In London, the RHS Chelsea Flower Show begins on 22nd May, it’s Father’s Day on 17th June and Summer Solstice on 21st June. And it’s a great couple of months for football fans with the Champions League Final (26th May), the start of FIFA World Cup in Russia (14th June) and you’ll need to make the tough decision if you’re watching the FA Cup Final or Harry and Meghan’s Royal Wedding on 19th May.

INTERVIEW WITH M A U R I L I O M O LT E N I HEAD CHEF AT TOZI How did you find yourself working as Head Chef at TOZI? I was Head Chef at Shoreditch House - at the time the best club in London - a huge place with three restaurants and a big team. It was a great place to work but I felt the need to go back to one place - classic Italian, my cooking, looking after people, all about the food and the passion. It was a big gamble but it paid off.

you stay busy. People really have a special, memorable experience with us. It’s about the environment we create and Italian cooking with minimum fuss, maximum flavour. You can play with the food, the concept is lots of dishes - not starter, main, dessert. We change the menu every two to three months and have specials everyday.

What can we expect from your latest menu? Our new menu has just come out and the focus is always ‘Tozi’ is Venetian slang for a bunch of friends. Is that on seasonality. Have a go at making them yourself at home with the recipes below or come and enjoy them created for you, available until the end of June at the Chino bar. Brazilian Basil Fizz - £11

25ml cachaca 15ml St Germain elderflower liqueur 15ml agave syrup 20ml lemon juice Shake all the ingredients with ice, strain then top with Prosecco and garnish with basil leaf and white pansy or white orchid.

Blood Orange Blossom - £11

25ml Absolut Mandarin 25ml Chambord 10ml Cointreau 50ml cranberry juice 20ml fresh lime juice 10ml grenadine

Mix all the ingredients then garnish with mint, a slice of blood orange and an edible pansy.

Smell the Roses - £12

40ml Warner Edwards ‘Melissa’ lemon balm gin 20ml St Germain elderflower liqueur 50ml flowering jasmine tea 2 dashes of Peychaud’s bitters Mix all the ingredients then garnish with a spray of rose water, edible flowers and serve with a lemongrass straw.

ENGLISH WINE WEEK Saturday 26th May – Sunday 3rd June 2018 The UK now has 577 vineyards and produces some fantastic wines. Join us in our restaurants with British inspired cuisine for English Wine Week and celebrate the brilliant blends produced in this country.

Florentine Restaurant and Bar, London Florentine will be putting on a special English Wine Week menu where you can choose two or three courses (£28 or £40). The food includes ham hock, mackerel, pork belly, rhubarb crumble, and each course is paired with a different glass of English wine. Scream for Ice Cream Here comes the sun and with it, the craving for silky, cool ice cream. But with so many places in London to choose from, how do you know which are worth the sugar high? Here are nine of the best parlours to grab a scoop in the capital.

of traditional flavours including dulce de leche, biscotti, pistachio, and stracciatella. Plus, some less traditional options like pumpkin pie, ginger and fig ripple. They also have a range of sorbets and cocktail gelato available. LA GELATIERA, 27 NEW ROW, WC2N 4LA Genuine gelato made on site all day, every day. You can even see its creation through a glass panel in the floor. Le Gelatiera specialises in flavour combinations and their menu changes daily. And though they have some wacky items on the menu – including basil and chilli, watercress and lime, and Cornish blue and walnuts – they also have some outstanding ‘normal’ gelato and sorbet flavours. Plus, they have dairy free and vegan options. In fact, they’ve created 90 flavours; all with natural ingredients and no preservatives. They also do waffles, gelato cakes, coffee and take-home tubs.

AMORINO, VARIOUS LOCATIONS Available all over central London (as well as in Italy, France, Germany, Spain and more), Amorino is one of the most popular ice cream brands in town. Yes, they do delicious gelato, but the main draw is the Instagramworthy presentation. Amorino don’t do sloppy, drippy blobs, they do flowers in cones. Using slabs of ice cream, the skilful servers will create a delicate rose out of your chosen flavours. They even offer a frozen macaron as a garnish. You can, of course, get a scoop in a tub, but why would you?

SNOWFLAKE, VARIOUS LOCATIONS With new locations popping up every year, Snowflake is fast becoming a London favourite. And though they do offer rich, indulgent gelato, it’s all the trimmings that makes it stand out. Serving waffles, crepes, affogatos, and gelato cakes, it’s a great place to sit in and enjoy a decadent dessert. They also do seasonal specialties, an ice cream afternoon tea and were once home to the £99 ice cream cone!

