Tell us a bit about your journey on becoming India's primary patisserie chefs who make macarons

I’ve been baking since I was six years old but only realised that it could be a profession when I was in hospitality school in Switzerland. I moved to France and studied French Patisserie and it was there that I fell in love with macarons. My mission was to bring back a piece of Paris to Mumbai and that’s what I’ve done for the last 12 years.

What excited you about creating a French-oriented brand in India

14 years ago, the patisserie market in

India was very di erent than it is today. I saw a huge gap and thought I could bridge it. My love for both France and India made this super exciting. Not to say that it's been easy - it’s been an interesting journey!

Do you like to travel, if yeswhat are some of the places on your bucket list?

Yes, I love to travel. I’ve been lucky and privileged to visit many countries and experience di erent cultures. My favourite cities to travel to are Paris, Tokyo and Rio de Janeiro. I’ve never been to Mexico or South Korea and that’s on my bucket list.

What are a few things we would find in your carry on luggage?

My laptop, a light sweater or scarf, a book or kindle, my phone charger and some dark chocolate!

What's one advice you give to upcoming patisserie chefs in India

My advice would be to be patient and work towards your goals. It gets hard sometimes and it helps to always have an eye on the bigger picture.

FULLY VACCINATED INDIANS CAN NOW VISIT NEW ZEALAND FROM AUGUST

THE NEW ZEALAND GOVERNMENT announced further relaxations in border restrictions, allowing all fully vaccinated international travellers, including India, to travel to New Zealand from August 1, 2022. Fully vaccinated Indian visitors will be able to travel to New Zealand without self-isolation on provision of a negative predeparture test. Negative Rapid Antigen Tests will be required on arrival and on day 5/6. A bold transformation of Berlin Tempelhof airport is now taking shape, allowing visitors to take historic tours and play on its redundant runways

How many keys does it take to run an airport? In the case of Berlin Tempelhof, 44,000. at’s how many keys were handed to city o cials when this gargantuan complex closed in 2008. Constructed by the Nazis in 1936-41 (and never nished) it remains one of the largest buildings in the world, stretching for 1.2km with 7,266 rooms, 300 air raid shelters and 70,000 power sockets.

ese are the thought-provoking stats that await on a guided tour of this richly historic airport, which pre-pandemic attracted 70,000 visitors a year. A 20-minute U-Bahn ride from the city centre, Tempelhof has a revered place in the birth of ying – US aviator Orville Wright made experimental ights here and in 1909 300,000 Berliners turned out to watch a pioneering Zeppelin cruise overhead. Deutsche Lu Hansa, the precursor of Lu hansa, started scheduled services from the air eld in 1926 and within six years was operating a global network with a eet of 155 aircra .

Dominating Tempelhof’s north-west corner is a colossal curved terminal that was the epitome of Nazi pomp with austere façades that are still decorated with haughty eagles. e dark side to this story can’t be ignored – in the 1930s this was the site of a military prison and concentration camp, and during the war ghter planes were built here using forced labour.

At the same time, Berlin Tempelhof is celebrated as a landmark in airport design with its dedicated areas for arrivals, departures and cargo plus attendant hotels, restaurants and congress centre. A FIELD OF EXPERIMENTATION

But now what? is is the challenge facing Tempelhof Projekt, the organisation charged with repurposing a massive, ageing building in which everything from a basketball court installed by the US Air Force to the parking lots are listed. “Our goal is to give something back to the city,” explains Aljoscha Hofmann, a member of its development team. “A third of the buildings are now in use,” he reports, and some 80 businesses and institutions have taken space including musicians, digital agencies and the Berlin Police. e terminal has also been used as a lm location, appearing in hits such as Indiana Jones and  e Hunger Games. Passing the merry cavalcade of dog walkers, joggers, rollerbladers and mad adventurers windsur ng on skateboards, it is undoubtedly a blessing that Berliners rejected plans to develop the site and instead created “a eld of experimentation for renewed harmony”. The Indonesian government recently announced the opening of the country for international travel - and this has hailed nothing but good news for Bali.

As per booking platform Agoda, Bali was one of the most searched beach destinations of the destinations recently. Not surprisingly, within Indonesia too, this region was the one that received the most search hits. Indians are looking at Bali more than ever; Indonesia is in the top four countries that we are looking at, for travelling.

Because of geography, Australia and Singapore remain as top origin markets for Bali; as per Agoda, Australia has seen the biggest upward traction of outgoing visits post the pandemic, with Singapore following a close second.

On April 6, Indonesia updated its border

and quarantine guidelines, allowing fully vaccinated tourists to visit the country without having to quarantine rst. However, the guests would have to present a negative RT-PCR test conducted within 48 hours before the departure as of end of May when this article was written. Upon presenting this test, though, they are allowed to roam around and explore other parts of Indonesia without needing any additional tests. Besides this, all international visitors would also be required to present a proof of health insurance, which must cover medical treatment for the virus.

Indonesia has also granted visa on arrival facility to travellers holding passports of 43 countries, including India. ese 43 countries also include 14 other countries in the APAC region. UBUD MONKEY FOREST

Known as the Sacred Monkey Forest Sanctuary, visiting the Monkey Forest is one of the top things to do in Ubud, Bali. is forest is just a ten minutes walk from the town centre of Ubud. A huge element of the appeal is the vivid jungle setting where the monkeys roam free. ese troops of grey long-tailed macaques are quite entertaining to say the least. Embodying an almost mystical feel, paved pathways lead through thick jungles of giant banyan and nutmeg trees. Walk though moss-covered statues and ancient temples as you navigate through the dense foliage. Intended to represent the harmonious coexistence between humans and animals, the forest conserves rare plants and is used as a

macaque behaviour, particularly their social interaction.

