HELLO! This month sees the release of our first ever Beer Club exclusive beer! Shade of the Moon is a ridiculously delicious Imperial Stout which is only available in your boxes, the member area (and a couple of shops in Norway who begged us for some cans!). This beer has been brewed with peanut, chocolate and coconut and has been like gold dust in the brewery! Let us know what you think in the Beer Club facebook group. We also have version two of our collab with Bundobust in this month’s boxes. Our Salted Lemon Sour was one of our favourite beers this summer, so we’ve brewed a lime version too! Keep your eyes on our social media feeds for a North X Bundobust X Paria cycling collab launching very soon. Elsewhere we have our twentieth Triple Fruited Gose. This version is brewed with Strawberry, Blackberry + Blackcurrant and the colour is incredible!
For something a little easier we have a 3% Table Beer. I’ve been drinking a few of these on a Sunday afternoon in the kitchen cooking a roast. This month’s guest brewery is Pomona Island. We sat down with them at The Gas Lamp in Manchester and asked them a little more about their brewery over a few beers. Flip through to the end of the booklet to see how we got on. And finally… we’re turning six and we’re having a party! We’ve got something very special in the tanks for the occasion which will be hitting the taps at Springwell on Saturday 27th November. We’ll have DJs from 3pm, and lots of cake! Little Bao Boy and Kerbside Kids will be on food duty, and the brew team will be out in full force. See you there! Lots of love North xxx

THIS MONTH AT SPRINGWELL HAS LOOKED A LITTLE SOMETHING LIKE THIS…
NORTH x STILLWATER Finally! A friend from across the pond came to play at Springwell! We met up with Brian from Stillwater to catch up, drink a lot of cocktails (Seb looked a little worse for wear the next day) and plotting for 2022 together. Whilst Zoom is great, seeing people in real life is much better. Watch this space.
WE’VE BOUGHT SOME BARRELS! Our original brewery, Taverner’s Walk, is still going strong. We’re laying down our future plans for the site, and took delivery of some very exciting barrels earlier this month. Keep your eyes peeled for our first barrel aged imperial stout coming next year!
HOP SELECTION IN GERMANY Seb headed over to Hallertau, just outside of Munich, to assist in their annual hop selection for UK brewers. We’ve really enjoyed experimenting with the clean, crisp flavours of German hops and Springwell and are excited to see what he chose!
WELLBEING TEAM This month our Wellbeing Team have put on a series of events for the team at Springwell. We celebrated World Mental Health day with a Sunday Roast at one of our favourite pubs, The Cross Keys. We headed to Better Days Cafe for chats on managing stress and nutrition, and held a Peltonathon to raise money for Mental Health charities.
NORTH X OSO We were visited by Patrick from Madrid’s Oso Brewing. Together we brewed a DIPA with Strata, Mosaic and Citra before taking him to Whitelocks for lunch. Tonight we’re heading out for some beers together. It feels really, really good to be able to brew in person collabs again.

Ladies and Gentlemen, we would like to bring chaos to you! Feel it up, turn it up, it’s the return of Big House Waltz! Some of you might be familiar with Big House Waltz, others, this might be your first introduction. We brewed BHW for the first time last year and let’s just say, it made a few waves in the beer community. We put out a public vote at the start of this year asking what beers of ours people want to see return in 2021 and unanimous victory has seen this monstrously tasty DIPA once again return to our tanks! A thick super squishy tropical banger, filled with a hedonistic amount of Mosaic and Columbus hops. Juicy, rich, perfectly ripe stone fruits, DANK and piney. Ladies and Gentlemen meet Big House Waltz.

And all of sudden it was October. We’re in the midst of laid back, crisp, hazy and golden sunlit days and in this Table Beer we reflect exactly that. DIPAs, fruited sours, juiced up IPA and pithy West Coasts are well and good, but sometimes all you need is a simple beer for a gentle afternoon.

Go nuts! Shade of the Moon is a beer made and packaged just for you! Made up of a rich splendour of specialist malts designed to back up the chock load of adjuncts that went into this beer. Chewy and toffee-ish Mild Ale malt makes up the bulk of the grist with Black malt, Chocolate malt, Brown malt, Naked Oats, Munich malt, Crystal malt, Roasted Wheat and Crystal Wheat backing it up with luxurious toasty, sweet, thick and red berry banana fruit and vanilla pod flavours. A dollop of crunchy buttery peanut sits atop a delectable fondant of smooth chocolate with toasted coconut flakes scattered atop. Share with a friend or keep to yourself. This will serve well as a replacement to your usual dessert course.

In Line of Saturn we continue our journey creating delicious and sessionable pale ales. In this version we’ve turned our focus away from soft and juicy and aimed it towards pithy and piney. Line of Saturn takes a crunchy and sweet biscuit base of pale malt and cara pils and brings together modern Bru-1 hops and one of our favorite US classic C-hops, Chinook. An upfront zing of spikey bitterness is followed closely by grapefruit juice, crushed pine needles and fresh cut pineapple. The series will continue in the design, each label is connected through a continuous line guiding you through each beer.

