Business growth in Mawson Lakes We're up to Issue 97 and rapidly approaching our 100th issue of Mawson Lakes Living. In October we'll be marking the centenary issue with a big community party like Mawson Lakes has never seen before. Our Centenery Celebration will be a Twilight Concert on 18 October featuring the gorgeous opera star Grace Bawden in the floodlit grounds of the University Courtyard. In addition to a spirited night of popular musical entertainment there will be free pancakes and free ice creams for ticket holders. Book your tickets online now for this must-attend glamorous event. (See opposite for details). Last month, Treasurer Joe Hockey reported that 96% of businesses in Australia are small businesses. Well, here in Mawson Lakes we have a number of small businesses that are doing
very well, and this month I‘ve been talking with some enterprising and enthusiastic local business owners. As you read our four business profiles in this issue keep in mind the Treasurer’s words: "Our new world is all about small business." As well as fostering small business, Mawson Lakes is attracting big business. Codan (manufacturers of electronic and communications equipment globally) will be bringing 250 staff to Technology Park in a venture that is the largest leasing deal in Adelaide in nearly two years. A report on this story will be in an upcoming issue. Pelicans are a ubiquitous sight in Mawson Lakes so it was easy for me to make the Mawson Lakes Living Editor’s Award at this year's Watershed Art Show. The minute I walked into the gallery I was drawn to Carol Scholich's painting "Pelicans Together". The prize is the cover of this month’s magazine and a financial gift to the artist. Read about the painting and the artist on page 6.

Nowhere to play I have three children aged 4, 2 and 1. Mawson Lakes is in desperate need of a toddler-friendly playground. For a suburb promoted as a great place to raise a family, there's not a single suitable place to let the little ones safely explore. High platforms with minimal barriers, no gates to stop toddlers running onto roads or into lakes, and tired old equipment more suitable for 7-12 year olds, is all I can find. I have to drive to other suburbs with small, gated playgrounds and wonder why we do not have such facilities here. I do hope to see some updated, safer equipment, and most importantly, gates, before my children have all grown up. It would be a welcome change to the exhausting and stressful playground visits my husband and I currently undertake. - Caitlin Bormann Ed: Playgrounds are a Council responsibility. Mawson Lakes has one of the highest property turnover rates in Australia. In 2014 the total number of sales was 461 (RPData). The highest proportion of sales was to Chinese and many of these were investors. Buyers are attracted by the excellent facilities and the university. Median house price is $450k and median rent is $370 per week. Every morning I walk to and from the rail interchange and I have seen heavy work vehicles parked in the parklands as they build an addition to the school. The trucks and buildrers have gone but they have left behind a huge mess of broken gutters, dead grass and deep gullies of mud. This morning after rain I could not walk on the footpath because it was covered in thick, slippery mud washed down from the vehicle tracks. Who do I sue if I take a fall on this mess? - B Battersque

