In fact, the PEEPSHOW star, who is filming her second season of the E! reality series Holly’s World all over town, is close to releasing a book in which she reveals the city’s hidden gems that most vacationers tend to overlook. Expect to read about two of her favorite foods: chicken fingers from the Peppermill and the Tiger Roll from KOI inside Planet Hollywood Resort & Casino. Here, she shares more about herself and the city. What do you like best about living in Las Vegas? I like the small-town feel with big-city attractions. What “stays in Vegas” when you leave? Nothing. I’m not private at all. What are you most scared of? I’m not scared of anything. Not even failure. What one thing do you wish people knew about you? That I’m a hard worker. Just because I spent a few years at the Playboy Mansion doesn’t mean I’m spoiled. I never was. What would you like them to forget? I’d like people to forget the last time I was on Larry King Live. What word describes you best? Tenacious. Who was your favorite celebrity as a child? Madonna. What’s playing on your iPod? Neon Trees. What’s your food weakness? The nachos from Planet Dailies. They are among the best in town. I like mine with chili. What’s your favorite food to cure a hangover? A sandwich from Earl of Sandwich. My favorites are the Ham ‘n’ Swiss and the Italian.

The tour stops here. Three global singing sensations—Kylie Minogue, Janet Jackson and Ricky Martin—are coming to perform at The Colosseum at Caesars Palace, as Cher takes her final bow. Rhythm Nation Promising a side of herself that’s “more revealing, more intimate and more personal than ever,” Jackson is bringing her “Number Ones, Up Close and Personal Tour” to Caesars Palace. On this tour, including the Las Vegas dates (April 22–23), Jackson will only perform songs off her double-disk Number Ones album. “These concerts are not about special effects. This is a love affair between me and those of you who have supported me and my work for all these years. I’ll be singing and dancing from my heart.” Pop Rock Minogue is taking her “Aphrodite–Live 2011” tour for an around-the-world journey with stops in Europe, Japan and the U.S.—including a one-night performance at The Colosseum on May 22. The tour is named after her 11th album, Aphrodite, which was released last July. Minogue says to expect a “show that will take all of us on a euphoric journey of joy, excitement and glamour.” Latin Superstar Performing songs off his first studio album in six years, Martin’s “Musica+Alma+Sexo” tour comes to Las Vegas, April 30. It’s the first time in more than three years that he’s hit the concert circuit.

There’s a reason for all the whiteness, as celebrity colorist Michael Boychuck explains. “If you take away all the contrasting features, you see the real person—their true skin and eye color—and then you can pick the right hair color to match,” he says. “There is no false view. If there are too many pigments in the salon, it can throw off the skin tone, the eye color. We want to see the real person when they walk in.” Boychuck, who claims actress Kirsten Dunst and celebutante Paris Hilton among his many clients, shares a few tips and predictions on what will be hot as the warm weather rolls in. “Anybody can be any color,” he insists. “It’s what’s right for your skin tone. If you want to be a blond, maybe you don’t go platinum but maybe a golden blond. We’ll individualize it for you.”

“When it comes to betting futures, the biggest key is to look for value in the number,” explains Todd Fuhrman, Caesars Palace Race & Sports Book analyst. So instead of betting the prohibitive favorites (Phillies and Red Sox), Fuhrman says, many players prefer “to look for a team flying under the radar” for a better return on investment. Fuhrman’s advice is to find a team that has addressed weaknesses (bullpen, team defense), has a run-producing lineup, a deep starting rotation and a young pitcher ready to emerge a star (Madison Bumgarner of the Giants last year). One team fitting the “Giants mold” this year, Fuhrman says, is the Milwaukee Brewers, who opened at 50-1. The Brewers odds dropped to 30-1 after they acquired two new pitchers: 2009 Cy Young Award-winner Zack Greinke, from the Royals, and Shaun Marcum, a former Blue Jay star, to join ace-in-waiting Yovani Gallardo in the rotation. “Come October,” Fuhrman says, “good pitching will always beat good hitting.”

Restaurant Guy Savoy Chef Guy Savoy — Caesars Palace Guy Savoy likes to make seasonal transitions with tomatoes. “[It is] my favorite spring/summer ingredient,” he says, “because it is a simple product with numerous varieties that can be prepared very differently—for example, gelée, tartare, crisp, raw or cooked.” Indeed, Savoy often combines several preparations of one ingredient on a plate, such as with his Peas All Around, which features a jellied juice of the young pea, a pea purée and par-cooked peas, all topped by a soft-boiled egg and edible flowers. To feature tomatoes in a similar manner, he says, “I would start with the tomato in its true form and then create attractive dishes by using shapes, colors, textures and temperatures.” Such a creation, Savoy notes, is ideal for any holiday—and that “at Restaurant Guy Savoy, every day is a celebration. Our dishes are ‘festive’ all year long [because they] follow each of the seasons.”