NUSA DUA BEACH

Escape Bali’s urban buzz at the Nusa Dua Beach. Listen to the gentle sound of the waves as you relax on recliners sipping on cooling cocktails. NHowever, a er a dormant two years of being stuck in one city I am grateful I can explore the world again. My anxiety soon turned into excitement when I found out I’d be visiting Yas Island, Abu Dhabi. I’d heard so much about this coveted hub of entertainment and leisure that I was eager to see why so many tourists throng the island and its attractions. As I was landing into Abu Dhabi I was welcomed by the sight of its glimmering skyline that stood out against the dark of the night, a beautiful stark contrast. Unlike my trip to Kenya, I had Googled a fair bit about my itinerary in Yas Island since I am not inherently an adrenaline junkie. erefore, I wanted to mentally prepare myself for all the thrilling rides I was about to embark on. However, no attraction website or review could truly match up to

Marina Circuit but, over the last decade it has evolved and introduced many attractions that make it the touristic haven it is for families.

WHERE I STAYED:

I checked into my hotel, W Abu DhabiYas Island, at around 4 a.m and was swi ly escorted into my room without any hassle. e luxury hotel, known for its contemporary design and view of the Yas Marina and Yas Marina Circuit, ensured my time at the island was as comfortable as can be. I stayed in the Wonderful room and true to its name, the room was well-equipped, spacious and had a beautiful balcony that overlooked the expanse of the circuit. I was woken up ceremoniously to the sound of the cars whizzing by on the circuit on my rst morning there. As someone who grew up watching Formula One I was lled with childlike glee when I used to step

out onto the balcony to watch the cars race. I lived by the famous saying “don’t count your calories on holiday” during my stay at the hotel as every meal I had here was always better than the last. I began each day with a breakfast bu et at their multi-cuisine restaurant Garage where I gorged on endless amounts of fresh hummus and pitta from the mezze counter. For dinner, I was seated in the outdoor section of the restaurant where I could soak in the serene views of the Marina Bay alongside the racing circuit. My favourite dishes were the ceviche de hongos, the torched salmon sushi roll and the chicken shawarma roll.

WHAT I SAW FERRARI WORLD ABU DHABI

We hit the ground running from the rst day itself as we immersed ourselves in a world of speed and thrills at our rst stop of the day.

Ferrari World Abu Dhabi is predominantly an indoor theme park which opened its doors to tourists in November, 2010. It is the world’s rst Ferrari-themed park and is a motor enthusiast’s haven!

Without wasting any time I knew the rst thing I had to conquer was the formidable ‘Formula Rossa’, the world’s fastest roller coaster that reaches a top speed of 240 kmph. My legs were quivering as I stood in the line for the ride but the pride of having sat on the rollercoaster was worth it. e adrenaline rush a er getting o the rollercoaster was incomparable to anything I have felt before. A er Formula Rossa, I needed something calming to soothe my thumping heart and what better than a drive in a toy Ferrari around a miniature set mimicking the picturesque lagoons of Italy. ‘Bell Italia’ looks like a ride made for children but I assure you that exploring a mini-Italy in a small-scale Ferrari 250 California, circa 1958 is an experience everyone should indulge in. I made my way to ‘Galleria Ferrari’ from here, an exhibition dedicated to highlighting the history of female race drivers and all-around inspirational women. What I read and saw in this exhibition was nothing short of inspirational, most people only know male racers but it delighted me to see them bring to light stories of female racers that have achieved just as much as

their male counterparts. All this really helped me work up an appetite and just as I was walking to lunch I saw a long queue outside one particular ride, Speed of Magic. A 4D adventure where one dives into oceans, ies over cli s and ventures into ice caves through simulator technology that teases all your senses with changes in temperature, moisture, light and movement along the way. A er this surreal experience I headed to ‘Mamma Rossella’ where I feasted on delicious Italian delicacies, which was a delightful end to my time at Ferrari World.

YAS MALL

A er an adrenaline lled morning at Ferrari World, I unwinded by taking a walk through the luxurious expanse of Yas Mall. e mall, spread over 2,35,000 sqm, making it the largest luxury mall in Abu Dhabi, has something for everyone. It features 90 indoor and outdoor restaurants and cafes. I really had to control my spendthri urges as the mall is home to more than 370 International brands. Safe to say, when I was returning home I was returning with bags that were on the brink of challenging the airline’s baggage allowance. One thing in particular that makes the mall supremely accessible is the fact that Ferrari World directly connects to the mall which means one can save time and explore both places in the same day like I did.

WARNER BROS WORLD ABU DHABI

We have all grown up watching one of Warner Brothers’ productions, whether it is the classic Tom and Jerry or the heartwarmingly goofy Flintstones so, I was beyond excited to explore the Warner Bros World. As I walked in what greeted me was a sight that le me speechless. e Warner Bros. Plaza is an elegant art deco celebration of all things Warner Brothers and the golden age of Hollywood. e plaza is lled with beautiful architecture reminiscent of an era gone by and the roof is covered by an arti cial dark blue sky with hues of purple that emanates a dreamy aura. Without bragging but I sat on every ride here! From the dizzying ‘Riddler Revolution’ in the Gotham City section to the laughter inducing Bedrock River Adventure paying homage to the Flintstones, my time at the Warner Bros World was ve year old Anithya’s dream come true!

