This zingy slice by Mount Maunganui’s Gratitude Eatery is a sweet treat minus the refined sugar, gluten and dairy.

cup cocoa powder
tsp baking soda
tsp baking powder
tsp cinnamon
cups cashews (soaked for 3 hours)
cup coconut cream
cup rice syrup or maple syrup
cacao butter (melted)
cup coconut oil (melted)
drops peppermint oil
bars of Solomon’s Gold 55g peppermint chocolate
To make the base, blend vegan butter and coconut sugar in a food processor until soft. Sift dry ingredients into a bowl and add butter mix. Fold together and spread into a 30 x 20cm lined tin. Bake at 160°C for 20 minutes or until firm.
For the filling, drain cashews and place everything into a blender. Blend on high until smooth, stopping intermittently to scrape down the sides. Pour onto the cooled base and spread out.