Chef François Payard — Caesars Palace For François Payard, the approach of warm weather is equivalent to the harvesting of stone fruits—cherries, peaches and apricots—in addition to berries and rhubarb. “When the rhubarb arrives, it means that spring has arrived,” he explains. “It is fun to work with all of these fruits because they are so versatile. [Plus] the fruits create a balance. Peaches and apricots can be used in the kitchen for foie gras—the acidity cuts the fat—and in pastry kitchen for desserts. It is the same for rhubarb. It can be used with duck in the kitchen and in pastries.”

Payard also enjoys how stone fruits, in particular, can raise the level of fish, poultry, veal and pork dishes, any of which may be monotone in color and flavor. “If I am using apricots,” he says, “I can dress it up by making a chutney for the [the protein], and if I have less time I can sear them in the pan. The chutney is more complicated and takes more time. The seared apricot is rustic and simpler to make.” As for events such as Vegas Uncork’d, Payard will be on hand for a special Mother’s Day afternoon tea and dessert demonstration, presenting his unique twists on French pastry. But expect solid tradition on July 14. “For Bastille Day, we always make the same menu,” he insists. “It has to be a very classical French menu. People are coming to celebrate Bastille Day. They want to see what French people are eating.” Except, maybe, when it comes to dessert—which is when the fireworks start (literally) and Payard serves a baked Alaska with sparklers in it. No matter what the season or the tradition, a little fire in your meringue-topped ice cream is sure to spark a good, foodie mood. VP

Krakoff Spring/Summer 2011 collection brims with contrasts, setting curves against angles and transparency against opacity in utilitarian pieces such as tailored pantsuits, oversize camp shirts, painter’s pants and utility belts. Bursts of color and an Asian influence are also rampant in the collection. Krakoff was inspired by a karate jacket, interpreting its sportiness and simplicity as sexy, and included those elements in his own collection, which he says “is a luxe take on the irreverent.” His favorite spring piece is an extraordinarily soft lacquered-silk wrap dress. “There is just a liquid sense to the fabric,” he explains.

This, he says, and the fact that fashion is the synthesis of all things he loves— creativity, travel, art and business— led him to the industry via Parsons The New School for Design. “Design makes its way into every part of my life,” Krakoff says. “There really isn’t much of a separation” between work and everything else. His appreciation for all forms of art and design has shaped his personal collection of 20th-century décor, art, furnishings, paintings and sculptures, and inspired his work. Being fearless and steadfast is the key to his success. “The most interesting ideas are the ones that are told No,” he says. “This is a very critical industry.” And he enjoys working in a business that is so open-ended and ever-changing; one day he’s sketching, the next he’s at a photo shoot, and the day after that he’s working on a store design. “If you love what you do and do a good job at it,” he says, “you end up in a good place.” VP

Who is the John Varvatos man? He’s a guy who’s confident in himself, his life and the way he puts himself together. He’s not afraid to try different things. He’s not looking to wear a uniform. He wants to kind of mix things up and be eclectic with his wardrobe. Your collections and ad campaigns walk hand-in-hand with rock ’n’ roll. How have you seamlessly blended the three-piece-suit-for-a-rocker look? I think there is a little rock ’n’ roll in every guy. We dress a lot of business people. There is a casual elegance about the brand, and I think that’s why we can take a three-piece suit and put it with a scarf or something else to bring another element to it. What inspired your Spring 2011 collection? It was about light layering. Whether it’s Las Vegas or New York or Milan, you come inside and it’s cool with air-conditioning, but then you go outside and it’s hot. You want to be able to add to and subtract from your wardrobe. That was the thought process that drove it into the color palettes which are soft blues and grays, white, black and little pops of yellow. We did fine-gauge lines, silken linens, silken cashmeres, and we spent a lot of time developing fabrics and yarns more than ever before because we really wanted to reinvent things so that they were as light as a feather, ideal for layering.

Music has always inspired John Varvatos. His ad campaigns for his main collection—shot by Grammy®-nominated music documentarian Danny Clinch—have featured such legendary icons as Iggy Pop, Alice Cooper and Velvet Revolver. This year, the label built by the kid from Detroit celebrates its 10th anniversary. Vegas Player recently sat down with Varvatos inside his Forum Shops boutique.

