The team at the brewery are split between which is the favourite (I think mine is our collab with Japanese brewery, Vertere). Let us know which one you prefer - we have an active, friendly community on Facebook chatting all things Beer Club.

We also have our collaboration with Yakima Chief Hops in this month’s boxes. In 2020 we were approached by YCH to test a trial product that they were developing. We brewed a single hop IPA with TRI2304CR which was one of our favourite beers brewed last year. YCH really enjoyed the way that we approached working with the hop, and invited us to be part of their global launch of Cryo Pop. Cryo Pop evolved from TRI2304CR and gave us an opportunity to build on last year’s experience. The beer is full


THE PARIA PAPERBOY IS BACK! What is the Paria Paperboy? A 50-60 (ish) mile cycle ride around Yorkshire, with some excellent beers, great cycling apparel, street food, and charity fundraising all thrown in.

This year we’ll be assembling at our new North HQ, Springwell. We’ll meet bright and early for coffees before setting out on a challenging ride through the hills of North Yorkshire, with pit stops at North Bar Harrogate and North Bar Social along the way. Some (slightly more elite) riders get their heads down taking the hills in their stride and racing to be the first back to the brewery. Others get caught up in schooners of Transmission at the first pit stop and take a little longer… Back at Springwell we’ll be pouring Victory Pints of North X Paria IPA for each rider and continuing the fun. Street food will be available from Little Bao Boy and Kerbside Kids.

WELLBEING TEAM THE WORK OF OUR WELLBEING TEAM HAS NEVER BEEN MORE IMPORTANT AT NORTH Although the bars have reopened, and we’re brewing and working from Springwell, the impact of the pandemic is still at the forefront of our minds. Things have become very busy very quickly (it turns out opening a very big taproom is a real undertaking!) and the Wellbeing Team have been encouraging us to relook at the way we approach the working day.


Volunteering at Kirkstall Valley Farm This month we headed to Kirkstall Valley Farm to get digging and prepare for planting parsnips. We managed to dodge the rain showers (mostly) and cleared an entire patch between us. The farm is modelled on Community Supported Agriculture, selling veg boxes to local residents to support the development of social and educational projects on the land. They are also supporting local food banks with fresh fruit and veg. Christian kept us entertained with some fun facts - apparently 10% of all men are colour blind - and Sarah got very into digging out the biggest root possible. We’ll be heading back to the farm for more volunteering over the summer and are keeping our fingers crossed for sunny weather. There’s even talk of a picnic and beers!

NORTH X YAKIMA CHIEF HOPS Style

Through scientific methods that we can only begin to understand, Yakima Chief have brought together all the best qualities of the hops that we love to see, taste and smell in a New England IPA, into one single product. Particularly focusing on strains that are best utilised when it is added to the beer during fermentation, CRYO POP brings a mega blast explosion to the senses. Tangtastic mango, bright and luscious pineapple and papaya, pangs of passion fruit and lime and a scoop of creamy coconut make for one popping single hop IPA!

NORTH X CHOW DOWN Style

Mandarin + Orange Pale

We’ve collaborated with the team at Chow Down to produce a ridiculously light and juicy sunny delight of a pale ale for the summer months. Chow Down is an outdoor food, drink and music festival which has popped up in Leeds and provided some much needed fun in the face of the pandemic! If you’re in town we highly recommend booking an afternoon there. And the beer? Extra pale malt, naked oats and wheat combine to make an incredibly delicate and smooth body, Mandarin Juice and Orange Zest bring ALL the juice! We finished the beer with a sprinkle of Citra and Azzaca post fermentation to finish the beer with a gentle zing of tangerine, pineapple and passionfruit.

NORTH X MAD SCIENTIST X SIMPLY HOPS Style DIPA ABV

Hops Eclipse We hooked up with Budapest’s Mad Scientist via the magic of Zoom to brew a DIPA. Mad Scientist are known for their outlandish flavour combinations and experimentation. Sam and Hugo brewed with Mad Scientist over at their place in 2019 during Budapest Beer Week! Now, we’re playing out at our house! The DIPA is filled with extra pale malt, heaps of naked oats, a generous dose of wheat and has come out pillowy soft. Our house yeast has moved its way through those sugars and left behind loads of lovely fruity esters. Simply Hops have provided us with Australia’s latest hop offering, Eclipse, lacing the beer with loads of sweet and pulpy orange marmalade, bright citrus zest and prickly pine needles.

TFG + TAYBERRY Style

Triple Fruited Gose

ABV 4.5% Hops None Our signature thick, slick and salty Triple Fruited Gose recipe made up of a big dose of oats, ale malt, salt and lactose infused with Organic Tayberry sourced from the Scottish Highlands. It’s raspberry, but more. Earthy and aromatic juice filled Raspberry upfront with succulent tart blackberry in the background and a dry tannin finish.

TFG + STRAWBERRY + GOOSEBERRY Style

Triple Fruited Gose

ABV 4.5% Hops None TFG number 2 in this month’s box… this time infused with pure organic Strawberry and Gooseberry puree. Sweet strawberry upfront with tart gooseberry backing it up. The result is a super jam filled beer, with a dry green tart mid and a sweet rounded finish. Get in the sun and this’ll do nicely.

NORTH X VERTERE Style Triple Fruited Gose: Peach + Brown Sugar + Cinnamon ABV 4.5% Hops None Brewed in collaboration with our friends in Okutama, Japan we’ve created a new TFG. It’s our signature thick, slick and salty gose recipe made up of a dose of oats, ale malt, salt and lactose this time infused with pure organic peach puree and brewed with cinnamon and brown sugar on the hot side. This time with Vetere’s guidance, we’ve tried a new souring technique which has brought through a much clearer and clean line of tartness to the TFG. Cut up some peaches into halves, remove the pit, place a knob of butter in the middle, sprinkle with brown sugar and cinnamon and bake for 12 minutes, top with cream and serve. Or have a glass of this instead.

ANALOGUE SET Style

Hazy IPA

ABV 6.7% Hops

Talus + Citra + Mosaic

A hazy IPA made using a fine crush of extra pale malt and oats, it’s soft, smooth and loaded with Talus, Citra and Mosaic. We started the beer with our Into the Merzbau recipe and built from there. More oats, a tweak in the water profiling as well as finishing the dry hop with Citra and Mosaic it’s a bounty of coconut cream, lime, succulent pineapple and juicy orange that swirl into a laid back delight of tropical punch.

SEA OF ISLANDS Style

Session IPA

ABV 4.5% Hops

HBC 630

We return to our exploration of low alcohol beers in the Maria and Oceanus Basaltic plains in Sea of Islands. A smooth and creamy sessionable IPA brewed with experimental hop HBC 630. Waves of lemon juice, aromatic peach, subtle sweet cherry and fresh raspberries wash over you and instil calm as you lay still, embedded in the shore.

SPUTNIK Style

Pale Ale

ABV 5.0% Hops

Ekuanot + Columbus + Citra

A hazy American pale ale that has balance at its core. A good malt presence, fermented using traditional english yeast and dry hopped with new world hops, Ekuanot, Columbus and Citra hops. Bold flavours of juicy honeydew melon, citrus grapefruit, ripe mango and a touch of lychee finish with crisp bitterness. The ingredients we use bind together to create an easy drinking pale ale that can be enjoyed by anyone at any time.
