HAS the six-letter word, change, got into the Chinese New Year festivities? Indeed, it’s often regarded as the most important festival in the Chinese calendar. Originally spanning a celebration period of 15 days, complete with elaborate customs and practices, the modern Chinese New Year celebrations are now not only shorter but also far more simplified. Is it really losing its blessed Oriental charm? Gone are the days where one would be seriously rebuked by elders for wearing any trace of black. There are more people travelling overseas during this holiday period instead of staying at home with the family, which has always been one of the key aspects of the festival. It makes a lot to ponder if the sheer bliss of Chinese New Year is no longer important or relevant. A TIME FOR REUNION? The reunion dinner on the eve of Chinese New Year is one of the most recognised customs. It is probably the practice that most nonChinese people remember. In yesteryears when transport was less developed, people would still travel miles over days just to be home for reunion dinner. This shows the importance of the family theme during the annual festivities. With more modern transport systems, people are able to fly back home easily even if they are thousands of miles away from home. While many still observe the reunion dinner practice, there are more who choose to stay away during the main festive season. The importance of familyhood is always stressed. Chinese New Year is often the only time of the year when members of an extended family get to meet and catch up.
While this sounds heartwarming, it can be an equally stressful period for many. Behind mundane questions like “When are you getting married?”, “When is your baby coming?” and “What do you work as?” is a hidden battlefield of comparison and desire for wanting to be better than the other. For estranged or small families, Chinese New Year also loses its significance considerably. CROSSING OF A YEAR Besides family, the festivities also mark the end of one cycle into another. Many customs such as spring cleaning are conducted with the intention to “wash away” the past for “new better things”. For the religious, it is also a time to connect and make offerings to the Gods in the hope of greater prosperity. More nostalgic for the older generation, who still remembers kampung life may remember Chinese New Year as the only time they experience any form of indulgence. Today, it is easy to find meat, fish and soft drinks on the dining table of most families. For our parents and grandparents who lived during the growing years of Singapore, such foods and new clothes were luxuries that kids could only look forward to once a year. While people were poorer then, the essence of celebration and family togetherness seemed stronger. Now, the expectations for receiving Chinese New Year appears to have dulled somewhat.

REMINDER OF IDENTITY A recent quick poll from different age groups revealed that Chinese New Year may no longer be as grand as it used to be, but it still remains very important in people’s hearts. While it is hard to avoid some gossiping when people get together, it might be easier to see that as part of the beauty of family. Family gatherings may not always be flawless and comfortable, but at least there is a family to share your life with. This is a blessing that one can be grateful for and perhaps share with those away or without families during this special season. So, let me ask you a personal change-of-a-question: Will you be home for Chinese New Year this year?

o you appear older than you really are? Premature again signs are skin damages caused by free radicals and oxidization. It is for this reason that Vitamin C’s strong and natural anti-oxidant properties are essential to staying youthful.
THE STORY BEHIND AGING Oxygen is essential for basic cell function in humans and most animals. However, research shows that oxygen is capable of producing toxic substances such as peroxide, superoxide, hydroxyl radicals and “excited stage oxygen”. These highly reactive substances combine with other molecules in the body to form “free radicals”, which are high energy chemical substances ‘looking’ for something to combine with. This is known as free radical damage or oxidization. As free radical damage mounts, affected cells can no longer perform properly. Tissues degrade and in time, disease sets in. Aging has been defined as a gradual accumulation of free radical damage. HOW DO WE PREVENT FREE RADICAL DAMAGE? There are 2 solutions. The first would be to avoid the causes of free radical damage by eliminating toxins from our diet and lifestyle. However, even if we were to do so, we would still need oxygen and to exercise – which produces a lot of free radical stress.
The second would be to obtain anti-oxidants from our food. Anti-oxidants help to combat cell and tissue damage. The body is capable of handling free radicals under normal circumstances but if the supply of antioxidants is insufficient, free radical production becomes excessive, which leads to premature aging. PLEASURE WORK is a four-letter word Tonny Chan devours with pleasure. Come Chinese New Year, it is work, work and work and he relishes it because he takes pride in his work as a leading chef. Yes, for most Orientals, the New Year is a nostalgic time to relax, feast and connect with family. But for this Head Chef of Grand Hong Kong Chinese Restaurant, it’s just another proud day at work as the brisk business demands his presence. “After working in the food-line, you become numb to most major festivals and holidays. You are more concerned about preparing for work than celebrating,” he says with pride. For Chef Chan, New Year celebration often involves an early lunch gathering before launching into a full day of business before he sits down for dinner, as late as 11pm. This is a professional sacrifice that his family has come to accept as well, knowing how much he enjoys his culinarywork. But he recalls the good ‘ole times in Hong Kong, when the New Year was a bountiful family-celebration for him. “I was from the rural areas in Hong Kong. When I was young,

