Las Vegas has always had a wild side. Now it has a circus. Taking its name and inspiration from the days when caravans of traveling troubadours crossed the country to entertain with shows of skill and strength, Circus 1903 at Paris Las Vegas captures the bygone era by modernizing the adventures of the old big-top. You won’t find live elephants— or any animals—for that matter. Instead, the master puppeteers from the highly acclaimed “War Horse” bring to life the exoskeleton giants, Queenie and boisterous baby Peanut, with their own balletlike movements. We also get the wild circus acts we come to expect. Dressed in elaborate early 20th-century
costumes, acrobats leap off a seesaw into intricate flips; a juggler spins and tosses clubs airborne; a family of high-wire walkers tackles the tightrope on bicycles; and a contortionist, going by the name “The Elastic Dislocationalist,” highlights a sideshow act twisting her body into knots. Presiding over it all is ringmaster Willy Whipsnade. The mustachioed man at the helm is constantly interacting with the audience and pulls up several young volunteers to perform tricks with coins, playing cards and pies (that’s a warning for all dads). As he orchestrates a magical time for the children, he creates a sidesplitting experience for the rest of us.

Alternative rockers The Killers proved what it is to be cool when they treated their hometown of Las Vegas to a free pop-up show in the parking lot outside Caesars Palace. The performance, previewing their new album, Wonderful Wonderful, was partially broadcast on ABC’s Jimmy Kimmel Live, including the lead single “The Man.” The Las Vegas natives played a full hour for fans, who watched from balconies across the boulevard at Margaritaville and The Vortex at The LINQ Promenade.

It’s not just arena-level artists either. In November, Caesars hosted the Emerge Music + Impact Conference tailored to rising bands and artists.

“For us, being a leader in more established entertainment, it’s important that we’re engaged with those emerging artists and building those relationships and addressing all aspects of the music industry,” Gastwirth says. It’s worked in the past. Caesars has a tight relationship with Imagine Dragons, a band that honed its skills playing at O’Sheas. The company isn’t stopping with music either. It recently opened a full-scale production studio that can house the filming of movies, television episodes and game shows.

Imagine Dragons, another local act that got its start playing at O’Sheas Casino and in small downtown venues, returned to Las Vegas and raised more than $1 million for The Tyler Robinson Foundation, a nonprofit the band created in support of families with children battling pediatric cancers. After playing an acoustic set at the 4 th annual Believer Gala at Caesars Palace, Imagine Dragons frontman Dan Reynolds said the band is considering performing a pop-up show at the reincarnated O’Sheas on The LINQ Promenade. “I don’t know if it would be the same, but we’re still thinking about it,” said Reynolds.

“Clearly, booking some of that top touring content around our different venues and supporting some of these other things like TV and movie productions, it’s become a very important business in its own right,” says Gastwirth. “I expect we'll continue to grow in this area and keep building on that.”

Giada De Laurentiis admits that her decision to open her very first restaurant in Las Vegas was all about location. “I was getting to build a restaurant from scratch on one of the most famous intersections in the world. I would have been a dummy to pass it up,” she says of opening GIADA at The Cromwell in 2014. So when the opportunity arose again, the superstar chef decided to cross that very intersection to bring her creative Italian dishes to Caesars Palace. Located opposite Bacchanal Buffet, Pronto by Giada is “a more casual, grab-and-go” spot that will give diners a taste of her signature fare. “This will be a great introduction to my food,” she explains. “It’s the lighter side of Italian with a fresh, California influence.” Opening in early 2018, Pronto by Giada will serve breakfast, lunch and dinner.

GOLDEN ANNIVERSARY RAISING A TOAST TO MR CHOW The Caesars Palace outpost of MR CHOW is preparing to celebrate the 50 th anniversary of the legendary brand’s first restaurant, which opened on Valentine’s Day in London in 1968. Those looking to toast the milestone can do so with either a glass of champagne from the famous trolley carrying a half-dozen varietals of bubbly or with a signature cocktail like the 50/50: a mix of Martell XO cognac, sweet Thatcher’s Organic Yumberry Liqueur, red shiso syrup and fresh yuzu juice.

