Difficult times ahead for all
September was a very sad month for most people with the passing of Queen Elizabeth II but what an outpouring of emotions that were felt around the whole world. She epitomised service and as she was the only monarch that most of us knew, we are all facing a changing future as she was regarded so highly and as a conscience by most World Leaders. As she did, King Charles 111 is inheriting not only the monarchy issues and what should change in the Royal Family, but also a place as a major figure in World leaders. We wish him every success in the challenge.
Unfortunately the continuing evil illegal assault on Ukraine by Russia is another distressing factor in the world, affecting everyone on the planet in some way.
In addition, the troubles that the people of the UK and businesses in our sectors have been worrying about continued to increase in intensity and the recent “minibudget” has only served to make us consider whether the measures will be judged to be a master stroke or yet another nail in the coffin. Time will tell.
Inflation continues to be a continuing concern for the UK with people and businesses concerned about interest rates and raging inflation fuelled by food and energy costs. They do say that out of adversity the best run businesses are the ones that survive and prosper the most.
We finally managed to get a week away down on the Lizard Peninsula in Cornwall and it was great to see St Ives and the South West so busy and food places working very hard to satisfy the locals and tourists alike. Finally, I would like to say a big Thank You to everyone who continues to support Fast Food Professional magazine in these very challenging times. Your loyalty does not go unnoticed here.

Pukka Highlights Unique Opportunity to Drive
Bumper Pie Sales During Football this Winter
The nation’s number one pie brand, Pukka, tells us how fish & chip shops can take advantage of a unique opportunity to bag bumper pie sales, as key international football matches fall during prime pie eating season. Fast Food Professional Director, Athol Dipple, takes a closer look.
Britain is a nation of food lovers, which means that whatever the occasion – big or small – food is at the heart of celebrations, and sport is no exception. Therefore, as we approach the 20th November, where people up and down the country will be getting ready to cheer on their national football team, fish & chip shops should start preparing now to make the most of the sales rush.
Not only do pies and football go hand-in-hand, but this year presents an extraordinary sales opportunity as some of the most-watched and highly-anticipated football games are happening in the winter months – AKA prime pie eating season. Pukka’s Managing Director, Isaac Fisher, describes this as a “unique sales opportunity not to be missed” for the fish & chip shop industry, as two key pie consumption moments intertwine.
“Cheering on the Three Lions during winter isn’t something we’re used to – but we’re certainly not complaining! We know that while our pies are enjoyed all year round, there is a particular preference for them during the colder months. In fact, pie sales increased +14% during autumn / winter last year . And when you also consider that during the international matches of summer 2021, sales spiked +25% , there is no better time to get prepped for a huge influx of customers.”
Fish & chip shops have been Pukka’s heartland ever since it baked its first pie in 1963. Therefore, the brand is arming chippy owners with the tools they need to make
the most of this unique opportunity.
Fisher explains: “Firstly, offering a complete line-up of pies is vital, so that you have something for everyone. As The People’s Pie – and the nation’s favourite – our comprehensive range can help you do just that. On top of the classics, like All Steak and Chicken & Mushroom, our chip-shop bestseller Minced Steak & Onion is a must – as is our pitch-side favourite Chicken Balti. To help you reach an even bigger customer-base, including veggies, flexitarians, vegans and meat-reducers, stock-up on our Cheese, Leek & Potato pie, plus our duo of Vegan recipes – Vegan Minced Steak & Onion and Vegan Chicken & Mushroom.”
Fish & chip shops can maximise the opportunity even further by utilising click & collect and home delivery services – to give their customers an easy way to order their pie & chips meal pre-game, post-game or during halftime. They should also harness the power of their social media channels to advertise these services to their local communities.
Fisher adds: “We ran a campaign during lockdown in which we offered chip shops geo-targeted social media advertising to help them shout about the services they have available. We know this tactic works, because chip shop businesses saw a +32% increase in pie sales during the week the social ads were live , compared with the previous week.
“There’s also plenty of resources available on our foodservice website – including our Heat & Serve Guide, Social Media Toolkit and bespoke POS – which will help you to drive engagement and generate sales growth even further. We’d urge all chip shop owners to take advantage of the materials we have available to drive visibility during international football games this winter,” concludes Fisher.
Country Range’s Potato Pantry Grows with Trio of Crunch-tastic SKUs
Following the successful launch of its trio of “Double Crunch” fries earlier this year, Country Range has further augmented its plethora of potato pleasers with the unveiling of three new super spud products – Country Range Double Crunch Seasoned Wedges, Country Range Double Crunch Sweet Potato Fries and Country Range Double Crunch Shoestring Fries.
Guaranteeing
that chefs from across public sector and hospitality kitchens of all sizes have an unbeatable, taste-rich fry, the new trio have a novel invisible coating that delivers the unique Country Range ‘Double Crunch’.
With invincible crunch-staying power making them a great fit for kitchens offering takeaway, food-to-go or room-service, the new selection are available in 4 x 2.5kg catering boxes and are gluten-free, plus they are pre-fried in sunflower oil instead of palm oil.
Joining the 10mm Double Crunch Skin-On Fries, 14mm Double Crunch Fries and 19mm Triple Cooked Chunky Fries that have generated legions of fans since launch in the spring, the new trio joining the Country Range portfolio includes:
Country Range Double Crunch Seasoned Wedges
Immense for sides, sharing platters, to be pimped up or alongside classic burgers, these thick-cut, mouthwateringly, wicked wedges are given an extra coating of batter for double the crunch and have the fluffiest inside to be found. Made with the flavoursome Fontane potatoes, they are lightly seasoned and will hold their crunch for over 20 minutes.
Country Range Double Crunch Sweet Potato Fries
A solution to the shockingly soggy, sweet potato fries saturating the market in recent times, these thin cut sweet potato fries have a double dose of the special invisible batter, making them the captain of crunch. Made with Beauregard thin-cut sweet potatoes, they come lightly seasoned and will hold their crunch for over 20 minutes.
Country Range Double Crunch Shoestring Fries
Delicately seasoned, these sensational 7mm shoestring fries are made with Fontane potatoes for a consistent year-round flavour and will keep their crunch for over 40 minutes.
Country Range Group Head of Marketing Emma Holden said:
“Potato products continue to be one of the most popular products for caterers and consumers, appearing in some shape or form on every menu whether they are chipped, mashed, boiled, fried or roasted. Fries and wedges are no longer just considered a side dish and we’re seeing a host of creative caterers turning them in to the focal point of a dish by loading them with on-trend toppings and sauces. That’s why it’s never been more important for caterers to make sure that their spuds pack a punch on the flavour front and deliver that all important crunch. The unique coating makes them ideal for food-to-go or delivery menus, and will be perfect for bar snack menus for the FIFA World Cup later in the year. Our development chef Paul Dickson has been highlighting to customers how the humble fry can be elevated to even greater heights with some creative recipes like various global inspired loaded fries ideas and Canadian Poutine.”

