W
ho would have thought that the usually quiet month of January would turn out so busy for Sligo. At the beginning of the month we received a little bit of winter snow which covered the tops of Benbulben and knocknarea, and created some spectacular postcard images. This month our photographers were busy out and about at various venues around the county. The Hawkswell was particulary busy with acts such as Maura O Connell and the Hospital Panto on their itinery. Sharon Conway takes time to chat to Anthony Kilcoyne of Salon2 in this issue. He tells us what's hot and what's not so hot this year when it comes to hairstyles. He also talks about running a very successful business. Miss Sligo Caoimhe Tuohy chats to us about her time as Miss Sligo over the past year and her hopes for the future. We also talk to Jacqui Mulligan, the PE teacher who plays for the county football team and also got a call up from the Irish rugby squad And the best news of all. It was confirmed that Sligo’s bid for the 2014 All-Ireland Fleadh has been successful! The All-Ireland Fleadh attracts up to 300,000 people and generates €40m for the region and will have over 10,000 performers. This is exactly the type of boost that every town wants for their economy. So a big thank you to all on the committee for all their hard work in ensuring that the Fleadh is on its way to Sligo. With a positive news story like this, one would wonder why the local papers didn't take the opportunity to sing it from the rooftops. It should have been the main story and given people some good news when the opportunity arises. This is a story that should not have been relegated to the inside pages. Your month wouldn’t be the same without it!

he Sligo Chamber Annual Dinner took place on Friday 1st February in Castle Dargan Hotel. Well known Sligo Hairdresser and businessman Anthony Kilcoyne chats to Sharon Conway about women and their hair, men and hair loss, upcoming trends for 2013, and the secrets to running a successful business in Sligo with his wife and business partner Deirdre.
A
s a kid Anthony Kilcoyne always loved the idea of doing something creative, something that involved him working with his hands and making things, though hairdressing as a serious career possibility wasn’t considered until later on in his life; “I never planned on getting into hairdressing, it was just something that I fell into over the years. People used to tell me I should try Hairdressing but I'd say to themthat's a woman’s niche, but when I really thought about it, where else was I going to get a job working around gorgeous women all day everyday” he jokes As it happens thats exactly how Anthony met his wife and business partner Deirdre. Together the couple run the award winning Salon 2, which is located on Adelaide Street. Recalling the first time they met Anthony says; “I remember it well because she was running late for her appointment, we got chatting and I thought she was absolutely gorgeous, We just hit it off straight away. Today, she is the backbone of the business, and she keeps me motivated when I need it! Deirdre is not a hairdresser but she has a great eye for detail. She is the business head and we are constantly bouncing ideas off each other. In terms of personality Deirdre is calmer whereas I can get a bit stressed at times, she keeps me in check!” With all the demands of running a hectic
business, do you get time to relax and unwind? “We live in Strandhill, so we both love going for walks on the beach with the dog. I started painting last year and I find it very relaxing, you get totally immersed in it, its a great way to switch off from everything, from the phone, the emails and all that running a business entails.” Anthony has been hairdressing for over twenty five years now; “When we started It was myself, two full time staff and one part time, today we employ a team of twenty four people, part/full-time, reception/admin. So the business has taken on a life of its own over the years. Some of our staff are with us over thirteen years. Good staff are the cornerstone of any business. It's great because we are all creative and there is a creative buzz at work everyday which in turn makes for a great atmosphere to work in. Every day is different, its always a challenge. Each client is like a blank canvass when they walk in the door” So what are the secrets to getting that 'salon look' for ourselves? “Obviously, a good haircut goes without saying, but the products you use on your hair can make a massive difference in terms of condition and vitality of the hair. It's definitely worth investing in the more expensive hair products, a good shampoo, conditioner and a finisher is really all you
need. Hair products are like make up for your hair! I ask women would they be happy to pick up any old make up without thinking about it and they always say 'no way'. They have researched what kind of make up suits them, their foundation, mascara etc, and they use products that are especially formulated for their skin type. Women have no problem investing in good quality make up, so why not treat your hair in the same way? Cheap shampoos are not designed for enhancing the condition of your hair, and they don’t protect the hair colour. You can get away with using a lot less of the good quality products so they will last you for ages. That's why hair looks so much healthier when you step out of a salon, it's all in the products. We use Joico products at the Salon 2. They are a fantastic brand.” What is it that makes someone good at hairdressing, what is the skill? “I think it was in the family as my grandfather had tried his hand at hairdressing too. It was something I enjoyed from day one. I would have always observed people's hair. Anyone can cut hair, to a point, but its more about the vision you have for that person, the finish and the shape. In the words of Vidal Sassoon, 'Shape is the most important part of a hair cut'.”

