Nuria Cortés Hay muchos Mediterráneos en nuestro Mar Mediterráneo. Incluidos aquellos que se camuflan bajo otros nombres, aprovechando los recodos creados por penínsulas y archipiélagos. Hay muchas banderas ondulando en sus puertos y aún más lenguas en la veintena de países que se recuestan a sus orillas, un rosario de territorios que comparten pasado y futuro del mismo modo que una familia comparte mesa, le guste o no. El célebre periodista y escritor Manuel Vázquez Montalbán decía que “el único producto mediterráneo realmente uniformador, y quizá algún día unificador, es la presencia de la berenjena en todas sus culturas culinarias, de Siria a Murcia, de Viareggio a Túnez”. Eso y, quizás también, el espíritu festivo que ayuda a sobrellevar el alma trágica que todo mar compartido lleva consigo. Si ponemos la lupa en este rincón del Mediterráneo, el mismo que también baña a los vecinos franceses e italianos, veremos cómo la pasión por el buen comer borra fronteras tan pronto se extiende el mantel. Y si aumentamos aún más el zoom y nos centramos en el mediterráneo español, veremos incluso cómo la comida no solo es protagonista en el plato, sino también en la propia conversación de los comensales

reunidos en torno a la mesa. Algo que, en gastronómica, ahora rumbo a los sabores de los otros Mediterráneos que aguardan en cierto modo, es igual a comer dos veces.

mercial, sino una historia personal. Representa la trayectoria de vida de Alessandro Boscolo, director del Restaurante, que ha compuesto una pequeña biografía a base de sabores y aromas.

Su divertida carta ofrece la posibilidad de elegir los caldos de dos formas. Si conoces los entresijos del mundo, del vino puedes hacerlo de forma clásica, consultando según su nacionalidad y denominación de origen. Pero si te pierdes entre conceptos abstractos como taninos, assemblage o bouquet, lo mejor es que abras la carta por el otro lado y consultes los vinos según sus sabores y características.

Esto hará que parezcas todo un sumiller aunque tus conocimientos sean limitados.

Para terminar la cena de una forma apoteósica, echa un vistazo a su selección de coctelería. Apura un último brindis y entra directamente a la discoteca (una consumición mínima te da acceso directo). Ahora sí, ya puedes agarrar una copa al ritmo de una buena sesión de electrónica.

The amusing wine list makes it possible to select wines by two different methods. If you’re a wine insider, you can do it in the traditional way, by country and denomination of origin. But if you’re baffled by all that talk of tannins, assemblage or bouquet, the best thing is to open the list on the other side and study the wines by their flavours and characteristics.

This will make you look like a real sommelier even though your knowledge is limited.

To end the dinner with a bang, take a look at the selection of cocktails. Make a final toast and go into the disco (by ordering a single drink, you get in free). And yes: now you can grab a drink to the rhythm of that good electronic music session.

Nicholas tiene, desde 2015, una empresa de nutrición funcional llamada Amazonia que ofrece soluciones saludables orientadas al sector de restauración. No escogió el negocio; su forma de vida y su concienciación por comer alimentos de calidad superior y orgánicos le condujo a ello de manera también orgánica. GASTRONOMÍA QUE CONCIENCIA FOOD WITH A CONSCIENCE

¿Conoces la posidonia? Si la respuesta es no, échale un ojo a nuestro extenso reportaje al final de la revista. Si por el contrario estás familiarizado con esta planta marina, sabrás de la necesidad de preservarla y concienciar a la población de su importancia. Por este motivo, la sociedad civil ibicenca y el ayuntamiento de la ciudad se han dado la mano para el proyecto Viu la posidonia, una iniciativa global que propone actividades de toda índole.

Sin duda la más sabrosa es la que ponen en marcha cada sábado, hasta el 30 de septiembre, algunos de los mejores restaurantes de Ibiza.

Entre ellos destacamos la que ha llevado a cabo Íñigo Rodríguez, chef del restaurante de El Hotel Pacha. Basándose en productos locales como la rotja o la sepia, Rodríguez ha elaborado un menú con sutiles toques marinos, un crisol de sabores coronado por su famoso flaó (muchos aseguran que es el mejor de la isla y nosotros no podemos más que darles la razón).

