazy. When our immune system is not exercised, it can lead to overreacting to non-noxious stimuli like dander, pollen, and dust. The over-sterilization idea goes along with the idea that “sterilizing” the digestive system with antibiotics too early in life can lead to immune dysregulation later in life. Research has referenced children who grow up in a household without a dishwasher, where dishes were washed by hand, develop less allergies later in life. I’m certainly not willing to ditch the dishwasher but it does lend itself to the idea that the OCD cleanliness we strive for may not be best. 1. Switch all hand soaps from anti-bacterial to regular soap. Scrubbing with warm water and plain soap is all you need for clean hands! 2. Avoid the use of bleach on surfaces. Consider using white vinegar with essential oils or other natural products offered on the market. They work just as well to cleanse while not sterilizing. 3. Limit showers. Aim for no more than one shower per day unless necessary due to exercise or work. From prevention to treatment there are an array of options for allergy sufferers. Look beyond the decongestants and banish them for good! Dr. Ashley Burkman ND, is a naturopathic physician at Connecticut Natural Health Specialists, LLC. Choose a Healthcare Team that Addresses Wellness By Artemis Morris, ND

E

very day we make choices that affect our health and wellness. When we wake up we choose what thoughts we want to empower that color our mood for the day. We decide what we are going to eat for breakfast, whether it’s going to be a fast food breakfast, sandwich and sugary coffee on the go, or steel cut oats with ground flax seeds, organic blueberries, and almond milk and organic green tea. Food has an impact on our moods and heath. We decide what clothes we wear, what detergents and cleaning products we use in our homes, what programs we watch, and what time we go to bed. There are things we do throughout the day that have become habitual to the point that we aren't even consciously aware of them, such as, driving to work. Do you have to think about what route you take to go to work or do you find yourself there after a period of time of random thoughts and musing and maybe some road rage and a phone call or two? Being conscious of our choices means being aware that we are choosing and being aware of what we are choosing. Once you realize this you have the power to choose food, behavior, and a lifestyle that can positively or negatively affect your health and wellness. What is the Difference Between Health and Wellness? Health is having a good report card from your conventional medical doctor: your cholesterol is good, no disease, don’t smoke and eat too much, see you next year. Wellness includes prevention of disease, addresses your physical body symptoms, your mental health, the cause of disease, your sense of connection to others, your purpose, and spiritual self. What do you need to be well? Being well can mean having enough energy, drive, and resources to be the best person you can be. Wellness is personal, holistic, and includes managing your stress, which is responsible for 80% of illnesses. You get to choose whether you go to a conventional doctor for your health checkup or to a holistic physician that will educate you in optimal nutrition, address the cause of disease and involve you in your own healthcare by utilizing natural therapies that affect your health and wellness. You can choose patient-centered care where you are an active part in your health and healing or conventional medical care, which is doctor-centered and allows you to take a pill and keep going until your body breaks down or the side effects require you to take another pill. However, if you 18

want to feel your best, you can choose a healthcare team that addresses wellness in addition to health. Options for Patient-Centered, Wellness Care Naturopathic Medicine: Naturopathic physicians from accredited naturopathic medical schools are trained as general practitioners with a holistic approach to medicine. In addition to general medicine, they are the only general practice trained physicians that also learn clinical nutrition, herbal medicine, homeopathy, chiropractic techniques, counseling, and how to recommend individualized nutritional supplements and nutrients to address causal factors of disease and optimal wellness. Naturopathic medicine includes a functional medicine approach to medicine. See www. naturopathic.org for more information. Homeopathic Medicine: Homeopathic medicine is often confused with naturopathic medicine because homeopathy was included in the conventional medical school curriculum up until the early 1900's. Homeopathy is a natural therapy that involves using low dose substances through the principle of like-cureslike in order to heal. Treatments are individualized, inexpensive, and homeopathic treatments do not interact with pharmaceutical medication. Homeopathy is very popular for use in children because of its gentle nature. See http://homeopathycenter.org for more information. Functional Medicine: Functional medicine is a holistic approach to medical care conceived by Dr. Jeff Bland that is similar to Naturopathic Medicine. Functional medicine training is available to medical practitioners, including, MDs, DOs, DCs, NDs, PAs, RNs, etc. that are interested in learning about how to have a more holistic approach to medicine. See https://www.functionalmedicine.org for more information. Chiropractic Medicine: According to the world chiropractic federation, chiropractic medicine is a health profession concerned with the diagnosis, treatment and prevention of mechanical disorders of the musculoskeletal system, and the effects of these disorders on the function of the nervous system and general health. There is an emphasis on manual treatments including spinal adjustment and other joint and soft-tissue manipulation. See www. wfc.org for more information.

Integrative Medicine: A term that when applied to hospitals and institutions means that holistic modalities, such as, acupuncture, herbal medicine, chiropractic care, mindbody medicine, also called Complementary and Alternative Medicine (CAM) are integrated into a conventional medical model. See https://www.aihm.org for more information. Other holistic systems of medicine that have been around for thousands of years and can be practiced by physician and nonphysician practitioners include, Acupuncture, Ayurvedic medicine, herbal medicine, and energy medicine. There are many additional options to choose from in terms of health and wellness. Begin with the questions: What do I need to be healthy and well? What am I doing that is harming my health and wellness? Why? And consider an old Cherokee story that applies to our body as well as our minds:

Food Intolerance: Is What I'm Eating Hurting Me?

By Stacey Munro, ND

F

ood intolerance and sensitivity are terms used interchangeably when referring to troublesome, but non-life threatening responses to ingested food. The World Allergy Organization defines food intolerance as reactions which are not regulated by the immune system, such as lactose intolerance (lack of an enzyme to digest lactose, a milk sugar) or reactions to food additives like sulfites or artificial colors. Food allergy, in contrast, causes immediate and possibly life-threatening reactions by the immune system. The World Allergy Organization definition of food intolerance is not consistent with how the term is used among natural health practitioners. For the purpose of this article, we will define food intolerance and sensitivity as non-allergic responses of the body to ingested food, which involve the immune system. Celiac disease (CD) is a form of food intolerance, as it is not a true allergy to gluten. In CD, the immune system produces antibodies to gluten, which attack the cells of the body. This is the most serious form of food intolerance and requires life-long avoidance of gluten. The prevalence of CD in the United States is estimated at around 1%, which is 1 person out of 100 people. While having a first degree relative with CD increases the chances of developing the condition to 20% or more, it is still fairly rare. Food Allergies Food allergies are estimated to affect 4% of the U.S. population, the majority being young children. Food allergy causes an immediate-hypersensitivity response by the immune system. This is characterized by production of IgE, which is an immunoglobulin or antibody. Antibodies target antigens, which are toxins or other foreign substances that cause an immune reaction in the body. IgE triggers a massive release of histamine and other inflammatory chemicals. These chemicals have the specific action to increase blood flow and to aid the body in ridding itself of foreign substances. Symptoms of food allergy include hives, swelling of the tongue or lips, shortness of breath, and wheezing. Anaphylactic shock, the most severe allergic reaction, requires immediate administration of epinephrine and can cause death if not treated. Food Intolerance Food intolerance, or sensitivity, is more common than food allergy. It is hard to estimate how common because there are multiple pathways of the immune system that are involved. The symptoms of food sensitivity vary. Digestive symptoms include 20