YAS KARTZONE

Now, go-karting has always been on my list of things to do but for some reason I have never had a chance to get round to it. So, when I saw this on this itinerary I knew I had to pull out all the stops and win the race! As I mentioned before, I grew up watching Formula One which de nitely enhanced this experience. When I wore the racing gear and helmet I got a small glimpse into the world of the racers I had grown up watching and admiring. A er wearing the gear, the instructors conduct a 15-minute safety brie ng session post which the 1km track is yours to speed around! Each lap is timed and at the end of the 3o minute race, I received a printout with timings of each lap and I found I had come rst out of all the drivers during my session since all my laps were the fastest! Needless to say, I couldn’t stop bragging about this to my friends and family.

Dallas comes with more preconceptions than most US cities, and most of them are wrong. It’s a major conurbation, with the greater Dallas area home to well over seven million people and growing quickly, yet you could walk around Downtown all day and wonder where all the workers are. e regional o ces of major nancial institutions are present; there are new and refurbished hotels, bars and restaurants, yet the vanishingly small number of shops (apart from the beautiful original 1914 Neiman Marcus building on Main Street) shows that people come here to work and then leave in the evening, heading to the suburbs.

What makes it even more surprising is that pre-Covid, 27.7 million people visited Dallas annually for a total economic impact of US$8.8 billion. In the last 25 years over US$2.5 billion has been invested in Downtown Dallas and the population almost tripled between 2000 and 2010, and now stands at 13,000 people.

What’s also unexpected is there so much to see and do in the centre of Dallas – shopping aside. Within walking distance of Downtown you have world class art galleries and museums, interesting architecture, successful urban regeneration and sites of real historical interest including, of course, Dealey Plaza and the Sixth Floor Museum located on the top of the infamous Book Depository from where JFK was thought to have been shot. You’ll also get a warm welcome from Texans.

DINING IN STYLE

To dispel the last preconception, the only cowboy hats and boots we saw during our stay were on smartly dressed ladies out on a Friday night in the exclusive Monarch restaurant. is glamorous, deliberately overthe-top, wood- red, modern Italian restaurant is on the 49th oor of the newly reopened and refurbished e National, formerly the First National Bank Tower. If you prefer Japanese cuisine, take the stairs to Kessaku on the 50th oor and walk around the entire building with unrivalled views of Dallas at night, seeing as far as Fort Worth on a clear evening.

e National Bank building was designed by architect George Dahl in the mid-1960s but had been empty since 2010 before undergoing a US$460 million restoration. It now has 324 apartments, four restaurants and a 219-room hotel as well as some o ce space. However, walking around it the rst impression is the nine- oor-high base to the building which has a dazzling façade of 17,000 pieces of marble from the same quarry as the Parthenon (nothing understated here). e skyscraper rises above this in dark glass with white detailing (apparently to resemble bankers’ suits). It had lain empty for over a decade before refurbishment.

On the ground oor there are several shops including Lucchese, where you can buy o -the-shelf Texan fashion as well as made-to-measure boots – they can take up to

six months to make, though – and there’s a ower shop, barber and small art gallery. At the moment the apartments are available for rent in the hope that people will then be tempted to buy, though with monthly rent starting at more than US$2,500 per month, other districts might provide more a ordable homes for young upwardly mobile urbanites. Meanwhile, Downtown needs to continue its regeneration. Dallas was founded in the 1840s and owes its early development as a trading hub through the railroad network.

e discovery of oil and gas in the early 20th century powered its growth, with the nancing and associated wealth helping to create the city that is still in evidence today. For the visitor, the billions spent on the centre of Dallas in recent years means it is possible to enjoy buildings restored to their full glory.

e Statler – originally e Statler Hilton when it opened in 1956 – has a fabulous mid-century glass and porcelain exterior with a lovely arc to the frontage. Its diner, Overeasy, is a good spot for breakfast. Next door is the 1953 Central Library, like the Statler and the National, designed by George Dahl, and now home to the Dallas Morning News.

It’s not all history, though. A new addition to the centre is AT&T Discovery District. We sat there one warm February

a ernoon and watched the preparations for the NBA All-Star Game on the giant screen, sipping drinks bought from one of the multiple outlets of the newly built Exchange on the Square. To one side is the 1931 Art Deco-style Dallas Power and Light Building, now home to Pegasus City Brewery’s taproom (its original Brewery Tap House is still open in the nearby Design District). en there is the Adolphus Hotel, originally built by the founder of the Anheuser-Busch brewery, Adolphus Busch, in Beaux Arts style, and now majestically restored and part of Marriott’s Autograph Collection.

Downtown shades into Uptown as you walk towards the Arts District, where essential stops are the Dallas Museum of Art with a permanent collection of more than 25,000 pieces along with various visiting exhibitions, and the Renzo Piano-designed Nasher Sculpture Center. If you have time, visit the smaller Crow Museum of Asian Art to see its exquisite collection of lacquer and jade objects, and if you have a science bent, or better still have youngsters with you, the Perot Museum of Nature and Science is in a Brutalist-style building with a unique glass-sided escalator high up on one wall. e expansive space holds enough interactive exhibits,

and dinosaur skeletons, to keep the most hyperactive child occupied for a morning.

In the evenings, there is the Morton H. Meyerson Symphony Center where on a Saturday evening, we watched the Dallas Symphony Orchestra in a programme of Tchaikovsky and Bruch, while a Sunday matinée o ered Madame Butter y in the neighbouring Margot and Bill Winspear Opera House.

