HELLO FRIENDS
What a month it’s been with boozy celebrations at Leeds International and Springwell Sessions, it was so great to see lots of you there!
Most importantly, however, was the North x North Beer Club finally coming into fruition after a long time of compiling votes, sourcing ingredients and designing the labels to incorporate some of the people who helped make it happen! I’ll think you’ll agree Refold has excelled himself yet again, and the beautiful design of your hands across two different label design looks incredible and represents the many hands that all played a part in creating this beer.
A big thanks to those who made it down for the brew day and lent a hand at chopping plums and apples, before caramelizing them in our big paella pan alongside ground cinnamon, nutmeg and ginger cubes. We’re so happy with how this beer came out and hope you guys like it as much as we do!
We’ve popped a can of each design in the box, and there’s also a voucher for a free schooner for when you’re next passing a North venue.

Back by popular demand is one of our favourite sours with the Indian street food legends, Bundobust! The perfect compliment to their delicious dishes, providing a soothing counterpart to “too much spicy”!
Starting with a base grist loaded with oats and a little lactose, this kettle sour is fermented with our house yeast to accentuate the zesty fruity flavours. We pitch in fresh pineapple juice and add the sweet, tropical coconut to provide that signature, smooth Lassi style. We think this pairs beautifully with a Vada Pav or their delicious Bundo Chaat.

A Gluten Free West Coast Pale Ale with a clean crisp base and a deep golden hue. A steady dry hop of Simcoe and Chinook boasts sticky grapefruit, lemon, floral bouquets and pine flavours with a fine and refreshing bitter finish.

Back once again is Shadow Play, our classic porter that is now available in keg, can and cask!
A blend of the choicest speciality malts creates a deep dark base full of roasted coffee, sticky molasses and toasted malt flavours. It pours smooth, with a delicious thick and creamy head, and has a lightness to the palette, with a refreshing dry bitterness.
For this edition of Shadow Play, we utilise a new experimental hop variety from Yakima Chief, HBC472, to see what flavours and aromas it would impart to this traditional style. A sister hop of Sabro, it brings aromas of toasted Brazil nut and enhances the flavours of each malt variety used.

Our third collaboration with Newcastle’s Full Circle Brewing Co brings us to making an IPA perfect for sipping in the sunshine! An extra fine and fluffy base made up of pale malt, oats and chit malt sets the tone for laid back easy drinking! One of our favourite hop combos, Citra and El Dorado, creates a bright squash of sweet fleshy pear, orange and peach with Yakima Cheif’s CRYO POP™ blend bringing a succulent tropical fruit salad medley. The chorus of fruits doesn’t stop there. We finished the beer by circulating it through lemon zest to draw out bright, balmy and tart flavours and aromatics. The result is an undoubtable, proper sunshine refresher!

A sumptuous smooth base of pale malt, wheat, naked oats and rolled oats with Citra, Enigma and Simcoe hops brings continuous blasts of flavour. A base note of tinned apricot halves and pithy zest springboards candied mango, white wine-gums and gooseberry with crushed pine needles, lemon peel and passionfruit finishing with a pinching bite.
Soft, fluffy, rounded and laced with dazzling fresh tropical fruit flavour.

Style New England IPA

This New England IPA packs a punch of flavour, showcasing the best and most innovative hops. A combination of extra pale malt, flaked oats, wheat, naked oats and chit build the smooth backbone. We’ve used HBC 586, an experimental hop variety from Yakima Chief, and Cryo Pop™, to provide a sweet tropical base, building aromas of stone fruit, juicy pineapple, and herbal woody notes. On the cold side we have loaded the dry hop with even more HBC 586, a hefty dose of Idaho 7 and Citra to round out the tropical flavour grenade and balance with a zesty kick. This all ends with a beautifully refreshing dry finish, boosting these big-hitting flavours.
The name and design of this beer are inspired by the music of Sun Ra and his fixation on the sun.

This fruited sour is packed full of autumnal, warming seasonal flavours. With our signature, smooth saline base with oats and lactose, we invited our North Beer Club members to assist with the brew at Springwell. We put them to work cutting up plum and apples to roast before adding them to the whirlpool with a little cinnamon, nutmeg, and ginger. During fermentation we added fresh, organic blackberry puree and apple concentrate to boost that deep, vibrant red colour and boost those autumnal flavours.
This North Beer Club recipe is one for the season, and a true collaboration with those who have supported us throughout the years.

The day started with loading up the van with soft, ripe plums and three varieties of apples from the market. The plums had their pits removed and were chopped in half, before going straight into the large paella pan to soften and caramelise. We did the same with the apples, caramelising with brown sugar, cubed ginger and ground cinnamon and nutmeg.
The base beer which had been souring in the kettle overnight was boiled and then transferred to the much wider, shallower whirlpool tank where we began to spin the beer as it cooled. Into the tank went the caramelised fruit, with apples in large sacks to avoid blocking up the pumps.
Those who came down to help us brew were rewarded with a well-earned pint, and then we went off to the brewery to try Heliocentric and an upcoming imperial stout.
In tank the beer got a literal ton of plum, apple and blackberry puree and left to condition, making this an absolute fruit smoothie of a beer! We absolutely love the interplay of the pumpkin spices and autumnal fruits, it’s like Innocent smoothie meets mulled wine.
