Sweet & Sour Pork -

This looks complicated, but really isn’t! 15 oz can pineapple chunks in their own juice For Sauce 1 tablespoon plus 1 Teaspoon plain rice vinegar or cider vinegar 2 teaspoons dry sherry 1 teaspoons low salt soy sauce 1/8 teaspoons ground ginger 1/8 teaspoons ground allspice 1/8 teaspoons hot pepper oil or crushed peppers 2 teaspoons cornstarch 1/4 cup water 12 ounces pork tenderloin 2 tablespoons minced leeks, green onions 1/2 cups sliced green pepper (I used sweet peppers) 2 small onions, sliced 2 teaspoons snipped fresh parsley 1/8 teaspoon pepper Drain pineapple, reserving the juice. Add water to reserved juice to make 1cup.

In a small saucepan, stir together the pineapple juice, vinegar, sherry, soy sauce, ginger, allspice, and hot pepper oil. Cook over medium heat for 3-4 minutes or until sauce comes to a boil. Meanwhile, mix cornstarch & water in cup, whisking to dissolve. When the pineapple juice mixture is hot, whisk in the dissolved cornstarch. Cook over medium heat for 1 to 2 minutes, or until sauce begins to thicken, whisking constantly. Remove from heat. Trim all fat & silver skin from pork. Cut the pork into 1/4” strips. Heat a large skillet or wok over medium high heat. Cook the pork for 3-4 minutes push to the side. Reduce heat to medium. Add leeks, peppers, & onion to the skillet. Top with the pork. Sprinkle with parsley & pepper. Cook 4-5 minutes until veggies are crisp tender and the pork is no longer pink in middle. Stir in the sauce & pineapple. Heat through. Serve over cooked rice.
