W

e hope that all of our Fish and Chip operators have had a real boost with the National Fish and Chip Day on June 4th. A great way to start the Summer season. Through the rapid roll-out of the vaccination campaign (and the sterling efforts of many operators), we can (hopefully) see the end of the worst of the Covid restrictions at long last with eating inside an added bonus for operators. Now is the time to start to gain the benefits from the hard work and investments that many have been making over the last 15 months by taking advantage of the “new ways of working”. Using technology, card payments and delivery and collection systems have enabled many operators to increase their average spend by encouraging customers with add-ons for their order. In this issue we make no apology for featuring Ice Cream in the hope of a few months of great weather to encourage sales and with Staycations being the buzzword this year, what better time to invest in adding or expanding this offer in your business. Very profitable and there are some great pieces of equipment to make this easy. The opportunities to meet new and existing contacts and suppliers is also on the horizon with the re-opening of physical rather than virtual exhibitions and we would encourage operators to visit these when possible as it is great to get away from your business for a day and see what has been happening in the sector whilst we have all been caged up by lockdowns. You will find details in this issue about the Restaurant and Takeaway Innovation Expo at Excel in November. In 2019, I worked with Mark Drummond who was representing the NFFF, to update the learning and assessment materials. The alterations reflected the fact that many shops now use ready-prepared chips and fry using high efficiency ranges. There is more focus on sustainability and the health aspects of frying medium. By 2020, fish friers were being assessed utilising these revised materials. Then the world was turned upside down by the coronavirus. Both we and the NFFF were keen to find a new way for the assessments to be conducted. Following several planning discussions, Mark conducted the first two pilot remote assessments with John and Dayton. They work at the award-winning Miller’s Fish & Chips in Haxby near York. Using Facetime, Mark was able to evaluate the preparation and cooking skills of both fish friers on separate days. Also,