Natural Nutmeg - April 2017

diarrhea, constipation, gas, and bloating. Congestion, post-nasal drip, eczema, asthma, joint pain, fatigue, and headaches are also common. Symptoms may come and go, making them hard to pinpoint. Antibodies such as IgG and IgA form immune complexes with food proteins and trigger inflammatory reactions in the body. Symptoms can develop within a few hours to a couple of days. Food intolerance testing has been used for many years by naturopathic physicians and other natural health practitioners as a reliable indicator of foods causing adverse reactions in the body. This is especially true when testing for CD or food allergies are negative. Common Symptoms of Food Intolerance • Diarrhea • Constipation • Bloating • Flatulence • Headaches • Joint and muscle pain • Eczema • Allergy symptoms • Asthma • Fatigue Common food intolerances include wheat/gluten, dairy, eggs, corn, and soy. Most of the time there are reactions to multiple foods. It is not uncommon to see elevated antibodies to tomato, citrus, nuts, peanut, yeast, grains, coffee, and even protein foods such as chicken, beef, and seafood. Most food intolerance or sensitivity tests offer panels of 90 or more foods. Common Food Intolerances • Wheat/ gluten • Cow dairy • Eggs • Corn • Soy Elevated Food Reactions and “Leaky Gut” Antibodies to food may be elevated due to “leaky gut”. Leaky gut refers to dysfunction of the barrier function of our digestive tract, which separates the contents of the stomach and intestines from the interior of the body and blood vessels. Picture the diges-

tive tract as a long tube that connects with the outside at both ends. Even though the tube is on the “inside” of the body, the contents are on the “outside” of the body. There may be spaces or gaps in the wall of the tube through which food proteins travel into the body. Once inside, they trigger the immune system to make antibodies. When functioning properly, the barrier cells of the digestive tract protect the body from bacteria and viruses. They also keep food proteins inside until the nutrients are digested and absorbed by the cells of the body. Elimination Diet and Challenging Infrequent ingestion or consuming a small portion of a food may not be enough to cause a reaction when sensitivity is present. That is why testing foods (called challenging) following an elimination diet, is the most effective way to identify food sensitivities. An elimination diet is usually done after food sensitivity testing. A minimum of 6-12 weeks is required to eliminate foods from the diet before challenging them. Foods are challenged one at a time in order to identify the reaction of that particular food. When significant symptoms are elicited by a certain food, long term avoidance is recommended. Sometimes the symptoms are minimal. Those foods can often be brought back into the diet on a rotation basis with no problem. This is not true for CD. It can take up to 6 months for the body to heal after exposure to gluten. Food intolerance and food sensitivity are terms used to describe non-IgE anti-

body reactions to food. The World Allergy Organization considers food intolerance to be only non-immune reactions such as lactose intolerance. Food sensitivity testing is a way to identify hard to pinpoint food reactions that are not related to allergies, CD, or lactose intolerance. The symptoms of food sensitivity may not be consistent and are hard to identify without an elimination diet and subsequent challenging. The amount and the frequency that a food is ingested may determine how prominently symptoms appear. Symptoms of food intolerance include: digestive problems, headaches, congestion, post-nasal drip, eczema, joint pain, and fatigue. Those who test negative for CD may still have significant food sensitivities, including to gluten. This means that gluten avoidance may still be recommended, even when complete elimination is not necessary. For somebody who has been from doctor to doctor and not yet found the cause of their troublesome symptoms, food sensitivity testing is an option. Hopefully the next visit is to the naturopathic physician. Dr. Stacey Munro is a Naturopathic physician who specializes in prevention and treatment of chronic health conditions. Following Naturopathic philosophy, she looks for the root cause, rather than just treating symptoms. Dr. Munro prescribes dietary and lifestyle changes, nutritional supplements, herbs, and other natural therapies. Suffering from Foot and Ankle Pain?

By Ayelet Connell, PhD, PT, IMT,C

A

re you an athlete with foot and ankle pain? Or an elderly person with balance issues? Or suffering from bunions or fallen arches? Surprisingly, there are some common denominators found in the body that connect all of you. Though the feet are the part of our body that connect with the ground, they can strongly be affected by our low back. The alignment of our low back affects the posture of our feet and ankles. By addressing the low back with treatment as well as the feet and ankles directly, we can make great strides in reducing pain, improving foot posture, and improving overall function, strength and balance. There are a variety of approaches that can support improved foot and ankle health. One of these approaches is a combined approach of Integrative Manual Therapy and shoe orthotic intervention (shoe inserts). Though the feet and low back are not directly neighboring, it is helpful to understand that they are strongly related. Whereas the forces from the ground enter through our feet as we walk or run, these forces are then transcribed and dispersed up the legs and low back. This process is essential to being able to function through life with any kind of movement. Having mobility in the feet as well as the low back allows us to move through life without pain. When the alignment or biomechanics of the low back is affected, this affects the alignment of our feet and ankles and causes us to ‘break down’. Correcting the biomechanics at these sites in the body typically will help to reduce pain, improve function and strength, and improve overall movement in the whole body. Manual Therapy Integrative Manual Therapy (IMT) is a gentle type of treatment that can identify underlying reasons for pain. An IMT practitioner looks at the ability of the joints to move, for example, the low back and pelvis. They also assess the alignment of the joints. Gentle techniques are used to improve mobility and alignment. IMT Therapists assess the tension of the fascia in the low back and pelvis to determine areas of compression. Assessment goes beyond the joints and includes soft tissue to find possible underlying contributors to pain. IMT is beneficial in creating a more neutral alignment in the low back and pelvis, to support reduction and elimination of pain. Upward movement of the foot and ankle is critical for proper alignment of the foot, leg and low back. This upward movement is 22