The Class of ’54
Fish and Chips have long been recognised as Britain’s National dish, no more so than in the 1950’s. In the Class of ’54 there were over 30,000 Fish and Chip shops serving the Country’s only take away food. The primary fare was cod or haddock and chips, fried initially in animal fats, principally dripping and lard. The average price for a medium portion of cod and chips was one shilling (5p in today’s currency) and Friday night was the most popular night for the take away treat. In 1954 the market changed dramatically with the launch of Frymax vegetable oil. Unlike the high level of saturated fat and cholesterol in animal fats, Frymax was pure white premium palm, which had a higher smoke point, was additive free, contained no hydrogenated oil and less than one per cent trans fats. Frymax produced delicious light results and soon became the industry favourite and has remained so until today, the same product with the same consistent results.

‘Big Truffle in Little China’ as Bath restaurant wins Heinz Battle of the Burger competition
In celebration of National Burger Day in August, Kraft Heinz Foodservice began the search to find Britain’s best burger with its Heinz Battle of the Burger competition and has now crowned Magu Diner in Bath as the winner
KraftHeinz Foodservice, which judged entries based on overall appearance, creativity, and quality, was thoroughly impressed with the restaurant’s ‘Big Truffle in Little China’ burger. Szechuan-coated buttermilk chicken was topped with Heinz [Seriously] Good Truffle Mayonnaise, a honey, ginger, spring onion and coriander Chinese leaf slaw and Heinz Thai Sweet Chilli Sauce packed into a potato bun.
The campaign encouraged independent burger restaurants to be imaginative in creating the ultimate fast-food favourite whether it be a meaty masterpiece or plant-based patty of perfection. Chefs were invited to unfurl their flair to produce a unique and delicious menu item that used at least one Heinz sauce in its original form, for a chance to be named the country’s best and win a marketing package worth £5,000.
Charlotte Crane, junior brand manager at Kraft Heinz Foodservice, says: “The UK is a nation of burger lovers, eating 2.5 billion of them per year. And we all know that key to a burger’s success is that final flourish of sauce. We wanted burger houses to get creative with this winning yet versatile combination.
“Huge congratulations to Magu Diner for an excellent interpretation of the brief which delivered on excitement, innovation and most importantly, a knockout variety of flavours. Kraft Heinz Foodservice is thrilled to be working with the team to get Big Truffle in Little China on its menu for diners to sink their teeth into it in the coming months.”
Magu Diner, which opened in Bath city centre in 2018, prides itself on being a gourmet burger bar which serves ‘out-of-this-world’ burgers. It’s where smashed beef patties and plant-based versions are right at home smothered in unconventional flavours - think peanut and pecan butter paired with a popular biscuit spread.
Head chef and owner of Magu Diner, Leon Dunnett explains the decision to enter the competition. He said: “National Burger Day is always busy for us, and we believe that we serve the tastiest ones in town - we go all-out when it comes to quality and flavour. We love experimenting with Heinz sauces, so the Heinz Battle of the Burger competition was a fun way to push ourselves more, with the aim to verify our claim that our burgers are the best.
“The inspiration for Big Truffle in Little China comes from a love of east-meets-west fusion - two opposites marrying together to make something really special. Plus, I adore anything with truffle in.”
Leon adds: “We are so excited and happy to have won! Working closely with Kraft Heinz Foodservice is going to be a gamechanger for us and the team is so thankful to be working with a brand that is much-loved and highly respected by us and our customers too. We look forward bringing Big Truffle in Little China to our menu and diners soon.”
Over the coming weeks, Magu Diner and Kraft Heinz Foodservice will team up to create the promotional activity for the winning burger, which will be available at its Moorland Road restaurant for a limited time only following its launch. Heinz will be supporting with a marketing plan worth £5,000 which will go towards merchandise and instore visibility, PR and social media promotion.

The Class of ’88
By the late 1980’s the British public’s food tastes had become cosmopolitan with considerable growth in Indian and Chinese takeaway’s and gourmet food ranges in supermarkets. Nevertheless Fish and Chips still remained the Nation’s favourite takeaway with the Class of ‘88 numbering around 15,000 shops. They were attracting a more diverse range of customers who were paying around £1.60 - £2.00 for medium cod and chips. Greaseproof paper was introduced and newspaper for wrapping phased out on hygiene grounds. A BSE outbreak also resulted in many shops switching from animal fats to vegetable oils for frying.
By 1988, Frymax was still the number one brand. It was exactly the same product as on launch with no additions or modifications and remained pure white palm which is additive free, contains no hydrogenated oil and less than 1% trans fats. Frymax guaranteed consistently good results and long lasting performance without deterioration in quality and had become firmly established as the Fryers Favourite.

