Makes 16-18 Cupcakes

For the cupcake: ingreDients 2 cups all-purpose Flour 1 tsp. Baking powder ½ tsp. salt 1 tbsp. Ground Ginger 2 tsp. Ground Cinnamon ¼ tsp. Ground Cloves ¼ tsp. Ground Nutmeg ½ cup + 2 tbsp. Butter, unsalted, room temperature 1 cup Brown sugar, packed 2 eggs 1/3 cup Molasses ½ cup + 1 tbsp. Whole Milk
Directions (preheat oven to 350º F and line two cupcake pans.) • In a medium-sized bowl, combine dry ingredients. Set aside. • In a separate bowl, combine butter and sugar using a mixer on low speed (1 minute). • Add eggs and molasses to the butter and sugar mixture. Beat on medium until combined (15 to 20 seconds). • Add half of the dry ingredient mixture and beat on medium until combined (15 to 20 seconds). Wipe down the sides of the bowl with a spatula. • Add milk and beat on medium until incorporated. • Add the remaining dry ingredients and beat on medium until fully mixed (30 to 45 seconds). • Divide batter into cupcake tins. • Bake for 18 to 20 minutes or until cupcakes spring back when gently touched. Careful not to over-bake!

The Ambleside Tiddlycove Lions Club wants West Vancouverites to deck the halls – starting with the perfect Christmas tree. The Club’s annual Christmas Tree Sale starts Nov. 29. Trees on offer include noble, grand, Douglas and Fraser firs. The lot also sells tabletop trees suitable for small spaces.

“The trees are all fresh and they’re really high quality,” he says.
“They just take it home and plunk it up,” says Rippon. “They don’t have to fool with all the little knobs and everything.” The part Rippon looks forward to most is the lot’s festive atmosphere. “The fun part is the kids coming down,” he says. “It’s a big outing to pick out a tree.” Each year the Club raises money through the tree sale and other fundraising efforts for community projects and local charities. Last year, they donated $30,000 to the Ambleside Park Playground Renewal.

favourite has been made to look like their pet dog, Lobo. For the personal touch, the ornament is a combination of felting and some of the pooch’s actually fur, shed as a puppy. Others are trinkets gathered on husband Michael Markwick’s work trips, souvenirs that capture remembrances of places both near and far. The mishmash of stuff on the Markwicks’ tree is an important part of their home during the holidays. But the Markwicks know better than most that not everyone is so lucky. Every day at least 300 people on the North Shore sleep somewhere that most people would not consider a home. Since 2008, the Dundarave Festival of Lights Society has been committed to helping homeless people on the North Shore, though the Markwicks and fellow organizer Sofia Kennedy originally had a much more humble goal in mind. “We thought we’d raise a little bit of money and we could buy some socks or blankets,” says Michael. Since the trio took over, they’ve built the festival into a huge annual event that raises tens of thousands of dollars for charity each holiday season. “People find comfort in being able to give back,” says Michael. “It really makes Christmas meaningful and it makes it meaningful all year, to know the money we’ve raised is helping someone to get back on their feet.” The funds go to the Lookout Society’s North Shore Housing Centre. Donations primarily support the centre’s transitional program, which helps homeless North Vancouverites build new lives for themselves. The Festival Society chose Lookout as the recipient of the proceeds raised, because they felt it was an important issue in the area that wasn’t getting enough attention. “I teach at Capilano University and I have students coming to my classes who are couch surfing, sleeping in shelters or sleeping outdoors,” says Michael. It took some time to convince North Shore residents that homelessness was an issue in their area, according to Lookout’s community liaison David Newberry. “Homelessness on the North Shore is much more invisible than it is in other places… because there’s a lot more empty space here,” he says. “It’s much more possible for a resident of the North Shore to go through their day without encountering visible homelessness.”

The demographics of homelessness in the area also vary somewhat from other parts in the Lower Mainland. “We’re starting to see a larger amount of seniors and young people,” says David. “What we’re seeing are people with no history of homelessness, no history of mental illness and no history of addiction are having trouble keeping up with the cost of living.” Continued next page

In the six years since the Dundarave Festival of Lights Society was created to run the event, organizers have raised nearly $150,000. Last year alone brought in more than $30,000. “We felt that we could actually do something with this money,” says Sofia. “Each person does something small and together it creates something whole.” Several years ago, the donations enabled the Lookout Society to hire an additional full-time staffer for their transitional program, which does not receive any operational funding.