So would Sassoon be one of your big idols? “Absolutely, I have always looked up to him and admired him. He transformed hairdressing from sets, and he came up with the five point haircut -(Mia farrow, Mary Quant). He died recently but his legacy lives on. I met him five years ago in london at his 80th birthday party. It was a long held ambition of mine to get to meet him.” For women a lot of their confidence comes from having a nice hair style, why is that? “Hair is very important to women, its your crowning glory. It doesn’t matter how you dress, if you are wearing Versachi or Dunnes, if your hair looks right, if its the proper style and shape for your face then everything else will look right. Its a confidence boost when you get a good hair cut, and it lifts the mood! I had a regular client, a woman in her fifties come to me and for years she was afraid to cut her hair because it was so fine. We got her to try a bob and she was transformed. She thought because she had fine hair that she would never be able to carry short hair, but it completely lifted her appearance. Hair is the most visual thing about someone, a good cut can knock ten years off anyone.”

What are the upcoming trends for hair in 2013? “Blonde is coming back this year in a big way. We had a good few years of the glossy brunette, but blonde is making a big come back, blonde with pink tips, funky looks. Dark hair is still big, look at Kate Middleton, she is the icon of dark hair at the moment. If you look at her hair close up you will find five different strands, bronze, deep chestnut, chocolate brown, light brown, caramel, very subtle colour that's done with mesh. The fringe is also going to be huge again this year. “As for bridal hair, you still have the classic chignon which is always very popular, as well as soft up-styles. Brides want something that will hold for the day, but that looks soft and natural , lightly pinned looks are always the best for brides.” And what about men, are men conscious of their hair? “Men are unbelievably hair conscious, and men can be way more fussy than the lady’s when it comes to their hair! Sometimes you have the girlfriends booking appointments for the guys, to get them to try out a cool new
style. A lot of my male clients are very style conscious, its that metrosexual thing. For men this season the clean cut look is very in as are quiffs. And for guys who are receding or losing a little bit of hair there is a new product which is basically micro fibres that you shake into the hair that will instantly thicken the hair. The fibres come in different shades to suit all hair colours. Another product that's becoming popular with the men is a new hair color that basically just tones down the grey in the hair. Men don’t like to have a dramatic change in colour, so this is a very subtle way of toning down grey. For a lot of men their confidence can be knocked when they start to lose their hair, but hairdressing has become so advanced, they are always coming up with new ideas for hair loss. If you have plenty of money then there is hair transplanting, and Rogaine has been found to be effective in combatting hair loss, also, high fat diet has been linked to hair loss, so adapting your diet can help, but in the main, hair loss is genetic.” And as for the future of the business “At Salon 2 There is often a perception that if you don’t book months in advance then you wont get an appointment, but that's not the case. We will always do our best to schedule an appointment for our clients, we extended upstairs so now we have fifteen sections in the salon.” Salon 2 have had a fantastic run with awards over the years and, with the title Connacht Salon Of The Year three years in a row, they are firmly placed on the cutting edge of the hair business; “Awards have always been a major focus for us. We take at least two trips a year to the Sassoon or Hobbs Academy to keep in touch with up to the minute trends. We got to the Albert Hall in London where we came third in Ireland for the 'Visionary Awards' a ceremony run by a panel of hair experts in London. Last year one of our staff Catherine Gormely came first in the Bridal Category of the Irish Hairdressing Federation Championships held in City West. Another member of staff Lynette Moran won the Gents Full Fashion Category at the same awards. You have to keep the creative buzz alive in this business, you cant get complacent. We have put a lot of time and energy into the Salon and our aim for 2013 is to keep doing that!”