As a leader in the manufacture of hot and cold food display equipment, Fri-Jado has a global reputation for quality and innovation. The Multisserie represents the very pinnacle of the company’s popular rotisserie range, offering operators a creative and ingenious solution to cooking in a customer-facing environment.
A revolution in visual cooking and merchandising, the Multisserie drives impulse purchases with a unique 270° view. The unit’s steady rotation and enclosed chamber help foods to cook up to 50% faster than conventional ovens and open rotisseries, while intelligent ‘cook correction’ technology ensures food safety and delivers consistent quality results.
A brand-new, intuitive vivid colour touch-screen control delivers enhanced ease of use, while a sleek new user interface with up to 250 pre-programmed menus guarantees consistency, even for those staff with limited training. A boiler-less steam generator, with humidity control and an optional temperature probe, delivers precision conditions within the chamber.
For enhanced labour savings, the Multisserie range also features fully automatic cleaning technology, allowing an operator to start the cleaning programme at the end of a shift, leaving the machine to complete the cycle
overnight or during quiet periods. The user-friendly design is enhanced thanks to the Multisserie being accessible on three sides, while a range of accessories enables a variety of meats, proteins and vegetables to be quickly and effortlessly cooked in the unit.
On the launch of the new Multisserie range, Gary Thacker, Sales Director at Fri-Jado UK comments:
“Customers are drawn in by the theatre of a cooking process, so why not showcase it in the most visible way possible? A rotisserie is a great way to demonstrate quality, while also engaging with your customers, but the Multisserie goes one step further, adding a standout design and ease of use to the mix. Capable of cooking up to 60 whole chickens in just 45 minutes, the unit is suitable for high footfall sites, while the optional internal condenser allows an operator to position it in virtually any location. The wonderful sights and smells of freshly cooked meats is a sure-fire way to drive impulse sales, especially during new or quieter day parts.”
Designed for front-of-house environments, the Multisserie has flexibility at its heart. An optional internal condenser eliminates the need for additional extraction, allowing operators to position the appliance without the common ventilation restrictions.
What’s more, operators can add a grease separator, designed to efficiently separate grease from water during the cook cycle. Significantly reducing the waste from the unit, the grease separator is better for the environment and further reduces the need for expensive treatment systems.

McWhinney’s Sausages is proud to introduce its new Gluten Free Sausage
Something that would stand out – or more precisely something that would be able to blend in. Blend in with the rest of the McWhinney’s range and not be identifiable as a gluten free product. It is estimated that 1 in 100 people in the UK suffer from Coeliac Disease but as much as 10% of the population are intolerant and eat a gluten free diet. It has been a sad fact that much of the gluten free food on the market has been a compromise for those who were forced to eat it – Kevin set out to change that.
So, after another rigorous period of trial, error and development, McWhinney’s Sausages is proud to introduce its new Gluten Free Sausage. Made with the same prime cuts of pork as all McWhinney’s products, the sausage does not compromise in anyway: the bite is meaty, the flavour is robust and they cook to perfection every time. When asked about the Gluten Free Sausage Kevin said:
Kevin McWhinney was raised on the family’s famous secret recipe Premium Sausages. He was able (and known) to make light work of a plateful until a couple of years ago when he received the news that he suffered from Coeliac Disease and would have to give up gluten and his beloved sausages for the good of his health. Kevin, determined as ever, set about to make a sausage he could safely enjoy. As if that wasn’t enough of a task he decided that he would make a replica of the famous Premium recipe that he had enjoyed for all those years.
It took many months and many failed attempts but eventually it was created: a Gluten Free Sausage that was so close as to be nearly identical. Unfortunately the story doesn’t end there. The search for a specific flavour had an unintended side effect: that profile didn’t hold for more than a couple of months in the freezer. The team at McWhinney’s took the decision to pull it from the market as it didn’t reach the high standard customers expect and deserve from the company. It was back to the drawing board.
It quickly became obvious that that original Premium flavour was never going to be achievable in a gluten free sausage, so Kevin turned to creating something different.
“When you are a Coeliac you have a limited range of food you can eat. The majority of the foods you knew and loved before getting diagnosed are not an option any more. That is why its so important that the food you can have is high quality. Gluten Free products are, by nature, expensive given the testing requirements and procedures that have to be in place to ensure the safety of the customer but it is a price worth paying for quality. I aimed to make a product that would put the power back in the hands of those on a gluten-free diet: to a point where they can actively choose a product and not just settle for what they can get. HCE sets Paultons Park on the route to fast food efficiency
Paultons Park, home of Peppa Pig World, is a family-run theme park, situated in Hampshire. Having first opened their gates in 1983, the park has seen numerous upgrades – the most recent involving a brand-new three-and-a-half-acre area called Tornado Springs. In addition to new rollercoasters, a driving school and a Cyclonator, the team at Paultons saw the development as an opportunity to expand the park’s food offering as Stephen Lorton, Commercial Director explains:
“Tornado Springs was built to complement the attractions in the rest of the park. We also recognised it was an opportunity to increase our food and beverage offering – to offer greater variety, and greater capacity. This led to the construction of the Route 83 diner.”
Head of Food and Beverage at Paultons Park, Andrew Edwards, agreed, emphasising the need to be able to handle large numbers of guests quickly:
“Everyone comes for lunch in a two-hour period, so it was really important that the design of the venue allowed us to offer the speed of service to cater for large volumes.”
The team at Paultons had a theme in mind for Route 83 – but in terms of plans for the kitchen, it was a blank canvas. After having successfully completed design and installation for a number of other venues within the park, Stephen had no hesitation to call on
the skills of HCE for this latest project:
“We approached HCE with a view to designing a kitchen which fitted in with the concept of the diner. Due to the impact of the lunch time rush, the assembly stations for the burger and hotdog lines were critical to the smooth operation of Route 83. As such, HCE spent a lot of time completing 3D drawings for us to ensure that we got the final result we required.”
Andrew highlighted that a key consideration of the design was to also focus on ease of flow, and the quality of equipment. For the team at Paultons, it was critical that the kitchen was optimised to create the most efficient workflow – from deliveries and storage at the back of the
diner, the cooking lines and hot holding in the middle, to ensuring there was enough space for the front of house staff to build orders and serve customers. The result could not have been better…
“As a lot of the equipment is state of the art and very simple to use, HCE invited us to the Welbilt demo kitchen in Guildford, where we got to fully understand how the equipment would fulfil our brief.” Some of the advanced equipment that HCE incorporated into the final design includes: Merrychef E2S high speed ovens, Merco hotholding cabinet, Frymaster fryers and Garland Clam Grills - which can cook burgers within two minutes, compared to 18 minutes on the park’s old griddles. With the concentration on speed and flow, the incorporation of touchscreen ordering systems was an obvious choice, tying the design together neatly.
Andrew and Stephen summarised their experience collaborating with HCE on the design of Route 83, with Andrew commenting:
“The final kitchen that HCE has delivered on this project is absolutely superb. What we have achieved through the summer period would not have been possible without that kitchen, which is all because of HCE. The equipment and the flow of the kitchen is second to none”
Stephen agreed and highlighted how important the HCE partnership is:
“The key benefit of working with HCE was definitely the flexibility and their understanding of exactly what we were after and what we required. I would absolutely recommend HCE. Their ability to deliver on time and per the quotation, with no surprises, made the whole process significantly easier.”