Natural Nutmeg - April 2017

called ‘dorsiflexion’. Stretching of the calf muscle will correct mild problems, but often, this does not correct more severe limitations. Biomechanical correction of the ankles by a skilled therapist that practices manual therapy will lead to an outcome that can then be maintained by stretching. IMT is a very effective way to improve alignment and soft tissue dysfunction of the ankles, knees, hips, and low back joints. Combining IMT with custom orthotics can help to create and maintain these positive changes. Shoe Orthotics There are many different brands of shoe orthotics or shoe inserts. Some are soft to attempt to relieve foot pain or pressure on the bottom of the foot. These are often used with people that have medical conditions such as arthritis or diabetes. More rigid foot orthotics are also available. These were developed to control the posture of the foot during walking, specifically when the foot hits the ground. Many people are aware that their foot position is important when running. They ‘pronate’ which means that their foot arch collapses and the foot rolls inward, contributing to conditions like foot pain, shin splints, and reduced performance. Biomechanics of the low back, or healthy alignment of the low back joints, serves as the foundation to the house that is our body. This is like the alignment of a car. If the car alignment is ‘off’, the tires will wear down incorrectly. If your low back, hip, knee, ankle or foot alignment is ‘off’, you may develop ‘wear patterns’ in other joints. Commonly, when the mechanics of the pelvis and legs are faulty, the leg usually rolls inwards during impact with the ground. That rolling inwards of the leg causes our foot to flatten and over-pronate. The position of the foot in such sports as skating or skiing is also very important. When people have foot or ankle pain or other symptoms such as swelling, and they seek therapy for these symptoms, the therapist must evaluate the whole person. Forces from the ground must be normalized through good joint alignment therapy techniques or the stresses of this joint dysfunction can cause pain. Custom orthotics are precisely measured to each person’s foot. A rigid orthotic helps to change the forces traveling from the ground as they contact the foot. Sole Supports, a brand of custom rigid orthotics, offers a unique quality to orthotic intervention.

Firm orthotics actually distribute the forces evenly. Whereas most custom orthotics maintain a corrected posture of the foot during standing, Sole Supports orthotics maintain this optimal foot posture throughout the whole walking cycle, from standing through ‘swing phase’. This is very important especially at heel strike when the heel first hits the ground. People may experience many positive results from wearing custom orthotics in their shoes that include reduced back pain and foot pain, reduced shin splints, as well as improved endurance, faster running, and better athletic performance. Even sciatica or disc degeneration can be improved by proper dissipation of these forces from the ground. Tools to Take Charge of Your Health

By Thomas Giammatteo, DC, PT, IMT,C, PhD

H

ave you ever felt like you need a “tune-up?” Health and body need a re-boot? Are you feeling less than your best? Chalking it up to working too hard, your age, too much to do? Improving your health with an approach that looks at you as a whole person: body, mind, spirit, physiology, diet, and stress can help you find where you have lost control of your well-being. Looking at a person’s health and function as a reflection of the whole person will lead to more long lasting success of treatment. The goal is achieving better health, well-being and active function that lasts. Some symptoms such as fatigue, joint or back pain, low energy, brain fog, or trouble sleeping could come from many different sources and need individual strategies to make improvements. Sometimes only changing the diet is not enough, sometimes nutritional supplements are not enough, sometimes just bodywork is not enough, sometimes counseling is not enough. An Integrative Manual Therapy integrated approach looks at all aspects of a person. Knowing all the pieces of the puzzle shows people how their health and body can improve. Below are two case studies of patients we recently helped regain their health and active function. Case Study 1: A professional active woman in her 30's was looking for more answers and a whole-body approach to health. She had headaches, low back pain with driving, right knee pain with sports, low energy after work, and a slow continuous weight gain. She had tried multiple fad diets for two years with no success and has always done gym workouts 4-6 times a week. She wanted to drive and play sports without pain, have no headaches, improve her menstrual cycle, lose weight, improve bladder function and to have energy after work and on weekends. A thorough evaluation looked at all aspects of health. Blood work showed low grade inflammation and infection, genetic markers for MTHR which causes poor detoxification, a need for more balanced Omega-3 oils, and immune and adrenal insufficiencies. A full body evaluation showed poor posture with tightness in the neck and back, which can be a result of adrenal stress. Flattened ribs could indicate cardiovascular issues. Tight joints in the 24

Natural Nutmeg - April 2017

low back and leg could cause low back pain, pelvic floor pain and bladder problems. Chinese tongue diagnosis showed poor immune integrity and leaky gut issues. A history of PMS symptoms indicated impaired liver function and kidney strength. A targeted approach was designed to address body structure, improve inflammation, adrenal stress, and digestion. Treatment Plan: An IMT Wellness Center Program An IMT Wellness Center complete program provides an individual plan to address all aspects of health and function. Evaluation through an Integrative Diagnostics approach applies a whole body process to find and address the underlying root cause of each problem and how to improve them. Addressing how to quickly reduce things that are causing pain or symptoms in the body lets the healing process begin. Beginning diet changes and bodywork together gives a person more immediate changes and improves their conditions. If possible, reducing bad habits in the diet is best, as a poor diet can destroy our health over time. A Functional Medicine approach of removing food that promotes inflammation, and is neurotoxic and immune disrupting sets a stage for health. If the person is dealing with multiple health challenges, we recommend eliminating the following foods from the diet: gluten including all oats, processed sugar, peanuts, and almonds. Often people notice improvements in pain, bloating, and digestion within a short time. Adding in healthy foods such as dark green leafy and multi-colored vegetables, and introducing fermented foods helps feed the body better. Supplements for food poisoning/gut flora imbalance and drinking a therapeutic green tea for mild detox helps beyond what diet alone can do. Body movement and structure are examined through manual therapy. Bodywork is an important component to correct tight joints, muscles and fascia beyond what yoga or stretching can achieve. The alignment and flexibility of the body affects health and our ability to be active and function at home and work. An Integrative Diagnostics evaluation applies a whole body process to find and address the underlying root cause of each problem so

that treatment is targeted for the individual. For example, low back pain may be caused by limited joint mobility in the low back or leg, scar tissue in the pelvis, or inflammation due to allergy. Each cause would be treated differently to get improvements.

Other diagnostics showed a leaky gut, and toxicity of the liver, pancreas and spleen. Repeat blood work showed his lab value for Hemoglobin A1c had improved to 6.3. He had a total weight loss of over 50 pounds since the previous fall.

A program is then customized for the person. Other treatments can include using pulsed magnetic field therapy and Natto frequency light therapy which help reduce pain and increase energy. Custom shoe orthotics can help to reduce low back and knee pain. They can help to decrease stress and help energy conservation, making walking, running and other activities easier. They can help prevent injuries by aligning the foot and leg properly.

Adding IMT bodywork, targeted supplements and custom orthotics improved his pain and mobility. He progressed to be able to walk for 2 miles for exercise, he was “feeling like a million bucks,” and “everything was coming together.”