David says the money has made all the difference. “By doubling the transitional staffing we’ve way more than doubled the amount of time that tenants are able to spend with support staff,” he says. “We literally couldn’t provide the level of services that we’re providing without the support of Dundarave Festival.”
But the festival is about more than raising funds and awareness. It’s also about community. The combination of gorgeous light and tree displays with family-friendly holiday events has made the festival a must do tradition for many West Vancouverites. Each of the four Saturdays proceeding Christmas Day has its own unique theme and schedule of events. First off is the Dundarave Christmas Fair on Nov. 29. That’s when the trees are installed on the beach and sponsors turn out to decorate. “I love walking around the trees and having conversations with people,” says Sofia. Then comes Dundarave Nativity and Paddle Songs on Dec. 6, followed by World Christmas on Dec. 13. The month-long calendar of events wraps up with the Christmas Wassail and Bonfire Night on Dec. 20, though trees are left up through the holiday season. The B3 Kings were formed in 2002 for a Christmas concert at the Cellar Restaurant/Jazz Club in Vancouver, BC. The show was such a huge success the concert has become an annual event. The quartet is anchored by Canadian vocal sensation, Denzal Sinclaire – who also doubles as the band’s drummer. Denzal is an internationally known jazz star and has had his praises sung by the likes of Diana Krall and Cassandra Wilson. Saxophonist Cory Weeds is perhaps best known for his work with the great Dr. Lonnie Smith, and brings an unbridled enthusiasm to his music. Local patisseries and chocolatiers are a European tradition – one that chef and world traveller Steven Hodge wanted to bring home with him after his time living and working there. Temper Chocolate & Pastry opened in January 2014 in Dundarave Village, mere blocks from where Steven grew up and not far from his wife Lara’s childhood home in Horseshoe Bay. “I wouldn’t have this place if I hadn’t done my travelling in Europe,” he says. “Our ultimate goal is to be one of the best. We wanted to share that with the people we grew up with.” The shop has quickly become a family business in more ways than one. Steven and Lara operate Temper as two halves of the same whole; he attends to the onsite duties such as making the chocolate and dreaming up new recipes, while she keeps everything in order on the admin side of things. “She organizes my life,” he says. “The business would not be running smoothly if it wasn’t for her.” The atmosphere at Temper is cozy and inviting, a mix of European aesthetic and West Coast modern. The shop philosophy is to treat employees and customers alike as one of their own. The team at Temper have quickly made a name for themselves. Earlier in the year, they brought home two accolades from the International Chocolate Awards 2014 Canadian division.

They nabbed a gold win for a chocolate-enrobed liquid caramel confection called Salty Balls and a bronze for the Creamsicle – a cream-filled chocolate creation reminiscent of childhood summers. Steven takes inspiration for his creations from a variety of sources – international acclaimed chefs and brand new employees alike. “You can always learn something from everyone,” he says.

“I’ve had customers come in and suggest things and now they’re on the menu.” When Steven decided to create a line of holiday chocolate characters – each stuffed with smaller treats, like a piñata made entirely from cocoa – he drew inspiration, not from the masters, but instead from his daughter Charlie’s toy box. He’s designed a chocolate reindeer, snowman and Santa figure all with endearingly large eyes and a cartoonish charm. “The inspiration came from Charlie’s bath toys,” he says. The couple’s toddler also served as inspiration for the pullapart cinnamon pastry now known simply as Charlie Bites.
Steven plans to make a very special treat to go with the theme. “We’re going to carve a Grinch out of a mound of chocolate… like Mount Rushmore,” he says. If you’re hoping to be the first stop on Santa’s route this year, give Temper’s cookies and milk a try. Featuring homemade Oreo-like cookies and a retro classic glass bottle of milk, the big guy in red won’t be able to resist. To pick up some Salty Balls or other holiday treats for the sweet tooth on your list, visit Temper Chocolate & Pastry at 2409 Marine Drive, West Vancouver.
But she’s not the only family member who’s helped with Steven’s creative process. Despite all the delicious treats Temper cooks up on a daily basis, his wife Lara still insisted on keeping Twix bars in the fridge as a guilty pleasure midnight snack. That’s what pushed him to design his own version of the classic cookie and caramel bar. He’s yet to name the new confection, but suffice to say it’s replaced the gold wrappers in the family fridge. The crew at Temper are also getting into the local spirit of the holidays. The whole of Dundarave Village is masquerading as Whoville this year, with a Grinch instead of Santa Claus.