Watershed Art Prize Mawson Lakes Living is pleased to have sponsored the Watershed Art Prize again this year with an Editor’s Choice Award. The winning piece titled Pelicans Together by Carol Scholich is on the cover of this issue. The Watershed Art Prize is an intitiative of the City of Salisbury to encourage awareness of water as a precious resource and a significant environmental management issue. The winning piece was selected by Linda who was drawn to the painting the minute she walked into the gallery because the pelican is frequetly seen in the parks of Mawson Lakes and the surrounding wetlands. Hobby artist Carol Scholich works from home, where she paints mainly animals. She says she is particularly fond of birds. "The Pelican is such an unusual bird, very artistic and dimensional." Carol likes her art to be realistic, but she favours the addition of modern colours- as seen in Pelicans Together- the shape is clearly a Pelican, but the tones are more expressive. She has utilised silver leaf in the background and the birds themselves are painted using acrylic dimensional paint. Carol was raised in a family that encouraged artistic development. Her mother painted, and she passed the talent and love of art onto the following generations. Carol’s own three daughters live in Mawson Lakes too and are highly awarded artists, having won numerous art prizes themselves.
As a child Carol won many colouring competitions but it wasn't until she was a married woman that she discovered her painting abilities. She then started to sell her work and developed an interest in animal portraiture. The Mawson Lakes Living award is not Carol's first painting accolade. She has won several people's choice awards and she said she is honoured her piece has been selected to appear on the cover of the magazine. - Nicole Aspinall Carol is conducting FREE painting lessons at Life Church above the dentist in Mawson Lakes. New Business - GARDEN OF EDDEN This month the Garden of Edden, a holistic centre offering yoga, reiki, nutritional counselling, massage and life coaching, will open in Mawson Lakes (see opposite page for details). Business owner Jill Scutter who comes from a background in the travel industry has lived in Mawson Lakes for several years. She has transformed the site of Angelic Touch in Hurtle Parade into a gentle haven to help clients build healthy and positives relationships. "If you are feeling tired, lethargic and stressed from a hectic life or a high-pressured job or the demands of your personal life, we want to help you restore the balance in your life and we have some special opening offers to introduce you to our natural healers and consultants," said Jill. How long do sneeze germs survive? Cold and flu germ-laden droplets may remain infectious for several hours, depending on where they fall. Factors such as the amount of virus deposited on a surface and the temperature and humidity of the environment, also determine how long cold and flu germs stay active outside the body.
In the air: A few minutes to a few hours.

10 Coffee words to know A guy walks into a coffee shop and asks for a . . . In today's age of coffee culture, finishing that sentence might be a little difficult. Does he get an espresso? A cappuccino? A macchiato? A pour over? So many options, so here’s a list of ten coffee types to help you navigate your way around the Mawson Lakes's coffee shop. 1 Espresso - Let's start with the basics. Espresso is a coffee drink made by forcing hot, pressurised water through finely ground coffee beans. This creates a very concentrated drink, often with a layer of caramel-colored foam on top — the creme. 2 Americano - This is a simple coffee drink made by pouring a shot of espresso into a coffee cup and then adding hot water. Americanos can be made with one, two, or even three shots if you're feeling feisty. The name is said to go back to WWII, when Americans ordered coffee in Italian cafes. Because they wanted coffee that was similar to what they drank back home — not the typical Italian espresso — they would have the baristas add hot water to dilute it. 3 Doppio - You could order a "double shot of espresso" but why not just go with the Italian name instead?
4 Ristretto - An espresso ristretto — literally "restricted espresso" — is essentially a "short" shot, even more concentrated than a normal espresso. Many coffee aficionados believe this to be the perfect espresso. 5 Latte - A latte is made by pouring milk into the espresso. First the espresso is poured into the coffee cup, and then warm milk is added until the cup is full. 6 Macchiato - If you are looking for a coffee drink with much less milk, you can opt for the macchiato. This is an espresso with a little bit of steamed milk. This is good if you want the intensity of the espresso flavour. 7 Cappuccino - A cappuccino is in between a macchiato and a latte. It is made by pouring espresso into the coffee cup, which is then filled with steamed milk and foam. If you order a "dry" cappuccino, you will get one with more foam. A "wet" cappuccino will have more milk. 8 Pour Over - The coffee is made by pouring hot water over grounds. It is a simple and clean way that brings out the coffee's flavor in a very distinct way.

New Business - Ink Supremacy Getting inked in Mawson Lakes Tattoos were once a rare sight, mostly seen on sailors and servicemen, but today body art is so popular that a tattoo salon has opened in Mawson Lakes. Head artist of Ink Supremacy, Heef Dixon, specialises in body art and says that a tattoo is an expression of your personality. "Some people like small discreet tattoos - the hide and seek variety while others use their body as a canvas," he said. Tattoos have catapulted into the mainstream now that celebrities, athletes and fashion models are giving them high visibility. Heef says that this has change the stigma of the industry from 'taboo to trendy'. "Now that women have a desire for decorative art as an accessory, the tattoo industry is flourishing and trendy women’s designs include flowers, feathers, hearts, crosses, dolphins and butterflies." Heef has a large portfolio of artwork or he can design anything a customer wants. Many people have a tattoo that has special meaning for them such as a memorial of a loved one, or as a sign of

affection for a child or a partner, or something with religious significance. Full colour, highly visible, photo-realistic tattoos are the growing trend in body modification. The industry now has refined inks that don’t fade as quickly as the old ones and only hygienic disposable needles are used. "In addition to new artwork, it's quite common for customers to see us to renew or coverup old tattoos with new designs," said Heef. To get a tattoo you must be over the age of 18 and show your ID.