If that all sounds a little high brow, visit Deep Ellum, which takes its name from its main drag – Elm Street – that runs into Downtown. It is a low-rise neighbourhood of bars, clubs, independent shops and boutiques, along with some great restaurants, including a few with extensive vegetarian and even vegan menus, which in Texas really is saying something. Although if you want excellent smoked meat, Pecan Lodge was doing great business when we walked past (no queue, but it was latea ernoon by then) and is famed for a 13-hour brisket. Many of the immediate attractions of Dallas are easily walked and, in a piece of visionary city planning, Klyde Warren Park has been created over the Woodall Rodgers Freeway which means you can walk from Downtown to Uptown without noticing the freeway. On

a Sunday morning we watched a friend take part in an annual 5km run starting in the park, which is being extended west towards Field Street to open an extra space that will be called e Jacobs Lawn (the plan also includes a three-level enclosed special events pavilion and an ice-skating rink).

FURTHER AFIELD

at evening we had margaritas outside under a warming gas burner at El Camino followed by a Tex Mex meal, while another day we used the same route to walk further and reach the beginning of the Katy Trail, a 5.6km stroll along the former Missouri-Kansas-Texas Railroad, commonly called the K-T and eventually the Katy. e trail takes you up to Knox, a superb example of urban regeneration connecting the parks north of Dallas and allowing you to look into

backyards, people-watch and stop o at the Ice House, which is a beer garden, and burger and Tex Mex restaurant. e Katy Trail starts at its southern end at Harwood Park which is also undergoing development; the last of eight parks being completed. When nished, Downtown will have added 23 acres of green space in the city’s core over the past 15 years. Visiting other districts close to Downtown is more challenging. In theory, the Dallas Area Rapid Transport (DART) system ought to be the means of exploring neighbouring districts. It connects the massive airline hub of Dallas Fort Worth (home to American Airlines), but we were warned o using it by locals for our rst ride into town from the airport and instead got an Uber. en when visiting local attractions and chatting with Texans (everyone is very friendly and helpful), they all indicated that we should not

use the DART; advice that I assume is linked to the number of the city’s homeless and vulnerable people who congregate at the stations. Watching the empty DART trains passing every few minutes over a ve-day period, their smartly liveried but largely empty carriages gliding by on rails and negotiating the city centre streets, it seemed a missed opportunity. We were told at busy times pre-Covid some used it, but the idea of it being a mass transit system clearly hasn’t been realised. e convenience of car travel, ease of parking and the ubiquitous freeways all undermine the case for it, as did its speed – it is slow over longer distances.

For visitors to use the Go Pass app and so enjoy ‘contactless’ travel, you require a zip code, though we found a way around that by simply putting in our hotel’s zip code, and I was told later through the help chat (a er we had le Dallas) that you could simply enter ‘00000’ into that to then use the app.

ROOM FOR IMPROVEMENT

Instead, we used Uber a lot, and when it was sunny, walked back from Deep Ellum under the North Central Expressway which is several lanes of elevated freeway. It was a short and pleasant walk, but you certainly wouldn’t do it at night. ere are plans for John W Carpenter Park, which was just north of where we were, to be extended under the freeway and provide a more scenic way of connecting the two, and more generally, nding a way of making Dallas walkable.

To the south of here, the area between Commerce, Main

and Cesar Chavez has been renamed East Quarter and there is development and redevelopment taking place, including 300 Pearl with 18,600 sqm of o ce space, 2,322 sqm of retail space, and 336 luxury apartments, and 2200 Main, a former 1930s Cadillac manufacturing facility, which is available for lease. e other emphasis should be on the airport, which though it has had signi cant investment still has some very long queues for visitors – 90 minutes for US immigration isn’t unknown, but the airport wasn’t busy, just badly organised and with only a couple of immigration booths open. Dozens of international travellers were missing their connections, yet there was just a shrug from those attendants who could have helped. ere’s no doubt that there is both the determination – and the optimism – to x a lot of these problems. e redevelopment of the Kay Bailey Hutchison Convention Center has been approved (it will remain open while this occurs), and with the Dallas Fort Worth population projected to reach 10 million people in the 2030s, ranking in size behind only New York City and Los Angeles, the prospects are bright.

It’s safe to say that India is riding high on its gin wave. e juniper-berries based spirit has seen multiple variations of blends that have given rise to homegrown brands that have stirred up the “alcobev” industry for the better. Recently, a number of them showcased at Mumbai’s Gin Explorer’s Club that was well received by the urban youth of the metropolis. Whether you love cocktails, drink it on the rocks or have it as a simple G&T, it’s hard to ignore gin today. Here are a few gins that have been launched in the countryand must be in your bar right now.

TERAI

Terai India Dry Gin is a contemporary gin rooted in London Dry Gin values but with an distinct Indian avour pro le and character. It is a eclectic gin which begins with vibrant green notes li ed by a citrus punch. is is followed by a speci c oral bouquet and a sweet and piney juniper avour. Sweet and herbaceous avours are balanced on the palate by a dry spice and savoury nish. It is founded by the Swarup family who have an antiquity of agriculture and distillation in the eponymous region of Terai, and are sincerely preserving the sanctity of the land and its people. It is interesting to learn that terai is a belt of fertile marshlands running along the foothills of the Himalayas. is land is lush and fertile, watered by springs and rivers — and this freshness echoes in the brand too.

HAPUSA

Hapusa is a gin that is uniquely Indian — it is distilled in India with foraged Himalayan Juniper and locally sourced botanicals. In Sanskrit, juniper is called “Hapusa”, and it is this berry which gives their gin not only its title but its distinctive aroma and avour too. Grown near the snow line in the Himalayas, this brand uses an elusive juniper berry that o ers a complex structure around which the rest of their botanicals are thoughtfully arranged. ese botanicals are sourced from all over the country to bring together its melange of a avour pro le that makes this a real sojourn in a glass. e owning brand - Nao Spirits uses local juniper, turmeric, mango, ginger, cardamom, coriander seeds, gondhoraj limes and almonds to create the spirit. All botanicals are added in a one-shot method to the still, named Agatha.

