ITALIAN WINE GUIDE 2019 Gabriel Riel-Salvatore is an Italian-Canadian journalist and consultant who holds a WSET advanced level degree. His involvement in the wine industry spans over 15 years and he has been the editor-at-large and resident wine expert at Panoram Italia for the past nine years. He’s collaborated with specialized wine magazines such as Gambero Rosso (Italy), Cellier (Canada) and Wine & Degustation (Czech Republic) and is now living and working in Prague.

Interview with Francesco Zonin from Zonin1821 Zonin is a family story? Yes, it starts in Gambellara in the Veneto region. The first document that connects us with the wine industry dates back to 1821. Our activities were mainly tied to the Veneto region until the 1970s when we started expanding our activities throughout the region, then Italy and later across Europe and eventually other continents. In 1970, my father had the idea of building a portfolio that would represent the best of what Italy had to offer in terms of wine. Aside from the tenuta we had in Veneto, our first acquisition was a winery in the Friuli region called Tenuta Ca’Bolani in 1970; in 1979, we purchased Castello di Albola in the Chianti region; in 1980, Abbazia Monte Oliveto in San Gimignano; in 1985, Castello del Poggio in Piedmont; in 1987, Tenuta Il Bosco in Lombardy; in 1997, Principi di Butera in Sicily; in 1999, Rocca di Montemassi in Maremma and in 2000, Masseria Altemura in Puglia. Today we count about 2000 hectares of vines, which makes us the biggest owner of private vineyards in Italy and the only one spanning 7 different regions covering 10 specific wine denominations.

We also have a project in Chili called Dos Almas, which means two souls. It’s our idea of bringing 200 years of winemaking from Italy to one of the most interesting wine regions of the world. For instance we produce a sparkling wine with Chardonnay grapes in a charmat style, exactly like Prosecco. Are your wines always produced locally? Every winery is absolutely independent. We have medium-sized wineries that cover 150 to 600 hectares, the biggest being Tenuta Ca’Bolani. Each of them carries its own staff of agronomists, wine-makers, as well as their own cellars and production facilities. We are also aiming to focus more and more on biodynamic and organic wines with our wineries in Tuscany. The particularity of Zonin is that once these wines are made and bottled, they are shipped to our headquarters in Gambellara where we store all our production. This facilitates our logistical services for our clients. For instance, if an importer or a restaurant needs a few bottles of Chianti Classico, Nero d’Avola or Moscato, we can prepare a mixed order according to their needs.

Act Locally Is the Venetian identity of Zonin something that you try to bring to the different wineries you own or do you always try to keep the local flavour of your wines? We have to respect the local identities, because wine is something that is very much tied to the land and to the local culture.Yes we are from Veneto, but we always try to respect the territory that is hosting our activities, be it Tuscany or Sicily. The Venetian component that sets us apart and that we try to bring to the table is the specific way we operate our business. How important is the Canadian market for Zonin? It is especially interesting because we are talking about one of the strongest economies in the world. It is a market that is increasingly learning about wine and most of all quality wines. Its consumers are curious and are looking for good wines, which is a blessing for a producer like us that is always trying to make better wines from some of the most interesting areas such as Sicily or Puglia, for instance.
What is the main focus of Zonin on the Canadian market? We believe we still have a lot to offer. We are just beginning. Italy is a very rich country in terms of wine. We have over 300 protected denominations (DOC) and more than 600 indigenous grape varieties that represent a unique territory. It’s the land of the thousand villages, with so many different realities to offer. We are lucky because we have a very wide portfolio that represents nine different wineries with so many DOCs. Specializing on great local varieties gives us lots of business opportunities. Because having so many indigenous grapes also means having so many different taste profiles we can offer. This enables us to focus on a wide range of consumers and also translates into a wide portfolio in terms of price where one can find a wine perfect for day-to-day consumption or to celebrate a birthday. We are one of the biggest producers of Prosecco in Italy, yet we also own wineries producing award-wining wines catering to wine collectors.
Are the Italian communities scattered around the world helping you access more easily the international market? The Italian communities are indeed helping us a lot. There are two key elements that are helping us promote Italian wines. The first is the Italian communities from Northern and Southern Italy, who are our greatest ambassadors. They look for those products that they were born and raised with and they also try to promote them around the world. The second is the Italian restaurant industry.With the success of Italian food around the world, this is another very important channel for Italian wines, be it in Japan, South Africa or Canada.
Any special plans for your upcoming 200th anniversary that you will be celebrating in 2021? We’ll probably hold a big celebration in Italy and in some of our best markets. The interesting thing is that the SAQ is going to be celebrating its 100th anniversary in 2021, so we might do a joined celebration. We are also coming up with a new Prosecco, with a new distinctive packaging designed by a very famous designer, to underline our 200th anniversary. It’s a Prosecco fermented on the lees for 200 days. That is unusual for this type of wine. So it will be a better expression of the potential of Prosecco and it should be available in Quebec.

