HELLO! September is here, and with it arrives another box of beers from your friends at North! This month’s boxes have a real spread of styles: From a more traditional take on a gose (No fruit!? No lactose?!) to some brilliant new DIPAs. We also have two guest beers from Beak in the gold boxes. Beak are old friends of North - they actually cuckoo brewed on our kit a few years ago! We brewed a collab together when they were in Leeds for Hop City, and we cannot wait for it to be packaged later this month. September sees our first in person North Beer Club event. Rob and the team are really excited to welcome you all to Springwell, and show you the brewery. Expect an evening of sampling new beers, touring the brewery and meeting the team behind the beer club.

THIS MONTH AT SPRINGWELL HAS LOOKED A LITTLE SOMETHING LIKE THIS…

NORTH x PARIA 180 cyclists gathered at Springwell bright and early for hot coffee before heading out to take on some hills and cycle 55 miles. Pit stops were made at North Bar Social and North Bar in Harrogate before heading back to the brewery for well deserved pints of Paria IPA. We drank a lot of IPA that day!

OVERTONE COLLAB There are whisperings amongst the production staff that this might be a contender for Beer of the Year… We don’t want to jinx it but Sam sounds very happy with how it’s developing in tank. Keep your eyes peeled for this Oat Cream DIPA brewed with Huell Melon, Galaxy and Sabro towards the end of September.

BEAK COLLAB We’ve been drinking a LOT of Springwell Pils this summer. So we jumped at the suggestion of brewing an Italian Pils with our friends from Beak. It’s cool conditioning as I type and tasting all kinds of exciting.


NEW TANKS 6 x 50HL tanks are now firmly in place at Springwell. 8 months in… who knew we’d be calling for a bigger boat already?!

NEW CANS Finally! Printed cans are here for more of our core range. This might not be that exciting for you, but it’s incredibly exciting for our packaging team. A heady combo of Covid and Brexit have made the supply chain all kinds of fun to navigate. But they’re here, and they look brilliant. Find them in your fridge before too long.

WE LAUNCHED ATLANTIS! Our brand new 4.1% Pale Ale was launched with tap takeovers at Salt Horse in Edinburgh, Port Street in Manchester and The Rake in London. Gold members - find a can in this month’s box. Let us know what you think!

NORTH x PARIA Style IPA ABV 6.0% Hops

Citra + El Dorado + Sultana

Once a year we put the pedal to the metal and ride with Paria CC. Yorkshires finest cyclists mount their two wheeled road eating machines and crunch West Yorkshire’s hills on a 60 mile round trip from our brewery and back finishing with victory pints! (Emphasis on the pints.) Paria CC have a pronounced love for IPA, especially Transmission. Each year we whip together a juiced up IPA guaranteed to quench the thirst of our riders and dissolve the feeling of aching muscles! This year’s Paria IPA sees fleshy pear, honey melon and rich, fuzzy tropical stone fruit take the lead. Sultana hops take a sharp turn and follow closely behind with a strong and lingering citrus zest finish paired with a gritty slightly cranked up bitterness.

TIME IS AWAY Style Gose ABV

3.9%

Hops None A Gose from North like you’ve never had before. No triple fruiting, no lactose, we’ve stripped it right back to the traditional German style. 50% wheat in the grist, salt, coriander seed, a light souring and added twist of Norwegian Kveik make for a light, rounded and incredibly refreshing beer with a touch of clean citrus zest on the finish. Take one of these and sip as time slips away.

CITY OF TREES Style

West Coast IPA

Idaho 7 + Amarillo

City of Trees builds on the recipe from our last West Coast IPA, The Eighth Chamber. In The Eighth Chamber we utilised Centennial hops, known for shining bright when used on the hotter side of brewing. In City of Trees we’ve selected Idaho 7 and Amarillo, both also known for bigging themselves up when used on the hotter side. Added throughout the boil, whirlpool and fermentation, their oils have oozed into a slick base of extra pale and cara malt to create a tacky gum of freshly squeezed pink grapefruit juice, spruce tips, tangerine and lemon all with the classic bitterness and pine we know and love in a West Coast IPA.

NORTH x RIDGESIDE Style Summer Ale ABV 4.8% Hops Ernest Brewed with our friends and neighbours at Ridgeside Brewery to celebrate our home, Meanwood as part of the annual Meanwood Festival. This Summer Ale showcases whole leaf Ernest hops from small British Growers. Made with Best Ale Malt and fermented with Kölsch Yeast, it’s a smooth and frothy ale with subtle notes of Bergamot, phenolic spice, fruity esters and plum with sweet elderflower aroma! We love you Meanwood and we raise a glass to you!

NORTH x NO 18 BREWERY Style Triple Fruited Gose + Apricot + Lychee + Raspberry ABV 5.5% Hops None Our signature thick, slick and salty Triple Fruited Gose recipe made up of a big dose of oats, ale malt, salt and lactose infused with organic Apricot, Lychee and Raspberry. Apricot brings its soft fleshy tropical stone fruit characteristic making this a bellini esque affair. Lychee adds a distinct, gentle and aromatic sweetness whilst raspberry rounds it all of with a zap of tartness and earthy tone.

