UR country is on the crest of a wave economically but charitable organisations are finding that more and more people are in need of help. Our president, Michael D. Higgins set the ball rolling at the weekend. He said his thoughts are with the homeless and bereaved and he made special mention of those in the direct provision system and those waking up on Christmas morning in shelters, cramped rooms or even out on the bitterly cold streets St Vincent de Paul volunteers experience the reality on a daily basis. Many people who have reasonable jobs and earning an income are the new poor. The Society had its biggest fund-raising day of the year last weekend and deserve all the help they can get between now and Christmas Day. Conferences in the north-west have told us that an increasing number of families can no longer afford to send their children to Third Level education without additional subvention. The challenge of accessing education is described as a "social justice" issue by the charity, which insists more work is required at government level to alleviate the financial pressures placed on struggling families. According to one Conference further south: "We're hearing from single-parent families, to families where one parent is sick and the loss of income has had a huge impact. There was a case were a mother was sick and the father had passed away and the household went from two incomes to one income and then no income at all. "That family wasn't expecting this and they would have expected that they could fund their kids' education so it was difficult for them to come to the society.” We urge people throughout the North-west to donate and give whatever help they can to their local Conference. Funds raised go directly to helping families in the local community - including helping children get from secondary school to third-level education. Fields of Gold – history of Connacht farming launched

or the first time, the history of farming in Connacht has been captured in one lavishly illustrated hardback volume that is destined to become a real collector’s item. Commissioned by Aurivo Co-operative Society Ltd, Fields of Gold is the result of several years of research by award-winning author James Laffey who was granted unprecedented access to the extensive files in the National Archives in Dublin relating to co-operative farming in Connacht and Co Donegal, as well as conducting numerous interviews across the West and drawing on many other local sources.

The result is a 576-page volume that contains over 250 pages of photographs, including many rare and previously unpublished images, some dating as far back as the late 1800s. Aurivo Co-operative Society Ltd is one of the largest indigenous businesses in the West of Ireland, with an annual turnover in 2017 of €426m, export markets in more than 50 countries and a staff of over 700. It’s a remarkable success story, especially when one considers Aurivo’s humble roots, which can be traced back to the late nineteenth century when co-operative creameries were

Christmas Eve is special at Holy Hill

Holy Hill Hermitage in Skreen, Co Sligo is a haven of peace and tranquillity midway between Ballina and Sligo. Everyone is welcome to a special mass on Christmas Eve at 7:30pm, followed by a celebration with tea, wine and cheese in the library. “When you arrive, come to the yellow door…” This really is a truly beautiful way to celebrate mass in a magical setting with likeminded people.

Holy Hill is open to people of all faiths and walks of life and it provides an environment that is naturally conducive to growth in the contemplative life: a simple hermitage, healthy food, a balance of solitude and community, work and play, a quiet chapel and expansive library in a beautiful setting. As well as offering retreats, (they had over 100 retreats this year), additionally they had 20 young adults who came as work retreatants, most staying for a week, two of them staying for 2 months. They also did three school retreats, and a tour for our local Skreen primary school. The month of December was a busy one this year; they had about sixty people for their First Sunday Mass in December. On Friday, 7th December, Ocean FM broadcast a radio program from Holy Hill and then on Saturday 8th they had an Advent Day of mass and Reflection which was open for the public too. established the length and breadth of rural Ireland. Those little dairies became the principal – and, often, sole – source of income for countless families along the western seaboard, providing financial security in an era of mass emigration, and giving the farming community a sense of pride and ownership in their local co-operative. It is no coincidence that when the Black and Tans sought to strike at the heart of local communities during the War of Independence, they targeted creameries, and this book sheds new light on the Tans’ terror rampage in Connacht in the early 1920s, which resulted in several creameries being burned to the ground. The focus on the War of Independence is just one example from a book that combines social and political history with an in-depth account of the evolution of farming in the West of Ireland from the Land League to the present day. In Fields of Gold, James Laffey has produced an intriguing, engaging and sweeping narrative that takes readers from the lush fields of South Mayo to the Finn Valley in Donegal and from the Erris Peninsula to the Leitrim/Cavan border. Fields of Gold is not merely the story of the creation of a modern, multi-million euro business with export markets in five continents. It is an enlightening and inspiring reflection on the lives of past generations; a homage to a very different era in rural Ireland when the co-operative movement aroused a can-do spirit among communities still struggling to emerge from the dark shadows of the Great Famine.