What started as a bit of fun with our friends at Verdant Brewing Co back in 2018 has now grown into something a little bit bigger. Now in it’s 20th incarnation, this Triple Fruited Gose is pumping up the jam! You know the drill, our signature thick, slick and salty gose recipe made up of big doses of oats, ale malt, salt and a sprinkle of lactose is infused with ALL of the organic fruit puree! Strawberry takes the lead with upfront candy strawberry laces and a touch of vanilla, blackberry brings its tart and gently bitter juices with blackcurrant finishing the affair with sweet acidity and concord grape like flavour. Whilst it might be thick and it might be jammy, please don’t attempt to spread this on your toast. CONTAINS BARLEY + OATS + LACTOSE

Lost Cosmonauts has been a part of the North family for a while now. An unsung hero of our regular brews, we’re putting it in the Beer Club spotlight to show it some love! Since we first brewed it back in March 2019 we’ve been tweaking and adjusting the recipe to bring it to where it is now. We started building the recipe from our beloved Transmission, adjusting the alcohol content and dry hopping schedule to a double dry hop to amp up the profile! Loaded with the iconic Mosaic and backed up with Ekuanot and Columbus, it covers a lot of ground on the flavour scale. Fresh piney aroma and flavour are upfront and rounded off with bags of intense sharp tropical pineapple and guava and rich apricot and mango stone fruit. It’s always a good day at the brewery when Lost Cosmonauts is making its way into cans, the underfill box doesn’t last long.

Constellations is our debut at ASDA stores. Starting with a grist of pale malt, oats and wheat we’ve made a full, rounded and slightly dry base for El Dorado, Simcoe and Citra hops to shine. Together they bring a splendour of fleshy pineapple, zesty pink grapefruit, juicy cantaloupe flavour! Tasty right? If you’re finding your subscription box running a little dry of juice towards the end of the month, lucky for you can pick one (or two) from ASDA!

Seasons Reverse makes its second appearance in the North Beer Club box! We first brewed this beer during lockdown for some simple reasons. We missed the pub. We missed pints. We missed pints of cask ale. Now pubs are back open crispy autumn nights are setting in, we rebrewed Season Reverse so that we could actually fill up some firkins and get it pumped through a hand pull in a pub. Sparkler on ofcourse. Chevallier, Crystal, Munich, Amber Malt and Torrefied Wheat provide a fine crunchy biscuit and sweet marmalade base with a clear and rich amber hue. A blend of whole leaf Bullion, East Kent Goldings and UK Cascade allow for a strong bitter line to run through the whole drink and throw bouquets of earthy blackberry, honey and gentle floral pine aroma.

Our second collaboration with Leeds Street Food royalty, Bundobust. We’ve taken our original collaboration recipe and swapped the lemon for lime. A tart, clean, dry and incredibly refreshing sour beer made with dewaxed lime zest, freshly squeezed organic lime juice and salt. The perfect accompaniment to Bundobust’s vibrant and delicious Indian Street Food, or your own home cooked Indian dishes! Thank you please!

We have spent a lot of time pouring beers at various festivals this summer, and made some brilliant friends. One brewery that we spent a lot of time with was Pomona Island and we jumped at the chance to sit down with them over a few beers and find out a little more about their brewery.
WHAT YEAR DID POMONA START? We started at the back end of 2017 with a second hand brewhouse and two open top FVS.
WHAT IS POMONA’S AIM? I think we’re probably already at a point we never thought we’d get to. We’re happy just seeing where it goes from here. We’re our own worst critics when it comes to the beer, but our philosophy is that if we make the beer great, all the rest of the stuff falls into place.
BEER STYLE WISE, WHO DO YOU LOOK UP TO? Beer style wise we look up to a really diverse range of breweries. We love making different styles, so in a dream world we would make lager like Tegernseer, mix ferm like Cascade and hoppy stuff like Treehouse. Of our contemporaries, there are great breweries around us who can go under the radar outside of Manchester like Squawk, Rivington and, since they got a fancy new kit, Black Jack are knocking out great beer too.
WHAT WERE YOUR BREAK THROUGH BEERS? I think a lot of people outside of Manchester started noticing us when we made a TIPA called Ego Tripping at The Gates of Hell. It was the first time we’d made the style, which wasn’t everywhere in the UK at the time, and it came out pretty decent. That got a bit of buzz on the internet which was strange but nice.
WHAT EXCITING PLANS DO YOU HAVE COMING UP? Loads mate. We’re launching our Birthday beers mid November which are a kind of summary of our past year, so they’re all styles we’ve been excited about in 2021. We have loads of Barrel Aged beers coming out in 750ml bottles for xmas including 14 versions of an Imperial Stout that’s been split between different barrels and some tasty Barley Wines. In the new year we’ll have the first fruits of our Mix Fermentation program too.