SAMSARA

e brand’s rst limited edition and experimental release, e City of Pink, is an exquisitely cra ed pink gin that is distilled with signature 11 botanicals and further infused with fresh oral extracts and summer berries. is edition is best enjoyed on the rocks, in a gin & tonic or topped up with sparkling wine. e regular edition is distilled in a classic London Dry method using eleven handpicked botanicals that include hemp seeds, rose petals, vetiver grass, green cardamom and juniper berries. Samsara is oral and citrusy with a subtle whisper of spicy earthiness. e brand believes in sourcing local botanicals, sourcing organic packaging material and running a women centric production facility. Each bottle of Samsara is cra ed sustainably and responsibly. e brand was launched by businessman Aditya Aggarwal in Goa in September 2020. He

heads Spaceman Spirits Lab, a platform that brings together mixologists, alcobev experts and distillers, and he also makes Samsara.

GREATER THAN

Greater an claims to be the “only London dry gin made in India”. It is copper pot distilled with botanicals sourced from India and around the world. is gin has clean juniper and fresh lemon peel on the nose and a zing of ginger on the nish. e advent of Greater an dates back to 2015 when the world was going through a so called “Gin-aissance”. Two bar owners in Delhi — Anand Virmani and Vaibhav Singh — believed that country where gin and tonic was invented and where exotic gin botanicals are found in most home kitchens — could be where India’s London dry gin could come from. ey stepped out from behind the bar, got themselves a copper pot still and experimented with every spice, herb and fruit they could nd. ey distilled a lot, and eventually found a recipe they loved enough to not just want to serve at their own bar but to take to the rest of the country and the world.

GIN GIN

Gin Gin comprises nine botanicals that include hemp, Himalayan juniper, coriander, lavender, rosemary, caraway seeds, cinnamon, lemongrass and butter y pea ower . It is branded as India’s only single-shot distilled ‘hemp’ gin. e 24-year-old founder, Shubham Khanna said that he wants Gin Gin to be a gateway spirit for the entire category. In this regard, adding hemp as a botanical would help pique a consumer’s curiosity, as per him. A er trials across a few bars and hostels

in Goa, Gin Gin has now hit the market. e Gin Gin Gin Gin Mule, which is the regular Gin Gin Mule is a cocktail that Khanna suggests you go for with this spirit. He is a self-taught distiller who travelled to New York to study the gin-distilling business. It was about 40 recipes later that Gin Gin was nally born. A gin so good, they named it twice!

JAISALMER INDIAN CRAFT GIN

Jaisalmer Indian Cra Gin is a triple-distilled neutral grain spirit, re-distilled in a traditional copper pot still. Botanicals from across India are used and Jaisalmer Gin is named a er the city of Jaisalmer (known as ‘ e Golden City’) in the heart of the ar Desert of Rajasthan. Created with a blend of lemongrass, Darjeeling green tea, citrus peels, juniper and other Indian herbs, Jaisalmer Gin is manufactured by Radico Khaitan in their Rampur distillery. e spirit was launched internationally in late 2018, before it launched in India later 2019. e owning company is one of the oldest whisky distillers in India and one of the largest alcohol distillers in Asia. With two facilities, one in Rampur and one in Maharashtra, Radico Khaitain has a total distillation capacity of over 13 million litres per month, although their gin is made in relatively small batches at present. e fort of Jaisalmer is depicted on the logo and bottle above a blackbuck (Indian Antelope) in reference to the Jaisalmer State coat of arms.

THE GIN EXPLORER’S CLUB

Curated by Food Talk India, marked a profound platform and showcased an overarching gin experience. Featuring interactive experiences, delicious meals and music, over 9000 people attended the two-day festival. Homegrown and international gin and tonic brands came together: Doja, Gordon’s, Greater Than, Hendrick’s, Jade Forest, Jaisalmer, Jimmy’s, Roku, Samsara, Stranger & Sons, Tamras, Tanqueray and Terai. A sustainable festival, it partnered with Recircle as the recycling partner, where they successfully managed to divert 100 per cent of the waste generated in 48 hours, away from landfills and oceans.

e jiji in the moniker is derived from the Hindi word jijivisha to describe a passion and lust for life. The Covid-19 pandemic has completely changed our world, possibly forever. While the pandemic has done lots of harm, it has also led to many innovations and certain new ways of living. As we have all experienced, Covid-19 unleashed a “Corona con nement” on us, which in turn has given birth to a great desire to get away and break free. But as the pandemic has not gone away entirely, there is also a requirement for holidays with proper social distancing.

Unfortunately, social distancing is not possible in planes, trains, buses, hotels and restaurants and this has resulted in an increasing interest in caravans, campers, and other such “homes on wheels”.  Yes “camper-van tourism” has nally arrived in India and lots of folk are now going on driving holidays into the wilderness and staying and sleeping in their private “homes on wheels”. Captain has designed his Taurus to be fully self-su cient and uses his army training and traits, to take guests deep into the wilderness to experience nature in all its untamed beauty.

Taurus is based on an Eicher VE-2016 chassis and the entire design was done by Captain Suresh and his 50 years of experience of outdoor life has gone into it. e Captain’s personal involvement and his attention to detail make Taurus stand out from the others. Taurus can accommodate

When closed you have a cabin with a sofa. When it is expanded, this rear cabin converts into a full-size bedroom! e entire operation of expanding and creating additional space is motorised and can be operated via a switch or even android app on a tablet or mobile.