In Mayo the Manufacturing company, Big Red Barn, continues to make waves and will be competing for the final spot in the Manufacturing section (up to 50 employees. Road protests achieve results in Roscommon

HANKS to the relentless protest by a number of concerned residents two dangerous junctions (scenes of many accidents) will shortly be made safe. Much of the credit for this development must go to Noel McTiernan and a group of committed local residents and business people from the area who were reflecting the long-held concerns of neighbours. It all started in October five years ago. Noel had had enough and he rallied the troops and started a concerted campaign to address the concerns over two junctions at Croghan and Cootehall linking onto the N4. He decided to organise a public meeting. It was held in St. Michael’s GAA clubhouse and was attended by over 200 people. Up for discussion was the growing concern within

the community over safety issues relating to two junctions. There was, Noel noted, a sense of “fear” in the room that night. Local residents had been worried for a long number of years. It’s very much a saga by now. There have been numerous accidents over the years…and ongoing fears that a fatality could happen at any time. Over 1,200 people signed a petition, and there was a huge response to an online survey which called for feedback on accidents at either junction, whether previously reported or otherwise. Deputy Michael Fitzmaurice set up a meeting between concerned parties and the TII (Transport Infrastructure Ireland). It went ahead last Tuesday – and it went well. The TII gave a commitment to fund the provision of right-hand lanes at both the Cootehall and

Croghan junctions. The work should be starting in early 2019. Noel McTiernan was contacted to ask if this is what the local campaigners wanted. “Absolutely. We very much welcome this news, but we won’t be claiming a ‘victory’ until the work is actually done. But we’re very happy with how the meeting went”. Noel was anxious to thank committee colleagues for all their hard work in recent weeks. That committee rolled their sleeves up. People power indeed took over. Motorists who had been involved in accidents were spoken to. The online survey sought information not alone on accidents, but also on near-misses. Noel says what secured the TII funding commitment was the revelation about the volume of traffic on the road – and the research which detailed the amount of collisions there have been in recent years. He wishes to thank the committee members for their great work – namely Brian Lee, Mo Robertson, Michael Cryan, Niall Fallon, Paul Duignan and Sinead Flynn. Noel also acknowledged the very positive input of Eugene Dwyer (Senior Engineer) of Roscommon County Council. He was grateful too for the support of local politicians. But he singled out Deputy Michael Fitzmaurice for special mention. Michael said that he would arrange a meeting with the TII and he was good to his word”. “We won’t celebrate yet, but we’re very happy” says Noel. “This was people power in action – we have been living in fear for too long”.

Roscommon County Council among latest tax defaulters list R EVENUE HAS PUBLISHED its latest list of tax defaulters, and said it had recovered almost €13 million between July and September this

year. Included in the list is Roscommon County Council, with a settlement of €456,784 over an underdeclaration of VAT. Hotels, landlords, farmers, doctors and Kerry Airport all make an appearance on the latest lists. The single biggest amount during this time was by the Westenra Arms Hotel in Monaghan, which reached a settlement of €2.5 million. This related to under-declaration of PAYE/PRSI/USC and VAT. The next highest amount was a Tullamore-based plasterer who was listed as having a settlement for €1.8 million. Of the 65 cases, 25 exceeded €100,000 and five exceeded €500,000. In relation to new defaulters in the third quarter of this year, Revenue said the total amount of fines and penalties imposed is €400,000. Revenue also secured over €40,000 relating to the smuggling and illegal sale of cigarettes in this period.

Cuffe’s Centra is one of those iconic family-run businesses that is part of what id Belmullet. Recently had reasons for double

celebrations. Firstly, they cut the tape for their newly-designed Centra Store on Main Street in the town, with many well-wishers

attending. Almost simultaneously they received word that they had been granted the local Post Office from An Post.