my father would buy a set of new clothing for New Year,” he recalls with a tinge of nostalgia. “The aunties would sit out in the common areas and make New Year cakes and goodies. “Wearing a warm jacket in the cold and lighting firecrackers really created a New Year festive mood.” Now with changing times, he says “celebrations are a lot more simpler now”. “No one knows how to make those nice goodies anymore and there are no more firecrackers either,” he laments.
BETWEEN HONG KONG AND SINGAPORE
For Singaporeans it is customary to “Lao Yu Sheng” during Chinese New Year. But Chef Chan says that Hong Kong folks tuck into Braised Dried Oysters with Black Moss which has an auspicious name called “Fa Cai Hao Shi”. It literally translates to “fortune and good things”. Other popular dishes include Lotus Root Soup and Preserved Meat (“La Wei”). He constantly searches for creative ideas to create innovative dishes and Chef Chan shares a simple “La Wei” dish which you can prepare at home for reunion dinner.

That led to a four-year long distance relationship sustained by short weekend visits three months apart each time and hundreds of love letters in between. Kim still keeps more than 250 love letters, postcards and faxes in a box at home even if some of the ink had already disappeared. Naturally, the course of true love never did run smooth.
Part-Time Model & Mother of two After moving to Singapore after marriage, they discovered the differences between their tastes and personalities which were not as apparent before when they spent most of their time apart. The teething matrimonial problems were further compounded by the difficulties of adjusting to a new environment. Little everyday life matters such as diet differences, created room for conflict.

So how did they resolve their differences and keep their marriage going strong for over a decade?
INGREDIENTS: Sutchi fish 1 tsp equivalent of butter 1 tsp multipurpose flour 4 tsp oyster sauce 2 minced garlic 200 gm oyster mushroom, cut in thin slices 2 tomatoes, each cut into 6 pieces 100 ml of fresh cream PREPARATION: 1. Heat up garlic with cooking oil in frying pan. 2. Add mushrooms, oyster sauce, and fry for 1 minute. 3. Take mushrooms out and keep aside. 4. Melt the butter, add the fish and fry both sides until it turns brownish color. 5. Add the fresh cream, the mushroom and the tomatoes. 6. Cover the pan up over small fire for 3 minutes 7. Ready to serve.
“We learnt to find common ground even though we still have differences,” she says. “When you are angry, you may say things that hurt the other person. Instead of shouting and fighting, we learnt to stay away from each other until we have sorted out things on our own and are ready to talk. Kim has seen the world. At 19, she shot straight to a career as a model in Vietnam and further made her mark in Singapore when she moved here with her husband at 22. But despite being in a glamour game, she confesses to be conservative when it comes to relationships and love. “I always think that a relationship must be serious,” she says matter-of-factly.
When we eventually come together, we try to lighten the atmosphere and express our thoughts in a light-hearted manner.” More than verbal declarations or expensive gifts during special occasions, Kim and her husband express love for each other through small thoughtful gestures such as squeezing the toothpaste for the other person in the morning.
Her marriage is a testament of that belief: Her husband ranks as her first boyfriend.
On every Valentine’s Day, her husband cook her a new dish. While the dishes may not always turn out looking picture perfect, the efforts alone make Kim happy.

We made our own bread, sauces, pasta and she would be able to cook up a feast in moments,” he praises the first woman in his life. “She worked in an Australian bar before. When I saw her kitchen, I was just amazed at how she, an Italian woman, managed to cook Australian Sunday roast. I decided then cooking was what I wanted to do.” It was also food and cooking that led him to the second woman in his life. He met her when she was serving him in an Indian restaurant. While nothing came out of that first encounter, their paths continued to cross each other over the next few years. He recounts one of these encounters.

guy until I saw that he had gotten someone to serenade to me! “The balcony was totally lit up with candles and strewn with petals, which he could only have done if I had gone to bed. The neighbours all saw the scene and I bet some husbands faced some envious wives that night.” If serenading is not your thing, you may want to try cooking this dish that Angelo has shared with us instead. “She asked for spicy and I thought that she was just my kind of woman. I made it really spicy like how I would like it and sent the dish out thinking that it would impress her. In the end, she sent it back and all the guys in the kitchen laughed at me!” Fortunately, that did not mark the end of their romance.
Italian men are born charmers. They have long enjoyed the reputation of being romantic and passionate lovers. Meet Angelo, a man of many loves, who thrills his mother and his wife with his culinary skills. He discovered his passion for cooking at 11. Watching his mother cook up a meal as if by magic, he decided that being a chef was his destiny.
After years of fleeting encounters and passionate pursuits, the couple is now happily settled in Singapore with decades of memories behind them. He says: “I am never afraid to tell my wife how much I love her. I once knelt down in front of her at a restaurant and proclaimed my love because she was upset about something.”

