PREPARATION Simmer the Brine in 1 litre of water, then set aside and allow to cool. Thoroughly rinse a fresh whole chicken and place in a large stock pot with the cooled brine liquid. Add cold water to completely cover the chicken and use a plate to weigh it down. Refrigerate for 12-16 hours, then remove from brine and rinse thoroughly, then pat dry.

Set your barbecue for rotisserie cooking on high heat.

COOKING

Secure chicken on rotisserie spit and place in pre-heated barbecue with rotisserie burner on high for 10 minutes. Reduce burner to medium high and cook another 45-60 minutes until an internal temperature of 165f is reached. During the last 10 minutes of cooking, lightly brush the chicken with your favourite barbecue sauce and allow it to caramelize. Remove from heat, place on cooling rack, cover loosely with foil, and allow to rest for 10-15 minutes at room temperature.

Basic Cruising is the introductory level for keel boat sailors. The syllabus is set by CYA and to receive a basic cruising certificate you must pass the written and practical tests.