The late Eddie Cuffe, a prominent figure in the town, and his wife, Margaret, opened their store in 1986. Margaret still runs the store which started off with three employees and now employs 38, now a significant employer in the region. Cuffe’s was recently awarded a National Q Mark with Excellence Ireland. Among the attendance was Mayo senior footballer Eoin O’Donoghue and his Belmullet clubmate and team captain Ryan Donoghue. They came armed with he Sam Maguire Cup and the Sweeney Cup. The new Centra store, which offers a phone in and delivery service, is open seven days a week from 8.30 a.m. – 9 p.m., Monday to Saturday and 9.30 to 5 p.m. on Sundays. The tape-cutting was performed by Margaret Cuffe and the family is wished every success going forward by the local community.

Yeats gift to Maud Gonne sells at auction for €48,000 Two important books and manuscripts with Sligo connections sold last week at an auction for a combined sale price of over €58,000. An extremely rare book gifted by William Butler Yeats to Maud Gonne has been bought for a substantial price of €48,000. In addition the unrecorded illustrated copy of WB Yeats’ The Wonderings of Oisin had an estimated price of 10,000 to 15,000 euro. The book, which had a dated inscription to Maud Goone, was bought by a private collector of Yeats material and it’s expected to remain in Ireland. It was all part of a memorabilia sale held by Fonsie Mealy auctioneers in Dublin. Auctioneer, George Mealy says the book was a very exciting discovery. But he also revealed there was another Sligo connection at the auction. An original typed script by poet Seamus Heaney, dedicated to Sligo doctor, Philip Murray According to Mr Mealy, there was also another Sligo connection at the auction, as an original typed script by poet Seamus Heaney dedicated to Sligo Doctor, Philip Murray, went under the hammer for €10,000.

The results represent a unique selling point for Irish food exports, proving that farmers are operating with due care for the surrounding environment, resulting in a low *carbon footprint. Chief Executive of Bord Bia Tara McCarthy paid tribute to the achievements of all the finalists, saying: “The farmers chosen as finalists for these awards are already regarded by the industry as being among the very best. Their commitment to sustainable production through the Origin Green programme and willingness to have their achievements judged by a panel of experts shows their ambition to be the best and to make the Irish food and drink industry a world leader.” She added: “These are the farmers Bord Bia will be looking to when we are demonstrating to food buyers the solid foundations on which the Irish food and drink industry has been built and why it is sustainable into the future.”

FIANNA Fáil councillor and former Cathaoirleach of Mayo County Council, Al McDonnell, has claimed that he has never witnessed any deaths as a result of a person driving home from a country pub in Mayo. He also said that he would have no difficulty getting a lift from someone who had drunk two or three pints. Councillor McDonnell criticised

Minister for Transport Shane Ross for introducing strict new drink-driving legislation, arguing that instead of saving lives it will cause an increase in tragic deaths. Cllr McDonnell was speaking at a Joint Policing Committee meeting, which looked at suicide prevention in the region. Cllr McDonnell said that rural isolation was a contributor to suicide and

that the local pub was a social outlet for many people in rural Ireland. He said the new legislation will result in additional rural isolation. “Many people are now saying to me that Shane Ross’s latest bill has turned rural Ireland into a state of social paralysis,” Cllr McDonnell told the meeting. “I would condemn someone with excessive alcohol driving home anytime. I am not talking about those people. I am talking about the person who has two or three pints, who has for 30 or 40 years made their way home. I am a long time around and I have not witnessed any deaths by any person driving home from a country pub in Mayo,” he said. He added that he felt the legislation will result in more people drinking at home and unsupervised. “There will be additional uncontrolled drinking at home and more house parties. This will bring its own serious social problems. Having talked to a lot of people, the latest Shane Ross measures will result in more tragic deaths than it will save. “That is my honest opinion. It is from somebody who doesn’t take a pint, but I am familiar with the social importance of the country person going to the pub for two or three pints once or twice a week,” he said. However, Independent councillor Gerry Ginty told Cllr McDonnell that he could not agree with him and felt there should be zero tolerance to drink driving. “I believe there should be no alcohol allowed if you are driving, not a half or a glass. The consequence are too serious.”

