Grands Crus Tea pluckers in China's Fujian province

The afternoon is a sunny one, and François-Xavier is wearing a happy grin. It's not the warmth in the air that has him smiling, though; it's a tea, a Taiwanese Grand Cru known as Oriental Beauty. “This is one of the finest teas from Taiwan,” he beams. “What makes it unique is an insect bite to the leaf, which then needs to be plucked before it breaks down. It's been six years since I bought any—the tea just didn't have that quality I loved anymore. This season, the harvest is superb again.” It's not unusual that François-Xavier's supplier of Oriental Beauty had the patience to keep sending him samples year after year: the tea expert has developed close, loyal relationships with the planters. To him, each tea conjures images of faces and landscapes. Every month and a half, he spends two weeks traveling to meet these artisans. “I don't come from a family of tea professionals,” he explains, “so I've learned almost everything I know from these passionate growers, by meeting them, asking questions, and listening to them. That's how I started, and it's still how I work today.”

After all, a Grand Cru is defined not only by its flavour aspects, but also its rarity and seasonality. There's no way to predict whether these teas, produced in small quantities, will

This superb harvest, a typical spring flush, delighted us with its pleasantly supple texture and the harmonious progression of its fresh floral, zest, and almond notes. Its very grassy bouquet and subtle astringency give it a pleasantly lingering finish.

This year, the prestigious Namring Tea Estate brings us a deliciously refreshing harvest with fruity, camphor, grassy, and floral notes typical of a spring flush. Its flavours are enhanced by a lovely velvety texture and a hint of bitterness.

How did you get interested in inventing cocktails? After I finished culinary school, I gravitated to bartending as a profession. In the kitchen, I learned the art of pairing and seasoning, and pastry-making taught me how to balance measurements. I have a real passion for unexpected combinations, mixology—making cocktails is like gourmet cooking.

What does it take to invent a great cocktail? I reflect on my recent travels. Art and perfume are also sources of inspiration when I'm creating my cocktails.

Where did you find the inspiration for the Andalusia cocktai l? When I tasted Andalusian garden, it immediately brought to mind one of my trips to Andalusia. The flavours of this new herbal tea are a real journey for the senses. It evokes various scents, like citrus, orange blossoms, and herbs, as well as the region's fresh and tart flavours. I really enjoyed being able to create something based on Andalusian garden, to help tea enthusiasts extend that journey just a little bit longer.

STEEP THE HERBAL TEA

MIX THE COCKTAIL

This recipe is designed to make more herbal tea than the cocktail requires • Steeped herbal tea can be kept in the refrigerator for 72 hours • To prepare the herbal tea, use 2.5 teaspoons of Andalusian garden in 7 oz (20 cl) of water • Steep at 90°C for 5 minutes, then strain thoroughly • Let cool.

Fill each glass with 3 cl Aperol, 1 cl Suze Saveur d'Autrefois Liqueur, 2 cl Lillet Blanc and then 0.5 cl Crème de Pêche • Add 4 cl Orgeat syrup, 3 cl steeped herbal tea, and finally 2 cl ginger beer • Stir gently to preserve the fizz in the ginger beer • Add a straw and garnish by arranging an orange slice, and a sprinkle of Andalusian garden for a beverage that looks as good as it tastes!