Rosses Point beauty, Caoimhe Tuohy is coming to the end of her reign as Miss Sligo 2012, and is planning on going out with a bang with a glamorous fundraising Fashion Show in aid of Cregg House this April. Kate Winter gets the inside story.
aoimhe, you were crowned Miss Sligo in April last year, how has your experience been, and how do you feel about it all coming to an end soon? I’ve had a great year. I’d love it if I had another year to be honest, but all good things come to an end. I’ve really enjoyed myself and I’ve got a lot of modelling work since winning the Miss Sligo competition. I’ve done photoshoots, fashion shows, wedding fairs, even some TV work. I’m hoping that will continue after I hand over my crown, though! Winning Miss Sligo meant you went on to compete at national level in Miss Ireland. How did you find that? From an insider’s perspective, can you tell us – are pageants really as controversial and catty as they are often represented in the media? Yes! There was a lot of bitchiness, actually. I was quite surprised. I won’t name any names, but it was mostly
among the Dublin girls. The girls from there were very competitive. I met really nice girls too, though, from all around the country. There was a real question mark around the organisational side of the pageant; there was a sense that they knew from the start who the winner was going to be, and that caused a lot of unnecessary stress and infighting. That’s right, there was a bit of a scandal around that at the time wasn’t there? (Maire Hughes was crowned Miss Ireland on the night, but shortly afterwards lost her crown to runner up Rebecca Maguire, as she was deemed ‘too old’ to compete in Miss World) Yes, it was horrible. I was really close with Maire. She was with my agency, Catwalk, at the time, so I knew her going into the competition. It was very upsetting because she didn’t do anything wrong. From what I know, she was actually told to lie about her

age – to basically keep quiet about it. Everyone was saying that Rebecca was going to win, and she clearly thought herself she already had it in the bag. If she had been awarded the crown on the night, there would have been an uproar, because everyone felt that it was a total fix. Then when Maire won, we were all absolutely delighted. It was definitely a bit suspicious that, given the circumstances, she lost the crown and Rebecca got it at a later date.
Would that kind of experience put you off pageants in the future? I think I prefer the modelling side rather than the competition element that goes along with pageants. Modelling is more me. There’s more individuality in modelling. I think personality is very important and that doesn’t really come into pageants as much. Did you always want to be a model? How did you get into it, was it by chance or by design? I definitely always wanted to be a model, but growing up I was really shy and quiet, so I was afraid to put myself forward. Then about two years ago I found the Catwalk Agency website online and I just decided there and then to email them. A few weeks later they emailed me back to organise an open casting, and it just took off from there. I did some training in Galway and I got my portfolio done in Dublin, by Lili Forberg –

The Fashion Show in aid of Cregg House will take place on 6th March in The Velvet Room, Sligo. Doors open at 8.30pm and the Show starts at 9pm it was so worthwhile, she’s a great photographer. As a model, your portfolio is your platform, so it’s vital to have a good set of photos. How do you feel Irish models measure up against international models? When you look at the models in the likes of Milan, New York, Paris, they all have a very similar look. They’re all extremely tall and skinny. In Ireland I think it’s more based around the natural female form. In Ireland you don’t have to be stick thin to be considered beautiful. And what would be your definition of beauty? I think it’s all about inner beauty. That really comes across in a person’s

