Jordan Levin has been writing about Latin music and pop culture since the early 1990s, including 18 years at the Miami Herald. “I discovered Pitbull when I was writing a story on Latin hip-hop in 2001. When I tracked him down, he came to my house and zeroed in on a huge portrait of José Marti on my mantel. That’s when he told me his dad used to put him on top of bars to recite Marti’s poetry.”

“Fall fashion is rich with amazing textures, patterns and silhouettes. It’s a blend of retro inspiration and modern sensibility,” says stylist Christie Moeller, who orchestrated our fashion story. “We approached this shoot as if it were a short film. Telling the love story between texture and patterns as it relates to fashion, decor and fine jewelry. This spread has it all.”

For the past 10 years, Planet Hollywood Resort & Casino has lived up to its celebrity status. The star-studded grand opening in November 2007 set the bar high and the resort hasnâ&#x20AC;&#x2122;t slowed down since. Bruce Willis, Sylvester Stallone, Demi Moore, Kevin Spacey and Eddie Murphy were among more than two-dozen celebrities to attend the opening and walk the 500-foot-long red carpet, which was located on The Strip outside the resort. Stand-up comic Kevin Pollak and legendary singer Barbra Streisand, who gave a rare 40-minute performance, provided the entertainment that evening. Since then, Planet Hollywood has hosted numerous world movie premieres and attracted some of the top acts in entertainment. NEW ORLEANS CELEBRATES FOOD, MUSIC & MORE New Orleans is famous for food, Mardi Gras, Bourbon Street and Drew Brees. But did you know just a few steps from the best beignets in the city and those parade-route balconies, you’ll find Harrah’s New Orleans tucked away within easy walking distance of the French Quarter? The 450-room hotel is currently undergoing an $8.5 million renovation—with completion expected in October—to update 230 hotel rooms, including the resort’s butler suites on the 26 th floor. In addition, the casino has completed two more smoking and gaming courtyards, adding 60 slot machines to double the size of the outdoor, climate-controlled gaming area. And in a city where cuisine is king, the resort is home to an eclectic mix of restaurants including one from James Beard Award-winning Chef John Besh, Besh Steak. There is also a sports bar serving game day-inspired cuisine that’s named after native son, and former New Orleans Saints quarterback, Archie Manning (dad of Peyton and Eli) called Manning’s Eat-Drink-Cheer; the seafood institution Acme Oyster House, where you can order gumbo, jambalaya and chargrilled oysters; and a Gordon Biersch brewpub. For travelers who want to plan their trip around a special event, late summer and early fall mean football and food. SKILL-BASED GAMES ARRIVE AT CAESARS ENTERTAINMENT PROPERTIES A new wave of gaming has hit the casino floor. Caesars Entertainment has teamed up with Gamblit Gaming to roll out a series of interactive, skill-based games aimed at a younger generation of players. The first two games—Gamblit Poker and Cannonbeard’s Treasure—are now on casino floors at Planet Hollywood Resort & Casino, LINQ Hotel & Casino, Caesars Palace, Paris Las Vegas, Harrah’s Resort Southern California and Harrah’s Lake Tahoe. Gamblit Poker tests skill and speed. Each player starts with two cards and then has to quickly grab additional cards from the middle of the table before they disappear in order to complete the best possible poker hand. Cannonbeard’s Treasure is similar to blackjack but challenges players to get the closest to the objective, without going over, in order to win a chest of gold.

THE NHL SKATES INTO LAS VEGAS Hockey is here! The Vegas Golden Knights will drop the puck on their inaugural season this fall, giving NHL fans visiting Vegas an opportunity to see their team on the road. The city’s first professional sports franchise will be led by former Florida Panthers coach (2014-16) Gerard Gallant. “We want our team to be known for dedication, honor, strength, courage and a commitment to never give up— both on the ice and off,” said majority owner Bill Foley. CAESARS ENTERTAINMENT: A CHAMPION FOR SUSTAINABILITY Committed to environmental stewardship with its company-wide CodeGreen program, Caesars Entertainment continues to encourage team members to get involved in global conservation. Specialty chef Katherene Brookshire embraced that challenge by planting an organic garden in a courtyard at Flamingo Las Vegas. She uses it to teach fellow chefs and employees about food sustainability. “I’ve always been green. I enjoy what I do,” she explains. “Being busy with work, we sometimes have a disconnect with life in general, and the connection we have with our planet. This [garden] connects us and, as chefs, gives us an understanding of our food source.” Brookshire’s chef-run garden was one of two local Caesars Entertainment teams to win CodeGreen Challenge awards. The Las Vegas culinary department won for crafting an organic cocktail with ingredients sourced from local farmers— it’s now served in restaurants such as GIADA in The Cromwell.