he fifth Women’s Little Christmas Black Dress Ladies Lunch takes place on Sun 6th Jan 2019 in the beautiful setting of Kilronan Castle, Ballyfarnon, Co. Roscommon. Also known as Nollaig na mBan, Ireland is the only country in the world to celebrate the event and it’s very much a Munster tradition that has been enjoyed for generations. That doesn’t mean that ladies across the country can’t join in on the fun. Mary Mc Keon, Development Officer with the North West Simon Community is organising the fifth Nollaig na mBan – Little Black Dress Luncheon for the

North West Simon Community and this year ladies the event falls on Sun 6th. The event starts at 1pm with a complimentary pre dinner drink and canapes in the Dungeon Bar with a pianist, followed by a three course exquisite lunch at 2pm in the magnificent ballroom at Kilronan Castle. Guests will get a chance to browse around various stands after the meal. Dress code is black dress with a prize for the best splash of yellow (The Simon Community colours) just to make the event interesting! So ladies watch out for those yellow accessories!! Judging will be by Mike McCarthy and Paul Carroll who have an award winning blog on fashion, beauty, lifestyle and news worthy stories. Known as the Funky Fashion Frolics, they won best social media award at the Meath Style Awards in 2017 and 2018 where the duo also proudly won the overall in excellence in style award. They regularity MC at fashion events and promise to be a lot of fun. There are excellent prizes up for grabs in the raffle including 2 nights B & B plus an evening meal in Kilronan Castle (worth €400) plus a voucher for Lough Rynn Castle. All proceeds of this event are going to the North West Simon Community, the charity that works with individuals and families in the North West to prevent homelessness. Last year alone the charity prevented 180 from becoming homeless as most of the work is preventative. The feedback from last year’s event was extremely positive and this year’s event promises to be outstanding. The

charity has seen a huge increase in the amount of families presenting for assistance and support and North West Simon Community cannot help these people without your support. Christmas Roast Goose with apricot and sausage meat stuffing and a honey & clove sauce

60 grams of dried apricots cropped 120 grams of bacon pieces chopped and fried 1 large onion chopped and fried 100 grams of breadcrumbs 250 grams of sausage meat 2 tpsp of chopped parsley 1 egg Recipe: Mix all ingredients together in a bowl and season with salt and pepper. Stuff the ingredients into the neck of the goose pushing under the skin and cook with the goose. Honey and clove sauce Ingredients: 4 tbsp runny honey 2 tpsp dark soy sauce

2 tpsp balsamic vinegar 2 tbsp tomato ketchup 2 tsp whole cloves 225ml beef stock salt and black pepper Recipe: Place all ingredients, apart from the seasoning, into a small saucepan. Bring to the boil, then reduce the heat and simmer vigorously for 5 minutes or until the mixture has thickened to a sauce consistency which will coat the back of the wooden spoon. Season with salt and pepper to taste then pass the sauce through a sieve into a clean saucepan. Reheat gently and use immediately or cool and store in the fridge in a plastic container.

Potato cakes with smoked salmon & cream cheese Ingredients For the potato cakes • 1kg baking potatoes • 100g butter, melted • 100g plain flour •1 tsp bicarbonate of soda For the topping • 280g tub full-fat cream cheese • 100ml double cream • zest and juice 1 lemon • 200g pack smoked salmon slices, cut into strips • small bunch dill, fronds picked • 50g caperberries, halved Method 1. Heat oven to 220C/200C fan/gas 7. Prick the potatoes all over with a fork, then bake whole for 1 hr 20 mins or until crisp on the outside and fluffy inside. Set aside on a wire rack to cool. Reduce oven to 180C/160C fan/gas 4. 2. Once the potatoes are cool enough to handle, cut in half and scoop out the flesh into a large bowl, discarding the skins. Mash the potato really well, then mix in two-thirds of the melted butter, all the flour and the