Showing people how to take charge of their health gives them tools to use to stay healthy. An education program includes information on health and well-being, how to detox properly, how to do an elimination diet, what foods are good for you, how to cook gluten-free, health coaching for making and eating fermented foods, eating out at restaurants gluten-free, stress reduction, imagery, and custom IMT exercises for your home. Case Study 2: A man in his 50's was in the hospital for two weeks for fatigue, collapse and weak muscles. He was diagnosed with diabetes and had a lab value for Hemoglobin A1c of 13.9 (normal is less than 5.7). Starting the next month, he decided to take control of his life. He retired early from a stressful job, implemented some diet changes and started running. He had a knee injury and needed meniscus surgery and then had a lifting injury and tore his biceps muscle. He tried supplements and homeopathy. A few months later, he worked with a health coach and made more diet changes.

Overhaul Your Health and Body to Feel Your Best You know when you are not feeling your best and cannot live DONʼT LET FEAR KEEP YOU FROM BETTER HEALTH... an active vibrant life. Finding the source or the underlying cause of an issue lets the treatment have the quickest changes. Our bodies are the house that everything has to happen in. If our doors and windows don’t open and close, it is hard to bring in new material to make things happen.

Six months later he was seen for an IMT Wellness evaluation. He wanted to continue to improve his health and body. He had pain in his right knee, right shoulder and right elbow.

The key to improved health and feeling better is to address you as a whole person. Many people don’t realize how many aspects of health and pain and mobility they can improve. Building a better foundation sets a foundation for long lasting health. It is empowering to feel more like your old self and in charge of your health again. Whatever age you are, your goal is to be the healthiest you can be, and to do the things you want to do.

Body evaluation showed poor posture was affecting his spine mobility. Without flexibility of his spine and right leg, there was strain on his knee that made walking and running painful. Muscle spasm and joint tightness were causing the shoulder and elbow pain.

Lowering Your Cholesterol May Not Prevent Heart Disease: Part 2 By Michael Dworkin, PD, CCN, & J. Erika Dworkin Dietary factors and therapeutic lifestyle changes have no side effects. They should be considered the first line of defense in preventive cardiology...Rather than ...targeting cholesterol numbers alone, doctors owe it totheir patients – and patients owe it to themselves- to look further into these controversial issues before embracing potent drugs that might not truly serve the needs of the people for whom they’re being prescribed. ~ Stephen Sinatra, MD, FACC, Co-Author With Jonny Bowden, PhD, CNS The Great Cholesterol Myth: Why Lowering Your Cholesterol Won’t Prevent Heart Disease – And the Statin-Free Plan That Will (2015)

H

ave you ever wondered whether taking your cholesterollowering statin drug will actually prevent heart disease? Consider this statement John Abramson, MD, author of Overdosed America, published in The Lancet (2007), one of the world’s top peer-reviewed general medical journals, after analyzing eight randomized trials that compared statins to placebos: “...statins should not be prescribed for true primary prevention in women of any age or men older than 69 years. High-risk men age 30 to 69 years should be advised that about 50 patients need to be treated for five years to prevent one event. In our experience, many men presented with this evidence do not choose to take a statin, especially when informed of the potential benefits of lifestyle modification on cardiovascular risk and overall health (emphasis added). This approach...would lead to statins being used by a much smaller proportion of the overall population than recommended by any of the guidelines.” Part 1 of this two-part article (March 2017 issue) addressed a more updated approach to preventive cardiology, including key points from The Great Cholesterol Myth: Why Lowering Your Cholesterol Won’t Prevent Heart Disease – And the Statin-Free Plan That Will, the thoroughly documented book that Stephen Sinatra, MD, FACC, recently co-authored with Jonny Bowden, PhD, CNS (Sinatra/Bowden). A more detailed discussion of the significant disadvantages of taking statins, and a supplements-based approach to prevention of heart disease, follows.

26

Natural Nutmeg - April 2017

The Evidence Against Statin Drugs According to Sinatra/Bowden, statin drug benefits have been greatly exaggerated, and any advantage statins offer has nothing to do with their ability to lower cholesterol. Though recognizing that statins reduce inflammation, provide antioxidant protection, and enable blood to flow more easily, they maintain that doctors should prescribe statins only to middle-aged men who have had a heart attack and are at very high risk for another one, and never to children, the elderly, or most women. The authors’ evidence-based position stems from these proven cholesterol-lowering and other side effects of statins: 1. Cognitive/Memory Dysfunction: they reduce cholesterol in the brain, which requires it for healthy cell membranes and their ability to “talk” to each other (neurotransmitter transmission). 2. Energy Reduction (Weakness/Fatigue): they uncontrovertibly deplete body stores of the antioxidant CoQ10, without which the body cannot function (see below). 3. Muscle Pain & Heart Damage: their depleting CoQ10 damages muscles that rely on it for energy production. 4. Sexual/Erectile Dysfunction: they reduce production of all of the major sex hormones (testosterone, progesterone, estrogen), and interfere with the function of oxytocin (the bonding/ love hormone produced in the brain) and serotonin (the mood hormone) receptors in the brain. 5. Increased Risk of Infection: their anti-inflammatory effect reduces NF-kB, a highly inflammatory but critical component of the immune system and the healing process; they lower LDL, known to be able to inactivate more than 90% of the most toxic bacteria, especially those that cause respiratory and gastrointestinal diseases. 6. Increased Risk of Cancer, Diabetes & All-Cause Death.

As if this frightening list of potential side effects were not enough to discourage a patient from taking statins, it is also valuable to keep in mind that cholesterol is: (1) used to manufacture the hormones cortisol (the fight-or-flight hormone) and vitamin D (less than optimal levels are linked with heart disease, osteoporosis, depression, cancer, weight loss difficulty, and all-cause mortality); and (2) a critical component of all cell membranes (especially those of the brain, nervous system, spinal cord, and peripheral nerves). The Natural Statin Alternative Beyond Diet Changes: Dietary Supplements As discussed in Part 1, cardiovascular wellness begins with a healthy, clean diet. In my clinical practice, numerous dietary supplements have proven to be critical foundations of the path to long-term heart health, even if a patient prefers to follow his doctor’s advice to take a statin drug. Although the scope of this article does not allow for a complete discussion, Sinatra/ Bowden agree that these nutrients provide a solid starting point:

1. L-Carnitine (Ideally, as Aceytl L-Carnitine Arginate). With CoQ10, D-ribose, and magnesium (see below), Sinatra recommends this amino acid as one of the “Awesome Foursome” in metabolic cardiology. It transports fatty acids into the powerhouses of cells to be burned as energy. Sinatra/Bowden write, “Because the heart gets 60 percent of its energy from fat, it’s very important that the body has enough L-carnitine to shuttle fatty acids into the heart’s muscle cells.” 2. CoenzymeQ10 (CoQ10). This antioxidant, which Sinatra calls “the spark of life,” is critical to the generation of cellular energy (ATP) and enables oxygen utilization. It is highly concentrated in organs with higher energy requirements (especially those that manufacture it, the heart, liver, kidneys, and pancreas), but is also found in every cell of the body. Sinatra/Bowden recommend at least 100mg twice per day, especially for every patient taking a statin. Ideally, ubiquinol (the active, reduced form that is absorbed up to eight times better than regular, CoQ10) should be taken with a fat only in the morning and afternoon.