No es la primera vez que el hotel participa en las jornadas gastronómicas. Su apuesta por la cocina ibicenca y el hecho de que

esté abierto todo el año lo predisponen a participar en eventos como las gastrojornadas o el menú patrimoni. Estos movimientos, unidos al buen hacer de Rodríguez, han conseguido lo imposible: que el restaurante de un hotel se convierta en un indispensable para los locales.

Rodríguez asegura que apuesta por una cocina mediterránea con toques de autor. Nosotros podríamos traducir esto así: sus platos son como los que cocinaría tu madre. Si tu madre se hubiera formado en las mejores cocinas del globo. Porque este chef tiene en su currículum los nombres más estrellados de España; lugares como El Bulli, el Celler de Can Roca o Mugaritz destacan en su haber.

Pero su apuesta más personal, la que le está granjeando fama a nivel personal, es la que lleva a cabo 365 días al año en El Hotel Pacha.

already in the know when it comes to this sea plant, you’ll no doubt be aware of the need to conserve it and raise awareness of how important it is. It’s this importance that has brought civil society in Ibiza and the city council together for the Viu la Posidonia project, a comprehensive initiative with a wide range of activities.

The tastiest of these takes place every Saturday until 30 September in some of Ibiza’s best restaurants, including the Pacha Hotel.

Using local products like rotja and cuttlefish, head chef Íñigo Rodríguez has devised a menu with subtle nods to the sea, a veritable melting pot of flavours, rounded off by his famous flaó, which many people say is the best on the island.

And who are we to disagree!

It’s not the first time the hotel has participated in culinary events. Its focus on Ibizan cuisine and the fact that it’s open all year round makes it a regular name on the foodie circuit and the patrimoni menu. These initiatives, together with Rodríguez’ skills in the kitchen, have achieved the impossible: the hotel restaurant has become a favourite among locals.

Rodríguez defines his cooking as Mediterranean cuisine with signature twists. We could translate this by saying that his creations are like the things your mum would cook. That is, if she had received training in some of the best kitchens in the world. Rodríguez’ CV reads like a who’s who of Spanish haute cuisine, with stints in acclaimed Spanish restaurants such as El Bulli, Celler de Can Roca and Mugaritz.

However, it’s his more personal approach, which awaits diners 365 days a year at the Pacha Hotel, that is winning him fame on the island.

Pacha’s boutique hotel was already attractive enough in itself. Located in one of the most beautiful spots on Ibiza, high on the cliffs at Cap Martinet, it boasts what’s probably the best pool on the island and a restaurant, Modest, which has been a gastronomy hotspot for years.

RECETA POR SAMUEL GALDÓN BOGAVANTE AL CHILI CON JENGIBRE, CHILI, PAN CHINO Y SALSA PICANTE Bogavante 1 bogavante nacional 2cc Salsa de tomate 2cc Salsa de chili dulce 1cc Mezcla de maicena/agua 1 toque de Pedro Ximénez dulce 15 g Cebolla 15 g Jengibre 5 g Chili rojo picante 5 g Cebolleta fresca (solo el verde) Cilantro Elaboración Trocear el bogavante por los anillos. Abrir las pinzas. Romper y abrir la cabeza.

En wok muy caliente, saltear el bogavante comenzado por las pinzas. Saltear los demás ingredientes. Añadir los líquidos.

Desglasar. Retirar el bogavante y dejar reducir la salsa. Acabar con el cilantro en crudo y la cebolleta fresca.

Brioche al vapor - Pan chino 300 g de harina de trigo 20 g de azúcar (una cuchara) Una pizca de sal 20 g de levadura de panadería 150 ml de leche templada 40 ml de agua 1 cucharada sopera de aceite de oliva

Elaboración Para hacer la masa, mezcla todos los ingredientes y amasa como si fueras a hacer un pan. Después, deja fermentar hasta que duplique su volumen (una hora aproximadamente).

Cuando haya doblado su volumen, coge pequeñas porciones y forma unas bolitas.

Estíralas, enróllalas (como un canutillo) y vuelve a enrollarlas en el sentido contrario (como si fuera un caracol).

Para cocinarlos al vapor, pon agua a hervir en una olla. Coloca los panes sobre la rejilla, dejando la junta hacia la parte de abajo. Pon la rejilla con los bollitos en la olla, tapa y deja que se cocinen durante 30 minutos a fuego suave.