The couple strongly believes that mutual respect and honesty is crucial in a relationship. We posed the sterling question to the wife: Are Italian men as romantic as they are reputed to be?
“Cooking can change people,” he says.
Her answer came in another anecdote.
He skipped school to watch cooking programs at home with a glass of watered down wine and cheese. He was always in the kitchen with the ladies whipping up a storm.
“There was one Valentine’s Day when he kept pushing me to go to bed early which irritated me. I didn’t understand why until I heard singing outside our house later,” she recalls.
He attributes most of the influences in his cooking and life to his mother.

In Line With TRADITION A famous nutritional line goes: The proof of the pudding is in the eating. If you’re a Hokkien noodles fan, walk straight to Beng Hiang Restaurant at Amoy Street.
Another “must try” is the Steamed Bread with Braised Brisket, more commonly known as “Kong Ba Bao”.
Proof of the restaurant’s ardent popularity is literally written on the walls.
With a slice of juicy braised brisket, sandwiched between the folds of a snowy white steamed bun, this is probably the Chinese version of a delightful burger.
Besides a row of official food accolades, many of the calligraphy paintings adorning the walls are gifts from appreciative customers.
What makes Beng Hiang’s version outstanding: It’s not too greasy or too salty.
“I’ve watched my customers grow up. I’ve even seen families through four generations,” says the restaurant’s humble owner, Mr Ng Han Kim.
Make sure you order the Fried Oysters with Egg. The omelet is very crispy and the secret chili sauce used for the dish is like nothing I’ve tasted before.
He makes Hokkien noodles in an extraordinary culinary way that makes an unending talking point. Having served authentic Hokkien cuisine since 1978, the restaurant has gone from being a mere eight-table outfit to a respectable 50-tables setup, which is usually filled to the brim. PRESERVING HERITAGE Mr Ng’s cuisine principles are straightforward: Maintain high consistency and quality of food while upholding nostalgic tradition. He stands firm on preserving the restaurant’s signature dishes. “People come here expecting the same taste. They will know if there’s a change,” he says with a classic traditional touch of nutriment. One signature dish is the Fried Hokkien Noodles. Unlike the often salty dark-colored dish, the Hokkien Noodles at Beng Hiang come in a chocolate brown colour that is matched with a wellbalanced flavor. The noodles are a little thinner than the usual noodles but are firm to the bite. Unknown to many, the noodles used in this dish are known as Hokkien noodles and that’s how the dish gained its name. A crispy tip from Mr Ng: Try eating the noodles with black vinegar. It will add a surprising twist to this mouth-watering dish!
Made in-house by the chef, the chili sauce has a slight hint of spice with a rare blend of so many flavors that I’m almost tempted to ask the chef for the recipe. You might find yourself licking the sauce off your chopsticks clean like I did! TRADITIONALLY TRENDY Yes, first impression may be wrong: At first glance, Beng Hiang looks like any other traditional Chinese restaurant. In line with the restaurant’s wish to preserve tradition, the rooms are named after cities in Fujian Province and decorated with Chinese-styled dark wood furniture, calligraphy paintings and display items. But the restaurant’s informative website reveals a modern edge: A touch from the owner’s daughter, who joined the family business not too long ago. While others may lament at the difficulty of managing a business within the family, Mr Ng and his daughter do not seem to share such troubles. They’re a rare family breed. They share similar views about the restaurant’s future, preferring to refine the restaurant’s quality even further instead of embarking on ambitious expansion plans. Do they ever worry about falling behind times? Mr Ng replies poignantly: “Everyone is looking to tradition now. Traditional is a trend now. Traditional is in!”

Roasted duck, honey char siew, roasted pork… the commonest of coffeeshop delicacies but yet so meticulously well-prepared by Guan Chee Hong Kong Roasted Duck shop at Blk 106 Hougang Ave 1. Owner Terence Chi does an intricate marinating process with his secret recipe comprising no less than 10 types of ingredients. His insistence on using the traditional charcoal-roasting method further contributes to the crispiness and tenderness of his items. To add further icing on the cake, the homemade sauce prepared by Mr Chi himself is a definite must-try. By the way, do make sure you don’t miss out on the other specialty, “traditional wu xiang”! Using sliced meat instead of minced meat, as well as generous sprinkling of fresh prawns, Guan Chee’s “traditional wu xiang” entices your taste buds no end! Ah, it is also in Guan Chee’s intentions that these traditional items should make their way into the hearts of the younger generation as well as hordes of food-seeking tourists. With branches already sited at the buzzing ION Orchard and Suntec City, Mr Chi’s delicacies are indeed satisfying everyone’s palate now!