3. Curcumin (Turmeric). Substantial scientific evidence indicates that curcumin: (1) combats the inflammation and oxidative stress that causes atherosclerosis (hardening of the arteries), (2) reduces oxidized LDL cholesterol, (3) raises protective HDL cholesterol; and (4) reduces triglycerides. 4. D-ribose. Without this five-carbon sugar there would be no ATP, and with no ATP there would be no energy. Although all cells create D-ribose, they do so slowly and to varying degrees depending on the tissue. The heart, skeletal muscles, and the brain can only make enough D-ribose for their daily needs and do not store it. The presence of heart disease results in chronic deficient blood flow and oxygen so that tissues cannot make enough D-ribose and cellular energy levels are constantly depleted. Sinatra thus recommends from 5 grams/day (cardiovascular prevention, athletes on maintenance, and healthy people who engage in strenuous activities), to 10-15 grams/day (most patients with heart failure, ischemic cardiovascular disease, or peripheral vascular disease), to 15-20 grams/day (advanced heart failure, frequent angina, severe fibromyalgia/muscle cramps/neuromuscular disease). 5. Fish Oil [Omega 3 Essential Fatty Acids (EFAs)]. EFAs, containing EPA and DHA, are vital components of cell membranes and particularly important for overall heart health. Omega-3s: (1) reduce “stiffness” and promote proper blood

vessel dilation; (2) reduce inflammation; (3) promote normal blood pressure, cholesterol, and triglyceride levels; and (4) reduce the risk of fatal arrhythmias and sudden cardiac death. Since Sinatra/Bowden maintain that, “fish oil saves lives,” they recommend 1-2 grams/day and consumption of wild, cold water fish as often as possible. 6. Magnesium. Not only is magnesium required for over three hundred biochemical reactions in the body, but it also functions as a natural calcium-channel blocker (aka calcium antagonists, a group of drugs that affect the way calcium passes into certain muscle cells and are used to treat high blood pressure, angina, and some abnormal heart rhythms). Coronary artery calcification is a long-recognized major risk for heart disease (see Part 1, Agatston score). Maintaining adequate magnesium levels prevents the rise of intracellular calcium, inhibits platelet aggregation (important in the development of clots), and dilates the arteries (to enable the heart to pump more easily and reduce blood pressure). The final critical piece of the cardiovascular prevention puzzle is the management of stress, which contributes to all diseases (especially various aspects of heart disease) and Sinatra/Bowden label, “The Silent Killer.” Since stress response can determine whether one lives long and has quality of life, learning techniques that can promote acceptance of, and adaptation to,

Food: You Are What You Eat By Sarah Zambarano, ND

F

ood is the ONE thing that people dose themselves with every single day. Food provides comfort and nourishment. It is engrained in casual social events, cultural practices, and religious customs. We need it. We crave it. We take pictures of it and “share” it for our friends to envy. Digestive Tract Physiology The digestive tract is a complex network of nerves, organs, microbes, and receptors stretching over 27 feet from beginning to end. To simplify a very complex process, when a person takes a bite of a meal enzymes in the mouth and the act of chewing immediately begin the chemical and mechanical work of breaking down food into smaller molecules to eventually be absorbed. Once the food passes through the stomach, more digestive enzymes continue the breakdown process while destroying potentially harmful bacteria that may have been ingested with the meal. The food then travels to the small intestines, where the bulk of nutrient absorption begins. In the large intestines, water is absorbed, and waste products are packaged for elimination. As the food travels from the mouth through the stomach and intestines, enzymes are released, immune cells are alerted, bacteria are fed and molecules are absorbed. Vitamins, chemicals, and nutrients are taken into the blood stream. Some of these have an immediate effect on the body (think caffeine) and some pass through, are taken up without noticeable consequence, and are stored for times of need (for example, Vitamin B12). Food Influences on Illness Multitudes of beneficial bacteria within the gut communicate chemically with the intestinal lining, influencing and sometimes alerting the organ's immune surveillance system. The food a person eats, chemicals and medications to which they are exposed, and the lifestyle they lead heavily influence which bacteria thrive, and which are kept in check. It is well known that excess growth of less favorable bacteria can contribute to obesity, anxiety, and auto-immune disease (VERY good reasons to keep a healthy microbiome!). Immune tissue within the intestinal walls detect pathogens (harmful bacteria) and toxins, and can trigger both local and systemic responses to perceived threats. Every bite of food ingested has chemical components that interact with the receptors for both the nervous and immune systems that line a person's digestive tract. It should be no surprise, then, that food is often the fuel to 30

Natural Nutmeg - April 2017

the fire of illness for patients. Food reactions can worsen auto-immune illness, change behaviors and mood, cause physical discomfort, and wreak havoc on a patient's general health. A significant focus of Naturopathic care is on tailoring the diet to maximize nutrients and minimize the food reactions that can contribute to a patient's illnesses. What nourishes one person may be very offensive to another. There is no single answer to food sensitivity, and every person is unique in their reactions. Finding out which foods are triggering a person's symptoms can be tricky, but identifying these is key to long-term healing and wellness. Food Allergies Vs. Sensitivity People often mention their food “allergies” when discussing their health. To clarify, a food allergy is a reaction in which a food protein creates a specific immune response. In these reactions, a certain group of cells, known as Immunoglobulin E (also called IgE), trigger a cascade of full-body responses that range from minor to life-threatening. Gastrointestinal distress, skin reactions, respiratory effects, and even anaphylaxis (a sometimes fatal, whole-body reaction) can result. These reactions can become more severe each time the patient is exposed, and early identification is important. Fortunately, these immune-mediated food allergies affect only a small portion of the population. Celiac Disease is an immune reaction to gluten, a protein found in wheat, barley, and rye. Although Celiac Disease has a different immune cell (Immunoglobulin A, or IgA) responsible for its effects, it is also considered a true food allergy. Patients with Celiac disease will need to absolutely eliminate gluten from their diet and personal hygiene products – a very difficult task indeed. Ingestion of gluten for those with Celiac will not only result in feeling poorly, but will cause structural changes to the tissues of the intestines and can eventually impact nutrient absorption. Food sensitivity, or intolerance, is a more generalized term, in which the offending food triggers either an immune response controlled by other immune-modulating cells, or by processes that are not immune-mediated. Chemicals in foods, such as histamines, salicylates, colorings, preservatives, and sweeteners can initiate food reactions with physical (and, sometimes, emotional) symptoms as a result. Symptoms of food sensitivities can range from