GELATORIO, 2 RUSSELL STREET, WC2B 5JD For a more traditional gelato, Gelatorio is the one. Located right next to the Theatre Royal, Drury Lane and just moments away from Covent Garden piazza, it’s a great little place to stop at while shopping. All the ice cream is made in-house daily using machines imported from Italy. The super smooth gelatos come in a range

GELUPO, 7 ARCHER STREET, W1D 7AU Gelupo is the place to go for artisanal ice cream. From the chef behind Bocca Di Lupo, Jacob Kenedy, Gelupo offers beautifully crafted gelati and sorbetti in a wide range of quirky but mature flavours. Using fresh ingredients – including mint, blood orange and yuzu – you won’t be able to get enough of these culinary adventurous treats. MILK TRAIN, 44 BEDFORD ST, WC2E 9HA They kicked off the candy floss ice cream trend a few years back and they’re still pulling in the crowds with their innovative treats. If you’re looking for high quality taste-overstyle ice cream, this isn’t the place for you. If you’re looking for something to wow your followers on social media, then head on over. There isn’t much variety in flavours but it is a lot of fun. And who knows what they’ll come up with this summer… BUBBLEWRAP, 24 WARDOUR STREET, W1D 6QJ Another trend that hit last summer's crowds was ‘the bubblewrap’ – a hollow waffle wrapped around ice cream and topped with sweet goodies. Though there are a few places around London to get the Hong Kong style treat, most around Chinatown, but Bubblewrap is the most popular. Just be warned, you might have to queue a while to get your hands on it. CHIN CHIN LABS, VARIOUS LOCATIONS Traditional ice cream a bit too vanilla for you? Then head to Chin Chin Labs in either Soho or Camden. Using liquid nitrogen to quickly freeze a custardbased ice cream, Chin Chin Labs offer thick, luscious, crystal-free ice cream that’ll make the eyes roll into the back of your head. With a bunch of weekly specials that can be served as ice cream sandwiches, it’s probably the most fun you’ll have with a frozen dessert. GREEDY GOAT, BOROUGH MARKET Are you always left sad watching your friends eating the treats you can’t digest? For the lactose intolerant, Greedy Goat will turn your frown upside down. Using British goats milk which has 10% less lactose and a lower fat content, Greedy Goat is easier on the belly without sacrificing any flavour.

AN EXECUTIVE HOUSEKEEPER LIVIA IONITA

What would you say is the most interesting thing about your job? I’ve been doing the job for 15 years now, 14 of those being at Park Plaza Hotels and Resorts and I can honestly say that everyday is completely different. One day you can be in training and another day a guest enquiry might take all day. Is there anything about your job that you think people would be surprised to hear about? People are always surprised about the level of planning, organisation, people management and budgeting that’s involved. On a daily basis we have to housekeep for 299 bedrooms, 15 meeting rooms and huge public spaces, and have a team of 55 to do this. The guests’ needs are evolving so quickly too, things change from one day to the next and we have to keep up. What do you enjoy most about your job? I most enjoy finding a very quick solution to something the guest can’t wait on. They may

need a pair of cufflinks or a shirt dry cleaning for a special occasion within a very short time frame so we’ll borrow something from lost property or do the dry cleaning ourselves. Also surprising guests - when we can make something a bit personal for them if we know they’re here for a special occasion. We also randomly pick a ‘Guest of the Week’ and leave them a small gift and a handwritten note. What’s the most unusual thing that you’ve seen in lost property? When it comes to lost property you always have to put yourself in the mindset of the guest who might check out in a real hurry. I’ve found a shirt in the rubbish bin before and just had a thought to keep hold of it just in case. A

few days later the guest rang up to ask us if we could find it as he’d changed his mind about throwing it away! One lady left her whole handbag with passport, wallet, everything, and was on her way to a cruise so we had to put the handbag in a cab to chase her on the way to the port. We’re always conscious how important things might be to people, particularly toys. We posted a lost teddy back to a child with a letter from it saying it had stayed behind because it had wanted to see a bit more of London, but he was glad to be on his way home now.

SUMMER RACING A British summer wouldn’t be complete without a day at the races. Get dressed up, and enjoy some sunshine (hopefully) and the adrenaline rush (guaranteed), of some of England’s most quintessential sporting events.

HENLEY REGATTA Founded in 1839, the world’s most famous regatta is known as much as a social event as it is a sporting occasion. This year it takes place Wednesday 4th - Sunday 8th July. Trains run frequently from London Paddington to Henley-on-Thames. Holland Park The relatively small park near Notting Hill is full of beautiful landscaped gardens, ornate sculptures and peacocks. Yes, live peacocks roam the park freely, along with the usual wildlife you’d expect. You won’t only have colourful land birds to snap, Holland Park is also the home of Kyoto Gardens – a Japanese-inspired garden with a rocky waterfall and hundreds of koi carp. Spending a couple of hours walking around the park will provide you with enough Instagram snaps for weeks.