Por último, hay que freírlos. Pon a calentar en un cazo abundante aceite de girasol, introduce los bollos y dales la vuelta varias veces, regándolos con el aceite caliente hasta que se doren bien. En menos de un minuto estarán listos.

RECIPE

BY SAMUEL GALDÓN CHILLI LOBSTER WITH GINGER, CHILLI, BRIOCHE AND HOT SAUCE Lobster 1 Spanish lobster 2cc Tomato sauce 2cc Sweet chilli sauce 1cc Mix of corn starch and water 1 touch of Pedro Ximénez sweet sherry 15 g Onion 15 g Ginger 5 g Spicy red chilli 5 g Fresh onion (only green) Coriander

Preparation Slice the lobster by the rings. Open the claws. Break the head and open it. In a hot wok brown the lobster, beginning with the claws. Brown the other ingredients. Add the liquids. Deglaze.

Remove the lobster and reduce the sauce.

Finish off with the raw coriander and the fresh onion.

Steamed brioche 300 g of flour 20 g of sugar (one teaspoon) A pinch of salt 20 g of baker’s yeast 150 ml of milk 40 ml of water A soup spoon of olive oil Preparation To make the dough, mix all the ingredients and knead it as if you were making bread. Then let it ferment until it doubles in size (approximately one hour).

When it has doubled its volume, take some small parts and form little balls.

Stretch them, roll them up (like small cylinders) and then roll them in the opposite direction (as if they were snails). To steam them, place water in a pot and bring it to the boil. Place the bread pieces over the grating with the joint downward. Put the grating in the pot, cover it and let it cook for 30 minutes over a low flame.

Finally, fry them in a saucepan with a good amount of sunflower oil. Introduce the balls, and turn them several times until they are browned. In about a minute they will be ready.

UNA NOCHE EN LA ÓPERA A NIGHT AT THE OPERA

Una de las citas imprescindibles para muchos habituales y residentes en Ibiza eran las sesiones de música lírica del Festival d’Opera d’Eivissa. Un evento que había ganado mucha fama a pesar de su joven recorrido gracias al talento del genial diseñador Armin Heinemann, su director y promotor. Hablamos en pasado porque la edición XI será la última que organizará este festival caracterizado, entre otras ra-

zones, por su original vestuario y puesta en escena. La ópera Falstaff, una de las más brillantes y divertidas de Giuseppe Verdi, ha sido la obra lírica elegida para este cierre, cuyas representaciones tendrán lugar en el Palacio de Congresos de Ibiza los próximos días 11, 13, 15 y 17 de septiembre.

Su manera de enfocar las sesiones y la progresión de su sello, Cadenza, han ayudado a que los clubes hayan avanzado. Pero hay un logro que ensombrece a todos los demás. Vagabundos, la popular fiesta que lleva celebrando desde hace seis años, representa mejor que ninguna otra la diversidad y apertura de la Isla Blanca. Este año regresa a Hï Ibiza con una única cita, que tendrá lugar el 5 de septiembre, y a la que están invitados César Merveille, Ryan Crosson, Cici, Gianni Callipari, Michel Cleis, Mirko Loko y Digitaline. | Luciano is a name that has particular significance in Ibiza. The Chilean artist, born in Switzerland, is one of the leading figures behind the regeneration of the island’s club scene. His approach to each session and the development of his music label, Cadenza, have helped Ibiza’s venues to keep on growing. But there’s one achievement that overshadows all others.