Reba, Brooks & Dunn Country Superstars' Onstage Antics and Chemistry are Comedy Gold BY MARK GRAY

ust moments before Reba McEntire takes The Colosseum stage in Las Vegas with Kix Brooks and Ronnie Dunn, she tells Brooks to “do it.” On cue, Brooks starts belting out Reba’s hit “Fancy” in a Cajun twang. This happens before every show at Caesars Palace. It’s tradition at this point. “That’s a demand that I’ve learned to live with,” Brooks says. “Sometimes you just gotta do what she says. That’s what big sisters do. You’re afraid you might get in trouble. She won’t go onstage until I do it.” “It’s hysterical,” Reba says with a laugh. The trio, longtime friends, first began their “REBA, BROOKS & DUNN: Together in Vegas” residency in summer 2015, which adds up to a lot of Cajun versions of “Fancy.” For the three of them, doing a show together came naturally, much like their relationship.

They also mess with each other—like the time the guys tossed a stink bomb into an enclosure that she was in. “Lately, we haven’t screwed with each other,” Brooks claims. “We have such a history of doing horrible things to each other that you just got to be careful getting that stuff started because it really ends in a dangerous place.”
The country music legends have been performing for sold-out crowds at The Colosseum since kicking off their Caesars Palace residency in 2015.
On this particular day, Reba’s lodging a complaint against the guys, ribbing them that she does five costume changes throughout the show, while they, well, do zero.

“Ronnie and Kix don’t change nothing. That really puts me out a little bit,” she says. “I think they should at least change a necklace or hat or vest or jacket. Kix does walk back and forth a little bit, so I gotta give him credit for that.”

unn’s response, “Listen, I change my shirt every now and then.” Brooks, meanwhile, says, “Well, she’s not paying attention. I’m working really hard at doing subtle changes. If she were watching, she would know. I change a watch. Sometimes I’ll put a coat on. I might take a vest off. I’m a little disappointed. She really needs to watch. I know both those cowboy hats are black, but it wasn’t the same one. I’m concerned that she’s so wrapped up in her own stuff that she doesn’t know all the glamorous things that I’m doing over there.”

Clearly, these three mesh incredibly well on, and off, the stage. As they enter the fourth year of their Caesars Palace residency, the only challenge they continue to face is keeping the show fresh for not only themselves, but also for repeat customers. “The primary thing for us to remember is that people are there to hear the hits. They want to hear ‘Neon Moon’ and ‘My Maria.’ We have to be cognizant of the fact that they want to hear the hits,” Dunn says. “That’s the good and bad news of being around long enough to be, what I call, a franchise act. It’s certainly not a negative thing to have a lot of hit songs.”
And that’s what the show is, a live greatest-hits album from three of the biggest names in country music. “We toured for over twenty years to get to a scenario like this and never did we envision at any time having a residency in Vegas,” Dunn admits. “It’s turned out to be the coolest thing I feel like we’ve ever done.” In speaking about the show, Brooks says, “Everyone is in a great mood, having fun and we got a show that’s well put together. I feel like there’s a lot going on. It’s as big a show as Ronnie and I have ever put on, and we’ve put on a lot of nonsense over the years. I feel really good about the fun factor of this thing.”