FIELD RECORDINGS Style

Table Kveik + Mango + Camomile

ABV 2.5% Hops Sabro Wandering through tall grassy fields, seeing what is around us. A metallic green insect you’ve never seen before, babbling brooks wash over stones, the sun glares and the wind brushes the tops of trees. It’s these moments that we sit back and take note. This beer is a recording of one of those moments. Starting with a light grist built with lots of soft wheat, we steeped chamomile flowers into cooling wort. Kveik Yeast works it’s magic and feathers the edges and fluffs an already soft haze. A gentle dose of Alphonso Mango elevates with its sweet and rounded character and a dusting of Sabro hops finish the beer with herbaceous and coconut notes. A beer for sitting back and taking it all in.

EVERYWHERE SUBLIME Style

Fruited Sour + Passionfruit

ABV 3.6% Hops None A light and refreshing 3.6% fruited sour to see in the return of summer! Lots of wheat in the grist gives a light and rounded body. Lemon Zest in the boil, fruited with Passion Fruit and fermented with Voss Kveik makes for a clean, tart and cool sour beer full of juicy tropic flavour.

SPRINGWELL PILS Style Pilsner ABV 4.5% Hops

Callista + Mittelfruh

Springwell Pils has been having tweaks in its recipe throughout the year as we try to land the perfect lager! Different yeast have been used, hops added at different temperatures, malt ratios moved, mash temperatures lowered. This is where Springwell Pils is at right now. Still made with the same ingredients, German Pilsner Malt, Cara Gold Malt, Mittelfruh and Callista Hops. It’s gotten a little smoother, an aroma of freshly baked white bread, subtle and clean freshly peeled orange flavour, a crisp and slightly sharp bitterness and with a herbaceous finish. Sometimes you don’t need Triple Fruited or hop laden liquids, you just need a classic lager. We’re really proud of our Pils, we hope you love it as much as we do!

NORTH x GOOD THINGS Style

Barley Wine

ABV 10% Hops Bullion “BARLEY WINE! BARLEY WINE!” If there are any of you reading that have run into us on the festival circuit this year, you might know why we’re chanting “BARLEY WINE!” right now… Brewed in October of last year, our collaboration with Good Things Brewing has had a nice long maturation in our cold store. One of the great things about strong ales like this one, is that time can shine kindly upon it. Just like a fine wine, beer can be aged. A Barley Wine is a strong ale with an assertive malt presence. One of our favourite things about this beer is its colour, hold it up to the light and see it glow a deep red mahogany! Gorgeous! Combined with English Bullion it’s got layer upon layer of aroma, texture and flavour, each sip turns a new corner! Vanilla, oak, plum, dark red fruits, apricot, toffee, chewy, maple… they just keep on coming! VEGAN / CONTAINS BARLEY


GREEN CURVE Style IPA ABV 6.5% Hops

El Dorado + Sabro

Green Curve is a collaboration with cuckoo brewers, Stillwater Artisanal based in the USA. In this beer we’ve used plenty of oats to make a thick, creamy, opaque beer and fermented with Norwegian Kveik yeast. This, together with a dry hop of El Dorado and Sabro, has created a beer that tastes fresh, bright and zesty! Creamed peaches, soft fleshy mango and a hint of coconut lead the palette whilst heaps of orange zest, pineapple and apricot create a heady aroma.

ATLANTIS Style

Pale Ale

ABV 4.1% Hops

Mosaic + Citra + Galaxy

Light, bright and laid back, Atlantis is a 4.1% soft and crushable pale ale. Made with American Mosaic and Citra hops and Australian Galaxy hops, Atlantis sings with vibrant pithy grapefruit and crushed pine needle aroma and bursts with sweet blueberry and fleshy pineapple flavour, all rounded off with a satisfying bitter finish that keeps you coming back for more.

BEAK BREWERY POPPLE Style

Pale Ale

ABV 5.5% Hops

Idaho 7 + Galaxy + Citra

This new 5.5% pale ale is the result of a year-long journey investigating how best to make lower ABV beers sing. Brewed with oats, wheat, London Fog yeast and an abundance of Idaho-7, Galaxy and Citra, its hazy, pillowy-soft and teeming with ripe, unctuous flavours of peach, passionfruit, mango, pine sap and highly emotional lovelorn lyrics.

BEAK BREWERY SLEEP Style DIPA ABV 8.0% Hops

Azacca + Idaho 7 + Amarillo

This Double IPA has been brewed with wheat and oats along with massive hot and cold side additions of Azacca, Idaho-7 and Amarillo for jammy, pulpy flavours of mango, papaya, pineapple and orange sherbet.

Conceived as a ‘nomadic’ project, The Beak has spent several years creating unfiltered, seasonally-inspired beer with friends at some the greatest UK breweries (their words!), including North Brewing Co, Partizan, Beavertown, Burning Sky and Northern Monk. They have now laid roots in their hometown of Lewes in East Sussex, where they have built a 15-BBL neighbourhood brewery and taproom with a mixed-fermentation project and weekend street food canteen.

We have been so excited to try some of Beak’s beers throughout the past 18 months, and it was brilliant to welcome them to Springwell to brew on our new kit together. We have a clean, crisp Italian Pils conditioning away in the tanks. This should be ready early October. We cannot wait!