Vagabundos, the hit party hosted by Luciano over the past six years, represents more than any other event the diversity and openness of the White Isle. También en sus exteriores se rodó el videoclip de Wham! Club Tropicana. Tras un lavado de cara, los chicos de Ibiza Rocks han comenzado a celebrar diferentes eventos. Entre ellos hay que destacar ocho sesiones del mítico DJ Harvey, quien también se va a encargar de llevar Pikes Records. Para abrir boca, el 15 de septiembre se publica su primera referencia, The Sound of Mercury Rising Compiled With Love. | Pikes is famous for being the hotel where the most exclusive parties in Ibiza were held, with guests including Freddie Mercury, Julio Iglesias, Grace Jones and Spandau Ballet. The music video for Club Tropicana by Wham! was filmed there too. After a complete refurb, the guys at Ibiza Rocks have now started to host a range of events at the venue. Among the highlights, eight sessions by the legendary DJ Harvey, who’ll also be heading up Pike Records. Se habla mucho de la atmósfera del hotel Pikes y muy poco de las propuestas musicales que allí se realizan. Una de las más interesantes se llama Maestro, en honor a Larry Levan, el mítico DJ de la discoteca Paradise Garage. Los encargados de organizar, programar y dar color a una noche tan especial son Jorge Moreno y Daniel Kyo. A este último se le ha podido ver este año en sellos como Bordello a Parigi, Les Yeux Orange o Rotten City. Es decir, la flor y nata del sonido dark disco y new wave. De momento les quedan dos fechas: 31 de agosto y 13 de septiembre. Luego dirás que no avisamos. | People talk a lot about the atmosphere at Pikes Hotel but very little about the music schedule on offer there. One of the most interesting parties is called Maestro, in honour of Larry Levan, the legendary DJ from the Paradise Garage club. El club de Marina Botafoch, Heart Ibiza, ha sido el encargado de acoger las sesiones, que tendrán como invitados en las últimas fechas a DJ Koze (27 de agosto), Damian Lazarus (10 de septiembre), M.A.N.D.Y. (17 de septiembre) y el fin de fiesta con los organizadores (24 de septiembre). | Every year sees new parties debut in Ibiza. But there’s one that caused even greater expectation than usual. The nights at Saga put together by the DJ duo Bedouin, standard bearers of the best US tech house, have shaped many a Sunday night on the island. Tras los fogones se encuentra Ricardo Sanz, máximo responsable del cuatriestrellado Kabuki. El nuevo local, además, está situado muy cerca de Pacha y Lio, dos de los enclaves más populares de Ibiza. El restaurante ha querido poner su granito de arena a la programación musical y tendrá todos los domingos de agosto y septiembre a la DJ y modelo Chelina Manuhutu, uno de los nombres más destacados dentro de la electrónica europea. | Zela is one of the island’s new gastronomy havens. It specialises in Asian-Mediterranean fusion food, with tataki, ceviche and sushi heading up the list of culinary delights. Ricardo Sanz is the man in the kitchen, winner of four Michelin stars and the chef responsible for Kabuki. What’s more, it’s located very close to Pacha and Lío, two of Ibiza’s most popular nightspots. Blue Lou Marini es uno de los mejores saxofonistas de nuestra época. Este verano se ha pasado por Ibiza con su banda más reconocida, The Original Blues Brothers. Conversamos con él horas antes de su actuación en Flower Power, en el marco del 50 aniversario del grupo Pacha.

Empecemos repasando el calendario de actuaciones que hay hoy en Ibiza. David Guetta, Martin Garrix, Maceo Plex, The Original Blues Brothers... ¿Hay algún nombre que no le cuadre en esta enumeración?

Tampoco le resultará llamativo entonces que una banda de blues triunfara en los 80, en medio del auge del punk o el glam rock…

Es, en cierto modo, un pequeño misterio. El grupo fue puesto en marcha de una forma un tanto peculiar. Cuando Belushi y Aykroyd (cómicos del programa Saturday Night Live y caras visibles del grupo) crearon la formación fue increíble, ya que todos los que tocábamos instrumentos de viento proveníamos del jazz. Es algo así como una combinación misteriosa, y lo bueno es que la banda sigue tocando con esa misma energía.

[Risas] Sí, bueno, puede. Mira, anoche tocamos en Winchester, Inglaterra. Entre Arrested Parece difícil de creer teniendo en cuenta Development y Sublime, ante un público muy que llevan casi 40 años con esta formación. joven. Ninguno de nosotros se ha considerado una estrella del rock, pero la verdad es que fue una locura. Tras la muerte de Belushi todo acabó. Pensamos que no íbamos a volver a tocar nunca. Fue seis o siete años después cuando la mujer de Aykroyd nos pidió que lo sorprendiéramos en su fiesta de cumpleaños, así que volvimos a tocar juntos y fue

maravilloso. La gente nos empezó a pedir que hiciéramos más conciertos y de repente estábamos tocando otra vez.

Me gustaría preguntarle por su otra banda, la madrileña Red House. ¿Cómo surge su relación con España?

Mi mujer, Meme, es madrileña. A través de ella conocí a un tipo que era amigo de los chicos de Red House, así que fui a verlos a un concierto y me pidieron que tocara algo con ellos en el Café Central. Son unos grandes músicos y hemos creado un gran espectáculo. Se ha convertido en una vía de escape muy agradable cada vez que vengo a España.