SELF-DRIVE CAMPER-VAN

e Maharashtra Tourism Development Corporation (MTDC) in association with Motohom, has introduced a Mahindra Marazzo camper-van, which is given out on a self-drive rental basis and up to four can travel in it.  e boot space has been smartly utilised to t custom made cabinets over which the rear seat folds down into a atbed with specially fabricated cushioning for two. ere is also a pop-up roo op tent for two with a ladder to climb up into it. is tent can easily be folded down when it’s time to drive to your next destination.

e customised storage boxes in the boot, one of which also slides out, hold amongst other things a gas stove, refrigerator, crockery, cutlery and some ready to cook packaged food and beverages. e Marazzo camper-van is also provided with a picnic table, chairs, shing rod, sports kit and a mini barbecue set. A bicycle mounted on a rack behind the tailgate is part of this camper-van and there is also a 35 litre water tank with a hand wash spray, tted below the rear bumper.

e one thing missing is a portable toilet, but MTDC says it is setting up camping grounds for caravans, and restrooms will be available there. Apparently MTDC also provides parking facilities in their resorts where the guests can use the toilets, electricity connections, ll up water, etc. BTI

Tourism stakeholders have the opportunity to adapt and grow

As we continue to navigate through the post pandemic times, we are seeing travellers around the world becoming increasingly confident about getting back on the road. While tourism stakeholders start to breathe a collective sigh of relief, there’s no denying that the travel landscape is different to how it was pre-Covid.

In a spirit of cautious optimism, the tourism industry has presented opportunities by increasingly opening up regulations while also ensuring the highest standards of health and safety are implemented. In fact, destinations that display strict and robust health and safety measures to reassure travellers are seeing better business prospects, especially in terms of tourism. Never before has this been such a serious consideration in destination choice.

Destinations that offer unique and exclusive tourism experiences are likely to be more appealing for travellers. Curated experiences that offer some form of deeper enrichment are already a big trend, as an outcome of the world’s newfound sense of what is important. The pandemic gave people time to recalibrate priorities and for tourism, this means that we need to offer experiences that allow people to grow by way of learning or personal evolution. Brands should listen in for more cues about this dramatic shift in the traveller’s personality.

In the past, tourism stakeholders were primarily addressing an audience seeking a holiday. Today, with a higher volume of remote roles in the global workforce, we need to think about how we want to have a conversation with travellers who might be seeking an environment that allows them all

the conveniences they need to work (like cowering options and excellent Wi-Fi), combined with compelling experiences for non-work hours.

Amidst being locked away for months together during the early phase of the pandemic, people also developed a taste for augmented reality and virtual reality. There is an opportunity for destinations to develop attractions that augment the experience they offer: a dusty old fort can transform its appeal by allowing people to see a day in its life back in its prime. A history museum could bring its artefacts to life.

Tourism that takes place within controlled environments, where safety protocols can be relied upon, is a good bet in the present context. In addition – and this is at the opposite end of the small and exclusive experience spectrum – we may see more grand experiences as a priority for travellers. Revenge fashion is a big buzzword these

days, and I think grand tourism experiences might work in the same way. People want a piece of everything they have missed and if you translate that into the tourism context, it means people want to make up for all the missed travel experiences.

We are tapping into this sentiment and talking to this new traveller, with the FIFA World Cup Qatar 2022TM later this year. Qatar is uniquely positioned to appeal to both grand tourism pursuits, such as global sporting events, and enriching experiences, such as desert camping, dhow cruises, kayaking in the mangroves, or visiting state-of-the-art museums. We are also maintaining the conversation with this new traveller through augmented reality experiences, such as the metaverse game Qatar Airways has launched, or apps for museum visitors. At Doha Festival City, travellers can take a virtual tour to space and learn about various celestial bodies.

Flexibility and easy cancellation are big deciding factors for travellers now; some might even be willing to pay a premium for such conveniences. Another opportunity for the industry is the fact that travellers might be open to a longer trip duration to keep sufficient margins for testing and quarantine measures.

Digitalisation is no longer an option. The world has become habituated to digitalised everything, and contactless processes are pretty much a necessity, or a basic standard, in the present environment.

The call to adapt is an opportunity and one that I believe is also a necessity – for if we don’t all adapt to the new realities of travel and traveller’s expectations, we may be left behind. BTI

The distinguishing feature of a general traveller from a business or corporate traveller is the state of mind. While a person traveling for leisure or personal affairs, would have no heightened state of thoughts, a person traveling for work of business continues with his thinking cap on, even while he is travel. If he/ she is going for a meeting then the preparation, the process and the outcome are important. Many times, right from the time the individual boards the plane the lap top is switched on. Circumventing thinking or work is not a solution, since they are essential part of the journey. However, how can one synthesis work and also not feel the stress and strain is something which one needs to work on.

The aspects which require specific consideration for health are, need to ensure muscles are not stiff and are relaxed and mind is not at a burn out pace.

Kaivalyadhama has been engaged in scientific research in Yoga since 1924 . Much of evidence gathered provides for simple measures to tackle your stiffness and calming your mind. Simple suggestions towards your dietetics would also go a long way while

Certain practises which can be followed:

1. Walking at the gate while waiting to board is better than sitting and waiting. You are going to be seated anyways in the flight.

