HELLO! Hello from North! This month has seen us playing tetris with the brew schedule! You lovely lot have been drinking more Sputnik and Atlantis than ever before! However we’ve managed to squeeze in some more collabs and have some great new beers in this month’s boxes. We hooked up with our friends at Chow Down for another summer inspired beer to pour at their street food festival. We took cues from their Miami inspired beach vibe and went for a mix of pineapple, sabro and talus for a tropical, thirst quenching beer that cries out to be drunk in the sunshine. When lockdown hit and we were all forced to socialise on zoom things felt pretty bleak! However... there were a few silver linings in the form of virtual collabs! This really opened up

opportunities to collaborate with breweries across the world, and we jumped at the chance to brew with Singapore’s Ren Min via the internet last month. The two beers in this box are some of North’s favourite styles - IPA and TFG! We hope you enjoy them as much as we enjoyed building the recipes. Elsewhere we’ve been busy prepping for a summer of events. Catch us pouring at festivals up and down the country all summer long! WE’RE FINALLY THROWING A FESTIVAL AND TICKETS ARE LIVE! Right here at Springwell, 23rd - 25th September, some of our nearest and dearest in UK brewing are bringing their brews! The aim is for this to be a festival for everyone, not just for the beer heads! We’ve got Bottle Chop bringing a selection of incredible natural wines, we’ve got cocktails, we’ve tequila verdita and tequila margaritas from El Jimador and alcohol free beer from B / R / U / L / O!

We’ve got food banging food from Little Bao Boy, Kerbside Kids, Homeboy Pizza Co. and MorMor, all bringing veggie and vegan options in addition to their usual line up of delectable dishes! We’ve got live sets from our favourite Leeds DJ’s and who knows, maybe some brewers will drop the needle on some sets too!

All sessions are child and dog friendly of course but for maximum family friendliness, Sunday is your day! And obviously, in true North style, Bloody Mary’s will be available all weekend long.

A fresh summer of Chow Down deserves a fresh collaboration! Taking that Miami heat and Chow Down’s new look as our inspiration, we’ve created a beer together made for nothing else other than sunshine sipping with your pals! Pineapple pineapple and more pineapple! This beer is well and truly all about the PINEAPPLE! Sabro, Mosaic and Talus hops are all on the trip, bringing the Piña colada vibes, roof down, shade on and beach bound for a dip in the cool pineapple puree ocean ! Fine and fluffy, highly drinkable, highly sessionable and highly juicy! This is going to go hand in hand with sunshine, friends and family!

Brewed in collaboration with The Square Ball, the Leeds United fanzine and podcast, to celebrate our home team, Leeds United! Citra, Mosaic, Cascade and Chinook hops bring a refreshing and sessionable balance of sweet tropical fruit and crisp bitterness that keeps us sipping on together.

Cryo Pop + Citra + El Dorado

Our third collaboration with Newcastle’s Full Circle Brewing Co brings us to making an IPA perfect for sipping in the sunshine! An extra fine and fluffy base made up of pale malt, oats and chit malt sets the tone for laid back easy drinking! One of our favourite hop combos, Citra and El Dorado, creates a bright squash of sweet fleshy pear, orange and peach with Yakima Cheif’s CRYO POP™ blend bringing a succulent tropical fruit salad medley. The chorus of fruits doesn’t stop there. We finished the beer by circulating it through lemon zest to draw out bright, balmy and tart flavours and aromatics. The result is an undoubtable, proper sunshine refresher!

NORTH x REN MIN TFG Style

Rhubarb, Blackberry + Raspberry TFG

The second part of our collaborations with a place that is very dear to us, Ren Min! You know the drill, our signature thick, slick and salty gose recipe made up of big doses of oats, ale malt, salt and a sprinkle of lactose is infused with ALL of the organic fruit puree! Ren Min had a few ideas about what fruits to put in a Triple Fruited Gose, but one question stood out when we were discussing the recipe… why have we never put Rhubarb in a TFG!? So here we are! Rhubarb takes the stage with its indistinguishable drying tartness and crisp green apple, green grape flavour. Moving through comes Blackberry with another hit of drying tartness but with a banknote of sweetness and complimentary earthy bitterness and finishing comes a zip of juicy and umptious floral raspberry. We can’t write about this beer without mentioning THAT COLOUR! CONTAINS BARLEY + OATS + LACTOSE


NORTH x REN MIN IPA Style

The first of a two part collaboration with a place that is very dear to us, Ren Min! Ren Min is an awesome set of bars serving the freshest and best craft beer in Singapore! They really know their stuff when it comes to beer, so when it came to the brew, they had a lot of ideas! This IPA, like the collaboration, is cross continental! We’ve made a classic North IPA base, fluffy and smooth and dry hopped with a blend of US Mosaic, UK Mystic and NZ Moutere. The result is juicy IPA with a lasting, dry sherbert finish! Upfront fuzzy mango and tart kiwi, rounded sweet raspberry on the mid notes with a fresh pine and zesty lemon finish! A journey in flavour as long as the stretch across the continents this hop bill heralds from!

STILLWATER SESH Style

A crisp dry-hopped session ale comprised of pilsner malt, flaked oats + rice - pulled together by our signature American farmhouse yeast and abundantly hopped with a blend of Citra and East Kent Goldings providing notes of bright tropical fruits with floral earthy undertones.

BEAK x NORTH GATTO Style

Imperial Triple Fruited Sour Cherry Stout

Our addition to Cloudwater Brew Co’s ‘The Mashup’ event, seeing breweries from across the UK collaborate in making beers that blend their most famed releases! We and our very good friends at Beak Brewery set ourselves no easy task in the making of our beer. Beak brought to the table an incredible imperial stout, JURGEN, made in honour of a famous Great British Bake Off ‘Start Baker’ who used one of their beers in one of his creations. We brought our Triple Fruited Gose. Rich and enticing chocolate gateau aroma brings you in for your first sip with a nostalgic whiff of cherry cola bottles and punchy dark roast coffee. A thick and luscious body with big red berry flavours and a long toasty finish is offset with a lingering acidity and a touch of tannins from cherry!

GUEST BREWERY

A VISIT TO THE BEAK BREWERY

We headed down to sunny Lewes to brew with our friends at The Beak Brewery as part of Cloudwater’s first ever ‘The Mashup’ series. Cloudwater invited eight breweries to take part in a series of collaborations with a twist. Breweries were paired via a public vote, and

invited to combine two of their most popular beer styles. The project takes its queues from the world of music, and its fondness for a mashup album. The four pairings will see beers brewed by: → Cloudwater x Verdant → Beak x North → Boundary x Queer Brewing → Track x Overtone




We looked to our signature Triple Fruited Gose recipe, and Beak’s fondness for an Imperial Stout. Together we have brewed an Imperial Triple Fruited Cherry + Raspberry Stout – and we cannot wait to taste it! The Italian Pils that we brewed with Beak in 2021 was one of our most popular beers, and we were so excited to be paired with them again.

Each pairing will work on a collaboration that combines two of their best-loved beers. How they achieve that is up to them. It might be as simple as taking elements of the recipe from each constituent part and piecing them together, or they might look to bring through particular characteristics they were known for. Or they could go esoteric and look to create something that captures the spirit in which each of the originals was created. As part of the collaboration – and continuing the musical theme – the two breweries in each pairing will also co-create a playlist to accompany the beer, giving a sense of the personalities and passions of the folks responsible for what’s in your glass.