With his familiar pitchfork logo from his hit television show ablaze in the famous Caesars Palace fountains, Gordon Ramsay announced he’s bringing Hell’s Kitchen to the Las Vegas Strip. Describing it as “restaurant-theater,” Ramsay believes the “high-octane” spot, which is set to open by year’s end, will become a destination eatery and the home of his reality television series. “I cannot tell you how excited I am. It’s going to be set like a studio with the infamous red kitchen, blue kitchen and the most amazing open plan. Capturing that live essence of the magic that’s gone into 17 seasons of Hell’s Kitchen,” Ramsay explains. “My dream is to bring the live finale here to Caesars Palace and maybe hand the responsibility over to America, and they can vote on who they think deserves to win that ultimate prize.” Ramsay says the dynamic and bustling kitchen will be the focus of the Jeffrey Beers-designed restaurant, creating an immersive environment that will give diners the feeling of being on a studio set. “A key element of our success has always been the diners’ experience, so we are excited for guests in Las Vegas to feel like they too are part of the show—flames and all,” he explains.

There is something about chocolate that takes us all back to those carefree days of our youth when we were rewarded with a taste. As we age, chocolate continues to play a starring role in our lives, often as a decadent treat to cap off a meal. Knowing the popularity of the sweet indulgence and the pure joy it brings, chefs Matthew Silverman and Matthew Piekarski decided to leave the kitchen and get into the chocolate-making business in 2015. After a year of traveling to learn the business, they opened HEXX kitchen + bar at Paris Las Vegas. Their rise to talented chocolatiers has been nothing short of remarkable.

And while large manufacturers mask the taste of their chocolate by roasting the beans at a very high temperature for a more generic flavor, HEXX preserves the nuances and regional flavor identity of each bean. “We want our chocolate to taste like the country where the beans are grown,” Silverman explains. “So every time you get an Ecuador, Peru or Venezuela bar from us, they taste uniquely different from each other.” Today, these modern-day Willy Wonkas are producing up to 5,000 snap-perfect chocolate bars daily and 30 tons of chocolate yearly—all from the small room visible in their Strip-side shop and tasting room. “We want people to come inside and teach them how chocolate is manufactured, how to taste it, and how to appreciate fine-flavored chocolate,” says Piekarski.

Connecting with them through music is incredible.” Pitbull’s aptly named “Time of Our Lives” shows are an unparalleled blast of energy, a beat-driven celebration of partying hard and working harder, of good times and success. Because this son of Cuban political refugees and hip-hop underdog turned self-made superstar and entrepreneur has made his philosophy of going for it—¡Dale!—as important as his music. “There’s no don’t, only do,” he says. “No can’t, only can. Joining motivational speaker Tony Robbins, whom Pitbull credits with moving him forward when he was first struggling to make it in Miami. “Growing up, my mom would play Tony Robbins’ tapes in the car,” Pitbull says. “Listening to him inspired me to look at life in a positive manner.” He’s joined Robbins on several speaking engagements, with plans to do more around the country this fall. “Today he’s my mentor and friend,” Pitbull says of the best-selling author, self-help guru and motivational speaker, who also comes from a poor family that struggled with

and business partnerships that emphasize real world experience and innovation. Speaking to a crowd of cheering kids at their new campus in Henderson, Nevada—Pitbull had a more exciting message. “What we’re doing here at SLAM is teaching you that there are no boundaries,” he announced. “They say the sky is the limit, right? Nah. There are footprints on the moon. We got to go past the sky.” Pitbull, who bounced from school to school growing up and didn’t go to college, now thinks good education is crucial. “Education is power,” he says.

Armando Christian Pérez, grew up in poor black and Latino neighborhoods, where struggle, drugs, poverty and violence were part of daily life, and the heroes were Pacino’s Scarface and raunchy rap godfather Luther “Luke” Campbell. But Pitbull’s dad, who drank and dealt drugs, would set his toddler son up on Little Havana bars to recite poems by José Martí, the hero of Cuban independence. His mother kicked her misbehaving son out of the house at 17, telling him “If you’re gonna go to jail, go for something big. Don’t go for something stupid.” One of his earliest tattoos was “D.I.M.,” for

Pitbull teamed up with Camila Cabello, the rising star from Fifth Harmony who’s also a Miami-raised Cuban immigrant, on the sexy “Hey Ma,” for The Fate of the Furious soundtrack. And he keeps his music fresh by partnering with artists of every kind. On his latest album, Climate Change, Pitbull is joined by Jason Derulo, Stephen Marley, Robin Thicke, Enrique Iglesias (he and the Latin superstar and fellow Miamian are touring together again), and Jennifer Lopez, to name a few. Even now that he’s on top of the world, Pitbull keeps pushing—to have a good time, to reinvent himself, to try something new.

drugs and divorce. “Life has really come full circle. Tony even had the good will of speaking at my Hollywood Walk of Fame star ceremony," Pitbull says. "Tony has graciously included me at various events. I’m so thankful for these opportunities.” He continues, “Music gave me the ability to connect with the world. It sees no limits, and that’s how I want people to see their lives, limitless.” Pitbull is bringing that same conquer-it-all message to young people, via his Sports Leadership and Management charter schools, or SLAM. He opened the first academy in Miami’s Little Havana in 2013. And last September, Pitbull was the main attraction at the grand opening of the SLAM Academy of Nevada in Henderson, just south of Las Vegas. The focus of SLAM is to train students for careers in sports entrepreneurship and leadership, parlaying advanced technology 40

“We want to change the way we relate to education. Whether you want to be in business, tech or the arts, SLAM gives students the possibility to explore their passions.” Just like he did in Little Havana, one of the immigrant, workingclass Miami neighborhoods where he grew up, Pitbull sees his own history in the Las Vegas area, and a chance to do something for people beyond entertaining them.

