HELLO! Happy New Year! I’m writing this quite far in advance of this month’s boxes getting shipped so that we can get the booklets printed before Christmas. Who knows what sort of world you’ll be reading this in?? Things are looking like they’re going to get pretty tough over the next few weeks… I hope that you had a great Christmas and New Year, even if it looked a little different to what we were hoping for. Here at the brewery we’ve been busy all December filling the tanks so that the team can have a proper break over the festive period. We’ve got some pretty exciting beers in the tanks which will appear in your boxes over the new year. This month’s box contains our Fresh Hop collab with Full Circle. We’re really excited about this project which has been
spearheaded by Yakima Chief Hops. Fresh Mosaic hops were picked straight from the bine and flash frozen - no drying and no pelleting. It’s almost like we’re brewing with the product directly from the harvest in Washington State! Alongside the collab we have some guest beers from Full Circle in our gold boxes. We’ve loved the beers that we’ve tried from them at festivals this year, and are really excited to put a few cans in the fridges! Thanks again for all your support in 2021. It’s been one hell of a year (this time last year we were prepping for our trial brews at Springwell!?) and the support of the Beer Club has been incredible. Stay safe, take care, Love North xxx
NORTH’S NEW YEARS RESOLUTIONS 1 OPEN TWO
NEW TAPROOMS We’ve got our eyes on two sites that we’re very excited about in two of our favourite cities. Cold beers, fresh bao, and lots of wine, cocktails and alcohol free options. Sounds like fun to us!
3 SUSTAINABILITY This year we installed solar panels at Springwell, welcomed our new electric delivery van (called Evan by the warehouse team) and planted trees with Paria cycling apparel. Next year we want to do more! Our environmental champion Ethan is full of ideas and we can’t wait to implement them.
2 MORE COLLABS We’ve worked with some brilliant breweries in the last 12 months both virtually and in person! This year we’d love to visit more of our friends abroad, and host lots more collabs and tap takeovers at Springwell.
4 RAISE MORE
MONEY FOR CHARITY This year we have done some really exciting things for charity: From food bank collections, to sponsored events, to donating 10p from every pint of our Session Pale sold in our bars. In 2022 we’ll be focussing on supporting charities here in Leeds, and have some exciting new plans in the works.

We’ve held some brilliant events here so far. Particular highlights have included the Beer Club members event, Oktoberfest, the Euros, and showing The Shining on Halloween. We’re dead excited to have such a versatile space here, and can’t wait to plan more exciting things.
25 years?! A quarter of a century?! That’s a lot of beers poured, tequilas drunk, and bottles shared! We’re working on plans for the celebration in July. Watch this space!
We’ve been working behind the scenes with James at Refold to bring a fresh approach to the designs used on our core range beers. We’ve seen some of the ideas and they’re looking brilliant! (And some of the beers might be going into bigger cans…)

We’ve been working away behind the scenes to set up a barrel aging program at our original brewery on Taverner’s Walk. Some of the first beers are ageing and we can’t wait to tell you more about our plans.
We’ve been experimenting with Negroni on tap at Springwell and have plans for more non-beery options. We’re keeping our cards close to our chest while we experiment…
We’ve just cancelled our Christmas party… it was going to be our first proper one since early 2020. As soon as we can we’ll be getting a date in the diary!

Enigma Citra
We’re returning to our journey through the Moon maria in Sea of Knowledge. A series of beers that aim to bring you the full NEIPA experience packed into a smaller ABV. Starting by adding chlorides to our mash, then loading the grist full of Naked Oats, Flaked Oats, Wheat, Extra Pale Malt and going nice and low on the bittering hops. This is a smooth and slightly sweet body ready to bare the load of a big dose of hops. Spectrum extract Citra, Citra T90 and Australian Enigma sing together in a wonderful harmony of drippy mango, sweet lychee, fresh squeeze OJ, aromatic lime, soft pear and juicy blueberry!