Victoria Park If you can only visit one park while in London, make it Victoria Park. This huge public space in East London is often used for outdoor concerts and festivals. But when it’s not filled with revellers, there’s a lot to see. The park is sat on a canal that’s home to a fleet of houseboats. On the west side, you’ll find a huge lake filled with fountains and statues. You’ll also find a Chinese pagoda, a maze and a skatepark. It’s great for little ones with the V&A playground, an outdoor kiddie pool and adventure play areas to keep them entertained. For the big kids there’s People Parks Tavern – complete with mini golf course and a bright beer garden which will make your summer ‘gramming on point. If that wasn’t enough, on Sundays there’s a farmers’ market with food that’ll get your followers drooling with envy.

Regent’s Park Tucked in Regent’s Park is the world-famous ZSL London Zoo. Enough of a reason to visit the park alone. But if you’re not in the market for visiting the animals – which itself is an Instagrammers dream – Regent’s Park has a lot more to offer. It’s full of bright, colourful gardens, impressive statues and a boating lake. Plus, just north of the park is Primrose Hill, a place steeped in history and the ideal place to capture the city peeking over a sea of trees. Climb the grassy hill and watch the day turn into night for another incredible landscape shot.

Hyde Park London’s biggest and probably most famous park is more than a good picnic spot. Within the main park, you’ll find everything from sporting grounds to smaller parks. You can rent boats and even swim in The Serpentine – a large lake running through the middle of the park. There’s also tennis courts and horse riding facilities. It’s the home of the Princess Diana Memorial Fountain and Speakers’ Corner where anyone can speak their mind openly. Though it’s technically no longer part of Hyde Park, Kensington Gardens sits on the westerly edge of Hyde Park. There are so many Insta-worthy things to capture in Kensington Gardens including Kensington Palace, the Diana Memorial Playground, the Italian Gardens and Elfin Oak will all earn you hearts for days.

Greenwich Park Though Greenwich Park is predominantly filled with large grassy hills, it’s also historically significant. With the Royal Observatory and Greenwich Palace, you’ll have plenty to talk about on your social channels while visiting. But if grand buildings and the Meridian Line aren’t enough, there’s more. You’ll find a herbaceous border and the Queen’s Orchard next to the Palace, and on the south-eastern side, you’ll find the Wilderness Deer Park where, you guessed it, there are live deer. And if you still want more, the Old Royal Naval College is a short walk away.

What has been your best gig to date? I’ve done so many wonderful shows around the world and playing the Royal Albert Hall alongside George Benson and will.i.am (with Diana Ross sitting in the the front row) was definitely one of them.

It Through The Grapevine’ by Marvin Gaye, ‘We Choose Love’ - an original by myself and Xy with a lively vibe, and ‘Hey Ya’ by Outkast is a fun song to perform. Who have you had the pleasure to work with? I have had the pleasure of working with great women like Miss Baby Sol (check her out), Lisa Stansfield, Paloma Faith, and great men like Andrew Roachford, Omar, Simon Cowell and One Direction, but my favourite was writing with Motown’s legendary Lamont Dozier. That man is so much fun - he's like James Brown without the moves!

How would you describe your music? I always like cross-pollinating genres. I would say that rock and soul describes my sound best, with classic melodies, grooves and modern overtones. (Equals good times!) Who inspires you and why? Multi-instrumentalist, entertainer, producer, humanitarian… the artist formerly known as Prince (RIP) is one of my biggest inspirations. The man was dedicated to his music, to doing good things without asking for recognition and in turn I am inspired to inspire others along the way. Thank you purple one!

What new music or projects have you got coming up? The `Adelay` album is in production. It's a new original project coming out in the autumn of this year. This has a fusion of organic and electronic sounds with sweet melodies. Also, I mentioned earlier how Prince inspired me to inspire which is why I support The Coffee Music Project, it's all about helping emerging artists. It's currently in London and New York and launching in LA in the autumn. It raises money for Project Waterfall, to bring clean water to coffee producing countries a fantastic cause. www.coffeemusicproject.com www.projectwaterfall.org

What is your favourite cocktail? A French Martini. What is your craziest moment in your career so far? Singing at Soho Revue Bar (now The Box in Soho)... I was about to perform and somehow I set myself alight like a marshmallow. The irony was my opening song that night was called 'Hot'! You just can't make that stuff up.