minor to significant, and for some patients can be debilitating. The Effects of Food Sensitivities Intolerance to a food group can come from a lack of enzyme needed to digest the food, or a reaction to the components of the food itself. In both lactose and fructose intolerance, the enzyme required to break down the food components are lacking or absent. This can result in discomfort, bowel changes, gas and bloating for those affected. Other food reactions can result in more systemic effects. Food sensitivities can result in symptoms that include, but are certainly not limited to, vague joint pain, skin rashes, amplification of auto-immune illnesses, behavioral changes, migraines, and chronic sinus issues. Some food sensitivities can have a familial link, and some are unique to the patient alone. The tissue lining the intestines is, ideally, a healthy layer of cells that are joined tightly together. This barrier allows only beneficial nutrients to be passed through using a series of transporters and nutrientspecific signals. In a “leaky gut” state, inflammatory processes are triggered by foods and ingested chemicals. These otherwise impermeable cell connections, called “tight junctions”, become impaired and begin to gap. This gapping allows foreign proteins to enter the circulation, inciting an immune response. Additionally, bacteria that are ideally confined to the intestinal tract are allowed to exit into the circulation when these tissues are impaired. The resulting immune responses can have systemic effects. Auto-immune illnesses, psychiatric symptoms, sleep issues, allergies, and even cardiovascular problems may arise from the “leaky” gut.

Testing and Diagnosis For food allergies, testing through a traditional lab with a blood draw can identify offending foods. “Skin prick” tests are frequently done at an allergist's office, small amounts of proteins from common food allergens are injected under the skin using small needles. Those foods inciting an immune reaction are easily identified by the resulting skin response. Gluten allergies in Celiac disease can be identified by tissue changes noted on biopsy during endoscopic procedures, or with laboratory testing for the immune cells responsible for these changes. In order to have accurate results, the patient must have eaten gluten within several weeks' time. Recently, testing for the genetic variations that code for Celiac disease has been used as well. Testing for food sensitivities varies, and preferred methods often depend upon the practitioner and patient’s preference. A diet and symptom diary can be a wonderful tool for a physician and patient team to help uncover which foods may be triggering issues. Typically, a journal of all foods (and bever-

ages) ingested for a full week, as well as a list of physical and emotional symptoms occurring during that time can help zero in on a few foods that may need to be eliminated. Some of the most common food sensitivities include dairy products, eggs, wheat, soy, and corn. Depending upon genetic variations, some patients also have reactions with foods containing certain amino acids (for example, tyramine or glutamates) or organic compounds (such as catechols, found in potatoes, tomatoes, and some tea). When routine investigation of diet and symptoms fails to identify offending foods, further laboratory testing can be done. Food sensitivity panels are available using a small blood sample from the patient. These tests are typically performed by specialty laboratory companies, and can check quantities of IgG, IgA, and IgE present against different food proteins. The benefit of these tests is that foods that may not otherwise be suspected can be flagged as a possible issue for the patient. For example, a patient with a chronic skin rash and migraines might find that mushrooms and brewer's yeast are making symptoms flare. The results of the

test can give the physician a good idea of which foods to begin eliminating in order to start a patient on their path to healing. Hydrogen breath tests can identify lactose, sorbitol and fructose malabsorption, as well as bacterial imbalances in the intestines. These are becoming more widely available at clinics and private practices. Another option for identifying food triggers is an “elimination diet”. Generally, this is an extended period of time during which a patient completely abstains from a particular food group. The elimination period can last weeks to months. This can be challenging, as it requires absolute attention to food labels to identify hidden ingredients, and planning for meals becomes essential. Although difficult, the elimination diet can be incredible in its ability to help a patient and physician identify not only the offending food, but the health challenges it causes, even subtle symptoms that may have been written off as “normal aging” or “just part of life” may become more obvious during these elimination periods. At the end of the elimination period, the food can be reintroduced and another food group can then be eliminated. This sequential rotation of eliminating foods allows the patient and practitioner to determine which foods are causing issues, and which are considered “safe”. Once identified, the offending foods can either be totally avoided or reintroduced in a pattern that allows for improved tolerance. For those patients who are unable to afford the cost of laboratory and specialty testing, this is a wonderful option. Patients suffering from long-standing health issues, auto-immune disease, chronic pain and emotional symptoms should absolutely consider testing food sensitivities while working on their path to wellness. With multiple testing options available, it is not only easily accessible, but can be the key to long-term healing. Your GI Distress May Be Due to

By Marie Mammone, ND

I

complications. The immune system will be unable to distinguish from the good or bad proteins and this could lead to food allergies, GI diseases, asthma, RA and more.

Over 20 years of being a naturopathic doctor it has become apparent to me that I needed to address the health of the gut through nutrition to help my patients heal any inflammation in the body, whether it is brain fog, joint pain, or GI distress. Any inflammation in the body comes from inflammation of the intestines lining, now labeled “Leaky Gut Syndrome.”

If the immune system is hyperactive the antibodies may begin to attack the cells of the body and trigger an autoimmune condition, like Celiac. The key to understanding gluten sensitivities is that it can involve any organ in the body and not just the small intestines. It helps to understand that food sensitivities are also a response from the immune system. If the body lacks the ability to digest food correctly and proteins are absorbed through the intestinal wall, then the immune system will go into action. The intestinal wall may be attacked and cause GI distress leading to leaky gut. However, this is not always the case. Some people do not show gastrointestinal trouble but could be experiencing a silent attack elsewhere in their body and can even lead to anxiety.

learned the importance of gut health over 30 years ago. It all started when I found a naturopathic doctor for my four-year-old daughter. She had been put on antibiotics for her ear infection by her pediatrician and developed chronic diarrhea. I realized this was not the solution. We were eating what we considered a healthy diet, but I discovered 100% whole wheat was not healthy for her. This is when I started reading books on nutrition and learning that the food we eat can inflame the intestines which could lead to infections and depress the immune system.

When the intestines’ lining becomes inflamed, the opening between the cells enlarge and allows proteins to cross into the blood which causes the immune system to attack them as enemies leading to inflammatory conditions from the brain to the tips of our toes. Over a period of time this inflammation can lead to chronic immune disorders. This should not be taken lightly because it could lead to liver overload and autoimmune conditions. We need to remember that every drop of our blood goes through the liver, the cleansing (detoxifying) organ of our body. Everything absorbed across the intestinal barrier must pass through the liver before entering blood circulation. If this load is too great, the liver will not be able to safely do its job. When toxins get into our circulation, this sets the stage for autoimmune