appearance. Confidence is a big thing – if you believe you’re something special, other people will see that too. A genuine personality goes a long way as well. Being happy with yourself is beautiful. You’re studying Arts and Children’s Studies in Galway at the moment. I can’t imagine the student lifestyle and the model lifestyle go hand in hand – how do you find a balance between the two? It’s not too hard! I might get a modelling job once a week, usually at the weekends, so I’d be in college during the week, and maybe have a few nights out then. I’d never go out the night before a job though, your skin does get affected and you never look your best. If I have a
job, I try to leave the party lifestyle for a few days. I’d have a fairly healthy lifestyle anyway, I eat well and I run. The odd wild student night here and there doesn’t do any harm! You’re organising a fashion show to raise funds for Cregg House at the moment, tell us about that. Cregg House is very close to home, just round the corner really, and I’m aware that they are really in need at the moment. They do some excellent work with children with special needs, which is something very close to my own heart. I just really wanted to do something good with my Miss Sligo title, and I felt this was it. For the show itself, I’m using only local talent and businesses
as far as possible. My boyfriend, Stephen Coen, is on the Sligo GAA Senior football team, so he and a few of his team mates are going to be roped in as my hunky male models, and I’m going to find some gorgeous local girls too. Hopefully I’ll be able to showcase a few local designers too. Sinead O’Hanlon Carr and Ray Michael would be great to get on board, I love their stuff. Will you be modelling yourself? Oh I don’t know, I’ll be doing all the organising, which is a lot of work, so I think I’ll probably be behind the scenes for most of it! But I might try and get out in the last few runs, I suppose you’ll have to come along and see!

Le Beau Mâle settles down into a more familiar lavender accord after a while but there are only fleeting traces of the oriental facets contained in the original bestseller. Available in February.

The stack of poker chips-shaped flask for The Game is hardly a subtle hint that this fragrance is intended for (airquotes at the ready) "playas". The composition is a woody-aromatic blend of Juniper Berries (think of a large Gin & Tonic) that fades to reveal an iris heart propped up by a base of dark woods. Not anywhere near as ‘risky’ as the gambling-themed concept suggests, but an accessible men’s fragrance nonetheless. Available from February.

Sandra Coffey Mascara Girl R eaders of Sligo Now may be familiar with Sandra Coffey from her previous life as a journalist for the Weekender where she worked for seven years. Speaking with Sligo Now Sandra said that she always wanted to “embark on my music career”, something she was eager to do for some time. Musicians garner inspiration from many places. For Irish artist, Sandra, her musical interests were sparked as a youngster during long summer days on the family farm in Galway. Her and her siblings would listen to the charts and learn the latest dance moves as the farm work went on around them. Sandra believes that this early submergence in music has stood her well. And as she has just released her first single, she can't help but think back to the innocent days of waiting for the Top 10 to count down and placing bets with siblings as
to who would be number one. Mascara Girl is the first single, taken from Sandra's forthcoming album. Sandra is fasincated by the story behind the single. The song, was written by Trevor Conway, a writer from Dunally Sligo. Trevor has been been writing poetry, fiction and non-fiction for fifteen years. And in this song he gets inside a woman’s thoughts as she gets ready for a date on a summer’s evening. She is trying to make decisions on her appearance and attitude. It’s the thoughts a woman has before she steps out the door, that’s what Sandra finds interesting and complex. Sandra’s interest in recording was inspired by a visit to Windmill Lane Studios in Dublin, where she got to record there as part of an RTE Show, Seoige. Sandra’s mentor at Windmill Lane, Paul Harrington, a former Eurovision winner, described her as having “a powerful

and soulful voice which effortlessly reaches high notes”. The experience in Windmill Lane was hugely inspiring. Sandra always knew she wanted to go back and record in a studio some day. Sandra was keen to record it in Galway, her home city and the Forge Studios was the perfect place. It’s not far from a bustling live music scene and it has the canal nearby, where many an idea was hatched. It also has a photo of Snow Patrol hanging in the hallway. They recorded their some time ago. It took Sandra over two years to be in a position to release her music. She is excited to have finally made it. She is keenly aware of how lucky she was to work with talented musicians along the way. She will follow up her first single with an album in the New Year. Sandra is looking forward to singing live and bring her music to audiences across Ireland and further afield.