Legal Eagle’s Perch with Bill Morris De-facto relationships and property Enquires have continued to come to my office this month about whether or not a person is in a de-facto relationship. The concern is that couples do not want the unintended consequence that the property they presently own is subsequently considered to be property of the relationship and subject to division if their relationship comes to an end. This actually is a tough question to answer and again the short answer is not one that people like to normally hear, namely... "it depends". But I thought it might be useful to inform you about a recent case. LOCKE & NORTON [2014] FamCA: The Applicant sought a declaration that there was a de-facto relationship between her and the Respondent. The Respondent was a man of considerable wealth and had provided significant financial support to the Applicant. If the Applicant was successful she would be entitled to a significant percentage of the Respondent’s property. The court found that there was no common residence shared by the parties during the relationship and no property jointly owned by them. Whilst there was an affectionate and physical relationship there was not a mutual commitment to a shared life together. The application for a declaration that there was a de-facto relationship was dismissed. If you think you are rolling into a de-facto relationship and want to take precautions about ‘quarantining’ the property that you presently own it may be sensible to consult with me.

DVD Review Did you know that you can borrow DVDs from the Mawson Lakes Library? If you live in the Salisbury area and have a library card (free to join) you can borrow DVDs at no charge for up to two weeks. The library has a large range of titles and if the one you want is not on the shelf the staff will try to source it from another library for you. Here is a DVD off the shelf that I watched this month and enjoyed. Haute Cuisine Haute Cuisine is based on a true story of the personal cook to the President of France, Francois Mitterrand. Despite jealous resentment from the other kitchen staff, Hortense Laborie quickly establishes herself and her epicurean skills and works her heart and soul out to produce both stylish and authentic cuisine for the President and his guests. Although the story is a bit disjointed to start, it develops into a bob-bon of a film that shows us French food in detail, beautifully photographed and engagingly described and all wrapped up in a pastry of love and attention to detail. The authenticity of Hortenses's cooking soon seduces the President, as well as viewers, but the
corridors of power at the presidential palace are overwhelming and Hortense must make some hard decisions. The film is a mix of English and French with subtitles where needed. Make sure you have reservations at a good French restaurant after you see this movie because your mouth will be watering! Ed
Recipe This flavoursome soup is VERY easy to make. With a slight asian influence and a bit of a kick it's a great winter warming recipe. Chicken and Sweet Corn Soup Ingredients: 2 cups of poached chicken 2 litres of chicken stock 1 leek, washed and sliced 1/4 cup sweet chilli sauce 1 can creamed corn baby spinach leaves to serve Make your own stock or use packaged stock or stock cubes and water. Poach your own chicken or tear up leftover roasted breast meat. 20

Place all ingredients in a heavy based pan, bring to the boil then reduce heat to low and simmer until warmed through. Add more or less chilli sauce to taste. Stir through a handful of baby spinach leaves just before serving.
Nutrition Healthy Eating Pyramid - revised version Nutrition Australia has updated its iconic Healthy Eating Pyramid to combat diets leading to high rates of diet-related diseases. They say that the average Australian is getting more than a third of the daily energy intake from junk foods, while less than seven per cent of people eat enough vegetables, and only half of us eat enough fruit. The new pyramid specifies that 70 per cent of our diet should be plant-based. Other advice includes: Rethink the grains We’re a sedentary society so we don’t need to eat as many carbohydrates, therefore caloriedense bread, rice and pasta is not recommended. Instead we should select grains to obtain more fibre and vitamins. Brown rice, oats, quinoa, wholegrain bread and wholegrain pasta should be favoured over their refined white counterparts.
Eat a rainbow Fruit and vegetables still form the base of the pyramid. They fall into five different colour categories - red, purple/blue, orange, green and white/brown. Each colour carries unique disease fighting chemicals so we neeed a generous mix. Vary your protein Protein such as meat, fish, eggs, nuts and dairy (now including soy milk) sit in the narrowing space of the pyramid and getting a good mix is the key message. Say goodbye to sugar and fats The pyramid’s pointy end used to be filled with added fats such as margarine and sugar. Now olive oil and nut/seed oils are recommended and the sweet stuff has been banished to a corner with a no-no cross, along with salt. Use spices instead of salt Herbs get a mention for the first time. Cooking with fresh, dried or ground herbs not only adds flavour, it boosts your antioxidant intake and helps cut back on salt. And to wash it all down, Nutrition Australia says choose water. Ed