Any form of stress including food sensitivities, toxins (pesticides), antibiotics, or viruses may lead to decreased digestive function which puts the immune system into hyper mode. This could also lead to chronic fatigue. Clearly the presence of gut inflammation (Leaky Gut Syndrome), with its impact on the body systems, extracts a price from the health of the human body. I find that if I address the health of the gut with my patients it will help alleviate their primary illness, regardless of its’ nature. All stresses need be addressed to lead one to health and wellness. So, to help my patients to wellness, I need to address the cause of their inflammation. Testing needs to be done to address any food allergies, sensitivities and/or intolerances. Whether it is IgG or IgE antibody reactions. A food sensitivity (IgG) is different than a food allergy (IgE), which can

create anything from hives to anaphylactic shock. An inability to process/digest food (food sensitivity) can lead to inflammation and gut injury (leaky gut syndrome). However, sometimes the laboratory results do not show the whole picture. The patient may have noticed food intolerances that did not show up in the testing. Also, I like to know my patients’ blood type which leads me to what the food intolerances may be for the patient. An elimination diet may be the best way to discover a person’s reaction to these foods. Remember this is the beginning of decreasing the inflammation in the gut and discovering the food sensitivities and/or intolerances. These proteins are not the only substances (ex. lectins, etc.) that also need to be addressed if we wish to continue decreasing inflammation. The dietary intervention for inflammation is very individualized. We also have to look at how our body is digesting food and what nutrients we are absorbing to continue on our path of wellness. So let’s begin your journey to wellness by seeking out a naturopathic doctor who looks at you as a unique individual and starts you on a healing path. “It is more important to know what sort of person has a disease than to know what sort of disease a person has.” Hippocrates Dr. Marie Mammone is a Connecticut Licensed and Board certified Naturopathic Doctor practicing at the Naturopathic and Acupuncture Health Center in Wethersfield, CT for over 17 years. Finding Relief with a Low Histamine Diet

By Jessica Pizano

M

any years ago, I embarked on an autoimmune Paleo diet (AIP) to see if it would help calm my immune system. The results, at first, were remarkable. I lost weight, gained energy and felt better than I had in years. Like others following this diet I included lots of vegetables; poultry, fish and lean meats; low glycemic fruits and lots of fermented foods such as kombucha tea, coconut yogurt, pickles and sauerkraut. After 12 weeks on the diet, I slowly tried to reintroduce foods carefully, one at a time. Nothing seemed to work. Every nut, seed, bean and gluten-free grain was a disaster. I found myself congested, itchy, covered in hives and inflamed. The worst offender was the day I reintroduced tomato. I had always loved tomatoes and had previously used them all the time in cooking. I decided to make a homemade tomato soup. I took fresh tomatoes and cooked them down with some onion, garlic, fresh basil and oregano. Given how poorly my reintroductions had gone thus far I ate just two bites of the soup as my introduction. Within 20 minutes I was covered in hives, itchy, and having severe diarrhea. How could this be? I certainly could not have developed an allergy to tomatoes in a short 12-week period? While it would take me some time to figure out, the common denominator in my failed introductions was dietary histamine. Histamine Most of us only think of histamine when thinking of allergies. However, its functions in the body are both numerous and far reaching as it is one of our neurotransmitters (brain chemicals). Histamine is released in the body when mast cells degranulate and may be received by one of four receptors (H1R-H4R). Of these receptors, we primarily understand the H1R (found throughout the body in smooth muscle, vascular endothelial cells, heart and central nervous system) and the H2R (triggers gastric secretion of histamine to regulate HCL production). Typical allergy medications such as Benadryl, Allegra, Claritin and Zyrtec are H1 antagonists, meaning that they block the effects of histamine at the receptor site. H2 blockers are medications such as Zantac and Pepcid traditionally prescribed for those with acid reflux. H2 blockers actually target histamine receptors in the gut that release acid. Both of these types of medications do not change actual levels of histamine, but rather stop the histamine from triggering the receptor site which alleviates symptoms of allergies.

Natural Nutmeg - April 2017

Elevated histamine levels can be found in individuals with histamine intolerance (HIT) and mast cell activation disorders (MCAD). HIT may occur when there are single nucleotide polymorphisms (SNPs, sometimes referred to as genetic mutations) to the enzymes diamine oxidase (DAO) and amiloride binding protein 1 (ABP1). Symptoms may include gastrointestinal complaints, migraines, fatigue, dizziness, runny nose, flushing, asthma and hives. Interestingly, elevated histamine levels also inhibit DAO causing worsening of the histamine intolerance. More severe histamine issues occur with MCAD which is a group of disorders including systemic mastocytosis (SM) where there are increased numbers of mast cells and mast cell activation syndrome (MCAS) where there are normal numbers of mast cells that degranulate frequently. MCAD symptoms will generally be much more severe than HIT and will have symptoms including gastrointestinal complaints, headaches, fatigue, vertigo, flushing, hives, asthma, hypotensive syncope, brain fog, tachycardia and anaphylaxis. Elevation of histamine will also cause various complaints related to its role as a neurotransmitter. It works to control the sleepwake cycle and therefore is highly associated with insomnia. It may decrease GABA levels and increase norepinephrine and epinephrine levels causing anxiety (often severe for those with MCAD). It may cause increased permeability of the blood-brain barrier allowing toxins to cross into the brain. Histamine greatly impacts neuroendocrine control including behavioral state, biological rhythms, body weight, energy metabolism, thermoregulation, fluid balance, stress and reproduction. Hypothyroidism may occur with elevated histamine as it may decrease thyroid releasing hormone leading to decreased levels of TSH, T4 and T3. Brain inflammation can cause neurocognitive issues for patients with chronically elevated histamine. Appropriate methylation is also essential for proper histamine catabolism. Histamine N-methyltransferase (HNMT) is an enzyme required for breakdown of histamine in the extracellular pathway. Any enzyme that has the name “methyltransferase” requires a methyl donor to function. In this way, decreased methylation may also cause increased histamine levels. Further, presence of a virus may also inhibit this enzyme. This is the reason why individuals may see increased allergies and/or asthma when they have a virus such as the common cold.

AIP and Histamine So why is the AIP diet such a problem for those that are histamine sensitive? Well, first of all, it doesn’t have to be. There are several reasons AIP is often high in histamine. First, this is a diet that stresses the use of fermented foods. Since ferments are quite high in histamine this can certainly contribute to total histamine levels. The other reason AIP can be so high in histamine is the emphasis on animal protein. While fresh meats and fish are not super high in histamine, as they age histamine develops. This is because all animal proteins contain the amino acid histidine. Histidine, as the animal protein ages, will then degrade to histamine. The older the meat the higher the histamine content. This brings me to the next reason AIP tends to be higher in histamine—the emphasis on whole foods typically means longer hours in the kitchen. Since most of us are so busy with work, family and other responsibilities cooking is not something we typically make time for in our lives. So, to accommodate a lifestyle that requires more homecooked meals, many (myself included) will batch cook meals enjoying leftovers all week long. While this is not a problem if you do not have HIT, for those that do this is a recipe for a histamine disaster. Finally, we live in a world where bigger is better. While traditionally fermented foods are used in small amounts as flavoring agents, many will indulge in much larger servings. A tablespoon of sauerkraut is not typically a problem, but a whole cup may be problematic.

