Kakhetian Traditional Winemaking In Georgia wine is made in marani (wine cellar) during 8000 years. Marani is the whole institution with the qvevri, buried in the ground, winepress for crashing grapes, a number of appliances for taking care of wine, for washing the qvevri, for taking out wine etc. The wine cellar is usually placed on the ground floor, built near the dwelling house or somewhere near the vineyard. In Western Georgia, marani is sometimes built on a high place under a tree in the yard. Marani may have a fireplace and tables as winemakers taste wine all through the winemaking process. Grapes are crashed in the boat-shaped wine-press, made of stone or wood. The winemaker used to get into the wine-press and crash grapes with his feet. This process was usually accompanied with songs and exclamations of encouragement. At present the tradition of winemaking of this kind is not much observed, but it can be seen at wine festivals and theatrical shows. Clay vessel qvevri is used to make and hold wine. It is made of clay which undergoes a special treatment. The qvevri is buried in the ground in order to maintain stable temperature. It is then firmly closed, with the grape juice inside, until it finally turns into wine. The qvevri is uncovered for mixing juice and removing Chacha (crushed grapes). Qvevri wine is an ecologically pure product, has medical properties and its moderate application is useful for the cardiovascular disease. You can find qvevri wine only in Georgia and it is a unique phenomenon in the world, when the tradition, originated 8000 years ago is still alive nowadays. Qvevri and Kakhetian Traditional Winemaking included in the list of intangible cultural heritage of the UNESCO.

Many Georgian villages and regions had their own grape varieties. Furthermore, you can find different quality wine made from the same grape variety, from the different slopes of the village. It was widely cultivated throughout Guria region before some fungal infections has come. The hardworking Gurian people, hand in hand with unique climate and the soil, full of grace, created a wonderful masterpiece of the world viticulture - Chkhaveri. It is one of the highest quality grapes, not only in Georgia, but in the whole world. Ripen mainly in the second part of November (mostly in the third decade). Our ancestors used to harvest Chkhaveri even in December. Furthermore, aside from white and pink dry wines, KTW produces naturally semi-sweet pink wine Chkhaveri. This type of wine is produced in Georgia since 1934 and has been awarded in international competitions with Gold, four Silver and bronze medals. Chkhaveri is regarded as one of the eight wines in the world, that are believed to have the highest quality.

The taste and aroma of Riesling differs according to the place of cultivation. It should be mentioned that this variety goes well with aging and becomes more harmonious, balanced and pleasant to drink with age. In the second decade of the XX century, it was often messed up with Italian Riesling. Nevertheless this Riesling, getting its roots from Germany and Alsace and is characterized with the strong bouquet of flowers and honey. The company “Kakhetian Traditional Winemaking� decided to produce Riesling using old Georgian traditions, which enriched the wine with unique aroma and is totally different from the original Riesling. It is more fresh, rich in aroma and well balanced in taste.

The roots of this grape variety can be found in the ancient manuscripts, which say that the origin of Moscato takes roots from Syria, Egypt and Arabia. But it is worth to mention that long time ago, this vine was very common in Georgia under the name of “Buzkurdzena”(in translation Fly grape). That allows us to assume that the roots of Moscato may have come from Georgia and have spread to Europe. This can also be proved by the fact, that in ancient times Romans called this wine “Apiana” that can be translated as a “Fly” as well. The grape itself has different stages of ripeness. The harvest starts from the early days of August and lasts till the end of October. During this period, it is ripening three times and the best harvest is said to be in October, when little clusters of vine are becoming mellow. The taste of the grape is very sweet with high sugar content. It has a very specific taste and aroma that is why the wine is always characterized by strong bouquet and well balanced, harmonious taste.

Imereti is one of the famous regions of Georgia according to varieties of wine and vine. 70% of Imereti is mountainous, and the soil and climate differ in the whole region. The famous winemaking villages of Imereti Region in XIX century were: Dimi, Obcha, Ckhentaro, Rodinauli, Sviri, Kvaliti, Tskhrackaro and Phuti. According the ancient manuscripts, Imereti was famous for Tsitska from Sviri, Tsolikauri from Obcha and Krakhuna from Kvalituri.

Pioneering in making Georgian Brandy is related to the name of the entrepreneur from KutaisiHonorable member of National academy of Paris and International academy of Brussels, Knight of Ordens from 11 different countries- George Bolkvadze. In 1865 he founded the first Vodka producing factory in Kutaisi that was the first highly equipped factory in the Caucasus. In 1878, his cognac ”Caucasian Natural Cognac” was awarded a great golden medal. His products were awarded more than 100 medals from 1865-1900 years. Despite the success of George Bolkvadze, the rising of Brandy on industrial level not only in Georgia but all over the Russian Empire, is related to the name of a great Georgian entrepreneur and philanthropist David Sarajishvili. In 1885 Hefounded the distillery factory firstly in Tbilisi and afterwards in the whole Trans Caucasus. He managed to compete with French Cognac that was prevailing on Russian market. After his death the factory was awarded the honorable name of Emperors house supplier. The next success of Georgian Brandy in XX century is related with the name of D. Tsitsishvili, who created many award winning and famous brandies.Relaying on the existing traditions, company KTW started producing brandy since establishment and now it owns more than 17 years aged brandies. Its product “Old Kakheti” was awarded medals on prestigious international competitions. It's keeps the leadingpositions on the Ukrainian market and in 2012 year “Old Kakhety” was awarded the title Best Brand in Ukrainian market, among exported cognacs. Besides there is a huge demand on KTW brandies in several other countries.

Chacha distillery The process of making chacha is a real celebration in Kakheti. Not only the whole family, but also neighbors, acquaintances and guests take part in this process. To honor them a cheepis killed and a festive table is laid in Marani. During the process, the guests taste the hot chacha coming of the tube and the atmosphere of gaiety increases with the increase of the liquid degrees. The atmosphere of rejoicing turns into a wine drinking and enjoyment. In many Kakhetian villages there is a common place for making chacha. Here the villagers take turns to make it. The
humorous Kaketians call this place “zaodi�,
as the process of chacha – making takes its 'industrial ' process here. Generally the chacha - making process star ts with the preparation of the equipment. In the stove the cut wood is placed, over whicha big copper pan stands. The pan is filled with chacha , covered with a lid andis plastered with ahes mixed with earth. Then a tube is fixed and again plastered in the place of juncture. The fire is put to the wood and the process starts. At the same time a cooloing equipment is filled with cold water. Throughout the centuries chacha was made accordingly to this traditional methods in Kakheti. The majority of population in western Georgia used to throw unused chacha. Industrial production of chacha started in XIX century, when Russian army entered Georgia.The main term of maintaining army was vodka, which was imported from Russia. Famous Georgian entrepreneurs and traders Zubalashvili Brothers paid attention to the above mentioned fact and by the permission of Emperors representative, were supplying the army with products. They star ted purchasing chacha from local population and
built several chacha distilleries in the western
Georgia. After that, Chacha became a very popular beverage.
