Ever wanted to own your own vineyard? Crush grapes with your toes? Or better yet, bathe in the romance of an acreage filled with sun-ripened vines laden with fruit and fame. Then just sit back, relax, close your eyes and dream. Then … wake up! Because owning a vineyard is hard work. It is however a labour of love that West Vancouver’s John Skinner will tell you is worth every minute. “We started 10 years ago from scratch,” says the investor-turned-winery-owner who is making a big name for himself and his brand. Painted Rock Estate Winery is located in city of Penticton on the east shore of Skaha Lake. The word “estate” means that all the fruit is grown on the vineyard. There is no middle man. No buying fruit from other places. Thinking back to the early days, John tells how it all started. “We didn’t buy a winery, we bought dirt, and then we spent a year assembling our team,

preparing our site and developing our strategies.” Now those strategies are paying off - and it has nothing to do with sitting back and letting nature do the work. “I was a market timing guy, but also a big wine collector,” he says. “And before us was this emerging region, but it was early on. I thought it was a golden opportunity to go in and play a part in its improvement.” John says his Painted Rock Estate Winery has been developed as a hierarchy that starts with himself and his wife Trish, and then extends all the way down to his team members who are all an essential part of the recipe. As for the winemaker, well that’s different too. “We haven’t followed the typical winemaker model,” says Skinner. He instead uses what he calls “team winemaking” that is led by Bordeaux based viticultural expert Alain Sutre. “We work with Alain. He does all the blending, and he gives us direction and teaches us,” says

JO
John as he speaks from his home in West Vancouver. Calling him the “Flying Winemaker”, Sutre comes to the Penticton based winery six times a year and is very much a part of the entire Painted Rock team. Overall, the winery is very much a family enterprise and John and his wife remain close to all their team members. Producing only 5,000 cases a year, John says his mantra is “get better - not bigger”. And that meant producing a quality award-winning product right away. “What I did right at the beginning, was I needed a measure of our success,” says John. “I decided that we were going to put our wines in competition. And if we don’t win, we learn.” So far the results have been good and Painted Rock is easily becoming one of the more sought after wines in the region. The estate is perfectly placed for producing and ripening red fruit, but because they also wanted a white wine, 10% has been reserved for Chardonnay. Otherwise look out for the “big reds” via their Syrah, Cabernet Sauvignon, Cabernet Franc, Malbec, Merlot and Petit Verdot. Painted Rock’s signature wine is called Red Icon and is a blend created by Alain Sutre from the best of what the vineyard produces. It is thusly named because on the estate, there are several “painted rocks”, known as pictographs, dating back as far as 500 years. Most of these pictographs show large red icons. Last fall, the family also christened a new 5,000 sq ft facility that will be used for tastings, corporate events and even weddings. With spectacular architecture and contemporary design, the building itself is literally coated with a lustrous exterior called “Alucabond” which glistens brightly and proudly in the Okanagan sun. It’s an achievement that the Skinner family took patience in planning, and one they are particularly proud to introduce to the neighbourhood. Speaking with John it’s easy to hear the enthusiasm and genuine love he has for his industry and his estate. “It’s like building a symphony,” he says. “If you have one part of the orchestra too loud you need to add balance.” Make no mistake - John Skinner is that balance. And although he’s only admitted to crushing grapes with his toes once or twice, he nevertheless has become a maestro to the estate he has lovingly cultivated and built. He remains a dedicated leader in his field and a steadfast supporter of the entire BC winemaking industry that people have come to count on. “We’re all cheerleaders for one another here,” he says. “We as a region need to get out there. Go and seek the business. That’s what I’m about.”