Low Histamine Diet High histamine foods include alcohol, fermented foods, mature cheeses, smoked foods, shellfish, nuts, chocolate, vinegar, wheat, tomatoes and citrus fruits (lemon, lime, orange, tangerine, grapefruit and pineapple). These foods may exacerbate HIT. Prepared, boxed and canned foods are also often problematic, as can be older meats that have been aged or have been sitting in the refrigerator for a few days and ground meats. Poultry skin is also high in histamine, even when fresh. Black, white and green tea, coffee and other caffeinated beverages can also be a problem. While typically, the occasional high histamine food is not overly problematic, eating lots of high histamine foods over the course of a day or two can be very problematic for those with HIT. The best course of action is minimizing the use of high histamine foods if you are histamine intolerant. Eating a vegetarian meal or two per day can be an easy way to decrease your histamine load. preparing meats fresh every day. When consuming higher histamine foods consider keeping portion sizes small. For example, the amount of lemon typically found in hummus is likely not a problem. However, drinking a glass of fresh squeezed lemonade could be more of an issue. Supplements for Histamine Intolerance There are several supplements that can be helpful for histamine intolerance and allergies in general. In my practice, I have found that individuals have their own unique needs for allergy and histamine support. It may take one or more different supplements before you find your own unique combination that helps. While certainly not an exhaustive list by any means, here are some of the supplements that I have found to be helpful.

• DAO supplements (DAOsin, HistDAO, Histamine Block): These supplements contain the actual DAO enzyme. It is derived from a porcine source so avoid if allergic to pork. The formulations are all the same and do contain both rice and corn so avoid if you are allergic or sensitive. For those who cannot take these supplements consider juicing pea shoots which are naturally high in DAO. • Riboflavin: Riboflavin (vitamin B2) is required to help make FAD, the co-factor (helper) for DAO. For this reason, it is sometimes helpful with HIT. • Quercetin: Quercetin is a mast cell stabilizer and can therefore help prevent the mast cell from releasing histamine. It is not well absorbed so it should be taken 15 to 30 minutes before a meal and several times throughout the day. If histamine intolerant avoid formulas with bromelain which can exacerbate histamine symptoms. • Vitamin C: Vitamin C is the co-factor for alcohol dehydrogenase, the final enzyme in the pathway that breaks down histamine. • Probiotics: Some species of bacteria produce histamine and others break it down. Two species that are particularly helpful for histamine intolerance include Lactobacillus rhamnosus and Bifidobacterium longum. • Holy Basil: While typically recommended for helping with stress, anxiety and adrenal dysfunction, holy basil is also a natural antihistamine. • Butterbur: Butterbur is a botanical that functions as a natural antihistamine. In randomized clinical trials, it has been shown to work as well as Claritin, Allegra and Zyrtec. However, if you have a ragweed allergy it is cross-reactive and should therefore be avoided. BERNIE

By Bernie Siegel, MD

Amelia's Story: Learning from Our Animals

I

became a believer in our ability to communicate with animals after Amelia Kinkade, who while sitting in California, told me via an email that she was seeing through the eyes of our lost cat, Boo Boo. She went on in detail about the house and yard and where the cat was hiding. The next morning I went out and rescued Boo Boo from the exact place Amelia had described to me the day before. From that day on I learned that when in doubt to simply ask myself WWAD, or What Would Amelia Do? One of my biggest problems is mentally going into a place of fear when one of our pets is missing or acting strangely, as I know that interferes with my ability to communicate. I tend to try and force them to do my will by every means available to me or I go into my head and decide what the animal is thinking — neither of which ever works—instead of asking WWAD and resolving the issue. My first experiment, after becoming a believer, was to try and find out why our beloved house rabbit Smudge would allow my wife to walk out into the front yard, pick her up and bring her into the house each evening while, when I attempted to do it, she would run around for ten or fifteen minutes until I finally caught up with her. Smudge began her day by running out our pet door every morning and spending the day in our fenced-in front yard with our other creatures. So, my first WWAD was to step out into our front yard the next evening and in my head ask, “Why don’t you let me pick you up the way you let my wife Bobbie do it?’ The unexpected answer, which for me verifies it is coming from the animal and not my head, was, ‘You don’t treat the cats that way.’ I realized she treated my wife differently because I was the zookeeper and guardian. My wife brought her treats more often and rarely forced her to come inside. When I went on to ask what she meant by that Smudge explained that I don’t make the cats come in at any specific time, but give them the freedom to go in and out until my bed time. I then explained that the cats could defend themselves should a predator get into the yard and I was worried about Smudge being out late when it grew dark. With those words Smudge hopped over and let me pick her up and every day thereafter. I will admit some days she would smile at me

and remind me of the old days for a minute or two but I could tell it was just her sense of humor. And when I had appointments I could go out into the yard and tell her I needed to leave the house and would feel better if she would come in. She always hopped right over when she knew I had a schedule to keep. Our cats Miracle, Penny, Dickens and Gabriel read my mind also. Their names are no coincidence. Miracle was named after a cat that appeared in a dream to one of my cancer patients and said, “My name is Miracle and this is the cancer treatment protocol you should follow”. The cat then gave her the details, which her oncologist agreed to, and she is well today. So our next rescued cat became Miracle. Miracle is just that. She thinks she is a dog. She is fearless, so I entered her in a dog show. The next year someone posted a notice, “This dog show is for dogs only”. By the way, the neighbors treat you with caution after they hear and see you running around your house yelling ‘Miracle’ at the top of your lungs. Now I take attendance every evening before I get into bed to be sure all our kids are in the house and no one is locked out. My hope is you will let Amelia open your minds and increase your communication skills so you won’t get that look from the animals anymore. With time and training I even get along better with people, too—an added benefit! For many, Dr. Bernard Siegel-or Bernie, as he prefers to becalled-needs no introduction. He has touched many lives all overthe Planet. In 1978, he reached a national and then international audience when he began talking about patient empowerment and the choice to live fully and die in peace. As a physician who has cared for and counseled innumerable people whose mortality has been threatened by illness, Bernie embraces a philosophy of living and dying that stands at the forefront of the medical ethics and spiritual issues our Society grapples with today. Read Bernie’s regular blog posts on his website where you will also find his books, articles, and CDs: http://www.berniesiegelmd.com. Bernie currently holds a cancer support group the second and fourth Tuesday evenings of the month 1:30-3:30PM at Coachman’s Square at 21 Bradley Road, Woodbridge. If interested contact Lucille Ranciato: lranciato2@yahoo.com 203 288 2839; or Bernie: bugsyssiegel@sbcglobal.net. You can find Bernie’s books ad CDs at Wisdom of the Ages in Simsbury, Ct.