Back in 2004, you had a unique line for women. Any plans to bring it back? We were quite young as a brand when we took on women’s [styles], and it turned out to be a bit of a monster for the organization. We decided, even though it had been doing well, to take it off the plate. We thought we would come back to it sooner, but we have been so busy with the men’s [line] growing so fast. It’s finally back on the plate for 2012.

Denim Tips from the Project Runway Mentor Beloved fashion icon Tim Gunn dazzled fans with a recent appearance at The Forum Shops at Caesars to celebrate the release of his best-selling book, Gunn’s Golden Rules, and to host a Lucky Brand fashion show. The stylish Gunn also chatted with Vegas Player about his book, karma and denim. In Gunn’s Golden Rules, you go beyond fashion, devoting chapters to relationships, life and career. Why reach out to a broader audience? I wanted to write modern manners for the digital age. I thought “etiquette” sounded so stuffy. I wanted this book to be an antidote to all the bad behavior that is around us and at the same time have a positive voice. So I wrote it as though I were talking to my students who were about to graduate and enter the broader, bigger world. I wanted to give them lessons about how to navigate the world with respect and responsibility. While I wrote this, I began to pepper it with personal anecdotes and observations and it really became a very different book than what I had intended. It was a very organic evolution. You’re always trying to inspire, encourage and help others. How have you maintained your integrity? Oh, it’s easy. Twenty-nine years of teaching has given me a tremendous amount of resources for nurturing people and looking for their positive side. As is the case with Project Runway designers, I just want them to succeed and attain the highest level of achievement they can for this particular moment in their lives. My favorite quote from the book is “How do we become more respectful and further our own goals at the same time?” You state these are not mutually exclusive, but are mutually beneficial. How so? Fundamentally, you have to subscribe to that belief to begin with and a lot of people don’t. I talk about [the fact that] how we behave comes back to us and if we behave respectfully and responsibly we get that back in return. If we thrash out and drag a big rain cloud around with us that’s what we get. Denim is tricky for women. What is your advice to women about finding the right cut for them? Denim is tricky for everyone. Many women have a smaller waist and wider hips. In my experience, a low-rise jean will fit them best because you don’t have to worry about the waist. Some women shriek and scream running from me, saying, “I’m forty-five years old—I can’t wear low-rise.” I say, “No, no, no, we aren’t going to show bare midriff. We aren’t going to show the waistband of the jeans; it’s about the fit.” What denim trends should we expect this spring? I am all for darker washes because you can wear them anywhere. And for women, a jean that falls straight from the widest part of your hip is, generally speaking, the best-looking fit. No taper. No flair. A straight leg benefits most people. VP

Following the Birth of Twins and a Two-Year Hiatus, Céline Dion Returns to Caesars Palace World-famous singer, multiple Grammy®-award winner and recent new mother to twins, Eddy and Nelson, Céline Dion is back on the Strip and happier than ever. “I still have the passion for performing,” she says. “I still like to sing and be onstage, and The Colosseum wanted me again. I’m excited to be wanted and to be loved.” Dion’s decision to return to The Colosseum at Caesars Palace, where her triumphant five-year run brought back glamour to Las Vegas and attracted such stars as Elton John, Cher and Bette Midler, came as she was touring the globe. “I’m just ready,” a glowing Dion says of her return to the arena she created and the stage on which she triumphed for so many years. Fans also are ready for her homecoming in Las Vegas. The Colosseum did record sales within days of her new show going on sale. The show, Céline at The Colosseum at Caesars Palace, opened in March and differs from her previous Franco Dragonedirected A New Day… production. This time around, under the direction of Ken Ehrlich, the vibe is all about the music and the beauty of Dion’s voice. Famed for producing several of Dion’s television specials, Ehrlich also has produced and directed specials with some of the biggest artists in the world, including Eric Clapton, Faith Hill, Elton John, Paul Simon and Christina Aguilera. In the new show, Dion performs with her 31-piece orchestra and band. “This show is completely different,” she says in an interview a few weeks before the show’s opening. “It is a gift for me to go back onstage with an orchestra. It’s a dream come true for an artist to be able to have so many musicians enhance the beauty of the music itself. If we go into a recording studio or if we do an Oscar night and you have thirty musicians, it’s a thrill. But it happens very rarely in your career. To have this luxury every night, it can’t get any better.” Dion continues, “We are going to have magic moments onstage, costume changes, light extravaganzas and special effects. There are going to be surprises. We want to please our fans with every show. We have a sense of show business and we know what fans like. My career has been based on beautiful songs. It will be up-tempo. We can’t just be singing lullabies for an hour and a half. It will be beautiful, but different.”