KTC Completes Switch to 100% Certified Segregated Sustainable Palm Oil
This marks the successful achievement of its 2019 pledge to make the switch to RSPO certified sustainable segregated palm oil by the end of 2022, after signing up to the RSPO Shared Responsibility Initiative. Previously, the company had offered a selection of certified sustainable options, including segregated and Mass Balance, alongside a smaller quantity of non-certified palm.
Over the last three years, KTC has been phasing out the remainder of these non-certified and lower certification (Mass Balance) palm products – replacing them with certified segregated sustainable options. To drive this transition, the company has been engaging with and educating customers on the benefits of sustainable alternatives, developing new products and proactively encouraging them to make the switch.
Gary Lewis, Chief Commercial Officer at KTC, said: “We recognise the social and environmental impact of our business and wider supply chain. Palm oil can be a truly sustainable option, as long as it’s grown in a responsible manner – and today, 100% of our palm we offer is RSPO certified segregated sustainable.
“We’re really proud to have achieved the milestone on
schedule – and it’s the blueprint for the future direction of the KTC brand. We will continue to make improvements on sustainable palm, while working hard to improve the sustainability credentials of other key commodities.”
Achieving this milestone has been a key aspect of KTC’s wider sustainability plans. The company has been investing heavily in leading the way on sustainable sourcing to achieve a greener future for the oil and fat industry, from the farms and plantations to manufacturing and delivery. In addition to actively promoting sustainable practice across all their palm oil suppliers, the company has specific goals in place for traceability. These include having traceability back to 100% of the mills used in their supply chain and plans to increase their traceability back to the plantation from 23% to 50% over the next 12 months.
Founded in 1972, KTC Edibles employs more than 275 people across two UK sites in Wednesbury and Liverpool. The company supplies more than 250m litres of cooking oils to customers of all sizes across the UK food industry each year.
Additional information about KTC’s sustainability pledges can be found at https://www.ktcoilsandfats.co.uk/.

We’re reducing food waste and unnecessary costs
With energy prices at their all time high, it’s more essential than ever to ensure equipment is operating at maximum efficiency to reduce costs. In particular, refrigeration units can be a massive expense, as one of the few pieces of kit which operates 24/7. With over 30 years’ experience, Monika’s temperature monitoring equipment can aid operators, not only in food safety compliance, but also in tracking equipment performance.
A discreet sensor inside the refrigeration unit simulates the temperature of food items for greater accuracy, rather than the air inside the unit. Staff can be nominated to receive alerts should the unit move outside a pre-set safe temperature range; enabling teams to relocate perishable items before they spoil, reducing food waste and unnecessary costs. These alerts also help identify faulty equipment – helping managers address flaws before they become expensive repairs, or make the decision to invest in new, more efficient equipment. Monika’s temperature monitoring systems are also appropriate for use in cold rooms, freezers, and warewashers, so operators can have confidence in their kitchen equipment across the board.
Thanks to Monika’s smart cloud connected system, managers can access the dashboard from any mobile, desktop, or Monika’s handheld PA device – even when offsite. This is ideal for multi-site businesses. The ability to view multiple locations from one system provides insight regarding equipment performance, and identifying potential staff training opportunities, further helping maximise efficiency.
Team members can receive audio and visual task reminders through Monika’s task manager module, ensuring that no hygiene task is missed again. Scheduling regular cleaning of commercial refrigeration units can greatly extend their longevity, further helping minimise operator costs. The fully auditable log means managers are able to view if a task has been completed, when, and by whom – eradicating the potential for human error or miscommunication.
Monika is dedicated to ensuring customers get the most out of our system, which is why a dedicated team of engineers will not only install Monika equipment and provide full training on use and maintenance, but also provide an annual service to ensure equipment longevity and maximum efficiency.