Word Fashion The other day at the beach I heard a surfie say to his mates, "I’m gonna put on my wettie this sarvo and take a selfie to send to my littleys". It was a language all of its own, but it’s good to know that the Oxford Dictionary is keeping pace with modern lingo. Throughout this year the online dictionary has included many new words. In Australia we love to crop words and use nicknames and this is reflected in the following list that includes: mushie (a mushroom), ocky (an octopus), saltie (saltwater crocodile), scratchy (a scratch card), shornie (a newly shorn sheep), wettie (a wetsuit) and sarvo (this afternoon). The coffee industry is generating a new wave of words (all in the dictionary). There’s muggaccino (a large cappuccino), macchiato (espresso marked with milk), and, as Nigella pointed out, she enjoys a doggyccino at Aromas Cafe at Mawson Lakes.

The cost of chocolate by Nigella I've got a nose for chocolate. I can smell it a mile off - in mummy’s handbag or in the kitchen cupboard or on a high shelf, and I‘ll go to great lengths to get at it, but it was nearly the death of me last month. It was a Sunday afternoon and we were out driving in the Hills when the family decided to call into the Melba chocolate factory in Woodside to buy a bag of chocolates. Everybody knows that it's dangerous for dogs to eat chocolate so nothing came my way, despite my most appealing expressions. Anyway, some hours later the car stopped at Handorf for dinner. It was a cold and rainy night and I was left in the car while the humans went inside the restaurant. Here was my chance. They had forgotten about the chocolates that were left on the floor in the front, so I jumped into the front, ripped apart the bag and gobbled the remaining goodies, about 150gms.
When the guys got back to the car it was dark and nobody even noticed the chocolates were gone so I thought I’d got away with this little bit of mischief. BUT, by bed time I was sick - vomiting, thirsty, restless, eating grass. Mummy thought hard. What could be wrong? "The chocolates," she cried as she ran to the car to fetch the lolly bag and discover my dreadful deed. I was getting sicker so a dash to the emergency vet late at night landed me in hospital. Vomiting was induced and up came the chocolate in great brown, slimy globs. I had to stay overnight and have an intravenous drip, then my tummy was lined with charcoal to absorb the poisons from the cocoa beans. Awful. Mummy picked me up next morning and as she handed over $700 I heard the nurse quip: "That was an expensive bag of chocolates!"

Rear Admiral Kevin Scarce (former Governor of SA) held a public meeting in Mawson Lakes to discuss the risks of the nuclear fuel cycle and the process for community members to make a submission to the Royal Commission.

Cr Steve White (our elected member on Salisbury Council) attended the meeting and wrote this report for Mawson Lakes Living. The meeting on 19 May started with an overview of the scope of the Nuclear Royal Commission by the Hon Kevin Scarce. He covered the four stages of the Nuclear Fuel Cycle that will be examined and reported by the Royal Commision (RC). 1. Exploration, extraction and milling 2. Further processing of mineral and manufacture of material containing radioactive and nuclear substances (e.g enrichment and making fuel rods) 3. Electricity generation from nuclear fuel 4. Management, storage and disposal of nuclear waste The Royal Commission will separately examine the potential, the cost and risks for SA to become involved in any one of these 4 stages.