NORTH x FULL CIRCLE Style
Fresh Hop American IPA
ABV

Hops Mosaic Yakima Chief Hops brought to the UK a batch of fresh hops, picked straight from the bine and flash frozen. No drying, no pelletising, whole leaf Mosaic hop cones given to us in the exact same condition as when they were harvested in Washington state! We took a different approach to the brewing process. We moved the cooled wort from our whirlpool back to our mash tun, where the hop cones steeped in the wort slowly releasing those beautiful golden beads of Lupulin, then moving it over to the fermentation tank! The result is a classic American IPA full of chewy and resinous hop character! Sticky pine, bitter resin, pops of bubblegum, tones of fresh squeezed lime juice and a dry woody finish all laid on a sweet crunchy biscuit classic old school American IPA base made up of Extra Pale and Crystal Malt. NORTH x ALLKIN Style
Kveik IPA
ABV 6.5% Hops
Nectaron + Azacca + Talus + Centennial
We love a Kveik IPA, so when we hooked up with Allkin Brewing and they suggested making one with us on their #roadtounruin, we couldn’t resist! This Kveik IPA takes a malt base of Extra Pale, Naked Oats, Flaked Oats and Wheat to make an ultra soft body that has allowed us to lay on some seriously fruity hops. We used Centennial in the whirlpool to bring out its intense pithy grapefruit zestiness, and piled in some Nectaron during fermentation to blend in resinous flavour and boost the citrus pith character. Azacca and Talus on the final dry hop brings bouquets of fresh herb, a touch of spice, sweet, sherberty mango and a dose of smooth coconut cream. Kveik yeast brings it all together with its flocculent yeast character and a touch of tartness on the finish.

Birthday TIPA

It’s our birthday and we’ll cry hop oils if we want to! North Brewing Co is six years old! So naturally we’ve made a beer to celebrate! Introducing *drum roll…..* Six Times Around the Sun, our birthday TIPA! (It was never going to be a table beer was it?) Six Times Around the Sun is the first TIPA to come from our new brew kit at Springwell! Seriously drinkable, it’s full of bouncy jelly sweet aroma and incredible fruit salad flavour. Idaho 7, Strata and Columbus make up a stacked spread of soft banana, sticky, overripe pineapple and honeydew melon persisting through the drink with sweet and tart freshly peeled satsuma on the finish. It’s the wildest tropical beach party on your tastebuds and everybody is invited!

CONSTELLATIONS Style NEIPA ABV 6.5% Hops
El Dorado + Simcoe + Citra
Starting with a grist of pale malt, oats and wheat we’ve made a full, rounded and slightly dry base for El Dorado, Simcoe and Citra hops to shine. Together they bring a splendour of fleshy pineapple, zesty pink grapefruit, juicy cantaloupe flavour! Tasty right? If you’re finding your subscription box running a little dry of juice towards the end of the month, lucky for you can pick one (or two) from ASDA!

OPEN SPACE Style
Gluten Free West Coast Pale
ABV 4.5% Hops
Simcoe + Chinook
We’re tripping back to the West Coast of America in Open Space. A pale ale made with Best Ale, Cara and Light Munich malt to make a crisp and crunchy base with a deep golden hue. West Coast beers are always fun to make as it means we get to play with some of our favourite classic US hops. A steady dry hop of Simcoe and Chinook boasts sticky grapefruit, lemon, floral bouquets and pine flavours with a spiky pinch on the finish. The best part about this beer? - it’s gluten free!

ATLANTIS Style
Pale Ale

Mosaic + Citra + Galaxy
Light, bright and laid back, Atlantis is a 4.1% soft and crushable pale ale. Made with American Mosaic and Citra hops and Australian Galaxy hops, Atlantis sings with vibrant pithy grapefruit and crushed pine needle aroma and bursts with sweet blueberry and fleshy pineapple flavour, all rounded off with a satisfying bitter finish that keeps you coming back for more.

NORTH x UNITY Style
Sour IPA
ABV 6.0% Hops
Citra + Mosaic + Talus
Made in collaboration with our friends at Unity Brewing Co, we’ve put together a fresh and bright Fruited Sour IPA. A simple grist made with extra pale malt, oats and wheat creates a rounded and fluffy base that plays host to mounds of fruit and hops. Seasonal plum brings an initial cut of drying tartness and sour grape with blueberry following with its unmistakable quenching berries, sweet vanilla and tannic qualities. A balanced dose of Citra, Mosaic and Talus hops exchange with the fruits, enhancing their characteristics and finishing the beer with a smack of smooth coconut.

NORTH x BUNDOBUST Style
Salted Lime Sour
ABV 4.2% Hops None Our second collaboration with Leeds Street Food royalty, Bundobust. We’ve taken our original collaboration recipe and swapped the lemon for lime. A tart, clean, dry and incredibly refreshing sour beer made with dewaxed lime zest, freshly squeezed organic lime juice and salt. The perfect accompaniment to Bundobust’s vibrant and delicious Indian Street Food, or your own home cooked Indian dishes! Thank you please!

GUEST BREWERY
Established in late 2019 and based in Hoults Yard, Newcastle, Full Circle Brew Co is this month’s guest brewery. Their range includes four well-developed core beers and is complemented by monthly seasonal releases, exploring a range of exciting styles and flavours.

The inspiration for the brewery’s name comes from 3 generations of family businesses. Brewery Owner, Ben Cleary’s grandparents were in the pub/beer trade, while his parents got into the wine business, and now Ben has moved towards the beer industry – thus the family has come Full Circle.