By Keith Hopewell,Sweet & Savoury Pies & Pastries
“The Federation of Bakers estimates the UK bakery market to be worth over £3.9 billion, and one of the fastest growing food sectors in the UK. Innovation driving the sector means there is an abundance of choice of baked products, with solutiondriven specialists like Pidy leading the way
All Pidy pastry products have an ambient shelf life of nine months plus, meaning they’re an ideal option for operators looking to reduce costs and buy in bulk. Chefs won’t have to worry about expiry dates and food waste, with Pidy pastry bases being quick and convenient to fill as required. Operators instead have time to experiment with delicious fillings, and can make use of seasonal produce – further helping reduce costs. The range features a plethora of product-specific solutions, but Pidy’s classic neutral, sweet, and chocolate tartlet bases remain among the most popular.
Cost savvy operators will also appreciate the versatility of Pidy’s products. For example, Pidy’s quiche bases make wonderful pie bases. Simply pour in your filling of choice, and top with puff or shortcrust pastry. This tactic is particularly useful for venues suffering from staff shortages as it is quick, easy, and cost effective. For a more traditional quiche offering, operators could take inspiration from Pidy’s Quiche Margherita. Spread some mozzarella on the bottom of a Pidy quiche base, then pour over beaten eggs and cream. Sprinkle cherry tomatoes coated in olive oil, oregano, and salt, then top with more mozzarella. Bake for 20 minutes at 170C then a further 15 minutes at 150C, and garnish with fresh basil leaves and voila! Not only is this a healthy alternative to pizza, it’s also ideal to offer as a takeaway option, making it perfect for short-staffed venues who want to increase revenue without putting strain on staff.
Comparatively, freshly made baked goods are extremely time-consuming to prepare, which is particularly true of complex vegan or gluten-free recipes. Making pastry bases in house also carries the risk of inconsistent quality or an
uneven aesthetic – a risk which can be eliminated with Pidy products, which includes vegan and gluten-free options to maximise customer appeal. The bases look amazing, while also benefiting from the crisp, golden, buttery finish that Pidy has become famous for, giving them a homemade taste.

Heinz Professional Mayonnaise awarded Grade A endorsement and ‘rarely seen’ score by Craft Guild of Chefs
Kraft Heinz Foodservice’s Professional Mayonnaise has been awarded the highest of accolades from the Craft Guild of Chefs (CGOC) – the leading chefs’ association in the UK – achieving Grade A status, and the highest score in its category in recent years.
The multi-purpose product, which launched into the foodservice market last summer as a ‘Made by chefs, for chefs’ solution to culinary needs in professional kitchens, was put through rigorous testing by highly experienced chefs via the CGOC’s Chefs Product Endorsement Programme.
With the ability to blend, fry, carry flavour and hold through high heat, Heinz Professional Mayonnaise scored 169 out of 180, a result rarely seen in the industry.
Andrew Green, Chief Executive of the Craft Guild of Chefs, said: “Heinz Professional Mayonnaise received a stunning approval score when sampled by our panel of chefs which is a fantastic achievement and something we don’t often see. Its overall success in its performance clearly came through in the judging, so it really deserves its rating.
“It is a superior product that meets the criteria any chef would want and expect when using a condiment such as this. This will go a long way in providing the culinary world with a go-to which helps make ingredients shine,
elevates menus, and excites diners. Well done Kraft Heinz Foodservice.”
The CGOC-selected chefs who formed the testing panel – Mark Reynolds, Executive Chef at Tottenham Football Club, Matt Owens, Development Chef for Alliance Group and Andrew Green, Chief Executive of Craft Guild of Chefs
– gave Heinz Professional Mayonnaise particular praise for its ‘consistency and versatility’, as well as its ‘indulgent, tasty and stable’ qualities as a key kitchen ingredient.
Comments included: “It held well and there were no signs of any splitting or separating – even with excess beating and blending. It also took well to other items being added to it, without losing too much from the consistency.”
And, “It works very well when [adding] various ingredients –Sri Lankan, sriracha, herb oils etc. and with the slight acidic notes, it really did help to bring out the flavours added.”
Culinary Sales Manager at The Kraft Heinz Company, Lawrence Ager, said: “This is an incredible triumph for Heinz Professional Mayonnaise. This is a product that is made by chefs, for chefs, and promises to assist them in producing exciting dishes to entice their customers.
“We took a lot of time and care to develop this as an innovative solution to suit so many culinary requirements within the pub, restaurant, and casual dining arena. CGOC’s feedback certainly reflects the hard work we have put in to creating such a high-quality product and now with the CGOC ‘Approved Product’ distinction, it is confirmation of our promise that our mayonnaise is ‘the one quality ingredient to meet all chefs’ culinary needs.”
Let them eat ambient cake!
Available in neutral or cocoa, the sponge sheets benefit from an ambient shelf life of over four months – and can also be frozen to extend longevity and provide greater convenience. This makes them ideal for quickly creating mouth-watering desserts.
Thanks to their subtle taste, the neutral sponge sheets can even be used to complement savoury dishes as canapés, or sandwich style tapas – whilst also being sweet enough to act as the perfect vessel for traditional sweet toppings.
The cocoa sponge sheets are equally versatile, whether operators want to create an indulgent chocoholic dream, or utilise the current trend of pairing chocolate with tart, citrus fruit. The flexible sheets can be shaped into a variety of extraordinary shapes, whilst remaining light, yet dense and indulgent in texture.
Fabien Levet, Commercial Director at Pidy UK is excited to add the new products to Pidy’s range;
“We’re delighted to be able to offer operators even more convenience with our ambient sponge sheets. They’re versatile enough to be used with a range of fantastic flavours, whether that’s sweet or savoury. It’s also a great staple to have on hand all year-round, as operators can adapt the toppings to get the best out of seasonal tastes.”
The ambient sponge sheets join their frozen counterparts, which are available in neutral, and choco – while Pidy’s frozen joconde sheets are available in neutral, choco and nut, raspberry, and pistachio. Joconde’s are defined by their use of whole eggs and confectionary sugar, compared to sponge sheets’ use of egg whites and granulated sugar – making the sponge sheets fluffier and sweeter. Both the frozen sheets and joconde have a frozen shelf life of 12 months. Defrosted in a matter of hours, the sheets then guarantee quality for up to 48 hours.