No es la única. Mirando a su currículo destacan un montón de nombres. ¿Es el mundo del blues así de promiscuo, musicalmente hablando, o es usted un culo inquieto?

[Risas] Es una buena manera de decirlo.

Y creo que yo soy el tipo más promiscuo del mundo en ese sentido. He tocado en un montón de bandas porque me gusta y porque nunca he tenido un manager o un publicista.

Mis conexiones funcionan siempre de músico a músico. Siempre llevo mi instrumento conmigo y de esa forma he conocido a gente realmente interesante.

Y aun así tiene tiempo para los Blues Brothers. ¿Piensa retirarse pronto?

Tenemos un nuevo CD en camino. Hay mucha expectación al respecto. Saldrá en octubre.

Y la verdad es que estamos muy cómodos, así que mientras tengamos energía y sigamos disfrutándolo… Ya lo verás esta noche ¡Sigo tocando como un chaval!

Blue Lou Marini is one of the greatest saxophone players of our time. This summer he has been in Ibiza with his most famous band, the Original Blues Brothers. We caught up with him hours before his performance at Flower Power, as part of the Pacha Group’s 50th birthday.

Let’s start by talking about some of the people who are on the line-up in Ibiza.

David Guetta, Martin Garrix, Maceo Plex, The Original Blues Brothers... Is there a name that stands out in that list?

[Laughs] Yeah, you know, last night we and Aykroyd. When they called us to make played Winchester in England. I was coming the film The Blues Brothers... ▸ Es uno de los pescados estrella de la cocina de Ibiza y Formentera debido a su tierna y sabrosa carne y su consumo comienza a partir de este mes, cuando se abre la veda de su pesca. No lo encontrarás en todos los restaurantes; más bien tendrás que ir a los especializados en cocina ibicenca. Su tonalidad rosácea recuerda a la del salmonete, tiene pocas espinas y suele prepararse frito. Si visitas Formentera, búscalo en el Restaurante Pascual. En Ibiza, pregunta en Can Rei (Port, 2. Sant Miquel), en Ses Roques (restaurantesesroques.es), en Tropicana (tropicanaibiza.com), en Es Nàutic (esnauticrestaurant. com) y en Es Xarcu (esxarcurestaurante.com).

▸ It’s one of the star fish in Ibiza and Formentera because of its tender, tasty flesh, and can be eaten starting this month when the season opens for catching it. You won’t find the raor –or pearly razor fish– in all the restaurants but will probably have to go to the ones specialising in Ibizan cuisine. Its rosy colour is similar to that of the salmonete (red mullet), it has few bones, and it’s usually prepared fried. If you visit Formentera, look for it at Restaurante Pascual. On the old highway between Sant Rafel and Sant Antoni is La Mesa Escondida, a charming Italian restaurant that will certainly enchant you with its pastas and peaceful ambience (Av. ▸ Si el sur de la isla se ha convertido en sinónimo de fiesta tanto de día como de noche, el norte sigue manteniendo el aire tranquilo de la Ibiza más íntima. Y también es uno de los rincones más activos, ya que el municipio de Sant Joan de Labritja cuenta con numerosas rutas de senderismo (sanjuanibizatravel.com) y algunos de los paseos en kayak más bonitos, como el que une la playa des Figueral con Pou des Lleó (kayak-ibiza.com). También con rincones apenas alterados, como la parroquia de Sant Vicent de sa Cala, la tranquila cala des Xuclar o la pequeña cala d’en Serra, cobijada en un recodo de esta accidentada costa.

Si vas en domingo, no olvides pasarte por la mañana por el agradable mercado de productos y artesanía de Sant Joan. Y para cuando te entre el hambre, te recomendamos las paellas de Port Balansat (restauranteportbalansat.com); las hamburguesas de On the Beach, en cala Sant Vicent; y la sencilla cocina tradicional de Ca’n Rei, en Sant Miquel.

▸ If the southern part of the island is synonymous with day and night partying, the north still maintains a quieter air of the more intimate Ibiza. There are also largely unspoiled places like the Sant Vicent de sa Cala parish, the peaceful des Xuclar cove, or the small d’en Serra cove, sheltered by a bend in this uneven coast. If you go on a Sunday, don’t forget a morning visit to the pleasant market in Sant Joan selling food and handicrafts.