IN WEST VANCOUVER Have you ever really thought about how much West Vancouver has to offer? Along with being one of Canada’s wealthiest communities, and home to some of Canada’s most expensive properties, it has other wonderful characteristics that you may have overlooked - until now. Take a look at Beverly Hills for instance. Sprawling hillside estate homes with big gates, and even bigger views, have become hideaways for the rich and famous. Sounds a little like West Vancouver, except here the views aren’t blurred by smog and one can see all the way from Mt. Baker to Vancouver Island. Homes in West Vancouver are designed by world-class architects and builders who really take into account our west coast environment and make the most of everything from the natural rock to the natural light. Then there’s the extras. Like beaches at our doorstep and ski hills just above. Cruise ships that sail past the patios of the many designer condos that line the waterfront. The incredible seawalk, which is used every day by joggers and pedestrians who come to share in the ocean views. And the villages of Dundarave, Ambleside, Caulfeild and Horseshoe Bay, which offer everything from cafes and conversations to restaurants, art galleries and shops. Feeling designer? Then check out the shopping at the new Park Royal Shopping Centre (currently under renovation) which, thanks to the arrival of several new luxury name brands, is starting to feel a lot more chic and international. And, to save the best for last, there’s a wonderful sense of local community. From the revamped recreation centres to the newest seniors’ housing residences, this is a municipality that is planning for the future, and for all ages. So whether you’re into hiking, biking, skiing, sailing, wining, dining, shopping or more. And whether you want to live in a luxurious condo by the sea, or a Hollywood home in the “Properties”, you’d be hard pressed to find a more glamorous place to live. And speaking of those celebrities living in the hills, don’t be surprised to find them strolling right alongside you as you stop off for your morning coffee or take in one of this summer’s amazing arts festivals. Because if West Vancouver is one thing most of all - it’s home! By Catherine Barr CatherineBarr.com SPRING 2014 / West Vancouver Living 13

Golf is a head game so why complicate it? Here at peak Golf, we prefer to keep it simple. After an assessment of where you are presently at with your game and equipment, we will enter a ‘static’ fitting measurement utilizing your height and wrist to floor measurement. From
there, we will move into a ‘dynamic’ fitting where we will check lies (for irons) with an impact board and assess swing speed for shaft flex as well. This is where the Try-before-you-buy plan kicks in…we will set you up with a few options to take to your local course or
driving range. This is the best place to test the clubs for ball flight, distance and feel. If you have found the club of your dreams after testing, we do a final check on loft, lie, length, flex and grip size to make sure everything is right for you! Depending on the club or clubs
you have selected, we will either order the clubs custom from the factory or do any necessary work in store. Top club brands include ping, TaylorMade, Titleist, Callaway Golf, Adams Golf and Odyssey.

Entitled VG Shoes, the match-up seemed to come naturally to this well-heeled and very dynamic duo who now can offer clients the perfect “pair” to go with the perfect “wear”. So how did the idea come to be? “For many years I’ve been a customer, and we would hang out. And on many occasions we would ask ‘why aren’t we doing something together’,” says the affable maven in a recent phone interview. “There were a million ideas. And then one day, we stood in the middle of the room and said - shoes!”
Walking a mile in her own shoes, Vicki Gabereau lends her style to a new retail venture.

She grew up in a media household filled with famous faces. Canadian legend Pierre Berton, who was one her father’s closest friends, is said

Vicki is also rumoured to have worked as a cab driver, elephant herder and professional clown. Meantime, she says she is thankful for all the support she has gotten from her friends and family on her new venture. “My husband Tom is deeply appreciative,” she jokes. “Because he says it keeps me out of the pool hall.”
“My mom was shoe obsessive,” she says musingly. “I still have a pair of her shoes. Gold. High heels. From Ingledews, I think.” Vicki also remembers her grandmother being a big shoe lover as well. “She had the most beautiful shoes. Always kept in their boxes and their little bags.”
And as those in the know will tell you, the incomparable Vicki Gabereau has plenty of energy and passion to go around. Chances are, even at age 67, she’s only really getting started and you can bet your boots on that.
Being a fan of flats over heels, Vicki says she loves that she can now help women find shoes that are both fashionable and comfortable. She also looks to buy from the traditional manufacturers and designers in England, Italy and France, but now also keeps her eye on Spain, Portugal and even Bosnia.