MERRYCHEF CONNEX® 16 DELIVERS LARGEST CAVITY TO FOOTPRINT RATIO
The Next Generation of High-Speed Ovens
GUILDFORD, UK – September 2022 Hot on the heels of the Merrychef conneX® 12 launch earlier this year, Merrychef is set to transform the high-speed oven sector again with the breakthrough conneX® 16. Boasting a large 16” cavity in just an 18” wide footprint, the larger sibling in the conneX range comes fully connected, with a state of the art 7” high definition screen and cook times 80% faster than traditional methods. With its larger internal cavity, the new conneX® 16 has the flexibility to ‘batch’ cook to hold popular food items, helping operators to handle busy trading periods with ease speeding up order delivery and reducing queues.
Colin Lacey, VP and Managing Director of Merrychef sees the oven opening up high speed cooking to even more venues:
“The conneX® 16 once again breaks new ground in the high-speed oven sector. Addressing sector demands for space, speed and ease of use, its game changing size and out of the box connectivity, sets the conneX® 16 apart from any other equipment available. To have a 16”x16” cavity in an oven that is just 18” wide and which can sit on a 700mm counter top is an industry first and opens up significant new opportunities for operators across many sectors.”
With Wi-fi and ethernet connectivity as standard, uploading menus can now be done simply at the touch of button. A 12-month free subscription to the powerful and market leading Welbilt KitchenConnect® ecosystem, provides operators with a full range of monitoring and diagnostic information, and the ability to remotely push menus to their ovens.
Easy to install, with energy saving efficiencies, the conneX® 16 features quick pre-heat and cool down times and reduced energy in standby. Steve Hemsil, Sales Director, UK & Ireland at Welbilt, believes the larger model expands the capabilities of the high-speed ovens category:
“The new conneX® 16 allows the operator to cook more food at the same time. Whether that’s 4x paninis in 1 minute, fish fingers and fries in 110 seconds or a 16” pizza in just 90 seconds, the greater capacity and rapid cooking times makes the conneX® 16 a ‘must have’ piece of equipment for operators looking to speed up serving times, reduce queues and maximise profit.”
The Merrychef conneX® range features two high-speed ovens, the conneX® 12, available in standard or high-power versions and boasting a 12” cavity in a 14” width oven and the conneX® 16 with its revolutionary 16” cavity in an 18” width oven – the smallest footprint to cavity ratio available.

Refrigeration firm launches Energy Cost Calculator to focus on total cost of operations
As part of a wider sustainability drive, True Refrigeration has unveiled a new online tool to compare energy usage, carbon consumption and long-term operating costs of commercial refrigeration products
Leading commercial refrigeration manufacturer True Refrigeration has launched a brand new Energy Cost Calculator this month.
The new online tool allows volume food and beverage operators and commercial kitchen specifiers to compare like for like refrigeration products to calculate annual energy usage and CO2 emissions, as well as get a lifetime estimate of potential operation costs and environmental savings.
True’s Energy and Greenhouse Gas Equivalencies Calculator for Commercial Refrigeration enables users to enter the volume of units, provide data from the fridge’s energy label and submit the Kilowatt per hour (KWh) energy cost from a utility bill. They can then select from four categories of fridge units to get a calculation of annual operating costs, estimated lifetime cost and CO2 production, comparing True with other products on the market.
Once the data is submitted, users are provided with a one-page report showing which products have been compared, the estimated total running cost and energy saving for one year and over a 10-year period. The report also provides the unnecessary environmental impact equivalent of the refrigeration units compared, this is expressed as the number vehicles on the road, trees cut down or annual home energy in a graphic illustration.
Scott Jones, True Refrigeration’s Sales and Key Account Director for the UK & Ireland said: “Energy efficiency is essential in tackling climate change as part of being a responsible business. It has never been more important to understand the type of refrigeration equipment you own, what it is costing
you to operate and maintain it and the potential impact on your organisations carbon footprint and sustainability targets.
“Operators need to understand and factor into their purchase decision not only the initial capital cost of equipment, but also the operating costs over the lifetime of the product. Our calculator is intended to give an estimate of the lifetime electrical (kilowatt-hours) savings that could be achieved by choosing energy efficient products from True compared to others on the market. It also provides relatable Greenhouse Gas equivalency metrics to assist with carbon reduction goals.”
True has been developing its natural refrigerant range since 2007 through its Hydrocarbon (HC) Initiative, by using R290 as an alternative refrigerant. This has low ozone-depleting properties and extremely low Greenhouse Warming Potential (GWP), making it one of the most climate-friendly and cost-effective refrigerants on the market.
Scott concludes: “The new tool, available via True’s website, is part of a wider sustainability drive to provide energy efficient commercial refrigeration, advice, support and consultancy to operators wanting to meet their sustainability goals.”
From under counter units to upright cabinets, glass door or air display units, the True Energy Cost Calculator provides a handy, visual comparison of potential cost and environmental savings that can be made when purchasing multiple units.