Q: How do I apply liquid eyeliner? I love when somebody does it for me but I find it difficult to do myself? Tara A: Applying liquid liner can be a challenge but once you get the grasp of it you’ll think it's easy! Apply your eye shadow first, then pulling your eyelid outwards and upwards use one even stroke to apply the liner from the inner eye outward. Keep as close to the lash line as possible and remember the line should be thinnest on the inner eye and thicker towards the outer corner. You can use liquid eyeliner pens or gel liner that comes in a pot and can be applied with a small eyeliner brush. Q: I am in my teens and have really dark circles under my eyes. A: Dark circles are commonly associated with lack of sleep but they can also be hereditary, related to allergies or caused by a build up of pigmentation under the skin due to sun exposure. There are a few simple tricks you can do at home to reduce the darkness. Place cold tea bags on each eye for ten minutes in the morning and only use an eye gel under your eyes, never moisturiser (keep the eye gel refrigerated for best effect). Remember to drink plenty of water and include lots of fruit and vegetables in your diet for long-term results.

The most common running injuries
R
unning is a hugely popular activity. It confers a myriad of health benefits to active and sedentary populations alike; is cheap to do; and requires very little skill for a beginner to master. However, a typical runner can pound the roads up to 2000 times in a single mile and this places undue stress on the body which can ultimately lead to injury. The main soft-tissue injuries I encounter at my clinic include: • Shin Splints. • ITB Friction Syndrome. • Achilles Tendinopathy. • Plantar Fasciitis. • Muscular Strains. Soft-tissue restrictions can ultimately lead to gross imbalances in the musculature of the lower body, resulting in
poor flexibility and reduced hip and ankle mobility. The most common sites for soft-tissue restrictions occur in the glutes, hip and calves. Regular massage, whether performed by a qualified therapist or on your own with a foam roller or tennis ball, in combination with mobility exercises and dynamic warm-ups, can keep these restrictions to a minimum. Insufficient Rest/Recovery weakens the body’s immune responses and leaves you susceptible to injury and illness. It is important that your training schedule, in combination with sound nutritional strategies, allows the body sufficient time to recover between sessions. Inappropriate Training sur-
faces: Repeated running on hard surfaces places undue stresses on the body thus requiring increased recovery time. If possible, hard surfaces should be avoided in favour of grass or woodland pathways. Sudden increase in training load: Many beginners experience problems when they attempt to up their training too quickly. A safe rule-of-thumb to use is the 10-15% rule which states that you shouldn’t increase your mileage by any more than 10-15% from one week to the next. Note: If you are concerned about a niggling injury that is not going away with rest, it is important that you consult with a Chartered Physiotherapist to ensure that you are not at risk

acqueline Mulligan has played club football with St. Farnans, captained the Sligo ladies GAA football team, represented Ireland in women’s rugby and on top of that; she also is a PE teacher in Mercy College in Sligo. Through hard work she has achieved great success in her sporting career and has a fantastic relationship with her students in the classroom and the sports hall. We caught up with Jacqui to ask her how she manages it all. Do you find it hard to balance training with your work? At the moment with training and games, it’s fairly hectic; it’s that time of year when rugby overlaps with gaelic football. This week alone I have 3 games, rugby game on Sunday and club rugby on Monday and county game on Tuesday. I’m travelling to Galway two evenings a week for rugby, then we have 3 sessions a week for county football and then I’m also out to Strandhill
twice a week for Sligo RFC training. But I am blessed to be a PE teacher, although it’s a challenging profession the bonus of finishing that little bit earlier means I can make majority of training sessions. The added bonus of teaching at Mercy College allows me to avail of the fully equipped gym so I can get a gym session in the morning before I start work, adding to that Sanovitae Leisure Club at the Clarion Hotel has come on board with Sligo Ladies for 2013 so their facilities gives the added of bonus of gym and pool for recovery session which is great especially after tough weekend of games. You are a PE teacher; what are the enjoyable things about the job? Teaching is also different every day. No matter the plan, you need to be flexible. One of the big measurements of my work is that every day is a new day. There are no dull moments. I can never use the same lesson