bicarbonate of soda. Season well. 3. Line a large (approx 35 x 25cm) baking tray with a piece of baking parchment and brush with half the remaining butter. Roll out the potato dough on a floured surface, then lay it on the lined baking tray – don’t worry if it breaks, just push the pieces back together once on the tray. Brush the dough with the remaining melted butter and bake for 45 mins or until golden brown on the outside. 4. Remove from the oven and allow to cool on the tray. Meanwhile, put the cream cheese in a large bowl and whisk until smooth and light. Stir in the double cream and lemon juice, and season well with black pepper. Spread the cream cheese mixture all over the surface of the cooled potato cake. Use a large, sharp knife to cut the potato cake into 30 squares, then top with the strips of salmon, the dill fronds, caperberries and lemon zest. Transfer to a serving platter and serve.

Korean beef bulgogi skewers Sweet pineapple is combined with salty soy sauce in a delicious marinade for these sirloin steak canapés great for a party buffet Ingredients • 300g sirloin steak, fat removed • 2 tbsp soy sauce • 2 tbsp golden caster sugar • 2 tbsp mirin • thumb-sized piece ginger, peeled and sliced • 2 garlic cloves • 50g chopped fresh pineapple • 1 tsp chilli flakes or Korean chilli powder • 1 tbsp sesame oil, plus extra for frying • lettuce leaves, to serve • toasted sesame seeds,

to serve • spring onions, thinly sliced, to serve For the dipping sauce • 2 tbsp sriracha or other chilli sauce • 2 tbsp kecap manis (Indonesian sweet soy sauce) • juice 1 lime Method 1. Put the steak in the freezer for 30 mins – it will firm up and be much easier to slice thinly. Meanwhile, make a marinade. Put the soy, sugar, mirin, ginger, garlic, pineapple, chilli flakes and oil in a food processor. Blitz until smooth, then pour into a bowl. 2. When the meat is semi-frozen, thinly slice

into 25 pieces and add to the marinade. Chill until ready to use, but don’t leave for longer than 2 hrs or the pineapple juice will break down the meat too much. 3. Meanwhile, soak small wooden skewers in water for 10 mins. When ready to serve, thread a piece of meat onto each skewer. Heat a griddle pan, or frying pan, and brown skewers for 1-2 mins each side or until grill marks appear. Add a little more oil to the pan if needed. 4. Mix together the dipping sauce ingredients in a small bowl. Serve the skewers with lettuce, sesame seeds, spring onions and dipping sauce.

involves both the mind and body, and a deep sense of wellbeing is not just about happiness but about living in a way that’s good for us and good for others. A sense of wellbeing isn’t about eliminating all the bad things from our lives and only focusing on the things that are good and easy, but rather finding some balance and having the resilience to cope with unusual or difficult situations when they arise. Many of the things we think will improve our wellbeing – wealth, more possessions, or expensive holidays – don’t actually lead to lasting improvements on our lives. So we’ve come up with 10 simple, effective and cheap ways to save money on your bills. Here are a few tips that are free and it’s just a matter of being more energy conscious. 1. Adjust your thermostat By turning your thermostats down by just one degree, you can save up to 3% off your energy bill. 2. Use your central heating wisely Make sure your heating is switched off when you are out of the house. Also, most of us forget to turn the radiators off in rooms we don’t use. This can impact your energy bill. 3. Keep the radiators efficient We all know that ‘bleeding’ the radiators helps them run more efficiently by getting rid of the locked air. But who has the time to check? That’s why we love this ‘Deaerator’ gadget for only €10.99 - it automatically keeps the air out of the radiators, making sure they are as efficient (and warm) as possible. 4. Insulate your windows Plenty of heat is lost through the windows of your home so remember to draw the curtains at night. Also, insulate the drafts around windows and doors (top tip: you can find the drafts easily by holding a lit incense stick around the window to find out where the cold air is coming in). 5. Install a chimney balloon This simple gadget will keep the drafts out and the heat in your room. All you have to do is inflate it up the chimney and it keeps the heat in nicely (please note this is not suitable for gas fires). Cost: €31.99 6. Reflect the heat back from your radiators A radiator reflector works by sending the heat from the back of your radiator into the room, rather than against the wall, meaning you get the maximum impact from your heating system.