As for style - it’s still leather, leather leather. And when it comes to spring colours, Vicki recommends looking out for neutrals, off white and creams, as well as blues and bright greens. Brogues and suedes are also in vogue. And for dress-up nights, look for little bow ties, silver pumps, and flashy metallics. “I think it’s great to reinvent,” she says. “It wasn’t my intention, but Marilyn wouldn’t let me go. She nagged me until we figured something out.”

Spring The spring fashion season is upon us. What to do? What to do? Whether you’re struggling to find the right transition from sweaters to sundresses, or getting geared up for gala season, here’s one good motto to remember: For every moment, shine! That’s the catchphrase created by local jewellery designer and actress Susan Scarlett of Indigo Star Jewellery who thinks that every moment in life deserves to sparkle. It all started back in 1999 when, on a break from her naturopathic medical training, the energy of crystals came calling. “From the beginning I was drawn to the Swarovski crystal and I have learned so much,” she says as she works from her home based studio. “They are a world class crystal made only in Austria (since 1800). They are cutting edge, there’s sparkle, there’s brilliance.” Susan started off making her jewellery initially only for friends, and only for special occasions like Christmas, birthdays and weddings. From there, her star began to rise and people started asking for more. Today, she is a mom of two children and is a women clearly in charge of her own destiny. Her Indigo Star line can be found in 14 different stores and at various local specialty stores in many of the North Shore village areas. She also has a thriving online business and her own YouTube channel. It’s a career that she lovingly applies herself to every day. She attributes much of its success to a genuine energy that she inserts into making every piece with true passion. “Making the jewellery for as long as I have, I still put intention into each piece. Customers are always saying ‘there’s such good energy in your jewellery’. That’s why I do what I do.” The Indigo Star line now consists of both basic and more intricate designs, including bridal, prom, and everyday pieces. She has also taken things up a notch over the years by studying with a master jeweller and learning how to solder and set stones professionally. And Susan remains steadfast to the Swarovski line only, being one of a precious few who have actually been invited by Swarovski to become a partner. She also continues to do custom and specialty work. Her spring recommendations include keeping an eye out for soft, beautiful pastel colours.

Susan Scarlett of Indigo Star Jewellery. “Think spring. Look in the garden. That’s what we’re seeing in fashion. “ she says. “I really pulled a lot of the opal, pale blues, pale green and tangerines. Orchid is a beautiful purple colour.” Susan also says that bling, goes with everything. Wear your jewellery with jeans, yoga gear and everyday outfits. It’s the new take on “shabby chic”. Also, stacked rings are in right now. Simple bands. Lots of them. And bling, but everyday bling. “You can bling every moment of the day. Really you can. The trend is towards underdressed, but blinged out. Add simple stud earrings to match.” Visit Susan online at IndigoStar.ca

Since 1955, the White Spot restaurant at Park Royal has been considered a classic. Not just for the food, but for the memories. Ask anyone who grew up in West Vancouver and you’re bound to find a story or two about a trip to the car hop with family or a fight between siblings over the coveted Pirate Pak gold coin. This past March, the restaurant celebrated the start of a new era as it closed its corner lot location and moved about a block west as part of Park Royal’s new and extensive redevelopment. Sadly, the car hop is no more. But according to general manager Harley Bennett, the same friendly faces you know and love are still there to help you make new memories this spring. “The new store is very bright with a nice comfortable atmosphere,” said Bennett in a recent interview. “Look out for our big summertime patio. It’s very good for people watching.” Having been with the organization for 13 years, Bennett was among the hosts on hand for the opening celebrations which featured a celebrity studded guest list that included hockey legends Pat Quinn and Stan Smyl as well as executives Warren Erhart, White Spot President, and Peter Toigo, Managing Director of Shato Holdings (White Spot’s parent company). The evening event also celebrated the new White Spot cookbook which, believe it or not, features an entire chapter on Legendary Burgers. The cookbook, which was authored by Kerry Gold, features more than just mouth watering recipes and pictures. There’s a wonderful welcome from the president, a history of the restaurant itself and numerous nostalgic stories and photographs highlighting the days of yesteryear. Manager Bennett, who is also one of the company’s formally trained Red Seal chefs, says that the Chicken Pot Pie and Chuck’s Burger are among his favourites.

