EL MEZQUITE
UN ALIMENTO SALUDABLE, NUTRITIVO Y SUSTENTABLE
La agricultura regenerativa crea sistemas agrícolas económicamente productivos que reconstituyen la fertilidad natural de los suelos, restauran los procesos hidrológicos, aumentan la biodiversidad, capturan carbono de la atmosfera y mejoran las condiciones de vida de los productores y los consumidores.

Uno de los componentes fundamentales en esta misión es el árbol de mezquite, que crece en las zonas áridas y semiáridas del continente americano. Ninguna otra planta ha desempeñado un papel tan vital en la ecología y entre las poblaciones humanas de las regiones de donde es nativo. Este resiliente y adaptable árbol tiene una rica historia etnobotánica y posee gran potencial para convertirse en un cultivo alimenticio estratégico en regiones áridas del mundo, al mismo tiempo apoya los esfuerzos de mitigación del cambio climático a través de la captura de carbono atmosférico y proporciona seguridad alimenticia ante la desertificación, el estrés hídrico y la inestabilidad climática que vivimos hoy en día.
Regenerative agriculture creates economically productive agricultural systems that rebuild the natural fertility of soils, restore hydrological processes, increase biodiversity, catch carbon from the atmosphere, and improve the life quality of producers and consumers.
One of the main components of this mission is mesquite, a tree native to the desert and semi-desert areas of the American continent. No other plant has played such a crucial role in the ecology and human settlements of the regions where it grows. This resilient and adaptable tree has a rich ethnobotanical history and great potential to become a strategic crop in the world’s arid regions. Moreover, it supports the efforts to mitigate climate change by sequestering atmospheric carbon and bringing food security in the face of the desertification, hydric stress, and climate instability that we live in nowadays.
El mezquite es rico en calcio, potasio, magnesio, hierro, zinc, lisina y otros aminoácidos esenciales, ideal para personas con diabetes por su bajo índice glucémico, que ayuda a regular los niveles de azúcar en la sangre. En países como Estados Unidos se le considera un súper alimento.
Mesquite is rich in calcium, potassium, iron, zinc, lysine, and other essential amino acids. Its low glycemic index makes it an ideal food for people with diabetes as it helps to regulate blood sugar levels. In countries like the United States, it is considered a superfood.
Con la intención de rescatar este alimento ancestral de las culturas indígenas de Aridoamérica y promover su uso en sistemas de agricultura regenerativa, comencé en 2016 un proyecto piloto para la elaboración de productos elaborados a partir de sus vainas, que hoy lleva el nombre de ARBORIGEN, una marca colectiva que busca promover alimentos con alto valor nutricional basados en árboles y plantas de larga vida de los desiertos mexicanos.
Nuestro producto insignia es la harina de mezquite, que se obtiene de las vainas recolectadas de árboles silvestres por mujeres de comunidades rurales en el altiplano semi-desértico de Guanajuato. Las vainas son inspeccionadas a mano y secadas al sol a baja temperatura para conservar su valor nutricional. La harina de mezquite puede ser utilizada cruda como suplemento en jugos y batidos u horneada para resaltar su especial sabor en panadería y repostería.
Otros de nuestros lanzamientos son MEZCAFÉ, una bebida tipo café elaborada a partir de las vainas tostadas y molidas, rica en minerales esenciales, naturalmente dulce y libre de cafeína, y el jarabe de mezquite, un endulzante natural y saludable similar a la miel de agave o de maple, que se puede utilizar en bebidas, cocteles y postres.
Pronto abriremos “La Mezquitería” en San Miguel de Allende, un concepto único de bakery & coffee bar - donde todos los productos estarán elaborados con mezquite u otras plantas del desierto como maguey, nopal y garambullo.
In an attempt to rescue this ancient food of the indigenous culture of Aridoamerica and promote its use in regenerative agriculture, I started a pilot project in 2016 to manufacture products from mesquite pods, which today is ARBORIGEN, a collective brand with the mission of providing highly nutritional foods based on long-lasting plants of the Mexican deserts.
Our flagship product is mesquite flour, which we obtain from the pods collected from wild trees by women of the rural communities of the semi-desert plateau of the state of Guanajuato. The pods are handpicked and carefully inspected, then sundried at a low temperature to preserve their nutritional value. You can add raw mesquite flour as a supplement for juices or smoothies or bake it to enhance its flavor in bakery and pastry.
Other launches are MEZCAFÉ, a coffee-like beverage made from toasted and ground pods rich in essential minerals, naturally sweet, and caffeine-free, and mesquite syrup, a healthy natural sweetener similar to agave or maple syrup that can be used in beverages, cocktails, and desserts.
We will soon open “La Mezquitería” in San Miguel de Allende, a one-ofa-kind bakery & coffee bar concept where all the products will be elaborated with mesquite and other desert plants, such as maguey, nopal cactus, or bilberry cactus.