Reaching boiling point: high-pressure conditions for delivery drivers linked to increased risks of road accidents
The COVID-19 pandemic changed the business infrastructure of many organisations, creating a physical barrier preventing potential clients from travelling to their establishment. In a time when the population was penned inside, many businesses in the food and drink industry opted to bring their products to the client’s doorstep. This model resulted in the number of delivery drivers on the road skyrocketing, in parallel to the ever-increasing number of online delivery orders.
Delivery drivers in the UK typically use two-wheeled transportation methods, including bikes, scooters and mopeds, placing them as some of the most vulnerable road users. Serious injury solicitors Potter Rees Dolan has investigated this changing road environment, using its expertise to highlight the potential risks that delivery drivers face when undertaking their highpressure work.
Here, we will explore how delivery drivers feel about the pressures of the job, exploring how to alleviate the causes of road accidents, and noting the ways in which road safety can be improved.
Higher pressure linked to bigger risk-taking
In 2018, University College London undertook a survey of drivers in the gig economy and their potentially heightened risk of traffic collisions. The survey looked at pressures that drivers face on a daily basis, instigated by the nature of the work - but reinforced by the organisation themselves.
Ten per cent of riders sustain an injury
The survey’s findings highlight that the rising number of delivery riders may have coincided with an elevated number of risks faced on the road. With 42% of those surveyed noting damage to their vehicle whilst working, and ten per cent reporting an injury, there is an indication that gig riders are at more risk of being involved in an accident.
Such high rates of injuries and damage to vehicles incurred whilst working indicates that organisations need to be doing more to implement safety regulations to protect their drivers. Providing better support from the outset is vital to instil safe working practices, which would reduce the need for risk-taking and driving while tired and stressed.
Two thirds of delivery drivers not given safety training or equipment
Many workers have time-sensitive work, so it is up to the employer to instate safeguarding initiatives to protect their employees. Despite this, 63% of those surveyed are not provided with safety training on managing the risks on the road. Furthermore, 65% said to have not been given any safety equipment, such as a hi-vis vest. The result of this is drivers having to take safety into their own hands, with 70% having to provide their own safety equipment.
The most common causes of accidents reported were:
• Pressure to deliver quickly
• Being distracted by delivery-related software
• Tiredness
• Taking additional risks whilst on the road to ensure that food was delivered on time
Potter Rees Dolan understands that a high-pressure working environment and additional stress from needing to meet work targets can lead to impaired mental and physical output. For drivers, this means an increased risk of being involved in a road traffic accident.
Organisations should take more responsibility
The risks of an increased delivery driver force and the need for rider protection has been called for since at least 2007, when Transport for London conducted a study into the level of support that drivers receive from hiring organisations.
The UK Government implemented a number of laws that provide legal guidelines protecting courier and food delivery drivers, named the Courier Code. This code requires a minimum level of competence for drivers, including holding a valid licence to operate a motorised vehicle. However, when prompted, 91% of food delivery drivers were not aware of the Courier Code. A further 54% of food delivery drivers did not know whether they were signed up to the Code, and a further 26% reported not being signed up.
A conclusion from the study highlights the need for greater rider safety, both in terms of the protection given to them by their hiring organisations and from awareness of this road user type by others on the road. The study, now over 15 years old, shows that this push for greater rider safety is not new - so what needs to be done to change?
Through better education, safety training and the provision of safety equipment, businesses can reduce the risk that riders face. Implementing working procedures to reduce the pressure that riders face will also benefit them greatly; this can be facilitated by opening up a dialogue involving workers, employers and the general public, to understand what is causing stress for riders, and quantify the factors that are playing the biggest role in increasing the likelihood of road incidents.
Deliveroo’s response
Following our investigation, we reached out to Deliveroo for a response. The company provided the following statement:
“We were amongst the first food delivery platforms to provide free personal accident and third-party liability insurance to all self-employed riders we work with globally. This cover is provided free of charge, and protects riders from their very first order with Deliveroo in the event of an accident or injury sustained while working. Riders are given payments for specific injuries and income support for periods when they cannot work. All riders, regardless
of vehicle type, are automatically covered when they sign up.
“In September 2021, we introduced new insurance to provide riders enhanced protection in several markets. The new insurance coverage includes earnings support for riders working regularly with the company who are unwell and unable to work for more than seven days (backdated to day one).
“This insurance also supports riders who are growing their families, by adding a market-leading lump sum payment for parents to celebrate the birth of a child. This means riders can take time off to be with their new families, and feel financially supported during this exciting time. This applies to adoptions and surrogacy births too, so it is as inclusive as possible.”

Scotland’s ‘best’ fish and chip shop casts its net for nation’s top apprentice fish frier
A fish and chip shop and restaurant which was named the best in Scotland earlier this year is casting its net across the country in a fresh search to find its first apprentice fish frier.
East Coast Fish & Chips takeaway in Musselburgh, East Lothian, was recently named the best in Scotland and one of the top 10 in the UK by The Sunday Times. It also won the title of one of the 50 best fish and chips shops in the UK for the third year running in 2022 by leading trade publication, Fry Magazine.
Backed by the National Federation of Fish Friers (NFFF), the popular chippie has now set its sights on bringing fresh talent into the industry by creating a new 12-week apprenticeship for someone looking to kick start their career at the top end of the fish and chip industry.
The ‘East Coast Fish Frier Apprenticeship’ will offer the successful applicant a rare opportunity to get hands-on experience with one of the country’s best fish and chip shops, and visit some of its local fish suppliers to learn more about selecting the best cod, haddock and shellfish, as well as intensive training on how to prepare and cook the ultimate fish supper.
Located just two minutes’ walk from Musselburgh beach on the outskirts of Edinburgh, East Coast is owned and operated by Carlo and Katia Crolla. The Crolla family has been serving the local community for nearly 50 years. Styles may change, but great flavours, family heritage and warm, friendly service remain as important to Katia and Carlo today as they did 48 years ago.
Carlo and Katia are looking to find an apprentice fish frier who is hard working, with a friendly nature, works well within a team, copes well under pressure and ultimately shows a clear passion for the fish and chip takeaway industry.
Carlo Crolla, owner of East Coast Fish & Chips takeaway in Musselburgh, said:
“We’re really excited to have teamed up with the National Federation of Fish Friers to launch our new fish frier apprenticeship.
“As well as getting hands-on experience preparing and cooking fish and chips inside our award-winning, familyrun takeaway and restaurant, the apprentice will also get the chance to learn more about the wider industry in the 12-week training period.
“It’s a physical and demanding job, but we’re a close, friendly team and we love what we do. We’re ultimately looking for someone who is up for the challenge, is friendly, hard-working, works well under pressure and is as passionate about the ultimate fish supper as we are.”
Andrew Crook, President of the National Federation of Fish Friers, added:
“It’s great to see fish and chip businesses providing structured training with recognised qualifications. It is a fantastic industry to work in and gives people working in it the confidence and skills that will stay with them for life.”
East Coast is also home to an award-winning fish & chips takeaway and seafood restaurant and grill.