unn actually likes the endless competition. “Vegas has changed. That’s an understatement,” he says. “It’s changed to where it’s no longer kitschy acts. There’s major entertainment going on. I’m loving it.”
To many country fans, the fact that this show even happened is probably surprising, since a narrative existed for years that Brooks and Dunn weren’t all that friendly. “I think we kind of egged that on just to create attention and keep that dynamic,” Dunn discloses. “We’ve always enjoyed one another’s company.” When the show began in 2015, that same false narrative still existed, and Reba even played into it, telling reporters that she was going to be the “referee” between them. Upon reminding Dunn about that, he laughs. With all their banter, jokes and music, it’s easy to see why the three of them truly enjoy sharing the stage together. For Reba, she says the guys “add energy and personality, and a little quirkiness” to the show. Despite that fact they all know each other so well (they even vacation together), Brooks says it’s still “surreal” to be sharing the stage with a living legend like Reba. “In one way, we’re used to it, but in another way I can’t think of anybody who I’d rather look over and see standing next to me onstage,” he says of Reba. “And you know that this is going to be big-time pro, because she doesn’t screw up.”
Although the residency world has become a crowded space, the three say they don’t really fret about competing with other headliners performing in Vegas. “It’s competition, but there’s nothing you can do about it,” Reba says. “We do our thing; they do their thing. We totally understand that we might not get repeat fans coming back, but by golly we do. We have so many fans in the audience that we see in the hotel or out walking. We see them and they say they’re coming to see us again. I tell them that if I tell the same joke, you be sure to laugh.”
“That’s funny. If there’s anything, we’re the governing force of her,” he says. “That dynamic doesn’t apply. We’re on top of her all the time. She’s the one who likes to change songs, and we say you can’t do that. She needs the governor, and we love it. It keeps things stirred up.” Would you expect anything less from family?

RESTAURANT GUY SAVOY If anyone knows how to best utilize the truffle, it’s French master chef Guy Savoy. The signature dish coming from his Caesars Palace restaurant is the silky Artichoke and Black Truffle Soup topped with shaved Parmesan cheese, and served with toasted mushroom brioche and black-truffle butter. It’s a decadent dish Savoy has been serving at his restaurants for more than 30 years.
If there were ever a food item not to judge by appearance alone, it would certainly be the truffle. Lumpy, cream- or brown-hued, and sometimes marbled, white truffles can appear like uncut, unpolished gemstones. Black truffles resemble lumps of coal from the outside and are often white-veined on the inside. It’s the flavor that’s captivating, both earthy and ethereal. And the prices are breathtaking: One of the largest white truffles on record (about 3.3 pounds) sold at auction for $330,000 back in 2007. While both white and black truffles are costly, with the price dictated by demand, parings of these uber tubers can go a long way, as they’re utilized to create truly captivating dishes, like this season’s truffle-infused plates.
SUSHI ROKU Diners will find a truffleheavy menu at The Forum Shops at Caesars Palace restaurant. Chefs infuse truffle into numerous dishes including brussels-sprout chips, tuna tartare and Chilean seabass. Two new fall dishes grace the menu: a bamboo-rice risotto served with shrimp, scallops and truffles, and the Avocado “Hanabi” with soy truffle and crispy rice.

Truffles grow underground around the roots of oak, hazelnut, beech and poplar trees, and while many attempts have been made to “seed” or farm them, they mostly occur naturally. Thus they are considered rare, and becoming more so as countryside gives way to urban planning. Traditionally, the two most highly prized varieties of these edible tubers come from Italy and France, and they’re hunted using the sensitive noses of trained dogs and pigs. Italy’s Piedmont region produces the more expensive, aromatic and delicate white truffle—harvested in autumn and sold at a massive fair in Alba in October and November. France’s Périgord province generates the black truffle— late-fall and winter crop.

Captain America How Stuntman Evel Knievel Got His Chance To Jump the Caesars Palace Fountain 50 Years Ago

Daredevil Robert “Evel” Knievel was so determined to jump the Caesars Palace fountain that the then-novice stuntman not only created a fictitious corporation called Evel Knievel Enterprises, but he also posed as a lawyer, a representative from ABC television and a Sports Illustrated writer in making calls to pitch the event to Caesars Palace founder Jay Sarno. Eventually, Sarno agreed. At 141 feet, it was Knievel’s longest attempted motorcycle jump to date. And it almost killed him. The near-fatal stunt, which occurred on December 31, 1967, left the 29-year-old in a coma with a crushed pelvis and femur and fractures to his hip, wrist and both ankles. He was hospitalized for a month. His dangerous failure, however, turned him into a legend overnight and led to a long stunt career that lasted well into the next decade.