plans from year to year because the students change every year. The best part of my job is working with the students, getting to know them and helping them to learn, you build a rapport with the students and hearing from students years later with comments about how you impacted their lives makes everything worthwhile. On any given day you may introduce an activity or game that will give a student a skill, passion or love that may last a lifetime and there is nothing better than seeing that student's face light up when they finally understand a new concept or skill. They feel so proud of themselves and that is very rewarding to see. Do the students support your sports career? I’m not sure if you call it support but it amazes me the students that will notice the match report in the local papers, will congratulate you when you
You must be doing something right, on ratemyteacher.ie you have received five stars from your pupils and have been described as the best teacher ever; do you think it is important for a PE teacher to be involved in sports? I must confess I have never been on this site; I wouldn’t be an advocate of a website that the commentator remains anonymous. But I do believe in having set rules with students and treating all students as individual, this helps to build a good rapport with students so maybe that counts for some of those comments. I’m a very passionate follower of “practice what you preach” therefore it’s important for PE teachers to be involved in sports. Furthermore it can enhance the school community when PE teachers take an invested interest in the school extracurricular activities, students appreciate it and it can make coming to school that extra little special for students who find the academics tough. What motivated you to keep playing football, did you have a passion for it to continue on after school? Most find it hard to believe but I was a very much a late comer to football, I didn’t play any underage, starting out my gaelic football career with neighbouring club Castleconnor after I finished my Leaving Cert. During my school days I did a bit of basketball and athletics. It was when I went to college I really grabbed the sports enthusiast bug and started playing soccer along with gaelic. I’m still very passionate about football, the game itself and the teammates who are such great friends even though we aren’t always playing on same team.
Who was the best sports person you have played against? I have been privileged to have played against some of the most talented gaelic football players in Ireland such as Ciara Mc Anespie (Monaghan), Fiona McHale (Mayo) and Joline Donnelly (Tyrone), in most recent times rugby players Ashleigh Baxter (Ulster), Ashling Hutchings (Munster) and Lynne Cantwell (Leinster) and soccer players most notably Marta from Brazil (FIFA Player of the Year) in the 2007 UEFA Cup in Austria. However the best sports person especially after London 2012 Olympics is Katie Taylor. I was fortunate to play on Mayo Selection, a team consisting of the elite soccer players from clubs competing in the Mayo League. In the semi-final of the Senior Cup 2009 we played against Peamount in Milebush Park. Katie started in centre mid that day and was able to get in the tackle and take on the opposition. While she is worthy of her boxing superstardom she was a competent soccer player also. Did you have an idol growing up? Who did you look up to and why? From an early age I supported Manchester United and to this day I am still a big fan of Roy Keane. Although some may see him as a trouble maker and the reason we didn’t win the World Cup I am a big admirer. Roy didn’t possess the skills of the Ronaldo’s or Messi’s but he worked so hard for all he achieved, whether he was playing a game or even just a training session he gave it a 100%. Roy was exceptional on the pitch and inspirational of the pitch and this was evident with his fairy-tale journey with Sunderland. In some ways I feel I replicate those qualities, I will never be known for my exceptional skill but I approach sport with all I have. How do you like to spend your free time (if you have any left!)? Even though sport takes up the majority of my time and requires a lot of sacrifices I’m no different from my peers. I enjoy socialising with friends, spending time with my family and especially my nieces and nephews. Although it is hard juggling teaching with sport as championship and Interprovincial rugby is during holiday, I try to get in one holiday a year, this just gives me time to chill and take a break from all the hussle of life, when you come back it gives you an all new fresh zest of energy.
How do you pick yourself up after a losing a match? Winning and losing go hand-inhand when it comes to sports. I sometimes describe it as "the thrill of victory, the agony of defeat." After loss I tend to examine why we lost the game. Questions like did I do everything possible to prepare for the competition and did I gave it your all during the competition are my initial thoughts. I then analyse mistakes I made. Then I try to work harder to get better, I train more, or I train better. Correct whatever mistakes were made during the match. What are the highlights of playing with the Sligo GAA? There have been many milestones reached since I joined Sligo Ladies twelve years ago. But the highlight for me is still the 2004 playing season. Kathleen Kane, a former player took over reins as manager of the county team and brought a super management team in with her of Annette Kearns, Patricia McDonagh and Shane Quigley. At that stage Sligo Ladies had been struggling to compete in later stages of completion. Granted we were runners up in League Final in 2001 and won the Connacht Final in 2003, but the squad was lacking the belief that if we all focused on same result we were capable of achieving so much more. Within a year of taking over we comprehensively won the Connacht final, a competition we had struggled in for years and we qualified for our first All-Ireland in Croke Park. Unfortunately we lost to a very experienced Kildare team but the bar had been set for years to come. Although it took two more years to capture the All-Ireland that year was the turning point in Sligo Ladies. Kathleen was Sligo’s female version of Jim McGuiness long before there was talk of the psychological and physical fitness aspects of the game. Although the management team moved on the following year, Sligo Ladies still is grateful to the belief that was instilled in 2004. You received a US soccer scholarship; did you enjoy the experience of playing a different sport abroad? Playing soccer in Atlanta for two years was once in a life time opportunity I was fortunate to receive. A scholarship to the USA consists of college fees, board, food and equipment for college and the game all covered for. Women’s soccer in USA is re-
ally professional so I got to experience what it is like to be a professional athlete. Sport is on a different level to Ireland, we trained twice a day for six days a week. I was introduced to the importance of resistance training, plyometrics and speed training. During season there were three games a week, Wednesday, Friday and Sunday and it wasn’t unusual to have spectators of 10,000 at the games. We had our own doctor and physiotherapist at all training sessions and if there was a twinge it was taken care of immediately. All of our games were recorded and hours were spent every week analysing them. Nutrition and lifestyle were scrutinised and we had regular meetings with team of nutritionists. Overall it was so different to home but it thought me so much of the importance of all the different aspects to the game, before this I believed your performance was related just to skill and fitness, missing out on all the other building blocks. In 2012 you were picked to play rugby for Ireland in the Woman’s seven squad, did you ever imagine that you would be representing Ireland through your sports career? No I didn’t. While I was in America playing soccer I was called up for Irish trials but as this stage in my career I didn’t see the opportunity to play for Ireland was still alive. Ironically I had only started playing rugby 14 months earlier, it wasn’t a sport I was initially attracted to and wouldn’t have started playing if it wasn’t for Gavin Foley from Sligo RFC. At the time he was coaching tag rugby to TY’s in Mercy College
and asked me persistently for three months. Finally I gave in and decided to try it for at least a week, instantly I was hooked on the game. Last year I was picked for Connacht trials, I got my spot on the Connacht team and we played Interpro’s, from this competition an extended Irish squad was picked. After three training camps, the Irish squad was picked; I was overwhelmed when I made the cut. It has been a busy 2012 but I enjoyed every minute of training and playing alongside nineteen of the top players in the country. What’s the plan for 2013? A month into 2013 and sport is ready to kick off. 1st league game for Sligo Ladies LGFA is this weekend against Longford, ambitions are high that we will perform well in the league and continue our form into championship. We won our first Intermediate Connacht Final last year and we hope to take it a step further to the All-Ireland this year. On the rugby front I am now playing dual status with Sligo RFC and Galwegians RFC. Sligo RFC are now in the Connacht final so will be hoping to retain the title we have won for last two seasons, while Galwegians league has finished we are competing in the Paul Flood Leinster Cup, a top three finish is what we are looking for in order to qualify for the National Cup. Playing Division One rugby is allowing me to progress my skills and game making decisions which hopefully we keep me in the Irish set up. The opportunity to play for Ireland is still top of my priorities.