Fresh Berry Shortcake Fresh summer berries are magnificent, and the biscuits in this recipe are a perfect complement. We spent two days in the White Spot test kitchen trying different flours and leavening agents to get this biscuit recipe just right.
Fresh Berry Shortcake Serves 6
IngredIents: THE BERRIES 1 lb strawberries (quartered), blueberries, raspberries or blackberries (or combine any of the above) 1/4 cup granulated sugar Toss berries and sugar in a bowl, then allow to sit, tossing occasionally, for 30 minutes. THE BISCUITS 1 1/4 cups cake flour 1 1/4 cups all-purpose flour 1/2 cup + 2 Tbsp granulated sugar 1 Tbsp baking powder 3/4 tsp baking soda 3/4 tsp kosher salt 1/4 lb unsalted butter (1/2 cup), cold, roughly chopped 1 cup + 3 Tbsp homogenized milk 1 1/2 tsp fresh lemon juice MetHOd: BISCUITS: Preheat oven to 375˚f. Line a baking sheet with parchment paper. In an electric mixer fitted with a paddle attachment, combine flours, 2 Tbsp of the sugar, baking powder, baking soda and salt until well mixed. Add butter and mix until it is in 1/8-inch pieces. With the motor running at low speed, pour in 1 cup of the milk and lemon juice all at once and mix until the dough is just uniform and gathered tightly around the paddle. Lightly dust a clean work surface with flour and turn the dough onto it. Dust your fingers with flour, then shape the dough into a 6 x 9-inch rectangle. Pat it together well so that the rectangle is uniform, without any cracks it in. Cut dough once lengthwise, then twice widthwise to form 6 biscuits, each 3 inches square. (If you use a round cookie cutter to make biscuits, you have to rework the leftovers to use it all up, which makes the dough tough. Just make square biscuits instead!) Arrange the biscuits in a single layer on the baking sheet, leaving 1 inch around each. In a small bowl, combine the remaining 1/2 cup sugar and 3 Tbsp milk to make a glaze. Using your fingers, press down on the centre of each biscuit creating a shallow depression in the dough. Spoon glaze into the depressions, then bake biscuits for 20 to 25 minutes until puffed, firm and golden brown. WHIPPED CREAM: 1/2 cup whipping cream 1 1/2 tsp granulated sugar 1/2 tsp vanilla extract Using an electric mixer, beat cream, sugar and vanilla until stiff peaks form. TO ASSEMBLE: Cut open the biscuits and place 2 halves on each plate. Cover the bottom of the biscuit with berries and a dollop of whipped cream, then top with the other half of the biscuit placed at an angle.

As an athlete and a doctor, he’s an expert in keeping dem bones in line and knows a thing or two about treating muscles and tendons too. A leader in his field, he is very much in demand due to his advanced techniques and expertise. In fact, one of his latest methods includes using new Class IV K-Laser Therapy which, he says, helps speed up the healing of painful musculoskeletal injuries. So as we all creak our way off the couch and back into the swing of things in the great outdoors, here’s a few tips on some key summer sports from a man that not only walks the walk, but also goes the distance to keep himself, and his patients, healthy and happy. OVER-TRAINING If you’re just starting to get back into shape again, trying to get there quickly is a mistake. “Initially when people are getting geared up to train, they often start too much, too fast,” says Dr. Hafizi. According to the good doctor, this just increases the risk of all kinds of injury, including soft tissue, muscles, tendons and ligaments. One of the biggest injuries at this time of year comes from the lower back. This is a direct result of over-training, or over-straining.
Dr. Bob Hafizi in his office located inside the West Vancouver Recreation Centre
“I think it’s a lot better here on the West Coast because we have a much healthier minded population,” he says. “But when spring rolls around, a lot of people take their training from indoor to outdoor, and that can cause injury.” So is there a secret to getting fit fast? Not really,