2. Having fruits and nuts as snacks is

3. Simple stretches, putting hands together and pressing, stretching hands upwards while you are seated. Gentle stretching your toes and rotation in clock wise and anticlockwise. Squeezing hip muscle, holding for few seconds and letting go. This simple practices repeated during flight will make a lot of difference.

4. Manipulating of breath in a flight with recycled air may not be the best idea. However, closing your eyes and repeating a chant or a syllabi would be of great help. For example a low pitch humming is known to enhance nitric oxide in your nostril. This is excellent for your mind.

5. If you carry a music listening device, then loading it with a instrumental music which is relaxing is a very good idea. This will help you sleep better.

6. Covering your eyes will cut down on the light and will release melatonin. Thus, enabling you to sleep better. Following the above, will make the journey pleasurable, better and with no discomfort to your fellow travellers. BTI

Due to the suite’s blackout curtains, inviting Egyptian cotton bed sheets, and a soft down duvet, I had peaceful and undisturbed sleep. I also had access to the Executive Club Lounge, where I held some meetings, and later had some snacks and drinks in the evening.

FOOD AND DRINK The hotel provides four dining options. I had breakfast at Farmer’s Basket at Pluck. It functions on the unique concept where the guests can choose from a variety of fresh, raw organic ingredients, select a cooking and cuisine style, and thus customise their meal. The talented chefs cook exotic delicacies based on your preferences. I dined at Honk on sushi paired with a glass of red wine. The Pan-Asian restaurant is known for its exotic rice preparations; be it with hot stone, clay pots, or bamboo leaf. Pling is the hotel’s lux-lounge bar, where one can indulge in light snacks and enjoy the evening upbeat ambience with colleagues and friends. You can also dine at Food Exchange, which o ers Indian and European fare. Club Honk is the ideal spot for cocktails, whereas the sports bar Quoin is ideal for unwinding

The Peacock Ballroom is 1,181 sqm of pillar-less space, and can be used for conventions as it o ers seating for 1,500 people. The hotel’s meeting space is very well-equipped, with state-of-the-art audio-visual technology. The 13 innovative co-meeting rooms and three boardrooms have a personal events manager and IT manager for assistance. The Courtyard provides welcome al-fresco breaks between meetings.

LEISURE The Pullman Wellness Spa specialises in curating an anti-stress environment that is conducive for relaxation and mental and physical wellbeing. The spa utilises Phytomer, a French range of skincare products that works with marine biotechnologies. Work out at the hotel’s very own fitness centre, or take a dip in the soothing waters of the pool to unwind after a long day.

Bengaluru symbolises the unique blend of the city’s cosmopolitan and innovative spirit. With a well-manicured Butterfly Garden and Ribbon Lawn, the hotel premises are ideal for tranquil evening walks. The 30 m heated outdoor pool provides a place to unwind from the city bustle. The hotel is beautifully designed with a unique collection of artwork created by twenty five contemporary Indian artists.

WHERE IS IT Located in North

Bengaluru in the heart of Embassy ONE development, the hotel o ers equidistant access to o ices, shopping, plenty of dining options, tech parks, and other tourist attractions. It is conveniently located just thirty minutes from the Kempegowda International Airport.

ROOMS Guests can choose from a wide range of rooms and suites for their stay, including the Superior and Deluxe rooms, Garden suite, Imperial suite, and Executive suite. I stayed in the Executive suite that sprawls over 64 sq m, and o ers panoramic views of the cityscape. It

floors and a muted colour-scheme, the suite presented a feeling of relaxation. The hotel o ered a customisable Four Seasons Bed, amongst other amenities like cotton bathrobes, an in-room co ee machine, and a safe that was large enough for laptops. With a separate living room and bedroom area, the suite was built perfectly to have guests or colleagues over.

FOOD AND DRINK The hotel has a wide selection of restaurants and bars to choose from. The Lobby Lounge and Terrace is ideal for relaxed moments through the day, right from afternoon tea, an evening snack of pastries, or a drink of whisky as a nightcap. Speaking of whisky, one cannot miss The Collection, a lounge which has a curated collection of whiskies from around the world. One can have light snacks and tropical drinks by the poolside bar. Dine at Far & East, to taste Chinese, Japanese and Thai delicacies. I had an excellent dinner here, paired with a glass of red wine. It has a modern ambience and mouth-watering dishes ranging from Peking duck, dim sums, and sashimi. During my stay I had a bu et breakfast at CUR8, which serves Indian and Italian fare.I had drinks and sushi

at Copitas, the hotel’s cocktail bar, located on the terrace.

MEETINGS The hotel o ers 1541 sqm of meeting and event space. Its largest ballroom is 546 sqm, and it also has an indoor banquet hall with the capacity of 870. The terrace provides outdoor banquet space, which is ideal for around 200 people. The hotel o ers three meeting rooms: Nectar room, Lotus room, and the Director’s room. With three ballrooms including the Grand Ballroom, Garden Room, and Terrace, Four Seasons Bengaluru is wellequipped to hold meetings and events.

LEISURE The hotel has a 30 m long outdoor swimming pool that is ideal for a relaxed swim. Get in a quick workout upon the background of lush lawns and pool views at the hotel’s fitness centre. The Butterfly Garden and Ribbon Lawn are great for contemplative evening strolls, or early morning walks. Don’t miss out on Infuse Spa, which has 11 treatment rooms and a number of treatments like a co ee scrub, candle massage, and chocolate and spice trail treatment.

VERDICT Four Seasons Bengaluru is a haven of luxury and relaxation. It brings together the best of both worlds, with its convenient location and commitment to hospitality. This hotel is great for families and business travellers alike.