White Chocolate Croissant Pudding 4 Large Butter Croissants (day old is fine) 2 eggs 1 tsp of vanilla ½ cup of brown sugar ½ cup of white chocolate chips ¾ cup of heavy cream (whipping cream is best)
Preheat oven to 350 degrees Break croissants into cubes. Place croissants, eggs, vanilla, sugar and chocolate chips in a bowl. Cover with heavy cream and mix together until eggs are broken and all croissants are lathered with cream and egg mixture. Scoop mixture into 4 individual ramekins and bake for 20 - 25 minutes until golden brown on top. Let cool and serve warm. Drizzle with caramel or chocolate sauce, or fruit coulis. the perfect centerpiece
This fabulous centerpiece will look great on your dining or coffee table. Fill the inside of a large glass vase with fresh holly so that all the leaves and red berries are inside the vase – not sticking out the top. A vase with straight sides and a wide opening at the top works the best. Then fill the vase with water so the holly is completely submerged. Float 3 or 4 candles on the top. This stunning centerpiece will last up to a week or more before needing to be replenished with fresh holly and is a unique alternative to more traditional centerpieces. SMART PERFORMANCE. Planner Susan Hyatt, better known as The Wedding Lady, speculates that the Christmas decorations, romance and holiday cheer are just a few of the reasons that Christmastime proposals are so popular. “It’s a festive time,” she says, adding that Christmas Eve and New Year’s Eve are favoured choices. In West Vancouver, Ambleside Beach is a popular setting for romantic proposals. As couples from those holiday engagements begin planning, destination weddings quickly rocket to the top of the list. Christmas is about joy, goodwill and holiday cheer. Christmas shopping, on the other hand, tends to be about the stressful, frantic chaos of fighting crowds of other holiday shoppers. But it doesn’t have to be.
This holiday, make your shopping trip an experience you’ll enjoy with a day on Bowen Island. Bowen Island Tours, a new company started by resident Jody Lorenz, runs a culture tour aimed at making visitors feel like island insiders. “Bowen is part of the city… but when you come here you feel you’ve gone away,” says Lorenz. “It’s like stepping back in time.” On Bowen, the first weekend in December is a veritable Christmas-palooza that Lorenz wants visitors to experience alongside locals. It begins on Sat., Dec. 6 with Light Up Bowen, a Christmas Light festival where lantern-wielding attendees wend their way down from Artisan Square to Village Square and finally Snug Cove, Christmas lights turning on in their wake. The evening is full of hot chocolate and mulled wine, festive decorations and a live nativity. Santa arrives by water taxi for a real coastal Christmas treat. Craft Fair. Boasting more than 50 tables, the fair features professional artisans alongside crafting hobbyists. Sarah Haxby, Bowen Island Community School Coordinator, helps put the craft fair together each year. “We’re an eclectic community [so] it’s a real mix of stuff,” she says. “It’s not big and glossy. It’s what we make together as a community.” The fair runs from 10 a.m. to 3 p.m., Dec. 7. In order to make the whole schedule of events more accessible to visitors, Lorenz created a special Christmas edition of her culture tour to coincide with the craft fair. Her culture tour introduces visitors to Bowen Island artists, artisans and craftspeople, giving them to chance to learn about the people behind the beautiful handmade items. “It’s a great place to get away from all the frantic frenzy of shopping that happens pre-Christmas,” says Lorenz. The majority of the tour focuses on Artisan Square – a gallery, studio and shop community a short walk from where the ferry docks in Snug Cove. It’s the perfect chance to find a unique gift for that hard-to-buyfor person on your list.

The Special Craft Fair & Christmas Shopping Tour on Dec. 7 is $65 for adults, $55 for seniors. it meets at Horseshoe Bay and includes all transportation costs. in addition to the craft fair and artisan square, the tour also takes visitors to opa and Killarney Lake. the all-day excursion includes time for a lunch break.