GOLF TIPS
TENNIS TIPS
CYCLNG TIPS
The typical injury in golf occurs in the lower back. It comes from the whole rotation in the swing.
The most typical injury in tennis is ankle sprains. “Tennis is a zero to sixty sport,” says Dr. Bob. “You go from standing still, to moving side to side, or forward and back, really fast.”
“Cycling is the new golf,” says the doctor. “It’s a sport that everyone can enjoy. Men and women can both participate and really, it knows no age limit. Plus, it’s a lot easier on the joints than golf.”
Proper footwear is most important. You’ll also want good flexibility in the ankles and calves to support the rapid body movements needed to play.
Dr. Bob recommends cycling for knee or back issues. Calling it an “excellent workout” he says it is anything but boring. Cycling vacations and local cycling groups offer excellent incentives to keep you focused on being fit.
A standing sport, golf relies on the club swing. The rotation force required to drive the ball puts tremendous pressure on the lower back. Aim for the hips for the rotation vs the back. Drive the ball through the hips. Work on being loose and flexible through the hips and back and definitely work on strengthening the core muscles, including the glutes and hamstrings. Watch out for Golfer’s Elbow. This is pain on the inside (medial epicondylitis) of the elbow. It is usually caused by a rotation in the forearm bone and a twisting mechanism that causes the tendon to become inflamed. Prevent this by stretching your forearm flexor and extensor muscles prior to start of game.
Just like golf, there’s also Tennis Elbow. And just like Golfer’s Elbow, the injury is in the same area, but on the outside (lateral epicondylitis) of the arm. Caused by rotation or pronation (an inside twist) when swinging the racket, it can happen when hitting top spins or when serving the ball. Tennis players also have a lot of shoulder pain, especially in the rotator cuff. When you hit the ball in tennis, try to use your core and your hips. Some of the power definitely comes from the shoulder, however by using just the shoulder, you could end up with painful rotator cuff tendonitis.
Athlete Bob Hafizi in action at last year’s Subaru Ironman Canada event in Whistler, BC.
Cycling pain in the lower back and neck is usually due to an improper fit on the bike. Finding the right bike and a proper fit are important. He recommends getting it done by a bike fit professional only. The biggest complaints from cyclists are saddle soreness, achilles issues and some knee pain. But the biggest injury in cycling, according to Dr. Bob, is crashing. Start nice and easy, and be safe on the road. Learn the rules of the road - and be extra extra careful at night. And don’t forget that helmet.

Taking a walk through some of our favourite local shops reveals that spring has sprung in all the latest shades. and as the temperatures warm up, it’s time to doff those dull winter duds for some jaunty jackets and cardigans, sexy sparkling shoes and flirty yet simple dresses that beg to be taken out on the town. and hey men, don’t forget that colours are for you too!

Mulch to keep squirrels away From page 13 will only last a year or two at best, before they degrade and don’t flower anymore. So storing hybrid tulips for replanting is not always the best idea, but some varieties will last a couple of years if given enough time to retract their green energy to build up the bulb before storage. Daffodils, crocus, species tulips, alliums and lilies can be planted once and left in the ground to multiply and live in the garden for many years. Almost everyone recommends including bone meal and fertilizer when planting spring-flowering bulbs. I do not agree. Contrary to popular myth, fertilizing bulbs when they are planted in fall is somewhat useless since the bulbs do not have any roots to take up the fertilizer and much of the fertilizer is lost to leaching before rooting occurs. Bone meal is also unnecessary if you have reasonable soil, if you use compost or manure or if you have applied bone meal to the soil in the last five years. If you have a low fertility soil that has never been amended with organic matter, then a small amount of bone meal and some dolomite lime will help. However, bone meal