BACKGROUND Hilton Goa Resort marks Hilton’s third property in Goa. The hotel’s strategic location makes it ideal for work as well as relaxation, as Hilton o ers its signature hospitality and leisure to business travellers.

WHAT’S IT LIKE I liked how The Hilton Goa creates a fine ambiance by melding contemporary design with local Goan highlights. The hotel was extremely easy to find, and the interiors were spacious, with no unnecessary queues to wait in by the reception desk. The open space by the right of the reception housed the dining and breakfast area, creating a cheerful environment.

WHERE IS IT Located on Saipem Hills, surrounded by lush green slopes, Hilton Goa Resort overlooks the scenic Nerul river. It is just ten minutes from Calangute and Candolim beaches and in proximity to plenty of shopping areas, historical sites, and nightlife in the city centre. The resort is conveniently located an hour’s drive away from the airport.

measure 55 sqm, the suites sprawl over 240 sqm, and o er panoramic views of the sunset. I stayed at the King Premium Riverview suite. It was extremely luxurious and exclusive, with a separate living and dining area. It also had a powder room, artistic French windows, and a skylight bathroom with a tub to unwind in. The plunge pool in the private balcony o ered a chance to relax on a stunning backdrop of sunsets and lush lawns. Basic amenities like a fridge, ironing board, free WiFi, and a Nespresso machine were available.

FOOD AND DRINK The hotel has three restaurants with a variety of cuisines. @Saipe is an all-day dining restaurant known for its multi-cuisine specialties. The decor is inspired by the classic Goan vibe, and lends a relaxed atmosphere adorned with Indo-European designs. The live kitchens were a visual delight, and transformed the restaurant into a culinary theatre. The bu et breakfast o ered a range of breads, pastries, cereals, a charcuterie station with cold cuts and cheeses, along with

the basic bacon, eggs, sausages, and hash browns. For lunch, I indulged in a classic seafood meal to complement my stay at Goa, with prawns for a starter followed up with fried fish and Goan bread. Dinner consisted of sumptuous fried fish, paired with a glass of Cabernet. Unfortunately, due to Covid-19 restrictions, restaurants COCO and Doce weren’t operational. Following Covid-specific norms, menus were available via a QR code displayed at each table.

MEETINGS Well-equipped for the needs of the business traveller, the hotel provides a total of 1810 sqm of events and meeting space. This includes an expansive pillar-free Grand Ballroom along with four flexible meeting rooms. Amongst other things, the hotel o ers a pre function area, and rooms unico, dois, tres, quarto, and terraco. Two lush outdoor banyan lawns are also available for holding events.

LEISURE Don’t miss out on the hotel’s very own spa for relaxing massages and treatments after a long day of sightseeing or attending conferences. One can also unwind by taking a swim in the tranquil waters of the outdoor pool, or grab a quick workout at the well-equipped fitness centre.

VERDICT Hilton Goa is ideal for business travellers. Set in a scenic location, with mesmerising sunset views, luxurious amenities, and proximity to the beaches, the hotel is a haven of relaxation.

BACKGROUND One of the largest and oldest properties of Goa, The Leela Goa has remained a favourite among families and business travellers for decades. While the resort dates back quite a few years, it has managed to maintain a freshness within its decor with constant renovations and redevelopments.

WHERE IS IT It is about an hour away from Dabolim airport in South Goa. It is by the Cavelossim beach in Mobor and is also one of the few properties to be beside the Sal river.

WHAT’S IT LIKE Entering the colossal resort, statues of elephants and dusted pink hued structures welcome me. I’m instantly awed by the sheer size of this property. It’s easy to get lost within the verdant surroundings of the resort that sprawls over 75 acres of fresh water lagoons and lushness. While the 206 room property is a masterpiece of colonial Portuguese architecture, its lobby breaths of the 13th century Vijayanagara design.

ROOMS I stayed in the Lagoon Terrace room (82 keys) that spans 35 sqm and is connected to a private balcony (10 sqm) that overlooks the lagoon. It was wonderful to watch the lotuses bloom on the lagoon each morning while enjoying a cup of

co ee. The marble bathroom features a bathtub and separate shower area. Other categories include Lagoon suite, Club categories - Club suite, Club Pool suite, Royal Villas and the Presidential suite.

MEETINGS The resort’s conference and meeting rooms can accommodate up to 400 people according to the choice of venue and seating configuration. Outdoor functions can be hosted on the foreshore lawns, beachside and pool side depending on the season and number of attendees.

DINING It’s safe to say that F&B is one of the highlights of this resort. They have

a spectrum of dining and bar outlets that are each di erent from one another. Their restaurant at the beach - Susegado - is ideal for lunch and sundowns and the menu features international cuisines and local Goan fare with fresh catch. I indulged in some authentic Indian dining at Jamavar, the group’s signature Indian outlet. The galauti kebab, dal Jamavar, and chicken xacuti were my preferred dishes. I also enjoyed dinner one night at Riverside - their Italian fine dining restaurant by the river. Prosciutto with tru le cream and burrata fagottini were made to perfection. Breakfast brunch can be enjoyed at The Restaurant that serves a diverse range of cuisines paired with cocktails and a lavish dessert spread.

LEISURE Recreational amenities include a well-equipped fitness centre, a swimming pool and a spa. Highly recommend the signature spa treatment post a dip in its swimming pool. Guests of the Club rooms and above have access to a dedicated Club Lounge that features a gorgeous emerald green pool that I was given access to. A fullservice beauty salon, a fitness centre with steam and sauna, a tennis court, and a lush green 12-hole par 3 executive golf course are some of the other leisure amenities at the resort.