This second go-around also has been different for Dion and her manager husband, René Angélil, as they balance her career with caring for the twins. Dion famously took time out of her career to enlarge her family—the couple also has a 10-year-old son, René-Charles—and has spent the last few months steeped in the joys of motherhood again. The twins were born October 23. “I’m supported with so much happiness right now,” she says. “When I was pregnant, I did many meetings for the show. When I gave birth to my two (new) sons, I was not thinking of the show because it was already decided. My main work was for me to rest, heal and be with my children. I’m intense in the motherhood job. That’s for the rest of my life, and right now, it’s going very well. Sometimes the kids come with me to my dressing room, but most of the time they will stay home because they are very small. There are ways in life to organize yourself.”

“I love singing. It’s an amazing way to express yourself.” Since the family resides at Lake Las Vegas (as opposed to other performers who stay at hotels or even fly back to Los Angeles after each act), juggling motherhood and her show at The Colosseum for the next three years is an easier proposition for Dion, who also has homes in Montreal and Florida. “We love living in Vegas. At first I wasn’t sure if it was going to be a home, but very rapidly it became one. We’re on a golf course and it’s not too far from the Strip. There are families and schools; people go to work and have dreams. There’s life. It’s not only about casinos. There is stability for my family, and the people at Caesars Palace always ask us if there is anything they can do to make it easier for us.”

A Passion for PERFORMING

When Dion started her first run at The Colosseum, one of the specifications was that humidity be added to the stage and dressing rooms. The dry air of Vegas can cause performers to suffer the malady known as “desert voice.” “They trusted me and I trusted them,” Dion says of The Colosseum’s staff. “At first, it was very complex. They built amazing equipment to produce humidity every night. I am a hundred percent sure this is what saved my throat. It’s difficult when you live in a desert environment; it’s dry and it cracks the vocal chords. If you are a singer, you know that. Once in a while, on days off, I would go to play a few holes of golf or swim outside or shop for an hour or two but I have to say when I went out for a couple of hours, I felt the difference.” Dion isn’t one to rest. In between her Vegas gigs and the birth of her twins, she launched a global tour. “Touring is a wonderful chance to see the world and to learn and to grow,” she says. “Stability is important, too, and that’s what I found in Vegas. It’s a partnership. My fans and I visit each other. I went to their homes and now they are going to come to ours.” Dion often meets with her fans before each show. “I do it for the fans,” she says, “but if I was not passionate, I would not go on. It’s important in my life, and my family is most important. I’m at a point in my life where I don’t need to do what I’m doing; I want to. I love singing. It’s an amazing way to express yourself. I keep doing it for my fans because they still want to see me perform. And I still want to sing for them.” VP

Makes the Scene A Star on Chef Bobby Flay’s Menu

Tequila is an instinctive accompaniment to Flay’s cuisine, according to Mesa Grill partner and tequila aficionado Laurence Kretchmer. “The geographic and culinary connections between the American Southwest and Mexico make featuring tequila at Mesa Grill a natural.” The featured tequilas must enhance the prominent flavors of dishes on the menu, Kretchmer says: “We like to highlight the peppery-ness and citrus fruitiness of certain tequilas with the lively, bold flavors of the food. We look for purity and clean, bright flavors with no other elements masking the spirit’s true essence.” Sipping tequila throughout a meal at Mesa Grill is always fun, but choosing from the restaurant’s specialty margarita list allows guests to sample other flavors that further complement what’s on the plate. The tart yet sweet cactus pear margarita, for instance, matches well with the smokiness of the Yucatán chicken tacos. Unique to Mesa Grill, it’s made with Herradura Blanco tequila, cactus pear syrup and fresh lime juice. The cactus pear syrup gives it its subtly sweet, floral flavor, while the lime juice brightens up the entire drink. Flay loves tequila’s versatility. “Whether it’s in a marinade or a cure, adapting tequila in both savory and sweet sauces is commonplace. We find that tequila works remarkably well in balancing the richness of cream-based sauces.” The crown jewel is the Mesa Margarita—a traditional combination of El Tesoro Platinum Blanco, lime juice and triple sec. Sip this between bites of the cremini mushroom quesadilla, which is filled with Fontina and ricotta cheeses and topped with a fried egg and salsa verde. Right on cue, the tequila and lime cut through the creaminess of the cheese and egg. Though the cactus pear, white peach and Partida margarita are popular at the restaurant, the traditional margarita remains a favorite. “It’s classic,” Kretchmer says. “Clean, pure, lively and delicious.” VP

Love Potions When we think summertime cocktails, “refreshing and fun” comes to mind. Blends of fruits and juices, frozen or on ice, are true spirit lifters. So we sought out Eddie Perales, master mixologist at Caesars Palace, to stir up some cool concoctions. “We’re always looking for something unique,” he says. Cocktail creating, he adds, “is like a blank canvas. You can do anything.” His “Summertime Crush” is a silky sorbet. Perales tapped into the pastry shop for “Opposites Attract,” which combines a rich fudge brownie with the citrus tang of orange and ends with a cherry on top. “Everyone is doing strawberries and chocolate. I wanted to use cherries to highlight the chocolate.”