St Valentine’s Day dining
S
t Valentine’s Day dining is a matter of finding a fine balance. Champagne & wine are believed to lessen inhibitions, but tucking into a rich three course meal washed down with loads of booze will leave you feeling drowsy and bloated. The ideal romantic meal should offer flavour, freshness and a little luxury, and should also look the part. A Google search of the word “aphrodisiac” came up with a few strong contenders for consideration as sexy foodstuffs . Although I found compelling arguments on the net for bananas, I have decided to omit them (way too Benny Hill for my liking) in favour of asparagus, almonds, honey & chocolate (way more demure). If you find yourselves having a night in, here are some recipes for a simple, elegant meal you can prepare for your beloved without becoming a flustered, sweaty mess. Set the table with all your best tableware and glasses, find some fresh flowers, turn the lights down low and download some Marvin Gaye…. For the day that’s in it, camp it up with a pink prosecco, cava or champagne, which would go nicely with both the appetiser and dessert. If you fancy white with the chicken try an Austrian Gruner Veltliner or an Argentinian Torrontes for a fragrant, aromatic change. It is always hard to beat a Pinot Noir from New Zealand if you prefer red wine. Asparagus, goat’s cheese & parma ham bundles These are very moreish, but remember, you have two courses to go. They are intended to be served as an appetiser with drinks. 1 pack asparagus (not remotely in season, but winter vegetables such as parsnips and turnips are, let’s face it, deeply unsexy)