FAZIO WINERY Tasting the Charms of Sicily by GABRIEL RIEL-SALVATORE Wines are often like their winemakers, reflecting a careful balance between land and culture. Lilly Fazio, from the Fazio winery in Erice in Western Sicily, is no exception. Graceful and tough at the same time with that “je ne sais quoi” that exudes an inner dolce vita, she embodies a hidden corner of the Trinacria that shines through with authenticity. Open a bottle of Fazio’s wines and you’ll soon be transported under the Sicilian sun and experience its irresistible charms.
Located in the surrounding landscapes of the medieval town of Erice, perched atop a hill 900 metres above sea level, Fazio’s vineyards span over hilly terrains ranging from 300 to 650 metres giving their wines a nice concentration and a characteristic minerality typical of the region’s rich limestone soils. Local varieties such as Nero d’Avola, Cataratto and Grillo stand at the forefront of Fazio’s 100-hectare property, while

experimentations with Nerello Mascalese have shown promising results over the past few years on this part of the island located opposite of Mount Etna. A careful management of the vineyards has proven very positive too. Paired with a will to express the true potential of Sicily’s viticulture, Fazio soon joined the bandwagon that led the island forward in terms of quality winemaking. Quite a feat one would say, for the Trapani area—famous for its production of bulk wines and Marsala—is the second most planted area in Europe after Bordeaux. Lilly’s husband Girolamo and winemaker Giacomo Ansaldi decided to make a vital shift from quantity to quality, propelling the family winery—active for four generations—as the region’s leader in terms of quality winemaking. Situé à la périphérie du village médiéval de Montalcino, au sommet d’une colline, dans la province de Sienne en Toscane se trouve le domaine Col d’Orcia dont la riche histoire viticole remonte aux années 1700. En 1973, le domaine a été acheté par le comte Alberto Marone Cinzano de la célèbre famille Cinzano. Ce chef de file du Brunello di Montalcino a largement contribué à la promotion de cette région viticole qui est l’une des plus prestigieuses d’Italie. On lui doit entre autres la démarche entreprise pour l’obtention de la DOC du Rosso di Montalcino décrétée en 1983 et également les premières plantations de chardonnay et de pinot grigio. Aujourd’hui, son fils, le comte Francesco Marone Cinzano, perpétue les innovations que son père Alberto avait initiées et a fait de Col d’Orcia le premier et le plus grand domaine certifié bio de Toscane.
Le nom du domaine se traduit par «la colline surplombant la rivière Orcia», en raison de sa position dans les collines vallonnées entre la rivière Orcia et le village de Sant’Angelo in Colle. C’est un coin de Toscane d’une beauté extraordinaire dont les magnifiques paysages sont classés par l’Unesco. Ici, les orientations sud donnent aux vignes une exposition idéale aux rayons du soleil. Les sols sont composés de calcaire et de marnes ce qui facilite l’irrigation naturelle. Le climat est typiquement méditerranéen et idéal pour produire l’un des meilleurs nectars de Toscane, le Brunello. La production de Brunello étant très peu élevée, ce grand vin demeure assez rare et donc plutôt cher. Voilà pourquoi les amateurs futés se rabattent sur le Rosso di Montalcino qui possède des qualités gustatives très appréciables, mais qui coûte la moitié du prix d’un Brunello di Montalcino.

Ce rouge aux notes fruitées, épicées et légèrement boisées est d’une grande fraîcheur et possède des tanins souples. Issu des meilleures grappes de sangiovese (les mêmes que pour la production du Brunello di Montalcino), cultivées sur le domaine, ce vin classique est mis en marché un an après les vendanges. Joues de veau braisées au vin rouge
1- La veille, mettre les joues dans le vin rouge et faire mariner au frigo. 2- Le lendemain, retirer les joues de la marinade.

3- Verser le fond de volaille et le vin dans une casserole, porter à frémissement et laisser réduire de moitié. Réserver.
2 t. (500 ml) de fond de volaille
4- Faire revenir les joues de veau dans l’huile à feu moyen vif, ajouter la réduction fond de volaille vin rouge, couvrir et cuire à 300°F (150°C) pendant 2 heures.
1/2 bouteille (375 ml) de vin rouge
2 t. (500 ml) de lardons
3 t. (750 ml) d’orge noire, cuit 1 t. (250 ml) d’oignon confit
5- Au moment de servir, faire revenir les lardons dans une poêle chauffée à feu vif, ajouter l’orge, puis le jus de cuisson des joues.
Huile d’olive
6- Ajouter l’oignon confit, puis les joues et poursuivre la cuisson juste le temps de chauffer le tout.