A new take on Vegas, baby! Luxury Las Vegas: The Palazzo / Venetian
Las Vegas is world famous for its glitz, glamour, and gambling. A never ending party, it is a haven for conventioneers and tourists from all walks of life. Never boring, Vegas bases its reputation on being larger than life and completely over-the-top in every way possible. Definitely garish, Vegas isn’t necessarily for everyone. Even as a Vegas regular, I find that sometimes I tire of all the noise, smoke and nonsense. But I’ve discovered a new Vegas. One that is classier and more sophisticated in her approach. One that says, yes - take a breath and relax. One that is still ready to party, but seems to also cater to (dare I say it) a more grown-up experience. And while the other me has spent years living it up on the South Strip - I feel I want to move up in the world, and further down the block, to a better neighbourhood. The Palazzo and Venetian hotels have since become my new luxury picks in Las Vegas. Located adjacent to The Wynn / Encore, and across the street from the Fashion Show Mall, this is now where I want to be. You feel the difference just walking through the front door at The Palazzo (the newest of the two properties). You notice it - and you should, because this is five-star service at its best. Here’s my list of top reasons to visit – why this property had me at “Hello”. FRONT DOOR WELCOME The concierge and doormen always greet you politely and with a genuine smile. “Welcome to the Palazzo. May I hold your bags while you check-in? Do you need me to attend to anything for you while you wait?” Did I mention we just walked in the door?
Above, ceiling decor at the Palazzo. Below, the Palazzo pool. Top right, Mark Sunock as Lonny in Rock of Ages, the Venitian’s resident stage show. (photo by Denise Truscello)
HUGE, LUXURIOUS ROOMS The rooms at Palazzo / Venetian aren’t rooms, they’re suites with the smallest ones measuring 650 sq ft. They have sunken living rooms, plush pillowtop beds, soaker tubs with showers and thick walls for privacy. There are no bad views because you get either to look out on the Strip, or the nearby green golf course.
40 West Vancouver Living / SPRING 2014
EQUAL TREATMENT AT THE POOL Other properties have an outrageous pay-to-play system at the pool with only a handful of pathetic and uncomfortable “free” chairs set aside for guests. After that, get ready to cough up the dough and fight with non-guests for a spot in the sun. Not here. Every chair lounger is cushioned and comfy and free for use by guests only. Of course, you can pay to upgrade to a cabana, or for entry into the day-club private pools, but you’re not treated like a second-class citizen if you don’t. Hint: try Solaro for poolside food service with menus created by Wolfgang Puck. SECURITY GUARDS I noticed them right away. Walking in the casino and the shops and at the entrances at all hours.
Definitely puts my mind at rest, especially when the party animals come calling on the weekends. The guards are extremely polite and helpful. And, thanks to them, no one gets up to any of the rooms without first flashing their room card. CLEAN, CLEAN, CLEAN They’re always sweeping. Everywhere. Emptying ashtrays. Picking up glasses. Our room was always attended to perfectly. And it didn’t matter what time. One working day we didn’t leave the room until 5pm – and still the desk sent someone up. Again, they’re big on service here. ROCK OF AGES – THE ENTERTAINMENT Let’s face it, this is my demographic. The Broadway hit “Rock of Ages”, complete with live eighties hair band and all
the kitsch you can handle, is The Venetian’s resident stage show and it is fun fun fun! Don’t pay any attention to the Tom Cruise movie version, this is the real deal. Be sure to cheer really loud for the lead character of “Lonny” which is played by talented scene stealer Mark Shunock - a former Canadian hockey goalie. ONE WORD – SHOPPING Barney’s of New York, Dior, Fendi, Cole Haan, Victoria’s Secret, Canali, Burberry, Michael Kors. The list goes on and on. And don’t forget that Saks, Neiman Marcus, Nordstrom and more are right across the street as well. Need emergency supplies? Yep - there’s a Walgreens pharmacy right on the property as well.