Pizza packaging you knead to know about
Daniel Schwitzer, Director of Communications & Sustainability, at amipakAs one of the most popular and recognisable dishes worldwide, most of us can name our favourite pizza quicker than we can dial our local takeaway.
A piping hot circle of molten cheese, quick and easy to eat, and loaded with tasty toppings, there’s a reason why pizza is one of the most popular dishes on the planet.
While the event around which pizza packaging history revolves is a subject of debate, many credit its widespread introduction to the founder of a certain global pizza chain – Tom Monaghan.
The humble pizza box is a relative whippersnapper, born as recently as the mid-1960s at a time when large-scale pizza delivery was transforming the way we consume food. But making it from oven to doorstep isn’t always plain sailing. And businesses need to box clever to stay ahead of the competition at a time when the foodservice industry is again growing rapidly.
A Great Pizza Work
The modern pizza box is a modern marvel of minor but well-formed proportions. Its simplicity allows it to circumnavigate many competing constraints. Seal it up too much and the moisture will make the dough soggy. Vent it too much and you lose the heat.
So, how do you get a warm, steam-emitting foodstuff from oven to doorstep inside 30 minutes without delivering a lukewarm, soggy mess? The solution lies in the box material. Simply slide the hot pizza into a corrugated cardboard box. Better still, one of ours!
Yes, the pizza still degrades a little over time, but products like these give your food products the best chance of travelling well.
Pizzas are humid, crispy, and slick all at once, so the challenge is to keep the contents warm and release the right amount of steam to avoid creating a soggy, lifeless crust. Each flute of the corrugated substrate is a channel for steam to travel through and allowing steam to flow
prevents condensation on the box’s interior.
Light enough for easy delivery and sturdy enough to sustain rough handling; corrugated boxes keep pizza intact, hot, and fresh. When the consumer opens the lid, they’ll be presented with a warm, fragrant wisp of steam and a perfect pizza – the ideal opening experience.
A slice of goodness
Pizza boxes are so much more than a disposable cardboard box design with a lift top and folded sides, finished with a little illustration of a pizza chef.
From a packaging point of view, they tick plenty of vital boxes: they’re resistant, easy to produce and recycle, well insulated and ventilated to keep the food warm yet dry, flatpacked and easy to assemble, and their stackability makes them ideal for transporting.
For many businesses, the boxes also represent untapped marketing collateral, a chance to impress the brand upon customers. A perfect blank canvas for personal touches to connect with the customer.
In terms of visual value, boxes have somewhere between 5-8 minutes to visually engage with the consumer. Customised pizza box printing can be one of the most compelling strategies to give consumers the ultimate level of experience. On top of using vibrant and eye-catching design, businesses have taken to turning the box into augmented reality board games, and even printing QR codes that link through to mood-setting Spotify playlists.
A good packaging partner should be able to work with your specific menu and customer needs to develop a shortlist of options that can be used in a variety of ways. With tight kitchen spaces and even tighter budgets, it should only take a handful of packaging products to fit your full menu.
So, from an 18” family-style pizza to a variety of side dish packaging, to corrugated liners and tripods too, some of the most desirable takeaway food around is served in our easily
customisable table-ready pizza packaging. Not only does it maintain the food’s same beautiful look and feel, it helps fulfil the versatility of your menu, standardises portions, and drives the overall aesthetic you’re working to.
Products should preserve the optics of the dish and help maintain quality, freshness, and temperature. Our solutions go the extra mile by being breathable, odourless, microwavable, customisable, space-saving, and crucially, designed to fit into your existing waste management system. They are compostable and recyclable – now key to today’s more eco conscious consumer!
As demand for takeout and on-the-go foodservice continues to grow, restaurants and other food delivery services need more from their packaging, especially when it comes to sustainability.
Foodservice vendors are now tackling sustainability with renewed vigour. The global proliferation of legislation around packaging waste dictates this and consumers can and do vote with their wallets if they don’t like your sustainability credentials.
There have been advancements, particularly around making pizza boxes easier to recycle. The greaseproof corrugated liner and tripod, which prevent the soggy lid from sagging down towards your pizza, mean that once you’ve scraped any leftover crusts into the bin, the takeaway box can go straight in the recycling bin.
Our simple food-grade certified pizza liners safeguard the recyclability of the whole box. Keep in mind that waste recycling plants reject tonnes of otherwise acceptable cardboard pizza boxes each year because
of contamination with too much grease, melted cheese spillages, or passata smears.
There are three main issues for the takeaway industry to tackle today: single-use packaging, delivery challenges, and food presentation. Designed for maximum impact and versatility, our solutions address all of these and more, unlocking added value for all stakeholders.
So, as humble as the pizza box may be, it remains a great example of simplicity being the motherhood of invention.
UK headquartered, amipak is an expanding third generation family business specialising in the manufacture of food grade packaging from sustainable materials. amipak puts a strong emphasis on customer service, seeking to develop lasting partnerships with its customers and suppliers.