6 thin slices parma ham Soft goats cheese, 150g Chopped chives, I tbsp Sea salt, freshly ground black pepper Plunge the asparagus stalks into salted boiling water for about two minutes, then run cold water over them to cool them. Lightly mash the goat’s cheese with the chives & season lightly. Spread a slice of ham out, place an asparagus stalk in the centre lenghthways then spread 1/6 of the cheese mixture along the length of the stalk. Roll the ham around it firmly and you should have an impressive looking roll. Repeat with the remaining ham & asparagus. Cut each bundle in two and arrange casually but beautifully on a pretty plate. Can be made that morning, but allow to come to room temperature before serving with pink fizz. Chicken with honey, almonds & saffron
2 chicken breasts ½ small onion, finely chopped 2 tbsp runny honey Pinch of saffron dissolved in 1 tbsp warm water ½ tsp each ground ginger, cinnamon and paprika handful flaked almonds 1 clove garlic, finely chopped Juice of half a lemon Sea salt
Cracked black pepper Preheat your oven to 200 degrees celsius. Combine all of the ingredients except the almonds in a flat ovenproof serving dish, toss them around and bake for 15 mins. Sprinkle the almonds over the chicken, return to the oven and bake for a further 5 minutes. Serve over couscous, with the pan juices drizzled all over and the rocket on the side. Serve with couscous (made according to instructions on packet) and rocket or mixed baby leaf salad dressed with 1 tsp lemon juice & 2tsp olive oil & a pinch of salt Little chocolate heart shaped tarts Sweet pastry 165g plain flour 50g icing sugar 90g butter, diced I free range egg yolk Approx 1½ tbsp. cold water Sieve the flour & sugar together with a pinch of salt, then rub in the butter. Chocolate filling 125g dark chocolate 175ml double cream Heat the cream then whisk in the chocolate until melted. When quite thick, pour into the tart cases and allow to set. I decorated mine with rose petals and put it on a vintage china plate. Use your imagination.
Our red wine for February is Apollonio Elfo It comes from Puglia in the heel of Italy – a warm place and a warm wine. It’s produced by brothers, Marcello and Massimiliano, who are the fourth generation of the family to work in the business which was founded by their greatgrandfather Noé in 1870. The grape used in this wine is 100% Negroamaro, unique to this part of Italy. It’s not a well known grape, but its worth getting to know. It produces a medium-bodied, warm and mouth-filling red wine. It conjures up an image of rural Italy, with workers in the fields stopping for lunch in the shade of a tree, because it’s, ya know, warm, over there … hunks of bread and cheese and meat and glasses of the local vino to wash it all down. In Ireland, however, it will prove a wonderful accompaniment to red meats, especially roasted, aged cheeses, liver, game or pasta with a rich sauce. Offer price €10.99.