Summertime Crush This refreshing concoction uses sorbet and an elixir that is created and frozen the night before— well worth the wait. Elixir Combine and freeze overnight: 1/2 oz. orange flower water 6 fresh mint leaves 2 oz. fresh-squeezed orange juice 2 oz. fresh lemon sour 1 oz. orange candy syrup 1 oz. wild berry syrup 3/4 oz. Belvedere Citrus Vodka 3/4 oz. Belvedere Black Raspberry Pour elixir into a champagne flute, about one-third full. Place a small scoop of berry and orange marmalade sorbet on top, and garnish with a strawberry on a sexy pick.

Opposites Attract

Sweet meets tart, and the rest is history. 1 1/2 oz. Belvedere Citrus Dash of orange bitters Small sprig of rosemary 1 oz. Amarena Fabbri cherry syrup 3 oz. fresh-squeezed orange juice 2 oz. fresh-squeezed blood orange juice 1 oz. fresh lemon sour 1 oz. blood orange syrup Combine ingredients in a cocktail shaker filled with ice.

Jonathan Duhamel Claims Poker’s Most Coveted Prize

After a grueling mental and physical marathon, Jonathan Duhamel reached the finish line of the 2010 World Series of Poker Main Event to become the first Canadian citizen to take poker’s most prestigious honor. The 23-year-old outlasted a field of 7,319 entrants to win the top prize of $8.9 million, along with the coveted diamond-encrusted gold championship bracelet. The legendary $10,000 No Limit Hold’em tournament wrapped up in November following a 110-day recess that came after the field had been whittled down to the final nine finalists—known in the poker world as the November Nine. Duhamel entered final table play with a commanding chip lead. While he possessed about one-third of the total chips in play at the start, victory was by no means assured as three different players held the chip lead at various points. After the field of nine had been narrowed down to two, Duhamel and John Racener faced off in a heads-up showdown. This poker duel was witnessed by nearly 1,500 spectators inside the Penn & Teller Theater, and millions more followed the action on the Internet or watched on ESPN. After 42 hands of intense heads-up play, Racener was massively out-chipped. Duhamel, who had played aggressively throughout, shoved all-in. Racener called, and Duhamel’s ace-high won the final pot and gave him the win. The sting of Racener’s loss was somewhat soothed by a whopper of a consolation prize; second place earned him $5,545,955. The 2010 Main Event attracted the second-largest number of players in the tournament’s 41-year history, resulting in a total prize pool of $68,799,059. The young champ, who lives in Boucherville, Quebec, has been making his living playing poker for nearly three years. “All my life I have dreamed of this,” Duhamel told a reporter after his victory. “Now, to have the chance to be called the champion is so amazing. It’s so crazy. I’m the happiest guy on earth right now.” VP

WSOP Circuit to Crown Champion The WSOP Circuit National Championship will take place May 27–29 at Caesars Palace. In the No Limit Hold’em tournament, the top 100 qualifying players from the circuit season will vie for a total prize pool of $1 million and a WSOP Gold Bracelet. Tournament players will have won one of the circuit’s Main Events, made the final table at any of the four $10,000 buy-in regional events, or earned enough points to qualify.

WILD CARD Rise of the Warrior Princess

A Moving Production Matsuri debuted in Las Vegas five years ago, the American version of Japan’s famed Muscle Musical. Besides the name, little else was changed: Matsuri arrived with the same burst-of-energy performances and high action as its widely touted Japanese counterpart. Meaning “festival” in Japanese, Matsuri combines extreme athleticism and precise rhythmic gymnastics in a variety of acts— from jump-rope numbers to foot drumming and the traditional Lion Dance. “It embodies not only traditional Japanese culture, but also contemporary Japanese culture,” explains Megan Belk, president of EBI Enterprises. For performer Ayuri Iisaku, who plays the warrior princess Oiran, coming to Las Vegas was “a dream come true,” she says through a translator. Iisaku took up dance at age seven and began performing in Muscle Musical in 2004 before the dynamic show came stateside. By performing with such “raw, organic energy,” Belk says, the cast leaves audiences “shaking their heads in disbelief at their amazing skills and stamina.” VP