“Do It for Mom.” [He didn’t move his family into a good neighborhood until he had enough money to buy a house]. When he first began making noise as a rapper, one of his nicknames was “The Blue-Eyed Dog”—the lone white-skinned Latino in an overwhelmingly African-American hip-hop scene. Pitbull sold his CD’s on the street, and hustled relentlessly. And “Mr. 305 Till I Die” made his success a celebration of Miami, of Cubans, Latinos and immigrants—everyone who’s trying to make it.

“We chose Vegas for the second SLAM location because of the people. We researched and saw the chance to make a difference in the lives of others. It also gave me the ability of leaving my legacy in Vegas outside of the [music] residency.”

“When hip-hop started it was just explaining the black struggle,” he told the Miami Herald in 2001. “Now everybody struggles, and it’s no longer about where you’re from, but where you can get.”

Would he like to make the city a second home? “I’m always open to new opportunities. I love performing in Vegas and can’t wait to see what the future brings,” he says. “It’s always important to engage with my fans because without them there is no Pitbull, there is no movement. ¡Dale!”

He admits that bringing his acclaimed Spago eatery from the Sunset Strip to The Forum Shops at Caesars Palace was a risk at the time. But, with a chuckle, Puck reveals he did it so his friends would have a place to eat when the fights were in town. He’s had the last laugh.

TRAILBLAZING RESTAURANT SPAGO CELEBRATES ITS 25TH ANNIVERSARY

Not only is Spago celebrating its 25th year in Las Vegas, but Puck also helped usher in a dining revolution, kicking open the door to chefs from around world. As Puck now tends to his global empire, Spago is headed by Chef de Cuisine Dylan Hallas, who after several stops at prominent Southern California restaurants, packed his knives and came to join Puck’s team. “There is a lot of history here, and there are big shoes to fill,” Hallas admits. But he’s up for the challenge. “I’ve always enjoyed cooking. I have photos of myself at five years old making scrambled eggs. I can barely see above the stove.” While he looks to “inject new life into classic Wolfgang Puck dishes,” like adding Asian-style wings to the menu, Hallas says that many Spago staples will remain. “The smoked-salmon pizza is not going anywhere,” he says of the guest favorite. Instead, he’s reviewing daily lists he receives from meat and produce vendors to select the freshest seasonal ingredients possible to create dishes that are only offered for a limited time. “It gives value to the experience,” he says. “It’s a unique kind of plate that is not necessarily repeatable.”

Sip & Savor Hour takes over the café daily from 3 p.m.–6 p.m. with food and drink specials, including $5 glasses of wine. And Sunday Brunch, which starts at 11 a.m., remains a Spago staple. “We tweaked the brunch menu,” Hallas says. “We’re doing a really nice Bloody Mary cart, delicious crab deviled eggs and an amazing eggs Benedict.” 42

When did you realize you could go from cookbooks and photography books to opening the world’s first foodonly photography gallery? When I decided about a decade ago to create a cookbook, I saw an exciting opportunity to do something new in food photography—to portray food in unexpected ways. Almost immediately after our first book appeared, people started asking us where they could buy prints of the photos. After a lot of research, it became clear that the only way forward would be to open our own gallery.

People from different parts of the world will identify with certain images based on the foods they grew up with. While some people will want the familiar, others will gravitate toward the exotic. We’re always on the hunt for charismatic foods from all corners of the world. Which food photographs are hardest to take? Every shot has

Nathan Myhrvold has had a passion for science, cooking and photography since he was a boy. In 2011, he combined these interests and founded Modernist Cuisine— a team of research and development chefs, photographers and scientists—and published a five-volume, 2,438-page book, Modernist Cuisine: The Art and Science of Cooking. It was so well received that other massive books followed. As the team readies to release the five-volume, 2,500-page Modernist Bread this fall, Myhrvold talks about his first gallery location in The Forum Shops at Caesars Palace.

We have a motto that it only has to look good for a thousandth of a second. Do you plan on photographing a Vegas-inspired food item? It’s inspired us to shoot a lot of that food, including a martini in mid-splash.

So, you want to see The Who live? You’re running out of time. In an April interview, frontman Roger Daltrey said the legendary rockers may never play live again after they finish their current tour, which features an exclusive Las Vegas residency at Caesars Palace from July 29–August 11. They’ll be the first rock band to have a residency at The Colosseum since the venue opened in 2003. Since releasing “I Can’t Explain” in 1965, the English group has been on a “Magic Bus” ride with a career spanning more than 50 years. One of the most influential bands of all time, The Who have sold over 100 million records, and seven of the group’s albums appeared on Rolling Stone’s 500 Greatest Albums of All Time in 2003. With a treasure trove of hits, the biggest challenge The Who will face in Las Vegas will be planning their incredible set list. BY MARK GRAY
