school teacher once asked North Shore Taekwondo’s Master Tony Kook how martial arts schools teach important life skills differently than other sports. She wanted to know what kids would learn in taekwondo that might be different than what they’d learn in soccer, baseball or hockey. The difference, he said, is in the approach, “There are only so many ways to kick and punch, but a great martial arts school is going to use those as tools, use those as means to develop life skills,” he says. “In other sports they’re going to learn respect in indirect ways. We do it in a very, very direct way.” Kook says that teaching life skills is at the core of his school’s martial arts curriculum. Each month is assigned a different life skill for students to focus on. In September, “mat chats” will focus on confidence, which Kook says ties in well with back-to-school. Rather than using mat chats to talk about confidence in the abstract, the school discusses concrete examples of how students can integrate the theme into their daily lives, such as putting their hand up in school when they know the answer or saying no to peer pressure. “We try and teach them how to speak up,” says Kook. “Confidence teaches you there’s never a wrong time to do the right thing.” The martial arts curriculum breaks down into four sections: character development, self-defense, pattern and sparring and breaking technique. Monthly themes are the focus of the character development portion of the curriculum.

“The classes are tremendously fun, they’re very safe and they’re age appropriate,” says Kook. “This is why people come in, they want to improve their life, not be Bruce Lee or something like that.” The school has an average ratio of 10 students per one instructor, allowing for one-on-one interaction and support. “We’re truly here to really, really help people to achieve goals and improve quality of life,” says Kook. “We’re just using taekwondo as the tool to get there.” North Shore Taekwondo offers classes for children aged 4 to 6, youth aged 7 to 13 as well as teens and adults aged 14 and up. PEAR AND BLUE CHEESE SALAD WITH POACHED CHICKEN This recipe features protein, green vegetables and a fruit making it great for anyone looking for a light healthy summertime meal. TO POACH CHICKEN 4x 200g chicken breasts 6 sprigs thyme 6 black peppercorns

2 cloves garlic, bruised 1 lemon, zest peeled into strips 750ml (3 cups) chicken stock

To poach chicken, place chicken in a deep frying pan. Add thyme, peppercorns, garlic, lemon zest and stock. Bring to the boil over medium–high heat. Reduce heat to medium, cover with a round of baking paper, simmer gently for 5 minutes. Turn chicken over, cover and cook for a further 8 minutes or until just cooked through. Remove pan from heat. Stand chicken for 5 minutes in poaching liquid. THE DRESSING 1 tablespoon red onion finely grated 1/2 lemon, juiced

2 tablespoons thyme leaves 2 tablespoons caster sugar 60ml (1/4 cup) olive oil

To make salad dressing, whisk onion, lemon juice, thyme, sugar and oil in a small bowl until combined, then season with salt and pepper. Makes 125ml (1/2 cup).

Is your Thyroid to blame?

Have you ever wondered why some individuals are able to lose weight with diet and exercise, and other individuals cannot lose weight despite a disciplined program? These levels are not commonly investigated unless the TSH level is out of normal range. If these levels are low, symptoms of hypothyroidism will be exacerbated. What causes low thyroid hormone production? Chronic stress, as well as unbalanced hormone levels, can decrease the production of T3, your active thyroid hormone. High cortisol levels

(stress hormones) can cause high levels of reverse T3, a hormone that binds to thyroid receptors and makes them less efficient. Low levels of the hormone progesterone can cause a decreased production of active thyroid hormone. This hormone typically will decrease with fluctuations in hormone levels leading up to menopause.
